A PAWS FOR THOUGHT 4 weeks of non-stop pet appreciation! April is National Pet Month which means 30 days spent spoiling our furry or scaley friends (Even though every month should be Pet Month!)

I

T has been proven that pets relieve stress in work environments therefore we thought we’d hear from our Plymouth businesses who work with their pets to find out what they love about it. We also wanted to hear about the funny stories and the unfortunate accidents too! I don’t know about you but as soon as I catch a glimpse of an animal, I immediately have the biggest smile on my face. Not only do they always look so adorably innocent but all they want in life is to love and to be loved and that is very wholesome. They honestly don’t care about your looming deadlines or workload, what they do care about is your happiness and the time you spend with them instead of leaving them at home all day. Pets are completely selfless (though some cat owners may disagree) and that selfless energy is radiated throughout the workplace. Research has proven that pets can lower blood pressure, reduce stress/anxiety, prevent loneliness and uplift your mood.

Dogs, in particular, force you to get outside during your workday as they need to be walked or let out for the toilet. Taking time away from your computer and heading outdoors is going to have a huge positive impact on your mental health and stress levels. It allows you time to clear your head, prioritise things and live in the present moment rather than constantly thinking about that deadline in 2 weeks’ time. It’s hard to think creatively when stuck in an office all day. Walking also increases creativity, perhaps you could take your meetings with you on a dog walk to enhance new ideas. Pets can be very funny beings to watch and engage with. Whether they are running around in circles with a toy or slyly about to push something off of a shelf, pets always find a way to make us laugh whilst also creating a little bit of mischief. They can also boost attendance as you won’t need to rush home to look after them. Whether they’re a new pet or they suffer from a bit of separation anxiety, having them with you at work will also prevent any worries as you can always keep an eye on them. When we think of bringing pets to work, we usually think of our furry four-legged friends, however, there are also health benefits to keeping fish in nerveracking environments to calm people down. Fish tanks in waiting rooms are very popular as it acts as an escapism from the world you are in as you focus on the fish swimming around their home. The sound of the water is also proven to reduce stress and contributes to the act of mindfulness.

We spoke with Catherine Marshall of Soapy Dog to find out her thoughts of working with animals... What do you love the most about working with dogs? “I love working with dogs and making them look beautiful. My Canine customers give so much love back. Its a wonderful relaxed job with so many rewards.”

What made you want to start working with animals?

How does working with dogs make you feel?

“I’ve always loved animals from when I was a little girl, caring for my first hamster and then rabbit, to having our first dog, they give you so much. It made our family happy and complete.”

“The job makes me feel loved by all the dogs I groom but I also love making the owners smile with joy seeing there new hair do’s. It’s very rewarding. I’ve also been able to help with finding health issues with my clients pets, and help with grooming advice.”

What’s the funniest moment you’d had with one of your furry customers?

Would you recommend working with animals?

“The one funny thing that comes to mind is that my dog is actually the naughtiness customer, she is such a monkey to bath and groom, but afterwards she bounces around like butter wouldn’t melt.”

“If you have a love for animals and a big heart and up to working hard its a great job to get into. It’s not just a job it’s a part of you, and your customers are like family.”

FUNDRAISING FOR UKRAINE A team of generous Plymothians have been busy raising vital funds to help the people affected by the war in Ukrane.

We have currently raised just over £16k.

H

aving seen the traumatic images from Ukraine, Andrés Meza-Cruz called his friend Ben Hinchliffe to see what if his friends would help him drive a van of supplies to the Ukrainian border. Ben contacted his brother Mark Hinchliffe and friend Graham Roberts to help organise and spread the word. The word certainly spread and within 24 hours the plan escalated from one van and four friends to four vans and twelve drivers.

Facebook:

Devon Ukraine Support Fund Cash donations are the easiest way to contribute and can be made to Plymouth Roundtable using the following details:

Roundtable charity account: Sort code: 309668 Account number: 00598779

Again within 6 days we realised how much bigger than just us in vans it was going to be, all due to the generosity of the public and businesses, thankfully Gregory Distribution agreed to take an artic which can hold 26 pallets and after looking at the amount we raised it was far more cost effective and make the donations go further if can do several trips with artic lorries rather than vans and get much higher quantities of aid to where it needs to be Along with support from numerous local people and business we have had great support from the Devon Freemasons, Roundtables and Rotary, we even have a boy who had a 10th Birthday party last Saturday and he has donated his Birthday money gifts totalling £105 to this cause, which is absolutely amazing thing to do.

RECREATE YOUR SPACE Home and gardening remodelling tips to help make the most out of your space this Spring.

W

e renovate our homes and gardens to make the most out of the space and to be able to enjoy them for years to come. We also self-consciously update our homes to improve the market value of the property when it comes to selling down the line. Spending that little bit of extra money and time on things that are built to last will save you more money in the long run. If you can’t decide on which room to renovate, we would always recommend doing the kitchen to make the biggest impact on the overall look of the house and on your lifestyle. However, if you are renovating to sell, the kitchen may not be the place to spend your money as everybody’s tastes are different and the new owners may end up ripping it out anyway. Kitchens don’t come cheap which is why Dream Doors Plymouth offer an affordable solution by simply replacing the doors and surfaces. They have a wide variety of styles and colours to choose from and work with you to ensure you get the kitchen of your dreams within your budget. Open-plan living has been popular for many years and there are no signs of this slowing down. Allowing yourself room within your home to relax and enjoy whatever you like doing is what a home is all about but having the space to do this is often challenging. Knocking down a few walls will transform your living space whilst increasing the asking price when it comes to selling.

Extensions and conservatories are a costly decision however, they can increase the asking price of your property by 7%! Adding more natural light into your home instantly creates space and opens the room up. Extensions with Velux windows and bi-folding doors will help to flood the rest of the room in daylight whilst making you feel even closer to the outside world. Plympton-based architects, AJM Building Design can help you get the ball rolling with your expansion or renovating plans. With their impressive completed projects and multitude of building awards, your plans will be in safe hands. Doors and windows tend to be the second thing you spot when looking at a house after the overall structure. Making sure your doors and windows have been cleaned and are in good spec can transform the outside of your home instantly. Giving the front door a lick of paint and adding some potted plants on either side of the door will help boost kerb appeal. Flooring obviously runs through your whole home and although it’s not technically a statement piece, it can make a huge impact when it has been refreshed. Even just giving it a good old clean will help to bring light into the room and make the floors feel new again. Herringbone and seagrass flooring are very popular at

Taking down the kitchen wall into the living room or dining area is a popular option to start with. Kitchens were never supposed to be sociable spaces however, as time has moved on, we are entertaining more, cooking more food at home and using the kitchen space for more than just preparing food. We don’t recommend knocking down any walls before seeking structural advice first!

the moment as we are picking out neutral colours and natural materials. It also provides a base if you then wanted to add a splash of colour to the room. Don’t be afraid of a little bit of colour. Geometric patterns and contrasting colours are very on-trend but if that’s a little outside of your comfort zone, why not add hints of muted colours here and there. A dusty pale blue, mustard yellow or the lightest green shade will help to uplift your room and add a touch of personality.

Blurring the lines between the wild and the garden is a lovely way to bring in more wildlife and make you feel like you’re truly in nature. This doesn’t mean it has to look messy and overgrown at all. Flowers and shrubbery such as Lavendar, Blue Borage, Aledia, foxgloves, crocus all look stunning when in bloom and encourage bees to pollenate. If you’re unsure of how to design your garden and what to plant where, speak to the team at Man for all Seasons. Man for all Seasons is an efficient team of people who are passionate about gardening. They provide a vast range of maintenance and design services to customers all over Devon and Cornwall.

Greenscheme Solutions Do you want to cut back on the amount of garden chores so you can spend more time relaxing rather than working in your garden?

Into the garden With the world heading towards sustainability, it’s no surprise that our efforts are being reflected into our gardens too. Natural/ sustainable materials are ever-increasing in demand as we turn away from plastic. We are seeing far more quality-made garden furniture that is built to last by using steel and sustainably sourced wood instead of plastic. Your fence should encapsulate the theme of your garden whilst remaining inconspicuous. Opting for a wooden fence will pick out the natural materials from your garden whilst blending in with the trees and foliage.

With the choice of a few clever products, this is easily achievable. Artificial grass is great for those who still love their patch of green but without the mowing headaches. Artificial grass is both pet and childfriendly. Front lawn installations are just as popular as back lawns as artificial grass can give a property instant ‘kerb appeal’ – looking tidy and well-kept all year round. It is an ideal solution for sloping, smaller, unusual shaped lawns or tricky-to-access areas where it is tricky to get the mower out. Artificial grass is excellent in problematic areas such as lawns under trees which can often be bear and patchy due to lack of sunlight, or lawns that have been turned into mud patches due to leather jacket infestation. Anti-slip composite decking can be installed alongside the artificial grass to create the ideal low maintenance social space. Premium composite decking ranges look exactly like wood but do not have the maintenance draw backs and will outlast wood by many years.

Knight Fencing offers a choice of different styles and sizes as well as a beautiful range of wooden garden furniture such as gazebos, swings, picnic benches and decking. Their fencing is heavy-duty closeboard fencing with a 10-year anti-rot guarantee. They will also repair damaged fences in no time with quality materials and workmanship. Your garden should feel like an escape from the realworld and a space to relax and unwind, no matter the size. Balconies are being transformed into mini oasis and water features and outdoor living are all trending.

UNDERSTANDING EPCs WITH MICK QUICK Mick Quick, Plymouth-based qualified assessor and owner of Tech Surveys explains Energy Performance Certificates (EPCs) and any changes we should be aware of.

E

PCs are a legal requirement for anybody that is going to be selling their property or is renting for domestic and commercial use. EPCs are found on the Gov.uk website, you can find the direct link to this website by typing in www. techsurveys.co.uk, clicking on ‘Domestic EPC’ and then ‘Find Property’s EPC’ As the regulations and convention’s governing the data for EPC’s are updated the Gov.uk register can change making it a fluid certificate. Meaning that your EPC depending on construction, heating and insulation installed could be better without having to do anything extra.

Renting

To rent out a domestic property at the moment it must be at least an EPC rating of an E. Changes are coming in 2025 to increase the rating to a C for advertising an empty property, renewing or changing a tenancy. Come 2028 all domestic rented properties will have to be a C. If you currently have a rating of F or G, then you are expected to spend £3,500, as the landlord, towards measures to improve the EPC. If you have made the improvements and exhausted all avenues and are still not scoring above an E, then you can apply to be put on the exemptions register which lasts for 5 years, the landlord would then have to reapply

Selling

When it comes to selling a property, there is no pass or fail for EPC ratings however, mortgage companies favour properties with an EPC of C or above. Mortgage companies have been advised that they must reach an average of a C and therefore may not offer favorable rates for low ratings

Green Mortgages

Banks such as Halifax and Barclay’s offer incentives for properties with a high EPC rating of an A or B which

14

is known as ‘Green Mortgages’. The incentives may include a lower interest rate for a period of time or saving on costs to the mortgage for home buyers. There are green mortgages for landlords too with benefits such as lower values to let. Mick is already seeing landlords taking advantage of this by putting solar panels on the roof, installing double-glazing, changing the heating etc. to bump up the EPC rating.

Increasing your EPC

A small way to instantly increase your EPC rating is changing all tungsten-halogen bulbs to LED bulbs. 1 halogen bulb is equivalent to 10 LED bulbs in terms of energy and money. In this climate where everyone is trying to save money, this is a cost-effective way to reduce your energy bills.

Things to be aware of

If you have just installed 20cm of loft insulation and boarded it up, Mick has to be able to see the insulation and measure the depth of it with a tape measure. What he needs is evidence of the install so lifting some boards or multiple view holes will help, if installed by a contractor an invoice is always good evidence. the same for wall insulation people always insulate an external wall with internal insulation an leave no way to prove it, this can be avoided by leaving access holes again to be able to record the depth with a tape measure or contractors invoice with depth installed.

PHO RESTAURANT COMES TO ROYAL WILLIAM YARD ROYAL WILLIAM YARD BRINGS NEW, NATIONALLY LOVED RESTAURANT TO THE CITY, AS PHO ANNOUNCES ITS ARRIVAL IN PLYMOUTH

A

new arrival is set to join the vibrant array of places to eat and drink at Royal William Yard, with Vietnamese street food restaurant, Pho, on course to open its doors this summer. It promises to be a welcome addition to the city’s increasingly diverse and exciting food scene, and a boost for the local hospitality industry. Pho will be based in the iconic Grade I listed Melville Building, at the heart of Royal William Yard, overlooking the bustling marina and waterfront. In good company, Pho will be found alongside Everyman cinema, Hub Box, and coworking space BLOCK Plymouth, as the first phase of the grand building’s regeneration nears completion. A popular and growing restaurant brand, Pho has a collection of restaurants across the UK – and Plymouth will be its most southerly location. Specialising in the national dish of Vietnam (pho, a healthy noodle soup), Pho will serve up freshly cooked Vietnamese food, alongside a unique drinks menu, and outstanding service. Founded in 2005 by husband and wife, Stephen and Juliette Wall, the first Pho opened in London after the couple travelled to Vietnam and fell in love with the food. Seventeen years later, the brand is expanding its presence across the UK, with Plymouth becoming its 34th restaurant.

Catering for all, 98% of the menu at Pho is gluten free, and is accredited by Coeliac UK. In addition, 40% of the menu is vegan. The restaurant also has a strong family focus with an affordable children’s menu too. Emily Jones, Commercial Director at Urban Splash, said: “This is true regeneration in action; delicately restoring a derelict building, breathing new life into it, and hand-picking incredible businesses to call it home. Thanks to years of work by a talented team, Melville building is ready for its next chapter, and we can’t wait for everyone to see what a remarkable place it is.” “By working closely with Pho over several years, we’ve created the perfect space for them – it’s a real celebration to reach this point. Time after time we’ve brought new brands and businesses to the city, and we’re excited to welcome Pho to Plymouth. We now have a truly global food offering with something for everyone at Royal William Yard.” Pho co-founder, Stephen Wall, added: “Royal William Yard is quite simply awe-inspiring and we can’t wait to open in the Melville Building nearby other operators we know and love. We look forward to welcoming the people of Plymouth to Pho this summer.”

At the heart of the brand and central to their menu, Pho’s broths are simmered for at least 12 hours before they hit the bowl. Also on offer will be sharing starters like spring and summer rolls, spicy salads, wok-fried rice and decadent curries, plus Vietnamese beers and coffees, fresh juices, cocktails and a hand-picked wine list.

SHERFORD LEISURE CENTRE SHAPES UP PLANS FOR NEW COMMUNITY FACILITY MOVING FORWARD

A

state-of-the-art new leisure centre is set for Sherford, with plans progressing for the exciting new facility and work poised to start before the end of the year. This new community amenity will include an indoor 25-metre, four-lane heated swimming pool, sports hall, soft-play area, gym, fitness studio, café, changing facilities for outdoor pitches and courts, and a 100+ space car park. The leisure centre marks a major investment in the creation of high quality community facilities at Sherford, and will be led by the Sherford Consortium, the developers responsible for Sherford – a partnership between Taylor Wimpey and Vistry Partnerships, which includes Linden Homes and Bovis Homes. The creation of the leisure centre has always been a crucial element of Sherford’s design, since planning began over two decades ago. Sitting within the boundary of Plymouth City Council, the local authority has secured £400,000 in developer contributions towards the project, as part of its ongoing commitment to delivering healthy communities. Additional funding will also be provided by Plymstock and District Swimming Pool Association, contributing £182,000 to fund enhancements to the pool area that will ensure it is accessible to all.

Managing 12 leisure and entertainment centres across the region, LED’s inclusive and innovative approach will ensure Sherford’s leisure centre meets the needs of both residents and the wider community. The addition of a leisure centre at Sherford is a further boost to what is fast becoming a leading destination for sport and recreation. The town already boasts a skatepark, play park, multi-use game area, and tennis courts. A cricket pavilion, all-weather pitch and multiple grass pitches are coming soon. Public open green space is central to the design of Sherford and the first phase of the Country Park is already open, and will expand to 500-acres in time, with walking and cycle routes throughout the town. The local community will be invited to view plans of the much-anticipated leisure centre as part of a public consultation on Friday 20th May at Sherford’s Community Hub. both Sherford residents and those living in the wider area to view the designs, speak to a team of experts, and share their thoughts. It is expected that plans for the leisure centre will be submitted this summer and, planning decision permitting, work could start on site by the end of the year. Construction would take around 18 months, seeing the finished facility open to the public in 2024. Peter Sadler, Managing Director of Vistry Partnerships South West, part of the Sherford Consortium, said:

Councillor Mark Deacon, Plymouth City Council’s Cabinet Member for Customer Services, Culture, Leisure and Sport, said:

“We have long anticipated a swimming pool and leisure facility for this part of the city and this will be a welcome addition not just for the Sherford new town but for the wider community. A new leisure centre will not only help more people to stay active and fit but also improve our residents’ overall health and wellbeing.”

“As one of the most anticipated community facilities at Sherford, we are delighted to move forward with plans for the leisure centre, as well as welcoming LED Community Leisure as its chosen operator. This is an exciting stage for Sherford and we look forward to sharing the designs with the very community it is set to serve. This facility will make a massive difference to Sherford and the wider area; we are confident it will be a vibrant new community space, a place to be proud of, and somewhere to be enjoyed for generations to come.”

Peter Gilpin, CEO of LED Community Leisure, said:

“We can’t wait to join the Sherford community, and look forward to meeting its residents and those living in the local area, to discuss and finalise plans for the brand-new leisure facility. As a not-for-profit organisation, we reinvest our profits in to ensuring our facilities become valued community hubs, while providing everything needed for everyone to achieve their health and fitness ambitions.”

D

estination Plymouth’s new 3-year partnership with Green Tourism gives eligible businesses the opportunity to achieve the internationally recognised ‘Green Tourism Standard’ while supporting them to recover and grow in an environmentally sustainable way. Plymouth’s Rockfish seafood restaurant has committed to a more environmentally friendly future, by becoming the first business to sign up to the sustainable tourism programme. Rockfish’s owner, award winning restaurateur, fishmonger and food writer Mitch Tonks, said: “Sustainable practices are no longer optional they are essential and the more we can help each other the better we become as a whole. Everything we do and every change we make needs to align with bigger goals for our future.

“The Green Tourism programme is a great initiative that will really help drive and lock in measures to make positive change happen. I love the local element of this, that as part of local regional partnerships we can support each other to set the standard and be the best that we can be. Since we opened the first Rockfish back in 2010 sustainability has been at the core of our ethos around fish supply and as an ambassador for the MSC in the UK I want us to continue to be at the forefront as new information about supply, packaging, carbon reduction comes in, to be part of a network supporting each other to always look to improve.” 22

Plymouth businesses are invited to join the likes of Rockfish, Plymouth Gin Distillery, Mount Batten Watersports & Activities Centre, Bridging the Tamar Visitor and Learning Centre and The Box, who are amongst the 14 businesses that have taken advantage of this opportunity so far.

Green Tourism Accreditation The Green Tourism accreditation programme covers training and support to develop carbon reduction and travel to work plans, identifies how to reduce waste and plastics and how to decrease energy consumption or change to renewables. There is nothing to pay for the first year if signed up before 30 June 2022, and successful partner businesses will benefit from preferential annual fees in years two and three.

Benefits By participating in the Green Tourism accreditation programme businesses will be able to demonstrate their commitment to sustainability, help Plymouth reach its zero carbon targets and attract environmental focused consumers.

EARTH DAY - APRIL 22nd 2022 A partnership where everyone is accountable and everyone is accounted for is what will help to change the future of our planet. Businesses, governments and citizens, and it needs to happen now. Earth Day 2022 is all about ‘Investing in our planet’, whatever it takes, collectively, we can make a huge difference.

H

ere are some alarming facts about climate change that you may not be aware of.

Fact 1, Deforestation When forests are cleared or burnt they release carbon dioxide, deforestation is responsible for 12%of all global greenhouse gas emissions. Deforestation impacts 1.6 billion rural people worldwide who rely on forests for their livelihoods. Every six seconds the world losses a piece of primary rainforest the size of a football field and more than half the world’s tropical forests have been destroyed since 1960. a leading cause of deforestation is commercial agriculture, this industry accounts for 40% of all deforestation.

Fact 2, 11% 800 million people are currently vulnerable to climate change, which is 11% of the world’s population. Worldwide people have lost homes and livelihoods

26

because of the direct impact of climate change. Floods, heatwaves, droughts, and rising sea levels are all having devastating consequences on people’s lives. Bonus Fact, if climate change is not tackled, parts of Plymouth could be underwater by 2050!

Fact 3, Say Goodbye Climate Change is making our planet warmer at a faster rate compared to the previous 10,000 years, this warming has left many animals unable to escape to cooler climates to avoid extinction. One-third of all animals and plant species could be extinct by 2070 because of the changes in the atmosphere caused by anthropogenic climate change. The latest research by scientists shows that humans are responsible for bringing about a sixth mass extinction event.

Fact 4, Why 1.5 Degrees On December 12th, 2015 countries came together in Paris to address climate change and the Paris Agreement was born. The agreement, which was signed by 195 countries, aimed to reduce emissions of gases that contribute to global warming. The objective of the agreement was to limit greenhouse gas emissions to levels that would prevent global temperatures from increasing more than 2 degrees above the temperature benchmark set before the beginning of the Industrial Revolution. Since the signing of the agreement, scientists have discovered that the given the risks to our planet, and aim for 1.5 degrees limit is necessary.

Here are some easy changes that you could make to your daily life that will collectively make a huge difference.

Step 1, Do You Have Dirty Feet? How much does your carbon footprint impact the planet? Visit footprint.wwf.org.uk and answer the simple questionnaire to see how you impact the earth daily. You will get a full breakdown so you can see which areas you can change and improve to help you cut down on nasty emissions. The site has tips to help you become greener and there’s even a free app so you can really challenge yourself.

Step 2, Green Up Your Home Around 26% of our carbon emissions come from our home energy so what can you do to help. Check your boiler, windows, and insulation and see if it’s up to date with the new green standards, if it’s not you may qualify for a government scheme to help you green your home. Check your energy supplier, many of the major energy suppliers now offer 100% renewable energy, which may even be at a cheaper rate than your current fossil fuel! Turn off those lights, phone chargers, TVs, and games consoles, even on standby these naughty appliances are still eating up energy. Get a smart meter installed so you can keep track of your energy spending habits, this one is not just great for the planet but your wallet as well.

Step 3, Food, Glorious Food To avoid your food having its own plane ticket try and shop for locally grown produce, here in the Southwest we are extremely lucky to have so many local meat and veg providers. Reduce your food waste by planning your meals ahead of time and always freezing your leftovers to reheat later.

Step 4, Wardrobe Dilemmas Fast fashion is a leading cause of climate change with the Intergovernmental Panel on Climate Change calculating that the fashion industry is responsible for 10% of global carbon dioxide emissions each year and uses 1.5 trillion litres of water annually. Avoiding fast fashion brands that promote cheap, trendy clothes that go out of style quickly and instead by vintage or recycled clothes, websites such as Depop are a great way to help avoid clothes ending up in the tip. Buy quality clothes from brands that have sourced their materials ethically, good brands will have a climate statement on their websites so you can read exactly where the company ethos lies. The climate change reports that we hear about on the news are very scary and it’s easy to get wrapped up in the bleak future that our planet is headed for and give up hope entirely. However, it’s still not too late to make a huge difference. We hope that by making these small yet conscious changes, we will be able to enjoy our beautiful planet and the wildlife on it for much longer.

OUR FAVOURITE

EASTER

RECIPE IDEAS Easter Sunday is on the 17th of April this year! We have gathered together some delicious Easter inspired recipes for the whole family to enjoy.

Easter biscuits • • • • •

(Makes 18)

300g plain flour 150g white caster sugar 150g slightly salted butter 1 large egg 2 tsp vanilla extract

For the iced option

• 500g royal icing sugar • food colouring gels ONE Weigh the flour and sugar in a bowl. Add the butter and rub together with your fingertips until the mixture resembles wet sand, with no buttery lumps. Beat the egg with the vanilla, then add to the bowl. Mix briefly with a cutlery knife to combine, then use your hands to knead the dough together. Shape into a disc, then wrap in cling film and chill for 15 mins. Heat oven to 180C/160C fan/gas 4. Line two baking sheets with baking parchment. TWO Dust a work surface with flour, then roll one half out to the thickness of a £1 coin. Use an rabbit-shaped cookie cutter to stamp out as many as you can, then transfer them to one of the baking sheets, leaving a little space between the biscuits. Repeat with the other half of the dough. THREE Bake for 12-15 mins, until the biscuits are pale gold. Once cool, decorate to your liking. Will keep in an airtight container for up to five days.

Sourdough hot cross buns (Serves 12) • • • • • • • • • •

300g active sourdough 2 large eggs, beaten 200ml milk 500g strong white bread 60g golden caster sugar 1 tsp ground cinnamon 1 tsp mixed spice 1 orange, zested 150g raisins 100g unsalted butter

ONE Before you start, ensure the sourdough starter is very bubbly (if it’s not, feed it and wait until 1 tsp of the starter floats in warm water). Tip 200g of the starter into a large bowl with all but 2 tbsp of the egg, the milk, flour, sugar, cinnamon, mixed spice, orange zest and raisins. Mix with your hands until you have a shaggy dough. Cover with a clean, damp tea towel and leave to prove for 30 mins. TWO Work the butter and 1 tsp salt into the dough by squashing it in using your hands. Once fully combined, tip the dough onto a surface and knead gently for 5 mins until smooth and springy. Form the dough into a ball, then return it to the bowl. Cover and leave somewhere slightly warm for 3-4 hrs to prove until the dough has almost doubled in size. THREE Tip the dough onto a floured work surface and knead briefly, then divide into 12 pieces. Roll the pieces into balls and arrange on a baking tray lined with baking parchment, leaving some room between each. Cover with a clean, damp tea towel, then leave to prove again for 2-3 hrs at room temperature until doubled in size. FOUR Heat the oven to 200C/180C fan/gas 6. Brush the buns with the reserved egg. Tip the remaining starter into a piping bag fitted with a small nozzle, and pipe crosses onto the buns. Bake for 20-25 mins until light brown. Leave to cool slightly and serve.
