Originally from Scotland, Joseph discovered his passion and flair for cooking while pursuing his first love of becoming a soccer player. He was lured to venture the world with his culinary skills and worked in prestigious restaurants in Europe such as the two-Michelinstarred Hotel Martinez in France and Savoy Restaurant in London, before moving to Australia to join Grand Hyatt Melbourne and the Sydney Opera House. Joseph has also worked extensively throughout Asia and now brings his wealth of experience to Belvedere where he intends to develop new menus using the freshest ingredients from home as well as abroad, complemented with fusion touches. OF THE MONTH The Joe Julep by Byblos.
OF THE MONTH CLASSIC CRÈME BRÛLÉE BY CRUISERS CAFE, BAR & GRILL INGREDIENTS 4 egg yolks 40 ml sugar plus extra for the topping 1 vanilla pod or vanilla paste if you cannot get a vanilla pod 250ml cream METHOD 1. Preheat the oven to 180°C. Put four ramekins into an oven proof dish and fill to halfway with cold water. You can use tea cups as long as they are oven proof. 2. Beat the egg yolks. Gradually add the sugar. Beat until the mixture is pale and thickened. 3. Add the vanilla pod seeds or a teaspoon of vanilla paste and stir in with the cream. 4. Pour the mixture into your ramekins and cook for 30 minutes. 5. Once cooked remove from oven and allow to cool. Chill in the fridge for at least two hours. 6. For the top, sprinkle caster sugar over the chilled brûlées and either put under a grill or use a cooking blow torch caramelise.
This fabulous cocktail is one of two that has been entered in the Steeped and Stirred Bulleit Bourbon Competition. The concept is a twist on the classic Mint Julep, which is a traditional race day cocktail. THE JOE JULEP 40mL Coffee Bulleit Bourbon 15mL Mozart Black 5mL Branca Menta 10mL Vanilla Syrup Build all ingredients in Julep cup, cap with crushed ice and swizzle. Cap with more ice before serving and garnish with mint leaves and coffee beans.

The 14 terraces occupy the first two levels of Portside Wharf’s latest luxury residential building, Pinnacle, which is currently under construction and due for completion early next year. “I come from a large family so I wanted a home I could expand out of for entertaining. The terrace gives me that space - it’s a unique place where we can eat and celebrate around a table that can sit 30 people overlooking the city I love.” Ms Bradley will relocate from her Queenslander, also in Hamilton, which she has owned for 15 years, and is happy to swap some living space for views. “I decided if I was to downsize on floor space, I wanted a really fabulous outlook and my River Terrace gives me river and city views that can never be built out,” she said. “My corporate career has taken me to New York and Dubai, so when I relocated back to Brisbane I wanted an outlook that rivaled the NYC skyline or the world’s tallest building views and I found that at Pinnacle. “I’m looking forward to not having to mow a lawn or tend to large gardens, although it was important for me to have room for a vertical vegetable garden which the River Terrace gives me. It’s a great feeling to be able to eat things straight from your own garden.” Ms Bradley said she was excited to be moving into somewhere that was sparkling new and didn’t need touch-ups.
