We have worked together with small independent businesses in Plymouth to bring you our ‘Spend Local in Plymouth This Christmas’ guide. Three great friends came together to make their dream a reality and started their own Estate Agent company from the ground up called Halford and Homes. We caught up with James, Helen and Leah, 2 ½ years later to see how they are getting on. (Pages 8-9) Originally called Treat: Beauty and Gifts, Julie and Hilary have decided to rebrand their shop B!#@*in’ Beauty and to redirect the businesses’ focus towards the beauty salon. The rebrand was the first step and their next step is recruiting more therapists. This is a story of how three great friends who once worked at different branches of an Estate Agent came together to grow their own business from the ground up. James, Helen and Leah; never lost touch with each other despite travelling to the other side of the world and it’s that strong friendship and bond that has helped to grow one of the most successful Estate Agencies currently operating in Plymouth. Starting a business with friends sounds like a risk doesn’t it? However, doing something you love with your best friends will never feel like work and this is the reason why on the 2nd May 2018, Halford and Homes opened its doors to the public!

The three young Estate Agents all met after working at the same large company, though neighbouring branches in and around Plymouth. Bouncing off the same energy, James, Helen and Leah all became very close friends from the moment they met and kept in contact wherever they decided to go in the world. In 2006, both Leah and Helen went travelling around the globe for a year. After falling in love with the country Helen decided to move and work in Australia in 2008, however being so far away from her friends and family took its toll and Helen flew back after a year down under and settled back into a similar position working on the customer service side of estate agency but from her home office. After a short while Helen felt a longing to meet with her clients and interact with the customers as well as her work colleagues and did not fit well with work isolation.

Whilst Leah and Helen were exploring the World, James in the meantime carried on working but had started to lean towards the corporate side of the business and dealt more with lettings. James wanted to avoid the larger Estate Agent companies as he believes their mentality is focused solely towards making numbers, selling mortgages, ticking a box and at the end of the day, James knows that there is more to a successful business than just ticking a box, which is why he jokingly repeated to Helen,

There were many logistics that came with setting up the business and obstacles to overcome but with Helen’s help, they hit the ground running. Fortunately James was well known within the industry and many of his previous clients naturally approached him to manage their rental portfolios which meant their income within the first six months was predominantly from lettings. However, the balance soon shifted to property sales as this is where their passions lie which, in turn, is what drives the business to continually succeed.

‘Oh I’d love to do it myself one day.’

You may be wondering about Leah now. Leah never felt left out as it was always part of the plan for Leah to join the team as soon as their finances allowed it. As the business grew, Leah joined her fellow friends on the 1st birthday of Halford and Homes, in June 2019. Working part-time to begin with, helping with the social media and marketing.

James had been keeping an eye out for the right premises for a while and it just so happened that the right one came up in Peverell. So, over a spot of lunch, a large bottle of bubbly and many persuasive verbs later, James managed to get Helen on board to support him with his new

All three of their roles within the team can overlap, and as a result they will always be assisting each other which is one of the reasons they work so well together. Helen works primarily on the after-sales, Leah works on the marketing and James leads the sales, viewings and valuations.

After Leah came back from travelling, she pursued a change of career and went to work for a Training Provider advising young people and local companies about the benefits of Apprenticeships. Owner and Founder: James Halford James’ mum, Pauline, also helps out with the company as and when they need an extra hand. Pauline is experienced with surveyors and deals with the finances so she is very well equipped to provide the extra help. As previously mentioned, James likes to steer away from the large companies, which is what makes them unique to clients. While Halford and Homes are a small, independent business, this does not mean they compromise on experience and knowledge. In fact, it is quite the opposite. James and Helen have both been in the property industry for 15-18 years and both have a lot of experience under their belt. Whereas, larger companies will tend to hire more people who may only have a few years’ worth of experience to offer their clients. The three have built this company from the ground up and they would not have done that if they weren’t confident and good at what they do. Estate Agents can sometimes receive a negative persona that they don’t care about the individual client and they only think about the money game. Well that couldn’t be further from the truth when it comes to Halford and Homes. When Halford and Homes are faced with a house they need to sell, they are in it with the client right until the end. It is just as important to look after yourselves when owning your own business and not just your customers. The team strike a great work-life balance which means they are happier and healthier in themselves which also reflects across to their clients. And, as I previously mentioned, their friendship is so close that work never feels like work. A unique element to Halford and Homes

is that they conduct online housing auctions. Due to the pandemic, this is something that has been adapted and it is working extremely well. People have this perception of auctions selling for under the guide price however; the Halford & Homes team have found that not to be the case. They have seen one of their listed properties, in particular, go for £20,000 above market value and the majority will sell for the guide price. This way of buying is a forgotten concept to many however it is one that involves no hassle and very little of your time. As soon as the hammer has dropped, contracts are exchanged and then the process starts instantly. The vender gets to put their feet up and the buyer has 60 days to complete the deal. It really is as easy at that. The current housing market at the moment is very promising and Halford and Homes are doing better than ever. House prices for 3-bed properties with gardens are rising due to people being encouraged to work from home. A lot of customers are waiting for the house prices to drop dramatically however, James says that while new homes are still being built then the demand is still there, therefore, house prices will not drop. Face-to-face house viewings are still in occurrence however, facemasks and gloves are to be worn, a questionnaire is to be filled out and no more than 6 people are allowed in the house at any one time. Whilst Virtual Tours are available to buyers, James would always encourage the buyer to have face-to-face viewing prior to agreeing a purchase as buying a house is a huge decision and one not to be made lightly. James has a great skill of advising clients on how they can make money on their

house before selling. This is entirely down to the property and its location. Once the property has been valued, James will give his honest opinion on where the vendors can make their money. This might mean not changing anything if they know it needs work, it still might not change the value of it if the area is good. Valuing a property at the right price is key to its success and that is another one of James’ brilliant skills. He believes that any house should sell within 4 weeks and if it hasn’t, then it’s at the wrong price. Halford and Homes are honest and want the best for their clients which is why they get recommended so highly. The team have brilliant local knowledge that they always share with their clients. They are happy to advise on local schools and get to know the clients hobbies and interests to recommend areas based on lifestyle. Something that larger Estate Agents don’t always have the time for. We always ask our interviewees where they would like to see their business in 5 years, however, it is so clear to us that within the 45 minutes that we interviewed the three of them, at this moment, they wouldn’t change a thing. Working alongside your friends, having time for family life, enjoying your career and shaping your own business is what most of us would call ‘the dream’. It is James’, Helen’s and Leah’s reality so why would they change it? Three genuine friends that went their separate ways over the years, have finally all come together and are here to provide you with a trustworthy, experienced service from people who really do care about you.

REMEMBRANCE DAY 2020 “They shall grow not old, as we that are left grow old: Age shall not weary them, nor the years condemn. At the going down of the sun and in the morning, We will remember them.�

R

emembrance Day, also known as Armistice Day, marks the end of World War I in 1918. On the 11th hour, on the 11th day, on the 11th month, WWI came to an end. From this day forward, we hold a 2-minute silence to remember those who fought and sacrificed their lives for our country’s freedom. The whole country holds a silence to think and appreciate every soldier from not just WWI, but every war, for us to be here today. In the United Kingdom, we hold the 2-minute silence on the 11th of November to remember the fallen. However, in 1956, the British Government replaced Armistice day and moved the Remembrance observance to the second Sunday in November. This was declared after WWII to honour participants who fought or contributed in both wars. This is now known as Remembrance Sunday. In 2020, this will occur on the 8th of November. Remembrance Sunday is when the ceremony officially takes place along with another 2-minute silence.

Despite this, we are still encouraged to hold our own remote or socially distanced Remembrance activity, for example, the 2-minute silence or watching the service on the television. If you would like to have your own ceremony to remember a special someone, you can order a wreath for your service from the British Legion website, www.britishlegion.org.uk In Plymouth, Remembrance Day is particularly important due to its strong military history. With its location near the Royal Navy base, Royal Marines and the RAF base, most residents know someone currently serving in these Armed Forces. Remembrance Day allows the people of Plymouth to commemorate those currently serving or those who have sadly lost their lives, fighting for our country.

During WWII, Plymouth suffered devastation from the bombings. Their main target was Devonport however, other areas of Plymouth were severely affected. Nearly every civic building was ruined including places of worship and schools. Most of these were re-built however, one building still stands as a reminder of the Plymouth Blitz in 1941 which is Charles Church, located on the roundabout opposite Drakes Circus. The remains of the Church after being bombed lie as a constant symbol of Remembrance in the city. The bombings caused unstoppable fires that could be seen as far as Exeter and deep into Cornwall. Many different memorial plaques, statues and monuments are situated across Plymouth to remember this devastating time. A few being on the Hoe and under the Belvedere Wedding Cake.

The current pandemic will not put a halt to the memorial event, but it may look considerably different compared to previous years. On Sunday in London, the annual Remembrance Sunday March would usually take place around the Cenotaph in London. Due to Covid-19, this will not take be able to take place this year. This decision has been taken by the Government to help protect the health of those who may have taken part. However, the National Service at the Cenotaph will still be going ahead as a private ceremony. This will still be broadcasted to the nation. The National Service has been held at the Cenotaph for almost 100 years therefore,

Remembrance Sunday in Plymouth would usually take place on the Hoe, gathering by the Merchant Navy Memorial, the National Armada Memorial, Plymouth Naval Memorial and Royal Air Force and Allied Air Forces monument. It will be slightly different this year because of Covid-19 restrictions. The ceremony has unfortunately been cancelled due to the crowds of people it attracts. Instead, online streaming will take place of the service located at HMS Drake, attended by the Lord Mayor of Plymouth. This will be shared through the Plymouth City Council social media channels on Sunday.

The Plymouth Hoe promenade is specifically dedicated to military parades, displays and commemorations which is located directly in front of these memorial statues that overlook the Plymouth Sound. This is where the Remembrance Sunday March would usually take place. This year, the Royal British Legion has made efforts to educate children from key-stages 1-4 about Remembrance Day and its history in our country. Resources will be sent out to school across the UK with the aim that every child within the UK understands the importance of Remembrance. With their best efforts, they hope that teachers can cooperate with this scheme to ensure that Remembrance is something that doesn’t just stop once you finish school. They would like to remind us of the similar experiences that people went through during WWI and WWII compared with the Covid-19 pandemic. The poppy has become a defining symbol of remembrance since 1921 when The Royal British Legion organised the ‘poppy appeal’ to remember those who had fallen in the ‘Great War’. The poppy itself stemmed from the poem ‘In Flanders Fields’ written by Canadian doctor, Lieutenant Colonel John McCrae following the death of his friend and brother in arms. There are several different metaphors for the poppy but the overall story comes from the battleground of Flanders Field where poppies became abundant. The blood-red colour has long symbolised blood spilt during conflict but also hope for the future. A poppy is worn, but is not compulsory, during November and at all ceremonies to show your support to the Armed Forces community. When purchasing a poppy, the money goes

We can pay our respects for them by honouring the 2-minute silence and by wearing a poppy. To make a personal tribute to a loved one or just to pay your respects to all, The Royal British Legion has a ‘Virtual Field of Remembrance’. The overwhelmingly large field shares hundreds of messages from loved ones, each with their own cross and poppy. This year, more than ever, we need to do our bit to make sure the poppy appeal funds don’t get affected by the changes we have had to make from Covid-19. Every poppy counts and each donation makes a huge difference to the lives of our Armed Forces.

Two strong businesswomen whose friendship jelled over the past few years, have come together to make their dream a reality. By combining 2 business passions into one outlet, a salon and a shop combined, this double opportunity presents a unique yet distinctive ambience together with a sublime experience whilst ensuring great customer service. With a focus towards progressing the business forward, they have decided to rebrand their shop to ‘B!#@*in Beauty’ however, still making it recognisable for their longstanding loyal customers. With this rebrand, they are looking to expand their salon by growing the treatment’s side of the business so expansion in staff recruitment is a main focus.

or Julie Jeffs and Hilary Cragg customer satisfaction and wellbeing come first above anything else. This stems from their personal backgrounds, working with people struggling with mental health and human rights throughout their working lives. Julie has been self-employed for over 20 years as a psychotherapist and owns her own training program. She progressed her career as a business entrepreneur, always seeking new opportunities to get stuck in to. Julie also organises her own mindfulness and meditation retreats on top of everything else. Hilary has been working as a human rights lawyer for Nash & Co for many years, working with elderly and disabled clients. Much like Julie, she prefers to keep herself busy, and as a result she has managed to write a book about dementia. Julie and Hilary originally met at a monthly self-developing group and hit it off from the word go. In 2018, they both went on holiday to Morocco together after a cancellation of plans, this holiday brought their relationship up to a very strong friendship, which has been stronger than ever since. This particular business venture was originally investigated by Julie to begin with after searching for something new to undertake. She spoke with the owner at the time, they came up with a deal and transfer of the business was done in March 2019, 1 month after enquiring. Julie and Hilary had never envisaged working together as business partners, yet they both thought

it could be an exciting adventure to go on with a great friend. After hearing the news that Julie was going ahead with the business idea, Hilary said “Oh, I’d quite like to be part of that!” And with that they took over Treat: Beauty & Gifts.

obvious that it is a beauty salon as well and share their love of this business with more people. A change of name is the first step, and due to the rapid expansion, the next step is recruiting more brilliant therapists to join their team.

Once purchased they re-opened the salon and shop to the public 10 only days later, on Julie’s Birthday to be exact! A few changes were made with the stock they purchased but nothing major was altered.

During the lockdown from Covid-19, beauty salons were unable to reopen for a while after most other businesses. This affected their company; however, their customer’s safety is paramount and they have adapted accordingly to ensure everyone’s safety. When customers come in, they are asked to hand sanitise and facemasks are worn by everyone unless they have a valid reason not to or if the treatment is facial. Donna, their therapist wears a facemask and a face shield and will hand-sanitise her hands before and after each client, as well as clean the therapy room between clients. A lot of people have come back after the lockdown restrictions because they miss that social interaction with people, they miss being touched. This can be fundamental to people struggling with mental health issues that have been heightened by the pandemic. They want it to feel like an experience from the moment the door opens. Hilary had a couple come into the store a while ago and the gentleman took a seat and got his phone out as he felt out of place. After

tending to the woman, Hilary asked the man if he would like a cup of tea and he appeared shocked. Hilary then said “I’ll put the kettle on, you tell me about the last holiday you went on.” And after that, the gentleman said to his wife, “Babe, you take as long as you want!” Hilary believes it really is that simple to make someone feel happy and welcome in their shop. Looking towards the future, they strive to ensure every customer walks out of the store happy and nurtured. They wish to have multiple branches across Devon and Cornwall and they are even thinking about setting up their own skincare range and selling it at their shops. A welcoming approach and smiling staff members are paramount to their business and how it is successful. MOVEMBER It’s about to get hairy this month! Grow a moustache this November and raise money for men’s health. Men are dying too young and it is time to speak up.

T

he origins of Movember lies in the hands of two mates from Australia back in 2003. It began with a relaxed beer in a bar in Fitzroy when they began to talk about fashion trends. The moustache came into the topic and they joked about bringing it back into fashion. Inspired by a friend’s mother who had been fundraising for breast cancer, they decided to raise money for men’s health and prostate cancer by all growing moustaches. They devised a campaign and emailed it to people they thought might take up the challenge. 30 guys responded and took to the challenge with great enthusiasm. A year later, in 2004, it became a formalised concept where more people grew their moustache for a great cause. The campaign is essentially to grow a moustache from the 1st to the 30th November and to get sponsored doing so. These funds raised will go towards mental health & suicide prevention, prostate cancer and testicular cancer. If growing a moustache isn’t easy for you or if you are female and want to help, there are lots of other ways to raise money.

Move For Movember where you run or walk 60km over the month for the 60 men we lose to suicide every hour across the world. Host A Mo-ment and gather together some friends, virtually or in-person and do something fun and easy. For inspiration and information on how to host your own event, visit www.uk.movember.com Or you can always Mo Your Own Way by completing your own challenge whether it’s a physical one or kicking a bad habit.

This goes the other way too. Talk to your friends, ask them how they really are. You don’t have to be an expert psychologist to be able to make a huge and potentially life-changing difference. Make sure you are aware of when you should be getting a PSA test. 50 is the age when you should be speaking to your doctor about prostate cancer and 45 if you are black or have a brother or father with prostate cancer. You should be getting to know what’s normal for your testicles. This way you can visit the doctor when something doesn’t feel quite right. There is a comical video created by the charity called ‘know thy nuts’ to find out exactly what you should be checking for. Lastly, it is important to pack in lots of exercises and keep active. It is important not to forget the reasons behind the moustaches. On average, men die 6 years earlier than women, this is a global statistic. This is largely preventable which means we have to speak up now to change this.

Craig and Anna, the new landlords of The Imperial, Ivybridge, are delighted to welcome customers old & new. Their passion is to offer great beer, locally source ingredients for delicious homemade food in a warm, friendly atmosphere. They are a couple who grasp every opportunity that comes their way and have overcome several obstacles to be here with an aim to add to the community spirit of Ivybridge.

A

nna grew up in Ivybridge, very close to the Imperial so has very fond memories of the pub. A fantastic, hard working couple named Phil and Ali ran the Imp for 11 years when Anna was a child. There were several families with children the same age as Anna & her sisters, including Phil & Ali’s. The children would run havoc in the large beer garden, the mums chatting away & the dads ensuring the quality of the beer was the usual high standard! Fast forward several years... Craig completed a cookery course in Ireland to then go onto a 6-month course at Ashburton Chefs Academy, confirming his love for cooking & for Devon. The like minded, free-spirited couple got on so well, Anna left dental nursing for a new challenge, which led to three years building themselves as a great team on the Isles of Scilly.

When they heard The Imperial was back up for grabs, it didn’t take them long to mull over & start their new adventure! After a week of hard work, giving the pub a facelift & designing their own menu, they opened their doors. Both Craig & Anna are selfless people, they have helped others along their journey, and this generosity has come back to reward them as they have had a vast network of family & friends, helping them to get the pub open & continue to support them in many ways. The Imperial was built in 1854 which makes it one of the oldest pubs in Ivybridge, although not settling with this name until the following century. Upon visiting the pub, from the outside, you are completely unaware of the space it has inside, not to mention the enormous beer garden hidden out the back. This pub boasts the biggest beer garden in

Owners Craig and Anna Ivybridge which becomes packed in the summertime with a lively and friendly atmosphere. The spacious restaurant gives even more room next to the bar area. After a blustery walk, stop by The Imperial as there is always a roaring fire to warm you up, thanks to Ivybridge Logs and A & P Wood Services. Take a seat on a nicely spaced table or the sofa adjacent to the fire to enjoy a hot brew or cared for beer and flavourful homemade food on a cold winter’s day. Full of character and charm, with Tudor beams overhead and old wall hangings, this pub makes you feel as if you have travelled back in time. Bringing that character back is a goal of Anna’s. Reflecting the community of Ivybridge is another priority for Anna and Craig, which is why they were over the moon when Phil and Ali passed down to them an old painting of an Ivybridge character who often frequented the

pub. Locals still remember him to this day and relish him when they see his portrait hung up in its original place. Being sustainable and supporting local businesses is something that Anna and Craig are very passionate about. Their menu changes frequently which means they will be sourcing seasonal ingredients from local suppliers wherever possible. Having worked at Riverford Field Kitchen, Craig has been inspired to actively reduce plastic and general waste. During our interview, Craig kindly offered to cook us some sweet chilli beef, BBQ chicken wings and falafels which you can order as part of their sharing platters. As we were digging into the mouth-watering food, Craig began to tell us about how everything is made from scratch by Craig himself, even down to the BBQ sauce. We were so shocked as, (and I’m not being biased), it was the best BBQ sauce I have ever tasted. The sweet chilli beef was so tender and cooked to perfection with a light chilli sauce, topped with sesame seeds. The falafels were packed full of flavour in every bite, presented on a bed of salad leaves with a homemade herb sauce. Each dish was beautifully presented but didn’t feel too fancy or fussy, just rustic simplicity. They have designed this menu from scratch and in doing so, they have devised the perfect ever-changing menu designed for people who want great, hearty food, sourced locally, created by a chef who truly cares about what they present to the customers and at an affordable price. They have certainly

persuaded us to come back for more delicious food! Craig enjoys cooking a variety of foods, especially with his South African influence, which he will bring to the menu along with plant based meals, packed full of flavour & goodness, & fresh fish dishes adapted from their time on Bryher. Looking to the future, they want to offer great local guest ales with the Cask Marque on the door and a great friendly ambience. They want to become more involved in the community by doing what they can to help promote local businesses. They have even sourced hanging baskets from a local shop and paintings from a local artist for their decorations. Anna and her fantastic front of house team ensure that a friendly welcome and a warm homely feel is what you will

always receive when first walking into The Imperial. Consistently great customer service with great food, great beer and a sustainable outlook; we have every faith that they will add to the community of Ivybridge and push it onto even greater things. Whether you just want a pint and to watch the world go by sat next to a roaring fire or if you are looking for a hearty Sunday roast with the family; The Imperial is here to tend to all of your needs.

SEASONAL & VEGetarian Recipe ideas It’s Veg Pledge month! Go vegetarian this month to raise money for Cancer Research UK! Source locally and shop inseason. We have gathered together some delicious seasonal and veggie recipes to warm the cockles and keep you healthy during the colder months.

beetroot hummus (Serves 8) 1 tsp cumin seeds, 250g/9oz cooked beetroot, drained and quartered, 400g tin chickpeas, drained and rinsed, 1 garlic clove, peeled, 1 tsp ground coriander, ½ tsp flaked sea salt, and to taste, 2 tbsp extra virgin olive oil, 2 tbsp fresh lemon juice, ground black pepper ONE Toast the cumin seeds gently in a small dry frying pan for 2 minutes, stirring occasionally, then remove from the heat. TWO Put the beetroot, chickpeas, garlic, coriander, salt and olive oil in a food processor. Add the cumin seeds and lemon juice and season well with freshly ground black pepper. Blitz until smooth. Check the seasoning to taste, adding a little more salt, pepper or lemon juice if needed, and blitz again. THREE Use the hummus as a spread for sandwiches and wraps or as a dip. Keep covered in the fridge for up to 3 days, or freeze.

FRENCH APPLE TART (Serves 8-10) 200g/7oz ready-made puff pastry, 2 tbsp stewed apple, or sweet apple sauce, 6 apples (Cox or Granny Smith), peeled, quartered and cored, 2 tbsp caster sugar, 40g/1½oz butter, cubed, 1 free-range egg yolk, beaten, 250ml/9fl oz double cream, 1 tbsp icing sugar, 1 vanilla pod, seeds scraped out, splash of calvados ONE Preheat the oven to 200C/180C Fan/Gas 6. TWO Roll the puff pastry out on a clean work surface to a large sheet, 3mm thick. Using a bowl or plate, cut a circle about 25cm/10in in diameter. Crimp the edge before turning the whole sheet over and laying it directly onto a flat baking tray. Chill in the fridge for at least 10 minutes. THREE Remove the pastry from the fridge and spread the apple compôte all over the base of pastry, leaving a 1cm/½in border at the edge. FOUR Slice the apples the thickness of a two-pound coin and place them onto the pastry sheet, fanning them out, starting from the outside and working in. The apples should overlap each other. Use the largest slices on the outside and place the smallest slices in the middle of the tart. FIVE Once all the apples have been laid out, sprinkle over the caster sugar and dot with the cubed butter. Brush the border with the beaten egg and bake in the oven for about 30 minutes, or until golden-brown and risen around the edge. SIX For the Chantilly cream, whisk the cream, icing sugar and seeds from the vanilla pod in a bowl until very soft peaks form and set aside until ready to serve. SEVEN When ready to serve, place the tart onto a serving plate. Warm the calvados in a small saucepan. Ignite the alcohol with a match (be careful of your fingers) and pour over the tart. Serve with Chantilly cream.

ROAST CHESTNUTS (Serves 6) 1kg/2¼lb chestnuts ONE Heat the oven to 200C/400F/Gas 6. Using a small, sharp knife, cut a cross into the skin of each nut. Put in a roasting tin and bake until the skins open and the insides are tender, about 30 minutes. TWO Serve in paper bags, if you like. To eat, peel away the tough outer skin and the pithy white inner skin to get to the sweet kernel.

Cauliflower and Vegetable Stew (Serves 8)

BLACKBERRY CRUMBLE OVERNIGHT OATS (Serves 4) 50g/1¾oz frozen blackberries, 1 tsp runny honey or agave syrup, small handful chopped almonds or walnuts, 40g/1½oz porridge oats or toasted rolled oats (use gluten-free oats if required), 150ml/5fl oz milk or vegan alternative, 3 drops almond extract (optional) ONE Put all the ingredients into a jar, stir, put the lid on and chill in the fridge overnight. TWO In the morning, top with extra nuts, if desired.

MUSHROOM AND PARSNIP ROSTI PIE (Serves 6) olive or rapeseed oil, 750g/1lb 10oz mixed mushrooms (preferably portobello, chestnut and wild mushrooms), roughly chopped into chunks, 3 garlic cloves, sliced small bunch thyme, leaves picked, 2 red onions, sliced, 2 carrots, finely chopped, 250g/9oz swede, finely chopped, 200ml/7fl oz white wine or vegetable stock, 1 tbsp vegetarian Worcestershire sauce, 1 tbsp Dijon mustard, 2 tbsp wholegrain mustard small bunch fresh flatleaf parsley, roughly chopped, 2-4 tbsp crème fraîche (optional), 3 small parsnips, grated, sea salt and freshly ground black pepper

1 tbsp olive oil, 1 onion, finely diced, 2 leeks, split lengthways up to the root several times, washed under running cold water then sliced thickly, 2 carrots, cut into, 1cm/½in dice, 2 garlic cloves, finely diced, 1 tsp sweet smoked paprika, ½ tsp dried thyme, 2 potatoes, peeled, cut into 1cm/½in dice, 600ml/21fl oz vegetable stock, ½ head cauliflower, cut into small florets, 200g/7oz fine green beans, cut into 2cm/¾in pieces, 1 x 400g/14oz tin baked beans, 2 tbsp roughly chopped, flatleaf parsley, crusty bread, to serve, salt and freshly ground black pepper ONE Heat a large frying pan or saucepan until medium hot, add the olive oil, onion and leeks and cook gently for 5 minutes until just softened. TWO Add the carrots, garlic, paprika and thyme and stir to combine. Cook for 5 minutes. THREE Add the potatoes and vegetable stock and bring to the boil. Turn the heat down and simmer for 5 minutes until the potatoes are just softening then add the cauliflower and simmer for another 5 minutes. FOUR By now, all the vegetables should be nearly cooked. Add the green beans and baked beans and cook for 3 minutes then stir in the chopped parsley and season well with salt and pepper. Serve with plenty of crusty bread.

ENJOY THE TASTE OF OGGY OGGY AT HOME

ONE Place a large ovenproof frying pan over a high heat and add a good glug of oil. Add enough mushrooms to cover the base of the pan, season with salt and pepper, and sauté until nicely brown and beginning to crisp at the edges. Transfer to a bowl and fry the remaining mushrooms in batches. TWO Put the pan back on the heat and add another glug of oil. Add the garlic, thyme, onions, carrots and swede, season with a good pinch of salt and pepper and cook over a medium heat for 10 minutes, until softened and starting to brown. THREE Preheat the oven to 200C/180C Fan/Gas 6. FOUR Add the mushrooms and the wine or stock, and simmer until almost all the liquid has evaporated. Add the Worcestershire sauce, mustards, parsley and crème fraîche, if using, and cook gently for a few more minutes, until you have a rich gravy. Taste and add more salt and pepper if needed.

HAVE YOURSELF A SUSTAINABLE CHRISTMAS With Christmas in close proximity, it is all too easy to forget the positive eco-friendly advances we have made and switch to panic buying mode. It is time to slow down the Christmas shopping experience and think greener.

I

think we can all agree that when it comes to Christmas, the excitement and the pressure gets to us all and a little bit of panic buying comes in to play. The pressure built up to ensure Christmas goes smoothly and nobody gets disappointed is getting bigger and bigger each year. I personally think that if we put less pressure on ourselves during this period, we would have more time to enjoy it. Christmas was never about the gifts and the money; it was always about spreading love and joy to all and spending the holiday with friends and family. The amount of waste that comes after the Christmas period is largely fuelled by the sheer panic and excitement from shops and social media to make it the ‘best Christmas ever’. The more the merrier is the general thought process and who can blame us for thinking this way with the growing pressures of social media. We are here to prove that you don’t need to miss out when it comes to making your Christmas more sustainable. In some areas, you can even save money by doing a bit of DIY! Eco-friendly products tend to cost more than un-sustainable, plastic items, however, they will last a lot longer which means you are saving yourself money in the long term. Minimising your carbon footprint by sourcing products locally is the first step. We have an editorial in this issue all about how to spend locally in Plymouth this Christmas.

Stockings are such a beautiful idea to bring a little bit of joy to your Christmas morning in a very large sock! To fill these very large socks is the challenge behind the joy and this is when the panic usually sets in. We have come up with some sustainable and eco-friendly ideas to put in your loved one’s stockings this year. Firstly, ask yourself if you have anything that your kids haven’t seen before that you could hand down to them. This could be a necklace you had when you were a teenager or an old favourite toy that has been well looked after. This meaningful gesture can go a long way as they are more likely to hold on to it as it has precious value. Let’s not forget about the traditional satsuma at the bottom of every stocking! If forgotten, this will go mouldy and leave a foul stench at the bottom of your stocking! The essentials that go into every stocking are pants and socks, this can be bought ethically by sourcing good quality products that are made to last. This means less will be thrown out. When your trusty sock does get a hole in or is running thin after many years, make sure you discard them in a clothes recycling point which can be found at many tips and clothing stores.

If you opt for flower seeds, this will also attract bees!

A candle to set the Christmas mood is always a great stocking filler however, candles are not good for the environment as you are essentially burning a fossil fuel as most contain paraffin. To avoid these candles, look for words on the candles packaging such as ‘natural, organic, coconut wax, rapeseed wax etc.’ You can also buy candles that have been recycled. A great shop to go for that is ‘The Recycled Candle Company’ in Exeter. It is all too easy to be tempted by the smell of freshly ground coffee whilst walking through the city but make sure you’ve got your reusable mug! Add one of these to your loved one’s stocking for a great gift and to save money on your next coffee! A lot of cafes and Baristas will offer a discount if you bring your own reusable coffee cup! So now your stockings are filled with eco-friendly goodness, let’s get on to the main presents! Although wrapping paper has got the word ‘paper’ in it, most wrapping paper is not recyclable as it contains foil, glitter or plastic. Brown paper packaging tied up with string is the way forward! Actually, I think it looks a lot prettier and you can add your own personalised touch to it with some foliage, dried orange, and maybe even a stamp using eco-friendly

When Christmas shopping- remember to take your bags for life with you to avoid having to take any unnecessary plastic bags home with you. Christmas is the time for all things sparkly; glitter, sequins, tinsel, baubles, fairy lights and everything in-between. Unfortunately, all of those lovely sparkly items are made from plastic and are nonrecyclable and often get washed down the sink and end up in our oceans. On a positive note, eco-friendly glitter exists! Try to refrain from using tinsel and make your own paper chains or homemade garlands that can have longer-lasting properties and are less harmful to the environment. Baubles should be a family heirloom and stored with care so that they can come out of hiding each year and look spectacular. If you are in need of an extra bauble or two, avoid ones with glitter or that are made from plastic. Head to the high-end stores that offer quality baubles that are less likely to break over the years. Or, make your own Christmas decorations! Have a forage in your local woodland and pick some beautiful pinecones to hang on the tree. And if you are feeling peckish, make some Christmas biscuits, punch a hole through them, tie with string and you’ve got an adorable decoration that won’t go to waste! If you are local to a farm that grows and sells Christmas trees, depending on the farm, you can rent it from them and come January, they will come and collect it from you and then re-plant it for next year! Did you know- It takes 20 years for an artificial tree to become ‘greener’ than a real one. However, if you do prefer the ease of an artificial tree, or perhaps you need it for allergy reasons, you can still be mindful about the tree you choose. Some artificial trees are recyclable or made from biodegradable materials. Most people are unaware of when they should start to think about writing their will. John informs us that most people should start to think about writing a will in their 50’s. Sometimes this will vary if life events make you think about your own mortality. The process of writing a will is fairly simple, they just require complete honesty when you are providing the information. John uses a fact find form which consists of 20 pages, not all of the pages are used but this goes to show just how deep a will planning can get. Initially he will ask questions about the testator and his or her spouse. These questions include; Who do you want as executor and who do you want as beneficiaries? Do you have a property and how do you want that to pass onto beneficiaries? Do you want to protect at least half of the property value etc. Are their vulnerable people to consider, life time trusts? Do you wish to be buried or cremated? Any funeral wishes or organ donations? Any assets to pass onto individuals before the residual estate is divided up? John spoke about a recent clients will that he wrote where a man left all of his wood working equipment to one son. He will essentially ask a lot of questions such as this and record the whole process to then be written up professionally by John and his team.

When we interviewed John back in 2018, he spoke about how the majority of his appointments were held at the client’s home, where they are at their most comfortable. Given the pandemic, the social distancing guidelines, and the average age of his clientele, this is no longer viable to make safe for the clients. He now encourages people to come to his new office on Exeter Street as this environment can be carefully controlled. John has splash guards, hand wash, face masks and he can control the distance between himself and the client to keep them all safe at these times. A short questionnaire is to be filled out regarding the client’s recent movements and their contact with people. If the client is in a high-risk category from Covid-19, then a transaction over the phone or videocall would be instigated. In the future, John would like to see his business in the same shape it is now, promoting similar products and services but maybe with some additional staff members.
