Easy Quiche

Ingredients

2 tubes store-bought biscuits

5 eggs

2 cups half and half (or heavy cream)

8 oz. grated Swiss cheese or Gruyere (reserve ½ cup for topping)

2 cups frozen chopped spinach

1 cup + 1 cup Durkee frizzled onions (reserve 1 cup for topping)

½ tspn. pepper

6 strips pre-cooked bacon, crumbled

Directions

Preheat oven to 350˚.

Peel biscuits apart into 2 thinner layers, so each biscuit is now two round pieces. Spray deep casserole or pie dish with butter spray. Lay biscuits out and press together on bottom to make a crust. If you have enough, continue layering biscuits up the side as well, pressing together with fingers so they are sealed. Par bake the crust for 15 minutes at 350.

In large mixing bowl, beat eggs and cream together. Add all other ingredients. Remove dish from oven, pour mixture into dish. Bake for 30 minutes. Remove, top with remaining cheese and onion frizzles, and bake another 15 minutes. Check for doneness with toothpick in middle. It should be a little jiggly, not hard.

*Quiche is very forgiving. You can swap broccoli, mushrooms, or asparagus (all cooked first) instead of spinach. You can also use diced ham, crumbled sausage, and other cheeses as you like.
