ROAST FOR THE MOST…FLAVOR!!! Steamed broccoli again? How many times has this thought run through the mind of any competitor or healthy eater? Steaming is a great way to cook vegetables while maintaining their nutrients. However, roasting is a cooking method that brings out natural flavors in vegetables while maintaining nutrients as well. For example, zucchini squash and green cabbage develop a very sweet flavor when roasted. Also, roasted sweet potatoes will compete with pumpkin pie at Thanksgiving! Perhaps roasted green cabbage will not become your new dessert of choice, but it adds great natural flavor to its nutrient punch! Basics of roasting vegetables: 1. Preheat oven to 425 deg. Some recipes suggest up to 500 deg. Just know that higher temperatures may result in more nutrients lost as the vegetables are cooked 2. Chop vegetables of similar firmness in uniform pieces to allow for uniform cooking. 3. Spray cookie sheet or baking pan with cooking spray. 4. Drizzle vegetables with olive oil if desired. Toss with herbs and spices if desired. 5. Place vegetables on baking sheet and put in oven for 15-20 min. Stir the vegetables with a spatula and roast 15-20 minutes more. Firmer vegetables take longer than softer varieties so watch them closely. 6. When the vegetables are lightly browned in areas and slightly tender, remove from oven. Overcooking vegetables causes nutrient loss. Some great vegetables to roast include: • Onions • Bell peppers • Eggplant • Summer and winter squashes • Tomatoes • Brussel sprouts • Cabbage • Asparagus • Broccoli Also roast your complex carbs…sweet potatoes!!

Tuscan Roasted Vegetables Serves 4 - 6 Use two baking sheets, and two shelves in the oven, to ensure you can roast all the vegetables in a single layer. Or with a small oven, roast one batch of vegetables at a time. These are great served hot, at room temperature, or chilled as part of a salad plate. Ingredients: ¼ cup extra virgin olive oil 4 large garlic cloves – crushed and minced 1 medium eggplant – sliced lengthwise into 8 wedges, each wedge cut into 3 pieces 1 large red bell pepper – cut into bite size pieces 1 large fennel bulb – cut into 8 wedges, layers separated 1 medium red onion – cut into 8 wedges, layers separated 2 small to medium zucchini – sliced lengthwise into quarters, and then each quarter cut into 3 pieces 1 teaspoon fresh thyme leaves (1/2 teaspoon dried) grey sea salt & freshly ground pepper to taste Preparation: Preheat oven to 400F. Put all the vegetables in a large mixing bowl, sprinkle the thyme leaves in, and drizzle the olive oil over the mixture. Use your clean hands to mix the vegetables with the oil and herbs. Arrange the mixture on two baking sheets, spreading them in an even layer. Sprinkle salt and pepper over the vegetables and place in the oven. Roast vegetables for 15 – 20 minutes, or until the eggplant is tender when pricked with a knife. Remove from the oven and serve immediately, or let them cool for later use. To serve these vegetables as a salad, arrange some lettuce leaves on a serving dish, top with the vegetables, and make a dressing by whisking together the following: 1 ½ tablespoons apple cider vinegar, 3 tablespoons extra virgin olive oil, 1 tablespoon fresh chopped parsley, scallion or chives. Use a spoon to drizzle the dressing over the vegetables and serve at once

Roasted Asparagus with Garlic Serves 3 - 4 Ingredients: 1 lb fresh asparagus – tough ends trimmed and peeled 4 large cloves garlic – crushed and minced 2 tablespoons extra virgin olive oil 4 tablespoons water sea salt & freshly ground pepper to taste Preparation: Preheat oven to 400F. Arrange asparagus in a large baking dish in a single layer. Add the garlic and olive oil and use your fingers to coat the asparagus. Pour in the water. Roast for 20 - 30 minutes, depending on size of the stalks, or until asparagus is tender but still bright green. Season to taste with salt & pepper and serve hot or at room temperature. Variations: Add some lemon zest, orange zest, or minced sun-dried olives as a garnish.


Oven Roasted Tomatoes Serves 4 This is one of the most versatile oven roasted vegetable recipes: try pureeing the tomatoes with a bit of olive oil or chicken stock for a great sauce! Ingredients: 4 medium size ripe tomatoes – cut in half 4 tablespoons extra virgin olive oil 2 tablespoons fresh chopped herbs (oregano, margoram, parsley, thyme or rosemary are all good choices) Sea salt and freshly ground pepper to taste Preparation: Preheat oven to 350F. Place tomatoes in a baking dish, cut sides facing up. Drizzle the oil over tomatoes, sprinkle the herbs on top and bake for 30 - 40 minutes, or until they are very tender. Serve warm or at room temperature, seasoned with salt and pepper to taste. Use a variety of little tomatoes, and reduce cooking time by half.

It gives me great pleasure to have been able to work with our cover athlete this month. I have known Jillian Reville for over 5 years and I can honestly say there is not a nicer more down to Earth girl in the Industry. She’s fought hard and delt with some hard knocks along the way but persevered through them and is now known as an IFBB Pro. I got to sit down and visit with her a couple of weeks ago. PD: Hey Jillian, thanks for taking the time to sit down and visit with Posedown again. A lot has changed since we talked to you last. Lets start off with the obvious question. Why the switch from figure to WPD? You were a perennial National level competitor. JR: Well! After a long hard road in Figure, I decided to make the switch because my “look” just didn’t fit the bill for what they are looking for in figure. I was always told that I was too muscular or to hard for a Figure competitor. No matter how I dieted, or how I changed my look from show to show, I just didn’t fit for what the judges were looking for. After being in the last call outs AGAIN, at the 2010 Nationals, I stepped off stage and vowed that I was hanging up my shoes and would never compete again. After 4 years of struggling Nationally, (locally I always did very well), I thought I was finished for good.

Dan Ray, photographer for RXMuscle, came over to me after the show and mentioned that there was a new division coming out that I would be perfect for. At the time, I wanted nothing to do with yet another division. As the next few weeks went by, and more and more came out about the new division, I decided to By: Jack Duncan give it a shot. If I was able to come in looking how I loved, then why not.

The only daunting task ahead of me was the routine!! I was so scared! So I talked to Michelle Brent, top NPC female bodybuilder, who has been involved in the sport for over 20 years. I knew that Michelle would be able to help me with the poses and the routine. The NPC was not very clear on how the poses were supposed to be done, so Michelle and I just went with what she knew and worked for 18 weeks on my posing and my routine. Yes, I said 18 weeks. I wanted to be prepared. There was no way I wanted to get up on stage and do a routine that wasn’t perfect. At the inaugural show, Jr USA’S, I placed 4th in the tall class. I was told to tone down my shoulders and come in a little softer, not as striated. At the very next show, Jr Nationals, I won my class and earned my IFBB Pro card. I dream come true!


PD: Looks like in high and sight you made the right decision. How do you feel about your rookie year as a pro so far? JR: It has been unbelievable!! I decided that I needed to jump right in and do the first show in February, in Arizona, The Desert Muscle Classic. I figured I needed to jump in and see what the Pro stage would be all about. I was very lucky to place 3rd out of 11 women at this show. There were some amazing ladies up there! At my second show, The Orlando Europa, I placed 2nd out of 21 ladies! This was an amazing feeling. Coming from Figure, where I was always at the bottom, and now placing at the top of the class was an unbelievable feeling. I don’t know if I can really describe how I feel. I am very blessed and honored that I have done so well so far. PD: What are your thoughts of your placing at the New York pro? Do u feel u were off a little or tougher competition or a different set of judges? JR: I do not feel as though I was off at all. I always bring the best me to the stage, and after dieting for 7 month, I thought I was bringing the package that they wanted from me. New York is known for its tough competition. New York was the largest show of the year, and I am sure there will not be another show that matches it in size or in caliber of competitors. Mr. Manion was the Head Judge at this show, and he had not been a Head Judge at any of the Pro WP shows prior. I believe the judging was on point and that they chose women who demonstrated exactly what most of us had envisioned. It was obvious that they wanted to make a clear statement on exactly what they want out of the division, and I for one can say I am pleased with the outcome. Of course I was not thrilled with my placing 12th coming off a 2nd place in Orlando and a 3rd place in Arizona. As I reflected on the day, my views changed from upset to inspired. In placing more muscular women in the top 3, leaves the door open for me to go back to the drawing board and train how I like. I won’t have to worry about staying small and training light to maintain. Now I can go back to training the way I like, hard and heavy. PD: What are your plans for the rest of the year? JR: As of now… time off to grow!!! I need to gain more muscle. I also have a vacation in a few weeks with my boyfriend, Donny, we are going to visit my God Kids in San Diego, then on to a week of just the two of us. I have to student teach in the Fall for 10 weeks, and then after that, I will be able to start dieting for the Arnold, if I get the invite! PD: What have the judges told you to work on? JR: The one thing I have been told is to tone down my shoulders. I have only trained shoulders twice since the February show. It kills me not to train them. I want to bring a more balanced shape to the stage, so if that means no shoulders, then shoulder day must be left out of my training cycle. PD: Talk to me about the biggest differences between your training as a figure competitor and now as Physique competitor. JR: As a Figure competitor, my split was: Heavy Back and Tris, Heavy Chest and Bis, Heavy Legs, day off, Light Back and Tris, Light Chest and Bis, Light Legs and Shoulders. As a Figure competitor I only trained shoulders light, again always being told my shoulders were too dominant. Now as a Physique competitor, my split is very different. Right now, I do not train shoulders, and I only train chest once every 2 weeks. I don’t train chest every week because my chest gets very lean and striated easily. I also do not want a thick upper chest like many female bodybuilders have. It’s just not a look I find appealing, so I only train chest lightly to get a pump. I usually train Legs 2 times a week, splitting hams and quads on different days. My quads tend to grow very easily, and I already have a very nice sweep to them, so my quad training is not as intense or heavy as my hamstring training. I, unlike many women, have an issue growing a butt! I have a tiny tushy, that gets striated at about 8 weeks out from a show, so I have to be very careful with my glute and hamstring training. My back training is always hard and heavy. As for arms, I train with Kenny Wallach, out of Gold’s Gym New Haven, Connecticut. Arms were always a weak spot for me. For some reason I just could not push myself and make my arms grow. Since Jr. USA’s last year, I have been working with Kenny once a week to grow my arms. He is amazing! We have made great gains in my bi’s and tri’s over the past year, and I intend to stick with Kenny and work to make even bigger gains in the future. So as you can see, my training is more about sculpting my body and trying to maintain and gain a balanced physique. I’d love to train balls to the wall all day long for every body part, but for this division, and for what the judges are rewarding, I have learned that I need to concentrate on my flaws and weaknesses while maintaining the positive qualities.


PD: How has your nutrition changed since the switch? JR: I have done my own diet since Nationals 2010. And let me tell you, I do not recommend the average competitor to do this. It’s not easy, and if you are not totally in tune with your body (or have the time), I would never say do your own diet. I happened to learn a lot from past coaches on how my body responds or doesn’t respond to certain foods. I asked a lot of questions and took tons of notes and have records of all my diets all the way back to when I started. Without giving away all my secrets, haha, I can tell you my protein intake is much higher, I cut all fats out of my diet at 8 weeks out, unless I am totally dragging, then I know I need to add some kind of fats. I also don’t use protein powder from about 12 weeks out through the show. I feel that whole food is just better, and my body seems to not digest any powders when I am dieting. PD: Looking back over the last year since you made the switch from Figure to Physique is there anything that has surprised you or that you weren’t expecting since you made the switched, I.e. changes to your body, getting on stage etc. JR: One thing that has surprised me, is that I totally love the posing and the routine. I feel as though my personality can really shine through in the routine.

PD: I understand you have changed careers since you were last featured in PD. how is that going? JR: Well yes! After a long stint on Wall Street, I decided that I wanted to follow my dream and become a teacher. I know that many people thought I was crazy to give up a secure high paying job, but my heart was not in it. I was one of the best at what I did on Wall Street, and I am sure if I went back I would get a job at any company I wanted, at any time, but that would not make me happy. I am a very passionate person, and I know I have a lot to give. I want to be able to help students learn to appreciate literature, and above everything else learn to respect themselves and know that they all can achieve greatness in anything they do. I feel that today, as a society, we lack strong role models that we can look to for guidance and support. I have been blessed with parents and a family that supports me through all that I do. Not many people have this in their lives. If I can become a strong role model and give guidance and can reach out to even one student, my goal will be reached. A week after The Orlando Europa, I graduated with my Masters in Education, specializing in Secondary English. It’s been a busy year with my internship, teaching all year and not being paid, (yet earning credit for teaching), and taking all the core courses I needed to finish my masters in a year. All along with dieting and doing shows! IT’S BEEN CRAZY! PD: Can you see yourself competing for a long time? JR: That’s a good question. As of now, my answer is that I will compete for as long as it fits into my life’s plan. I always have a few irons in the fire and many plans, short and long term, and right now, I am happy with my goals to wait and compete till next year, and excited for an awesome off season!

PD: Jillian, Thanks again for finding the time to do this, I know you are extremely busy! To wrap this up is there anyone you would like to thank? JR: First and foremost, my boyfriend Donny. He’s the light in my life, my biggest fan and supporter; he’s my best friend and confidant. He pushes me in the gym and supports all my decisions in all aspects of life. Without him, this game of life wouldn’t be as fun. And of course my parents, they are also a huge support in all aspects in life. I am who I am today because of their amazing guidance and love. My name is Darrell Terrell “Top National NPC Bodybuilder.” I have been in the fitness industry for over 20 years. I have accomplished many great things and have gone to wonderful places I have never been before. When I am not on stage, I run my own business called “Total Package Personal Training.” Helping athletes become the best they can be stepping on stage and normal citizens who just to get fit for their own personal reasons. About a month ago, I had an epiphany come over me about putting on Oklahoma’s first Childhood Obesity Charity Event entitled “Exquisite Fitness Fashion Show.” Oklahoma has been known for being one of the top obese states. As of this year we ranked number two. For this event I decided to donate some of the proceeds raised from this event to the Oklahoma Childhood Obesity Foundation. The response has been overwhelming to see the Fashion Show, but even more so all the people inspired to help do something about Childhood Obesity. Big figures such as BODYBUILDING.com, FOX25 news, and actor and fitness model Mike O’Hearn that has graced the cover of over 470 magazines is the special guest for this event. Top clothing lines in Oklahoma are show casing their clothing to be a part of this major cause. Businesses as well as people from other states are donating services and products to help raise money in the raffle that will take place during the show. Nothing like this has ever been done in Oklahoma. This is just the beginning of something very special I believe is going to happen. I feel God has put me in the position to do this because of how it came to me while sleeping. It is literally a dream coming true watching the amount of people stepping up to the plate for this. Hi my name is Alexx Ridout. Most people know me as the Teen Titan. I have been bodybuilding since May of 2011. I am 19 years old and I am from Eunice, Louisiana. I started working out to better myself in sports, I also have a disease called Scoliosis, and I used weight training to strengthen my back for football. I have been working out for 4 years, but I have been serious about it for 1 year. My first show was the 2012 Optimum Classic in Shreveport, Louisiana, where i placed 1st in the Teen Division, and 2nd in the Novice Lights. I did another show called The Camellia Championships a few weeks later in Slidell, Louisiana, and I placed 1st in the Teen Division, and 2nd in the Junior Lights. I was then offered a sponsorship from Prince Harrison of Optimum Fitness. I decided to do his 2012 Lone Star Classic in Dallas, Texas, but I was let down by not even placing. But the loss from that show has just driven me to push harder next year for 2013!!! I am very humble and do not like to boast about my achievements because I would be no where with the divine help from God. I am a very big Christian, and I believe all glory goes to God! I will be presenting trophies at the 2012 Heart of Texas show. And I will also be at the booth for the Dallas Europa along with the Optimum Fitness Crew. Thank you, Alexx “Teen Titan� Ridout
