We have a business profile from PL7 Studios and Community Photographic Studios CIC. We spoke with owner and founder, Hannah Cochrane to find out more about the photography sessions they offer and the amazing work they do for the community of Plympton. in child and family photography. As well as a First class degree, she also received two awards; the Principle’s Commendation Award, which was the highest award given out in her year and a Photography Award.

A strong passion for photography has enabled business owner, Hannah Cochrane to enrich the lives of people from her much-loved community that she grew up in. With a watchful eye, Hannah had noticed there was a lack of accessible and affordable activities outside of sports clubs and coffee mornings for people to socialise within Plympton. Photography is a medium that can be enjoyed and practised by everyone, it opens itself up to be not only taking a photograph, but a mindfulness tool and a platform to engage with other like-minded people. With two businesses under her belt, PL7 Studios and Community Photographic Studios CIC she has managed to successfully bring her vision to life. Born in Plymouth, Hannah began setting up her career from a very young age. She fell into the hospitality industry at the sprightly age of 17 and soon became an assistant hotel manager by 18 years old. With a strong devotion to her work, she jumped at every opportunity that would enrich her career and in return. Having worked up to a managerial role, she then became part of the training team, teaching staff at new hotels across the country. Since having her children in her mid-late 20’s, she realised that the hospitality hours no longer fitted with being a mother and she sought to do something new and creative. Photography and the arts have always been something Hannah was interested in. Despite being dyslexic and having struggled at school, she wanted to prove herself worthy of a degree. She applied for an access course in 2013 and then dived into a 3-year photography degree. As a mature student at Plymouth College of Art, Hannah was captivated by the subject of commercial photography and delved into the course seeking to learn all there was to know about the subject and its history. During this time, she also developed a keen interest

Being determined to develop a career in photography, she tested herself even further by completing a Masters of the Arts degree in entrepreneurship for creative practice. Whilst learning a lot about building up business through image sharing and doing family and wedding photography as well, she developed another interest in teaching which is now common practice in her work, covering all generations from children to veterans. Hannah owns and is managing director of 2 photography businesses, ‘PL7 Studios’ which is the commercial photography business and ‘Community Photographic Studios CIC’ which is a social enterprise, which along with herself, she has the help of Glenn Jordan a Plympton local Councilor and Lily Luscombe from LS Online Marketing who are also both directors of the social enterprise. To support the social enterprise, she puts a lot of work into the commercial photography side, which allows her to support the community projects with free photography sessions. PL7 Studios was, up until June 2020, known as Hannah Marie Photography, specialising in family, child, newborn and food photography; having begun working as a freelance photographer alongside her studies. She has since branched out and created the brand new venture known as ‘PL7 Studios’. Within PL7 Studios, they not only offer affordable photoshoots if you just want a super studio with all the lighting, but they also teach photography in group sessions or on a 1-1 basis.

Other courses include a 10-week commercial photography course and a 6-week beginners photography session, which is one of their most popular courses. This type of course will only cost you £99 if you get the early bird voucher. There are monthly portfolio builders with a supply of props, costumes, models; fire, water and lots of fun - to get everyone involved and taking pictures they’d never have dreamed of. Following on from these courses, you go away with a stunning portfolio and a reference from Hannah to use in applications for a degree, or to put you in a strong position to get a job. Some attendees have already been successfully accepted into university degree courses.

Behind the scenes at a Photography Course Kids holiday clubs and the Art and Photography Saturday club are very popular for 8–14-year-olds. During the day, the children carry out an art task as well a photography challenges; these can range from graffiti painting, watercolour painting, collages – mostly those things that are too messy for home, as well as plenty of photography in the studios and out on location in the local area. Hannah wanted to create this side of her business for young people who may not be interested in sports clubs. This is an activity that is enjoyable for those with a creative interest but still embodies the same social element.

Hannah is particularly passionate about food photography and works with several restaurants and food suppliers across the Southwest. Community Photographic Studios was founded by Hannah 3 years ago as part of her Master’s Degree and was CIC registered a year later. Her ethos for this business was to give back to the community she grew up in. She began creating free photography sessions for veteran’s and the over 50’s and worked closely with Help For Heroes. The social enterprise is funded by various government schemes as well as the Arts Council, Devon Community Fund and The National Lottery which enables them to put on free community sessions. They are also supported by local councillors and the new Lord Mayor of Plymouth, Terri Beer who asked Hannah and the team to be her official photographers this year.

Hannah wanted to offer sessions to people who have struggled with mental health, anxiety or isolation and bring a community together through photography. As well as the free sessions for Forces Veteran’s and over 50’s, they also offer vibrant and exciting youth projects, to encourage children and teenagers off screen-time, off the streets, and into a new hobby.

The business photography side of PL7 Studios involves working with other businesses helping to advertise their company’s services or products using creative images. We take a wide range of professional photos for social media content and these images form a great structure to a business when put on

They will generally start with a social time over cake and coffee, then they are shown a 10-minute PowerPoint presentation with the theme of their next challenge to focus on - each session is different. use one of the 10 cameras we can lend at the studio. The sessions are very photography based, perfect for learning a new skill or perfecting a growing passion; but here, they also have a place to meet other likeminded people. The veteran’s benefit hugely from these sessions, as they may be suffering from PTSD or just the loss of the camaraderie which are so much part of active Service life. The youth projects collaborate with the local police and community groups - seeking to engage teens in the local area who would benefit from educational talks and an evening of creative challenges. This project is run over 4 weeks and starts in May 2021. In May 2021, they are also starting some personal development sessions for women. Collaborating with local business Wild Daisy Personal Development, There will be full day funded workshops, which will include sessions about women’s personal development, with mindfulness photographic activities. These will be studio-based with nature walks activities. Community Photographic Studios CIC is much more than a photography studio, it is a hub for the community of Plympton, providing a safe, stimulating and creative educational environment for all. In an image drenched society, with ever-increasing career and personal interest opportunities through photography. The CIC is working with young adults to help to enhance their creative outlook, gain core skills and enable future employment. The CIC is launching a Plympton Community Work Experience scheme for 18-20-year-olds to gain core work experience in the Plympton area across a range of local business, giving them the experience needed for future employment. In addition, there are new and exciting entrepreneur workshops for 18-25-year-olds launch in May of this year. They also organise photography trips - not only around Plymouth but the world! They have taken a group to Italy for 5 days and practised street and landscape photography and a group to Sweden to photograph

Over 50’s Photography Session the Northern lights and learn astrophotography. These trips are open to anyone with a keen interest in extending their photography experience. These sessions and trips are advertised and available to book via the Facebook page @ CommunityPhotographicStudiosCIC. All of the links you can find there and everything is booked through Eventbrite. With the lockdown end in sight, by 19th April, Hannah hopes to bring back family photoshoots and 1-1 sessions in the studio along with outdoor workshops with reduced group sizes. Come 17th May, group sessions of up to 5 can start back up again in the studio. If the Covid-19 Roadmap rules keep to the stated dates, then by 21st June, there will be no limit to group sizes and things will function as normal. The two businesses are currently hiring two new members through the government’s new kickstart programme. They hope that in 2 years, we can permanently expand the team which means we’ll be able to do a lot more courses and sessions and create larger projects for the local community. It is clear to us that Hannah is very passionate about not only photography but teaching and watching people grow through teaching a creative subject. The work that she has done to enable the community to thrive in these courses and free sessions is truly admirable. HOW TO ATTRACT WILDLIFE TO YOUR GARDEN Whether you have a spacious garden, small balcony or a window ledge, there are plenty of ways to be a part of the larger network connecting urban green spaces with the unrefined countryside; enriching a wilder future. Bird Feeders Hanging bird feeders or fat balls around your garden or balcony not only helps the birds to gain easy access to nutritious food but also allows you to see the birds up close and you may even be lucky enough to see breeds of birds that you haven’t seen before. Make sure you place the bird feed as far away from the house as possible to encourage the birds to feel comfortable eating in your garden. Birdbaths Having a source of water is critical for birds, especially in the summer. Streams and puddles have dried up and if it has been an extremely hot summer, ponds can also dry up which means birds are left with a very rationed water source. Birds not only use water to drink out of but they also wash themselves to cool off and keep their feathers in good condition. There are many birdbaths on the market to choose from or you can make your own! Use a shallow, watertight dish that has sloping sides and no bigger than 10cm in depth. Bee’s favourite flowers In the summer months, the best flowers to attract bees are Allium’s, borage, catmint, Cirsium rivulare, lavender, poppies, foxglove and most herbs. You can buy all of these plants, already grown in most garden centres or nurseries or you can get green-fingered and sow seeds. “Bees like a banquet, not a snack” – RSPB. So, make sure to plant the flowers close together and lots of them! Don’t forget to plant them in a sunny spot and water them frequently in hot weather.

Best window box flowers for bees & butterflies Herbs such as basil thyme and mint thrive in window boxes however, if you leave them be after a while they will begin to bloom flowers. Bees and butterflies love these flowers! You can buy the herbs from your local supermarket in pots or you can plant them yourself from seed. Hedgehog Homes Create a safe home for hedgehogs in your garden can be relatively simple and you may only need to adjust a few things in your garden as it is. By all means, you can purchase a hedgehog house however, the hedgehogs’ surroundings must be safe and accessible first. Firstly, clear away litter and tie up any netting and make sure it is stored correctly away from reach of wild animals. Ponds are a great attribute to a garden home to hedgehogs however, although they are capable swimmers, if the sides of the pond are too steep, the hedgehog won’t be able to get out. Think about installing a ramp or add in some stones around the edge of the pond. Allow a section of grass to grow wild! This is not only beneficial to hedgehogs but all kinds of wild animals, bugs and insects. Welcome hedgehogs into your garden by cutting a 13cm square hole for them to pass easily from garden to garden. If your fence backs onto your neighbours, make sure you ask them first! Plant some fruit trees such as cherry trees as this will give the hedgehog something to forage when the cherries drop to the floor. If you already have a veg patch and are having trouble getting rid of those pesky slugs, have no fear because hedgehogs love to eat all kinds of slugs, beetles and caterpillars. “Together, our gardens are a vast living landscape. STAY HEALTHY AFTER LOCKDOWN Stay healthy in your body and your mind as you begin to shift back into ‘normal’ life. We have so many opportunities on our doorstep to get active this summer!

o, 2021 hasn’t had the best of starts however, there has been a lot of promising news in 2021 regarding the pandemic. The vaccine roll-out has been and is continuing to be very successful and the governments easing of covid restrictions has set out a roadmap to better days to come. Now that summer is looking to be relatively ‘normal’ in terms of the restrictions, it is important not to push yourself to reach that ‘summer body’ goal. The pressure around men and women to achieve the ‘perfect summer body’ is very unrealistic, and fuelled by social media accounts flaunting their own ‘summer bodies’. 9 times out of 10 these images have been edited or taken in a way that only shows their best angles. After all, they will only post what they want you to see.

You may not feel ready and you may leave straight away but allowing yourself to do something whilst your there is a great start. Even just 20 minutes in the gym will help give you the motivation you need to go again. That being said, try not to lift too heavy as this can cause injuries and consequently won’t make you stronger any faster. Try to enjoy the workout you are doing. Believe it or not, it can be fun as well as challenging! Start by doing an exercise you particularly enjoyed doing pre lockdown, this can have a positive effect on your mental health too.

Try not to get overwhelmed by these images and set your own small goals in terms of overall health and fitness. Setting small, personal goals or just a goal to be healthier, in general, is a far more effective way to feel fulfilled by the work you are putting in rather than looking at somebody else’s body and saying “I want to look like that”. We all have different body shapes and sizes and that is what makes us unique! As you begin to reach your own goals and feel healthier, this can help to make you feel happier about your body and put you in a better mindset quicker as opposed to setting an end goal and struggling to achieve it.

Gyms are particularly busy between 5-8 pm, so try your best to avoid those times if you are worried about crowded places. Going in the morning is usually a quiet time to go and it puts your mind in a positive place for the rest of the day.

Get outdoors The weather is beautiful in May so why not get outdoors and soak up some vitamin D! – Always apply sun cream. Whether you’re walking, cycling, jogging or doing a spot of yoga, getting outside and breathing the fresh air instantly relaxes your mind and makes you feel refreshed. Walking is one of the best forms of exercise because we do it every day. Begin to pick up the pace and increase the length of your walks to feel a difference in your health. If you are close enough, walk your children to school, this way you have ticked two things off your to-do list in one go.

Water sports Being an ocean city, water sports and wild swimming are all very easily accessible. The list of water sports you can do are endless in Plymouth and the wider area with instructors, courses, sessions and kit hire available for almost any activity. Get on the board, in the boat or swim in the sea this summer! If you love outdoor swimming but the thought of going into the Plymouth Sound makes you anxious, our very own Tinside Lido & Mount Wise Swimming pools are open from the 1st of May!

We are gifted with such an abundance of places to walk in and around Plymouth, it would be rude not to. From coast to countryside, Dartmoor to the city centre, we are so lucky. The South West Coast Path will give you all the views of our spectacular coastline and The Dartmoor Way will take you into the depths of the moors.

Eating healthy Having a balanced, healthy diet along with regular exercise is where you will begin to see improvement in your overall health. Depending on your physique, you may require more or less of a particular food group than somebody else so make sure you do your research and take into account the type of exercise you are doing. Diets are a tricky one. They may work within the first month or two but sticking to a strict diet is challenging in the long run when the cravings come back. Stick to healthy foods but don’t be afraid of carbs and throw in the odd treat here and there to satisfy your cravings and keep your mental health happy. Get your trainers or wet shoes on, grab a bottle of water and go for it!

All social contact regulations will be removed.

Pubs and restaurants can seat customers indoors.

No legal limits on weddings, funerals or other life events.

These last two stages all depend on four key factors for them all to go ahead as planned. The vaccine programme must continue to be rolled out as planned and the vaccine must show a clear reduction in the number of deaths from the virus. Infection rates do not risk a rise in hospital admissions and any other covid-19 variants don’t change the risk of lifting restrictions. With all of this in mind, it is important not to get over excited and forget that we still have a very important part to play in this process. Be patient and abide by the rules and hopefully we will all be able to have a wonderful summer and get back to normality very soon.

MAKING WAVES We have seen a massive increase in water users in Plymouth, already the UK’s busiest coastal RNLI Lifeboat Station. Sea swimming has seen an incredible increase in popularity with The Guardian recently reported a staggering 323% increase in Brit’s swimming outdoors in 2020 as well as SUP which has grown in popularity with many people taking to the water. However, sea swimming and water sports do not come without risks and many are not aware of the dangers.

W

ith this in mind, three friends with a passion for the water and a desire to keep people safe whilst using it meant that the Plymouth initiative Wave after Wave was created to make real, practical improvements for everyone’s safe enjoyment of Plymouth’s beautiful and popular Firestone Bay. Building on the existing work of the Making Waves Plymouth project, they have joined forces with South West SUP and Ace Swimming at Royal William Yard. As a collaborative they aim to address some of the safety issues that surround enjoying the water at Firestone Bay, ensuring all bay users are aware of dangers and have access to equipment to keep them safe in and on the water. Marcus Cronin, Co-founder of Wave After Wave, commented “The increase in people using the water and the sense of community that has built up around that is brilliant to see. There are risks involved in swimming or paddling at Firestone Bay though and we want to help minimise these risks. In the past year, SWSUP instructors have carried out numerous rescues, first aids and given out lots of advice to members of the public which

We want everyone to be able to access the water, beaches and unique coastline that we have in Plymouth by also keeping themselves, their families, and other users safe and respected.” Wave after Wave has already secured funding to provide free use of buoyancy aids from The Shack coffee shop in Firestone Arch, which water users can borrow on loan, free of charge ensuring that they are safe on the water. But the work does not stop there, with so much more that could be done to bring safety features and equipment to Firestone Bay for water users. Without access to funding, they have started a fundraising campaign, this campaign will aim to raise £15,000 to provide the following: • A defibrillator, easy and safe to use by anyone. Close to the beach at Devil’s Point • A beach webcam that would provide water users with live conditions, meaning everyone could plan their activity better. This would also link for surveillance by harbour authorities and the RNLI providing valuable information in an emergency. • Create new signage at all access points. Highlighting designated swim areas, safety equipment etc. • Improve access to the water through Firestone Arch. • Lastly, improve access to watersports for all, by running subsidised water safety days and kids’ club sessions. Firestone Bay users have already started donating but they need more awareness and more people to donate to enable these fantastic safety initiatives to be actioned. BUYING A HOME IN 2021 Whether you’re looking at moving house or want to stop paying rent and start up a mortgage, we have gathered together some tips to help make this daunting process that little bit more straight forward.

P

urchasing a house is one of the most expensive investments you will ever make so it is important to consider everything, including schemes that are designed to aid you and how the current property market in 2021 is looking. After the third (and hopefully last) lockdown in the UK, the housing market has become a friendlier place for first-time buyers. Although the overall house prices are expected to rise by 4% this year, the recent extension of no stamp duty and 95% mortgages have made jumping on the housing ladder a bit more affordable. As well as this, there are three government-backed schemes, all in a bid to try and encourage you to take that step and become a homeowner this year.

95% Mortgages has recently launched on the 19th April 2021 and will be running till the end of 2022. This scheme means you can apply for a mortgage with a 5% deposit as opposed to 10% for credit-worthy buyers. Saving for a deposit on a house is usually the most challenging part, as it is such a big sum of money to put down and can take years to save up the right amount. By allowing buyers to put down half of the original deposit means less time is wasted on saving up the money and more people, especially the younger generation, will be able to afford it. “This scheme will help support the housing market and protect jobs and businesses across the housing supply chain, from housebuilders and estate agents to tradespeople, DIY stores and

Figures show there was an increase of 40% of mortgage approvals in January 2021 compared to January 2020 because of the stamp duty holiday. The government plan to keep the no stamp duty valid until 20th June 2021. No stamp duty means that buyers could save up to £15,000 in tax if they decide to move before the deadline and up to the house price of £500,000. If your house price exceeds this, you will have to pay stamp duty.

and then you need a mortgage of up to 75% to cover the rest. These percentages are higher in London. To be eligible for this, the house you are looking to buy needs to be a new-build and have a purchase price of up to £600,000, it also needs to be the only home you own and not be sub-let or rented out after you buy it. You must have all the equity loan paid off after 25 years or before this if you decide to sell. You can have the equity loan free of charge for up until 5 years, in the 6th year, your agent will help you set up monthly instalments to pay it back. There will be interest rates added onto your loan after the 5th year which you will also need to pay off. However, there is no reason why you cannot pay back the loan before the 5 years, just take into account the minimum repayment is 10% of the market value of your home at the time of payment. Shared ownership means that you own a share of the property and then pay rent on the share you don’t own to a housing association. Shared ownership does not mean that you have to live with the person with who you are sharing the ownership with. There is also no restriction to the number of bedrooms within the house or the size of the house however, the properties available on this scheme are only if they have been built with the sole purpose to be shared ownership by a housing association using Government subsidy. Your household needs to be earning £80,000 per year or less to be able to apply for shared ownership. There are many benefits of shared ownership if you cannot afford to buy a home outright. The rent is cheaper than the average rent on the open market,

your deposit can be 5-10% of the share, not of the entire value of the property and you can begin with a minimum of 25% share however, this can be increased up to 100% if and when you want to. First Homes is a new scheme designed to help local first-time buyers and key workers onto the property ladder. For many young people, it can feel like a mission impossible to find a home they can afford in their local community with the house prices ever increasing. Some key workers also find themselves having to commute long distances as they cannot find affordable housing close to their jobs.

The government aims to build thousands of new First Homes within communities and offer them at a discounted price of 30% compared to the current market price. First Homes are to be bought with the sole purpose of living in, meaning you cannot use the house as an investment opportunity. If you are struggling to get onto the property ladder and you are eligible for one of these schemes, they are worth enquiring about especially if you are a first-time buyer. New builds are a great option for first-time buyers as there is no need to pay for any renovation works or maintenance as they are usually finished to a nice standard, ready to move in. They also come with a 10-year NHBC warranty covering structural defects. Another benefit of buying a new-build is the transition of buying the house is very smooth due to there being no upward chain.

Leasehold and Freehold. It is important to know whether the property you are interested in is a leasehold or a freehold. Leasehold means you own the building but not the land and freehold means you own the building and the land. As standard, flats are usually leasehold and houses are usually freehold, however, always make sure to check because new-builds are increasingly becoming leasehold. Leasehold properties come with quite a few added fees that are worth taking into account. You will have to pay an annual ground rent fee to the landlord as well as service charges. Ground rent has been seen to increase rapidly over time and expensive fees have been demanded for minor alterations. Depending on the landlord’s decision, you may not be allowed to have pets or to sub-let them. Before purchasing, find out how many more years are left on the lease as most mortgage lenders will require no less than 80 years remaining. When you are buying, always have ‘selling it’, in the back of your mind as it can be difficult to sell if the lease has less than 70-80

years left and the property value will drop.Freehold properties are free of additional charges as you own the land as well as the building. Before the 20th of June 2021, is the ideal time to buy a house with zero-stamp duty and 95% mortgages. The demand for housing is high meaning the house prices are on the up, so if you are thinking about buying but are slightly hesitant, the best time is right now. With the aid of government-backed schemes, it can be more affordable than you might think to jump on the property market.

Bank Holiday RECIPE IDEAS

Enjoy the two May bank holidays packed full of good food! We have unleashed summer into this months recipe ideas ready for barbecue week from 27th May- 2nd June. From classic cocktails to barbecue goodness!

Classic Mojito

(Serves 1- over 18’s)

• 20ml/¾fl oz fresh lime juice (or 1-2 limes, chopped) • 1 tbsp caster sugar • 2-3 tbsp fresh mint leaves, left whole • 50ml/1¾fl oz Cuban (or other) rum • plenty of crushed ice To Serve • 330ml/12fl oz glass • fresh mint sprig to garnish

Sticky Barbecue Chicken (Serves 4-6)

ONE Pour the lime juice into the glass. Add the sugar and stir until it dissolves in the lime juice. (If using freshly chopped limes instead of lime juice, crush them with the sugar using a pestle until the sugar dissolves.)

• 4 chicken thighs and 4 chicken drumsticks, skin on • 1 tbsp soy sauce • 1 tbsp cider vinegar • 4 tbsp light brown soft sugar • 4 tbsp tomato ketchup • 75ml apple juice • 1 tbsp Dijon mustard

TWO Throw in the whole mint leaves, letting them fall where they may, even letting them stick to the sides of the glass. The glass should be loosely full of mint. Pour crushed ice over the mint leaves to fill the glass.

ONE Heat oven to 180C/160C fan/gas 4. Put the chicken in a roasting tin, season well and cook for 40 mins or until cooked through. Either carry on with the recipe or cool and chill. This step can be done up to two days ahead.

THREE Using a spoon, stir the ice with the mint and lime until the mint starts to break. Do not break the mint until this point. Top with 50ml of rum and stir until evenly mixed and the ice is slightly slushy. Serve with a sprig of mint on top.

TWO Put the sauce ingredients in a pan and bring to a simmer, then keep cooking until it thickens a little and looks shiny. Use straight away or cool and chill. The sauce will keep for a week in the fridge. THREE Heat a barbecue until the coals are glowing white hot. Brush the chicken pieces all over with the sauce and barbecue them on each side until they are browned and sticky, then brush once more with the sauce. Don’t worry about cooking them through, as they are already cooked. If you want to cook them indoors, coat them in the sauce and grill on a medium heat on all sides.

Grilled Peach, Burrata & Basil salad (Serves 4) • 3 tbsp extra virgin olive oil • 1 tbsp balsamic vinegar (not a syrupy one) • 1 tsp Dijon mustard • flaked sea salt and freshly ground black pepper • 2 tsp olive oil • 4 peaches, almost ripe but not too soft, quartered and stoned • 200g/7oz ball burrata, drained and torn into chunks (or 2 x 125g/4½oz balls mozzarella) • 70g/2½oz bag rocket • 1 bunch of basil, leaves only, roughly torn ONE For the dressing, lightly whisk all the ingredients together in a small bowl. Season to taste and set aside. TWO For the peaches, lightly grease a griddle pan or barbecue with the oil and then get it nice and hot. You may have to work in batches, depending on the size of your pan. Place the peach quarters, cut-side down on the griddle pan or barbecue for 1-2 minutes to give a nice chargrilled mark on them. THREE Use a metal fish slice to help lift them up so as not to leave the chargrilled marks behind. Turn them onto their other cut side for another minute (don’t cook on their skin side). The charring will add to the flavour. You can also use a frying pan to cook them, but obviously you won’t get the char-grilled lines on them. Sit the peaches cut side up on a large serving platter as you go. FOUR Arrange the buratta chunks (or mozzarella) around the peaches and scatter the rocket and basil leaves over. Scatter a little salt and pepper on top. Quickly whisk up the dressing again if necessary, drizzle it over and serve.

(Makes 1 burger)

225g–250g/8–9oz beef mince, 15% fat 1 level tsp salt ground black pepper 1 brioche burger bun (cut side toasted) 1 tbsp tomato ketchup 2 tbsp mayonnaise 1 gherkin, finely chopped ½ small red onion, finely chopped 2 tbsp freshly chopped dill 2 slices smoked streaky bacon, cooked 1 slice mature cheddar Little Gem lettuce 1 slice beef tomato

ONE Tip the mince into a large bowl and break up with a fork. Add the salt and massage with your hands until the mixture is soft and the salt is well incorporated. Cover and leave to stand at room temperature for 25 minutes. TWO For the sauce, mix all the ingredients together. Set aside. Divide the mince mixture into two equal portions and pat into two thin burgers approximately 12cm/4½in diameter. Use a small bowl or saucer as a guide if you want them to be really neat. FOUR Heat a non-stick frying pan over a high heat. Add the burgers and cook for a minute on each side or until browned and cooked through. Serve the burgers and sauce in the toasted bun with the toppings of your choice.
