Fall and winter are two of the most beautiful times on Topsail Island. Gone is the sometimes stiffling heat of summer, replaced by cool, crisp days and cobalt blue skies. To be truthful, fall is my favorite time on the island. It usually stays warm all the way through November. The crowds are gone and you can often have the beach all to yourself! Just watch out for hurricanes – it’s that time of the year. The island has three municipalities – North Topsail Beach, Surf City, and Topsail Beach. Make sure to pronounce the island’s name like a local. It’s Top’-sul, not Top-sail. Topsail Beach celebrated 50 years in August with fireworks, food and fun. Read about the history and festivities on page six. Autumn with Topsail, the annual Topsail Beach festival, celebrates 25 years in October. Find out about the festival in this issue. Hope Cusick shares some tasty southern low country recipes and much more in this edition of Sounds Magazine. Just because summer is gone, that doesn’t mean the fun is over on Topsail Island. As the humidity and stifling heat exit, the perfect fall weather sets in and beach music begins. Residents begin looking again for a reason to get outside. Topsail Island plays host to one of the best reasons around. Every year since 1988, the ever growing Island presents the Annual Autumn with Topsail. This year, their 25th anniversary, it will be bigger and better than ever. Locals and visitors alike will flood Anderson Blvd. and Flake Avenue in front of the Assembly Building on Topsail Beach Oct. 19-20. Autumn with Topsail is not just another fall festival, but a chance for the Topsail community to come together to celebrate local artists, authors, vendors, and musicians. Kiwanis Club kicks off the festival with a pancake breakfast each day inside the Assembly Building, selling hundreds of pancake and sausage plates. After breakfast, take a walk around. Various crafters, artists, and authors set up booths and make themselves available to answer questions, and to

It may carry that small town atmosphere, but the wares, authors, and vendors are anything but. Saturday, enjoy the sounds of Steve Owens and the Summertime Band. As the sun sets, the Craig Woolard Band will keep your feet stompin’ and moving. Activities such as boat rides, face painting, bounce houses, decorating activities, and more keep the children entertained. “It encompasses the quaintness of the island, and brings out the locals as well as the mainlanders,” says Patty Humphrey, a longtime Topsail Beach resident. All funds benefit the historic Topsail Island Assembly Building which was used in the U.S. Army’s Operations BumbleBee in 1940’s and the Missiles and More Museum housed inside. There is a $3 per day admission charge for adults and children 10 and under are free. All military (active) service personnel with an ID are free. No pets allowed at the festival.

The number 50 isn’t associated with old age, wrinkles or the downward decline for residents of Topsail Beach. Instead, 50 is a number worth celebrating. Topsail Beach is one of three incorporated towns on Topsail Island and to Mayor Howard McCoy Braxton, Jr. it is one of North Carolina’s best kept secrets. The town’s rich history is peppered throughout the island, from watch towers standing tall to the town’s name. everything carries meaning. “The history of our island is in the name. Early settlers on the main land would know a ship was close as they could only see the top of the sail as ships headed for the inlet to go to sloops point for supplies,” Braxton said. Braxton has spent 10 years serving the people of Topsail Beach as mayor and said he hopes the town doesn’t grow any larger. While there is pride in the community residents have built,

Topsail Beach turns 50 Celebration on the south end! By Ashley Jacobs Sounds Magazine

he doesn’t want it to lose the tranquil vibe it currently has. He ran through the numbers. “Our town has grown from a small fishing community to more than 1,600 homes and businesses. During the months of May through September, we have thousands come and spend time on our beach and waterway. We have people from every state in the United States and from several countries. Our average population is over 8,000 people during summer months,” he said. But even with so many people soaking up sun and taking on the waves

along beach during the high season, the town hasn’t lost its charm. Visitors and residents can still see the watch towers and visit the assembly building where rockets were assembled. “Out little town of Topsail Beach is where the United States space program started before moving to Cape Canaveral. More than 100 rockets were launched from Topsail Beach,” Braxton said. Historical moments like that are worth celebrating. Saturday Aug. 31, residents and friends gathered at the Assembly Build-


ing to celebrate 50 years on the beach. Everyone enjoyed great southern barbecue from Bill’s Barbecue, good music, and fireworks at sunset. The celebration is designed to keep in mind the original values when Topsail Beach was incorporated 50 years ago. The plan then was to “provide an environment that promotes family activities and protects our natural resources for our children” and that’s still the goal to this very day, “I hope the Beach will not grow any more than it is today – a small family beach for all to come and have fun,” Braxton said. The small, friendly atmosphere is one that stands out from other areas along the coast. “People know each other. Residents know the visitors and visitors know the residents. All visitors feel that Topsail Beach is their beach and they want to keep it that way,” he said. Photos by Andy Pettigrew

As I crossed over the old swinging bridge onto Topsail Island it seemed as if time stood still. The faint light of a shrimp boat glimmered in the distance as it made its way toward the inlet. It was early morning and the sun had not made its way into the distant skyline. The excitement of an early morning fishing trip was evident as my wife and grandson waited impatiently for their chance at what they hoped would be a fruitful day of fishing in what I consider to be a local paradise. Topsail Island is considered to be a fishermen’s dream. With its crystal waters and beautiful coastlines both locals and tourists alike spend countless hours sunbathing and enjoying the local shops and restaurants. However, it is the anglers that set their sights on this laid back community. The local piers offer both inexperienced anglers and old timers a chance to spend time honing their craft. I have

watched 12-year-old boys and girls outfish their counterparts on the Surf City Ocean pier many times. In fact, I have been out-fished by young and old on many occasions. Pier fishing is probably the most inexpensive way to enjoy the sport. It takes a minimal amount of fishing gear to have a successful day or night. A six and half foot rod and a moderate reel will suffice. Buy a double hook drop rig or two and a pound of shrimp and you’re in business. A good rule of thumb for a beginner is to use a smaller hook and bait it with

shrimp. Make sure not to put too much bait on and for Heaven’s sake don’t cast over your neighbors line. As a beginner it should be made clear that any fish caught weighs twice as much as it really weighs. Our local piers are very helpful in getting you started. All you have to do is ask. Surf fishing is another enjoyable way to spend the day. I have found that it may be a bit more difficult. However, the rewards are great when you hook that two-pound mullet or pompano and begin the fight to drag him in. I suggest using a longer rod and a

bigger reel to surf fish. Find a dark spot in the waters. That indicates a hole. That is where the fish tend to hang out. A flock of sea gulls circling and diving also indicate baitfish. Baitfish equals bigger fish feeding. Some of my most peaceful fishing trips have been on the beaches of Topsail in the early morning hours. There is nothing quite like watching the sun peak above the waters as it opens another day. Two of the bigger fish that I have caught was during a surf fishing trip with my father. Pops had been catching some small croaker and such and I had been getting caught in sea weed. The following day we were back at it. At eight years old or so I was determined to catch a fish. I thought I was hung on sea weed again and hollered for dad. He told me to put the rod on my shoulder and walk in toward the shore. When I did I drug in a drum about 22 inches in with me. I never forgot that trip. Those are the type of memories that await you

and your family. The waterways and inlets around the island are also very good places to fish. There are many hidden spots that hold a bounty of flounder and red fish. There are guides that will take you out for the day or even half day with almost

guarantees of catching fish. The next time you embark on a fishing trip and catch that big one or lose that real big one, remember you are making memories that will last a life time. I’ve made mine. It’s time that you make yours.

Festival celebrates 50 years

The North Carolina Spot Festival By Andy Pettigrew Sounds Magazine One of the great long-standing traditions in the village of Hampstead turns 50 years-old this year: The North Carolina Spot Festival. This year’s festival will be held Sept. 28-29 along U.S. 17 in the same location the festival has occupied for years. Returning to the festival lineup is the Spot Festival Pageant, a tradition that was missing from the festivities last year. The pageant will be held Sept. 14. Since the first festival was held in 1963, the event has survived all types of economic conditions and many types

of weather; booms, busts, winds, rains and even hurricanes. But after several years of rain, last year’s festival had good weather and organizers are hoping for the same in 2013. For many, the sound of the celebrated fish sizzling in deep fryers is the heart of the festival. Opening ceremonies will be at 10 a.m. Saturday with the first hot spot dinners ready at 11 a.m. Dinners will be available Saturday until 6 p.m. and Sunday from 11 a.m. until 5 p.m. Two well-known bands are scheduled to help celebrate 50 years of hot spots in Hampstead. I love this game!

By Bill Messer Sounds Magazine Einstein said it, though many other learned people have shared the same observation, that to continue to perform a certain behavior over and over in the same way and expect different results is the very definition of insanity. Why, then, oh why do I practice a certain behavior in a certain way, over and over again? Why do I spend money on expensive equipment and why do I spend money for a chance to go out in public, amongst my peers, and show them I am capable of both bad behavior and strong language? Here’s how it works. I have my head down, eyes focused like a laser on the target, feet firmly fixed in a stable position, mind control to concentrate, repeat the mantra over and over again, and breath control to lull my central core into false serenity. And it begins – keep your head down, slow backswing, don’t lift up, keep your

Insanity by any other name is just as nuts shoulders down, fluid swing and one of several possibilities occurs: I hit the ball – it was a perfect drive and it soared far down the fairway. I hit the ball – it sounded good but it took off for the trees on the other side of the adjacent fairway. I hit the ball – it sounded good. I have no idea where it went. I hit the ball – it sounded bad and dribbled a few feet out in front and stopped. Options two, three and four happen all the time. One happens infrequently, but just enough to keep me playing this

stupid game. Why is it so satisfying to smack the little dimpled ball with a steel club? To hear the clink of an iron, the whack of a wood, the, I hate to say it, the ping of a well hit metal wood. And my insanity is so complete, I have no problem accepting the notion of a metal wood, and in fact, lust for a complete set, so perfect is the affliction. What it is, is golf. And around here many remember another pastime as told by a local boy made good, Andy Griffith, as he explained football in a comedy monologue What it was, was football in

It’s a love-hate relationship and I have battled with it for years. I love the game – it’s just that I’m not very good at it. The thing I enjoy most about golf is being outdoors in a park-like surrounding, and the courses around here can be beautiful, with Spanish moss draped live oaks, views of the waterway and coastal marsh flats. A balmy spring morning, a crisp fall afternoon, a gentle breeze – it looks just like the pictures on the brochure. In reality, it’s play in the heat, play in the sleet, and worse, someone in the foursome who’s worse than I am, and who insists on finding his errant shots. I’m too embarrassed to cross the alongside fairway to retrieve my ball, won’t go into fairway resident’s front yards, pretend I don’t even see the tennis court lest play-

ers are gathered around a prostrate body as I drive by. I’ve made every possible bad shot, multiple times – hook, slice, topped the ball, lofted the ball, or miss the ball entirely. In fairness, most of my shots are not that extreme, just not optimal. Some players carefully gauge the distance and select the appropriate club. I tend to use my favorite club, and just hit it harder or not so hard. I could play the whole course with a five iron. And yet, every once in a while the sun and moon and planets line up in their orbits and a favorable influence tugs everything into proper alignment and my club head contacts the face of the golf ball, the sweet spot of the club face wraps the ball in love and the brief embrace rockets the ball away like a Saturn V lunar launch vehicle. “Wow, I’m good,� I think, and for the next shot further down the fairway, repeat the steps for success I just performed, swing and select two, three or

four from the list. The bad hits I can live with, but it’s the superb, stellar, completely satisfying good hits, though not usual, that keep me coming back. Golf for the rest of us  All of my friends who play golf are better at it than I am. There, that’s said and out of the way. I don’t care.  Golfing, fishing and bird hunting were activities my father and I shared when I was growing up. He had a set of clubs cut down for my size. He was a pretty good player, took the game seriously and played mostly with other serious players. Once in a while, he took me with him, and I enjoyed our time together.  I liked to notion of playing golf, a recreational activity not waged on a field of combat. I liked being outdoors. I liked exploring the sides of the fairways, the roughs, and in east Tennessee, the rough could be pretty rough. One step too far could launch you over the precipice into a bottomless chasm. Later, other courses

offered additional attractions like snakes and alligators, shorebirds and eagles.  My regular golf partner Kathy and I enjoy playing golf in more or less the same way. Usually we don’t keep score but when we do we have an agreement

that the highest score for any hole is a single digit. We enjoy the game as a break in our routine of beach walking, walking in the woods of Holly Shelter, walking the loop at Wrightsville Beach, the river walk in downtown Wilmington. This is walking on a golf course, and even though we always have a cart, we still get in plenty of walking. The nicest roughs are those with holes that lie along the Intracoastal Waterway. The views of the sound and the marshes can be exquisite, with stately shrimp boats as well as luxury yachts passing in the distance, flock of shorebirds, geese, pelicans, the occasional osprey and eagle.  Visitors and beach vacationers have several golf courses to choose from: Olde Point Golf and Country Club, Belvedere Country Club, and Castle Bay Country Club Golf Course are in Hampstead, and North Shore Country Club is just across the high-rise bridge on the north end of Topsail Island.

One flipper at a time We’re making steady progress at the new sea turtle hospital facility. After being delayed for what seemed like forever by back ordered water system components, enough of the stuff has arrived that we can almost get the thing up and flowing. We can’t wait to see what kind of adventures await us when we turn the valves and start making our own salt water, The space in our 60x60 sea turtle bay has been laid out for the various tanks that will house our existing and yet-tocome patients. In fact, several of our turtles have already had a few nights stay at the inn and have given it a five-flipper review. Holden III, a little green turtle, admitted just over a year ago with a severe head injury, spent the week before his release (last Thursday) rocketing around in a very large tank, building muscle in preparation for his big day. Two other little greens, Wiggles and Crush are currently in our ICU unit, undergoing extensive daily treatments. It’s a nice quiet spot to recuperate after spending their first months in the hustle and bustle of our place in Topsail Beach. As our patients recover over the summer we’ve been doing a series of small releases. A release in August sent Holden III, along with Sandy Bay, a large loggerhead who came to us this spring quite ill but with a lot of attitude, back

Tastes of the lowcountry south

Southern cuisine is a plethora of tastes and styles of eating and cooking with a mixture of many cultures. A variety of local produce along with fish, seafood , chicken, and pork add to a wide array of recipes. This time of the year there are cabbage, kale, tomatoes, sweet potatoes, broccoli, Brussel sprouts, okra, beans, and squash. Also there is an abundant coastal source for oysters, clams, mussels, shrimp, crab, and fresh fish. Southern fried chicken, pulled pork, baked beans, cold slaw, hush puppies, corn bread, peach cobbler, and pecan pie offer a tasty and popular menu, along with steamed or roasted oysters. Kale and collards are a basic food in the South and kale is at the top of the list for vitamins (A,C, and K) with antioxidants and many heart healthy benefits. The vitamins in kale are fat soluble, and when fat is added to it kale allows the body to absorb the nutrients. So try to add a little fat like olive oil or bacon drippings, eggs, and/or avocado along with the kale. It can be eaten raw in a salad, or cooked in a variety of dishes (soups, sautéed dishes, and quiches). The Southern menu would be lacking if a pecan pie was omitted. Here is a recipe with some chocolate added for a touch of deliciousness. Enjoy. Pecan pie chocolate style 1 prepared refrigerated 9-inch pie crust

3 large eggs, room temperature, beaten 1 cup light corn syrup 1 cup granulated sugar 1/2 cup brown sugar, packed 2 tablespoons butter, melted 1 teaspoon vanilla extract 1 1/2 cups pecan halves 1/4 cup dark mini-chocolate chips Preheat oven to 400 degrees. Place prepared pie crust and pat in a pie dish, and press firmly fluting edges, do not fuss too much with the crust or it become tough.. In a bowl stir together eggs, corn syrup, granulated sugar, melted butter, and vanilla. Fold in pecan halves and pour into pie dish. Sprinkle chocolate chips evenly over mixture Bake in a 400-degree oven for 15 minutes. Reduce temperature to 350 degrees. Bake for 30-35 minutes, or until top is lightly browned and puffy. Place on a wire rack and cool completely. Kale and mushroom-onion quiche Spinach or collards may be substituted in the recipe. Even sautéed chopped Brussels sprouts work nicely in this dish. 1 prepared refrigerated 9-inch pie crust 4 teaspoons olive oil 1 bunch fresh kale, stems removed, thinly sliced 8 ounces white button mushrooms, sliced Salt and fresh ground black pepper, to taste 5 large eggs, room temperature, beaten 1/2 teaspoon powdered thyme 1 cup sour cream 1/4 cup milk or half and half 1 cup grated Swiss cheese Preheat oven to 400 degrees. In a skillet over medium heat add 2 teaspoons olive oil, add shredded kale, sauté, stirring occasionally, until reduced in volume by half, about fourfive minutes. Pour into a bowl. Add two teaspoons olive oil to the skillet and over medium high heat add sliced mushrooms and sauté, stirring occasionally, until they begin to brown, about five minutes. Add the cooked kale


back to the skillet, stir, adding thyme, salt and pepper, to taste. Cook for about three minutes. Remove from heat. In a bowl whisk together eggs, sour cream, and milk. Spread the grated cheese over the bottom of the prepared pie crust. Top with kale-onion-mushroom mixture, then evenly pour egg mixture on top. Lower the temperature to 350 degrees. Bake quiche for 35-40 minutes or until knife inserted in the center comes out clean. Let stand for 10 minutes before cutting into wedges and serving. Low country she crab soup 1 large sweet onion, finely diced 1/2 cup butter 1 cup all-purpose flour 1 quart half and half 1 cup milk 2 cups heavy cream 1/2 cup good quality sherry, not cooking sherry Salt and fresh ground black pepper, to taste 1 pound fresh crabmeat, picked clean In a large soup or stock pot, saute onions in butter, over medium heat, cook until soft. Add flour, and lower heat to slow stirring constantly. Cook for 15 minutes. Add milk, half and half, and heavy cream, continue stirring. Add sherry, stir and simmer on low for 25-30 minutes, stirring frequently, salt and pepper, to taste. Frogmore stew This is a Low Country classic that’s a tasty boil with shrimp. It’s great for a get together. Serves six to eight . 1/4 cup Old Bay Seasoning 1 large sweet onion, peeled and quartered 1 1/2 pounds baby red potatoes or new potatoes 1 pound sausage links, cut diagonally into 1/2 inch slices 6 ears fresh corn, husked and halved 2 pounds large fresh shrimp, unpeeled In a large soup or stock pot bring 3 quarts of water, Old Bay Seasoning, and onion to a boil, covered. Add potatoes, and cook, uncovered for about 10 minutes. Add sausage and corn, return to a boil. Cook uncovered for 10 minutes. Stir in shrimp. Cover, cook for about five minutes, remove from heat and let stand for about

six-eight minutes until shrimp just turns pink. Drain. Cornbread with yogurt 1 stick butter 1 cup all-purpose flour 3/4 cup cornmeal 3 tablespoons granulated sugar 1 teaspoon baking powder Pinch of salt 1/2 cup milk 1/2 cup plain or Greek yogurt, or sour cream 3 large eggs, room temperature, beaten Preheat oven to 350 degrees. Butter a 9 x 13 inch baking dish. Set aside. In a bowl whisk together flour, cornmeal, baking powder, and salt. Set aside. In a saucepan heat milk and butter over medium heat until butter melts, do not let it boil. Remove from heat and let cool for a few minutes. in another bowl whisk the butter mixture, eggs, and yogurt together, then whisk in flour- cornmeal mixture until smooth. Pour the mixture into buttered dish and bake for about 15 minutes or until toothpick inserted in center comes out clean. Place on a wire rack and cool for 20 minutes. Baked catfish This dish has less calories than fried catfish. 2 pounds catfish, 4 fillets 1/2 cup yellow cornmeal 1/2 cup all-purpose flour 1/4 cup Parmesan cheese, grated 1 teaspoon paprika 1/4 teaspoon Old Bay Seasoning Salt and fresh ground black pepper, to taste 1 large egg 2 tablespoons milk Preheat oven to 350 degrees. In a pie dish whisk together milk and egg. In another pie dish stir together cornmeal, flour, paprika, Old Bay seasoning, Parmesan cheese, salt and pepper, to taste. Dip fish fillets in milk mixture, then dredge in cornmeal mixture. Place fillets on a foil lined baking sheet sprayed with vegetable spray. Spray each fillet with vegetable spray. Bake for 20-25 minutes until fish flakes easily when tested with a fork.
