We have two brilliant business profiles this month. We speak with Will Giles from one of Plymouth’s most established law firms Woollcombe Yonge. The progressive and modern yet 250-year-old Plymouth based solicitors, Woollcombe Yonge, are back to give us an insight into how the firm has managed to successfully operate throughout the pandemic, with our focus this month on the Family Law Team. With a strong belief that everyone has a right to access to the justice system, the Family Law team at Woollcombe Yonge Solicitors represent their clients to the very best of their ability, striving to reach an amicable solution, with their client’s best interests at heart. Will Giles, head of the Family Law Team talks to us about the benefits of mediation and collaborative law as an alternative to court hearings.
W
ill’s interest in law began in his school years when history was his favourite subject and he had a very developed sense of justice and fairness. Becoming a lawyer was a natural step and he loved learning about the Acts of Parliament and the cases that set precedents that regulate everything we do. Having qualified as a lawyer, 26 years ago, Will noticed his passion lay in the justice system and welcomed the opportunity to apply what he had learnt to practical circumstances. Helping people involved in the Justice system became his focus and passion as he considers this is at the beating heart of the justice system. He moved through his legal education at University and training at law school until he became a trainee solicitor right here in Plymouth. This is where he discovered his love for Family Law because, after all, Family Law is all about principles – right and wrong, fairness and justice. Family Lawyers aim to protect the rights and responsibilities of family members across a wide spectrum of situations including separation, divorce, finances relating to the divorce including division of the assets, who gets to keep the house, what level of maintenance is paid and how pensions could be shared. This is Will’s main area of expertise, as well as helping parents to resolve disputes relating to their children: who will the children reside with, how often will the parents spend time with their children or which school they go to? Separation and divorce are highly stressful and emotionally difficult for anyone going through them, but especially difficult for parents who may see as much of their children as they had been used to. Woollcombe Yonge are there to support Mums and Dads, Husbands and Wives through these difficult times.

Woollcombe Yonge also assist parents where they are in involved with social services and where their children are at risk of being removed from the parent’s care by social services. Will joined the Woollcombe Yonge Family Law team 3 years ago when, at the time, the firm had three members in the department. Since Will joined the team he has worked hard to expand the department to a team of 11. It is Will’s ambition to grow the team even more, to be able to service their client’s needs. It is therefore no surprise that Woollcombe Yonge are passionate about encouraging and training their staff to be the best they can be. Three of those team members are currently undergoing training within Woollcombe Yonge to advance to higher levels, whether that is to be a solicitor, legal executive or paralegal. “For virtually anyone in the world, the most important thing in their lives is their children and when relationships come to an end, they will fight tooth and nail over for their rights to spend time with them, which is why I took an interest in Family Law” said Will. Will recognises that Court hearings can be brutal battles which encourages parties to say things they never would normally say or want to say about their former partners, in order to get the judge’s attention. Will has been conducting court cases for 26 years and is highly experienced and capable at guiding client’s through the maze of complex laws and procedures that court cases involve. Will and his team support clients through these issues with sensitivity, clear advice tailored to the client’s circumstances from the very first meeting and a focus on reaching solutions as quickly and cheaply as possible. Will has

Woollcombe Yonge office a reputation as an authoritative and fierce advocate. Will, having been a litigator for 26 years, also recognises the benefits of alternative ways of resolving family disputes and therefore trained to be a mediator and collaborative lawyer. Along with his law qualifications and experience as a solicitor, Will is the only qualified accredited practising Solicitor Mediator and collaborative lawyer in Plymouth, which gives him an almost unique understanding of the issues face when separating and how any family dispute can be settled. Will’s main role in the company is undertaking divorce finance work and the divorce itself, and he sees mediation and the collaborative process as excellent alternative processes to court proceedings due to their promotion of good communication, their forward-looking focus, of promoting co-parenting, and on amicable and constructive solutions in the best interests of the whole the family. This is why Will and his team would almost always recommend trying mediation and collaborative law, before going to court. Mediation is the process by which two parties engage in a series of round table meetings, in the same room with one neutral facilitator, the mediator. The mediator helps them to try to resolve their issues amicably. However, Woollcombe Yonge cannot be both solicitors and mediators on the same case, as the mediator must be neutral. If a client is interested in using Will as a mediator, they will only be able to enrol into mediation with Woollcombe Yonge if they ask for that specific service first or where Will and his team identify that mediation would be best suited to them in the first instance. During mediation, the mediator creates a level playing field and focuses primarily on the future of their children. Will asks questions such as, “Where do you see yourself with your children and the other party in 5 years? What would it look like? And what would it look like if your youngest child gets married at the age of 30, where would you like to be then?” This enables parents to focus their minds on
the best interests of their children. This process is all about how the mediator can help separated parents to co-parent these children and hopefully avoid long term conflict. Will points that it is crucial that children understand that both of their parents still love them and will co-operate together to do their best for them throughout their childhood. A common question Will is asked is, ‘Why do I need mediation? I could just talk to the other person?’ However, that rarely ever works because there is often too much distrust or bitterness. This is where the mediator can help as the mediator is neutral and independent and there to help both parties reach decisions that will affect their longterm futures as well as their children’s. The Collaborative process is a different type of dispute resolution where each party has a specially trained solicitor assisting them, in which the discussions take place with all in the same room. The parties must sign a contract which outlines that if either party cannot reach an agreement then the solicitors will not go to court for them. In the 22 years that Will has undertaken collaborative cases, only 1 case could not be resolved and had to go to court, with different solicitors assisting the parties. The Collaborative process is very difficult to walk away from due to the emotional commitment everyone makes and as it becomes incredibly costly to take it to court, due to new lawyers having to take over. However, some cases are not suited to mediation or the collaborative process and are better dealt with in court. In certain cases, for example where children or adults are the victims of any kind of abuse, then mediation or collaborative law should not be an option. Will is always conscious of issues of abuse and the protection of children and adults from harm. Will spent 15 years doing care work, where social services intervene to protect children. He learnt

that everyone deserves the right to fight for their child. Most of people who have their children taken away from them usually have underlining problems themselves such as learning disabilities, personality disorders or drugs and alcohol issues. Many have been abused themselves. They are often vulnerable themselves and struggle to care for their children. This is where Will and his team come in, to defend the parents and by putting forward all of the client’s best interests to give them a fighting chance of keeping the children in their care. The children’s protection and welfare are of course the paramount concerns of the court, but the parents need to be had their views heard by the court. “You could be sent to prison” said Will “committing a crime, but having your kids taken away from you is probably the most draconian thing we do as a society.” Even if they are people who have committed offences, they are still entitled to be treated like human beings and they should expect no less than that. Ultimately, the court will have the final say and then the child will either return to the parents care or seek or be placed with alternative carers such as is provided for by adoption, foster care or kinship carers like grandparents or other relatives. Care cases where a child is taken away from their parents will always be emotionally draining for the parent but also for Will and his team. However, they will always deal their client’s with sensitivity and respect, given the circumstances. They recognise just how important it is that the parents’ views are heard by social services and the court. When speaking to Will, it came as a gratifying surprise as to how well the company have coped during the Coronavirus pandemic. Woollcombe Yonge are fortunate to have fantastically robust IT systems. Therefore, when the day came at the beginning of the first lockdown, all members of staff received a laptop so they could work with immediately and with ease from home. They were able to rapidly adapt to the new way of working and found that it came with some benefits. The amount of paperwork for one court case mounts up to 1000s of pages, this is then re-printed for the barrister, one for the judge, one for the parties and one for any witnesses and are then confidentially destroyed
soon after. Will is now almost 100% paperless, with everything is secured in state-of-the-art computer files which therefore means the carbon footprint for the firm has dramatically reduced. All meetings and court hearings are currently conducted via telephone or video call so there is no need to jump in your car anymore which also helps to reduce carbon emissions. There is a worry that things, as they always do, will slowly slide back to the way they once were but it is Will’s hope that they can be mindful of their carbon footprint for our future. The future of Woollcombe Yonge is looking bright, so we asked Will where he would like to see Woollcombe Yonge’s Family Law team in 1-2 years’ time. He said to us, “My aim is to be the best Family Law team in the city! And to grow the mediation and collaborative law processes to bring amicable solutions to more of our clients, also to expand the Family Law department”. It has been one whole year since we last met Skymind Studios, and a lot has happened since. In January 2020. Jacqueline Cant had ambitious plans for the future of her business at the beginning of 2020, however due to the pandemic and the events industry being one of the worst effected, Jacqueline had to put her plans on hold. Yet with promising news of a vaccine, she has reassembled her team with lots of exciting plans in the making for 2021.
T
o recap from last year, Skymind Studios, based in Plymouth, was founded in 2009 where Jacqueline and her partner at the time, worked on creating a platform specifically for photographers and videographers. It was never an aim of theirs to get into the events industry, Jacqueline had always been passionate about anything video or photographic related, and she was always happy to undertake any opportunity that was presented to her. In 2010, Jacqueline worked as a lifestyle worker for the charity Livability where she met with disabled people to find activities and sports that they could do. Whilst still working for the life-changing charity, Jacqueline decided to create an event to raise money for Livability. With her skills in videography and her multiple connections, she created her own music event where she organised everything, right the way down to the photography, sound and graphic design. The event was a huge success which opened a door for Jacqueline that she had not previously thought about. Event after event later, she has captured the people of Plymouth into a world of sound and media. In 2018, Jacqueline and her partner unfortunately split, whereby Jacqueline took the sole ownership of the company. Her mission was to grow the company even more by branching out into new platforms as well as learning to work alongside other people in her industry. Adapting to a huge change such as this can be very challenging, however, Skymind Studios have proven to themselves and others in the industry that this is possible. The events industry was the first to be put on hold and the last to reopen therefore it is to no one’s surprise that Skymind has been affected negatively. Part of being

Ryan Bailey and Jacqueline Cant adaptable is learning to try new things and that is what Jacqueline and her team have done, by starting up podcasts and live streaming. Ryan Bailey has been a key member of Skymind Studios since 2018. Ryan was 15 when his company ‘Unity Production’ first joined Skymind. Yes, you heard that right. Ryan founded ‘Unity Production’ in April, 2017 when he was only 14 years old. Having always had an enthusiastic outlook on music and sound, he joined his father’s band at the age of 10, as well as a theatre group in school where he connected with lots of likeminded students. Having a talent like Ryan’s and discovering it at such a young age has meant he has had a huge amount of amazing opportunities come his way, for example, the chance to start up his own company. Unity Production formed through Ryan’s love of sound, music and theatre, and to enable multi-media companies such as Skymind to hire the whole of Unity and receive all of the services they provide. With the help of sound engineer Ryan, two podcasts will be launching from the beginning of January 2021, Music & Mayhem which will consist of bands and musicians who play and talk about their lives and how they started in the music industry. The other is called ‘Tech Pod’ which will include ultimately anything tech related like pyrotechnics and computer game developers to name a few; they also have four other podcasts set to launch in mid-2021. Changing with the times and the current pandemic, Jacqueline and Ryan have decided to start live streaming their events as a way to make it covid-secure with absolutely no risk to paying customers. Skymind’s live streams will all be edited live by her and the sound is all managed by Ryan. The customer can either pay for the live event and stream it on any device or they can watch is a few days later after it has been uploaded to the internet.

Skymind Studios are starting the new year off strong, because as of January 2021, Jacqueline will have fully moved into her own office located at ‘The Huxley Hub’ Huxley Close, Plympton. This exciting new change for Skymind Studios means that generating ideas and discussing new events will be a lot easier to accomplish in the meeting rooms – not to mention a positive step for the company. Planning for a hopeful 2021 requires lots of space for ideas to bounce around the room. Their first big event of the year was unfortunately cancelled in 2020 called Flick Fest. OM had the pleasure of interviewing Jacqueline about Flick Fest last year where we learnt all about the exciting film showcase. Flick Fest is an informal film event where independent film makers from all over the world, come together to showcase their masterpieces in a relaxed setting. This year they are back and will be joined by a very special guest, Pod Pad Studios who create replicas of props from blockbuster films, such as Jurassic Park type dinos as well as the Batmobile from the ‘Dark Knight’ trilogy. This event is not to be missed and should be in the diary of every movie buff. Flick Fest is provisionally planned for 8th-9th April 2021 but it may change due to venue choices or pandemic restrictions. Park Fest will be in its 3rd year in 2021 and the event becomes stronger and stronger each year. Park Fest is an unusual mix of live music and sporting events; with a main stage and chill out stage, food traders and sports, fitness experts. Jacqueline’s kind-hearted and generous personality has meant that she donates the sponsorship money from Park Fest to raise money for The Brain Cancer charity, following the loss of her father who was a keen sportsman and marathon runner in his spare time. Within the festival, there is also a big effort made to raise awareness about skin cancer, which her father suffered from. Sun cream stations are dotted all over Devonport Park where the event is held to remind people to stay safe when out in the sun. These are just a few of the exciting events that Skymind Studio’s has in store for the people of Plymouth in 2021. Skymind and Unity hope that with the advance in vaccines, there is hope for the events industry this year, however, they have also tailored their services to provide us with virtual events and podcasts. The most important piece to take from 2020 has been
Union street Party - Dom Moore how Skymind Studios are able to adapt very well to changing circumstances. The annual Union Street Party was one of few events able to go ahead in 2020. For ten solid years, Skymind Studios have managed the sound on all three stages at the Union Street Party organised by ‘Nudge Community Builders’. With help from Ryan in recent years, they earned their spot managing the main stage at the 2020 street party. Sceptical as to how this would work given the restrictions, Skymind had to completely change the way they were used to running these stages and essentially start from scratch. Things that were never a problem, became huge obstacles, obstacles that Jacqueline and her team kept overcoming and resolving. There were many rules to abide by for example, the volume of the sound, no dancing, social distancing and not being able to share microphones. Despite all of this, they managed to pull it off with great success, even more so when they found out there had been a total of zero Covid-19 cases from the event. Both Jacqueline and Ryan work simultaneously with each other as well as helping each other, as and when is needed. Ryan spoke in the interview about how Jacqueline is the only person he can trust with his mixing desk, and Jacqui agreed the same about her desk. Having a caring and trusting friendship like theirs in the workplace not only helps their events to go smoothly and successfully, it also helps them to have a positive way of life which is reflected by their work ethic. Skymind Studios has undoubtedly been affected by the pandemic but in a way, it has made them stronger, able to prove themselves as a team as well as a company, and it has made the future of Skymind bright and optimistic as they are able to overcome huge obstacles and still perform admirably. The team at OM wish Skymind Studios a positive year and hope their events and other ventures can proceed with great success.

DON’T WORRY - BE HAPPY Start the year off right by looking after yourself. We have some great ideas of ways to stay happy and healthy this January.
A
fter the busy rush of December, typically, January is a time for starting afresh, getting fit for summer and making, somewhat, unreachable resolutions. However, 2020 has been a year of uncertainty, fear and sadness for most and we want you to start the new year in the best way possible. If you look at the year of 2020, most people might prefer to disregard it and forget it ever happened, however if we reflect on all that we have learnt this year, we might realise that this year has been a very important one. Black Lives Matter protests, Elections, Climate change and a deadly virus that made the whole world stop, yet, whilst we stopped, the canal’s started to clear up, pollution levels dropped over China, the world came together to clap for the NHS or to sing from their balconies, and I believe everybody became just that little bit more grateful for the important things in life. So with that in mind, instead of beating yourself up to get that summer Instagram body, let’s just look after ourselves and our wellbeing this month. We have gathered together some inspirational selfcare tips to help you relax and ease yourself into the New Year.
Going to sleep and waking up at a consistent time each day is also a great way to form a natural routine, even if you don’t have anything planned on that day. Equally, it is just as important to allow yourself a rest day and a relaxing lie-in, if you feel your body needs it. After-all, Christmas can be very tiring! When the temperature plummets in January – it’s all too easy to stay in bed-wrapped up in a blanket burrito, however, getting outside for some fresh air is a natural way to help heal your mind and body. We are lucky to have a wide selection of walks on our doorstep, from the South West Coast Path to Dartmoor. A furry friend always makes the day better, so an early morning Dog walk can start off your morning right. If you don’t own a dog, there are many different websites you can borrow a dog for a walk. This helps the owner out if they are busy as well as giving you the joy of walking a dog. Having little or no plans can be a great thing. You can finally finish that book you’ve been meaning to read or start a hobby you’ve always wanted to try and you can always make plans to look forward to. The news is becoming more and more positive everyday which means we might be able to have a summer to look
After New Year’s Eve, we are left with no plans in the diary – Just a dry January. We emerge out from the magical fantasy that is Christmas, the fairy lights come down and everything starts to look a little bleak. Starting a routine as soon as you go back to work can be exhausting on the body and mind, so try to start slow and plan a ‘To-Do’ list. Nothing too strenuous but easy to stick to. Gradually add more challenging tasks to your list and you’ll be back to your regular routine in no time.

WHERE TO GO FOR WALKIES AROUND PLYMOUTH It’s Walk Your Dog Month! Of course, we should be taking our furry companions on walkies every day of the year but this month, let’s make it special!
N
ew scents for them to sniff, new paths for them to tread. Plymouth has some stunning places to walk for humans, however, it gets a little bit difficult when you’ve got a dog with you. Some beaches don’t allow dogs at all and some only allow dogs at certain times of the year. Well look no further, we are here to help you by giving you a guide to where you can walk your dog this January. Grab your walking boots, winter coat, lead and poo bags, and get out into the fresh air with your furry friend. Plymbridge Woods & Plym Valley Trail Just above Plympton is Plymbridge Woods which offers a tranquil woodland walk following the River Plym. With spots where your dog can take a plunge in the water and lots of forest smells your dog can sniff out, this is a great trail. If you’re looking for a long walk to stretch the legs, the Plym Valley Trail involves a section of the Plymbridge Woods as well as 5 miles of varying terrain. This trail passes a river, an unused canal as well as the old railway line, now used as a cycle track. Keep an eye out for wildlife on this trail too! Wembury Beach Some people love it, some people hate it, but to me, there is nothing better than the smell of crisp seaweed and salty sea air on a cold winter’s day. Wembury beach allows dogs on the beach until the 1st May as well as the surrounding coastal walks. Right or left of the rugged beach continues the famous South West Coast path which feels never-ending. Head up past the church above the car park for a clifftop view of the sea or head past the beach on your right and follow the path which winds around the coastline. A particularly

windy walk is deserving of a hot cuppa, The Old Mill Café is the perfect spot to warm the cockles. They are only open on the weekend from 11am-4pm. Burrator Reservoir Dartmoor is packed full of wonderful spots to explore the wilderness with your dog. OM recommends Burrator Reservoir as a picturesque spot that is only 20 minutes from Plymouth centre. As you come into the reservoir from Plymouth, there is plentiful parking on your left next to the dam. Head over the bridge and enjoy scenic views of the reservoir and surrounding landscape. Follow the road around or head through the forest to join up with one of the many public footpaths.
Whitsand Bay Cornwall is only over the bridge too! About a 45-minute drive is Whitsand Bay, 4 miles of rugged coastline and vast white sand. Dogs are allowed on this beach throughout the year! Make sure to check the tide times before you leave because the beach gets very narrow at high tide. MONEY SAVING TIPS FOR 2021 With the possibility of a ‘normal’ summer in sight – it’s time to start saving that hard-earned cash.

hatever you may be saving for; a house, a wedding, a holiday or a new kitchen – there is no better time to start then right now!
Meat is generally the most expensive part of a meal. Try going veggie a few days a week or cut out animal products completely and go vegan for Veganuary!
Figuring out how much you are spending on certain things each month can help to notify you on where you need to be cutting back. This means digging your bills out, diving through your bank statements and making a spreadsheet! Alternatively, you can start from today, and write down everything you spent and what came out of your bank. Divide these up into categories to make it easier to read. For example: Food, Pets, Car and House.
Get on the cycle to work scheme and start saving money on fuel! The average person usually spends £67.63 just on fuel per month. Add on the car insurance, maintenance, servicing and repairs and it works out to an average of £160 per month. A lot of workplaces are unreachable on bike or their offices are not equipped with showers therefore, in nonCovid times, it is always a great idea to lift share!
Always be on the hunt to save more money and don’t be afraid to switch. With this mindset you can have a look at your utility bills and investigate whether you can get a cheaper deal elsewhere. Websites such as UtilityWarehouse.co.uk is a great place to start. It is recommended that we should be putting at least 20% of our income into savings. A good way to start is by opening up a savings account. This way, you will be far less tempted to spend it on things you don’t need. Setting up a standing order will mean the 20% you want to save, will automatically transfer to your savings account without you realising. If you do this on the day you always get paid, then you won’t feel like you’re losing money because you never saw it all in the first place. On top of your regular earnings, you could also be saving money by changing up your lifestyle. These are healthy and positive changes that can save you money and save the planet too! Firstly, cut back or try to stop smoking. The average pack of cigarettes costs £10 with 20 cigarettes in a pack. If you were to smoke 10 a-day, you are spending £1,825 a year, just on cigarettes! If you stopped now, you could be saving £18,250 in 10 years’ time. That equates to a sizeable deposit on a house!

It is definitely worth investigating because you could be saving more than £1,000 a year by switching to electric, not to mention you’d be helping to reduce global carbon emissions and save the planet! Purchasing reusable items such as shopping bags, reusable cotton buds and make up pads, water bottles, cloth towels and cloth napkins, period underwear or period pads etc. may all seem expensive at first but the point of the items are that they are made to last, therefore saving you money in the long run! Imagine having all of those essential items, always in your home, never running out. All you need to do is put them in the wash with your laundry and they’re like new again! OUR FAVOURITE HEALTHY NEW YEAR RecipeS It’s the beginning of the year and that can only mean one thing. VEGANUARY! If you would like to take part, we have found some easy and tasty recipes for you to try.
Scrambled Tofu with AVOCADO (Serves 2) 1 tbsp of olive oil, 1/2 diced onion, 2 crushed cloves of garlic, 1 finely chopped red chilli, 1/2 diced courgette, 1/2 tbsp smoked paprika, ground cumin, dried oregano. Handful of spinach, 225g smoked tofu, 2 slices of toast, 1 avocado sliced with juice of lime, coriander a handful to serve. ONE Heat the olive oil in a frying pan and add the onion, garlic, chilli and courgette, along with some seasoning. Cook for 5 minutes until softening then stir in the paprika, cumin and oregano, and cook for 2 minutes. Add the spinach and toss for another few minutes until wilted. TWO Put the tofu into a bowl and mash until it resembles scrambled eggs. Stir this into the pan and cook gently to heat. Divide between two plates and serve with the toasted bread of choice, avocado and coriander.
gREEN SMOOTHIE (Serves 2) 250ml almond or soya drink, 1 tbsp ground flaxseed, 1 tsp maca powder (optional), pinch ground cinnamon, 1 medjool date , stoned, 1 small ripe banana, handful cavolo nero or spinach, 1 tbsp almond butter ONE Pour the almond or soya drink into a highspeed blender then add the ground flaxseed, maca powder (if using) and the cinnamon. Add the remaining ingredients then blitz until smooth. Pour into glasses and serve.
VEGAN BANANA BREAD (Serves 8-10) 3 large black bananas, 75ml vegetable oil or sunflower oil, plus extra for the tin, 100g brown sugar, 225g plain flour (or use selfraising flour and reduce the baking powder to 2 heaped tsp), 3 heaped tsp baking powder, 3 tsp cinnamon or mixed spice, 50g dried fruit or nuts (optional) ONE Heat oven to 200C/180C fan/gas 6. Mash 3 large black peeled bananas with a fork, then mix well with 75g vegetable or sunflower oil and 100g brown sugar. TWO Add 225g plain flour, 3 heaped tsp baking powder and 3 tsp cinnamon or mixed spice, and combine well. Add 50g dried fruit or nuts, if using. THREE Bake in an oiled, lined 2lb loaf tin for 20 minutes. Check and cover with foil if the cake is browning. Bake for another 20 minutes, or until a skewer comes out clean. FOUR Allow to cool a little before slicing. It’s delicious freshly baked, but develops a lovely gooey quality the day after.container.

Slow-cooker vegetable lasagne (Serves 6)
1 tbsp rapeseed oil, 2 onions, sliced, 2 large garlic cloves, chopped, 2 large courgettes, diced (400g), 1 red and 1 yellow pepper, deseeded and roughly sliced, 400g can chopped tomatoes, 2 tbsp tomato purée, 2 tsp vegetable bouillon, 15g fresh basil, chopped plus a few leaves, 1 large aubergine, sliced across length or width for maximum surface area, 6 wholewheat lasagne sheets (105g), 125g vegan mozzarella, chopped ONE Heat 1 tbsp rapeseed oil in a large non-stick pan and fry 2 sliced onions and 2 chopped large garlic cloves for 5 mins, stirring frequently until softened. TWO Tip in 2 diced large courgettes, 1 red and 1 yellow pepper, both roughly sliced, and 400g chopped tomatoes with 2 tbsp tomato purée, 2 tsp vegetable bouillon and 15g chopped basil. THREE Stir well, cover and cook for 5 mins. Don’t be tempted to add more liquid as plenty of moisture will come from the vegetables once they start cooking. FOUR Slice 1 large aubergine. Lay half the slices of aubergine in the base of the slow cooker and top with 3 sheets of lasagne. FIVE Add a third of the ratatouille mixture, then the remaining aubergine slices, 3 more lasagne sheets, then the remaining ratatouille mixture. SIX Cover and cook on High for 2½ - 3 hours until the pasta and vegetables are tender. Turn off the machine. SEVEN Scatter 125g vegan mozzarella over the vegetables then cover and leave for 10 mins to settle and melt the cheese. Scatter with extra basil and serve with a handful of rocket.
EASY SINGAPORE NOODLES (Serves 4) 200g vermicelli rice noodles, 1 tbsp mild curry powder, ¼ tsp turmeric, 1 tsp caster sugar, 1 tbsp sesame oil, 2½ tbsp low-salt soy sauce, 1 tbsp sunflower or vegetable oil, 1 onion , sliced, 1 pepper , sliced (we used ½ green and ½ orange), 200g beansprouts, 1 red chilli , sliced (optional) ONE Boil the kettle and put the noodles in a large pan or bowl. Pour over enough boiled water to cover, pushing the noodles under the water to help them soften evenly. Set aside for 5-10 mins, until the noodles are completely soft. Mix the curry powder, turmeric, sugar, sesame oil, soy sauce and 1 tbsp water in a bowl. TWO Heat the wok until very hot. Add the sunflower oil, onion and pepper. Stir-fry for 3-4 mins until softened and starting to brown in places. Drain the noodles and add to the pan, along with the sauce mixture and beansprouts. Stir-fry for a further 3-4 mins, tossing everything through the sauce, until hot. Adjust the seasoning with a little more soy or sugar, if you like, and scatter over the chilli, if you like more spice.
QUICK PICKLED CUCUMBERS (Serves 10) 1 large cucumber, ends trimmed, cut in half widthways and spiralized into thick ribbons, 1 tsp flaky sea salt, 1 tbsp white wine vinegar, 1 tbsp caster sugar, ½ tsp coriander seeds, a small handful of dill, leaves picked ONE Toss the cucumber ribbons with the salt in a colander. Leave for 15 mins then squeeze out any excess moisture with your hands and pat the ribbons dry with a tea towel. TWO Mix the other ingredients together in a small bowl then stir in the cucumber.
