Dear Reader Autumn is hastily approaching. The world outside our window is a captivating sight. Nature explodes in shades of orange, red and yellow. It is hard to imagine how Mother Nature is able to produce these intense colours. Autumn should be spent in the great outdoors. Looking out the window simply will not suffice. We must embrace the cool autumn breeze. Rummage through the forest floor. Take in all the impressions. We must take the kids to the woods and play in the enormous heaps of auburn leaves. We must go to the sea side and feel the strong currents of air. This is a time to cherish nature, and allow ourselves to become a part of it. To us, autumn is a very special season. It is one that appeals to us, more than any other. In our everyday lives, we work hard and tend to neglect the little things. Autumn rekindles our feelings for Mother Nature, but before we’re completely ready to embrace autumn, we need to make preparations. Our most precious garden items must be moved into the living room. We’ll create a summery oasis in the pale fall. This oasis will be where we will entertain our guests. We will light a fire in the cosy fireplace, and lights candles around the room to top off the atmosphere. A warm atmosphere is the cornerstone of entertaining company, and we do indeed take pride in caring for our guests. In the end, it is of very little importance whether you serve them tea or coffee, but how you serve it is vital. Home is indeed where the heart is, and this has essentially become out mantra. At first, one worries about creating and nurturing a good mood, and a hospitable and friendly atmosphere. However, after a while, it all seems to come naturally, and when this happens, you know that you are a superior host. With this notion in mind, we wish you happy reading!

Beautiful Blueberries – The Healing Alternative
Blueberries are very good for you. They contain copius amounts of antioxidants, which makes them one of the healthiest fruits around. Most of the healthy elements are found within the coating of the berry, and the bluish-gray colour also makes for a great decorative piece. Don’t you think the coating resembles morning dew?
Blueberry Juice You will need: Bl berries, sugar and water.

What to do: lean the berries and bring them to a boil with 0,5 litres (20 fl oz) of water pr. kilo (40 oz) of berries. Allow the berries to cool down, and strain the juice through a piece of cloth. Boil this juice for ten minutes, with approximately 350 grams (9 oz) of sugar for every litre of juice. The juice can now be cooled and bottled. 3
To accompany the duck, you could ser ve a delicious blueberr y salad. As a quick lunch, the salad could just as well be ser ved on its own. Mix up some fresh Rocket with other Crispy Salad Leaves and add 100 grams (3,5 oz) of fresh blueberries, 50 grams (2 oz) of Walnuts and 100 grams (3,5 oz) of Blue Cheese. Then pour two tablespoons of Acacia Honey over the salad, and ser ve with Baguettes.
Delicious Blueberry Pie for Dessert
Batter: 250 grams (8,8 oz) of Flour 75 grams (2,5oz) of Sugar 125 grams (4,4 oz) of Butter 1 Eg g
Filling: 500 grams (18 oz) of rinsed Blueberries 100 grams (3,5 oz) of Sugar Sour Cream on the side Break the butter into smaller pieces, add flour and sugar, and mix by hand. Add a gently whipped eg g to the mix and knead into a fir m batch of dough. Let the batter sit in a cool place for a half hour or so, before rolling it into a thin sheet that will line the pie for m. When the dough has been molded to line the pie for m, place a sheet of baking paper on top of the batter, and fill up the for m with rice or lentils so that the batter is allowed to take for m during the first baking process. The batter is baked in an oven at 180째C (360째F) for fifteen minutes. The baking paper is removed along with the rice or lentils, and the blueberries are laid into the for m. Sugar is sprinkled on top of the pie, and the pie is baked for another ten to fifteen minutes. Ser ve war m with sour cream on top or on the side as desired. 6
Blueberry Shots
300 grams (10 oz) of Fresh Blueberries 100 grams (3,5 oz) of Sugar (to your liking) 400 ml (10 fl oz) of Vodka Lemon peels Gently mash the rinsed berries. Add vodka and the lemon peels. Adjust number of lemon peels to your liking. Pour the mix into a TINTED bottle and leave it for three to four months for the vodka to absorb the flavour of the fr uits. When you retrieve the bottle, let its contents flow slowly through a piece of cloth to collect all debris from the peels and berries. Add sugar to your liking and leave it to mature for another four weeks.
Blueberries in the Garden You won’t find many Danish gardens with blueberr y bushes, and this tr uly is a shame, as the blueberr y bush is handsome plant. In spring, it bears white, beautifully scented flowers, and it stays majestic throughout summer. In the fall, it grows pretty berries in the most precious shade of purplish-blue, with a milky-white film that resembles dew. This makes this particular plant a sight for sore eyes all year round, as it also shows off bright colours in winter where other plants lose their leaves and become pale reflections of their for mer selves. However, plenty of blueberr y bushes are found in the wild. The berries taste and look a little different, but they can easily be used for cooking and decorative purposes. If you should decide to plant a blueberr y bush, you must make sure to do it in autumn, just before the freezing cold of winter sets in.
Blueberry Trivia Were you aware that American blueberries can, given the right circumstances, become ver y old? American examples have shown that certain orchards manage to nurture blueberr y bushes for up to eighty years! Also, did you know that the “dew” on the berries is a coat of wax meant for protection? 7
