While we were working
on this issue, one of my favorite charitable initiatives rolled around — Georgia Gives Day, which took place this year on Nov. 13. A collaboration of the Georgia Center for Nonprofits along with individual nonprofits, state agencies, corporations and businesses, Georgia Gives is a statewide effort to encourage support of local nonprofits through GAGivesDay.org, a resource that makes giving easy. Here, viewers can search causes by category or zip code among the 1,720 registered organizations, read about the work they do, and donate with the click of a button. Throughout the day, I loved watching the total amount of money raised tick upward as generous Georgians opened their wallets. By midnight on the 13th, the site had raised $1,448,233, but the number didn’t stop there. In fact, donations are still

being accepted, and at press time, the site had garnered an additional $34,000. Though we don’t have our own dedicated website, we’d like to continue the campaign this month by shining the spotlight on some of the many laudable Northside nonprofits (page 42). Because of space constraints, our list is far from comprehensive — in fact, GreatNonProfits.org lists more than 8,000 charities in the metro Atlanta area, with 509 in Roswell alone — but we do hope our guide will introduce you to organizations that support the causes you care about and encourage your own generosity this season. REVISITING AN OLD FAVORITE When Lee Schulman became the new owner of what was once known as Vinings Inn, he made subtle changes that have turned an old favorite into an all-time favorite. Adding “Old” to the name is a simple adjustment that fits the restaurant perfectly. Built in the 1880s, the building has been a village post office, an apartment building, a general store and a filling station, in addition to its past lives as other restaurants. Charm and character have remained loyal tenants over the years, and with the setting already established, Schulman only needed to bring the creative talent of Chef Don Diem into the kitchen. With a tweaked menu and masterfully prepared Southern dishes, 12

Families are encouraged to bring the kids in pjs for the movie. Reservations are required for the Day with Santa activities, which are offered Saturdays through Christmas. YOU ARE A MEMBER of Cherokee Town and Country Club or have attended an event at the historic Buckhead club, undoubtedly you are cognizant of the warm and gracious aesthetics and hospitable nature of the staff. Yet, behind the scenes the culinary staff hustles and bustles like the little engine that could, often performing miracles to appease or thrill their members and guests, particularly prior to and during the holiday season. David LaVoy Floral is charged with orchestrating festive settings throughout the club for the holiday season. For the past 26 years, his ďŹ rm has magically created vignettes, like the one for this holiday table, that are reminiscent of a Currier and Ives lithograph.
Culinary creations for an exquisite holiday table: A duo of parsnip and butternut squash soups with quince jam, pumpkin seeds, apple and polenta croutons; poached pear and goat cheese terrine with mixed baby lettuce tossed in port vinaigrette; stuffed duck roulade with mushroomleek bread pudding, roasted vegetables, braised red cabbage and cranberry; and for dessert, a glorious pumpkin gingerbread cream pie. And it wouldn’t be a quintessential meal at the club without Cherokee caramelized bacon or their signature buttered saltine crackers.

The excellence of Cherokee’s facilities, combined with its commitment to the highest standards in dining and member services, has brought the club an extraordinary number of honors and awards throughout the years. Founded in 1955 and opened in 1956, the membership roster at Cherokee is laden with Atlanta’s oldest families, top businesspeople and those who share a philanthropic zeal for assisting others in need. The culinary staff, led by Executive Chef Robert Fasce, is responsible for tending to the needs of approximately 8,000 members and their extended families at the club’s two locations: the Town Club, which occupies the famed Grant Estate on West Paces Ferry Road, and the Country Club, which is located near the Chattahoochee River in Sandy Springs. Not only is the holiday calendar like an overstuffed stocking hanging from a mantel, but scores of members host private festivities at the club with Cherokee’s culinary capabilities

While the onset of the economic downturn in 2008 sidetracked the offerings of many private clubs, Cherokee remained committed to its members’ overall experience, particularly in the dining room and wine cellar. “Our culinary team is naturally very engaged in the evolution of the club’s offerings. We listen and respond to our member’s desires,” Fasce said. “We have a changing demographic of membership here at Cherokee. We have a growing base of members in the young professional age bracket, some who appreciate a more casual mindset when it comes to dining out. Being located in a large metropolitan area forces us to be competitive with area restaurants, as well. We stay very in tune with what is happening around us.” “As far as the quality of food, Cherokee only sources the best ingredients. perfect WINE PAIRINGS Cherokee beverage manager and sommelier Silvio Garcia, who was born in Italy and raised in Argentina, was the former sommelier and beverage manager at the Ritz Carlton Atlanta and Hotel Nikko. With a stellar reputation of pairing wine with food, Garcia selected the following to pair with our holiday table menu:
SOUP 2009 Mersault, Joseph Drouhin Burgundy, France This wine is 100 percent Chardonnay grown in a vineyard located a few kilometers south of Beaune, in the celebrated terroir of Côte des Blancs (Slope of the Whites). On the palate, a silky roundness with a long aftertaste and flavors of yellow plum and gingerbread.
SALAD 2009 Chenin Blanc ‘Vouvray’, Mark Bredif Loire Valley, France Chenin blanc is a white grape variety. Its high acidity means it can be used to make everything from sparkling wines to well-balanced dessert wines. Chenin blanc is a very versatile player in food and wine pairings but the wide range of wine styles needs to be taken into account. Lighter, dry styles can pair well with light dishes such as salads, fish and chicken, and sweeter styles provide balance for spicy dishes.
MAIN COURSE 2009 ‘La Bernadine’ M. Chapoutier Southern Rhone, France This Chateauneuf du Pape is primarily Grenache with smaller proportions of Syrah and Mourvedre. The wine features an intense crimson-red color with black currant, plum, roasted coffee, cinnamon and cherry on the nose. Spice and licorice are noticeable on the palate.
DESSERT Botrytis Semillon, Peter Lehmann Barossa Valley, Australia Late harvest is a term applied to wines made from grapes left on the vine longer than usual. Late harvest is usually an indication of a sweet dessert wine, such as late harvest Riesling. Botrytis cinera (noble rot) is a mold that causes grapes to lose nearly all of their water content. Wines made from botrytis-affected grapes are generally very sweet.

meats and vegetables. In addition, we train our staff to adhere to sound cooking fundamentals and take a sincere interest in the needs of our members and their guests,” Fasce stated. During the holiday season, the culinary staff meets the challenges of engaging their members with fresh ideas and mainstays from their menus. “We change the holiday offerings annually. The club gets quite busy during the holidays, so we must plan the menus well in advance and be able to execute them in a timely manner. We use seasonal ingredients like squash, chestnuts, cranberries and more, and we often create little twists to certain dishes to add some intrigue,” Fasce said. To help with the coordination of private events, Cherokee members select and then order from the published holiday menus. Fasce and his supporting cast, which includes Williams Room chef de cuisine JohnMichael Lynch, executive pastry chef Kyongran “Alex” Hwang and garde manger chef Jonn Ken Nishiyama, created a special menu for our holiday table presentation for this issue, while legendary beverage manager and sommelier Silvio Garcia provided detailed and informative wine pairings. “The idea behind these selections was to elicit our staff’s collective interpretation of a menu with a distinct seasonal and holiday feel,” Fasce offered. “Root vegetables, roasted duck, pumpkin, cranberry, bread pudding and

gingerbread all scream autumn harvest and holidays. Many of our guests have a definitive connection to some, if not all, of these ingredients, so when they see menu descriptions that include them, perhaps it will invoke memories of the aromas and flavors of holidays past.” The Cherokee Club has a long cherished history of culinary excellence and leadership with past chefs such as Tom Catherall, Mark Erickson, Paul Satore, Kevin Walker and Fasce leading a very talented team of 40-plus. The American Culinary Federation (ACF) has awarded many of the club’s chefs as chef of the year, and the long list of medals and achievements they have garnered is impressive. Lynch, who oversees the complete development of the Williams Room dining experience, manages and trains the kitchen staff, and plans holiday and special events, was named ACF’s Southeast region chef of the year this past March. Hwang was named ACF Southeast region pastry chef of the year in 2010 and Nishiyama was named the Atlanta chapter and Southeast region chef of the year in 2011. “We have very close relationships with many culinary schools and hand-select those professionals who are the most eager, dedicated and willing to work hard. The culinary leaders on staff run their prospective areas at a very high level of professionalism and excellence,” Fasce said. Rexall Grill Nothing promises more hidden gem potential than a hole-in-the-wall eatery (haven’t you seen “Diners, Driveins and Dives?”) and Rexall Grill delivers in spades. The obscure location — inside an old pharmacy — may make you wary, but step inside this retro-style diner and you’ll understand why it’s been a community mainstay for nearly 45 years. Founded by Leonard and Hazel Anglin when their son Nelson opened Rexall Pharmacy in 1969, Rexall Grill has expanded over the years from a simple counter-service café to a full-service restaurant offering some of the best darn home cookin’ in the Northside (and you can quote us). For the past 15 years, current owner Lynda Alley has been keeping the tradition alive, serving up Southern staples like fried chicken, meatloaf, country fried steak and homemade biscuits. It’s like having Sunday dinner at Grandma’s house, if only Grandma’s kitchen was covered in Coca Cola wallpaper and paraphernalia donated by the Coca Cola big wigs and Waffle House founders who frequent this place. Expect a different special each day of the week alongside a list of daily vegetables (scratchmade mac ‘n cheese or hand-breaded fried okra, anyone?) and homemade cakes, pies, puddings and cobblers. t was no surprise that my mas-
sage table was sinking, lowering me ever so slowly into a space that was simultaneously filling with water. The massage therapist had explained with excitement what to expect on this “floating bed,” and within minutes, what had started as a traditional spa treatment transitioned into the incredible feeling of floating in what I imagined to be an indoor hammock. ON THE GREEN Notes from the fairway revealed that the greens and some of the layout can be tricky, so a forecaddie is a good option when playing this course the first time. Greens are Poa annua — very different than the bent or Bermuda grass common in Atlanta — and difficult to read. What might look like an uphill could actually be a quick downhill putt. No real grain to the grass, but a walk to both sides of the hole ensure an accurate assessment of elevation and break. The course is a canyon-style course with many tight fairways, which create fun and interesting holes. Many holes offer forgiving spots to miss, but usually on one side. My resident golfer suggested staying close to the pot bunker on the left for your drive on No. 4; miss it right and your ball is cliff diving. Also, on No. 4 and 14, you have views of the hills and canyons all the way down to the Pacific. On No. 3, aim for the trail on the hill for the perfect placement to an uphill, but reachable par 5. If you go for two on 16, behind the green is a lake, be sure your distance is right! No. 17 is one of the only holes with water in play from the black tees, so it was 214 yards and a tough shot with prevailing wind. A solid strike will still leave you with a potential tough two putt. No. 18 is a pretty short hole with lots of traps and a waterfall by the clubhouse. A 3 wood up the right side should leave you with a short iron in to finish with a solid par. preferredfamily.com

The Grand Del Mar’s interactive kids’ center offers supervised children’s programs, including a host of marine and canyon-related activities with an on-site naturalist ready for excursions such as bird watching, hiking, nature walks and mountain biking in the adjacent Los Peñasquitos Canyon Preserve. Waiting at the Explorer’s Club were several guides, plus a name tag and a backpack for each of our would-be explorers. I barely garnered a wave as they turned and ran inside. I almost took their lead and started running, but managed to keep my excitement at a more acceptable pace, power walking as fast as I could to the 21,000-square-foot spa. much as the Explorer’s Club, I prepped myself for copious pampering and an afternoon of reflection in the luxuriously appointed space of The Spa at The Grand Del Mar. The resort’s signature Renaissance Treatment fell into unchartered territory for me, but for the sake of adventure, I decided to relax and let the experts handle the rest. Before long, I was covered in mud touted to have originated from primordial locations in Europe. Once the mud was applied, the therapist wrapped me cocoonlike in blankets and the table gradually morphed into a water bed. Floating while getting a massage was hands down the best treatment I’ve ever had and that was just the beginning. Next up was a Vichy shower (my favorite) and with renewed skin aglow, the treatment finished with a relaxing massage. I would not trade those 90 minutes of pure bliss, even for a hole-in-one. An Unforgettable Hunt Always in tune with the squeals of hurt or happiness coming from either of my little ones, I instantly recognized the familiar voices emanating from the opposite side of the veranda walls. I glanced at my watch. Precious time at the spa was slipping away

almost as fast as I had slipped into a deep state of relaxation during my treatment, but listening to excited kids recount an experience is hard to pass up. And I knew this one was going to be unlike the others. They reappeared at the Explorer’s Club desk belting a round robin of “Why do we have to go now” and “Can we stay a little bit longer … please” but otherwise, they were happy and from the looks of it, had been very busy. Their resort backpacks, once empty, were filled with brightly colored sun catchers, aquatic backgrounds and sand-filled creatures. They’d finished a picnic lunch, played video games and giggled their way through a scavenger hunt around the resort. Of our family vacations to date, including this one where we spent the entire next day at Sea World, the giddiness from their scavenger hunt seems to have left the biggest impression. Six months after we bid The Grand Del Mar goodbye, we had been in the car less than five minutes before a replay of the school day’s highlight came barreling out of the backseat. My son’s teacher had asked the class about favorite vacations and while most responses followed familiar lines of breakfasts with princesses, roller coasters or sandy beaches, his answer was an unexpected one. “A scavenger hunt at the Explorer’s Club!” my 7 year old blurted, as if he had just returned yesterday. Perhaps the best part of a family vacation is hearing the stories long after our return back home. Sounds like I need to thank my kids for this one, too. PN
