ALAN CROSS

One of Canada’s most influential pop music voices is not a singer, but a legendary radio personality and historian.

THAT VOICE. The second you hear the sound of the legendary Alan Cross, you are immediately aware that you’re going to receive something valuable – a gift that you can also share with others.

It’s no secret that music plays a tremendous role in my life, and Alan Cross was someone who formed my love and taste for music from an early age. In many ways, he became my musical professor. My passion started when, at the age of 12, I first heard Van Halen. I was in a 1981 Honda Civic hatchback where the back seat was one massive speaker, and within the first few seconds of “Running With The Devil” I was hooked. From then, I began constantly consuming, finding and collecting music.

I remember hanging out with my friends and listening to Alan Cross on Sunday evenings; his show was a regular weekly staple for me, and if you missed it you felt like you were falling behind. Alan introduced me and many others to great bands like the Smiths, Depeche Mode, The Pixies, Pearl Jam, Sonic Youth, and so much more. I know I'm not alone here when I say that it felt like Alan was a friend that just knew an extraordinary amount about things that not many people were aware of. He was a friend that made you seem more cultured, educated and certainly interesting. When I sat down with Alan, I wanted to find out where his love for music began, and quite simply, how he became so ridiculously cool.

IT WAS AT CFNY (LATER RENAMED THE EDGE) WHERE ALAN ESTABLISHED HIMSELF AS THE LEADING AUTHORITY IN ALL THINGS

MODERN MUSIC.

It wasn’t very long until the kids started to come to his house during lunch, so Alan could play DJ. By the time he graduated, his album collection had grown to include hundreds of titles.

In 1980, Alan went on to attend the University of Winnipeg, where he joined the team at the campus radio station. After graduating, he landed his first professional radio job, at CJRL in Kenora. From there, it was KX-96/Brandon and Q94-FM/Winnipeg, until he eventually ended up at CFNY (102.1 The Edge) in 1986.

It was at CFNY (later renamed The Edge) where Alan established himself as the leading authority in all things modern music. Alan was present during one of the most important moments in alternative music. His radio show, “The Ongoing History of New Music,” made its debut in February 1993. He recalls a time in 1991 where Smashing Pumpkins’ “Gish,” Red Hot Chili Peppers’ “Blood

During this time, his uncle had a side hustle replenishing jukeboxes. He would take out the old 45s and replace them with new ones. Alan happened to be visiting at his uncle’s home shortly after his uncle had replenished one of the jukeboxes. He offered the old records to Alan, who still recalls with delight choosing exactly 27 discs to bring home.

Alan soon became the music aficionado at his school. In his Canadian smalltown high school, if you weren’t great at playing hockey, you ran the risk of being subject to bullying. Since Alan played with accordions and not hockey sticks, he was vulnerable: instead, he began to earn the respect of his peers with his ever-growing record collection and wickedly impressive musical knowledge.

What was it like to interview these artists during such an unbelievable time in music? Alan simply answers that he believes he is a conduit for the fans. He feels a deep responsibility to get something good out of his discussions with artists, as he understands his fans would love to be in his position. He also feels as though artists are extremely special people. “They have an ability to feel more than the average person and can translate that into something we understand and relate to. No one really knew David Bowie, but knowing David Bowie helped you understand yourself.”

Alan spent 15 years at CFNY/The Edge, producing a total of 720 one-hour episodes, making it what might be the longest-running music documentary in Canada. Alan acknowledges how much the music landscape has changed during his career – for instance, the changes streaming has forced on music. Few people know, for example, that online streams only earn money for their creators until they have played for 30 seconds. This means that the song needs to captivate right from the hop. these days to make grand songs with huge build-ups like the U2’s “The Streets Have No Name” or Zeppelin’s “Stairway to Heaven.” Inevitably, it forces artists to make commercial sounds designed for TikTok, rather than art.

I ask Alan a question that is constantly on my mind: is our best music behind us? “Every generation believes that their generation of music is the best,” he answers, although he does recognize that it is becoming more and more difficult to be original. His philosophy hasn’t changed: “Respect all music, listen to what you like."

I’m curious to understand what he thinks about the reemergence of vinyl. Why are we all gravitating to old technology? He replies that he thinks it is the effort to acquire the vinyl that appeals to most. “It conveys that you made a commitment. You earned, you saved money, you travelled, you took care of that vinyl and display it as a trophy. It is a tangible token you can share with others, signalling how much you love music.” But when I ask what’s in his current vinyl rotation, the answer is surprising: he reminds me that he listens to music professionally. It’s like George Lucas not being able to enjoy Star Wars. Alan, an introvert, prefers the sound of silence to unwind.

After leaving The Edge/Corus, he spent a couple of years working with different broadcasters, and eventually found his way to Central Ontario Broadcasting, the Canadian company that owns Indie 88 in Toronto. Alan was part of the team that launched the station and became the voice of Indie 88 for its first year.

In August 2014, Alan moved back to Corus as a consultant/strategist and “The Ongoing History” was revived.

When I ask Alan what it’s like being in radio broadcasting at a time where there is so much accessible information, he answers flatly, “I was there when these things happened, so there’s no research, there’s experience.”

That’s what makes Alan Cross so legendary. He navigated the musical landscape before the digital age. He had access to some of the most prominent and prolific artists of our time. He sought them out, gained their trust, spoke to them eloquently and relayed his findings to all of us. He attained all his knowledge the oldfashioned way – not by merely opening up his phone and scrolling. In an age where we are information-rich but knowledgepoor, he is unique. And when it comes to music, Alan believes knowledge is power.

As he puts it: “You may have 10 gigabytes of music, but I have 100 feet of vinyl at my house!” I guess we discovered why Alan Cross is so cool.

Often the most rewarding outcomes from a major renovation or new-home build don’t come from working with the biggest, splashiest companies. Smaller, boutiquestyle firms can often provide the personalized attention, greater flexibility and a level of care that the larger guys just can’t.

Partners (and brother-and-sister team) Lisa and Nick Maida grew up literally with sawdust in their blood – they’re the scions of a family homebuilding business that spans three generations. The pair complement each other perfectly: Nick’s background is in residential construction, while Lisa is an award-winning interior designer.

One of Cresmark’s recent projects perfectly illustrates the special care they give each individual project. The clients were a family who had relocated from South Africa, with two active teen boys and a pair of big, friendly Huskies.

“They loved their East Oakville neighbourhood, but they weren’t happy with the layout of the house,” Nick recalls. “The rooms were all chopped up and closed off, and there was a real lack of natural light.” Lisa recalls walking into the narrow kitchen, which was confined by two walls and little functional workspace.

“They also really didn’t like the exterior,” he continues. “It had a dated, pink-toned brick with an old mansard roof on the garage; no character whatsoever! So, as part of phase II, they asked us to propose options for enhancing curb appeal that would harmonize with the style we were creating inside the home.”

Tactive teens and two large dogs, a durable, functionally designed space with lots of storage to stash sports gear and clean off muddy boots (or paws, as the case may be) was imperative. The wife dreamed of a bright, modern kitchen, with separate islands for food prep and for casual meals. Upstairs, the bedrooms and bathrooms all needed modernizing. And from a style point of view, they wanted an upscale modern farmhouse look, in keeping with the family’s stylish but relaxed lifestyle. Lisa’s ability to listen to clients and truly understand their vision for the space made the design process seamless.

One of the more unusual challenges for the team, Nick says, lay not so much in the renovation itself: it was the family’s request to continue to live in the house during the reno. Not every builder is agreeable to this with such a major project, for safety as well as logistics reasons. But for Nick and the team, it was simply a matter of a few adjustments, such as doing the renovation in phases, and they made it work.

“Fortunately, the basement featured a walkout to the exterior, so they had their own entrance, and it had a bathroom and a makeshift kitchen,” he explains. “So they were able to live down there while we did most of the work; then they moved upstairs while we completed the basement.” Work areas were kept even more safe and spotless than usual at the end of each day, and extra care was taken to accommodate the family whenever asked.

The first step was to virtually gut the entire main floor, right down to the studs. In order to rework the main floor layout, several walls were removed and replaced with load-bearing ceiling beams and new footings, notably in the new family room and kitchen. To maintain a sense of symmetry, the design team came up with an inspired touch: in each room, a second “faux” ceiling beam was installed running parallel to the first. The result is a classic farmhouse timber-frame look.

The new, expansive kitchen is bright and roomy, with built-in stainless-steel appliances, their own coffee making station, Shaker-style cabinetry in Benjamin Moore Oxford

White, and a special compartmentalized range hood at one end. Twin Hanstone Quartz-topped islands feature base cabinetry painted soft celadon green. And warm touches such as brass hardware and light wide-plank flooring keep things light and airy.

Also, “Because they are from South Africa, we wanted to bring in a sense of their style,” adds Lisa. The choice of woven-straw pendant lighting has an artisanal feel that fits well with the African artwork, furnishings and artifacts on display throughout the home.

The dining room flows smoothly between the kitchen and the family room on the other side. Bathed in light from big windows overlooking a big, leafy backyard, it has a welcoming, unpretentious feel. The owners had brought the big trestle-style table with them from South Africa; a narrow credenza, another of the owners’ pieces, stores dishes and serving pieces and completes the grouping.

With its stone-clad fireplace and reclaimed-timber mantel, tongue-and-groove wall cladding and open storage shelves, the family room was designed for worry-free good looks. Tough, easy-care fabrics were chosen for their ability to maintain their composure through everything that dogs, kids, and friends can throw at them. The room is sophisticated enough for entertaining guests, but equally well-suited for taking your shoes off and kicking back after a long day of work or school.

The final step was a new look for the exterior. The solution was simple yet stunning: the pink brick was stained a sunny cream, and an old-fashioned metal gable was added high above the front entrance; the existing mansard roof around the garage was removed. Board-and-batten wood Maibec siding installed on the front portico and garage, with new black metal roofing and black-framed windows and doors, add to the breezy modern farmhouse look. Coachlights flanking the front entrance and garage doors make the perfect finishing touch.

Now that the work is complete, the family is thrilled with the result. “We love the flow of our new home,” the owner says. “Before the renovation, we had half our main floor being taken up with rooms we never used! Ihave decided to do things differently this holiday season. My family and I booked a Christmas trip to Tobago this year, which means we will be spending the holidays under palm trees, eating Caribbean food instead of decking out the tree and roasting the traditional turkey in Canada.

The holiday season is a wonderful time of year, but if you are like me, you may approach it with a certain level of stress. I tend to be the official host for my family, and at some point, the co-ordination of additional entertaining, buying gifts, wrapping and decorating usually has me longing for the new year so that everything can get back to normal.

This trip means I do not have to worry as much about decorating. I am not putting up a tree, for example, so the initial pressure is off – but I do still feel that I want to add some festive charm to my home. Many of us entertain with friends prior to Christmas or Hanukkah family time, so it’s nice to do some sort of decorating to celebrate the season.

Granted, it’s a lot of work to completely deck out a home for the holidays. While many people embrace it, there are others who prefer a simpler approach. Maybe you spend time with your family during the holidays, or live in a space where a huge Christmas tree just won't fit. Whatever the reason, I’ve compiled a list of easy ideas that anyone can do to create a seasonal feeling.

You may have noticed that putting decorative bows in your hair is really on-trend right now. So why not add ribbons to your holiday table? I love adding satin bows to candelabras or wrapping a formal napkin with satin ribbon. Running strips of ribbon down the centre of your dining table is another quick way to add

Add some humour to your decor by wrapping garlands around collectibles like statues or vases. Garlands can mimic a scarf. Or hang baubles from doorknobs or drapery finials.

We’ve also noticed that beautiful tassels and trims have had a resurgence in the design world. Some have leather detailing and make a gorgeous statement added to pillow trims or draperies. Adding a tassel to a doorknob or even as ornaments on a tree creates a traditional and unique look. I also love the look of a basket of tassels on a hall table – the woven threads are visually entrancing.

Scent is always a great way to add a festive feel. Unique scents like a cookiescented candle make you both hungry and nostalgic!

I love throws, and have quite an assortment. Checked or plaid throws look wonderful used as tablecloths; consider layering them (they don't have to match!) for an informal feel.

If you want “instant” festive decorating, just add a pop of red. Red ribbons, candles, red ornaments, and flowers all work. Red is eye-catching and plays well to the season.

I like using multiples of one type of flower for the holidays. Try carnations – they last for weeks and I like grouping them tightly in vases or bowls.

If you like the traditional poinsettia plant, cutting them and putting them in differentsized vases for smaller bouquets make them look like cut flowers. They also last!

You don't always need traditional boughs or garlands. You can easily create a holiday feel by adding festive candles in holiday colours. Adding different heights makes it visually interesting.

String lights are so perfect at this time of year. I love filling bowls or lanterns with them. If you don't have a fireplace, consider grouping lanterns in different heights to add a pretty sparkle to your room.

If you do have a fireplace, group bundles of wood tied with ribbons or string in an artful way. I like stacking them on each side of the fireplace opening. You can do this with an electric or gas fireplace.

Create an entrance by framing every door on your main floor with a garland.

The bar cart is an important unit during the holidays. But keep it simple by adding one festive item. For me, it's my silver ice bucket with deer antler handles. You could add some colourful glassware or some holiday-inspired spirits.

Start a holiday collection of something –miniatures are always fun.

– miniatures are always fun. Consider gingerbread houses, trains, nutcrackers or a nativity scene. Adding a new piece each year makes it special and nostalgic.

Buy inexpensive holiday-inspired hand towels, napkins or dinnerware. I usually buy four to six salad or bread and butter plates instead of committing to a whole dinner set. That way I can mix and match each year.

If you have artwork above your fireplace mantel or over a table, consider holiday decorating using the colours of the image as your inspiration. This draws the eye to your art while still feeling festive. Easing up on a completely co-ordinated holiday palette makes it easier and more eye-catching.

Craft it out! I admit I am not a big do-it-yourselfer, but I would consider spray-painting pinecones gold or even bleaching them. They serve as great placecard holders! In fact, painting anything gold or silver says holiday immediately.

Why not use sheepskin throws as a tree skirt, instead of the traditional round ones? They definitely give off a cottage vibe! I drape them over dining room chairs during the winter months for an instant cozy feel.

And lastly, I do love to forage. Clipping some branches and then hanging them with three to five ornamental balls adds a modern feel to a room. This can also be used as a unique centrepiece.

Whether you do a little, a lot or somewhere in between, this time of year always inspires us to enjoy our family and friends. And that’s a good thing, no matter where you are!

erched along the serene shores of Lake Ontario just a stone's throw from my home, lies a hidden gem that I had the pleasure of discovering recently: The Pearle Hotel & Spa. It is hard to believe that such a perfect getaway could exist so close to my everyday life.

The Pearle Hotel & Spa, named in honour of the family matriarch, Grandmother Pearle, is a luxurious retreat in the heart of historic downtown Burlington, Ontario. This exquisite 151-room hotel evokes the charm of classic lake houses, reminiscent of those where Pearle spent her summers, blending timeless elegance with modern comfort to create an unforgettable experience.

The Pearle is the epitome of a staycation, offering all the tranquillity and luxury of a far-off escape without the need for long travel. From the moment I stepped into the stunning lobby, I was enveloped in a welcoming warmth that hinted at the indulgent experience awaiting me.

Upon checking into our suite, I was immediately drawn to the breathtaking view—an expansive panorama of the shimmering lake stretching as far as the eye could see. The room itself was a haven of comfort and elegance,

Our evening ended on a sweet note with a dessert that was almost too beautiful to eat: a honey and lemon panna cotta, topped with fresh blackberry compote and sprinkled with crunchy pistachios. It was the perfect balance of tart and sweet, rounding out a meal that was nothing short of perfection. The combination of flavours and textures was a delightful end to a meal that we will not soon forget.

After dinner, we strolled along the pier, hand in hand, the cool breeze from the lake refreshing our senses. Even though

we were so close to home, it felt as though we had been transported to a faroff destination. The beauty of the water, the gentle rhythm of the waves, and the peaceful atmosphere made it easy to forget the demands of everyday life. It was a simple yet profound reminder that sometimes the best getaways are those found right in your own backyard, where the ordinary becomes extraordinary and moments become memories.

The Hand-Carved Wonders of Erzgebirge Folk Art

From the Middle Ages, people living in the low ranges of Germany’s Ore Mountains— called the Erzgebirge in German—went deep underground to mine silver. By the 16th century, the precious metal had run out, and they needed a new way to feed their families.

With forests full of free materials around them, miners swapped pickaxes for chisels to make toys, candleholders, and figures in a Christmas craft tradition that still delights kids and collectors today.

This area of Saxony became known as the German Christmas heartland, where Yuletide is considered the unofficial fifth season.

I spent an April afternoon exploring the cobblestone streets of the charming medieval town of Annaberg, the regional capital. Even in spring, the Yule spirit was on display in independent shop windows filled with masterfully carved Christmas delights, from comical and whimsical to religious.

Smoking Santas & Nutcracker Princes

There were brightly painted nutcrackers in a range of sizes and themes, hanging pyramids covered with Christmas figures and animals, and “smoking” Santas and grandpas that puffed incense from pipes. Gracefully arced Schwibbogen candleholders framed elaborate forest scenes and religious tableaux, the shape designed to mimic the entrance to the mines, with the candles representing miners’ torches.

These fanciful wooden pieces are pricey and prized due to the time and skill required to make them. All are hand-carved and individually painted, although some of the wood is left natural. Expect to pay as much as $500 for a nutcracker, depending on size and style. Proof of authenticity is in the stamp “Echt Erzgebirge Holzkunst mit Herz” (True Erzgebirge Woodcraft with Heart).

The grimacing nutcracker has become a regional ambassador for this part of Germany. Invented as a practical tool to crack nuts in the Erzgebirge in the 17th century, the soldier figures were thought to bring good luck into a home. By the 19th century, nutcrackers became popular across Europe and in North America. Around the same time, Tchaikovsky’s ballet The Nutcracker, about a young girl who dreams her Christmas gift is transformed into a valiant prince, made its debut.

As in most German towns and cities, Annaberg’s main square is the site of a lively annual Christmas market. There’s a massive fir tree covered in festive lights and more than 80 booths selling food, crafts, and steaming mugs of mulled wine.

Nativity & Dreams

Even more impressive is the masterfully carved miners’ nativity on display in St. Marien Mountain Church, the only remaining miners’ church in Germany. St. Marien was built by local miners from their pay packets as a pre-dawn place to pray each morning before going down into the dangerous mines.

That community spirit lives in a project begun in 2000, with 33 hand-carved figures that interpret the biblical nativity story as if it took place in 19th-century Annaberg. Joseph is a mine carpenter. His wife, Mary, is a pit worker with chapped hands. The hand-painted, 1.2-metre figures that tell the story have remarkably lifelike qualities. Their expressive faces are based on local people.

ANNABERG’S MAIN SQUARE IS THE SITE OF A LIVELY ANNUAL Christmas market

Opened in 2010, the Manufaktur der Träume— The Dream Factory in English—is a modern museum that pays homage to the timeless joys of carved toys and woodcrafts. The collection of Erzgebirge-born arts patron Erika PohlStröher goes back centuries, with fantastic displays from dollhouses to dynamic Christmas scenes. Most mesmerizing is the top-floor display area, where the lights dim and gentle music plays as a host of carved angels on invisible wires slowly descend from the rafters.

Annaberg is twinned with the neighbouring town of Buchholz, so the town is often referred to as Annaberg-Buchholz.

Food, Julia emphasizes, nourishes more than just the body—it nourishes relationships and brings people together. "There’s a reason why Italian

mothers and Nonnas spend hours in the kitchen. It’s not about the work; it’s about the love behind it. They understand that the food is just a reason to bring the people they care about together.”

This philosophy has guided Julia throughout her career: bringing people back to the table. Her mother Jenny, who, for over 40 years has been making gnocchi in all of Julia’s restaurants, and to this day, still makes homemade gnocchi for Ritorno, embodies that spirit. Every Friday, you’ll find Nonna in the kitchen, doing what Nonnas do best—creating meals from the heart.

With a new menu and plans for a “Nonna series” at the restaurant, Julia is more energized than ever. “Having worked with more than one Nonna in the kitchen before,” she laughs. “and you know what they say about too many chefs in the kitchen… I think this series will be something special.”

There is a lot of pressure put on hosts over the holiday season. A time meant for gathering, celebrating, and creating memories can also feel like stress and work. I’ve found that hosting a few different ways through the holidays with a combination of larger and smaller groups can make the season feel more manageable and enjoyable. I’m sharing three of my favourite ways to host this holiday season that are sure to impress your guests without overwhelming you as the host.

HOSTING A BOUNTIFUL HOLIDAY BRUNCH

The holidays are busy, and that’s why I love hosting a brunch. It allows for a relaxed gathering earlier in the day, offering your guests a beautiful way to celebrate without conflicting with evening cocktail party plans. It can also be a more family-focused occasion. I like to keep my brunches relatively light and festive, leaning into classic holiday colours like green and red for a traditional yet vibrant look. Using your kitchen island or table to create a spread makes it easy to prepare in advance. I like using tiers to create elevations while mixing in holiday greens.

Preparation is key for a holiday brunch. I always make sure most of the food and setup is ready to go before guests arrive. The idea is to balance a casual vibe with the feeling that everything is thoughtfully prepared. A self-serve spread of fresh breads, smoked salmon, cold cuts, cheeses,

and freshly squeezed orange juice allows guests to enjoy their favourites without too much work on your part. I love finishing the spread with easy but impressive elements like poached eggs to keep the experience feeling gourmet.

Of course, no brunch is complete without a cocktail. This season, I’m serving Blood Orange Mimosas. It’s a bright twist on the classic mimosa – the vibrant colour and tart flavour of fresh blood oranges are a perfect match for the season. Adding a splash of elderflower liqueur brings a floral note that complements the citrus and prosecco beautifully. It’s a festive way to start the day!

● 2 oz freshly squeezed blood orange juice

All great hosts know to bring the energy when answering the door; welcoming guests with a cocktail and an appetizer sets the tone for the evening. Planning ahead is crucial: think about the menu, the design, and even the conversations you might have. Consider a theme or colour palette to bring a cohesive look to the event. For example, a winter white backdrop with bold colours like oxblood and pomegranate feels festive and elevated, yet timeless. Ingredients:

● 1 sheet puff pastry, thawed

Instructions:

1. Preheat the oven to 375°F.

2. Cut puff pastry into small squares and place in greased mini muffin tin.

3. Add a piece of brie and a small spoonful of cranberry sauce to each square.

4. Bake for 12-15 minutes, until the pastry is golden and the cheese is melted.

5. Garnish with a sprig of fresh rosemary and serve warm.

One of my favourite appetizers for a holiday dinner is a Cranberry Brie Puff Pastry Bite. They’re extremely easy to make, festive, and taste delicious without being time-consuming. The combination of tangy cranberry, creamy brie, and flaky puff pastry is always a crowd-pleaser.

HOSTING A BAKING DAY 3

One of my favourite holiday traditions, passed down from my mother, is hosting a cookie baking day with friends. It’s a fun, relaxed way to spend time together before the holiday rush while also stocking up on beautiful treats to share with family and friends. I love to invite friends over, each bringing their own

At the end, we divide up the cookies, which can be frozen or shared over the holiday season. My personal favourites are my mother’s Belgian Jam Cookies, a buttery, shortbread-like cookie filled with jam and topped with icing. They’re always a hit and perfect for gifting.

BELGIAN JAM COOKIE RECIPE

Ingredients

● 1/2 lb salted butter

● 3/4 cup white sugar

● 1 egg

● 3 cups all purpose flour

● 1 tsp baking powder

● 1 tsp vanilla

● Seedless raspberry jam

● Icing sugar icing

Instructions

1. Using a mixer, cream butter.

2. Add sugar and egg and beat until light.

3. Add vanilla.

4. Sift dry ingredients and add gradually.

5. Roll out thinly on a floured board; cut with a star-shaped cookie cutter.

6. Bake for about 10 minutes (do not brown) in a 350° oven.

7. Cool on a wire cookie rack.

8. Once cool, spoon or pipe in raspberry jam.

9. Ice tops with icing sugar and cream mixed together to spreadable consistency.

hy would a renowned Italian restaurant owner travel to Croatia to embark on a food and wine tour in Istria? Well, not only did Tomo Kovacek visit his home country (which also has a deep-rooted Italian history) he and his wife and business partner Glorija, along with Verace’s restaurant manager, Michele Maffei, let their palettes loose to bring some inspirational new menu offerings to Verace, which is located in downtown Oakville.

Verace is co-owned by Kovacek and his business partner, Aleksandra Popovic, a real estate broker with deep roots in the Oakville community. With Serbian heritage and a shared passion for traditional Italian

cuisine, Aleksandra brings a unique blend of cultural influence to the partnership, enriching their shared vision for authentic flavours. Located in the vibrant centre of Oakville, Verace is more than just a dining experience— it's a celebration of authentic Italian flavours, deeply rooted in passion and tradition. Last year, Verace began offering a limited selection of Croatian wines, and Kovacek has plans to include some new vintages in the New Year.

From freshly handcrafted pasta to signature award-winning wood-fired pizzas, every dish reflects the finest ingredients, expert craftsmanship, and a dedication to creating a memorable experience. Conversely, Istria, a picturesque peninsula in Croatia, is a gem for food and wine lovers. With its rolling hills, medieval towns, and pristine coastline, Istria’s natural beauty is matched only by its rich culinary heritage. It’s often referred to as the “Tuscany of Croatia,” the region’s food and wine reflect Mediterranean and Central European influences.

Like many coastal locales, land and sea are connected in Istria’s cuisine. The forests of Istria are rich in both black and white truffles, making this region a prime destination to enjoy them. They’re incorporated in many dishes, from homemade pasta like fuži or pljukanci to scrambled eggs, risottos, and desserts.

Another regional item Kovacek and Maffei enjoyed was olive oil, which is among the finest in the world. “It’s a completely different olive oil,” Tomo says. “It’s unique. I like the spiciness.” Only in this area can you find an olive oil with this flavour profile, he notes, and it will be an item Kovacek plans to import into the restaurant. You’ll be able to enjoy it with bread at the table, and also buy to take home.

The peninsula’s long coastline provides an abundance of fresh seafood, including octopus, mussels, and scampi. Grilled, stewed, or served raw, seafood in Istria is always prepared simply, allowing the natural flavours to shine. “Everything was local, and fish and meat definitely prioritized the cuisine in a very traditional way so that you can taste the quality of the food,” he says.

Malvazija Istarska is a refreshing white wine with fruity and floral notes, perfect for pairing with seafood and light dishes. Teran stands out as a robust red wine with bold tannins and flavours of dark berries and spices, making it a great match for hearty meat dishes.

Verace currently offers a selection of Croatian wine, including Coronica and Kabola. While overseas, they toured several wineries—including the aforementioned; some new varieties to offer in the restaurant in the future. “For me, it was great to visit those wineries, because we carry them at the restaurant. They really made me appreciate their products.” They found a particularly great—and uniquely aged—wine, which will be on the wine list in the future.

This variety is aged for one year at a depth of 22 metres under the sea. “It was very fascinating to be there and see how

they make it, the vineyard, the soil. It's nice to have something different to offer to our guests.”

Experiencing regional culinary delights, which can then be reflected on the menu back home, is important to Kovacek: “the wine, the food, to create a memory for people for those who haven’t been to Croatia. It will make you feel like you want to go and visit. To have good food, good wines, the beach, and the sea are amazing. The people are fantastic.”

INGREDIENTS

1 1/2 oz Tromba tequila Blanco

DIRECTIONS

1 Add all ingredients into a shaker, shake, and double strain in a coupe glass.

*A mix of 2 parts pineapple juice and 1 part coconut purée.

Flourless Chocolate Cake

INGREDIENTS

Cake:

700 g chocolate chips

1 lb butter

1200 g sugar

15 ml vanilla

240 g cocoa powder

1 tsp salt

DIRECTIONS

Ganache: 2 cups cream

700 g chocolate chips

1 Melt chocolate chips and butter in a double boiler. Whisk in sugar, beaten eggs, and vanilla (remove chips and butter mix from heat before whisking in additional ingredients).

2 Add cocoa powder and salt, and combine.

3 Remove mix from heat before whisking in remaining ingredients.

4 Pour into a double-greased shallow hotel pan with parchment liner (or two 6 x 10-inch pans).

5 Heat oven to 375°F Low Fan for 25 mins. Test for doneness. Let cool for 1 hour.

6 Pour ganache evenly overtop. Let cool for 1 hour.

7 Trim and cut into 4 x 6-inch pieces.

Makes 24 portions–perfect for a holiday party!

Pure Passion Cocktail

INGREDIENTS

1 oz Captain Morgan's Rum

3/4 oz Campari

2 oz Fresh Passion Fruit juice

1/2 oz Fresh Lime juice

1/2 oz Simple Syrup

DIRECTIONS

1 Take a cocktail shaker and combine Captain Morgan's Rum, Campari, passion fruit, lime, simple syrup and ice.

2 Shake for a few seconds.

3 Use a fine mesh strainer to empty the shaker into cocktail glass of your choice.

4 A coupe glass is suggested.

5 Garnish with a slice of passion fruit, and enjoy.

Brandied Pear Cinnamon and Cardamom Walnut Tart (Tarte Tatin)

INGREDIENTS

1 frozen puff pastry (thawed)

5-6 ripe Bartlett pears, halved and cored

7 tbsp unsalted butter

1 cup sugar

3 tbsp brandy

1 tsp cinnamon

½ tsp cardamom

½ tsp sea salt

2 tbsp chopped toasted walnuts

Mint sprigs for garnish

DIRECTIONS

1 Preheat oven to 400°F. Roll out puff pastry to fit a 9-inch oven-proof pan, prick with a fork, and refrigerate.

2 Melt butter in the pan, then add sugar, brandy, cinnamon, cardamom, and sea salt. Cook for 1 minute.

3 Arrange pear halves, cut side down, tightly in the pan. Cook for 30 minutes until the sugar caramelizes and pears soften, shaking the pan occasionally.

4 Let the pan rest for 5 minutes. Cover the pears with puff pastry, tucking the edges around them.

5 Bake for 30-40 minutes until golden brown. Cool for 5-6 minutes, then flip onto a plate.

6 Garnish with walnuts and mint. Serve warm or at room temperature with optional icing sugar or ice cream.

Chocolate Double Espresso Martini

INGREDIENTS

8 oz of TAG Double Espresso Vodka

4 oz Irish Cream

4 oz Chocolate Liqueur

3 tbsp chocolate ganache

DIRECTIONS

1 Drizzle chocolate inside the martini glasses then add chocolate to a shallow plate and coat the rims of the glasses.

2 Combine Irish Cream, Chocolate Liqueur, and TAG Double Espresso Vodka in a cocktail shaker filled with about a cup of Ice. Shake until thoroughly chilled.

3 Strain into 2 prepared glasses. You may garnish with shaved chocolate or roasted espresso beans.

Sticky Toffee Pudding

CARAMEL SAUCE: Ingredients

2 cups heavy cream (35%)

1/2 cup brown sugar

2 1/2 tablespoons golden syrup

Pinch of salt

Directions

1. In a saucepan, combine all ingredients.

2. Cook over medium heat, stirring constantly for 8-10 minutes until thickened.

3. Pour half of the caramel sauce into an 8-inch soufflé dish, setting aside the other half for later.

PUDDING:

Ingredients

6 oz dates

1 cup brewed coffee

1 tsp baking soda

1 1/4 cups all-purpose flour

1/2 tsp salt

Directions

3/4 cup brown sugar

2 eggs 1 tsp vanilla extract 1 tsp ground cinnamon 1 tsp ground cloves

1 In a saucepan, combine the dates, coffee, baking soda, vanilla, cinnamon, and cloves. Bring to a boil, then simmer until the dates are soft.

2 Purée the date mixture until smooth and set aside.

3 In a food processor, blend the brown sugar and eggs until smooth.

4 Add the flour and salt, and mix for about 2 minutes.

5 Add the date mixture and blend until fully combined.

6 Pour the batter into the soufflé dish over the caramel sauce.

7 Bake at 350°F (175°C) for 45-50 minutes, or until a toothpick inserted into the centre comes out clean.

8 Serve with the remaining caramel sauce.

Artist Jade Buckley’s new collection conveys the notion of moving forward.

It’s been almost two years since Jade Buckley diverted her aspirations from business school to art entrepreneurship – and as she describes it, it’s been both the slowest and the fastest two years of her life.

Jade has spent the last four months working on a new collection, called Kaizen. We asked her to tell us a bit more about her new work, including the cover artwork that she created exclusively for Best Side’s one-year anniversary edition.

What inspired this collection? Was there a moment or an experience that that sparked it?

While I was trying to take [my art career] full time, I didn't really know what my style of art was. I went to business school, so I really had the time to explore and kind of figure out tests and push the limits. I spent the first year really just diving into every style, medium and kind of subject that I could, and did this process of testing and learning; and then alongside that, I worked with clients to help bring their own visions and ideas to life. This process was really special for me, because I gained experience that I didn't necessarily get in school.

The collection’s name is inspired by the Japanese concept of “Kaizen,” which refers to the idea of continuous improvement and change: a process of perpetual growth and forward movement. This concept resonates deeply with the themes in the collection, especially the paintings of city streets and cars, which reflect the notion of always moving forward on our own unique journeys through life.

It’s also special to me on a personal level. My father, who worked in Japan teaching English for over six months, chose my name inspired by the jade stone there. In a way, I feel as though the idea of my journey – and the thought of me – began there. This collection has been about allowing myself this creative freedom; to discover and put together all of the different techniques, styles, materials, etc. that I have used on my creative journey so far.

In celebration of Best Side Magazine’s oneyear anniversary, a magazine that believes every community has a unique story to tell.

Can you describe your collection?

I really like what this collection is all about. It's the first collection that I'm doing completely for myself. It essentially takes everything that I've learned throughout my journey from each collection, but it's also just for me to figure out that story behind the painting – my voice. Introspection focuses on the story and notion of the creative journey and carving out your own path, and the trials and tribulations through that – what it encompasses and represents.

It will show paintings of streets, cars and glowing lights throughout different horizon lines and perspectives. And it's to show all of our own journeys and different paths.

What makes you feel drawn to that particular imagery?

I did four previous paintings that kind of led me in this direction. And I really just loved the contrast between light and dark. I really love a painting that, when you look at it, evokes something in you. But what I also really love about [these works] is it's a mix between abstract and realism, so everyone sees them differently. I got a lot of feedback on those specific core paintings that evoke this sort of emotion; people describe it all in different ways, which I really love. That’s what you could say art is – all about how I want my art to be. It brings out inner thoughts and your own personality or feelings and emotions within you, and it's not straight to the point, and kind of tells you how to feel.

During the creation of Introspection, were there any emotional or technical challenges you faced?

Yes. I won't lie, I think this is coming at a very specific point in my career. I think spending the last little bit, although it was such a great opportunity to learn and connect with people and try different mediums and build my technique, I was feeling a little bit lost. Here I was doing what I love, but it didn't necessarily feel completely myself, and it's my passion! I hit a creative roadblock. It also had to do with the fact that I wasn't going to let myself create another collection that wasn't in my own voice.

In our last interview with you, you’d indicated getting your own studio. Has that happened yet?

Yes! It's the first time really that I've lived alone. I come from a very loving and large family, and I have a twin sister. And so I think a part of this collection also speaks to figuring out your own journey and path, the beauty in loneliness, exciting things to come on the horizon line, and the notion of moving forward. That’s something I want to focus on specifically in the future.

What is your creative process, now that you’ve been able to shift into creating your own work and your own space?

It’s funny, because there are two different sides to my brain, and it's very dependent on the piece that I'm creating. So with the brand partnerships and client pieces that I've been doing, it's more organized and structured. But the paintings that I'm doing for myself happen very organically and freely – and yes, they happen mostly in the very dark nighttime. I'm someone who works in what they call the creative zone. I hit my peak workflow about four, and after that point, five hours feels like 20 minutes to me.

Can you tell us a bit more about the cover artwork you did for Best Side?

I created it around the theme of sharing the stories and highlighting the vibrancy of the community. And because Best Side’s audience is waterfront communities, I wanted to highlight that. You’ll notice glowing, bright, neon, vibrant lights coming off a very dark horizon line, reflecting in the water. A song that my twin sister Tess wrote accompanies the artwork. Her song and the Best Side cover art are a collaboration, sharing the name “Suburb Showers.”

The art and the song are a special collaboration of two sisters coming together in their different art forms, to create one piece together – in celebration of Best Side Magazine’s one-year anniversary, a magazine that believes every community has a unique story to tell.

Walk to the Lighthouse event

Have you ever experienced an improvement in your mood after going for a walk? Walking for a good cause is also highly beneficial.

Equilibrium Burlington is a community-based advocacy and peer mentoring group for individuals and care partners who are affected by mental health and addiction challenges. The organization held its fourth annual Walk to the Lighthouse event recently in support of the Joseph Brant Hospital Foundation.

The walk raises funds for infrastructure and support for patients, families, and caregivers, through Joseph Brant Hospital's in-patient and outpatient Mental Health & Addiction (MH&A) services. “Our primary goal is to increase awareness and support for our community by providing resources to reduce stigma and enable supportive conversations,” says John Reynolds, former chair of the Person, Family, Caregiver Advisory Committee (PFAC).

“Our

hope is that our walk not only raises funds but also the awareness of the services that are available both at the hospital and in the community. The walk gives people permission to talk about mental health and addiction and to know that it is safe to reach out for help when it is needed.”

The lighthouse is symbolic. “It symbolizes light in a storm. People who have shared their personal stories say that they were encouraged to go for walks and to walk towards the lighthouse. It gave them hope that there was light during this very dark time in their life,” says Melanie Walker, Community Mental Health social worker and co-chair, Walk to the Lighthouse.

The Walk to the Lighthouse began in 2020 as a grassroots movement that was attended primarily by family and friends. A small group of about 30 people attended that first walk, united by a goal to raise awareness and reduce stigma, and less about fundraising.

“The last two years have seen the walk evolve into a much larger event, and one that attempts to engage the entire community,” notes Walker. “We recognize that stigma can be even more of a barrier for those in other cultures. We also recognize that our services may not feel inclusive, and we are starting to have conversations around this. It is our belief that we won’t heal until we all heal. The response from the community has been overwhelmingly positive.”

This year’s walk saw record numbers attend – estimated at about 400 – and over $100,000 was raised. The committee is made up primarily of people with some type of lived experience: either they have received services, or they are a family member of someone who has. “What we raised most was awareness,” she says.

All levels of government attended and spoke at the event. There was a strong message that these services

are important, and that the community deserves to have them delivered in a therapeutic and healing environment.

“We showed that the community is behind this and is supportive,” says Walker. “Our hope is that our walk not only raises funds but also the awareness of the services that are available both at the hospital and in the community. The walk gives people permission to talk about mental health and addiction and to know that it is safe to reach out for help when it is needed.”

SERVICES PROVIDED by Community Mental Health at Joseph Brant Hospital

■ Weekly case management with a psychiatrist to manage medications and symptoms.

■ An injection clinic with communitybased nursing support for medication administration.

■ A short-term Dialectical Behaviour Therapy (DBT) program combining mindfulness and acceptance.

■ A concurrent disorder program for substance abuse and mental health assessments, linking clients to community resources.

■ Child and adolescent programs for patients up to 18, with psychiatric assessment and support from a social worker and nurse.

■ The Youth Intervention Program (YEI) for ages 16-24 transitioning to adult mental health services.

■ Emergency psychiatric services and early intervention for psychosis (ages 14-35).

■ Specialized care for borderline personality disorder, suicidal behaviours, and self-harm.
