RECIPE OF THE MONTH SAMAK HARRA

SAMAK HARRA This is a gluten free, Lebanese-inspired dish of grilled dory fillet with roasted red pepper ratatouille, mixed nuts and a light lemon juice dressing.

BY BYBLOS

Serves two people or four when served as tapas

INGREDIENTS

MARINADE:

250g dory fillet

Combine these ingredients and marinate the fish overnight:

Olive oil 1 diced onion 1 chopped green capsicum 1 chopped red capsicum 300g fresh diced tomato 1 tbsp tomato paste

Olive oil Lemon juice Salt and cracked black pepper

Chilli flakes

GARNISH:

White pepper, Salt

Mixed nuts

METHOD: Heat the pan to med-high and cook the dory fillets until golden brown on each side – roughly 10-12 mins. In a separate frying pan, heat on high with olive oil to brown the onion. Add the capsicums and fresh tomato – cook on medium heat for about 3-4 mins, stirring when needed. Once cooked, turn the heat down to low and stir through the tomato paste, seasoning the mix with salt, white pepper and the chilli flakes.

TO SERVE

Place the cooked fish onto the plate, lay the ratatouille mix over the top and garnish with mixed nuts

For that special Middle Eastern twist, use pistachio nuts and chopped almonds.

CONSTRUCTION COMMENCES ON NEXT STAGE OF PORTSIDE WHARF THE PROJECT WILL GENERATE MORE THAN 200 CONSTRUCTION JOBS OVER THE NEXT 18 MONTHS Portside Wharf is undergoing its next phase of development with construction officially commencing on the latest residential stage Pinnacle at Portside Wharf. The Lord Mayor and Portside Wharf Project Director Lee Butterworth turned the first sod on the 16 level luxury apartment building along the riverfront in Hamilton, which will generate more than 200 construction jobs over the next 18 months. Pinnacle has chalked up more than $54 million in off the plan sales with apartments selling for between $390,000 and $2.4 million. Once complete, Pinnacle will feature 162 one, two and three bedroom apartments, terrace homes and penthouses, and to date is the only absolute riverfront building at Portside Wharf. The Portside Wharf development, which includes the Brisbane Cruise Ship Terminal and a lively waterfront restaurant and retail hub, is already home to some 300 residents across the first four residential stages - Promenade, Flare, Loft and Infinity. The development is the first stage of the greater Northshore Hamilton redevelopment which plans to rejuvenate the Brisbane waterfront with new retail precincts, residential options and green space. Portside Wharf Project Director Lee Butterworth said the recommencement of construction at Portside Wharf was a major milestone, signalling the start of a new era in the property market. “Pinnacle will be the first residential building constructed at Portside Wharf since works began on Promenade in late 2010, proving we have weathered the global financial crisis and are ready to move forward with the development of this iconic address,” he said.

“Portside Wharf welcomes in excess of 250,000 visitors each year via the Cruise Ship Terminal and is a vibrant social hub for those living in the luxury apartments atop the precinct as well as those who gather from across Brisbane to enjoy the location, boutique shopping, fine dining and relaxed atmosphere. “Our vision for Portside Wharf is to be the beating heart of the entire Northshore Hamilton development. We have so far achieved that vision and established Portside Wharf as a Brisbane landmark and a vibrant community that has reinvented this once overlooked part of the Brisbane River.” With completion set for early 2015, Pinnacle at Portside Wharf will house luxurious apartments, delivering an array of residences ranging in size from 58sqm to 241sqm, with more than 70 per cent boasting stunning river and city views. Residents of Pinnacle will enjoy the privilege of exclusive access to the building’s rooftop terrace with pool, barbeque, entertainment area and gymnasium, as well as the peace of mind of full security with onsite guards and onsite management. “Pinnacle will be of rare status and style - with luxurious apartments and penthouses,” said Mr Butterworth. “Its location between key economic areas, six kilometres from the CBD and 15 minutes to Brisbane’s domestic and international airports, makes it prime real estate for high flyers and executives, while the relaxing lifestyle afforded by a riverfront address makes it ideal for retirees or empty nesters, and the vibrant precinct makes it popular for young couples. “Essentially, Portside Wharf offers a unique lifestyle opportunity that buyers of all ages are taking advantage of.”

“With Pinnacle’s strong off the plan sales, it is clear that confidence is returning to the market, with total sales at Portside Wharf now reaching more than $83 million.
