These days most of us are more than happy to travel to a good restaurant, but what if you didn’t have to travel? What if one of the best restaurants from Gloucestershire to Lands End was right here on our door step?

L

et us introduce to you Mr Moshahid Ali a man who will go above and beyond to create what has been said to be one of the best restaurants and dining experiences in the South West, Shapla Balti Cuisine. As the owner of the business, you can imagine that he has his hands full, but that doesn’t stop him from hosting the best service possible in an establishment that his customers describe as being “the best tasting Indian food in Plymouth”. We visited Mr Ali a year ago as Shapla Balti had been nominated for the very prestigious British Curry Awards. Now one year later since the OM Team last visited Mr Ali we find yet again, Shapla Balti Cuisine has been nominated and shortlisted for the 2018 British Curry Awards! Shapla Balti is the only Indian restaurant to be shortlisted for the Best in South West category from Plymouth - and when considering that this category covers everything from Lands End up to Cheltenham, it’s easy to agree what an amazing achievement that is. This is the second time that Mr Ali and his team have been shortlisted for the British

Mr Moshahid Ali Curry Awards and Mr Ali knows it won’t be their last because he has a fantastic team behind him. “It’s big thanks to my chef and my staff; they’re really hard working people. It’s a team effort. Like when you’re playing cricket, football, any team sport, no matter what a good player you are, you need the rest of the team there to win. So I believe it’s a team effort to satisfy the customers and it works. I have a great team behind me who are great to work with.” The Best in South West category is shortlisted to only eight restaurants. Shapla Balti has come away with a prestigious certificate that states their title of being one of the best in the South West. Nominations are done anonymously but after building an impressive reputation for himself in the Plympton community, it’s perhaps a bit clearer to see people would choose Mr Ali’s establishment: “The people of Plympton have been very good to us, we’ve been here a while now and we have a nice community here. We’ve seen children come in, grow up and come in with their children!” After being nominated, you are sent an application that you have to fill out to explain why you think you deserve the award. Before the awards ceremony the judges at the British Curry Awards will all make a decision after sending their mystery shopper to investigate: “They will send their mystery shoppers who will come and taste your food, see the service, quality of waiters and how they are presenting themselves.

You never know who they are but sometimes you get a feel for it because you get something like three weeks timeframe in October where they will come in. So I will normally work seven days just to make sure I’m here when they come!” “We found out we were nominated in September time.” Mr Ali tells us, “After that, they send you the golden envelope saying “you have been shortlisted”. They will give you a category and then you have to book a table to go. We didn’t win last time, but this time we’re going to do more so we can.” With hard work, with determination and if you have the willpower I think we can win. I believe that myself and my staff work hard enough to impress our customers. Mr Ali and his business partner Amirul Islam had a lovely time at the British Curry Awards and are looking forward to next year! Mr Ali believes his establishment stands above the rest because of all of the hard work that is put in: “I believe that we work very hard. Looking to the future of the business, Mr Ali has no plans to leave Plympton. After meeting with Paul last year to learn a little more about the ins and outs of KenmareHR Ltd. We catch up with him once again to find out how he and his business are doing since we last saw him.

R these days is a necessity for most businesses large or small, especially with ever-changing employment law and the introduction of GDPR. However, most of us can’t afford an employed Human Recourses specialist let alone an HR department. Meet Paul Kennelly MCIPD, now two years into establishing his Plymouth based HR consultancy business, Paul has filled a much-needed gap for many businesses now requiring HR on an ad hoc contractual basis. It’s been a year since we last interviewed Paul, so we caught up with him to find out why Plymouth businesses are preferring to choose KenmareHR Ltd. This will be his third attempt at doing an Ironman and he’s raring to get on the start line this time! The Ironman will take place in the south of France on June 30th, and just over a month later Paul and his wife Michelle will be participating in the 100 mile Ride London cycle event in August whilst raising money for Macmillan Cancer Support. MAKE YOUR HOUSE LEMONY FRESH!

T

here are many things that people associate with spring: whether that be warmer weather, daylight savings time, flowers, the dread of pollen and hayfever! I’ve always associated spring with the feeling of freshness and being energised; which is why this time of year is the perfect time to do a thorough Spring Clean! I know not everyone has the desire to clean their home in the spring, but many see this time of year as the perfect opportunity to prepare a nice tidy home in anticipation for the summer ahead, and a clean home will make for a happy homeowner! Here’s our tips on how to get your house feeling lemony fresh this spring!

1. Make a Spring Cleaning List There’s no better way to start a spring clean than getting a clear idea of where to start. Think of how you want to begin; do you want to prioritise the big jobs first? Or do you want to start with the smaller jobs that can be done a bit quicker? Regardless of where you start, if you have a plan for what you want to do, you have a clear goal of how you want to carry out your spring cleaning tasks. 2. Declutter

3. Remove pet hairs with rubber gloves Pet owners know more than anyone that pet hair clings like no other! Take a pair of rubber gloves, slightly dampen them and run your hand over surfaces to attract hair. This will also work with a slightly damp sponge too. Simply rinse off the glove or sponge when it’s covered in hair and repeat as needed. 4. Clean out your fridge This is a job that isn’t done as often as it should be, but this is the perfect time to do it. Empty your shelves and remove them from their slots and give them all a wipe down. Use a toothbrush to get into the niggly parts that are harder to reach. Take a lemon and cut it in half, place each half on the top and bottom shelf of your fridge. The lemon will naturally absorb any odours and leave your fridge feeling lemony fresh. 5. Baking Soda will be your saving grace! Baking soda is very versatile and can cause dirt and grease to dissolve easily in water. It’s a safe and effective cleaner for glass, chrome, steel, enamel and plastic. It’s safe to use around children and pets and is ideal for cleaning food preparation surfaces.

Do you have something in your home that hasn’t seen the light of day in quite some time? Get rid of it! Rule of thumb, if you haven’t used something in that last six months, then you should definitely consider throwing it away. Organise your personal items into ‘keep’, ‘donate’, or ‘throw away’ sections and make sure to have these clearly labelled to avoid throwing something out by mistake.

WINSTON CHURCHILL MEMORIAL TRUST The Winston Churchill Memorial Trust runs the Churchill Fellowships, a unique programme of overseas research grants. These support UK citizens from all parts of society to travel the world in search of innovative solutions for today’s most pressing problems.

E

very year, the Winston Churchill Memorial Trust awards 150 Fellowships. These fund outstanding individuals to travel for 4-8 weeks, anywhere in the world, researching a topic of their choice among global leaders in their field. On their return, the Trust will help them to share their global learning with professions and communities across the UK. The Trust was established in 1965 following on from Sir Winston Churchill’s death. It was created as a national memorial to his achievements as a national leader. Plans for this had been developed over many years before his death with the approval of both himself and his family. Soon after Churchill’s death, the people who had worked closely with him launched an appeal across the country which raised approximately £2.5 million in the day’s money (about £40 million in today’s values). This money was invested and that is now the core endowment that the charity operates from to this day. Malcolm Harrison is the Chair of South West Regional Association of Winston Churchill Fellows. Malcolm applied to become a Fellow in 1995 and he tells us that it all happened very last minute:

Malcolm Harrison “I was at the London Chamber of Commerce and Industry and picked up a leaflet “Chance of a Lifetime” and on the train back to Plymouth I read through the categories and spotted one that said Training, Education and Industry; well I was the Materials Manager for British Railway at the time and we were developing an NVQ for Railway Store Keepers, so it was exactly what I was already doing. I thought if I don’t apply, I won’t go anywhere, if I do apply I probably won’t get it but at least I will have given it a chance.” I only had about 4 or 5 days until the closing date, so I had to send off for an application form, quickly fill it out and post it back. Malcolm’s application was successful and in early 1996 he undertook a six week tour of railway operations in Hong Kong, Australia and USA, the information he gathered was put to good use in practices back here in the UK. The idea of the Fellowship is that if you’re awarded a Fellowship you get funded to travel for 4-8 weeks anywhere in the world where you think you can find interesting ideas for the topic of your Fellowship. The topics are chosen by the applicants and they typically choose it by observing something in their everyday lives that they think can be done better. Jonathan Lorie - the Communications Director of the Winston Memorial Trust - explains the various responsibilities that a Fellow takes on:

the best practice that’s happening anywhere in the world. Their major responsibility is that when they come home, we ask them to make a real effort to share what they’ve discovered with people.” Mark Parry is a Marine Biologist based at the National Marine Aquarium in Plymouth who has recently been awarded a Fellowship. Mark is passionate about Aquatic Plants and will be travelling out to Abu Dhabi on the first leg of his journey to find out how they manage and fund their research: “Aquatic plants are some of the fastest disappearing habitats on the planet and seagrasses are the most widespread.” Mark explains, “I spent a lot of time in the aquarium looking at seagrasses in the UK and along the south coast and it’s in quite juvenile stages of how we manage that feature of marine protected areas in comparison to other places around the world – which is the whole concept of the Fellowship.” Mark met a Fellow in the Galápagos who encouraged him to apply; five years later he made the decision to fill out the application and has been awarded a Fellowship to begin his travels in April this year. The Fellowship is open to absolutely every UK citizen. You have to be 18 or over and you have to be a resident in the UK, otherwise, there are no requirements whatsoever. The Winston Churchill Memorial Trust has a saying that a Fellowship is for life. They will continue to support them for many years after their return. The projects funded by Winston Memorial Trust are very

much led by the individual and how they want to progress their project. Quite often they are like a cause for them, it’s often something that they’re really passionate about and so our job is really just to do it in the range of ways they want to. Jonathan Lorrie tells us about one of the most moving Fellowships they had: “One of the most moving Fellowships recently was a couple who had lost their son who was in his 20s. They got very interested in how families cope with bereavement, so they went to America and talked to various bereavement projects and groups over there.” “They made a film about their travels across America and talking to people who had been in the same situation and found ways of coming to terms with it as much as you can. The film is now on general release in cinemas in the UK, so that’s a really unusual way to progress what your cause is, but we helped them with that by publicising the launch and so on and so forth.” The documentary film is titled ‘A Love that Never Dies’. For example, I’m in and out of the House of Lords, I go to meet John Bercow (Speaker of the House of Commons), I’m a member of the National Liberal Club, I’m a Fellow of the Royal Society of Arts all thanks to the arrangements between the Churchill Memorial Trust which has opened doors.” As the Queen is patron to the Winston Churchill Trust, Malcolm was invited to meet her in March 2015 on the 50th anniversary of Churchill’s death. Recipe ideas

Spring is finally here - although with the weather we had in February, it feels like it arrived a lot sooner! If you’re starting to fresh up your home with a bit of spring cleaning, this may be a good time to revamp and freshen your meal ideas with some of our favourite seasonal recipes!

spring salmon with minty veg 750g small new potatoes thickly sliced, 750g frozen pea and beans, 3 tbsp olive oil, zest and juice of 1 lemon, small pack of mint leaves only, 4 salmon fillets about 140g/5oz each ONE Boil the potatoes in a large pan for 4 minutes. Tip the peas and beans, bring back up toboil, then carry on cooking for another 3 minutes until the potatoes are tender. Whizz the olive oil, lemon zest and juice and mint in a blender to make a dressing (or finely chip the mint and whisk into the oil and lemon. two Put the salmon in a microwave-proof dish, season, then pour the dressing over. Cover wiith cling film, pierce, then microwave on high for 4-5 minutes until cooked through. Drain the veg, then mix with the hot dressing and cooking juices from the fish. Serve the fish on top of the vegetables.

ASPARAGUS, SUNDRIED TOMATO AND OLIVE LOAF 100ml olive oil plus extra for greasing, 250g asparagus spears each cut into 3 pieces, 200g self-raising flour, 1 tbsp thyme leaves, 3 large eggs lightly beaten, 100ml milk, handful of pitted black olives, 100g sundried tomatoes roughly chopped, 100g of gruyère or Beaufort grated ONE Heat oven to 190C/fan 170C/gas 5. Oil and line the base of a loaf tin (approx 22 x 10 x 5cm) with baking paper. Cook the asparagus in boiling, salted water for 2 minutes, drain, then cool quickly under cold running water. Pat dry. TWO Mix the flour and thyme with seasoning in a large bowl. Make a well in the centre, then add the eggs, milk and oil, stirring all the time to draw the flour into the centre. Beat for 1 minute to make a smooth batter, THREE Reserve 5 asparagus tips and a few olives. Add the remaining asparagus, tomatoes, olives and two-thirds of the cheese into the batter. Pour into the tin, then put the reserved asparagus and olives on top. Sprinkle with the remaining cheese. Bake for 35-40 minutes until the cake feels firm to the touch and is golden and crusty on top. Cool in the tin for 5 minutes, then turn out and cool on a wire rack.

hot cross bread and lemon pudding

greek roast lamb

Knob of butter for the dish, 4 stale hot cross buns, 200g lemon curd, 2 large eggs, 200ml double cream, 200ml milk, 1/2 tsp vanilla extract, 4 tbsp caster sugar, little lemon zest, cream or vanilla ice cream to serve

1 large leg of lamb, 6 garlic cloves, 1 bunch oregano, zest and juice 1 lemon, 6 tbsp olive oil, 1 1/2kg of new potatoes, 400g can chopped tomato, large handful of pitted baby kalamata olives

ONE Butter a 1-litre baking dish that will quite snugly fit the buns. Cut each bun into 3 slices and sandwich back together with a generous spreading of curd. Arrange the buns in the dish.

ONE Heat oven to 240C/fan 220C/gas 9. Pound the garlic, half the oregano, lemon zest and a pinch of salt in a pestle and mortar, then add the lemon juice and a drizzle of olive oil. Stab the lamb all over with a sharp knife, then push as much of the herb paste as you can into the holes.

TWO Whisk egg, cream, milk and remaining curd, then sieve into a jug with the vanilla and 3 tbsp of the sugar. Pour over the buns and stand at room temperature for 30 minutes for the custard to soak in. Three Heat oven to 160C/fan 140C/gas 3. Scatter the remaining sugar and lemon zest over the pudding. Bake for 30-40 minutes until the top is golden and the custart gently set. Stand for 5 minutes, then serve with cream or vanilla ice cream if you like.

RHUBARB SPICE CAKE

TWO Tip the potatoes into a large roasting tin, then toss in the remaining olive oil and any remaining herb paste. Nestle the lamb amongst the potatoes, roast for 20 minutes, then reducce the temperature to 180C/fan 160C/gas 4. Roast for 1hr 15m for medium rare, adding another 15 minutes if you prefer your lamb medium. Baste the lamb one or twice with the juice and toss the potatoes. When the lamb is done to your liking, remove from the tin and let it rest. Throw the rest of the oregano in with the potatoes. 140g butter softened plus extra for greasing, 300g self-raising flour, 2 tsp mixed spice, 1tsp ground ginger, 100g dark muscovado sugar, 250g golden syrup, 1sp bicarbonate of soda, 2 eggs beaten, 300g rhubarb cut into short lengths, icing sugar for dusting ONE Heat oven to 180C/fan 160C/gas 4 and put the kettle on. Butter and line a deep 20cm square cake tin. Sift the flour and spices into a bowl. Beat together the butter and sugar until light and fluffy in the food processor, then beat in the golden syrup. Dissolve the bicarbonate of soda in 200ml of boiling water, then gradually pour through the spout of the processor. Pulse in the flour, then add the eggs, mixing briefly. Remove the bowl from the processor, then gently stir in the rhubarb. TWO Pour the mixture into the tin and bake for 50-60 minutes, until the cake feels firm to the touch and springs back when pressed. Cool in the tin for 5 minutes, then turn out and cool on a wire rack. Dust with icing sugar,
