Dear Reader, September is officially the first fall month – but it doesn't feel like it. The days are still warm and the water is perfect for a swim even in this latitude. There are still plenty of flowers, berries and fruit in the yard and both the greengrocer and our gardens have an abundance of lovely, fresh vegetables. Although it still feels like summer, the season

Cheerful Heather

Cheerful heather

Here in Denmark, we're lucky enough to have huge areas of wild heather. Blankets of rosy heather grace heaths and woods – nature's own ground cover that's both practical and pretty. The aromatic heather is also popular with the bees that give the loveliest and sweetest heather honey in return. Heather is also very suitable for the garden and looks wonderful is beds and pots alike. In fact, it's possible to have flowering heather almost year-round by choosing different varieties. Heather also comes in white as well as different shades of pink and purple. Garden heather will thrive best in acidic soil that should be fairly well-drained, depending on the type of plant you choose. Otherwise, heather prefers sunny and warm spots. Cut back withered and dry inflorescences in the spring so the plant stays dense and tuft-like, but don't cut it all the way down to the hard wood. This will kill the plant as it is unable to put out new shoots from there. We made a trip to the village of Helberskov, where Lonnie and her family own a wonderful summerhouse. It's located in the middle of the woods yet close to the water. Heather abounds here. It really thrives in the light forest floor. You can cut heather for decorations and for drying here without even being able to tell that you were there. Heather is amazing for dried wreaths because its pretty pink color is preserved when dried. The nice colors and the flowers' slightly wild appearance also go really well with the other blooming summer flowers of the season. The deep, calm color and blooms of the hydrangea, for instance, create a beautiful contrast with heather. If you dare to go for a slightly bolder look, like we have here, you can combine the pink heather with blue cornflowers and add in dry inflorescences and crisp, green leaves.

Wild Bouquet You'll need: Heather Oak leaves Cornflowers Poppy inflorescences Various perennials or Wildflowers

Instructions: Cut the flowers and let them soak up plenty of water. Tie the bouquet in a spiral. Make sure to mix the flowers well to create a wild yet harmonious look. Finish by tying a ring of small oak branches around the bouquet. Tie a piece of raffia around the bouquet and place it in a vase or pitcher of appropriate size and shape. Don't forget to change the water daily.
