S

o, how do you avoid mentioning Christmas and all the twinkle and sparkle that accompanies that festive season in your special November and December double issue? Answer: you don't, so we decided to embrace it – early! Turn to page 58 to enter our amazing competition to WIN a sackful of Christmas gifts for all the family. We are fortunate that Brighton & Hove has a vibrant retail economy spanning a wide spectrum of offerings, including a variety of major brands and also the independent, quirky shops for which we have become known, and which attract thousands of visitors. However, we do all need to support them, particularly at this time of the year, so we can retain the unique character of the city. Supporting local food and drink producers has never been easier. Local and regional food festivals and awards events have flourished over recent years, and regularly showcase the vast array of shops and producers. It is particularly hard to keep up with the growth of vineyards in south east England, and the amazing variety of quality wines now available. Never was this better illustrated than when we visited Isaac At restaurant in the North Laine area of Brighton. Isaac has chosen to meticulously list all his regional food suppliers, and it is a revelation! So too is the number of UK vineyards producing varieties of red, white and sparkling wines. You can read our review of the restaurant on page 94. We also have a great interview in this issue with petrol heads Richard Hammond and James May about fast cars and terrifying accidents on page 108, plus an interesting feature about British Olympic skier Graham Bell’s new and unusual Guinness World Records achievement. The title of ‘the fastest towed speed on skis’ involved Graham being pulled by the new Jaguar XF Sportbrake at 117 mph. You can read all about this in our motoring section on page 100. Come to think of it, that Jag might just have to go on my Christmas list!

“It felt equally dangerous to racing downhill and as scary as skiing the Streif - actually a bit scarier”

THE HILL HOUSE

I

s it really that time of year? Once you reach a certain age, time doesn’t rush, it gallops. Suddenly it's smallest Hill’s second Christmas (hot on the heels of her first birthday) and the shops are full of tinsel. I’ve given up thinking about the house in terms of ‘this time next year it will be finished!’ Instead I comfort myself with ‘this time next year maybe we will have put a surround on the toilet door!’ and try not to reach for Valium. Little things, but in these times of austerity and miserable economic news it pays to scale down one’s expectations. Happily, other than some construction and a few bits like bubble bath (always asked for, seldom received), and a lie-in (ditto), I don’t need much for Christmas. I do have a wish or two, though. Years back, my always eccentric mother started to behave in increasingly odd ways. Food was made and tipped straight into the bin. She forgot how to dress, how to write, how to use a phone. On one visit, I stood outside her house as she drove past three times, forgetting where she lived (don’t worry – my little brother ‘borrowed’ her car on a permanent basis after that to keep her and others safe). Fast forward to now, past years of denial, an emergency hospital admission, and two different care facilities. Mum, an accomplished teacher who could read braille, enjoyed men and crosswords (not necessarily in that order), and loved her dogs far more than the people around her, sits fading away. She screams when I visit, doesn’t know she has the sweetest, brightest little granddaughter who glows with love for the world she is discovering, doesn’t know what

THIS ONE IS MINE, THIS IS MINE TOO, AND THIS ONE, AND THIS ONE Are you counting all the gifts again? So what? It makes me happy to see so many presents under the tree! And they’re mine, all mine… Now, stop right there. What you’re doing is bad for your health. Eh? Lots of lovely presents for me can’t possibly be a bad thing That’s where you’re wrong. There is plenty of evidence to show it is far better to give than to receive. A 2013 study published by the American Psychological Association found a positive relationship between personal well-being and spending on others in 120 of 136 countries. This link was significant in every region of the world, and wasn’t affected by other factors such as income, social support,

outstanding young men her grandsons are growing into. Dementia is a cruel illness: Mum can’t talk, move, or feed herself. She may not have matched my childhood fantasies (I wanted home-made cookies, someone to gather me to a motherly bosom when it all went wrong… I got the mum with eyeliner, backcombed hair and a cigarette, Eau de Joy emanating from her unbuttoned shirt), but she was all I had - and she’s fading away.

“We are made, quite literally, of our memories. Spend your Christmas making happy ones” I’d give a lot this Christmas for a day for her to know her grandchildren, feel the love and warmth of their company and understand she is missed. I’d love my Mum for a day. Instead, if she’s still here, I’ll sit with her on Christmas morning with my children making bright conversation she can’t understand, opening presents she can’t enjoy, trying to make a here-and-now filled with love and family, even if she can’t hold on to it. Even if its only us that can. We are made, quite literally, of our memories. Spend your Christmas making happy ones, with the people you love, and who love you. The rest of it isn’t important.

Kate Hill

perceived freedom or perceived national corruption. Put simply, giving to others makes people feel better. I don’t know, I was feeling pretty good until you started talking… Another 2013 study carried out by US researchers at the University of Buffalo found that the act of helping other people provides a ‘buffer’ against stress, morbidity and mortality, effectively helping people to stay well and reducing their chances of becoming ill or dying. Giving to others is good for your health. *feeling very conflicted* Do you mean I have to give these gifts back? A series of experiments by researchers from the University of British Columbia and Harvard Business School demonstrated that when given a sum of money to spend, although people thought that spending the money on themselves would make them happier, it was those who spent the money on others that were happier. Maybe if you give to others at the same time it would help? Even giving to charity has benefits; neurological studies show that giving to charity activates areas of the brain associated with reward and release of feelgood neurotransmitters like oxytocin (the ‘love’ neurotransmitter) and dopamine.

BUILD YOUR DREAM HOME Richard Zinzan from ARCH-angels Architects on building your own grand design...

S

elf-build is becoming a fast-growing market in the UK, with over 20,000 people building their own homes each year. So, what motivates the self-builder? What are the pros and cons of doing it yourself? What key factors need to be considered and why? Creating the home of your dreams can be an exciting-yet-daunting prospect. It means that you can build or renovate a house to meet your personal needs, circumstances and tastes. It could give you more choice of developing a home in a location you desire (subject to planning permission and availability). It can be a good financial investment and prove to be more cost-effective than buying as well as offer tax advantages (that is, for self-build, not renovation). It can enable you to make the most of innovative products and sustainable methods and materials, so that you can create a home that is well-designed, betterequipped and more energy-efficient than the market may offer. Over and above that, seeing your own home project from start to finish can give you an immense sense of satisfaction. Gareth Reast converted and extended a 120-year-old stone barn to create an attractive, adaptable and sustainable family home. Along with

12  PORTFOLIO

the help of his father-in-law Eric, Gareth was determined to plan, design and build his own grand design amidst the beautiful surroundings of West Wales.

“Seeing your own home project from start to finish can give you an immense sense of satisfaction” What were the main considerations? Gareth needed a home that adapted to the changing needs of his family and wanted to make sure that the conversion was as eco-friendly as possible. Gareth was keen to use sustainable methods of construction, select materials with low environmental impact and has learned craft skills such as lead work, oak carpentry and stone masonry to enable him to work with the building first-hand.

ARCHITECTURE

What are the main features and benefits? Use of recycled and reclaimed building materials, such as local roof slates, timber joists and floor boards, is a more cost-effective and environmentally friendly way of constructing the building. Along with timber frame construction, the use of hemp and lime insulation provides a high thermal value, which insulates Gareth’s home more effectively, making it more energy-efficient and at the same time allowing the solid stone structure to breathe naturally. What were the challenges and limitations? It is important to take planning considerations and building regulations into account and understand the build process. You need to carefully consider costs and establish a budget as well as consult with various experts along the way, including building control officers, structural engineers and architects. Along with the patience and ability to adapt to changes in plan, you can reap the rewards of building your own dream home. For more information on self-build, please go to www.selfbuild.co.uk or www.homebuilding.co.uk

irates of the Caribbean actor Johnny Depp has been trying to liquidate much of his extensive real estate holdings, including a village in France and a series of Los Angeles penthouses. A Kentucky horse farm he has purchased recently failed to sell at auction. Depp was born in Owensboro, Kentucky in 1963 and grew up surrounded by horse farms. In 1995, early in his movie career, Johnny bought the 41-acre farm for his mother Betty Sue Palmer. He sold the farm in 2001 but bought it back in 2005. Depp’s farm includes a 6,000-square-foot house, guest house/ manager’s quarters, three barns, fifteen stalls and ten paddocks with automatic watering system. The main house consists of six bedrooms, seven baths, recently renovated kitchen and master bedroom, dining room and wet bar, family room and adjoining sun room. There is also a swimming pool and four-car garage. The farm is six miles west of the Lexington, Kentucky beltway and two miles from the Bluegrass Airport, directly across from Keeneland Race Course. The eastern property line of the farm abuts Westmoreland subdivision, also offering the possibility of future residential development. The original list price was $3.4 million, recently reduced to $2.9 million. Visit TopTenRealEstateDeals.com for more historic, celebrity and spectacular homes.

COST OF MOVING RISES 6% IN A YEAR The average cost of moving home in the UK has increased by £628 over the past year, from £10,966 to £11,624. That’s a six per cent rise at a time when the consumer price index has risen three per cent and average earnings are up two per cent. Most of the rise is down to stamp duty, according to Lloyds Bank, which has drawn on its own data and that from the Halifax, Which?, Pickford and the Office for National Statistics. Rising house prices have been the main factor behind the increase in moving costs, pushing up stamp duty in particular. Lloyds says over half of the increase in average moving costs in 2017 has been due to stamp duty costs, which have risen by £393 or 16 per cent to £2,897. Estate agency fees have risen by £1,673 (that’s three per cent) to £5,571 and legal costs are up by £39 (also three per cent) to an average of £1,290. The South East is the second most expensive region for moving, with an average cost of £21,373. The total cost of moving in the UK has increased by £2,029, or 21 per cent, in the past 10 years, from £9,595 in 2007 to £11,624 today.

COVER YOURSELF How much life cover do you need? Claire Cook from Independent Financial Advisors Talk Money explains how to decide

H

ow much life cover do you need? It's a subject most of us don't like to think about. What if we died? What if we weren't around? How would this affect our families and loved ones? Not only would people be impacted emotionally, but how would they cope financially? Of course, it wouldn't be the first thing on their minds, but leaving your family secure in their home and with no work pressure would certainly help, whatever anyone says! It is quite rare that people have the right amount of cover to achieve this.

“There are other types of policies which are more flexible and can be arranged to suit your circumstances and needs” So, what is the right level of cover? Firstly, think about having enough cover to pay any outstanding debts, such as mortgages, credit cards and loans. A simple life policy can cover this, and it is often surprisingly affordable. Then, you could think about the outgoings that need to be covered: utility bills, food, running a car and possible childcare costs. Literally take yourself and your income out of the equation and see what would need to be paid. A calculation often used is 10 times the annual amount, but if you have a large family to support or young children, this could be increased to 15 or 20 times. How do the plans work? The plans pay out a lump sum in the event of your death during an agreed term. The simplest type of policy is Term Assurance, which gives you a level amount of cover for a number of years. You decide the cover level and term when the

52  PORTFOLIO

plan starts. You can cover just yourself or take the policy in joint names to cover both yourself and your partner. Another version is Decreasing Term or Mortgage Protection Assurance, which is less costly, as the cover level reduces during the term in line with what you owe on your mortgage. It is important to remember that "term" assurance policies do not at any time acquire a "cash in" value. There are other types of policies which are more flexible and can be arranged to suit your circumstances and needs, for example, to cover an inheritance tax bill. How much does it cost? The cost of the cover depends on many factors, but mainly your age and your health. Nowadays there is no gender difference; EU regulations mean that men and women pay the same rates. The older you are, the higher the premiums are likely to be as the risk to the life company potentially increases. Also, if you have had health issues, these may adversely affect the cost. Affordability is always a factor when working out the level of cover. It is wise to get quotes for varying amounts and terms to see what suits best. An element of compromise can normally be built into any planning involved. If you would like to discuss your cover needs, please feel free to call me. I offer a free initial consultation and would be very happy to assist. Please call me, Claire Cook, on 01273 224667. CONSTRUCTION Voice

Photo: by Vervate.com

FIT FOR PURPOSE A recent Construction Voice event posed the question, How do we manage the successful regeneration of our retail and tourism sectors?

F

rustration about major development projects and their impact on tourism exercised the panel members at October’s Construction Voice event in Hove. With a focus on how to regenerate Brighton and Hove’s tourism and retail sectors, the city’s track record for failing to deliver exciting large-scale development projects came in for sustained criticism at the Brighton and Hove Chamber of Commerce event. Roger Wade, CEO of BoxPark, said he had opened pop-up retail, food and leisure sites in London, but his ideas for sites in Brighton had been turned down. He was now working on a project for Shoreham beach. “We’ve got to start being brave and start building great projects like they have in Liverpool, Manchester and London. We have to compete on an international level.” “This is a worse city than the Victorians left behind. Sometimes developers do things for more than the money. We want to build things that we love. People want to live in Brighton. Give them some great places,” said Roger. The panellists raised concerns about the project to replace Brighton Centre with a new conference and entertainment venue at the Black Rock site near Brighton Marina, including transport links to the site. Anne said: “It’s no good building the Black Rock centre if we don’t have the transport facilities to match that. We need to make sure the environment works. Brighton is the nearest seaside resort to a capital city in Europe. It’s absolutely seen as one of the best places in the UK to go.” Anne recently met with investors who were all interested in the city. “It’s a very positive thing for Brighton that we are so well-regarded. We need to put into action some of the wonderful ideas that are around. Gavin Stewart, of Brighton Business Improvement District (BID), said the group comprised 517 shops, bars, cafés and restaurants. The sector was worth £727m and employed 15,700 people, around 10.2% of working people in Brighton and Hove, but this market share ranked 20th in the UK, behind larger cities, but also Norwich, Leeds and Leicester.

Summer footfall had dropped from an average 140,000 per week to 100,000 in 2017. “Problems with the trains and parking came up time and time again. “Brighton needs to sit up and realise it’s in competition with a whole lot of other places. We need to be thinking more cleverly about how we work together, in terms of PR and marketing, to bring people to our city,” he said. Roger said the train problems had impacted significantly on the city’s economy. “There should have been a much stronger political lobby from Brighton saying this is harming our businesses.” Councillor Geoffrey Theobald said the Brighton Centre had to be replaced with a modern venue that was more fit for contemporary needs. “Big acts want enormous backdrops and that’s why they don’t come to Brighton any more.” Mark James, from sponsors Coffin Mews, said: “What a fantastic event. It was great to hear people speak so passionately and openly about the state of construction in Brighton, generating a very lively debate, but all with one thing in common - wanting Brighton to be the best it can be. I think the buzz word of the evening was ‘joined-up thinking’ - but how do we achieve it? That is the next step.” Phil Graves, Director of Graves Jenkins, said: “I think we probably had the most inspiring set of speakers ever at Construction Voice. I really hope the energy in the room can be transported into the offices of the decision-makers so that the city can move forward at a pace.” The Construction Voice events are run by Brighton & Hove Chamber of Commerce with event partners Graves Jenkins, Robinson Low Francis and Haydon Consulting. OVERSEAS

THE HIGH LIFE The Austrian Alps offer property investment opportunities without a hefty price tag

K

ristall Spaces AG, the promotional arm of British-managed property developer VenturePlus AG, is now introducing their latest development All-Suite Resort Fieberbrunn in Tirol in Austria, featuring 36 modern freehold apartments. Although Fieberbrunn is only a 30-minute drive from the upmarket ski resort of Kitzbühel, prices per sqm are on average 70% lower, making the area an attractive investment choice for savvy buyers. Located in the heart of the Kitzbüheler Alps, linked to Saalbach and Hinterglemm in the Salzburg province, Fieberbrunn is known as a 'Schneeloch' (snowhole) as it captures 50% more snowfall than Kitzbühel. This has made the Tyrolean town a long-time favourite for skiers and boarders in search of powder snow and is the reason why it is host to the annual Freeride World Tour. To sustain its popular ski season, which starts on 1 December 2017, Fieberbrunn's authorities are now investing €7million to add 35 new snow machines and enhance the meltwater capture system used to make snow in a more sustainable way.

“The interior themes have an alpine feel with a choice of a modern or traditional finish, combining warm, natural materials with minimalist designs” Another recent upgrade, following the local authority's investment of €20m last year, is a new high-speed 10-person gondola, giving access to 347km of skiing. This makes Fieberbrunn one of the world's largest ski areas and bodes well for local tourism, which has already seen a 9% uplift in the last year. Simon Atterbury, Principal at Kristall Spaces AG comments: “The continued infrastructural improvements in Fieberbrunn and its dual season credentials have led to frequent enquiries from buyers who are attracted to the area but can't justify spending up to €15,000 per sqm in Kitzbühel. Neighbouring Fieberbrunn, where the starting price is €4,500 per

sqm, is an appealing alternative, giving buyers the lifestyle retreat they want and the opportunity to generate good rental income and an average 4.5% return each year. The resort's proximity to Salzburg airport, 50 minutes away by car, is a further draw, making it a convenient location in which to own a holiday or investment property.” Once completed, in winter 2018, All-Suite Resort Fieberbrunn will be managed by Kristall Spaces' sister company All Suite Resorts. The team's expertise gives owners the opportunity to achieve an average rental return of 4.5 percent per annum or opt for a guaranteed return of four percent in the first five years. The project has very strong support from the local council, is located in the centre of the resort and offers a selection of one-, two- and three-double-bedroom residences starting from €208,000 (£185,000). The apartments range between 43 and 130 sqm in size and, as with all Kristall Spaces developments, are fully equipped with furnishings and fittings, as well as parquet floors featuring underfloor heating. The interior themes have an alpine feel with a choice of a modern or traditional finish, combining warm, natural materials with minimalist designs. Standard features include wireless LAN, intercom access, triple-glazed floor-to-ceiling windows, Italian ceramics and Hans Grohe bathroom fittings. Miele kitchens with integrated appliances, cutlery and crockery, as well as flat screen Smart TVs are also included. Following a day on the slopes, guests and residents will be able to unwind in the onsite bar and restaurant or recharge their batteries in the high-spec spa, which will feature a sauna and steam room. Fieberbrunn itself also has an abundance of après-ski establishments, with over 30 restaurants and bars on the doorstep of the new apartments. Inexperienced skiers can choose from one of three ski-schools, while those wanting to try something else can indulge in sleigh rides, ice skating, snowshoeing or one of the illuminated toboggan runs, or, for all family members, try Timok's winter rollercoaster. BUOYANT MARKET House prices continue to rise in the buoyant Brighton and Hove market

T

he strength and resilience of Brighton and Hove’s property market has once again been illustrated by a recent 3.9 per cent surge in house prices. New figures show the value of properties in the city has risen by almost four per cent in the last six months alone compared with an increase of just 0.4 per cent across the UK as a whole. Andrew Hovey, Area Sales Manager for Sussex at local property specialist Leaders, says: “Despite a relative slowdown in house prices in many parts of the country, the market in

Brighton and Hove remains remarkably prosperous and offers excellent opportunities to sellers looking to get their properties on the market. “There is currently incredibly high demand for all types of properties across the city. From stylish city centre apartments to large family homes in the suburbs, we are seeing properties being snapped up by eager buyers within days of hitting the market. “The average property in Brighton and Hove is now worth over £300,000, far ahead of the national average, underlining the popularity of

the city, the quality of its property stock and the strength of the local market.” Sellers in the area are also reminded that the festive season is typically an incredibly busy time for property sales, with many people choosing to start their search for a new home over Christmas and the new year. Andrew adds: “Sellers who want to take the shrewd step of ensuring their property is available to this huge group of festive buyers need to start thinking about getting it on the market in November so that it is marketed and prepared for viewings in plenty of time.”

BANK OF MUM AND DAD How the Bank of Mum and Dad keeps the rental market moving

S

ome £2.3 billion will be pumped into the rental market this year by generous parents looking to support their children in rented homes. New research by Legal & General and the Centre for Economics & Business Research has found the average payment made by the Bank of Mum and Dad will be £415, with nine per cent of tenants across the UK now reliant on parental financial help to some degree. Ten per cent of renters have had help when it comes to paying for a rental deposit, while five per cent have required assistance with moving costs or fees. With parents also putting up £6.5 billion to help first-time buyers, it means this group is now funding £8.8 billion of payments across the property industry.

Joanne Darroch, Senior Branch Manager for Brighton and Hove at property specialist Leaders, says: “It is well known that the

“Parents want to help their children and this has allowed many to rent quality properties and enjoy longer tenancies” Bank of Mum and Dad has been helping to get young people on the property ladder for many years, but it was perhaps not as clear that parents play a similarly important role when it comes to the rental market, helping millions of tenants to afford their homes.

“Parents want to help their children and this has allowed many to rent quality properties and enjoy longer tenancies than they may otherwise have been able to. “However, it is also an important reminder that we need more supply in the rental sector if it is to continue to play a crucial role in housing millions of families at an affordable level. More properties are required to offset factors such as low wage growth and high personal debt and ensure parents are not increasingly called upon to fund the tenancies of their offspring.” The study also found the Bank of Mum and Dad is relied upon to varying degrees across the country, with parents in London and the east of England paying £626 million and £604 million respectively, while those in the north-west contribute £175 million.

COLD COMFORT Is your home prepared for cold weather? These eight handy tips will get you winter-ready in no time

A

s the autumn nights start drawing in and the weather starts to worsen, it’s important to get your home winter-ready for when strong winds, rain and snow hit. Yet it seems that many of us are not preparing our homes for the cold months ahead. Policy Expert have come up with some top tips to ensure that your home is protected from harsh winter weather: 1. Keep the central heating on Set the central heating to a minimum of 14 degrees Celsius throughout the winter. This helps prevent frozen pipes and frost damage. 2. Prepare your windows Take a look at your window frames, filling any cracks and putting on a coat of paint if needed. Extreme temperatures and wet weather can cause untreated wood to expand and rot, so treating windowsills helps to prevent this. 3. Check your boiler and heating system If you haven’t done so already this year, get your boiler checked and/or

serviced by a Gas Safe registered plumber. There’s nothing worse than being left without hot water or heating in the bleak mid-winter. 4. Secure roof tiles Check for any cracked, missing or loose tiles and replace them. If a roof is in disrepair, strong winds and the weight of snow can wreak havoc on your roof. 5. Keep your pipes warm Apply lagging to any pipes and water tanks in exposed areas such as lofts, garages and utility rooms to prevent pipes freezing and bursting in the cold weather. The last thing you want is to be left without a water supply. 6. Clear your gutters As the autumn leaves fall, gutters and drains can get clogged with loose foliage. Once the block becomes too much, water will start to collect in your gutter and eventually start leaking into your roof. Thanks to www.idealhome.co.uk

On the drawing board On The Drawing Board is our platform for Industry professionals and the public to discuss issues and ideas relating to planning On The Drawing Board will showcase planning permissions granted, scheme ideas and ideas for Brighton’s regeneration and future. This month: we look at some of the developments taking place in the city. If you are a property professional, or just have a great idea, get in touch on the channels below.

MONTPELIER PLACE, BAPTIST CHURCH A scheme has been proposed by Crowther Associates to re-develop the derelict Baptist church on Montpelier Place, located in central Brighton and Hove within the Montpelier and Clifton Hill conservation area. The project will begin by demolishing the existing church, which was built in the 1960s and has been left unused for a number of years. They will then erect a new residential development comprising five town houses and 19 apartments arranged in three distinct blocks, each of which responds to the surrounding conservation areas, building typology and tight urban grain. Additionally, an element of D1 (non-residential institutions) use is to be retained on the ground floor of the corner block on Norfolk Terrace. Following a detailed consultation process with the local planning authority and conservation officer, the project received a planning approval, and work is due to start on site in early 2018

We design, create and install bespoke furniture to commercial, domestic and retail sectors.

HANGLETON WAY RE-DEVELOPMENT This housing scheme designed by Yelo Architects in partnership with Southern Housing Group has received the green light after being approved at planning committee. Composed of a 4-storey apartment block and 10 terraced houses, the development will deliver 33 residential units, of which 40% will be designated as affordable housing. The variety and sizes of the homes, from 1B2P to 3B5P, have been determined after extensive research into the housing needs of the locality. Located on Hangleton Way, the brownfield site is currently occupied by a derelict public house which has lain vacant since 2014. The new buildings will primarily be composed of sand-coloured brick with patterned header and recessed brick features. Teal glazed brick will be used on the top storey of the apartment block to emulate the roof of the existing public house and add visual interest. The landscaping has been designed by Nick Dexter Studios to ensure quality green space. This includes the planting of meadow turf and new trees on the site boundary to act as a buffer with the neighbouring properties.

LET THERE BE LIGHT With the arrival of shorter days and darker nights, lighting our homes is so important in the winter months

L

ighting in your home is all about creating the right mood and doing so in the best possible style. The right contemporary lamps, dramatic chandeliers and chic pendants will help you do exactly that. 'Think of lighting as the 'statement jewellery' to a house,' advise Maddux Creative's Jo leGleud and Scott Maddux. 'If you wear high street and set it off with amazing earrings, the whole outfit will look fantastic. Spend money on lights and be bold.' Different rooms receive light at different times, so plan your lighting accordingly. South-facing rooms enjoy hours of excellent light, but if your room faces east and you tend to spend time in it after midday, you’ll need to put in some extra effort. ‘Layer’ your lighting so that you have a mix of overhead, freestanding and task-specific lights for different activities – plus a few candles to switch the mood. The right lamps can revolutionise how you use your home. Place desks in good natural light for day and add an angled lamp for when you’re working late; make dining tables look inviting with a pendant lamp above. We asked Sophie Amini, designer at Pooky, about trend predictions, styles in lighting and how to light your home the right way When should we start thinking about lighting? From a conceptual point of view it is never too early to start! From a practical point of view the space will dictate some of your final decisions. Careful consideration needs to be given to utility areas, key pieces of furniture, artworks and focal points. Having a clear vision of what you want, both practically and creatively, before work begins will ultimately save time and money, so don’t rush it!

How can I create a lighting scheme that is beautiful yet practical? It’s all about layering. Most rooms require a generic backdrop of lighting in order to facilitate everyday tasks. Spotlights are popular, but I prefer to use wall lights or pendants, which are equally effective but not so clinical. Our prismatic glass shades, such as the Qilin, the Henry or Henrietta work well, as they give out good light and make a more personal statement as well. I then make sure to use carefully chosen table and floor lamps, often wired up to 5-amp sockets, so with the flick of a switch you add another layer, creating an ambience which is flattering and soft, perfect for relaxing or socializing. What sort of lighting should you include in your home? I think of lighting as oxygen which will bring your home alive. Practicalities may dictate many elements, but in terms of creating a ‘home,’ it is very personal and there is no ‘should:’ a glowing Luxor lantern in the hallway; tall Crescent lamps on a console table; wall lights flanking a fireplace or mirror; a pair of colourful table lamps either side of a sofa with a floor lamp overlooking an armchair; a cosy spindle with a neat empire shade on a bedside table, or a large chandelier over the dining room table; our Stella pendants along the landing, or a row of chic Thea’s over the kitchen island. Anything goes, and we hope to encourage self-expression and provide an inspiring array of options. How do I decide where to place the light fittings? This is personal, so these are rough guidelines which may be helpful. For wall lights either side of a painting or mirror, I centre the fixture at about

Most of our more substantial pendants have hooks and chains so can easily be adapted. Electricians are very clever at providing flexible options, so if in doubt, install an extra socket or wiring option just in case. What about kitchens and bathrooms? Kitchens and bathrooms require specialist lighting for certain limited areas, but beyond these areas lighting is a safe and great way to brighten up what is often a utilitarian space. What are the latest trends for lighting? There is still a trend for simple forms which can adapt to either a formal or intimate setting, lamps that pack a punch with pattern and form but are easy on the eye and not invasive. Chandeliers which look great in a conventional setting but also work well as an outsized feature in a smaller space are also popular. Clusters have been on trend for a while now and I think this will continue into autumn and winter. We are very excited about our new designs, which I think will have current appeal. Classic designs with a twist, fun but chic, and made from quality materials. In one or two you’ll see inspiration from the 70s… Pooky stock a vast range of beautiful, decorative lighting. On the subject of trends Stanley Wilson (Founder of bespoke lighting company Urban Cottage Industries) refers to The Bottom Drawer: “An interesting lighting trend - and very much a reflection of the housing market... We're seeing design conscious younger people buying and being gifted higher end lighting pieces for rented homes and apartments which they take with them when they leave. The thinking seems to be that investing in quality, timeless pieces is more cost effective in the long run and that when they are finally able to own a house, they are able to immediately transform it into the home they dreamed of for so long.” Pictured: Weave a little warmth into your space - with your very own tailor-made simple light featuring stunning coloured fabric cable, from www.urbancottageindustries.com. GOLF

LOVE YOUR GOLF GolfGuy goes toe-to-toe with David Blood of Posture People and Love Your Workspace, at the glorious Dyke Golf Club and marvels at what you learn about people on the golf course...

I

grew up Catholic, with a capital C, in 1960s white-collar America, a time when half of all new motorcars and insurance policies were sold after Sunday Mass over coffee and cake in the parish hall. The other half were sold on the golf course. In our increasingly secular 21st century, I reckon the balance has veered heavily in favour of golf course transactions, but I have no doubts about the volume of business that is

“So-called “Millennials,”in particular, have completely different expectations of work environments” still carried out over eighteen holes. Shop fronts and auto showrooms still function as strong brand reminders, contact and viewing points, but people now, as then, still buy from other people, and the golf course is still a time-honoured way to find out more about the people you are “buying” (hiring) or buying from. At this juncture of my life I am happily at several degrees of separation from commercial concerns, but I shall never cease to be amazed at what you may learn about people during a friendly round of golf. This axiom probably also works in reverse, so the first thing David

Blood may have concluded about me as I dashed, bits of golfing paraphernalia flying in all directions, towards the first tee, where he patiently waited, a picture of friendly composure, was that I might be somewhat unreliable, certainly unprepared and not particularly focused. When I apologised for my lateness and explained that halfway to the Dyke I realised that I had forgotten my golf shoes, he no doubt drew a few further unflattering conclusions. If so, there was nothing in his warm, friendly greeting to betray any impatience. I noticed his remarkable absence of any perceptible first-tee jitters. I also noticed the quality and immaculate condition of his golfing kit. Here was a serious golfer... A couple of pars and birdies later – his, not mine – I asked if he had ever dreamt of becoming a professional golfer when he was younger. Oh, lord, no, he laughed. In 2000 I did an 8-week course at Comedy School in London. My face must have been a mask of incomprehension, as he explained that's what you do when you want to be a stand-up comedian. I laughed, of course, and privately marvelled for perhaps the thousandth time at the fascinating things you learn about people on the golf course. So, what had propelled him from comedy to furniture and consultancy, I wondered? Oh, the comedy was just a hobby, he says. Not really serious. Further probing nevertheless revealed that David still has comedy in his blood. >

GOLF

“A couple of pars and birdies later – his, not mine – I asked if he had ever dreamt of becoming a professional golfer when he was younger”

In 2012 David underwent heart surgery to have his aortic valve replaced with an artificial one to correct a congenital heart defect. Since then he has brilliantly combined comedy with fund raising to support the British Heart Foundation. His Cardiac Comedy events have, in five years, raised £14,000 for the BHF. David is understandably very proud of the Heart Hero recognition award he has received from the Heart Foundation, and it is a measure of the man that he thinks that in another five years of fund raising he will have raised enough to have “paid for” his heart valve. Watching David Blood hitting his tee shot on the sixth, a very difficult (SI one) par-4, I suddenly realised where I had seen that swing before. It seems I was walking the course with Louis Oosthuizen's alter ego, his golfing twin. That swing, with its effortless grace and power, was unmistakeable. Where had David learnt to play golf? I started out at the age of thirteen or fourteen and very quickly became addicted, he admits. He never set about emulating any particular professional player's swing, and he laughs good-naturedly at my Oosthuizen comparison, but he did seek occasional lessons along the way, particularly when he was struggling with something specific. Watching the ease with which he unpicked the mysteries of the sixth at the Dyke, it's hard to imagine that David ever struggled with anything golf-related. Back in the clubhouse, we surrendered our golfed-out souls and hungry bellies to the comforting skills and professionalism of Paul Hudson and his very competent catering crew. David couldn't resist the three fat bangers in a giant Yorkshire pudding filled with gravy, just one of several tempting specials available every day, alongside the regular menu items, at very reasonable prices. of-the-world clubhouse are, on the other hand, absolutely free, as are the immaculate playing conditions at the Dyke. Between eating and gawping we talked about David's businesses. David started Posture People, suppliers of ergonomic office furniture, 15 years or so ago. Responding to changing expectations in the 21st-century workplace, David recently launched a sister company, Love Your Workspace, which their website (www.loveyourworkspace.co.uk) describes as “a friendly bunch of furniture geeks who have been designing, refurbishing and fitting out a huge spectrum of spaces for over 10 years.” Love Your Workspace now operates out of a spacious office and depot complex located at Hove Lagoon and boasts the services of Co-Director Jo and team of office design and furniture specialists. David has found that better work environments are a huge draw in attracting and retaining good staff. So-called “Millennials,”in particular, have completely different expectations of work environments, he says. If you work in or are interviewed in an office furnished out of a skip, crammed with heavy oaken desks and straight-backed chairs, for instance, and then visit one that features Nintendo nights, sofas and coffee corners, you have to ask yourself where you prefer to spend eight hours a day, says David. On the other hand, he adds, we occupy a position of trust

with our clients: we won't provide a sofa for the sofa's sake if a round table with four chairs is what they really need to perform their business functions. We assess, then recommend to create bespoke solutions that work for the clients. So, if we provide a coffee corner and sofas, it will not (just) be for fun. Love Your Workspace have consulted on a range of high-profile projects for the likes of Ridgeview Wine Estate, have worked with successful tech start-ups like PropellerNet, Boss Alien and Net Natives, to name but a few, and they partner with architects, developers and designers, such as Andy Parsons (Yelo Architects), Paul Nicholson (Chalk Architecture) and Nutshell Construction to deliver the best possible advice and solutions to offices, hotels, restaurants and schools interested in employee well-being and productivity. The fact that they are winning awards like the 2010 Acumen Business Award for Innovation is strong evidence that David and his staff at Love Your Workspace are doing something right. One thing is for certain: if Love Your Workspace performs anything like the way David Blood does on the golf course, the competition had better sharpen their act.

MISTLETOE AND SHINE Whether you are a minimalist or like to deck the halls in colour, it’s time to get your home ready for the festive season

D

ecorating the house is one of the best parts of Christmas, for adults and children alike. You know Christmas is nearly here when the boxes come out of the attic and old, faithful decorations are unearthed. How you decorate your home, how it looks, feels, and even smells, all help to make Christmas happen. Deck the halls Decorations don’t just belong on the tree – you can get creative with the rest of your home too. There are three key trends to Christmas this year: opulent, with rich deep colours and luxurious metallics; nature, using plants, feathers, wood and other natural materials to create a festive feel; and nomadic, borrowing styles from all over, but in particular folk styles from Scandinavia, Africa and Asia. A useful tip is, whatever style you go for, to choose colours and pieces that work with your existing interior, not against them. So long as colours tone and blend and styles can sit harmoniously together, it will look great. For an opulent look, garlands of chandelier glass, glossy peacock feathers, statement colour candles and oversized metallic baubles add some drama and shine. >

Many of the natural evergreens and plants used to decorate Christmas homes are old favourites: ivy, mistletoe and spruce have bedecked halls, fireplaces and doorways for centuries. Use boughs, garlands and wreaths of glossy evergreen leaves, interspersed with in-season citrus or berries for colour, for a simple but effective Christmas style. For a more eclectic feel, nomadic, folky pieces from around the world can brighten up your Christmas home: painted wooden garlands and willow wreaths from Scandinavia, colourful Japanese dolls and figures, shiny glass ornaments in jewel colours from Morocco. Tree of love Trees come in many shapes and sizes, from the teeniest tree – decoratively placed in the middle of a welcoming Christmas table – to a town-centre giant. Sticking to one colour or theme will give your tree maximum impact. Around 30% of us will opt for a fake Christmas tree this year, and they’ve come a long way since the 20th Century. In addition to some very convincing ‘natural’ trees, there are stunning, pre-lit coloured versions: Black or white would be a statement piece, and you’d also avoid dropped needles. As far as real trees are concerned, look for one with a BCTGA kitemark, which tells you that the tree is of good quality and freshly harvested. Christmas tables Dressing your Christmas table is as important as stuffing the turkey. Keep your colour theme consistent with the tree and house and consider a bright jewel or silver runner in lieu of a table cloth this year. Christmas flowers are important: potted white amaryllis and

paperwhites have a lovely, simple (and scented) charm. Or you could think bold with more exotic shades: black, purple or shades of chocolate sit well alongside the traditional tones. Christmas plants in modern colours make a great centrepiece – a glass tank-vase with five huge white amaryllis, or a ceramic pot of dusky plum-coloured poinsettia. Traditional table displays can be given a modern twist. Oversized pillar or Beeswax candles arranged in oriental oblong ceramic trays, adorned with hops, ivy or winter jasmine, set off a contemporary table very well. If space is tight (as it usually is for Christmas dinner!) think small and simple: single white and green Chrysanthemum blooms floating in small glass bowls, or individual shot glasses, each with a sprig of winter berries, are neat solutions. The green door Christmas wreaths are the first thing people see when they come to your home. The trend this year is for bold statement and a hint of luxury. Simple designs are often the most striking: red Christmas roses or berries, glossy green ivy or fluffy moss are very effective. Peacock feathers and glass baubles also work well on wreaths. Finally, what Christmas would be complete without mistletoe? This parasitic evergreen, which used to adorn England’s apple trees, is a traditional fertility symbol. With the gradual demise of Britain’s orchards, UK mistletoe is now an endangered species (don’t pick it wild!) and most of what we use each year hails from Brittany and Normandy. Hang it in one large bunch, anywhere your intended is likely to stand still.

STRICTLY CRAIG He’s on screen on Strictly, and on stage in Annie, but Craig Revel Horwood took time out to talk about his work on the new BalletBoyz production How does it feel to be collaborating with BalletBoyz again? I had a fantastic experience with BalletBoyz a few years ago, creating a tango for two men as part of a gala show which re-opened the Royal Festival Hall at the Southbank Centre in London. So I was thrilled when they asked me to come back and create a new work. I really admire them as a company. They’ve really pushed the boundaries of ballet and made it sexy and cool.

Was it challenging working with clogs? I was a novice myself. The first time I wore clogs was in Who Do You Think You Are? So it was a real challenge for me and the boys, who are trained in classic ballet. It’s almost the polar opposite to ballet as a discipline, because your feet are so heavy. But we started improvising and having some fun with it and it was extraordinary to see it evolve. They’ve done brilliantly well.

Can you tell us more about the concept behind the dance in Fourteen Days? I didn’t really know what I was going to do until I visited Australia as part of Who Do You Think You Are? and discovered that my great, great grandfather was a champion clog dancer. My family were goldminers, so I thought ‘wouldn’t it be interesting to get the miners clog dancing?’ Story-wise I based it on my hometown of Ballarat where there was a revolt of miners in the mid-19th century, known as the Eureka Stockade. So the concept is a clog dance battle between the miners and the soldiers.

And you had to put it all together in just fourteen days Billy and Michael [co-founders of BalletBoyz] were a bit shocked when I took the concept to them. I think they were expecting something a little more conventional. They said “Craig, is this going to be possible in two weeks?” and I replied, “of course - God made the world in seven days and I’ve got double that time!”

What is it that distinguishes BalletBoyz as a dance company? Each Ballet Boy is an individual, they all have characters. That makes it different, because you’re not getting a corps de ballet as such, you’re

INTERVIEW

“Of course, they’re all boys, but that doesn’t restrict the opportunity to convey romance or sexiness” getting to know each individual dancer. But they’re very generous as a company, they very much work as a team. And, of course, they’re all boys, but that doesn’t restrict the opportunity to convey romance or sexiness. You’re a busy man with several projects happening at one time. How do you stay focused? I’ve learnt to compartmentalise. I have to. For instance, at the moment I’m directing a new musical, preparing to act in the West End and working on Strictly Come Dancing. On top of that I’m doing a one-man show on my days off. But I just love everything that I do, so it doesn’t feel like work. I keep saying yes! How similar is your Strictly persona to how you are in the rehearsal room? It’s a true representation of how I direct. I’m hard on people because I want to push them. I tell my dancers what’s wrong so that we can make it right. After all, we want to make the piece as good as it can be. It’s sometimes misconstrued on Strictly that my criticism is not constructive, but that’s completely wrong. I want to help people to improve. But that said, I do wear different hats, and when I’m at home I take them off and I’m myself. I’d probably go a bit mad otherwise! How are you finding life on Strictly after Len? It’s a complete change of dynamic, but I like that. I always change my casts around in my shows for that reason, to keep it exciting. Shirley Ballas, who has taken over, is fantastic, and really knows her stuff. And it’s nice to have another lady on the panel. I miss Len, of course, but it’s nice to start another chapter.

Bruce Forsyth’s death was a poignant moment for the show It was. Brucie was a legendary performer, but he was also a wonderful human being who loved other people and entertaining. He reacted so well to live audiences, which is what made him so good at his job. People also forget that he was a brilliant tap dancer, and he left such a strong legacy to the dance world. Strictly is a celebration of him. How did you get into dance in the first place? I was always a bit of a show-off, especially at Christmas when we had lots of cousins round. We’d always put on a show for the adults. I would put on feather boas and wigs and play all kinds of characters. A reason I got into dance specifically was because I was a fat kid and I was getting teased at school. A friend advised me to join an exercise class, and it just happened to be jazz ballet. It turned out I could naturally do it, so the teacher advised me to get some formal training. He enrolled me into ballet school and that started me down the path. What would you say to kids out there wanting to follow in your footsteps? Do what your heart says. You’re always going to be better at something you’re passionate about, so you have to find what that is and do it. If you’d told me as a kid that I’d be directing and starring in productions in the West End I would have laughed you out of Ballarat. But it’s happened. So listen to your heart, and follow it. Having a ball Without doubt the oldest hostelry in the city, with its roots going back to 1559, the Old Ship has played host to a number of famous historical figures, including kings Charles II and George IV, authors Charles Dickens and William Thackeray, and even Winston Churchill. The hotel building has been renovated and added to over its long and fascinating history. Former smugglers' tunnels in the cellars have been converted into atmospheric event spaces. However, the jewel in the crown of the property is the Paganini Ballroom, which has just undergone an extensive refurbishment in honour of its 250th birthday. Named after renowned Italian violinist Niccolò Paganini, whose playing was apparently so mesmerising and extraordinary that it was rumoured he’d sold his soul to the devil, the ballroom sits to the rear of the hotel with an entrance directly onto Ship Street. The Old Ship was purchased by the Cairn Hotel Group in 2016, and extensive plans are in the pipeline to ensure the property stays at the top of its game in a city that is seeing a lot of inward investment in the hotel sector. “The future is very bright. There are massive plans to transform the hotel from its current position in the market to a leading hotel in Brighton and also on the south coast,” says general manager Paul Wright. “I just need to be patient, as its not just a lick of paint.” The Old Ship Hotel, Kings Road, Brighton BN1 1NR | 01273 329 001

Wines for Christmas Brighton vintner and all-round wine expert Henry Butlers of Butler’s Wine Cellar picks out some perfect celebratory wines for the festive season: Johanneshof Rotgipfler 2016, Austria, £16.99 Match with smoked salmon

The well-known Rotgipfler grape is indigenous to Austria. Think Grüner Veltliner with super-hero concentration. It comes from the Thermenregion, where the underground thermal springs help to ripen this white grape. It's aromatic, full of exotic fruits, with a dry, slightly spicy finish. A curve ball, perhaps, but well worth seeking out. We stock it into Pike and Pine on St James Street. Ferrari Carano Chardonnay Tre Terre 2013, California, £23 Match with turkey

California needs all the help and support it can get at the moment. Turkey is a blank canvas, so I think you can drink both white and red with it. This delicious Chardonnay is full-flavoured, with finely balanced oak spice in the background. It's far removed from the oldschool cloying butter bombs. This is really tasty and very more-ish, and if your bird is dry, this will add the juice! Fleurie Cuvee Speciale 2016, Beaujolais, France, £19.99 Match with turkey

Don't swamp your turkey with an overly heavy red. I prefer something soft and fruity. The lighter bodied red wines are good for all-day Christmas drinking. Fleurie is a cru village in Beaujolais.

The stars are out September and October saw the annual publication of the UK’s restaurant bibles, the Waitrose Good Food Guide, the AA Best Restaurants Guide and the Michelin Guide 2018. Whilst Brighton & Hove is still eagerly chasing a Michelin star, Sussex retained two stars with Restaurant Tristan in Horsham and Gravetye Manor at Kingscote. Keep an eye on the likes of 64 Degrees, Etch, Pike & Pine and Pascere for next year, though.

So forget insipid Beaujolais Nouveau, think soft fruit bomb, full of lovely, ripe brambly flavours. I like this one because it has a spaceman on the label, it's made with minimum intervention, so sometimes has a slight, mysterious haze, like a scene from Tales from the Unexpected. FINE DINING IN NORTH LAINE Daniel Frickelton heads for Brighton in search of exciting Friday-night food and drink and gets far more than he bargained for in the heart of North Laine...

I

have a theory. Well, more a hypothesis, really. Much as various Facebook sites think they can predict everything from your IQ to your political preferences based on how you answer their silly quiz questions, I have a hunch that you could do the same, with an even higher degree of accuracy, by zeroing in on food and dining preferences. M-A-P (meat-and-potatoes) Person, is more likely to espouse traditionalist values, be a Formula -1 fan and vote loyally for the same political party regardless of current performance, whereas O-S-A-N (oriental soups and noodles) Person would have an irresistible leaning in the direction of social and political change, favouring Bernie Sanders and/or the Greens politically and would be more likely to be found on a yoga mat than at the footie. Or so goes my hypothesis, at least. The quickest way, within this framework, to get a fix on R-A-T (Renaissance Adventurous Testing) Person would be to dangle the prospect of an eight-course set tasting menu, a quelle surprise opportunity, a culinary adventure.

“The fish dish was moist, succulent, slowcooked cod with crunchy, caramelised cauliflower shavings and purée of cob nut, seasonal in Kent right now” If the traffic at Isaac At in Gloucester Street on this Friday evening is any indication, the R-A-T people of this world are not in short supply. This intimate, friendly space was packed and the room was a-buzz with the happy patter of 20+ hungry, expectant adventure seekers. The warmth emanating from the open kitchen added to the cocoon-like comfort and glow of what surely now will be the place to be on a chill winter evening. The chefs and dining room staff were noticeably young. They were also, as we would discover, remarkably competent and knowledgeable. The tasting menu consisted of eight courses, if you count the amuse bouche (pre-starter) and the two palate cleansers, a sorbet and a plum dish, which followed the meat course. Each dish is paired with a suitable wine, 750ml in all, although there are lighter alcoholic as well as non-alcoholic options. We were offered a glass of Ridgeview Estate sparkling brut, the multi-award-winning delight that has the folks in Champagne running for cover. This would prove to be a harbinger of good things to come. In between sips of our elegant bubbly we had a peek at the “food miles” information provided with the menu. Of the 32 ingredients listed, I found

RESTAURANT review

“We were offered a glass of Ridgeview Estate sparkling brut, the multi-awardwinning delight that has the folks in Champagne running for cover” only two that did not emanate from Sussex or Kent. The drinks menu told the same story: only a few items, mainly Scotch whiskies, were not sourced in Sussex or Kent. Even the coffee was roasted in Brighton. It is very trendy these days for restaurants to highlight local provenance of ingredients, but I have not come across any that can boast the same degree of consistency as what they have achieved at Isaac At. This tasting menu is an impressive celebration of the richness and goodness of Sussex produce. The treacle bread loaf appeared, hot and fragrant, graced with a large pat of Sussex butter (from Ringmer, 12 miles away). Good bread has always been an excuse to eat loads of good butter, and life would be immeasurably poorer without them, but this was just ridiculously good. We had to force ourselves to stop after a good hunk each. Our starter, the crab and charred cucumber, arrived to the rescue. This little gem, artfully constructed of Sussex crab, arguably the sweetest in the world (and from Newhaven), and charred cucumber with dollops of cucumber ketchup was paired with a generous glass of Bacchus Foxhole white wine from Bolney Wine Estate, just off the A23. Bacchus is a fairly new arrival among the varietal grapes, and this was my first experience of it as a stand-alone. Its heady herbaceous fragrance, crisp acidity and fruity dryness made it the perfect partner for the crab and cucumber starter and one of the more interesting wine tastings I've had this year. The fish dish was moist, succulent, slow-cooked cod with crunchy, caramelised cauliflower shavings and purée of cob nut, seasonal in Kent right now. This was brilliantly paired with glasses of Albourne Estate Selection 2015, a combination of Pinot Gris (48%), Pinot Blanc and Bacchus (26%), which tempered the tropical fruit flavours with an impressive fullness and length. The butter nut squash was a slice of squash covered in puréed squash and finished with thin discs of, er, squash. I looked at my companion and said, “That would be trois fois squash, then...,”which made us laugh as we shared the fond memory of the time I had ordered trois fois canard for lunch in a French restaurant, only to discover that the enormous warm salad containing at least three kinds of duck which I had just demolished was only the first of three duck courses. Burp...

The squash was a delicate transition from the fish to the meat dish and was paired with glasses of dry, zingy Bodiam Harvest white from Sedlescombe Organic Wine Estate. The M-A-Ps among you will no doubt consider the next dish to be the menu's piece de resistance. This wonderfully pink, toothsome chunk of slow-cooked Denver beef from Cowfold, flanked by shallots and turnip bits, was married to the first red wine of the evening. Our savvy waiter played “guess-the-grape” with me, and it took me two attempts to nail this unusual and delightfully surprising Pinot Noir, a 2015 vintage, currently sold out, from Davenport (Rotherfield) Diamond Fields vineyard. First of all, the colour was darker and less translucent in the glass than one would expect from Pinot Noir, and there was a rich, spicy mouth full of berries, reminiscent of robust South African-style reds. What a wonderful surprise. But we will have to wait until November for more, when last year's harvest will be released. A russet apple and sea buck thorn (locally foraged) sorbet, very intense, redolent of concentrated tropical fruits, cleansed our palates of all sins of pairings past and paved the way for yet another naturally acidic dish of greengage, fresh plum and paper-thin wafers of pink peppercorn. Pudding was a smallbut-magical piece of lemon thyme, apple and almond sponge with ice cream, accompanied by a glass of Sedlescombe Dessert wine, playfully dubbed “Far East” by our waiter. Aside from the tasting menu there is also a set menu, and £29 and £20 drink options depending upon your preference. So, when you add what the Danes would call råhygge (raw “hygge,” or extreme warm cosiness), the elegant, unobtrusive attentiveness of the staff and the feeling when you've left that you have eaten your fill without feeling stuffed, it's hard to imagine where you would find a nicer experience on a Friday night. Whether you're a M-A-P, an O-S-A-N or a R-A-T like me, you're bound to find something that scratches your culinary itch at Isaac At. SPICED ROASTED CAULIFLOWER, HARISSA, POMEGRANATE YOGHURT Roasting cauliflower is our favourite way to cook this amazingly versatile vegetable. It looks simply beautiful on a plate with the edges a little charred and crispy. It is also a brilliant vehicle for flavour and the spiced oil infiltrates every nook and cranny of the heads and releases a wonderful juicy punch of flavour when you bite into it. The harissa and pomegranate yoghurt give the dish that extra hit of flavour and makes for lovely presentation too. SERVES 4 INGREDIENTS • • • • • • • • • • •

1 large cauliflower 4 tbsp rapeseed oil or neutral flavoured oil 1 tbsp olive oil 25g garam masala 75g Greek yoghurt 15g pomegranate molasses 100g harissa 1 tbsp nigella seeds 2 tbsp pomegranate seeds Sea salt Coriander cress, to garnish (or use picked coriander leaves)

“It looks simply beautiful on a plate with the edges a little charred and crispy”

98  PORTFOLIO

METHOD Preheat the oven to 180°C. Cut the cauliflower into quarters and then cut each quarter in half, so you have 8 wedges of cauliflower. Heat the rapeseed oil in a large frying pan and fry 4 pieces of cauliflower on each side until golden brown. Remove from pan and repeat with the remaining 4 pieces. Place the cauliflower into a large bowl, pour in the olive oil and garam masala and toss to ensure a good coating on all sides, then tip the cauliflower onto a large roasting tray and place in the oven for 8–10 minutes. Meanwhile combine the Greek yoghurt with the pomegranate molasses in a small bowl and season with salt; set aside. Spread a tablespoon of harissa over the base of each serving plate, then place a couple of wedges of cauliflower on top of that. Dollop on spoonfuls of pomegranate molasses yoghurt and sprinkle with nigella seeds and pomegranate seeds. Finally, garnish with coriander cress or leaves and serve.

RECIPE

CHARGRILLED LAMB CUTLETS, CHERMOULA These lamb cutlets are best cooked on a charcoal barbecue; charcoal grills evoke strong memories for us of the night market in Marrakesh. When paired with the chermoula, it’s like you are there. But, of course, a gas barbecue, griddle or indoor char-grill will do the trick too. In New Zealand, when someone says ‘chur’, it is an exclamation and recognition of the positive nature of a situation, comment or product. Zealand band Fat Freddy’s Drop, for the launch of their album Blackbird, liked this dish so much they started calling it ‘chur-moula’. This was a great compliment and it has been referred to as ‘chur-moula’ in our kitchen ever since.

SERVES 4 INGREDIENTS • • • • • • • • • • • • • • • • •

12 lamb cutlets 100ml vegetable oil Sea salt and black pepper 1 cinnamon stick 1 tbsp cumin seeds 1 tbsp coriander seeds ½ tsp saffron threads 1 small red onion, finely diced 1 small garlic clove, very finely chopped or grated 1 mild red chilli, de-seeded and finely chopped 1 tbsp smoked paprika 1 tbsp preserved lemon rind finely chopped 90ml lemon juice 200ml extra-virgin olive oil Handful of flat-leaf parsley leaves, roughly chopped Handful of coriander (leaves and tender stalks), roughly chopped Sea salt and black pepper

METHOD First, prepare the chermoula. You can do this in advance as it will keep for up to a week in the fridge. Break the cinnamon into small pieces with your hands and toast over a medium heat in a heavy-based pan for about 3-5 minutes. Once fragrant and toasted, place in a mortar and pound to a fine powder. Tip into a mixing bowl. Toast the cumin and coriander seeds in the same way, until they are turning brown and smell fragrant. Remove the pan from the heat and add the saffron to the warm pan (this will intensify the flavour and colour of the saffron). Gently pound the seeds and the saffron, just to break up the seeds. Pour these into a bowl with the cinnamon. Add the red onion, garlic, chilli, smoked paprika, preserved lemon, lemon juice and olive oil to the bowl and mix together. Stir through the chopped herbs and season to taste with salt and pepper. Place the lamb chops in a bowl or on a tray and drizzle with the vegetable oil and season with salt and pepper. Place the chops on the grill and cook to your liking; I cook for about 8-10 minutes for medium rare. Alternatively, cook the cutlets in a griddle pan over a high heat, turning once. Allow the cooked cutlets to rest for 5 minutes before arranging on a serving dish and smothering with the chermoula.

OLYMPIC SKIER AND JAGUAR HIT 117 MPH TO SMASH TOWING WORLD RECORD Former British Olympic Skier Graham Bell has set a new GUINNESS WORLD RECORDS title for the ‘fastest towed speed on skis’, pulled by the new Jaguar XF Sportbrake

A

fter only a couple of practice attempts, it was clear that Graham and the XF Sportbrake were more than up to the challenge and he went on to smash the target set by GUINESS WORLD RECORDS by over 47mph, achieving an average top speed of 117mph at Jaguar Land Rover’s Arctic Revi Test Centre in Arjeplog, Sweden. The five-time Olympic ski racer managed to beat the old record of 70mph by over 45mph. Bell took on the challenge in March 2017 at Jaguar Land Rover’s Revi Test Centre in Arjeplog in northern Sweden, close to the Arctic Circle, where the temperature was a chilly -28°C. To prepare for the attempt, Bell went ski-joring (being towed) behind another Jaguar car in the Austrian Alps at the end of the 2015/16 season, where he recorded speeds of up to 100mph. “We learnt that we needed a bar at the back to keep the rope taut so I could have equal weight on both skis,” Bell says. “Going directly behind the car was not an option because of the amount of snow smoke.”

100  PORTFOLIO

For the record attempt, Bell was towed by a 380-horsepower Jaguar XF S Sportbreak car, and needed to remain in a tight tucked position along the frozen track. It was set to be a real challenge for both Graham’s physical limits and the premium estate’s performance. The existing record stood at a fraction under 70mph, but with the XF Sportbrake’s all-wheel drive technology, Adaptive Surface Response (AdSR) and All Surface Progress Control, it comfortably hit the high speeds Graham required to set the record. “When you ski down a slope, gravity is pulling everything down,” he explains. “When being pulled along, you end up moving your centre of gravity to compensate for the force that’s going through your arms. It’s much more like waterskiing. “The big fear was catching an edge, because I was only skiing on a centimetre of snow on top of bullet-proof ice. If you fall on the flat it’s always much more painful than if you fall on a steep slope. “It felt equally dangerous to racing downhill and as scary as skiing

MOTORING

the Streif,” he says, referring to Kitzbühel’s notoriously difficult downhill course. “Actually a bit scarier.” Bell had five warm-up runs, initially reaching speeds of 50mph and moving progressively up to 100mph. “Getting to 100mph is not unusual for me, but going above that is a bit of a threshold. It took me a while to adjust.” He then had three record attempts on the mile-long track, wearing a catsuit, downhill racing helmet, back protector and 240cm-long speed skis. “Yes, there was fear, but it was overridden by my desire to go fast. On each attempt I was egging the driver to go as quickly as possible. It was all about how good the grip was during the acceleration. Fortunately, I didn’t have any scary moments where I thought I’d eat it.” With the record in the bag, Bell thinks he could go faster still, subject to three changes – a fairing to decrease the total drag and force travelling through his arms and hands, a faster car, and a track that's three times the length. He would also need to upgrade his protective gear, switching to a motorcycle helmet and leathers with built-in airbags.

“The big fear was catching an edge, because I was only skiing on a centimetre of snow on top of bullet-proof ice” Bell believes he could then reach 160mph and become the fastest man on skis. He’s definitely up for the challenge and says, “I just need to convince Jaguar to go back and build a longer track.” Jeremy Hicks, Jaguar Land Rover UK MD, said: “The XF Sportbrake's superb traction, handling and high speed stability made it the perfect choice for this speed record attempt. We’re extremely proud to have supported Graham in this incredible world-beating achievement – it’s this kind of trail-blazing activity that really tests our cars to their limits. “The XF Sportbrake builds on the success of the saloon and has all of the advanced all-wheel drive (AWD) technologies and aluminiumintensive architecture that have made the XF a multi-award winner.” Adding to its list of achievements and awards, the Jaguar XF was also recently the highest ranked ‘Large and Luxury Car’ in the JD Power Survey. Focusing on reliability and customer experience, the Jaguar XF’s position was secured by feedback from genuine customers who have owned their cars for 12-36 months. The Jaguar XF Sportbrake is available to order now from UK retailers, with prices starting from £34,910. Configure your own Jaguar XF Sportbrake now at: www.jaguar.co.uk

WALK BRAMBER

The historic village of Bramber with its medieval castle is the starting point for this riverside route. Running alongside the river Adur this Route for All is set against the backdrop of the South Downs. The footpath starts on the opposite side of The Street from the car park, simply follow the pavement east and take the footpath driveway behind St Mary’s House turning left before the caravan park towards the river. Wheelchair users, motorised buggies and families with pushchairs will find this wide, newly laid surface easy to negotiate. Where the path joins the South Downs Way you can either turn around or for those who want to continue on take a circular route turning right on to the Downs Link (bridleway) and follow the path back to the riverside under the bridge at the A283. The route from this point is classed as a Route for Many so some gradients are steeper than 1 in 10. These are marked on the map. Keep a lookout for herons and kingfishers on the river.

David Tennant leads an all-star cast in The Highway Rat, coming to BBC One this Christmas

M

agic Light Pictures, the Oscar-nominated entertainment company, brings to life another magical world from the UK’s number one picture book duo, Julia Donaldson and Axel Scheffler. The Highway Rat airs on BBC One as a festive family highlight this Christmas. This enchanting half hour animated special will be voiced by a stellar cast of British acting talent, featuring David Tennant as the Highway Rat, Rob Brydon as the narrator, Nina Sosanya as the Duck, Tom Hollander as the Squirrel and Frances de le Tour as the Rabbit. First published in 2011, The Highway Rat is about a ravenous rat who craves buns, biscuits and all sweet things. Tearing along the highway, he searches for sugary treats to steal, until his sweet tooth leads him to a sticky end. “Give me your pastries and puddings! Give me your chocolate and cake! For I am the Rat of the Highway, and whatever I want I take.” A swashbuckling tale of bandits and biscuits the whole family will enjoy! The Highway Rat marks the fifth adaptation by Magic Light Pictures of a Donaldson/Scheffler title. The most recent, Stick Man, premiered on BBC One on Christmas Day 2015 to achieve record ratings of 9.3 million viewers, with an overall 41 percent audience share, the fourth highest rated programme of the day. The film also won critical praise and a raft of global industry awards including the Annecy Crystal and a Bafta nomination. Previous adaptations have also been showered with awards including two Oscar nominations, a Bafta, an International Emmy and the Prix Jeunesse.

“They create worlds rich in story, character and charm, ideal for families to watch together, and huge fun for us to make” Michael Rose and Martin Pope, co-founders, Magic Light Pictures, say: “It’s been a privilege adapting Julia Donaldson and Axel Scheffler’s wonderful book for the screen. They create worlds rich in story, character and charm, ideal for families to watch together, and huge fun for us to make.” Elizabeth Kilgarriff, Senior Commissioning Editor, BBC Drama, says: "I am delighted that we will be bringing another of Julia Donaldson and Axel Scheffler's much loved stories to life on the BBC. Magic Light Pictures have, yet again, woven their wonderful magic to animate the story of The Highway Rat with warmth and wit - and some very recognisable voices!" BBC TV December

AT NIGELLA’S TABLE

ORDEAL OF INNOCENCE

HARRY POTTER : A HISTORY OF MAGIC

Nigella: At My Table shows us food we can all bring to our own tables, vibrant and varied but always relaxed. In the first episode, Nigella shares new discoveries like her Turkish-inspired eggs, as well as old-fashioned favourites including the aptly named Queen Of Puddings. For a relaxed get together around the table, Nigella rustles up a gloriously simple chicken and pea tray-bake. For times of urgent need, there are her emergency Brownies, and she finds a new use for a spiralizer.

This new three-part drama reunites the team behind last December’s The Witness for the Prosecution and And Then There Were None. Miss Marple is invited to the wedding of a friend, but the gaieties are interrupted when a stranger arrives; he provides the missing evidence which proves that the black sheep of the family, Jacko, was wrongfully hanged for murder. Bill Nighy and Catherine Keener head up an all-star cast.

It’s 20 years since J.K. Rowling’s Harry Potter and the Philosopher’s Stone first cast its spell on readers across the globe. To mark the 20th anniversary of her book, the BBC presents an enchanting new documentary, uncovering the real life traditions of magic at the heart of Harry Potter. A thrilling journey through legends, belief and folklore, this film goes behind the scenes with the British Library as they search to tell that story through objects in their collection, in an ambitious new exhibition.

LOCAL NEWS SNAILS TO TRAIL IN SNOWDOG FOOTSTEPS A trail of snails will be following in the footsteps of last year’s Snowdogs to raise money for Martlets Hospice. Fatboy Slim unveiled three giant snails, two uniquely decorated by artists, to launch Snailspace, the much-anticipated follow-up to the hugely successful Snowdogs by the Sea, which raised £310,000 for Martlets and contributed in excess of £10m to the local economy. RAMPION REACHES MAJOR MILESTONE AS THE FINAL TURBINE IS INSTALLED The last of 116 wind turbines have been installed at the Rampion Offshore Wind Farm. Each turbine consists of an 80-metre tower weighing approximately 200 tonnes, which has been lifted and positioned onto each foundation, a nacelle, fitted to the top of each tower, which houses the generator and gearbox and three blades, each measuring 55 metres in length, which have been hoisted and connected, one at a time. Chris Tomlinson, Development and Stakeholder Manager for the Rampion Offshore Wind Farm, said: “We’re especially proud to have achieved this remarkable feat, installing all 116 turbines ahead of schedule, in just over six months. This major milestone sees the safe installation of all physical components visible above sea level, representing the full extent of the wind farm. Since the spring we have also completed the laying and burial of 112 kilometres of array cables, which connect the turbines to the offshore substation, installed in April, before transporting power to shore. “We now look forward to Rampion’s first generation of electricity later this year and to working towards completion and full operation in 2018.”

CELEBRITY interview

GETTING BACK IN GEAR If you’re missing a slice of Richard Hammond and James May’s irreverent banter, just take a peek in your local Porsche showroom

A

s the celebrated former co-host of Top Gear, the world’s most successful motoring show ever, Richard Hammond has had plenty of opportunity to drive and debate about the best and fastest cars in the world. An unreconstructed Porsche enthusiast, he’s has also had to endure plenty of ribbing from Jeremy Clarkson about his 911 mania. In defiance of the obstreperous Clarkson, Hammond is no less convinced of the “genius” of Porsche today than he was as a young man dreaming of driving his own 911. But it was not until he got behind the wheel - no Stig in sight - of the 2013 Porsche 911 GT3 that Hammond truly discovered his personal ultimate ride. He was so enamoured of the car that he even took to the Top Gear website to write a personal love letter to Porsche. “I did have a bit of a moment,” he tells us. “I think we all have defining moments in life, and mine came in the shape of the Porsche 911 GT3. I think I said at the time it wasn’t just my Car of the Year, it was the best car ever made. And I stand by that… in fact I’ll do more than stand by it, I’ll sit in it, and drive it, fast.” What’s even more remarkable about this magnificent manufacturer, is that his former Top Gear stablemate James May is quick to bestow his own praise, albeit ‘Captain Slow’, as he is affectionately termed, takes the predictable step of rolling back the years as he outlines his appreciation for a certain model.

“Richard Hammond knows he’s lucky to be alive following June’s horrific car crash in a Rimac Concept One electric car while filming an episode of The Grand Tour in Switzerland” “Hammond is right,” he begins. “It is a magnificent car, but I think you have to look at the classic era of the car… basically, the last century. “I’m on my second old 911, both of them 3.2 Carrera coupes from the 1980s. This is the one I’d go for every time, because it’s the one I’ve got and I know what I’m talking about. It’s also one of the cheaper and most plentiful versions out there, thanks to the explosion of 911 enthusiasm during the yuppie era, so there are loads around. “But what a car it is,” he salivates. “Speedy, raw, beautifully shaped, and resilient on even the tightest bend. I know it’s a little bit predictable to have a 50-something bloke banging on about how good stuff was in the 1980s, but these cars really were good… and they still are.” Richard Hammond, who, even at 47, resists the middle-aged tag, has eyes fixed firmly on the 2013 model, though. “First up, if you like 911s - and I do - then you’ll notice that it looks reasonably subtle for a car that can do 196mph and get over 60 in 3.5 seconds… the latter being less than half the time it took you to read that sentence! “It’s got 475bhp, Porsche Torque Vectoring for the rear diff, active suspension management and fully adjustable suspension, should you want to attack a track. But the GT3 isn’t just about Top Trumps - it’s more alive and more purposeful than ever before, but also more focused, more intimate. More connected. You don’t get into the GT3, you put it on. It’s like a set of Superman pants and a > cape.”

CELEBRITY interview

Certainly, Hammond was exaggerating when he described it as being “no harder to drive than your mum’s Golf,” but it is much less twitchy and easier to shift than its GT2 RS power-mad cousin, or James May’s yuppie throwback. But a mutual appreciation of a magnificent car is a fitting lead-in to 2018 when Porsche have just unveiled their 2018 Cayenne model. “The thing about the Porsche is, it’s never moved from the classic sports model,” says May. “They’ve spent years tweaking and perfecting, and okay, the family versions they pulled out went a bit away from the classic model, but they’re still, unmistakably, Porsche motorcars.” Those family re-imaginations of the Porsche shape the presenter refers to – the aforementioned Cayenne, the Panamera and the Macan – will still comfortably set you back £60,000, while at the top end, you’ll need to haggle on the forecourt to be driving away a 911 GT2 RS for anything less than £200,000. That’s a big price to pay, particularly in the hands of May at present, who is in the throes of planning his next spate of deconstruction projects following the successful BBC series The Reassembler. In a curious set-up, May explores the intricacies and engineering marvels of various objects by putting them back together again from a pile of hundreds of their component parts. In the series, which is still available on BBC iPlayer, a guitar, telephone, lawnmower, train set and food mixer were all laid bare. “Taking apart a Porsche would be beyond even me, and I simply couldn’t bring myself to do it, anyway,” he laughs. Similarly, Richard Hammond is more than happy to ensure some things are held together, himself included. He knows he’s lucky to be alive following June’s horrific car crash in a Rimac Concept One electric car while filming an episode of his and Clarkson's new syndicated series, The Grand Tour, in Switzerland. The handsome TV presenter recalled saying to himself, “Oh god, I'm going to die”, when he lost control of the experimental vehicle and it subsequently flipped over, slid 100m down a hill and burst into flames moments before emergency rescue workers pulled him out of the car. The crash came 11 years after a similar Top Gear road crash put him in the hospital and left him in a coma for two weeks.

But once a motorhead, always a motorhead. Even after Porsche recalled his beloved GT3 after several owners reported instances of the engine catching fire, Hammond had no hesitation in reclaiming his replacement model, posting a picture of the all-white model, rear wing and all, parked in the countryside: “Hello, guess who's back,” he quipped. “Home 24hrs, no fire. Glad they (the GT3s) caught fire anyway, gives it an air of danger.” Indeed!
