HOW TO MAKE THE HOLIDAYS LESS STRESSFUL

for the whole family

Between changes in routine and visiting family (or having them visit you), the holidays can be emotionally overwhelming for children and adults alike, even in "normal times." Add in inclement weather, the desire for a perfect holiday and parents still working, and you have a perfect cocktail for emotional meltdowns.

"The key to enjoying whatever this holiday season brings is to acknowledge the range of emotions the entire family may be feeling and hold space for those feelings," said Ariel Acosta from KinderCare's Inclusion Services team. "By working on a few key things now before the heightened expectations and busyness set in, families can build a toolbox of skills that will help make the season less stressful for everyone."

Consider these tips to help families prepare for a less stressful holiday season.

• Find ways to destress as a family - Throw on some music and have a dance party. Incorporate some simple yoga moves or stretches into your day to create mindful moments. Help your children create a list of calm-down techniques to choose from when they start to become overwhelmed or as a way to reset after an outburst, such as taking a deep breath.

• Set expectations for greetings - Talk with your children about your family's expectations around greetings and help them think of and practice different ways to say hello, such as a hug, handshake, high-five, wave or verbal greeting. Giving your children options ahead of time allows them to choose the

greeting that feels most comfortable in the moment. To lessen the pressure, make sure family members and friends understand what you and your children are comfortable with. For example, "It looks like Zazil doesn't want a hug right now, Auntie Mei. Perhaps a high-five would be better."

• Give your children (and yourself) grace - Talk with your children about the range of emotions you feel throughout the day. This can help them learn emotional literacy and flexible thinking. It also normalizes feelings. When a big feeling does happen, remember to connect before you correct by labeling and validating your child's emotions: "I can see that you're really sad we have to leave the party. Leaving makes me feel sad, too. What would help you feel better?"

If your child is engaged in unsafe behaviors, like hitting, wait until after everyone is calm before talking about what could be done differently next time.

"How you handle your mistakes can be a powerful example for your children," Acosta said. "Once you're calm, explain what happened to your children. Start by naming your emotion, apologize if you didn't handle your feelings well and let your children know what you plan to do differently next time. 'I was really mad you two were arguing and I yelled. I shouldn't have done that. Next time, I'm going to try to remember to take some deep breaths to help me speak more kindly.'"

10 GIFTS NOT TO GIVE FOR THE HOLIDAYS!

lthough the precise meaning of “gift giving” has changed through the millennia, the basic idea that it is inherently “better” to give gifts than to receive them has stuck with us - especially through the Holiday Season. There are few feelings more gratifying than the satisfaction of seeing the joy on the faces of your friends and loved ones when they open a package and see they received just what they wanted to get! However, there are also certain presents that can turn your loved ones’ sparkling, joy-filled eyes into faces of stone-cold horror. Perhaps it is important to note what not to give others, no matter what holiday(s) you celebrate!

1. FURNITURE - It is often easy to look at someone’s home and see where they might need a piece of furniture. However, unless it is in your home and all parties have agreed on the item, you do not know if the person receiving the item has room for any piece of furniture or if it is even their style. Avoid giving furniture and paintings and other very personally oriented items.

2. ALARM CLOCKS - Alarm clocks are largely antiquated at this point; further, there is very little joy inherent even in the idea of an alarm clock! If you know people who only have landlines and want electric or battery-operated alarm clocks for the holidays, give them a taste of the holiday spirit by buying them smartphones!

3. USED ITEMS - Unless you know someone close to you is looking for something like a very specific antique typewriter and you know the item you are looking to buy is functioning, in pristine condition, and contains all the necessary equipment to use right out of the box, do not buy any used items as gifts for the holidays! Few people really want someone’s secondhand goods; especially during the time when you should be splurging on gifts for those close to you!

4. SELF-HELP BOOKS - No explanation is really required here. (It can be tempting… but just don’t do it!)

5. UNDERWEAR - Receiving underwear as a holiday gift is inappropriate and insulting, at best. Perhaps you are trying to get your significant other to switch from briefs to boxers; perhaps you are trying to ensure your mom has an adequate supply of undergarments; perhaps you are giving your growing teen undies that fit - whatever the scenario, this will likely imply

embarrassment, a lengthy explanation on your part, and perhaps tears. Further, if a man (or a woman, etc.) gives a woman (or a man, etc.) lingerie for the holidays, please know that the gift is given in self-interest! If this is something you are interested in doing, I recommend you wait until Valentine’s Day!

6. CHEAPER VERSIONS OF ELECTRONICS, JEWELRY, LUXURY GOODS, ETC . - If someone on your holiday gift list has “champagne taste” (someone who simply must have the newest iPhone or the season’s most popular Chanel bag), start saving immediately following the holiday season in preparation for the next year ‘s holiday. Please do not go out and buy an off-brand substitute! Even if you didn’t remember to start saving because of a hectic year, you can always give some money (or a gift card, depending on the item!) to go toward the recipient’s purchase, although it might only be prudent to do so if the gift is for someone in your immediate gift-giving circle! If a co-worker requests an

expensive item at your cost, don’t make the situation worse by giving this person something like a pair of sunglasses purchased at the nearest pharmacy.

7. APPLIANCES - these items should only be purchased if explicitly asked for as gifts. Gifting appliances not only reinforces pejorative gender stereotypes but also insinuates that you feel the recipient’s home is not very clean. Be cognizant of the spectrum of gender biases regarding appliances regardless of who the recipient is.

8. EXERCISE EQUIPMENT & ACCESSORIES

These items should also only be given if explicitly asked for; what you might think is a really nice pair of running shoes can be taken very negatively if the person opening the box didn’t see them coming! Please ensure you have a rock-solid relationship or a watertight prenup if you go there!

9. PERFUME & COLOGNE - unless someone asks you for a specific type of perfume or cologne, do not purchase these items! It can be terribly offensive to someone who really knows his or her perfumes if he or she is given a body spray set of a fragrance that person doesn’t even like! Further, many workplaces do not allow employees or even patrons to wear fragrances - just stay away from this category!

10. ITEMS THE RECIPIENT GOT FOR FREE/ REGIFTED ITEMS - These “gifts” are a popular meme in pop culture for a reason! Despite notable exemptions such as won concert tickets or cruises, giving even the most expensive gift to someone who knows you got it for free is a gamble. Even worse are gifts that have been used, disliked, and “regifted.” Such “gifts” should only be given on a “normal” day, with no expectation of reciprocity. If even the people closest to you know you gave them a used and regifted item, they rightfully obtain the privilege to potentially resent you for months or years… at best.

As a concluding remark, purchasing any items that are simply inappropriate for the recipient should be strictly avoided (anecdotal examples include a teenager receiving children’s sets of clothing when one is a teenager and a child getting a pet dog when she is highly allergic to dogs!). In general, simply use common sense! And if you happen to be purchasing gifts at the last minute and common sense evades you, please simply refer to this list!

Thanksgiving Thoughts

What does Thanksgiving mean to you? Our American Thanksgiving Day began in Plymouth Colony in 1621, when the Pilgrims who had migrated to Massachusetts, gave thanks that “the new land had been good to them” as they harvested a good crop that first year. Governor William Bradford of Plymouth Colony issued a Thanksgiving proclamation in the autumn of 1621 and a three day celebration ensued in which the Pilgrims feasted on wild turkey and venison with their Native American guests. It is similar to harvest home feasts from the old countries who celebrated when they harvested their main crops.

Actually George Washington issued a proclamation of a nationwide day of thanksgiving on November 26, 1789. Then President Lincoln formally established it as a national holiday in 1863 at the urging of Editor Sarah J. Hale, the founder of the “Ladies Magazine” in Boston, the magazine having been founded in 1828. Succeeding presidents followed with FDR establishing Thanksgiving on the fourth Thursday of November in case November had five Thursdays.

I remember dressing up with other kids as pilgrims at the Thanksgiving Program at Paradise Township School, others dressed as Native Americans or frontiersmen. We sang “We Gather Together or Come Ye Thankful People.” It made Thanksgiving real to us. We have so much to be thankful for in our land of plenty. Even with our present problems, we know in America we can solve these problems. We have hope and optimism and so many blessings. This Thanksgiving I intend to feel very thankful for my family and friends and to pray for peace.

TIPS TO HELP FIRST-TIME HIKERS GEAR UP

Being new at anything can be intimidating. What’s great about hiking is that it’s free and open to all, no matter where you live or your level of experience. You also don’t need much gear or education to get started.

Ready to find the nearest trail? Check out these three tips and hike your way to greater fitness, well-being and adventure.

FIND COMMUNITY

The world of hiking gear, apparel and footwear is vast, which might be a bit confusing for those new to the outdoor experience. Look for brands that make things simple. Creamy Mushroom Pasta Nests

Marinade:

Breadcrumbs:

Pasta:

To make marinade: Whisk olive oil, hoisin sauce, sesame oil, garlic chili paste, sesame seeds and harissa paste. Set aside.

To make breadcrumbs: In frying pan, heat plant butter. Add breadcrumbs, rosemary and garlic; saute 3-5 minutes until golden. Remove from heat and set aside.

To make pasta: Saute mushrooms in olive oil 5-7 minutes until golden. Add spinach, 2-3 minutes, and pour over marinade. Add cream cheese and whisk until creamy.

Boil pasta according to package instructions. Sieve and reserve 1/2 cup pasta water, adding to pasta sauce. Whisk constantly until combined.

Using tongs, make small nests in pasta, place on plates and pour creamy mushroom sauce on top.

Sprinkle with breadcrumbs, red pepper flakes and grated Parmesan.

VEGAN STUFFED MUSHROOMS

Prep time: 20 minutes Cook time: 20 minutes

Servings: 4

button mushrooms

2 tablespoons olive oil, divided

1 large sweet onion, diced

2 medium zucchinis, diced

sun dried tomatoes, chopped

2-3 garlic cloves, minced

1 large handful spinach

1 pinch rosemary

salt, to taste

freshly ground black pepper, to taste

finely chopped chives

Preheat oven to 350 F.

Use damp kitchen towel to clean mushrooms. Remove stalks from mushrooms. Rub with 1 tablespoon olive oil and place on lined baking sheet with empty sides up.

In frying pan, saute onions in remaining olive oil until soft then add zucchinis, tomatoes and garlic. Add spinach until wilted. Remove from heat and add rosemary, salt, to taste, and pepper, to taste.

In separate bowl, whisk flour, salt, black pepper, pink pepper, paprika and garlic powder.

Add dry ingredients and flax egg to Brussels sprouts mixture then add cheddar shreds. Mix well and let rest in refrigerator 10 minutes.

In frying pan, heat olive oil. Use hands to make one patty with 2 tablespoons of mixture.

Shallow fry 4 minutes on each side. Remove and place on plate with paper towels to drain excess oil. Repeat with remaining mixture. Garnish with mint.

Baked Tomato Goat Cheese Dip

Prep time: 10 minutes Cook time: 20 minutes

Nonstick cooking spray

2 cups RAG⁄ Simply Traditional Sauce

3 cloves garlic, divided

1/4 cup fresh basil, chopped, divided

1/8-1/4 teaspoon red pepper flakes

1 log (10-10 1/2 ounces) goat cheese, softened at room temperature

2 teaspoons olive oil, plus additional for brushing, divided

1/4 teaspoon fresh thyme

kosher salt, divided

pepper

1 large baguette, sliced on bias

blistered tomatoes, for serving (optional)

Position one rack in upper third of oven and one in lower third. Preheat oven to 375 F. Spray small, round baking dish with nonstick cooking spray; set aside.

Add sauce to small bowl. Grate in two garlic cloves then add 1/8 cup basil and red pepper flakes. Stir to combine then pour sauce into baking dish.

Smash goat cheese log into ball. Place ball between two sheets plastic wrap. Using hands, flatten cheese into thick, round disc about 1 inch smaller in diameter than baking dish. Remove goat cheese from plastic wrap and place in center of sauce. Drizzle cheese with 2 teaspoons olive oil. Sprinkle with fresh thyme, kosher salt and pepper. Bake on lower rack, uncovered, 20-25 minutes, or until sauce is bubbly and cheese is warmed through.

Note: To make blistered tomatoes: Heat skillet over mediumhigh heat until almost smoking. Add 1 pint cherry tomatoes to dry skillet and let sit 1 minute. Lower heat to low, toss tomatoes with 2 teaspoons olive oil and cook 2-3 minutes, or until tomatoes are about to burst. Remove from heat; sprinkle with pinch of salt and pepper.

Place baguette slices on baking sheet. Drizzle or brush with olive oil and sprinkle with kosher salt. Bake crostini on upper rack 10-12 minutes, flipping halfway through. When bread is done, remove from oven, cut last garlic clove in half and rub cut side on bread.

Top dip with remaining basil and blistered tomatoes, if desired, and serve with crostini.

snowman pizza bombs

Preheat oven to 400 F. Cut pizza dough into 12 squares. On each square, place 1/2 teaspoon sauce and evenly top with pepperoni, Canadian bacon and cheddar cheese.

Pinch corners of dough together to round into balls then place in muffin tins.

In small bowl, mix melted butter, garlic powder and Italian seasoning; brush generously over dough balls. Bake 15-20 minutes until golden brown.

Remove from muffin tin and carefully shape dough balls into circles; place on baking sheet. Cover with mozzarella slices and bake until melted.

Create snowman faces by decorating each with peppers, olives, spinach, mushrooms and cherry tomatoes, if desired. Use remaining sauce for dipping.

Apple Oat Crumble & Citrus Caramel Topping

3 tablespoons sugar

1/2 teaspoon ground cinnamon

1/2 cup all-purpose flour

1/2 cup old-fashioned oats

1/2 cup cold butter, diced small

1/2 cup caramel

1/4 teaspoon salt

1/2 orange, zest only

1 tablespoon orange juice

vanilla ice cream

Preheat oven to 350 F.

In bowl, stir together sugar and ground cinnamon.

Toss apples in lemon juice then in cinnamon sugar mixture. Spread in 9-inch pie dish.

In another bowl, stir together brown sugar, flour and oats. Using hands or fork, cut in butter until pea size crumbs form. Sprinkle evenly over apples.

Bake 40-45 minutes until mixture is bubbling and golden brown. Remove from oven and let cool 15 minutes.

In small pot, whisk caramel, salt, orange zest and orange juice until warm.

Spoon apple oat crumble over large scoop vanilla ice cream and top with salted citrus caramel.

Apple Stuffing Biteswith Rosemary Gravy

Gravy:

Preheat broiler.

Cook stuffing according to package directions; set aside and allow to cool slightly.

In large saute pan, melt butter saute apples and onion until tender. Set aside to cool slightly.

Stir together stuffing and apple mixture. Spread stuffing on sheet tray and allow to cool in refrigerator.

After cooling, form stuffing into medium bites and place on sheet tray lined with parchment paper.

Broil bites until golden brown and slightly crispy.

To make gravy: In small pot, melt butter and whisk in flour. Cook flour 1 minute, whisking frequently.

Whisk in beef broth, salt, pepper and Worcestershire sauce; bring to boil, whisking frequently. Remove from heat and stir in rosemary. If desired, continue gently simmering gravy to thicken.

Arrange stuffing bites in serving dish and drizzle with gravy. Serve hot.

It can be a challenge avoiding unhealthy foods that make you feel sluggish or cause a sugar crash when there are convenience stores and vending machines everywhere. That's why packing your own snacks helps to keep your travel crew satisfied while ensuring everyone is eating nutrient-packed foods. According to Kirkpatrick, travel snacks should be:

Beneficial Nutrient Profile

The most important factor is the nutrient profile of your snack. Opting for traditional car and plane foods like candies and chips can leave people unsatisfied and hungry for more, making it

hard to control portions. You want to opt for snacks that have protein and fiber.

Satisfying

Healthy eating doesn't have to be difficult or require you to take favorite meals off your family's menu. In fact, making smart choices when cooking at home can give you more control over the types of tasty, heart-healthy dishes you put on the table.

High cholesterol is one of the major controllable risk factors for heart disease and stroke, with about 38% of American adults diagnosed with high cholesterol, according to the American Heart Association. These cooking tips can help you prepare heart-healthy meals that could help improve cholesterol levels by reducing excess saturated fat and trans fat.

Cook Fresh Vegetables the Heart-Healthy Way

Roasting, steaming, grilling or baking can help bring out the natural flavors of vegetables. Adding herbs and spices can also help make veggies tastier, including combinations like basil with tomatoes, oregano with zucchini, dill with green beans or rosemary with peas and cauliflower.

Reduce Saturated Fat in Meat and Poultry

The amount of saturated fat in meats can vary widely, depending on the cut and how it's prepared. Opt for poultry and fish over red meat and look for lean cuts of meat with minimal visible fat, which should be trimmed away before cooking. Also limit processed meats such as sausage, bologna, salami and hot dogs, which are often high in calories, saturated fat and sodium.

Use Liquid Vegetable Oils in Place of Solid Fats

Some fats are better for you than others. Liquid vegetable oils such as canola, safflower, sunflower, soybean and olive oil can often be used instead of solid fats, such as butter, lard or shortening. If you must use margarine, try the soft or liquid kind.

with Grilled Asparagus

In small bowl, stir tequila, lime zest, lime juice, garlic, chipotle pepper and adobo sauce. Pour into large resealable plastic bag. Add chicken and seal bag tightly; turn bag to coat. Refrigerate 2-12 hours.

Preheat grill to medium-high heat. Lightly spray grates with nonstick cooking spray.

In large dish, sprinkle asparagus with salt and 1/4 teaspoon pepper. Drizzle with oil. Turn asparagus over to coat.

Remove chicken from marinade. Discard marinade and wipe most of it off chicken. Sprinkle chicken with remaining pepper.

Grill 8-12 minutes, or until chicken is no longer pink in center. Transfer to plate and cover with aluminum foil.

Place asparagus on grill, facing opposite direction of grates. Grill 7 minutes, or until tender crisp.

Serve asparagus with chicken.

Fireplace Safety Tips

Clutter Monster

Are you feeling overwhelmed by your stuff? Yes? Well, no wonder! By the time we’re 55+, we’ve amassed furniture, memorabilia, nick knacks, clothing, household goods, tools, collections, materials to support hobbies, kitchen gadgets, and our junk drawers are filled with mystery items. In fact, the average American home contains over 300,000 items. And while the typical size of a house has increased from 1,500 square feet in the 1980s to over 2,500 square feet today, we still don’t have enough room to store all our possessions; According to the U.S. Department of Energy, 25% of people with two-car garages don’t have enough room to park a car inside the garage! The Self-Storage Association claims one out of ten homeowners contributes to the $37.5 billion-dollar-a-year storage industry. (Yes, that was “billion” with a “b”). The State of Pennsylvania boasts over 1,600 storage facilities.

If you’re longing for more serenity and open space, less stress, and wish to follow the philosophy of “less is more,” here are three approaches to tackle overflowing cupboards and closets, dusty chachkas, perpetually lost items, bursting basements, and groaning attics:

1. DÖSTÄDNING.

In Swedish, this word is a combination of “dö” (which means death) and “stadning” (which means cleaning). In English, we call it “Swedish death cleaning.” This may sound a bit macabre, yet, in reality, it can be a profound gift to your loved ones after you pass and a gift to yourself while you’re here.

By going through your possessions and paring down now, you will spare your family members from having to tackle this task when you’re gone. Since we anticipate living for a while yet, you’ll benefit too by:

• Experiencing the joy of reliving memories as you review and sort;

• Having less stuff to clean, organize, and manage;

• Living in a home that’s easier to clean (You may feel your rooms breathing easier);

• Feeling a sense of freedom and order; and

• Owning only what is beautiful and useful to you.

2. MARIE KONDO IT.

“Sparking Joy with Marie Kondo,” where she helped people get organized to balance their home and work lives.

She advises her clients to organize by category instead of by room. For example, she instructs you to gather all your clothing and shoes at one time – from bedroom and coat closets, dressers, storage, under the bed, and from the laundry room so you can see the extent of what you own. Then you will touch each piece and ask if it sparks joy. If so, you keep it. If not, you can discard it, donate it, or sell it, as appropriate. This will leave you with a streamlined wardrobe you love and closets and drawers that are manageable. (She has special folding techniques too.)

Fall into fitness to improve balance & mobility

Falling is a common concern among seniors, particularly as a fall has the potential to be more devastating for an older adult than the small scrape or bruise many might expect. While Fall Prevention Awareness Month is in September, it's always a good time to learn more about these very real risks and ways to reduce them. A simple step like joining a senior fitness program can significantly reduce the impact of falls or even prevent them entirely. Not only are these programs effective, but as members will tell you, they're lots of fun, and you may already be eligible to participate. SilverSneakers, the nation's leading fitness program for older adults, is available to more than 18 million Americans through select Medicare plans.

The gravity of falls

Falls have been a fact of life for each of us, ever since we took our first steps as infants. While often embarrassing and

sometimes painful, as we get older, they may become more frequent with more serious consequences, including broken bones and hospitalization. More than one in three people aged 65 years or older falls each year, according to the National Institutes of Health's National Institute on Aging. Falls are the second leading cause of unintentional injury deaths worldwide.

Many factors increase fall risk. Some may be obvious such as poor vision, unsupportive footwear and hazards in the home including stairs or surfaces that easily become slippery. But other factors may seem unrelated or change so slowly that we don't notice the danger. These include difficulty hearing, single or combined medications that cause dizziness, and decreased lower body strength and ankle mobility.

Some of these issues are best addressed by a medical professional, but exercise can dramatically reduce the risk of

falls and the consequences. By engaging in activities that improve balance and build strength, you can become less vulnerable to falls. Fortunately, senior fitness programs prioritize those very things.

Developing stronger seniors

While anyone can begin exercising at any time, it can be difficult to know where or how to start. Which activities are best? How do you know if you're performing them correctly?

A Small but Mighty Club

The Kiwanis of the Poconos Daybreak Club got its start in 1976. Up to 1981 it was an all-men’s club until Carole Gehring changed the Status Quo. She was the first woman inducted into this previously all men’s club. Carol went on to be the Club President, while holding various offices before and after that. Now comes the year 2021, and the Gehrings kept it all in the family. Carole’s granddaughter, Corissa, is currently the Club President. At this time, Corissa may be the youngest female Club President.

Through the years this club worked to improve the lives of our local children. The club donates funds to provide swim lessons for our local kids, support those in the hospital, and even gives to local aspiring Eagle Scouts. This was a particular passion of the previous president Kathleen White. Recently, the club has donated money for Lifeguarding Scholarships to help close the gap in the shortage of lifeguards.

Earlier this year, the Daybreak club had its “Bike’s for Bicycles” fundraising event where we invited our local motorcycle clubs to show their bikes. Proceeds from the day went to provide bicycles through the Olsen Christmas Wish, to our local children, who would otherwise not have one.

The largest project for this small club is their Thanksgiving Meals. Meals provided by the Daybreak club go out to our local children’s families in need. This has been an ongoing project for many years. However, with the passion of our vice president, Beth Yaswinski, a representative of the YMCA, this project has now been recognized by Kiwanis International. The club was gifted a grant that will help the club more than double the meals that can be provided.
