Cheese fondue FOR ENTERTAINING AT HOME It’s time to dust off the fondue pot that hasn’t been used since the ‘80s because the cheese fondue is back! Swiss cheeses Emmental and Gruyere are traditionally used in a classic fondue which can be purchased from any good gourmet providore or the deli section of your local supermarket. The girls at Moda Events have shared their favourite fondue recipe and according to Jess and Lucy, the best accompaniments for your Swiss Fondue feast are cubes of ciabatta or cob loaf, cubed capsicum and pickled vegetables such as pickled onion or gherkins.
Recipe for Swiss Fondue • One third loosely grated Emmental cheese • Two thirds loosely grated Gruyere cheese • One third white wine with a little extra for later to adjust the consistency as required (and to swig as you cook). Ensure to buy good white wine and remember: if you wouldn’t drink it then you shouldn’t cook with it. • One garlic clove
METHoD 1. Cut the garlic in half and rub down your fondue pot or stove pot 2. Pour in the white wine and heat on the stove to just before boiling point 3. Start to stir in the cheese, add more cheese as it melts. Be careful that the cheese doesn’t boil 4. Once all the grated cheese has been melted, add additional wine as required to get the cheese to your desired consistency 5. Once made, pour into your fondue pot and serve immediately 6. Stir your fondue pot as required to keep desired consistency 7. Crack open a bottle of your favourite wine and enjoy!

More than 500 potential purchasers have already registered their interest in Pinnacle, the next residential stage at Portside Wharf. Brookfield Residential Properties has been inundated with enquiries since it launched a Registrations of Interest Campaign (ROI) in March for what will be the fifth residential building at the sophisticated riverfront precinct. Brookfield Residential Properties National Director, Phil Leahy said strong interest was expected but no one predicted such an overwhelming response. “Such an enormous response in the first few weeks of the ROI campaign suggests there is renewed positivity and enthusiasm in the Brisbane property market,” he said. “The huge number of prospective
purchasers who have already registered their interest is proof that confidence is returning, and with such strong summer sales at Promenade, we expect the momentum to continue across the precinct.” Pinnacle at Portside will comprise a mix of one, two and three bedroom premium apartments, penthouses and terrace homes.
