You join the Pride team this month on a deadline day which follows two days at the Lincolnshire Show. We’re a little tired, but still on cloud nine from the wonderful feedback we’ve had from June’s editions.

The comments we’ve had about the new look and feel to the magazine, about the striking Longwool image we commissioned for our June covers and about Lincolnshire Pride in general has been really lovely to hear, so many thanks to those who came along to our marquee to say hello and provide their feedback!

Back to this edition and we’re celebrating a summer of history with Lincoln’s Battles & Dynasties, the Domesday Book on display and a Knight’s Trail for the family to enjoy as well. We really must congratulate Lincoln’s tourism teams for bringing together such a great programme of entertainment for the summer, and we really do recommend a visit to the city this month. Elsewhere, Lincolnshire’s new air ambulance has really taken off, and there are plenty of NGS gardens to enjoy later in this edition, so we’ll recommend our pick of the best, as well as a great recommendations for summer dining too. With all this, plus a look at the county’s royal connections, we think there’s plenty of really entertaining features in the county’s finest magazine this month, an edition we really hope you enjoy reading! HECKINGTON’S VILLAGE SHOW RETURNS SATURDAY 29th & SUNDAY 30th JULY HECKINGTON One part of Lincolnshire is celebrating a very special anniversary this summer as the quiet village of heckington busies itself preparing for its 150th village show. a milestone in its own right, but truly remarkable when you realise in that century and a half it has grown to become Britain’s biggest village show. The show retains many original Victorian features Shire horses - but the event’s 35,000 visitors are also drawn by the special blend of village show charm and county show quality and this year’s celebration show promises to be extra special. The main ring sees not one but two star attractions. Sunday features the Big Pete monster Truck. The Saturday programme has the J C Balls Digger Dance supported by Ye Olde redtail falconry and the red Devils Parachute

Team and continues with the usual stunning firework Concert. 2017 features tribute band queen ii – the chance for everyone to join the birthday party.

That was the aim of the Pride magazines team during a refurbishment and expansion of their offices, which was completed in mid-June. BIRTHDAY HONOUR FOR DAMBUSTER

LINCOLN former Dambuster and last surviving participant in the daring 1943 raids George ‘Johnny’ Johnson has been honoured with an mBE in the queen’s birthday honours. The award follows a petition being submitted to 10 Downing Street with over 237,000 signatures and backing by TV presenter Carol Vorderman.

Johnny was awarded an mBE for Services to WWii remembrance, and said he was honoured to receive the award on behalf of all his colleagues. “i’m the lucky one, i’m still alive,” said Johnny. “i’m representing the squadron and it’s the squadron that’s been honoured with this not me.”

LINCOLN Youngsters from 20 Lincolnshire schools entertained shoppers and visitors last month as drama, juggling and arts & crafts workshops took place in the centre of Lincoln. This year’s Lincoln Children’s Festival was timed perfectly to tie-in with the fabulous Lincoln Knights’ Trail, the Knights’ Education Trail and the brilliant Battles & Dynasties Exhibition at The Collection (see later in this edition). The festival included arts and crafts activities which took place on the city’s High Street, in St Marks square and in the Waterside centre too.

SKEGNESS’S FAIRY DELL will not close, says East Lindsey District Council, after 4,803 people signed a petition to oppose its closure. The council needs to save £6m over the next four years, but the fairy Dell won’t be a casualty of savings. One resident said “The fairy Dell is a wonderful place enjoyed by many. To close it down would be a major loss for Skegness.” n

Duckworth launches new Velar...

NEWEST MODEL IN RANGE ROVER’S LINEUP PROMISES STYLE & EXCITEMENT BOSTON Duckworth Jaguar Land rover recently invited excited crowds to the launch of the newest model in the range rover lineup, its Velar SuV. Oriented towards style and on-road dynamism, the model will range from about £45,000 to over £75,000 and will sit between the compact Evoque and the brand’s larger range rover Sport model. The company was founded in market rasen in 1962, purchasing a second dealership in 2007, but this year, the company unveiled its exciting new £7m retail space which also saw Duckworths adding the Jaguar brand to its portfolio of Land rover and range rover models. The new dealership features state of the art sales and aftercare facilities including dedicated handover bays and space to show off around 10 models from each brand.

LINCOLN Lincoln is home to rising star harry marcus who, at the age of just 13, has landed a role in the primetime BBC period drama Poldark. The teenager is currently on screen playing Geoffrey Poldark, nephew of the eponymous lead in the Cornish series. recruited to the role in august after a script read-through, harry says he was nervous to see himself on screen. “all feedback seemed to be positive and i read some really good reviews about the show and my performance.” There will be a fourth series of the drama, but it’s not yet been confirmed whether harry or his character will be retained.

What a mixed bag of weather we had at this year’s Lincolnshire Show! But that didn’t stop tens of thousands of visitors enjoying the very best that Lincolnshire had to offer at the county’s annual celebration of farming, food and rural life.

The show covers 270 acres, and visitors enjoyed seeing over 600 trade stands, 2,500 horses, cows, sheep and pigs. in addition, this year’s main ring entertainment included private driving, showjumping and scurrying, a performance by the Broke mfX display

The Lincs & Notts air ambulance service is absolutely vital, yet entirely reliant on charitable support. Last month the Charity took delivery of a brand new helicopter; larger, faster and with greater endurance than ever, it’s a machine designed to help the service to save lives in the sky... “Our new aircraft, an AgustaWestland 169, flew into Waddington in early June and will offer us significant benefits to enhance patient care,” says the Lincs & Notts Air Ambulance’s CEO, Karen Jobling...”

They’re the friendly faces you hope you never have to see. We’ve met the crew of Lincs & Notts Air Ambulance charity on a number of occasions, and take it from us, they’re charming folk. And yet, when the bright yellow aircraft flies overhead, the sight elicits a sense of foreboding, inevitably meaning that someone’s facing a life or death medical emergency. Last month the crew invited members of the media to witness the unveiling of their new aircraft, the fourth one in the service’s history. “Since 1994 we have operated three different helicopter types, each one has offered an upgraded service and greater benefits to our patients,” says the service’s Marie Williamson. “Our new aircraft, the AW169 is no exception. As well as being our biggest and fastest aircraft to date, it’s also the most technologically advanced. It is top of the range in the Helicopter Emergency Medical Service range.”

Crucially the service receives no direct government or National Lottery funding and is supported only by charitable donations. At a cost of £2.5m each year, and with over 1,000 calls to respond to each year, only the public’s benevolence keeps the service in operation.

With each successive aircraft the crew of two pilots - who work 12-hour shifts, four days on and four days off - plus its co-pilots, doctor and two paramedics seconded from the NHS, have operated in bigger and better aircraft, with faster flying speeds, greater longevity in the air and more room in the fuselage. “Our new aircraft flew into RAF Waddington in early June and has significant benefits and to enhance patient care,” says the charity’s CEO, Karen Jobling. 24

“It’s bigger, giving paramedics and doctors 360-degree access to patients in flight; it’s faster meaning it can get to patients quicker; and it has better endurance meaning it can fly further without the need to refuel.” “Excellent patient care is at the heart of everything we do and the combination of speed, endurance, and technology of the new aircraft will give patients the very best chances of survival possible in their greatest hour of need.”

The new aircraft provides 360° access to the patient and it can fly at a maximum speed of 190mph, ensuring it can reach a patient anywhere in its catchment area in under 20 minutes. Lincoln, Sleaford, Market Rasen and Newark are all accessible in half that time.

Over half of the charity’s workload is in response to road traffic collisions, but other emergencies that aircraft is called to includes farming, equestrian and industrial accidents, as well as providing smooth transfers to different hospitals, for spinal patients, for example. >>

The service attends an average of three incidents each day, and flies 365 days a year between 7am and 7pm. Night vision equipment on the previous aircraft has been carried over to the new aircraft, which dramatically increases the hours it can remain operational in winter.

Access to the service is ‘automatic’ with all 999 call handlers able to refer incidents to the HEMS (Helicopter Emergency Medical Service) desk. The desk will assess the helicopter’s viability and scramble the service if it’s appropriate. The crew will be in the air in under five minutes from receipt of an emergency callout. n

former patients were invited to tell their stories, including Neil Wood, who was involved in a road traffic collision when a hGV lost control and veered across the road and into his car, necessitating critical care at the scene and an airlift to queen’s medical Centre for specialist medical attention. Sarah Layden was another former patient who told of her mountain biking accident in 2014 in which she fell 30ft before landing on her head and was airlifted to the nearest hospital with a serious brain injury. The incident occurred in a former quarry, inaccessible by road ambulance, and in addition to its ability to get to a casualty faster than a road ambulance, the aircraft is also useful for reaching inaccessible parts of the county too. The team works alongside their road-based NhS paramedic colleagues to reach casualties in the so-called Golden hour, when the chance of survival is the strongest.

Lincoln is renowned for its appeal to those seeking to explore medieval history, but in 2017 Visit Lincoln, Lincoln BIG and the city’s Historic Lincoln Trust have create a programme of events to ensure visitors to the city can explore its heritage all summer long... Treasures, treachery and tourism, that’s what Lincoln is set to bring visitors this summer with a packed programme of events designed to put the city on the map for the anniversary of one of the defining moments in English history.

2015 was a vintage year for the history’s heritage tourism trade, with the 800th anniversary of magna Carta providing a whole season of celebrations for the document. Two years later the city is hoping to once again bring history to life with a whole summer of events to celebrate the anniversary of 1217’s Battle of Lincoln. The battle saw William marshal lead a force of English knights to Lincoln where he defeated the

french/rebel force and secured henry iii’s place on the throne. The battle led henry to reissue magna Carta with the addition of clauses in a document now known as the Charter of the forests, which was finalised in November 1217 and further enshrined rights to common man over land use and ownership.

To commemorate both the Battle of Lincoln and the Charter of the forests, Visit Lincoln, Lincoln BiG and historic Lincoln Trust have created a summer of events which began in may with Battles & Dynasties at The Collection and Domesday in Lincoln Castle’s recently completed £20m magna Carta vault. for the first time Battles & Dynasties, which runs until 3rd September, will feature not only Lincoln Cathedral’s copy of magna Carta, and the 1217 Charter of the forests, but also Domesday, William the Conqueror’s 1080 document which is regarded as the earliest >> 29

There will also be an illustration of the earlier Battle of Lincoln in 1141, as well as the Bill of Attainder, which led to the execution of Katherine Howard and the

ThE BaTTLE Of LiNCOLN and CharTEr Of ThE fOrESTS “The Battle of Lincoln, one of the most decisive in English history, meant that England would be ruled by the Angevin, not the Capetian dynasty...” - Professor David Carpenter After agreeing the Magna Carta in 1215, King John went back on his promise which led the country to fall into a civil war. This divided the barons between supporting the crown and rebel barons who invited Prince Louis, the son of the French King, to take the English throne.

Visitors to the city can download or pickup a copy of the trail leaflet, with over 100,000 distributed already, and children can complete the Knights’ quest, identifying symbols on the sculptures to decode a secret message in return for prizes. already the city has seen scores of visitors heading to the Cathedral’s curtilage for a reenactment of The Battle of Lincoln in may. Visitors can expect jousting in the Castle, an exploration of outlaws with a reenactment group, and costumes from TV drama Wolf hall in Gainsborough too.

In October 1216, King John died and his son, Henry III, was only a child so William Marshal, a famous medieval knight and the King’s champion, acted as regent. By May 1217, much of the country had been taken by the combined French and rebel English forces, but Lincoln Castle held out for the royalist cause under the command of a formidable lady constable, Nicolaa de la Haye. On the morning of 20th May 1217, the Royalist army set out from Stowe or Torksey (the sources disagree) to help Nicola and raise the siege. The Royalists broke into the city and in the fighting that followed between the castle’s East Gate and Lincoln Cathedral, the siege of the Castle was lifted and the French commander was killed. The rebels then either

surrendered or fled down the hill and towards London. The Royalists claimed victory and then sacked the city. One chronicler ironically nicknamed the battle the ‘Nine-day’ of Lincoln (a Nineday was either a fair or a tournament) as a battle in the city in 1141 had already been given the title of The Battle of Lincoln. This battle was of national significance. If the Royalists had lost, England would have become part of France and our King Louis VIII, instead the Plantagenet dynasty ruled for another 250 years. The 1217 battle and the subsequent defeat of a French naval force at the Battle of Sandwich in August meant Louis’ attempt to become King of England was over. On the 6th of November 1217 Marshal, in the name of the young Henry, reissued Magna Carta in an attempt to reunite the country and with it a companion document called the Charter of the Forest. In contrast to Magna Carta, which mainly dealt with the rights of barons, it confirmed rights of access to royal forests for all men and was not superseded until 1971. Dr Erik Grigg

Stamford’s world class sporting fixture and countryside show returns this month as the 2017 Land rover Burghley horse Trials prepares to bring 150,000 spectators and £20m of revenue into the area. for the uninitiated, the event is a three day eventing competition attracting top international riders, thanks to its 4* CCi designation - it’s one of just six event worldwide to hold such a distinction. The event takes 1,100 people and 60,000 man hours to organise, with over 450 horses on site and a ‘mini village’ temporarily set up on 540 acres of parkland around the house.

The Trials’s Dressage element takes place on Thursday and friday in the main arena, whilst Saturday sees competitors embark on a gruelling cross country course designed by former competitor Captain mark Phillips, before the event comes to a climax with showjumping on Sunday.

The challenge for competitors is only half the story of the Trials though, as the event is regarded as one of the uK’s best days out for country folk. friday is an unofficial ‘ladies’’ day,’ and over 600 trade stands will this year offer everything from handmade cheese, artisan breads and rare breed meats to luxury goods such as fine jewellery, contemporary fashion and exotic holidays.

A Royal affair

Lincolnshire has a number of historic connections to the monarchs who ruled the land. There are many royal tales to tell in this county, and some stories that you wouldn’t believe... Words: Tilly Wilkinson.

Our humble county has a rather extensive history. it’s proven in our architecture with incredible buildings like Lincoln Cathedral, the Castle, Belton house, Grimsthorpe Castle, Belvoir Castle and harlaxton manor. however, it’s also in the stories that are told about Lincolnshire, and there are many with royal connections. You may have heard a few of

these tales, and whether you believe them or not, they’re certainly impressive. Over the past few years, a number of royals have visited Lincolnshire including queen Elizabeth. The Duke and Duchess of Cambridge have visited before to see the wealth of raf camps and bases.

however it’s the royals from story books, like henry Viii and King John who have tall tales about their visits.

THE CROWN JEWELS OF KING JOHN FOREVER LOST IN THE WASH...

This story is probably the county’s most famous royal connection, and many have searched to see if it’s true. in 1216, King John was travelling from King’s Lynn to Swineshead abbey, and as he travelled on a slow safe route,

his treasures were taken on a more dangerous shortcut across the fens. The wagons carrying his precious cargo were swallowed by an incoming tide on the marshy bog, never to be seen again. They remain undiscovered.

CATHEDRAL CONSTRUCTED BY KINGS

William the Conqueror ordered Lincoln Cathedral to be constructed. it was built because the diocese of Lincoln was just so big. But William isn’t the only royal connection the Cathedral has. When queen Eleanor, Edward i’s wife, died not far from Lincoln, the king who was heartbroken decided to have her internal organs entombed at the Cathedral.

The mistress and later wife of John of Gaunt, Kathryn Swynford, also lies in the Cathedral. John was the Duke of Lancaster and son of Edward iii. The tomb of Kathryn Swynford, lies in the chantry chapel dedicated to her near the high altar. The couple also married in the Cathedral in 1396, legitimizing their four children born before the marriage. many of Kathryn Swynford and John of Gaunt’s descendants went on to become monarchs and royal princes and princesses of the country too. Over the many years the Cathedral has been standing, various royals would have visited, both current and old.

VISITS FROM QUEEN ELIZABETH

The queen has visited many times. her first was in 1958 to open Pelham Bridge, and her last was to Burghley house in 2012. She’s visited over 10 times in total.

The Duke of Cumberland in Stamford...

The Duke of Cumberland, otherwise known as ‘Butcher Cumberland’ for his brutality in the Battle of Culloden, was riding along the Great North Road when he stopped in Stamford to change horses in 1745. He passed through again in 1746 after his victory in the battle. Almost 100 of the Jacobite rebels who were captured were taken to Lincoln Castle to await their fate. 49

Henry VIII and Catherine Howard in Lincoln

In August 1541, Lincoln’s Medieval Bishops’ Palace held host to one of the most famous monarchs of Britain; Henry VIII and his fifth wife Catherine Howard. The couple were on a ‘royal progress’ from London to York which was an exercise in public relations essentially. It is thought that Catherine met Thomas Culpepper in secret on this visit. Within a year, she was executed for treasonable adultery.

in 1367, the future King of England was born at Bolingbroke Castle in Lincolnshire. he was known as henry Bolingbroke and he visited Lincoln Castle when his father, John of Gaunt, held a banquet in his honour. however, he was not destined to be king. henry took the crown by force from his cousin King richard ii in 1399.

A ROYAL PRINCESS AT WOODHALL

Princess marie Louise was queen Victoria’s granddaughter and visited Woodhall Spa regularly. The princess stayed with Lady Wiegall, her close friend and she loved the Kinema in the Woods.

A KING BORN AT BOLINGBROKE CASTLE

Bolingbroke Today Bolingbroke Castle was once a mighty fortress but it’s now a peaceful ruin in the care of English Heritage. Excavations have uncovered grassy mounds and silted moat, and has revealed the remains of the gatehouse, ramparts and four towers.

The Princes at Cranwell Air Force Base

Prince William, Harry and Charles have visited Lincolnshire. Will was awarded his pilot’s wings at Cranwell in 2008 following in his father’s footsteps, who completed his jet pilot training at RAF Cranwell in 1971 and his helicopter pilot training three years later.

King Edward VIII at Belton House...

King Edward VIII’s abdication in 1936 was associated with Belton House. Edward was king for almost a year until he decided to give up his throne to marry Mrs Simpson. During his reign, Edward’s Lord-in-Waiting and dear friend was Lord Brownlow, owner of his ancestral home Belton House. The king was a regular visitor and would visit with twice-married American socialite Wallis Simpson, whom he gave up his throne for. The disapproving British newspapers reported on the scandal in December 1936, so Edward asked his friend Lord Brownlow to escort Wallis to France so she could escape the furore. The Prime Minister at the time, Stanley Baldwin advised the king to abdicate, as the British public would never accept their king marrying a divorcee. Edward was made Duke of Windsor the following year and married Wallis in June 1937. Another royal to visit Belton was Prince Charles who stayed there for the duration of his advanced flying training at RAF Cranwell. The property is now owned by the National Trust.

One of Lincolnshire’s most beautifully presented quality pub restaurants is also one of the most recent additions to the county’s dining scene, at just 18 months old. But Becky Pinfold and Matt Kerekes have a well-proven track record in the trade... It’s really very good indeed. But surprisingly, Norton Disney’s Green man is still only 18 months old. This relatively recent addition to the county’s dining scene sits within a halfhour radius of Lincoln, and is convenient, too, for Sleaford and Newark.

its location in the leafy village might be one of the contributing reasons for its success, but it’s more likely that the reason the couple is doing such a roaring trade is the quality of the Green man’s food and the presentation of the place itself.

During our visit in mid-June, bright blue skies and warmer temperatures attended, my fellow diners had escaped the wrath of that weekend’s angry skies to dine in one of the 20 covers on the pub restaurant’s terrace. Becky and matt ran a pub restaurant in fulbeck and built up a very good reputation in the process before moving to Norton Disney to take on their first tenancy.

The place was a tired village boozer whose provision of food was limited to bar snacks. Becky & matt closed the place and embarked on a comprehensive refurbishment which meant the introduction of a new kitchen, coir carpeting and sage green walls. Stripped pine furniture and all of the cute, country decoration and finishing touches contribute to making the place look more like someone’s home, rather than a restaurant.

along with a new look came a new approach to food with menus of quality dishes bursting with flavours and utilising local ingredients. Everything is wellpresented, and well-executed, as well as being creative. >>

Becky is launching a snack menu as Pride goes to press, too, ensuring customers can take ‘gourmet’ burgers and fish & chips into the paddock for more casual dining, especially suitable if diners have children who want to be out in the sunshine running around, instead of being cooped up in a restaurant with grown ups.

The restaurant itself has 60 covers, and you’ll struggle to get in for Sunday lunch service without a booking. if anything the place could do with an expansion of its dining room to provide a few more covers, but the couple say, quite correctly, that they’d rather limit the number of seats and keep up the quality, rather than packing diners in. That quality in respect of the dining is provided by way of a six evening starter options including our pan fried scallops, as well as six slightly more formal à la carte dishes, and seven Pub Classics.

Daytime diners can order from a dedicated lunchtime menu and there’s a supplier-led specials menu, too, as well as a dedicated menu for desserts including the summer berry and sherry trifle served during our visit.

Local suppliers include ruskington’s mel Ward, whilst Winsters provides fruit & veg and though matt would doubtless prefer to bake his own fresh bread, with Navenby’s Welbournes down the road it makes more sense to capitalise on one of Lincolnshire’s best suppliers instead. To our mind, The Green man is as perfect a pub restaurant as you’d expect to find anywhere in the county. it’s deservedly busy all the time, but the team always has a smile on their faces and the food produced by matt and his brigade remains excellent. With an appreciation for local dining tastes, a down to earth menus that’s implemented so very well, and with a great setting, it’s a very ‘Lincolnshire’ place, definitely one we’re happy to recommend.

Inspired by the sunshine, we this month sought out dining at one of the area’s most compelling options for al fresco dining - only to find ourselves drawn into a conspiracy... if you can keep a secret, join us as we meet Julia & Robert Reid of Toft Country House Hotel... Shush! Don’t tell anyone. That was the message from the busy team at Toft Country house hotel near Bourne during our recent visit. They’re a close-knit team, describing themselves more along the lines of an extended family than workmates.

There are two husband & wife duos, and a mother & son working in the business too, so it’s no surprise the colleagues are so close. On the day following our photoshoot, the team planning was a surprise party for assistant manager Tom Niblock’s 30th birthday. he was helping head Chef ’s rachael horner and Craig Dempsey in the kitchen during our visit, and was oblivious to the preparations going on behind his back. it was a conspiracy we were happy to be a part of, and a secret we were happy to keep, but one thing we definitely can’t keep quiet about is the high standard of food, and the warm welcome you’ll receive at the place.

There’s a bar with 40 covers, a restaurant with 40 covers and an outdoor terrace serving a dual purpose as the 19th hole... and a place for diner’s to avail themselves of the fruits of rachael and the team’s labours al fresco, weather permitting.

Weather was certainly permitting during our visit, and in addition to secret birthday preparations, the team were gearing up for a wedding in the 180 capacity wedding suite. The team send about 50 happy couples off on the road to matrimonial bliss each year and could do more - they’re certainly in sufficient demand - but say they don’t want to become a wedding factory, instead >>

Diners can choose from seven starters, seven slightly more à la carte oriented Specials, plus four pub-inspired Old favourites and three grill options, as well as eight desserts. Toft is owned by robert and Julia reid, and the former is a bit of an aficionado when it comes to jams and chutneys. That’s why he creates all of the restaurant’s breakfast preserves from scratch. robert has form in the kitchen, with 40 years experience in the industry first as a publican then building Barnsdale Lodge with business partner Thomas Noel, before running Burghley house’s Orangery restaurant until 2011, then running the Jackson Stops, purchasing and renovating Toft house in 2009.

Today robert still cooks breakfasts, carves beef on the Sunday lunch trolley, and throws the odd hog roast or barbecue for his close-knit team, we well as tending the gardens, whilst Julia personally oversees every single wedding at Toft house.

from what we’ve observed, neither need to be in the kitchen whilst rachael, Craig and Tom are in there. We say that because the dishes for our photoshoot that emerged from the kitchen looked great and tasted wonderful.

first up was an anti-pasti platter ideal for the warm weather, and served with bread baked freshly in the kitchen. a barramundi steak was next, served with pea and dill puree with a sweet chilli duck breast alternative. Dessert was an absolute treat too, a summer fruit pudding with a Pimm’s twist.

Clearly the team works well together, and the place looks and feels great, with a relaxed feel to dining on the pretty terrace during the better weather. So with a great setting, a close-knit team, and with a willingness to make local ingredients central to a great dining experience, we can think of few restaurants that suit late summer dining as well as Toft Country house hotel… and we certainly won’t be keeping that a secret!

FRESH TROUT Cover Story - Eat the Seasons

A favourite with anglers, and a superb fish to serve smoked in summer salads, the earthy flavour of trout is a real treat, despite frequently being overlooked in favour of salmon. It’s this month’s recommendation for a superb summer salad, or handmade fishcakes the whole family will enjoy... Closely related to salmon, trout are mainly freshwater fish but there are different varieties such as sea trout which are salt-water dwellers, river trout which are freshwater fish and rainbow trout who hover somewhere between the two, spending a few years at sea before returning to fresh water to spawn. Rainbow trout has a slightly nutty, sweet flavour and tender flesh. Larger fish - 1kg or more - tend to be tastier.

Sea trout are brown trout that migrate, and whilst brown trout is indigenous to the UK, the most commonly farmed trout on these shores is the rainbow trout. Like salmon, farmed trout has a reputation for tasting bland compared to its wild cousins. Trout is not considered endangered though certain stocks are under threat. The Good Fish Guide claims that ‘buying organic farmed trout is the best choice.’ It also advises not eating sea trout during its breeding season, from November to March.

As with all fish, trout should be purchased only when fresh. To check if a whole trout

SMOKERIES To our mind, the best place to purchase smoked fish in Grimsby. Choose a dedicated smokehouse like Alfred Enderby, which sells smoked trout online at www.alfredenderby.co.uk.

is fresh, look at the eyes which should be clear and bright and the gills, which should be bright red. The older the fish is, the darker the colour of the gills will become. The smell of fresh trout shouldn’t be unpleasant. Fresh trout should have a natural slime and be firm to the touch.

There is little better than a whole trout doused in olive oil and wrapped in foil with some smashed garlic, lemon juice and herbs before baking – and it’s a great option for the barbecue or grill, too.

Dill and parsley are great herbs to serve with trout and wild rice, samphire and asparagus are also ideal accompaniments. Preparation Time: 30 Minutes Cooking Time: 15 Minutes. For the Salad:

Prepare a superb supper in just half and hour with new potatoes, a pack of green vegetables, a small jar of hollandaise and a few sprigs of mint. Boil and drain the potatoes, then slice, season and bake for 20 minutes, tip the vegetables in the centre and add the trout fillets before baking for a further 20 minutes. Pour over warm hollandaise and garnish with mint.

Trout Pâté

flake hot smoked trout and mix with sour cream, gherkins or capers and chopped fill then serve with warm pitta bread.

Trout with Creme Fraiche

roast trout with a little melted butter, 100ml creme fraiche and a bay leaf, with fresh chives and salt & pepper to season. Serve with cooked spinach and new potatoes.

16-20 baby leeks, trimmed 1 thick piece of Parmesan 1 medium sized bulb of fennel, finely sliced 4 x 125g trout fillets 25g (1oz) butter, melted ½ cucumber, peeled and finely sliced watercress sprigs, washed and dried salt and pepper

For the Dressing: 2 teaspoon Dijon mustard 1½ teaspoon cider vinegar 2 teaspoon soft brown sugar 1 teaspoon finely chopped dill

Pre heat the grill to high. Cook the leeks in boiling salted water for 2-3 minutes until just tender. Drain and refresh in cold water, then dry on kitchen paper. Shave some thin slices of Parmesan cheese and set aside. for the dressing; mix the mustard, vinegar, sugar and dill together in a small bowl and then gradually whisk in the olive oil until well amalgamated. Season to taste and then thin down with a little warm water if necessary.

heat a ridged cast-iron griddle over a high heat. Brush with a little oil, then place the leeks diagonally across it and grill them for slightly less than 1 minute. Brush the trout fillets on both sides with the melted butter and season well with salt and pepper. Lay the fillets skin-side up on a lightly greased baking sheet or the rack of the grill pan and grill for 4 minutes. remove the trout and gently flake into small bite sized pieces.

To serve, toss the leeks, fennel, cucumber and watercress into the dressing and arrange in four shallow bowls. Place the trout over the top and sprinkle with the Parmesan shavings, serve immediately. n

Cooking Time: 20 minutes. 280g pack trout fillets 400g potato 5 salad onions, chopped 2 tbsp capers, chopped 35g cornichons ½ x 20g pack dill, snipped 2 lemons, 1 zested and juiced, the other in wedges 1 tbsp olive oil 220g beans 150g baby broad beans

Preheat the grill Preheat the grill to medium-high. Place the trout on a foil-lined baking tray and grill for eight minutes. Set aside to cool, then thickly flake, discarding the skin.

in a large bowl, mix the mashed potato with the salad onions, capers, cornichons, dill, lemon zest and 2 tbsp juice.

We’ve seen few gardens quite so beautiful as the one that Linda Lloyd has been curating for the last 15 years. She and husband Jonathan are the third non-farming family to have looked after their Grade ii listed 17th century manor house with its immaculate cottage garden.

There’s a productive kitchen garden too, and whilst Linda says she has given up with tomatoes, the garden will still be yielding a wealth of soft fruits and salads over the summer months.

“There’s a walled area and a lawned area ideal for playing croquet during the summer months. The grandchildren love the garden and they’re always running about on some adventure. The house is located pretty much in the middle of the countryside, but we’re still just five minutes 76

“I can’t overstate the importance of planning the garden, and we spent a year, at least, sorting out overgrown hedges at the front of the house but also observing the plot and working out what would thrive...”

>> any gardener would admire Lucienne Bennett’s ability to grow just about anything in her garden, which sits on a fifth of an acre near Grantham. Lucienne is a true plantswoman, whose garden has been planned to perfection, but we’ve even more respect for her gardening talent given that she’s working on just about the trickiest plot we’ve ever seen.

With a 1:15 slope, and a natural spring rendering the west side wet, the east side dry, and the bottom of the plot boggy, it’s a difficult place to achieve greatness to say the least. arriving in the uK after meeting raf husband Neil in her native Netherlands, the couple have lived in Suffolk and the Brecon Beacons before settling into a fairly new property just a few miles from Woolsthorpe by Colsterworth.

in 2011 the place was little more than rough pastureland carved from a former ironstone quarry, but the couple took an entire year to plan their new project. instead of a continuous slope, the couple introduced a large curving stone wall separating the paddock into two parts.

a contemporary archway specially imported from the Netherlands was positioned to the east rather than in the middle, Lucienne says, to avoid revealing too much of the garden beyond before visitors have had a chance to step through the arch.

The couple were going to create a garden room but decided to retain their terrace instead and employ pots to divide the space up into ‘rooms.’ a herb border was heavy with the scent of marjoram during our visit, but also included thyme, fennel, garlic chives, oregano, bay and Globe artichokes which Lucienne regards as ornamental, rather than for cooking purposes, preferring to leave the buds to open into flowers. Within the border separating the upper and lower parts of the garden when visitors attend Lucienne’s NGS event in august will be many varieties of roses - Darcey Bussell, mayflower and Guirlande 98

d’amour, as well as dahlia (Bishop of Leicester; Blue Bayou) and other planting such as magnolia, clematis, and Veronicastrum virginicum ‘Diane’. The border itself is drier to the east and moist to the west given the presence of a natural spring. “i think one of the golden rules of gardening is to work with the plot as far as you’re able to do so,” says Lucienne. “You can plant acers in alkaline soil, for example, by digging out a quantity of earth, introducing ericaceous soil and topping up with nutrients when necessary, but it’s easier to know your soil and to work with it.”

>> To the bottom of the garden, where the water drains into heavy clay soil, the couple have dug out a pond area fed from the spring which dries out during late summer then fills again. Lucienne credits the pond for the health of her many hostas, enjoying the presence of plenty of frog spawn which eventually yields snail and slug-eating frogs.

a few of the hostas include hanky Panky, Blue mammoth, Barbara ann and Dream Weaver. Together with the gunnera and persicaria, the garden has a lush, leafy quality with plenty of different shades of green. We can’t work out whether it was luck or bad luck that as Lucienne was just beginning to work on the garden, a previously undiagnosed heart condition was discovered which

necessitated a year of recuperation. had it not have been spotted, the ramifications for the couple may have been very different, but with surgery successful, Lucienne carried on working on the garden and today she enjoys opening it regularly for the NGS. “it’s quite a lot of work to stay on top of, but i’m proud of it. NGS events are hard work too, but i love the enthusiasm for gardens that visitors have,” says Lucienne. We think that seeing the fruits of the couple’s labours are a must this month, we’d admire the garden if it were an easy plot, but to work with such a tricky patch really does deserve an audience, and the garden is, in our opinion, really worth a look!” n

heat of the harvest

NFU’s Alison Pratt, our farming correspondent, this month discusses what farmers are doing in the heat of summer; harvesting crops. August is a time for the entire farming family to come together and to help out, and it’s definitely a mad month... Harvest is upon us and in the busy weeks from now until well into the autumn, farmers will be dashing madly about to bring in the crops and make ready for next year’s too. i use the word madly advisedly as this time of year does bring a kind of madness.

The start of harvest is a bit like alchemy. it’s a combination of the ripening process, governed by the weather, the drying out of the straw and the grain, the decision whether to use a crop desiccant to kill off any troublesome weeds that could clog up the combine or spoil the crop quality and, of course, gut feeling.

The amount of work that has to be done at harvest and then to cultivate the land ready for the next crop, is mountainous and takes all the concentration and energy of the whole farming family, to complete. and harvest doesn’t just mean combining cereal crops like wheat and barley; we use the term to cover the full range of crops from lettuces to sugar beet and everything in between. That includes grass, a most important crop for our livestock and dairy producers who cut and conserve grass as hay or silage for feeding over winter. But for this month, we’ll concentrate on the cereal harvest.

This year’s spring weather brought interesting challenges and the knock-on effect of a cold, dull april, a very dry winter and spring and some sharp late frosts will be evident in the reduced yields in a number of different crops.

having said that, it’s surprising how resilient many food plants are and how well they cope with drought, heat, torrential rain and lack of sunshine. So despite a shaky start to the growing season, farmers’ expectations of yield and quality are not as bad as they thought in early may. You may have heard this before, but farmers are the epitome of optimism. Our industry has

The old-timers used to say that if a crop looks ready, go away for a week first, but now science has taken over and no self-respecting arable farmer goes anywhere in the week before the combine rolls, without his moisture meter. to have a positive outlook on life as there is a lot of hope and hard work invested in a wheat field planted in September, nurtured and cared for over winter and all through the following spring and summer towards harvest.

Planning a crop begins months before sowing; for example a field of wheat will be part of a farm’s arable rotation; different crops are planted in a field over a term of three, four or five years. Which variety to plant for what end market are key decisions to make many months and years before the wheat is even in the ground. So, back to the madness of a cereal harvest, preparing the machinery and grain stores, ensuring the combine is clean and maintained, employing enough staff to drive the tractors and grain trailers and of course, watching the weather forecast in an effort to predict the date the combine rolls into the field for the first time.

This gadget measures the amount of moisture in a sample of grain because when it comes to storing grain, the wetter it is, the more problems it causes.

most grain stores require grain to be stored at about 15% moisture because, if it’s any wetter it will heat up and the quality will decline. it could even go mouldy and become unsaleable. The moisture reading is just one of the many scientific measurements farmers have to make to ensure that the wheat they produce for you is of the best quality and fit for its end use.

So when you’re out and about this harvest time, and you see a combine working or are following a grain trailer back to the farm, just ponder for a moment the science of food production. it’s not just about the soil, the sun and the seed, but a good spoonful of research and development has gone into making our golden grains grow, ready to be made into your bread, breakfast cereal or digestive biscuits! n

The Heart Grows Fonder Absence certainly made the heart grow fonder for this month’s featured couple as we join Ollie and Leanne Manning to find out about their August wedding... It’s typical isn’t it? You meet the man of your dreams, fall in love and then he clears off. Well, for six months at least.

On the bright side, the old adage of absence making the heart grow fonder was certainly applicable in the instance of Ollie manning and Leanne hancock. The couple married in august 2016 at a wedding held in Kirton, just a few miles south of Boston, and at The Poachers Country house hotel. Ollie is a royal marine serving in the rank of Lance Corporal, and when the couple met in march 2011, he was just about to go on tour to afghanistan. Naturally his friends wanted to throw him a leaving do but an

unexpected leaving gift came in the form of a chance meeting with future wife Leanne.

together ever since, purchasing their first house in 2014.

Leanne’s arrival in Ollie’s life, however, did have the advantage of helping him through his tour of duty, giving him something to look forward to at the end.

“i wanted a traditional white wedding but we also wanted to bring a military theme into the day too,” says Leanne. “We though we’d have some fun with it, like a ‘half and half ’ cake, and bright colours for the flowers to match Ollie’s dress uniform.”

“We had a week or two together and were really getting on, it was frustrating that he was leaving.”

he was due to be away for six months but the unthinkable happened when Ollie was injured by a grenade blast and suffered shrapnel wounds to both legs, returning home to convalesce in august 2011 instead. The two were reunited and have been

Back to the 1940s in Boston Vintage machinery, music and afternoon tea in Central Park

Boston was back in the 1940s last month as the town’s Central Park hosted a 1940s fair complete with vintage cycles, tractors and vehicles. around a thousand visitors enjoyed revelling in the era, and alongside the sights of the decade, there were plenty of sounds too,

thanks to the Kirton Brass Band, Boston Jive, and the area’s 1940s singers.

in addition, retro stalls and memorabilia, plus a 1940s parlour provided the chance to take home a little piece of the decade. an afternoon tea tent and vintage fair were enjoyed by all too.

With a patriotic flypast by the BBmf’s Dakota and re-enactment displays, all of the decade’s highlights were present for crowds to enjoy. The event was organised by frances Taylor and promoted by Boston Borough Council; www.boston.gov.uk

If practical demands are hindering your ability to treat yourself to a sports car, Mercedes has the answer; its E63AMG monster, has five seats, a positively enormous boot, and performance that’s nothing short of firebreathing... Words: Rob Davis.

It’s sad, but true. We all have to grow up sometime. But if the fire hasn’t quite gone from your belly, and you still desire cut-throat handling and beastly performance, despite needing to transport kids and clutter, mercedes Benz has the answer. The mercedes amG E63 4matic+ Estate is the latest in the company’s lineage of cars which combine the executive qualities of mercedes’s posh E-Class, with an absolutely huge boot and a V8 engine which will leave most dedicated sports cars for dust.

You can transport the whole family with five decent size seats and two additional rearfacing seats available as an optional extra, whilst a 640 litre boot expands to 1,820 litres with all seats folded. To put that into context a ford focus boot is just 316 litres!

Practicality is assured then, but what about performance? That comes from a 4.0 litre V8 unit with 612hp and 850nm torque. Top speed is ‘limited’ to 155mph unless unlocked

by an optional amG Driver’s Package, whilst 0-60mph takes 3.6 seconds. again, to put that into context, a Porsche 911 Carrera takes a positively lethargic 4.6 seconds.

all mercedes E-Class models are wellequipped, but this flagship model adds to the impressive roster of standard equipment with only a ‘Premium’ package - Keyless Go and panoramic sunroof - and Driver’s assistant package (comprising adaptive cruise) on the options list. also standard is four wheel drive and a limited slip differential, alongside air suspension and a nine speed automatic gearbox all of which make driving a cinch. There is, of course, a drive control switch too, which dials back the car’s ruthlessness and makes a concession towards comfort, as well as air suspension for balancing heavy loads.

Whilst the car is within sniffing distance of a six figure price tag, it’s easier to justify than most sports cars. With plenty of room for the family, and a big boot, the amG isn’t just a sports car, it’s an executive car that’s usable day to day too.
