Lean ground turkey is a great lean source of protein to fuel muscle-building efforts. I encounter many clients that simply do not know what to do with this meat. For those of us who have difficulties digesting beef, it is a great swap-out for any ground beef recipe. Except for pre-contest time, lean ground turkey can be made into meals the whole family can enjoy! Below are a few ground turkey recipes that hold their own. These recipes I am sharing have been great hits with many. These are also great for getting your whole family to eat healthier! Mediterranean Meatloaf Serves 8 Ingredients: • 1/4 cup sun-dried tomato • 5 oz bag fresh spinach or 1- (10 ounce) package frozen chopped spinach, thawed and drained • 1/2 cup chopped onion • 1/4 cup crumbled low-fat or fat free feta cheese • 1 1/2 lbs lean ground turkey (99%, 97%, or 93%) • 1 cup quick oats or old fashioned oats, uncooked • 1 teaspoon garlic powder • 1 teaspoon dried oregano • 1/2 teaspoon salt (optional) • 1/4 teaspoon ground black pepper • 1/2 cup nonfat milk
Directions: Heat oven to 400°F Soften tomatoes according to package directions; coarsely chop and set aside. In small skillet, cook spinach and onion over low heat 4 to 5 minutes or until onion is tender. Remove from heat; cool slightly. Stir in cheese; set aside. In large bowl, combine turkey, oats, garlic powder, oregano, salt, if desired, pepper, milk and sun-dried tomatoes; mix lightly but thoroughly. Shape 2/3 of turkey mixture into 9-by-6-inch loaf in 13-by-9-inch baking dish. Make a deep indentation down center of turkey mixture, leaving about 1 1/2 inches around edges of loaf; fill with spinach mixture. Top with remaining turkey mixture to completely cover spinach filling; pinch edges to seal. Bake 30 to 35 minutes or until juices run clear when pierced with fork. Let stand 5 minutes before slicing.

Noodle-less Lasagna Ingredients: • 1 lb. lean ground turkey • 1/4 cup minced onion • 1 can tomato sauce • 1 tsp. basil • 1 tsp. chopped parsley • 1/4 tsp. oregano • dash garlic salt • dash pepper • 8 oz fresh mushrooms or 1 can mushrooms, drained • 1 pkg. frozen chopped spinach, thawed and well drained • 8 oz. low fat or non-fat cottage cheese • 4 oz. Part-skim mozzarella cheese, shredded Directions: Preheat oven to 375 degrees F. In medium size, non-stick skillet, saute’ ground meat and onion until onion is tender and meat is browned. Add tomato sauce, basil, parsley, oregano, garlic salt, pepper and mushrooms to ground beef mixture. Combine well-drained spinach with cottage cheese. In 8 inch square baking dish, arrange in layers the spinach mixture, then the meat mixture, then some grated cheese. Repeat layers, ending with cheese. Bake in preheated 375 degrees F oven for 15-20 minutes or until hot and bubbly.
Turkey and Black Bean Chili Serves 4 • 2 tsp extra virgin olive oil • 1 onion, chopped • 1 green bell pepper, chopped • 4 garlic cloves, minced • ¾ lb lean ground turkey • 1 (15 oz) can black beans, rinsed and drained • 1 (14.5 oz) can diced tomatoes or 1 cup fresh, chopped • 1 Tbsp chili powder • 2 tsp ground cumin • 1 tsp dried oregano • ½ tsp salt Directions: Heat oil in large nonstick saucepan over medium-high heat. Add onion, bell pepper and garlic; cooking stirring occasionally, until softened, about 5 minutes. Add turkey and cook, breaking it apart with a wooden spoon, until no longer pink, about 3minutes. Stir in the beans, tomatoes, chili powder, cumin, oregano, and salt. Bring to boil. Reduce heat and simmer, covered, until vegetables are very tender, about 30 minutes.
KEEPING UP WITH THE SOLINSKI’S By: Tye Sheets Pierpont
The spouses and families of those who compete in the bodybuilding world understand and admire the dedication and hard work it takes to be successful, all the while enduring the long hours of training and cardio, the tortuous dieting and the inevitable irritability that goes along with the competing. But imagine being a teenager and a preteen and having both parents competing in one of the largest national qualifiers as well as the largest natural competition in the state of Texas. Susan and Cooper Solinski don’t have to imagine. Their parents, Joe and Tammy, just wrapped up both the Ronnie Coleman Classic and the Texas Shredder. Joe, age 48, placed 1st in novice lightweight bodybuilding at the Ronnie Coleman and 2nd in open lightweight then placing 3rd in masters over 40 at the Shredder. Tammy, age 48, placed 5th in masters bikini at the Shredder, last year taking 2nd in masters and 5th in open bikini at the Lone Star Classic. Susan jokes that her friends have always been curious about her family’s disciplined approach to eating. “They always have to buy the healthy version of every food they eat and they swear it tastes better and it’s so annoying, said Susan, 16. “But it really doesn’t taste better. They eat this protein bread with 32g of protein that my mom says tastes like sourdough but I think it tastes like elastic. My friends think the way my parents eat is kind of weird. But lately, they say that they think my parents look really good.” Susan and Cooper, 12, attended both of their parents’ competitions this year - not exactly the way most kids their age would want to spend the weekend – each in a hotel room with a carbdepleted, spray tanned parent. But both say they are incredibly supportive and proud of their parents’ accomplishments. Theirs is a love story that spans 30 years. Married 25 years this December, they met when Tammy showed up with a moving company to pack up Joe’s parents’ San Antonio home for their move to Virginia with the Air Force. “Dad knocked on my door and told me there was a really pretty girl with the moving company packing boxes. I really didn’t think Dad had a ‘pretty girl’ scale even close to mine, so I was not too excited, Joe said. “I got up and walked down the hall, my hair sticking out one side from pillow-head. As I walked by my parent’s bedroom, I saw the most beautiful girl in the universe!! Dad was right!! (Imagine that!)”
After more than a year of missed opportunities and other significant others, they had a chance encounter at a San Antonio country dance club and began dating and were married five years later. “Joe introduced me to working out when we met. I was a big couch potato with no idea of what it meant to eat clean! Slowly but surely he worked his magic on me by taking me to the gym with him while he pumped iron and entered bodybuilding contests,” Tammy said. Prior to the 2011 Coleman, Joe had not competed since 1986. His contest history includes the 1986 South Texas Physique Championships, 3rd place at the 1984 Lackland AFB Bodybuilding Championships, 4th place at the 1984 Texas Novice Bodybuilding Championships and 6th place at the 1984 South Texas Physique Championships. “I entered the Coleman because I wanted Tammy to do it, and she asked that I do it with her,” he said. “My experience was very challenging both mentally and physically. The thing that made me smile the most was when people commented that I reminded them of Frank Zane, my bodybuilding hero. I got interested in exercising when I was about 5 years old. My mom and I watched The Jack LaLanne Show on TV with a chair and broomstick, and I used to exercise with her. My brother, who is 8 years older, was also an inspiration when I was young. I would see him do push-ups and sit-ups every night before he went to bed. I would look at his biceps and use that as motivation to get some muscles! “ “I am so proud of Joe and Tammy,” said their trainer Jesse James Leyva. “They are role models for people of all ages. When my other clients or potential clients see pictures of them, they can’t believe they are both 48. It takes away their excuses of thinking they are too old to try to look good and it inspires them to reach higher goals.” Joe and Tammy are also inspiring their children to reach higher fitness goals. Susan has been working out with a personal trainer for more than a year and hopes to compete in teen figure later this year, perhaps even one with both of her parents. Cooper is a stand-out quarterback for his 7-on-7 team and has begun weight training with his dad. Joe and Tammy’s individual strength and the strength of their relationship continue to inspire their community and everyone they meet.
CORY MATHEWS 2011 COLEMAN CHAMPION By: Mike Bell
Mesquite, TX played host to the Ronnie Coleman Classic. This wasn’t an ordinary NPC show, this turned out to be the largest show in Texas bodybuilding history! Now like most shows, especially the larger ones, everyone expects the heavy weight or super heavy weight to come away with the Overall trophy. However, someone forgot to tell Light Heavy Weight winner Cory Mathews that. Cory showed up and wowed everyone! Displaying massive arms, a tiny waist, great legs and plenty of everything else to topple the “big boys” Cory ended the night with the Overall title. We spoke with Cory to get a better insight of him as a bodybuilder and a person. PD: First off congrats on your impressive win at the Ronnie a few weeks ago! It’s not often you see a lighter weight class winner the overall at such a big show. Tell me how it felt to win that overall. CM: It was overwhelmingly exciting, I felt very blessed just to win my class, but to win overall was the icing on the cake. PD: Let’s get a little background on you, I know you are relatively new to the sport, how old are you and how long have you been training with competing in mind? CM: I am 34 years old, & although competition has been a long time childhood dream, I’ve only been training with it in mind for a couple of years. PD: You just started competing last year Correct? What show did you do and how did you do? CM: Yes. My first show was the Lonestar Classic. I won first place & overall in the novice class. My second show was the Europa, where I took third in light heavyweight ope n. PD: Are you still working with Gus Carter? How did you end up working with Gus? CM: Yes, Gus & I are very close. I met Gus at Gold’s Gym in Arlington. He observed my workout ethics for weeks. We soon became friends & he invited me to workout with him. Getting on stage was always a part of his conversation concerning me. He would not let me ignore the subject. We’ve been training together ever since.
PD: What are some of the more important things you have learned from such an experienced professional like Gus? CM: I think because Gus and I are so close, I have been privileged to learn from him both in & out of the gym. I guess you could say two important lessons that I’ve learned are never to give up, and hard work pays off. PD: How was your contest prep? How long and what was your diet like, I.E. Lower carb, carb cycling etc? CM: Contest prep was 12 weeks of dieting & training. My diet was pretty basic, I ate @at the same times every day for 7 meals, which consisted of a total of 470 grams of protein a day and 200 grams of carbs a day. As I got closer to the show my carbs decreased to 60 to 80 grams if carbs and protein increased to 550 grams a day. This was a gradual process. PD: What’s your training like? What’s your split look like? Is there anything unique that you do in the offseason or contest prep time? CM: My training is very intense. I like to lift heavy, however the closer I get to the show my training becomes more of high reps and less rest between sets. Yet, it is always intense. My training for the first two shows were always in rotation. For example, I hit every muscle every 4 days within a 5 day split, and then 2 days off. If I did chest on Mon., back on Tues., legs on Wed., delts on Thurs., then I would do chest on Fri. again. The next mon. I’d begin with back, then legs & ext. PD: What’s your life like outside of bodybuilding, are you a family man? What are your interest outside of the sport? CM: In my off season I spend extra time working on lacking areas. Outside of bodybuilding is family & church. I am very much so a family man. A proud husband of a beautiful wife, and a father of 3 blessed children with 1 on the way. My interest outside of the sport is about trying to save Americas youth. I am also a minister, so trying to save a generation is a passion beyond bodybuilding. PD: What’s your plan for the rest of the season, time off to grow or hitting up a National show? CM: I am definitely looking to put on extra muscle the next few months. As of right now I am aiming for Nationals in November. PD: I have no doubt that you will be a major factor come Nov. You’re a great competitor and even a better man! Good luck to you man!

Name: Nina Pacchia Age: 31 Occupation: professor and research scientist I am originally from Garwood, New Jersey and moved to texas 6 years ago to earn my PhD in physiology. After graduating I got a job as a professor of Anatomy and Physiology at Texas Wesleyan University. I am also a research scientist at The University of North Texas Health Science Center in Fort Worth. I have been competing in the NPC for 8 months and completed 3 shows. My short-term goal is to win my class at a national level competition. My ultimate goal is to become an IFBB pro. I will be moving to Park City, Utah in June to pursue a career in electrophysiology research and plan on competing in the NPC Utah circuit. My hobbies include snowboarding, mountain biking and lifting weights. For the past three years, I have dedicated my life to bodybuilding. During this time I was a supplement representative for Allmax Nutrition. As far as my competition history, I have competed in the last two Ronnie Coleman Classics. In both I have placed top 10. During this time span I have done bodybuilding as a hobby but now it is a passion. I believe that I have taken a great leap of faith and put my whole life in pursing my bodybuilding future. Recently I have quit my job as a banker and am utilizing my Bachelors Degree in Exercise Science along with my contest experience in personal training clients at Metroflex Gym Ft Worth. I felt that in order for me to reach my goals I would have to commit my life to this sport. In one year my progress from one show to the next has been more than remarkable. I feel as if this is a great indicator to my level of discipline and commitment to this sport and my physique. I am also the owner of the in house nutrition store for Metroflex Ft Worth called Flex Nutrition. I interact with the public and gym members on supplement selection to obtain their goals. I can honestly say that I give all my customers the upmost attention and respect that they deserve. Therefore, this shows that I have been able to grow and prosper over the past year. As indicated, I feel this reflects the type of determination and discipline I have instilled in my life. Do to my recent experiences in my life, I feel that in order to get where I want to be, I will take down the rear view mirror of my life and not look back at what I have but look forward to what I will achieve.
