hen I was first approached to be a contributor for Best Side magazine, I was asked to do two things: first, to explain the purpose of the column; and second, to share my dream list of people I wanted to interview.

I was intent on wanting to reveal something unknown about each one of my guests. My goal was to learn and share more about people who’ve made an indelible impact on their surroundings, individuals who always remained optimistic, honest and took risks. When I was tasked to share that list of individuals, George Stroumboulopoulos was at the very top.

Like any Canadian who is passionate about music and culture, I had been admiring George’s journey for over 25 years. His curiosity and endless evolution have profoundly resonated with me.

When I watched George on MuchMusic in the early 2000s, I was continuously captivated by how sincere and quickwitted he was. Later came The Hour on CBC. In my opinion, The Hour was the ideal format to allow him to solidify his intuitive approach and natural ability to connect with his guests, and the audience. It was at The Hour where George became recognized as one of the most influential and exciting broadcasters in Canada. The format was straightforward: two red chairs, no desk to obstruct the guests from the host, no division, no hierarchy. The classic lean-in, when George was engaged in a question, created the perception that you were there sitting on that red chair.

During a Zoom conversation that lasted over an hour, I came to feel like I knew George even though I’d never met him. At times I almost forgot that it was an interview. I found myself just enjoying a discussion with a fellow appreciator of music, motorcycles and Canadian culture. There are so many public personalities who portray a false image of themselves; that could not be further from the truth with George. I realized immediately that I was having a conversation with someone who was honest, generous, and, at times, even vulnerable. George grew up with a single mother within a small family that encouraged and aided his natural-born curiosity. From an early age, he learned the importance of being engaged in what was going on around the world, soaking up all the news and information that was available to him. Whether it was reading the newspaper with his uncle or listening to the radio at obscurely early hours of the morning, he had an insatiable appetite for knowledge. That curiosity and love for news brought him to Toronto’s Humber College, where he enrolled in the Radio Broadcasting program.

THE APRILE ENTRIES

In each issue, Celebrity Chef and former MasterChef Canada judge Claudio Aprile recounts casual conversations and experiences with people, places and events in the community. Otherwise, you’ll find him performing his role as Culinary Director at Via Allegro and Di Marios or at home cooking, and creating recipes.

After graduating in the early ’90s, he got his first gig at a rock station in British Columbia, shortly before getting a job offer in Toronto at radio station Fan 590 AM, and later CFNY-FM. “I would practice relentlessly, including going to work on most days off to sneak into a studio and fake a radio show. By the time I got my first live show, I had already spent countless hours alone in a room and loved every second,” he says. “I still practice at almost the same pace today.” Patiently waiting for his turn, he worked to ensure that when the opportunity presented itself, he would be ready to seize the moment. It was the perfect example of the quote from Amy Hemper: “There is no such thing as luck. Luck is where preparation meets opportunity.” It’s something I tell my kids all the time.

In 2000, George went on to work at the iconic MuchMusic as a host and producer. It was his first foray into television after working in radio, and he soon became one of the most recognizable VJs at the station. He loved the fast-paced environment; it was a time when pop culture was buzzing and music videos were the most important medium for artists. MuchMusic was also home to the revolutionary Speakers Corner – cutting-edge technology in the ’90s to early 2000s. “The intersection of Queen and John was the hottest place in the city,” George says. “This is not just because incredible artists across the spectrum would be hanging out but also because the viewers could, too. We had the windows open, and, of course, Speakers Corner. There’s something really powerful to be said about a place where the audience knew they were being seen, heard and welcomed.”

George got his own show, The Hour, in 2005 (later renamed George Stroumboulopoulos Tonight). It covered everything from pop culture and politics to human rights, entertainment, music and more. I was always in awe of the diverse guests this show would include. When we spoke about this time,

he talked about the importance of breaking away from categories that other people impose on us. “For better or worse, you must find that line between trusting your instincts and being readily open to admit that they might not always be correct,” George says. “One of the reasons that the show could do what it did was because the team all brought compelling ideas and diverse experiences to the table. We collectively moved towards things that hadn’t been done before. It took me a minute to figure out the line in a different space than I was used to, but I’m eternally grateful for all the teams I worked with to trust in our ideas and abilities to deliver on them.”

The Strombo Show first aired in 2007. It was filmed in his own home and would feature conversations and live performances. It felt real, raw and authentic. Guests included some of my favourite artists like Emily Haines, Queens of the Stone Age, Vampire Weekend, and so many more. I remember watching the Tragically Hip special episode that aired shortly before the death of the band’s lead signer Gord Downie. It featured other artists covering The Hip’s songs and sharing what that band meant to them and Canadian culture. It was a beautiful tribute to an exceptional artist. We all felt that loss so immensely.

George went on to host Hockey Night in Canada, a show on CNN, and several specials on CBC before landing his current show, Strombo, which drops on Apple Music Hits every Sunday to Thursday, is heard in over 165 countries and is available on demand on the Apple Music platform. He brings to this new show over three decades of music knowledge, and a desire to see

music used as a conduit of change. His goal is to lean into the connection between his listeners’ favourite artists and the artists whom they were inspired by. This philosophy underscores how important storytelling is to George.

Over the course of his career, George has solidified himself as one of the most prominent broadcasters in North America. He is also Canada’s Goodwill Ambassador for the UN World Food Programme and on the Canadian Board of Artists for Peace and Justice. Last year he was appointed to the Order of Canada. Yet, more than his accomplishments or accolades, what resonated with me the most was his outlook on life. After our conversation wrapped up, I realized that he exemplifies an individual who had a dream and tirelessly chased after it without ever compromising his beliefs and values.

George told me that he never wanted to live a mundane life; he wanted to live an aspirational life. He wasn’t going to sit back and watch someone else do something he knew he could do. “My mother impressed upon me that the cavalry wasn’t coming and we needed to do everything we could to carve the life we wanted, but she also didn’t place value on careers or material accomplishments. My sister and I grew up knowing that how we behaved was infinitely more important than what we did for a living. It allowed me the intellectual and emotional freedom to write the kind of story I wanted to read, regardless of what outside factors expected. I haven’t always got it right, but so far,  I’m comfortable with the ratios. In the end, I feel like we’re only directing one movie, which flashes before our eyes before we die. I want to make sure that that final film has more of the scenes I want to see and less of the ones I don’t.”

A CHARMING RESTORATION in Toronto

Combining 21st-century efficiency and biophilic principles to a stately Toronto century home while honouring its heritage character, is all in a day’s work for HummingbirdHill Homes.

HummingbirdHill Homes’ full gut-and-rebuild of a century-plus Toronto double-brick home, owned by an avid art dealer, retains much of the old home’s heritage character while bringing it beautifully into the twenty-first century.

The 2,800-square-foot, five-bedroom, three-and-a-half bath home already had many wonderful heritage features for the team to work with. These included soaring ceilings, plaster coffered ceilings, and other evocative details. One of the goals of the renovation was to preserve these details while adding warmth and biophilic design, defined as a sense of connection to nature and the environment.

“Biophilic designs meant to add warmth and a calmness to the space included natural materials such as white oak ceilings, floors, cabinetry and stone,” says Aaron Miller, founder and owner of HummingbirdHill. “This backdrop really enhanced the works of art on display throughout the home.”

The team added an abundance of natural materials into the interior of the home, including lighter-toned wood finishes and other organic detailing. The renovation also included a 500-sq.ft addition onto the back of the home. “It all creates a cozier look and feel,” he says. “The idea was to try and retain some of the historic charm while adding a warmer and maybe more contemporary style.”

Tall arched windows provide ample light, and are finished with matte black framing, for striking visual contrast. The doorways recreate the same arched tops found in the original home. The main floor kitchen, which is clean and simple in its finishes, is roomy enough to accommodate both a large dining table and a large island. Branching off of the kitchen, there’s a comfortable sunken family room with a double-sided fireplace and an attractive view of the backyard.

A central staircase with a striking curved handrail flows up to the second-floor bedrooms and baths. We recently chatted with Danielle De Boe Harper, Senior Creative Style Manager with Moen Bathroom and Kitchen Faucets, about the major trends in kitchen design for fall, and how the right faucet can embody the look.

“Moen is seeing three overarching trends in 2024: Personal Expression, Biophilic Design and Future Forward,” Danielle told us.

“Personal Expression is the concept of expressing true individuality through design, which is where versatile styles and finishes come into play,” she explained. “Matte Black and Bronzed Gold are both having a moment: Matte Black finishes allow for versatility and the ability to meld a variety of interior design styles. Not just for modern looks, Matte Black adds contemporary appeal to traditional fixtures for an updated aesthetic.

“This finish also plays into another current trend: the general use of darkness to create dramatic and eye-catching moments through rich finishes. Giving a bit of low-key luxury, Bronzed Gold is aesthetically pleasing but also clean and approachable, blending well in most environments.

“We’re also seeing a desire to mix metals, with brands like Moen providing fixtures with handle options in different finishes, so homeowners can choose the combination that’s right for them.”

Biophilic Design is all about applying our love for nature and the outdoors to design and interiors.

Finally, Future Forward looks ahead to themes like technology, wellness and sustainability to respond to growing consumer needs. “Moen’s Smart Faucet and Smart Faucet with Motion Control offer four methods of activation: an advanced touchless sensor; voice commands (through a smart speaker); the app or manual handle; as well as customized presets like ‘fill my dog bowl.’”

A subset of the Future Forward trend is a rise in the industrial look, with elements like silvers, metals and mirror-like sheens. People embracing this trend, she noted, might choose a stainless or chrome finish or a spring faucet, such as Moen’s Cia™ Spring Kitchen Faucet, which features an exposed-spring pulldown design.

This season’s interiors take a decidedly more personal, bespoke approach to the classic look of luxury.

MEET THE DESIGNER

Many of you have heard of the quiet luxury trend in fashion, but interior designers are also jumping on this sustainable design style. But what exactly does quiet luxury mean for homeowners?

I’m always aware of how design and fashion are intrinsically related, and this season is no exception to that rule. Whether it’s fashion or interiors, the key is to invest in classic pieces. In design, these can include woven textures and knits, deep rich wood tones and what’s called “latte” tonal influences, particularly in fabrics. With a changing season upon us, I thought it would be fun to do a fall 2024 roundup of all that we are going to see over the next months.

Let’s start with something that I think is really important. This is definitely a pivot in design from the past years from all that is modern: It’s the return of, or the reinterpretation of, all our old but loved furniture.

This can include furniture pieces like your mahogany dining room suite as well as upholstered goods. As a designer, I’m working more and more with clients’ furniture and weaving the new pieces skillfully in, so both can happily coexist in an overall setting.

More and more, my clients are asking for a re-sculpting of their loved pieces so that they can continue to enjoy their comfort. Hey, I am all for it! Refreshing a stain colour on a dining room set or a reupholstered do-over gives new life and many more years of enjoyment.

We all have pieces in our home that speak to us, and to repurpose them in a thoughtful way makes sense. It also hones a designer’s skillset to make sure the flow and sequence is there. I firmly believe a home should be filled with things that

mean something to you. After all, it’s your home and the years spent building memories should not be discarded.

Interestingly but not surprisingly, auction houses are having a resurgence.

Chic cabinets are back for displaying prized collectibles. They definitely make a statement in a room, because they’re unexpected. We still love a good built-in, of course, but antique or vintage cabinets displaying towels or sculptures definitely are having a moment. Beloved pieces

being used in a home make the home. Travertine’s dramatic stone textures are also being seen again – not only for countertops but also as columns, to showcase sculptural and even cubed end or coffee tables. Major furniture companies have been promoting travertine for over a year. Think Restoration Hardware!

We all love the soft champagne gold finishes for cabinet hardware and light fixtures, but there is a renewed interest in mixing finishes, so expect to see silver again co-existing happily with warmer tones.

This was a surprise for me. Wait for it: Dark wood panelling is back. Who knew? I started seeing this last year, and to be honest, I was not liking it and wondered how many of my clients would. But traditional details like this play gorgeously with contemporary pieces. The juxtaposition of modern and traditional is truly beautiful to see. It does take a sure hand to balance this, but when it works, it is magic.

With all this attention to the past, I was surprised to see the comeback of glass block! So popular in the ’70s, it’s now being seen as furniture or even for flooring. What’s old is new again!

As the seasons change, one impactful thing we can do is to add colour. Nothing refreshes a room faster than a coat of paint. But this time, we are seeing richer, deeper colours than in past seasons. As in fashion, brown has had a major role in design this year. Rich, saturated velvets and satin-finished walls are haute rigueur.

Not all is traditional – so do not despair if your design instinct leads to a more modern aesthetic. Contemporary design is still bold and adventurous, but happily, there has been a recent development towards utilizing recycled materials to create bespoke collectibles and furniture pieces.

Coral, red, and persimmon tones are runners-up, and actually pair beautifully with deeper browns. Consider Benjamin Moore’s HC-71 Hasbrouck Brown, HC-183 Country Redwood or CC-64 Bonaparte.

Wallpaper saw a resurgence a few years ago and is still widely favoured, but textured wall treatments are becoming popular again. Creating depth on walls using plaster is definitely on the upswing. We’re employing faux-finish artists on job projects to recreate beautiful soft, moody textures. However, the newest finishes are more neutral in tone than the brighter and mixed colours used in past years.

And finally, lighting is becoming even more sophisticated.

“Colour tuning” is a term being used in this industry: Simply put, it refers to changing the intensity and colour of light to create certain effects. It can be manipulated to simulate natural light when it’s dark

This season, interior design is more adventurous than ever. Rules are being bent to create bespoke interiors.

A homeowner should love their home. They should have an emotional response to their home, and they should repurpose items that they love. It doesn’t get any simpler or more exciting than that!

on 10th Concession, located just west of Schomberg in the Township of King, may be newly constructed, but it exudes the charm and elegance of an established French chateau. The custom-built residence, which includes an adjacent horse farm and stables, marries traditional elegance with contemporary practicality.

The exterior features a cleanlined, symmetrical light brown brick facade, with a sophisticated appearance that complements its countryside setting. Many elements go into designing for simplicity; and for this style, it comes down to the right-sized windows. Width, height and placement is everything; for this project, it was a two-inch reduction in the windows’ width that locked the right proportions in place – for a timeless traditional look.

The property is designed with both functionality and aesthetics in mind. A four-car garage is positioned on the right side of the home, connected by a breezeway that offers protection during adverse weather while providing uninterrupted views of the surrounding greenery. which overlooks the house and the future pool area, ready to be landscaped complete with planting and integrated ornate trellises.

As you step inside, the grand staircase sets a tone of elegance. The main floor layout includes a spacious dining room with a walkthrough pantry leading to the kitchen. This area is designed for entertaining, with easy flow between the dining room, living room, and kitchen. The design ensures that when the house isn’t bustling with activity, it still feels warm and inviting.

The main floor also features a study, equipped with a full bath, which serves as a versatile space for guests or as a personal retreat. The basement is designed with a home office and additional entertainment space, adding to the home’s functionality.

Above the garage, a separate living suite provides additional guest accommodations, perfect for extended stays during family gatherings. The design ensures that the main house remains intimate and cozy, even when fully occupied by visiting family members. “Our clients wanted a home that felt welcoming for their children and families but wasn’t too big or overwhelming when they were alone,” says Berit Bech, CEO and principal designer of custom builder Stamp & Hammer. The balance between ample space for entertaining and a comfortable, manageable size for two is a key feature of this home.

One standout feature is the kitchen extension, characterized by three-sided glass windows that flood the space with natural light. This bright and airy area offers views of the future pool and trellis, contributing to the home’s seamless indoor-outdoor connection.

Few destinations can hold their place in the ranks of quality, luxury and service for an extended period, but the Bruce Hotel is one. Since day one, it has received AAA/CAA Diamond Designation every year. However, in

2023, the hotel topped its record of excellence by earning a Five-Diamond rating – an accolade only awarded to the most luxurious, upscale and extraordinary properties. To date, it’s the only boutique hotel in Canada to get the coveted five diamonds.

“In terms of getting and retaining the diamond, which we just found out we’ll be retaining again next year,” Birmingham says, “what makes the diamond? Pressure. It’s a lot of work, a lot of testing of the staff. It’s important that everybody who comes here gets the same experience.”

Now, about that cookie hotline. Guest feedback is high on the dedicated phone line for cookies at their beck and call. “You just have to press the button, and we’ll bring cookies and maybe coffee too.” They’re made in-house and there are usually four different flavours (chocolate chip being a standard, of course).

Post check-in, past the lobby you’ll find the restaurant, divided into a casual lounge and fine dining area, and outdoor patio. There is a gym, pool, business centre, and a spa treatment room (which is not full service, but local practitioners are permitted to come and use the space to treat you). There are four guest wings (two on the main floor), and a small library where guests can take a book and leave a book. Unusual for a hotel of this type, the Bruce is fully wheelchair-accessible. “That is rare and something we’re very proud of,” she says.

In what seems like a natural choice given the location, each room is named after a Shakespearean play or character. Two of Birmingham’s favourites are Cordelia (from King Lear, room 2503) and Touchstone (from As You Like It, room 2006). Cordelia is decorated in calming blue; Touchstone is laid out in dark rose and brick tones. All rooms offer soundless conditions for peaceful rest, and feature a second internal door to keep outside noise to nil.

The five-diamond touches you can expect include twice-daily housekeeping and top-notch turn-down service that is executed so well, even the inspector said it was the best he’d ever experienced, Birmingham says. Part of that evening wind-down includes… more cookies. Handmade fortune cookies contain quotes from certain festival performances that year, but Birmingham says the hotel’s culinary staff will also do custom ones for guests. Fresh, hot coffee is delivered to your door upon request. “Whatever time you want it in the morning,” Birmingham laughs, adding, “It’s the little details.”

The hotel has its own app for guests to download, allowing them to submit requests as desired.

The restaurant serves delicious contemporary cuisine with Canadianfocused ingredients. Led by executive chef Jacob Leblanc – previously from Canoe – the hotel’s food program offers a touch of “old school dining,” Birmingham says. Things you’ll see on the menu feature traditional with a twist. Watch for Long Table dinners, which showcase the area’s fabulous farmers. Speaking of growers, the hotel is currently planning to launch a bespoke farm tour program led by Nick Benninger, the Bruce Hotel’s director of experiential tourism.

The Bruce’s accommodations are easily walkable to downtown and festival theatre venues. The Stratford Festival runs from April to October, and there are many other things to do postperformance season. Go for a scenic drive, check out the Justin Bieber exhibit at the Perth County Museum, or the World’s Smallest Movie Theatre, The Little Prince, all in one of southern Ontario’s favourite small-town tourist destinations.

Enter into Hōseki Sushi in downtown Oakville, and if it’s a simple sushi platter you’re looking for, you’ll be seated at one of the tables. But if a traditional experience is what drew you to this intimate Japanese restaurant, you’ll be seated at the bar, where you can watch the masters at work.

As you sit and perhaps sip on some sake, a glass of wine or Sapporo, owner-chef Tim Nguyen will create individual pieces for you and serve them one after another at somewhat leisurely intervals, so you can savour each piece. This style of eating sushi is called Omasake, or chef’s choice. “Leave it up to the chef to choose what is best in season to serve, and the menu changes depending on what’s available,” he explains.

Chef Tim brings with him 28 years of experience; he completed his training in 1995 in Portland, Oregon, where he trained under Kurata Sensei, Suzuki Sensei and

Maru Sensei. Working alongside Chef Tim are Master Chef Osamu Fukushige, with 35 years of experience; Master Chef Roy Takizawa, who is in his tenth year of sushi mastery; and Sushi Chefs Luc Le and Leon Lo. Both have completed apprenticeship under Chef Tim and excel in the intricate art of Sushi Maki.

The menu itself is mainly sushi, with very limited cooked items. Daily selections consist of 25 different freshly prepared seafood items and some seasonal rare finds. Where the restaurant excels is in delivering the best quality sushi through the authentic experience of traditional “Edomae style” sushi, and all ingredients are sourced from Japan.

Hōseki makes nigiri sushi in the traditional Japanese Edomae style, which was invented in Tokyo during Japan’s Edo period (18181830). This style of sushi uses Akas, which is sake yeast instead of rice vinegar, giving the sushi rice a slightly red or brown colour.

“Edomae style means using local fish and ingredients, so we must use everything from Japan to get the same experience,” says Chef Tim. “During the Edomae period there was no refrigeration available, so all fish was preserved with salt.” The fish was aged, similarly to wine, in order to bring out the intensity of the flavours and improve the texture.

Each piece of sushi features six ingredients: top-grade Japanese short grain rice; Edo red wine vinegar; roasted Nori (seaweed); a fresh, mild wasabi seasoning; fresh-cut aged sashimi (raw fish), and a garnish of the chef’s choice. Each component is served at the proper ratio and temperature in order to complement the fish in each piece of sushi. Beverage-wise, Chef Tim says that the best way to enjoy sushi is with cold sake.

Absent from the tables and bar at Hōseki are bottles of soy sauce. Edomae sushi has a stronger taste, and doesn’t require it. The rice, which is slightly acidic, melts the fat once it’s in your mouth and leaves a mild and smooth taste. You will, however, be given a small mound of ginger to eat between each piece.

Of the 11 pieces we enjoyed, they were as follows: Albacore Tuna, Monkfish, Miso Cod, a small bowl of fish stock soup, Golden Eye Snapper, Mediterranean Fatty Tuna, Spanish Mackerel, New Zealand King Salmon with Black Truffles, Fatty Tuna with Caviar, and Fatty Tuna with Salmon Roe. As one who’s not entirely a seafood lover, I was won over. Each piece was so flavourful.

Chef Tim is proud to exhibit what he does – and loves – best.

“I love what I do, because I put smiles on people’s faces,” he says. “Seeing customers’ satisfaction makes me happy.” Being a chef is not just about delivering good food; what’s also crucial is safe food handling when dealing with such delicate (raw) ingredients. Oh, and a word to the wise: Don’t let the sushi sit longer than 10 seconds, he cautions, or it will lose its flavour. And, it must be savoured in one bite.

A BREW-TIFUL EVOLUTION

Discover how Canada’s coffee scene has transformed from humble beginnings to a diverse landscape of trends and local favorites, reflecting a deepening passion for the perfect cup.

Years ago, North American tourists ordering coffee in Italy would ask, “What is this foamy stuff on my coffee?” when they received a frothy espresso instead of a cup of slow drip. In response, Italian baristas added more water to the espresso, creating the Americano.

This was long before Starbucks and Tim Hortons could be found in cities and towns across the continent. Now, the coffee market in Canada employs about 160,000 people in coffee shops, and an additional 5,000 people work in the coffee roasting and manufacturing sector. There are also thousands of indirect jobs linked to the coffee market in packaging, cup manufacturing and other related industries.

Canadians’ desire for coffee has come a long way since Statistics Canada began tracking coffee availability in 1966, when there were 88.51 litres available per Canadian. By 2022, this was up to an all-time high of 111.76 litres.

Canada ranks at number ten for the most coffee consumption in the world. The average Canadian consumes 6.5 kg of coffee per year and spends about $36 on average per month on coffee, according to a survey by Time2Play, which includes spending on both takeout coffees and wholesale coffee bags.

Despite Starbucks increasing its presence in Canada, Tim Hortons still has the most coffee shops in the country. As of June 2023, there were 3,520 Tim Hortons in Canada,

with shops in every province and every territory. Starbucks is the second-largest coffee shop chain in Canada, with 1,423 stores.

The 1990s sitcom “Friends” contributed to the cultural ideal of buying expensive coffee and hanging out at coffee shops with its depiction of character Rachel Green, played by Jennifer Aniston, who worked as a barista at Central Perk, the café and meeting spot for her group of friends.

These days, coffee connoisseurs can try the latest trends in caffeine consumption at many nearby spots – like independent specialty coffee bar Tamp Coffee Company. With two locations in Burlington, Tamp is owned and operated by barista Jimmy Zereneh. Tamp is one of more than 7,000 independent coffee shops in Canada, according to Statista, a global data and business intelligence platform.

“We have an insatiable passion for coffee, paying attention to the smallest detail in coffee brewing, and a love to educate others about the world of coffee,” Zereneh says on his store’s Yelp profile.

Neil Madden, coffee expert and president of ECS Coffee, thinks every coffee business in North America owes a debt to former chief executive officer of Starbucks Howard Schultz, who revolutionized the way people think about coffee. “He saw that people in Italy went to the coffee shop every day before and after work. It’s the third place: there is home, work, and the café is the third place. Schultz saw this as an opportunity.”

Madden’s Burlington-based company boasts the country’s “largest online coffee and espresso gear store, state-of-the-art retailing, coffee roasting and distribution, and office coffee services.”

“We really have Schultz to thank for the romanticizing of coffee (in North America),” Madden believes. “Italy doesn’t grow coffee, yet everyone likes Italian coffee. It’s the romance of it.”

ECS roasts coffee daily, importing its coffee from all over the world. The top coffee-producing countries exist along the equator, with Brazil, Columbia, Ethiopia and Indonesia being top producers. Coffee is a billion-dollar industry in Canada, Madden says.

Co-owner Alex Ratcliffe says the shop, located on Main Street in Georgetown, is inspired by the European cafés he visited during his time living abroad.

More people want to know where the coffee beans in their coffee come from. To that end, Carvalho Coffee’s roasterie and store on Pacific Road in Oakville is unique, in that all its product comes directly from a family plantation in Brazil. “The history of this farm began when the greatgrandmother of Fazenda Cachoeira’s present owners bought the first coffee farm near Poços de Caldas, bordered between São Paulo and Minas Gerais,” its website indicates. “The plantation was made in the valley of São Sebastião da Grama, 1,200 metres above sea level, with rich volcanic soil and unique climate, both ideals for Specialty Coffees. The family’s traditions are kept alive today by its fifth generation of coffee growers who produce over 200,000 bags of the finest Brazilian Arabica on several farms located in the choicest areas of the country: the very best out of the Brazilian Coffee.”

As more people are working from home postpandemic, the appeal of having quality coffee and gear at home has increased. This has led to a surge in demand for coffee machines, coffee pods, and capsules. In fact, the demand is so high, the global market for coffee pods and capsules is expected to nearly double by 2025.

for convenience and there is single-serve espresso. Coffee shops in the last 10 years have gotten away from drip brew and now offer more pressure brew options. Even Tim Hortons has espresso on the menu these days,” ECS’ Neil Madden says.

ESC focuses on the home market; Madden says his business aims to please “people who just want a good cup of coffee.” Indeed, instant coffee has come a long way; with micro grind, there are a lot of people developing new ways of making instant coffee, he says. (Although he still thinks of Nescafé instant as grandma’s coffee.)

In whichever way one enjoys their coffee, Madden says he doesn’t judge. He used to be a double-double coffee drinker, and now he has his coffee black. It all has to do with the quality and freshness of the coffee beans. “Fresh beans are best. It does make a difference. You can buy beans at local grocery stores, but it’s not the same,” he insists. “You don’t know how many years it's been sitting on the shelf.” He goes on to say that stale coffee can be masked with cream and sugar.

Jacqui Cronin, owner of the beloved The Platter Company Gourmet Market and Gluten-Free Market, and Chef Brandon Ashby, formerly head chef of West Plains Bistro, launched Table 10 in July to offer the community something exciting. Cronin brings her flair for high-end dining and vision that gatherings shouldn’t be rushed, but savoured and enjoyed with good people, good food and good wine.

They differ

That is where Cronin says they differ from a private dining area in a restaurant: you can enjoy a six- or eight-course menu in a room that is yours for the entire evening.

The menu will change monthly and includes a wine pairing. August’s menu, for example, was an eight-course journey consisting of hors d’oeuvres (heirloom beet, raspberry, whipped ricotta, lemon, pine nut, arugula, crispy shallot); cauliflower and leek soup (mandarin oil, mandarin segments, cauliflower florets, Pommery, dill); chicken appetizers (with saffron-vanilla beurre blanc, tomato, parsnip, basil oil, micro-greens); and a bouquet salad (a variety of leafy greens, pistachio vinaigrette, Cape gooseberry, flowers, potato hay, tarragon, and dill). The main course (number five): beef tenderloin (black pepper dusted, cognac sauce, pea tender, blackberries, puffed wild rice, flowers, pea tenders); a watermelon palate cleanser (lime, mint, pickled watermelon, candied lemon); blueberry cheesecake (whipped blueberry ricotta, vanilla mascarpone, blueberry compote, graham, blueberries, meringue, Brazilnut snow, orange Chantilly, mint); and finally, a mignardise of fruits, cheese, honey, nuts and herbs.

Wine pairings are available for each course, Cronin notes, or you may buy your glasses of wine à la carte. Non-alcoholic wine and beers are also available. “This isn't a cocktail lounge, so the focus is really the wine pairings with your meal. But again, if people don't drink wine, we will have the option of beer as well.” And when it comes to the menu, it will reflect local, seasonal ingredients, creatively presented as the

chef intends. And “leave your conceptions at the door. Come on in,” Cronin says. “It's a tasting experience, and all about having fun and getting back to dining.”

Table 10 isn’t limited to just friends and family events; corporate gatherings are also welcome. Regardless of who is seated around the table, Cronin also encourages that guests focus on the food and one another. “Let's put our phones down and let's get back to talking and and sitting around and having a good time. And it's not a rushed evening; estimate a good three hours for a tasting of eight courses,” she says. The doors open at 6:30 p.m. and your evening will finish no later than 11 p.m.

Cronin couldn’t be happier to have Chef Brandon at her side. “He’s amazing. We collaborate so well. He's in his element to create, and he's not restricted to a

set menu.” He instead prefers to discuss what’s available locally, and how to create something magical and wonderful for guests. “And I love that it's all about creativity. It’s pretty exciting for the both of us.”

For a particularly special occasion that requires decoration, Cronin invites a discussion of what’s required. She also reiterates that, as a tasting experience in Table 10’s upscale dining room, “It’s about being comfortable, enjoyment and having fun. If you want to take your shoes off, go ahead. If you want to walk about and sit on the couch, go ahead. This isn't about being stuffy and pretentious. It's about getting to really, really good food, enjoying the pairings that are meant to go with it, and having a good time and (doing) something that's memorable. That's the essence, really, behind this. This isn't just a tasting room… This is Table 10.” For

If you’ve ever spent time in the south of France, you know that the region’s cuisine is as diverse as its landscapes.

We’ve long been captivated by France’s culinary traditions, and between our frequent visits there and Sebastien’s French heritage, we love to infuse our entertaining with a touch of French cuisine whenever we can.

There is something quintessentially French about mussels that resonates with us, and we’re thrilled to share how you can create an unforgettable mussels dinner for your friends and family.

Demystifying Mussels: A Simple Approach

For many, mussels are a dish best left to the professionals. The thought of preparing them at home can seem intimidating, but it really isn’t. With a straightforward recipe and a few basic ingredients, creating a delicious (and impressive) mussels dinner that rivals any restaurant experience is much simpler than you would imagine.

When hosting a mussels dinner, we prefer to keep appetizers to a minimum, especially when the mussels are paired with pasta. Light, colourful canapés are perfect for whetting your guests’ appetites without filling them up before the main course. In the spirit of European dining, we often serve the salad course as a palate cleanser after the main course and before dessert.

Setting the Scene: A Rustic Table for a Cozy Meal

Family-style meals are all about comfort, so we like to keep our table setting simple and rustic but still visually appealing. Wooden cutting boards make great substitutes for side plates or serving platters and add a rustic theme that eliminates the need for a tablecloth.

When setting the table for large groups or for family-style service, it’s important to plan ahead. Leave some open space to avoid overcrowding and try to stay away from large floral arrangements. Instead, consider using smaller bouquets. Three or four small bouquets should do it; deep colours like burgundy, dark red and green will complement the rustic theme beautifully.

To personalize the table for this meal, we added miniature baguettes wrapped in craft paper and fitted with place cards. Not only are these baguette place setting accents Instagram-worthy, but they are also functional, since there’s nothing better to sop up the sauce from the mussels course.

The Menu: French-Inspired Canapés and Mussels with Shrimp

Instead of a traditional appetizer course, we like to start our mussels dinner with a selection of one-bite canapés. Here is one of our favourites for a mussels dinner:

CUCUMBER LOONIES

Yield: Serves 6-8 as an appetizer

Ingredients:

• 5 mini English cucumbers

• 1 ½ tbsp rice wine vinegar

• ¼ small white onion, sliced lengthwise

• 2 tsp poppy or black sesame seeds

• Sea salt and black pepper, to taste

Method:

1 Peel and slice cucumbers into 1" thick rounds.

2 In a medium bowl, add the sliced cucumbers, rice wine vinegar and onions. Toss to coat completely.

3 Refrigerate at least 30 minutes and up to 3 hours.

4 Transfer to a serving bowl, sprinkle with poppy or sesame seeds and serve.

As the canapés disappear, it’s time for the main course: in addition to the mussels, we are adding some poached shrimp over a pasta with spicy tomato-arrabbiata sauce.

MUSSELS & SHRIMP WITH PASTA IN ARRABBIATA SAUCE

Yield: Serves 6 to 8

Ingredients:

• 1 package (500g) of long pasta, such as spaghetti or fettuccine

• ½ cup olive oil

• 1 onion, finely diced

• 6 cloves of garlic, minced

• 2 jars (1L) Arrabbiata or tomato sauce

• 4 lb mussels, pre-washed

• 2 lb (16 to 20) shrimp, pre-cooked

• 1 cup Italian parsley

• 2 tsp chili flakes (optional)

Method:

1 Bring a large pot of salted water to a boil. Cook the pasta according to package directions. Drain, toss with ¼ cup of the olive oil and set aside while you prepare the sauce.

2 In a large pan with a lid, heat the remaining ¼ cup of olive oil. Add the onions and garlic until translucent, approximately 5 minutes.

3 Add the jars of sauce and increase the heat to high to bring the sauce to a simmer.

4 Once simmering, add the mussels and shrimp; stir to ensure the mussels and shrimp are coated in the sauce.

What’s on the Bar: Pairing Drinks with Mussels

Shellfish can be tricky to pair with cocktails, so we recommend offering two classic options along with a selection of wines:

Boulevardier – A whiskey-based cocktail similar to a Negroni, perfect as a predinner drink.

Fernet Martini – A simple cocktail made with gin, sweet vermouth, and Fernet Branca, garnished with an orange twist.

LEMON TIRAMISU

Yield: Makes 6-8

Ingredients:

• 24 ladyfinger cookies

• 2 cups lemon simple syrup, or lemon liqueur

• 2 cups lemon curd

• 1 ½ cups mascarpone, softened

• 3 cups sweetened whipped cream

• 2 pints raspberries

• 10 sprigs of fresh mint

Method:

5 Cover with the lid and cook until all the mussels have opened, approximately 5 minutes. Discard any that have not opened.

6 Divide the pasta among bowls and top with the mussels and shrimp sauce.

7 Finely chop the Italian parsley and sprinkle over each bowl. Serve with chili flakes.

For dessert, lemon tiramisu served in individual glasses makes for a light and refreshing end to the evening and is easy to prepare ahead of time:

1 Set aside 6 to 8 serving glasses.

2 Dip two ladyfinger cookies in the lemon simple syrup and place in the bottom of a glass, breaking them in half if required.

3 Layer 3 tbsp lemon curd, 1 tbsp mascarpone, and 3 tbsp whipped cream on top of the ladyfinger cookies.

4 Dip two more ladyfinger cookies in the lemon simple syrup and layer them overtop.

5 Repeat for remaining glasses.

6 Garnish with raspberries and mint. Refrigerate up to two hours before serving and serve chilled.

Offer a variety of both reds and whites. Introduce a few new bottles alongside your favourites to keep things interesting.

Final Preparations and Time-Saving Tips

Two to three days out: Purchase specialty items, grocery shop, and stock

The day before: Prepare the lemon tiramisu, set the table, and buy the mussels.

The day of: Purchase florals, prepare the canapés, and assemble the final dishes.

With these recipes and tips, you can create a memorable evening that celebrates the joy of good food and great company.

HOW IS FRENCH INTEGRATED INTO LEARNING FOR NEW STUDENTS AT YOUR SCHOOL?

Unlike any other French immersion program in Ontario, our Pre kindergarten class is unique: students begin to learn French using an approach we call “beyond immersion.” We teach them French as a first language. Students spend their days in an entirely French learning environment, where they absorb vocabulary, sentence structures and oral speaking skills through play learning, songs and other activities. Students coming to TFS up to and including Grade 7 don’t require any prior knowledge of French, as they can participate in our proven Intro French program and soon catch up to their peers. You would not believe how quickly they become French speakers!

Painting Paradox in

ARTIST TANIA LACARIA EXPRESSES BEAUTY AND VARIETY ON A SINGLE SURFACE

It’s fair to say that whether you’re creating art or creating memories during your travels, it’s important to stay in the moment.

Hamilton-based Tania LaCaria has travelled to over 43 countries (and counting), but inspiration has come from different places and for different reasons. But Bali, Indonesia (three visits), and London, England have each inspired her most in terms of her art. “My time in Bali was full of beautiful things, and that makes me feel alive, and when I am full of gratitude, I am inspired to create.”

In 2021, a trip to London to experience the Frieze Art Fair changed her life. “I saw an art scene and an industry that I hadn’t been exposed to before. London is a wonderful city, but that trip taught me to dream big.”

LaCaria, who holds a BA in Fine Arts from York University (2006) and a CIDAadvanced diploma in Interior Design from Sheridan (2009) says her work explores paradox on the canvas. How so? She says it’s the idea that two opposing realities exist at the same time – conceptually through a theme that inspired a collection, but some works implement juxtaposing visual cues when possible.

She cites her She’s a Sweet Peach collection, which explores the way society talks about and treats women. “I’m asking the question, ‘Why are women often compared to fruit?’ I visually communicate the paradox in this collection by using contrasting colours [and] opposing textures of softly blended, gentle brushstrokes, in tandem with thick, cumbersome, messy, dripping paint on the same surface.” There is much juxtaposition in the types of mark-making she uses throughout all her work, and she

says it’s become emblematic of the visual language she uses.

Even in earlier works, you can see softer, thin brushstrokes alongside aggressive scribbles and scratches. “To me, there is beauty in implementing a variety of different forms of expression on a single surface.” Take the scribbled notations that have inspired the “urban abstract” descriptor, such as hand-scrawled markings that look like graffiti tags or angry writings on a wall, often placed alongside vibrant, seemingly playful splashes of happy colours. “In reality, both extreme emotions can be present at any one time, and both are valid, important, and beautiful in their own right.”

Thematically, LaCaria explores genderbased issues, specifically women’s issues, as well as themes that centre around relationships. “These are the topics that intrigue me,” she says.

Producing “thought-provoking work to prompt viewers” is also part of LaCaria’s artistic way. “Ironically, most of the questions I’m posing to viewers remain fully unanswered for me,” she admits. “I’ve discovered that being deeply empathetic is a powerful gift, but also has the tendency to create confusion when it comes to asking questions and expecting a black-or-white answer. My empathy allows me to consider both black, white, and grey answers, which is why I enjoy posing questions to others in my attempt to collect perspectives.”

Attending one of LaCaria’s shows involves sight and sound. She enjoys choosing music or poetry to complement her work. “All of my work is accompanied by a written description I provide to give viewers context, and most of the time the poetry I’m writing is created in tandem with a piece,” she says. It starts with a thematic collection, with each piece inspired by a feeling or emotion she’s not yet able to describe at the time. “As the work develops, the words come to me, and I enjoy the cohesive experience that comes with visual versus verbal (written) expression.”

Music has the ability to create a mood and strengthen an existing emotion. LaCaria curates songs for playlists to accompany her work to allow viewers to explore the emotions she was feeling behind a song through her painting.

“The melody and tone of the song affect me – it can bring out thoughts of rage, aggression, anger, or longing, sadness, love, melancholy, grief, joy, gratitude… but the lyrics really impact me. Maybe it’s because I choose my words carefully when expressing myself for my own work. But I feel moved by song lyrics often, and they occasionally make their way into my paintings in both obvious or more subtle ways.”

Releasing playlists along with some of her collections has allowed viewers to pick up on the emotions she’s trying to communicate. “In most cases, music can be felt and understood in ways that can only be described as feelings… not everyone is able to observe a painting and develop an emotional connection to it. Prompting viewers to interpret the visual language I’m communicating through the emotions that come up from songs, music, lyrics, and poetry is just another way for me to say through my art, ‘I see you. I understand. You’re not alone.’”
