TJLA SHOW HEIFER OF THE YEAR The TJLA Show Heifer of the Year concluded with the 2017 State Fair of Texas. Points from the top five participating shows are calculated to determine the TJLA Show Heifer of the Year and runner up. Rules and complete results are posted to the junior page of the TLA’s website. The top two heifers will receive custom-made belt buckles presented during the 2018 Lone Star Shoot-Out during the Fort Worth Junior Heifer Show. The 2017 Show Heifer of the Year is LSTO 609D exhibited by Emma Tittor of Paradise. The 4/17/2016 daughter of EXAR Classen out of SBLX Extra Special had a total of 103 points. The runner up was MAGS De Lorean exhibited by Tucker Parkinson of Levelland. The 1/12/2016 daughter of MAGS Zodiac out of MAGS UR Salina had a total of 100 points.

STUDENTS ATTEND TEXAS YOUTH CATTLE CONFERENCE Twenty students from across Texas attended the Texas Youth Cattle conferences offered in the Panhandle and South Texas regions. Members of junior cattle breed associations, Texas 4-H Livestock Ambassadors program and Texas FFA Associations were selected to attend the conference through an application process. Madison Counsil of Madisonville represented the Texas Junior Limousin Association. Madison has submitted this report on her activities: This summer I had the pleasure of attending the Texas Youth Cattle conference put on by the Texas Beef Council. This event was sponsored by the Beef Checkoff program and allowed youth leaders from across the state to participate in educational activities to learn more about the beef industry. The first stop we made was to visit the Texas Department of Agriculture. While there, we had the opportunity to speak with representatives from the Texas Southwest Cattle Raisers Association and the Texas Animal Health Commission. It was an amazing experience to learn about some of the intricate inner workings that influence Ag policies. Our next stop was the Graham Feed Yard in Gonzalez. I thoroughly enjoyed this stop, because I found it enlightening how daily feedlot operations work. Some of my experiences at Graham Feed Yard, included learning about the number of cattle kept on
site, daily feed rations, and the variety of breeds that each feed yard houses. Next, we toured the Same Kane packing plant. They showed us firsthand how the marketing team plans their strategies and how the USDA inspectors and plant workers meticulously strive to bring the highest quality meat to consumers. However, my greatest takeaway from the trip was learning that when animals are harvested how each individual part is used and none of the animal is wasted. Also, we got the chance to travel to Texas A&M Kingsville and fabricate sides of Lowline Herefords. This unique experience allowed me to see the different cuts of beef prior to packaging. Finally, we toured a food retail facility. While there they showed our group how the products are packaged and distributed to consumers. Getting to see the entire food marketing system from start to finish was a very memorable opportunity. I would like to give a special thanks to Graham Land and Cattle, Kane Beef, the Texas Beef Council, and also the Texas Beef Producers for making this all possible with the help of the Beef Checkoff Program. Yet, in the midst of all this carnage, we witness the best of humanity—people from all parts of America rush to the aid of people they do not know. Millions of dollars and supplies have been donated to help in the recovery process. As we approach the Thanksgiving season, I am mindful of the fact recovery will be slow and there is much yet to do. 2 Chronicles 7:14 says, “That if my people who are called by name humble themselves and seek my face and pray then will I hear from heaven and heal their land.” As we gather around the table for

LAWRENCE NAMED TO NALF BOARD OF DIRECTORS BALLOT The NALF nominating committee has slated candidates for the 2018 board of directors’ election. The election will be held during the NALF annual membership meeting Monday, January 8, 2018, at 7:30 a.m. in the National Western Club on the NWSS grounds. NALF members not able to attend the annual meeting (during the NWSS), may request an official ballot from the 8

NALF office prior to December 1, 2017. You must submit a letter to the NALF office requesting an absentee ballot. A form letter is available on the NALF website to place the request. The office will not accept requests after that date. Once members complete and sign their absentee ballots, they should return them to NALF’s official accountant prior to December 31, 2017.

NATIONAL BEEF QUALITY AUDIT SHOWS IMPROVEMENT Since 1991, the beef checkoff-funded National Beef Quality Audit (NBQA) has delivered a set of guideposts and measurements for cattle producers and others to help determine quality conformance of the U.S. beef supply. Early NBQAs focused on the physical attributes of beef and beef by-products—marbling, external fat, carcass weight and carcass blemishes. These cattle industry concerns have evolved to include food safety, sustainability, animal well-being, transportation and the growing disconnect between producers and consumers. As a result, over the past 25 years, NBQA researchers have made significant changes to the research, leading to an increasingly meaningful set of results. In fact, data from the 2016 National Beef Quality Audit add tremendously to the core knowledge from preceding audits. Major elements include: The Face-to-Face Interviews provided understanding of what quality means to
the various industry sectors, and the quality challenge priorities. This research will help the industry make modifications necessary to increase the value of its products. Among the findings... • As it did in the previous audit, food safety surfaced as a key quality factor. In fact, to many respondents, food safety was believed to be implied as part of doing business; • T h e p re va l e n c e o f b r a n d e d b e e f items increased in the marketplace, which matched concerns about size inconsistencies in beef boxes. While size consistency was more important than size increase, large carcasses are making it harder for many further processors to meet customer specifications for thickness and weight; • Many companies were willing to pay a premium for guaranteed quality attributes. However, the average premiums companies were willing to pay were lower

than in 2011. Tenderness and flavor continue to be the two beef quality factors that drive customer satisfaction; • Product quality was the most cited strength of the steer and heifer sector of the beef industry. Retailers and foodservice companies identified marketing and lack of progression toward process transparency as the greatest industry weakness. Cooler Assessments The Cooler Assessments captured data on quality and yield grade attributes and carcass defects. It also provides a benchmark for future beef industr y educational and research efforts. The 2016 research showed: • While the industry is improving the quality of beef being produced, that quality is being accompanied by an increase in size and fatness; continued on page 12

• Since 1995 there has been a continued increase in carcass weight. In 2016, 44.1 percent of carcasses weighed 900 lbs. or greater, which is 20.7 percentage points higher than in 2011. While total cattle slaughtered is the lowest in years, total beef production has increased. This suggests a positive sustainability outcome, producing more beef with the same amount of resources; • Heavier carcasses could result in an increased ribeye area which, in turn, could lead to a steak with an undesirable surface area. Consumers generally prefer thicker steaks with a smaller surface area. • There was a dramatic increase in the frequency of Prime and Choice, and a decrease in the frequency of Select. One of the reasons for this is the increase in dairytype carcasses. While the greatest proportion of carcasses were within the lowest third of the grade for both Choice and Prime, the majority of carcasses qualifying for Select were in the top half of the grade.

Conclusion The beef industry has spent the last quarter century significantly improving the quality
of its product. However, there’s no denying room for continuous improvement. While the data show that those in the industry have a valuable story to tell, it’s no help that many in the industry don’t fully know the best way to tell it. The 2016 National Beef Quality Audit observed a decrease in cattle with hide brands, presence of horns, and an increase in the frequency of Prime and Choice carcasses. However, it is evident further improvement is needed with liver condemnations and carcasses with bruising. An important strategy for improved industry health and success was evident in the research: utilizing BQA and its principles to increase consumer confidence and enhance industry commitment would encourage greater beef demand, and improve industry harmonization. Carrying this BQA message throughout the industry all the way to consumers would benefit every audience.
