Keeping the Legacy Alive By Capt. Chris Medlin Sounds Magazine Fishing isn’t a hobby. It isn’t a pastime. It is a way of life and a way to connect to nature. When I say “Keeping the legacy alive” I am referring to two things. One is how to generate interest and the second is to protect what we have for generations to come. I remember as a kid my granddaddy Charlie (my son’s namesake) taking me out on Barnacle Bills. He made sure the fish were actually biting before he took me. He knew that a five-year-old boy and a two-month old Cocker Spaniel have about the same attention span. He taught me to cut bait, bait the hook and how to catch a fish. As I grew older the regular old bottom fishing for pan fish kinda lost its luster. Eventually I wanted to catch something bigger which meant I needed more patience. If grandad had taken me when there was nothing biting I may have lost all interest. So please pick appropriate times and set expectations where they need to be. A five-year-old kid won’t enjoy
eight hours of wetting a hook. It is also a good idea to give the youth opportunity to enjoy the outdoors. One of the best ways I have found is to buy them a lifetime fishing and hunting license. Children under the age of one $252 for life.

They will never have to buy a license again with the exception of a duck stamp and or bear stamp. The money is put in a trust to preserve gamelands for the future so you are getting double your money’s worth. Secondly we need to protect our rich natural resources in Pender County. We have the ocean, the sounds, the Cape Fear River as well as vast fertile farmlands and game lands. All of these resources are finite. We need to teach the youth of today that this is a gift that was given to them. It was held in trust by us. I for one do not want to look my children in the eye and say “sorry – they were thick when I was a kid but we fished and hunted them out.” It has happened in the past and can happen in the future. If we strive to use our resources in a sustainable manner they will be there for our children and grandchildren. In short, I want us to enjoy our resources responsibly and encourage the youth of tomorrow to explore the outdoors. If we all do our own small part to educate the youth of tomorrow, they will have the opportunity to do the same.
Fishing at Topsail Island and Pender County
Paradise for Eager Anglers As the sun began to peak above the blue waters toward the beach, the waves rolled onto Topsail Beach as if it was meant to ease any stress and anxiety a person could have. A local angler waded knee deep into the foam with rod and reel in tow. With a quick heave he launched his baited hook just beyond the breakers and began to back pedal toward the shore. He placed his rod into a white plastic holder and settled into his chair with a hot cup of coffee in his hand. This scenario is repeated thousands of times a spring, summer and fall on what may be the best kept secret on the east coast. Topsail Island is a fresh haven for what many consider to be one of the prime fishing spots on the coast of the
Carolinas. It has something for the serious angler as well as those looking to pass some time while watching the kids play. If you are fishing off of the beach, off of the pier or in a boat, these waters are considered some of the best for any type of anglers. Although the fishing season officially starts in late March or early April, there are fish to be had year round here. For the diehard angler who is willing to brave the elements, January may produce some bluefish and spotted trout along with a few flounder. However, the best time to fish is from late March to as late as early November. The sound and backwaters of Topsail are considered one of the best areas in Eastern North Carolina to fish for red drum and flounder. The reds are plentiful with some over slot fish being caught with regularity. These are very active fish and once you hook one they

From the Holly Shelter game lands to way off the beaten path at the end of White Stocking road, the folks in Pender County do not have to drive far in search of a place to kick off a freshwater fishing trip. are a blast to land. The flatfish are also plentiful in the same spots. They are a bit more difficult to hook but are very rewarding when fried and served with your favorite sides. From drifting for flounder in the New River Inlet, sight fishing for reds, finding your way through the shallow waters in the many creeks off of the waterway in search of your next conquest, or just grabbing a bench on the pier, Topsail Island is the place to fish for Pender County. Freshwater fishing There are those that would rather venture out in their favorite Jon boat in the Cape Fear River in search of a string of pan fish. Pender County’s freshwater arena is considered one of the untapped freshwater fishing areas in the state. There are many landings to drop your boat into the water in our county.

Low Country Cooking By Hope Cusick Sounds Magazine Low Country Cooking is a style of cooking centered in the Carolinas, especially Charleston. Some recipes might be Southern fried chicken, country ham, okra, green tomatoes, crabs, shrimp, oysters, seafood boils, sausage, duck, and red-eye gravy. Local Southern ingredients create the delicious dishes based on family memories and traditions. Today some consider that Low Country cooking is more of a state of mind or an attitude rather than a culinary tradition, because of the modern twists. Most Low Country cooks have a commitment to keeping the recipes simple and uncontrived. Such recipes as red rice, squash casserole, collard greens, grits, and corn bread. Low country cooking is noted for its great hospitality and generosity both in hospitality and cooking. Try some of these recipes, some with my twist on them. Enjoy! Baked Cheese and Bacon Grits 6 thick sliced smoked bacon strips, crisply cooked and crumbled 6 cups chicken broth Salt and fresh ground black pepper, to taste ½ teaspoon garlic powder 2 cups regular grits 16 ounces cheddar cheese, shredded ½ cup half and half, or milk 4 large eggs, beaten ½ cup butter 4 ounces sharp white cheddar cheese, shredded 4 ounces Monterey Jack or sharp yellow cheddar cheese (Optional) Preheat oven to 350 degrees. Butter a four-quart casserole dish or 9x-13-inch baking dish. In a large saucepan bring broth, garlic powder, salt and pepper to a boil. Stir in the grits and whisk until completely combined. Lower heat to low and simmer until the grits are thick, about 8-10 minutes. Add the 16-ounces cheddar cheese
and milk and stir. Gradually stir in the eggs and butter, stirring until well combined. Stir in Monterey Jack cheese, if desired for an extra zip. Pour the mixture into the casserole dish. Sprinkle with white cheddar cheese and bake for 35 to 40 minutes or until set. When ready to serve sprinkle with crumbled bacon pieces. Pimento Cheese Use this recipe for Pimento Biscuits. ¼ cup mayonnaise 1½ cups sharp cheddar cheese, shredded 2 tablespoons jarred pimentos, drained and chopped 2 scallions, light green part, thinly sliced In a bowl fold together cheese, mayonnaise, pimentos, and scallions. Pimento Cheese Easy to Make Biscuits Makes 10-12 biscuits. 2 cups all-purpose flour 3 teaspoons baking powder 2 teaspoons granulated sugar Salt and fresh ground black pepper, to taste 1 cup half-and-half or whole milk 1/3-1/2 cup prepared pimento cheese mixture, plus ¼ cup mayonnaise if using premade, or pimento cheese mixture from recipe above ¼ cup butter, melted Preheat oven to 425 degrees. Spray a baking sheet with vegetable spray. In a bowl whisk together flour, baking powder, sugar, salt and pepper. Add half-and-half and pimento cheese mixture and mix until fully incorporated. Add mayonnaise as needed to keep moist. Stir only until combined, do not over stir. Drop in large 2-3 tablespoon mounds onto prepared baking sheet spacing biscuits 2-inches apart. Bake in a 425-degree oven for 1012 minutes or until biscuits are a golden brown. Brush tops with melted butter. Serve warm. Easy Low Country Shrimp Boil Serves 6. Water, about four quarts, and if desired, add one 12-ounce can of beer 3-6 tablespoons Old Bay Seasoning 2 large sweet onions, cut into wedges 12 red new potatoes, halved 2 packages large smoked sausages (I
use Hillshire.), cut into two-inch pieces 6 ears of corn, husked and broken in half 3 pounds large fresh shrimp, unpeeled Fill a large pot with enough water, and beer, if desired, to cover all of the ingredients, add Old Bay seasoning and bring to a boil, add more for desired flavor. When the water boils add potatoes and onions. Cook on medium heat for 15 minutes. Add corn and sausage and cook for an additional 10 minutes, until tender. Add shrimp and cook for 2-3 minutes until shrimp just turn pink. Drain; discard onions, and pour into a large serving bowl, platter, or pan and serve with a loaf of bread or pimento cheese biscuits. Tasty Boiled Peanuts This recipe gives a new twist on tasty boiled peanuts. Quick standard recipe: in a large soup pot, boil water; add raw peanuts, in shells, stir in one cup kosher salt for five pounds of peanuts, and boil for three hours. For softer peanuts boil longer. Leftover peanuts may be refrigerated for up to three days, and reheated in the microwave, if desired. 5 pounds raw green peanuts 2 cups Vidalia or sweet onion, sliced 2 12-ounce bottles of larger beer - Optional (You might want to try Pabst Blue Ribbon lager.) 1 to 1½ cups kosher salt, to taste 1 cup Worcestershire sauce 12 cloves of garlic 4 bay leaves In a large soup pot with four quarts of water, stir in raw green peanuts, onion, lager, salt, Worcestershire sauce, garlic, and bay leaves. Bring to a boil; lower heat, cover and simmer for four hours or until tender. Drain. Cool completely about an hour. Remove and discard bay leaves. Store leftover peanuts in refrigerator for up to three days. They may be warmed in the microwave, covered. Fried Pickles Canola Oil ¾ cup all-purpose flour ¾ cup buttermilk 1 teaspoon granulated sugar Pinch of fresh ground black pepper, to taste 48 dill pickle chips
Pour canola oil into a medium saucepan to depth of two inches heat to 350 degrees. Place flour in a shallow pie dish. Place buttermilk, pepper, and sugar in a bowl. Dredge pickle chips in flour then dip in buttermilk. Dredge in flour, shaking off excess. Fry in hot oil for 3-4 minutes, turning halfway through. Transfer to layers of paper towels. Scratch Banana Pudding Pie If you prefer meringue is not necessary for this recipe. Use whole eggs in recipe then. 8 ounces or two cups, ginger snap cookies or vanilla wafers crushed 3 very ripe bananas, cut into ¼-inch slices 12/3 cups granulated sugar, divided ¼ cup all-purpose flour 2 cups half-and-half or milk 3 large eggs, separated 1 tablespoon butter 2 teaspoons vanilla extract or bourbon, if desired, divided Preheat oven to 350 degrees. Spread one cup of cookie crumbs in a nine-inch extra deep pie plate or a casserole dish, otherwise the pie won’t fit. Arrange half the banana slices in a layer on top of crumbs. In a saucepan whisk together one cup sugar and flour, then add yolks and whisk until smooth. Whisk in one cup half-and-half and butter. Bring to a boil over medium high heat. Whisk constantly. Lower heat to medium and boil, keep whisking for one minute. Remove from heat and stir in 1½ teaspoons vanilla. Pour half the mixture evenly into the pie dish. Top with remaining crumbs then remaining banana slices in an even layer. Pour in remaining pudding mixture, spreading evenly. To make meringue, beat egg whites in a large glass bowl, with an electric mixer, on high speed until soft peaks form. Gradually add remaining ¼ cup sugar and ½ teaspoon vanilla, continuing to beat until whites are stiff and glossy. Spread gently over pudding, covering completely. Bake until meringue is lightly brown about 8-12 minutes. Let cool on a wire rack for 20 minutes, then chill until cold, at least six hours, or over night.

Ghosts of the Cape Fear
Footsteps in the Dark By Bill Messer Sounds Magazine I met Kenny Edgell at his home in Rocky Point and we sat down for a kitchen table interview. He started to plug in his laptop and told me about another paranormal investigator. “This woman I know, that I go to, in Wilmington, she’s psychic. She hangs out with me sometimes, too. She’s good,” he told me. “I mean, very good.” “Are you not good?” I asked. “Yeah, I’m good,” he laughed. Finished with his setup, I asked Kenny to introduce himself. “I’m Kenny Edgell. I’m a ghost catcher.” “Did you ever catch any,” I asked. “I can,” Kenny said, “with a mirror box, but that’s not what I really do.” Kenny was born in Pennsylvania, and his father was in the Marines and the family
settled in Rocky Point after his retirement. “When did you start ghost hunting?” “In ‘91. A friend of mine and my brother, we got into watching ghost stories. Me and my friend, we started with a small little camera, and an audio recorder. We went out in a graveyard, in Burgaw.” “Have you ever been over to Moore’s Creek?” I asked. Kenny got excited, “Yeah, I got pictures. Down in the battlefield.” “On your first outing, did you catch anything?” “Yeah, we got shadows, voices.” “Do you only go at night? Do you ever go in day?” “No, I never go in day,” he said, “I tried.” “Does it ever scare you?” I asked. “No. I’m not afraid. I call ‘em ‘shadow people’. If you catch sight of ‘em, it happens so fast (he makes a swoosh sound), they’re gone.”
“Can you interact with them?” I asked. “I don’t think you can,” he answered. “I’ve been trying.” Curious about the business of ghost hunting, I got right to the point. “How do you make your money in the ghost hunting business. What do you do to satisfy your clients?” He answered, “They want the spirits out.” “How do you do that?” I asked. “With sage,” he said. “Spirits don’t like sage. And a cat is a good detector. If a spirit is there, a cat will hiss, all four legs will get stiff

and the cat will ‘crunch’. Dogs can tell, too. My dogs won’t go across graveyards.” What I learned about Kenny is that his business is to detect the presence of ghosts or spirits. If he detects their presence, he uses the herb sage to discourage habitation. It seems to work. Others think so, too. Just look through Amazon, search for ‘sage smudge stick’. “Has any particular outing stood out as most memorable?” I asked Kenny. Kenny flipped open his laptop and scrolled through some pictures on his Facebook pages. “There,” he pointed to one, “There’s a good one. It stayed out there, I don’t know how long. The cop saw the same thing I saw, he had his gun out. I told him ‘Don’t do anything’. We got closer and it got cold. It went ‘round the tree. It was hummin’. It got colder and colder, I was takin’ pictures, and the cop got his flashlight out and turned it on and ‘whoosh’ it just took off.” “Incredible!” I exclaimed. “It sounded like a child or female, goin’ round hummin’. ‘Should I call it in?’ he asked and I said ‘Nope’.” It had just took off. Kenny showed me more pictures, in
graveyards in South Carolina. “There’s weird things in graveyards. Here, this is Moore’s Creek Battleground. I took this picture, that’s like, spirits around, look, you can see the arms. We were drivin’, it went so quick, we saw fog, it moved so quick. I said, ‘I gotta’ catch this, stop the car!’ I grabbed my camera and I followed it, it went down to the creek over there, I followed it. I was right there in the battlefield. It got so cold.” Getting down to the business of ghost hunting, I asked Kenny, “When you get a call from a potential client, what do you do? Do you set up equipment?” “The first thing I do is a sweep. I take two tools, my EMF meters (electromagnetic force field detectors) and my EVP (electronic voice phenomena) recorders.” Kenny got up from the table and opened the first of three or four aluminum travel cases, each with multiples of different kinds of meters and recording equipment. “These are night visions, these are all EVPs, (impressive, high quality Sony digital voice recorders), these are my thermo sensors, my DVRs (digital video recorder), my flashlight that can turn on by itself if
a spirit touches it.” Other boxes contain vibration detectors, and electronic projection thermometers. Kenny reached into another box and pulls up an EMF meter to show me. “This is the EMF meter,” he said, “This is how you find ‘em. It will scream if it finds ‘em, you’ll hear it if they’re near.” “What do you do if you find one? Can you catch them?” I asked. “Yes, use a mirror box,” Kenny told me, and described the box and how to use it. A ‘devil’s toy box’ or ‘spirit box’ is a cube with mirrored surfaces inside. The lid is left open, sometimes with a EVP microphone and/or EMF meter nearby. Ghosts are attracted to the ‘mirror of the universe’ go inside, set off the instruments, and the lid is closed, with the ghost inside. “What do you do with ‘em?” I asked. “Bury them,” he answered. I had to ask, “What do you do with them? Bury them next door?” and laughed. “No, no, I take ‘em far out in the country to bury ‘em. You don’t want an angry one to follow you home!” he laughed. Main Street Inn, Topsail Beach By Tammy Proctor, Pender County Tourism Director Special to Sounds Magazine Denise Sanderson is a preservationist. In 2006, Denise and Stuart Sanderson opened Tarboro Main Street Inn, a bed and breakfast, they renovated from a historical 1895 home. The large front porch is inviting and Denise’s designs make for a bed and breakfast that receives rave reviews on TripAdvisor. On July 1, Denise and Stuart opened the Main Street Inn in Topsail Beach. She applied her same preservationist instincts to the former Blue Gecko building. “We’ve been coming to Topsail for years,” said Denise. “I loved this building.” She said while it is built in a style that resembled Operation Bumblebee observation towers, the structure was built in the early 50s. “It’s had a lot of uses,” Denise said. “We tried to use everything we could from the property,” she said. One of the most stunning features preserved is the weathered wall in one of the down stair suites. Another salvaged piece is an old, white sink. Throughout the Main Street Inn, the Sandersons used beautiful Indonesian mahogany. The lines in the Inn are clean and modern. She used bright whites and stainless steel for a contemporary design. The end result is a functional, four suite inn with beautiful appointments and a view of the ocean and the Intracoastal Waterway. “The suites are named Sea, Shore, Sky, and Sound,” said Denise. The Sound suite is on the first floor. It is wheelchair accessible. Denise said it is the most requested suite. Seniors request the Sound suite because there are no stairs and there is outdoor seating. Outside the Sound suite is an outdoor shower, a porch, and comfy outdoor seating. While all four suites are in demand, especially by families, Sky is often called a bridal suite with both ocean and Intracoastal views. “We offer wi-fi, cable, flat screen televisions, a sweet breakfast and coffee – all included,” said Denise. In the rear, near the parking lot, is a garden area. Guests are welcomed to the fresh tomatoes and produce. Nest season Denise said sheSubs will plant a garden that• Hot Oven • Manicotti
will have educational value to children. She will grow a few tobacco, peanuts, and cotton plants so that children can see what these southern crops look like. Main Street Inn is located at 808 South Anderson Blvd. in Topsail Beach. It is conveniently located in the center of town, near the Missiles and More Museum, Patio Playground, Beach Shop & Grill, Cora’s Deli, Breezeway Restaurant, Home Port, The Gift Basket, Quarter Moon Books, Gifts and Wine Bar, and other shopping. It is one block from the Atlantic Ocean and one block from the Intracoastal Waterway. Virginia writer Ray McAllister called Topsail Island “Mayberry by the Sea.” That’s a compliment, by the way. On a rainy evening, and occasionally during an afternoon, spin on over to the Topsail Beach Skating Rink and you’ll understand what McAllister meant by Mayberry by the Sea. The Topsail Beach Skating Rink is the same as the day it opened in 1964. From the original wood floor to the vinyl 45s playing on the turntable, the skate rink is a place to behold, a place to enjoy. “It’s a time capsule on the south end of Topsail Island,” said Dan Arnold, the nephew of Sonny and Doris Jenkins. “Generation after generation, decade after decade, families skated here,” said Arnold. Arnold helps Aunt Doris run the skating rink. He said he started skating at the rink, located above the Topsail Beach Post Office, when he was only 3 years old. Today he dazzles fellow-
skaters with spins and speed on skates. “There were nephews and nieces who started skating here at the age of 2 or 3 years old,” said Arnold. He said Aunt Doris started skating when she child. She’s 78 years young and still skates (and she still works at the post office). Doris and Sonny, a contractor who helped build houses on Topsail, built the Topsail Beach Skating Rink. Uncle Sonny installed the wood floor, speakers for music, and the ballroom disco ball in the center of the rink. It may be the only rink where skaters can get a glimpse of the Intracoastal Waterway as they whizz by the open windows. There is no air conditioning in the windows. Box fans circulate the air. On a summer night, a visitor can drive down Anderson Boulevard in Topsail Beach and hear the 80s music playing over the old anthem-type speakers and see the sparkle and glitter of the disco ball.

“Aunt Doris used to play only classical music to skate to,” said Arnold. He convinced her to upgrade to 45s in 1981. He said he scoured yard sales for 45s by Elvis, Bee Gees, Rolling Stones and others. Those records are still played today. The uniqueness of the rink and the fond memories that the Topsail Beach Skating Rink evokes attracts visitors and media alike. Aunt Doris doesn’t care much about the media attention. She’s just happy people enjoy skating. “I’m all about safety,” she stressed. The Topsail Beach Skating Rink is located at 714 S. Anderson Blvd. The skating rink is open nightly from March through Labor Day weekend. They are open most weekends through the last of November or first of December. nation. But the Karen Beasley Sea Turtle Rescue and Rehabilitation is one of the few worldwide dedicated to caring exclusively for sea turtles. The sea turtle hospital opened in Topsail Beach on Nov. 7, 1997, near the Bush Marina. In May 2014, the new facility officially opened in Surf City. Located at 302 Tortuga Lane, off Charlie Medlin Drive, the sea turtle hospital houses a room for surgeries, a diagnostics lab with x-ray equipment, rehabilitation pool, and isolation sick bay. Visitors are met with displays about seashells, turtle nesting, and various species of turtles. The colorful Memories Wall provides families with a “Kodak moment.” In the tour, visitors can see Sick Bay through glass windows and watch a turtle rehab in the pool. The tour leads visitors into Turtle Bay for an up-close view of the turtles in their large blue tanks. Volunteers are on hand to provide information about the turtles, including an explanation of why the turtle is in the hospital. While the Karen Beasley Sea Turtle Rescue and Rehabilitation Center attracts more visitors than any other area attraction, it remains first and foremost a hospital. That is why visitation hours are noon to 4 p.m. on Mondays, Tuesdays, Thursdays, Fridays, and Saturdays. The majority of the hospital hours
are spent on treating and feeding the creatures. Here’s a tip for Pender residents who want to tour the turtle hospital. Saturday is the best day. The lines are not as long because vacationers are getting their rentals and their groceries. Admission is $5 per adult, $3 per child, and $4 for all active military personnel. Sea Love Sea Salt Company, a local family-owned and operated business with its headquarters located in Burgaw, was recently named a MADE Winner by the Greater Wilmington Business Journal. The Journal seeks to honor makers, artisans, small business owners and manufacturers in the tri-county area. Sea Love, along with Port City Java and The Veggie Wagon, represented the Food and Beverage category. Husband and wife team Dave and Amanda Jacobs collect water from Wrightsville Beach and haul it to their farm in Burgaw, where they create their culinary finishing salt. The filtering, solar-evaporation, bottling, labeling and packaging all take place at the farm. Amanda said that it all started with the couple following through with their dream of living at the beach. “It made sense,” began Amanda. “We are obsessed with beach life, sunny weather, surfing, stand-up paddling and running on the beach. Then came a visit from our friend Josh, who suggested that we try to make salt. She said that they ventured to the beach with buckets, experimenting with various methods of salt-making. They tried boiling, then baking, and even a combination of the two before they finally gave solar evaporation a shot. Although this process was the lengthiest, they found that it resulted in flaky yet crunchy salt using only solar energy. They discovered that the briskly moving waters of Wrightsville Beach created a delicious salt with perfect texture, and they decided to share it with others. “It is this sharing process that we enjoy the most - talking with customers, chefs and stores while gaining inspiration, feedback on flavors, scents, new products and packaging. The growth and backbone of this company comes from these connections,” said
Amanda. Sea Love starts by collecting ocean water during a high tide at Wrightsville Beach. They take it to their farm in Burgaw to filter it through four-ply cheesecloth, removing any sand or sediment. The filtered water is transferred into bins in their greenhouse, which serves as a salthouse. It takes the water about three to seven weeks to evaporate, and salt is left behind in pure crystal form. The salt is harvested and hung in cheesecloth balls to dry, and then it is ready to be mixed with herbs, bottled and used in your kitchen. “We fully stand behind the quality of our salt and take great measures to ensure its purity and maintain transparency as a company. NC beaches are strictly monitored by Division of Marine Fisheries, which tests the water quality year round in 240 sites, including our exact pull site,” said Amanda. \ Sea Love Sea Salts can be ordered directly from their website at www. sealoveseasalt.com or bought in a selection of stores and markets, including Sisters Organic Market in Surf City.
