RECIPE OF THE MONTH Fish is always a winner in summer. This grilled fresh dory fillet with roasted red pepper ratatouille, mixed nuts and a light lemon juice dressing is sure to impress and it’s gluten free. INGREDIENTS

MARINADE

Combine olive oil, lemon juice, salt and cracked black pepper and marinate the fish overnight.

250g dory fillet Olive oil Lemon juice 1 diced onion 1 chopped green capsicum 1 chopped red capsicum 300g fresh diced tomato 1tbsp tomato paste Chilli flakes White pepper Salt Garnish: Mixed nuts

NEW SUMMER DRINKS HIT THE SHELVES CRUISERS CAFÉ BAR & GRILL has added some summery ciders to its beverage list. The Stassen ciders are proving extremely popular during the hot days and come in flavours of pear, apple, red fruits and elderflower.

METHOD Heat the pan to medium-high and cook the dory fillets until golden brown on each side – roughly 10-12 mins. In a separate frying pan, heat on high with olive to brown the onion. Add the capsicums and fresh tomato and cook on medium heat for about 3-4 mins, stirring when needed. Once cooked, turn the heat down to low and stir through the tomato paste, seasoning the mix with salt, white pepper and chilli flakes. TO SERVE Place the cooked fish onto the plate, lay the ratatouille mix over the top and garnish with mixed nuts. TIP: FOR THAT SPECIAL MIDDLE EASTERN TWIST, USE PISTACHIO NUTS AND CHOPPED ALMONDS.

CONSTRUCTION HITS THE TOP AT PORTSIDE WHARF Construction has reached the top on the latest two stages of Brookfield Residential Properties’ Portside Wharf development, as total sales at the riverside precinct hit more than $506 million.

“We have opened our first display in Pinnacle so buyers can experience first hand what it would be like to live directly on the river in a vibrant precinct like Portside Wharf.

Link, which has already sold out after its 32, one bedroom apartments were snapped up for more than $13.5 million, has reached level four and is set for completion early next year, injecting an additional 522sqm of retail space into the mixed-use waterfront development.

“Pinnacle will be Portside Wharf’s premier apartment building and will feature a rooftop infinity pool, barbeque and entertainment area, gymnasium and onsite security.

Pinnacle, the precinct’s absolute riverfront apartment building, now stands at 15 levels with construction expected to be complete in the first half of 2015. Pinnacle has achieved more than $85 million in sales and is now more than 65 per cent sold with just one penthouse, six River Terraces, two three bedroom apartments and a good mix of two bedroom apartments priced from just $590,000 remaining. Sales figures for 2014 have reached over $50 million at Portside Wharf, which is the largest mixed-use community in the greater Northshore Hamilton development. Brookfield Residential Properties’ Regional Director Lee Butterworth said now that construction had reached the top, works would focus on the external facade and landscaping, giving buyers a real sense of how the finished product will look. “The buildings are quickly taking shape and buyers can see that the standard of build and fittings are top quality,” he said.

“We expect sales will ramp up as construction nears completion and buyers realise the wait to move into their brand new apartment is quickly nearing the finish.” Mr Butterworth said with the weather heating up, it was no surprise buyers were attracted to Portside Wharf’s waterfront lifestyle. “Waterfront living isn’t just about having the water at your doorstep, there’s an enviable lifestyle that comes with it,” he said. “Living by the water gives a sense of spaciousness and openness and allows breezes and natural light to flow through your home. “Pinnacle has been designed to capture these elements, with high ceilings and floor to ceiling windows to make the most of the cool breezes in summer, while catching the warm sunlight in winter. “Large balconies give residents a workable outdoor space while our River Terraces offer the ultimate in al-fresco living and entertaining, with terraces up to 54sqm, many with private access to the wharf.”

Mr Butterworth said its absolute waterfront location in the blue chip suburb of Hamilton had been the biggest drawcard for buyers.

“Our retail precinct continues to grow, with the current retail space almost completely occupied and more in the pipeline upon the completion of both Link and Pinnacle,” he said.

“The owner occupier market has really taken off and sales have ramped up as buyers look for a riverfront location with access to everything,” he said.

“Portside Wharf offers a great mix of fine dining, cafés, beauty, entertainment, services and conveniences, including a Dendy Cinema, IGA supermarket, Ella Bache, barber shop and dentist.

“In terms of position, Portside Wharf is unmatched when it comes to accessibility to its retail plaza, as well as its proximity to the CBD, airport, the CityCat and motorways including direct access to Kingsford Smith Drive, which is set to become a six lane boulevard under new State Government plans.

“As we welcome new retailers, we will continue to build the precinct with residents in mind, ensuring they have everything at their fingertips.” Portside Wharf is already home to four completed apartment buildings - Promenade, Loft, Infinity and Flare.

“Surrounding projects also continue to add to the vibrancy of an emerging urban hot spot. “With the ongoing expansion of Northshore Hamilton, which will become home to more than 10,000 residents over the next 20 years, Portside Wharf will continue to be the pivotal development in Brisbane’s largest, multi stage mixed use development and urban renewal project.” Mr Butterworth said Portside Wharf residents now enjoyed direct access to more than 35 retailers including riverfront restaurants, boutique shopping and entertainment.
