January is a strange month. Festive celebrations have come to an end, tricky New Year’s resolutions have been set and there’s an eery quietness to the county. However, there are many ways to make the most of that as this edition aims to prove.
Beat the winter blues and perhaps work on your New Year’s resolution by getting out and about on Catherine Smith’s suggested local dog walks. With maps and descriptions, her book is the ideal guide to discover Lincolnshire with your trusted four-legged friend. Dr Chris Andrews from the RSPB suggests birds to look out for on your walks too later on this edition.
We also feature a number of events in this edition to remind us of the joys of Christmas and the celebratory charity balls that were such a success in 2017, and if you’re celebrating Burns’ Night, read about the local family that produced the first whisky in England for over 120 years. If you still have some New Year’s celebrations to come, Rachel Green offers dinner party advice.
This month has also yielded a flurry of excitement as we venture out into the county to hand out our Good Food Awards. You’ll remember that we asked our readers to nominate their favourite restaurants, coffee shops and to nominate their local ‘food hero,’ so we’ll reveal who you’ve voted for later on in this edition. Many thanks to all who cast their vote and helped to make this the most successful series of awards in the county! Our best wishes for a wonderful month,

Lincoln Cathedral ‘Best in Country’ LINCOLN CATHEDRAL CROWNED WINNER IN TWITTER’S CATHEDRAL CUP LINCOLN One of our county’s most famous attractions was appreciated nationwide recently during the Cathedral Cup! It’s loved by many but now it’s official; Lincoln Cathedral is the cathedral of all cathedrals. It has some tough competition on the Twitter poll, going up against the likes of York Minster, Durham Cathedral and Bristol Cathedral. The results were rather close; 27,657 people voted, and Lincoln and York’s Cathedrals were neck and neck. Bristol finished with 6% of the vote, Durham had 26% and York and Lincoln both finished with 33% each, but Lincoln just beat it in numbers. The Twitter user who ran the poll is passionate about architecture and with only 1,613 followers, he did very well at publicising the cathedrals with 549 retweets and 920 likes on the poll.
Lincoln Cathedral is obviously delighted with the results and will host a thank you event for everyone who voted. “We did it! People of Lincoln, you are all incredible! Thank

LINCOLN For those who work tirelessly behind the sporting scenes in Lincolnshire and encouraged people to be active have been honoured at the recent Lincolnshire Sports Awards 2017. Special guests at the awards, held at the Lincolnshire Showground included Flight Lieutenant Chris Lyndon-Smith and Flight Lieutenant Dan Lowes of the Red Arrows as well as Lincoln City managers Danny and Nicky Cowley. 17 trophies were on offer and the special guests watched on to see which of the shortlisted

A MORELET CROCODILE JOINS ARK...
There’s a crocodile in town! Becky the Morelet Crocodile has just joined the Ark Wildlife Park in Stickney after relocating from her home in kent. Becky is a five foot long Mexican crocodile, and is fed a diet of fish, chicks and rats. The animals can grow up to ten feet long but females are usually a lot smaller. They’re only found in Mexico, Belize STICKNEY
and Guatemala in fresh water of their Atlantic regions. She’s settling in well, and is already enjoying sunbathing underneath the uV lamps. They can live up to 60 years and in the wild they can give birth to between 20 and 48 crocodile chicks per litter but unfortunately many of these don’t survive. n Visit www.arkwildlifepark.co.uk or call 01205 481468.

New Marks & Sparks open in time for the festive season
LINCOLN A brand new Marks and Spencer Food Hall opens as Pride goes to press on Lincoln’s Tritton Road. The shop is opening just in time for the festive season. The finishing touches have been added and the shop opens at the start of December. It comes after the Food Hall on Burgh Road in Skegness opened at the start of November. It differs from other Marks and Spencer stores in Lincoln, offering just food products. The 7,500 square feet store offers thousands of food and drink products, as well as a 42-seat M&S Café for shoppers to relax in. n For more information, please visit the website www.marksandspencer.com.
LINCOLN The creator of the International Bomber Command Memorial, set to open in January, has sadly passed away before the open day. Worth came from a farming family and gained experience across the world in the arable sector before returning to work on the family farm. What defined the last years of his life was realising his vision to create a lasting memorial to RAF Bomber Command in Lincolnshire. What started for him as a county memorial grew into something international. The International Bomber Command Centre in Lincoln is Tony’s lasting legacy.

Lincolnshire has ‘Excellent’ Coast
THE LINCOLNSHIRE COASTLINE HAS SOME OF THE BEST BATHING WATERS SKEGNESS Skegness as well as all nine of Lincolnshire’s bathing spots have achieved the highest rankings of either ‘Good’ or ‘Excellent’ in official statistics. This means Lincolnshire has some of the cleanest and safest waters in the country to offer, as well as across the whole of Europe too. The bathing waters to win were Skegness, Ingoldmells South, Chapel St Leonards, Anderby, Moggs Eye, Mablethorpe Town, Sutton-on-Sea and Humberston Fitties. All of them received the highest grade and only Cleethorpes had the second-best rating of Good. These good scores were reflected across the whole of the country too. 92% of England’s 413 beaches achieved ‘Good’ or ‘Excellent.’ Nearly 99% met the tough standards to reach at least ‘Sufficient’ too. “Maintaining such high water quality standards at English

DONNA NOOK As Pride goes to press the numbers are just over 1,800 seals as the annual pilgrimage for these adorable creatures has begun. The warden reported in November a total seal count of 680 but this had risen to 1,791 by the end of the month, made up of 452 bulls, 812 cows and 527 pups. The first seal pup to be born this year was on Friday 13th October, the earliest ever recording by nine days. In 2016, Donna Nook saw 1,959 recorded pups born and no fewer than 72,000 people came to see them. n

Spalding Charity Ball
for The Juvenile Diabetes Research Foundation
Last month at the Castle Sports Centre in Spalding, over 200 people attended the town’s sixth annual JDRF Ball, raising money for people living with Type 1 diabetes.
They’ve raised £80,000 since the ball started six years ago. The theme this year was ‘Wild
West’ complete with cowboy hats and other approporiate props. The event included a three course supper, raffle, auction and featured TV talent show finalist Lisa Sampson. The event was designed to highlight the medical condition which funds research,
campaigns and offers support to sufferers, whilst attempting to address misconceptions such as the idea that the condition is linked to diet and lifestyle. n For more information about the charity, please visit www.jdrf.org.uk.

WALKING IN THE COUNTY
Cover Story:
Dog Walking Through the Seasons Get out and about in the county this month with Catherine Smith’s Dog Walker’s Guide. Catherine has compiled a book of the very best walks to go on around Lincolnshire throughout the year. From the Wolds to woodland walks, she’s covered everything that our great county has to offer for one man (or woman!) and his dog... Walking is always appealing at this time of year. After layering up with scarves, gloves, coats and hats, you step into your wellies, whistle for the dog and venture out.
CATHERINE’S DOG WALKS
After taking in beautiful sights of the frosty countryside and letting the dog run wild through hedges and woodlands, head back home for a steaming mug of hot chocolate to drink by a roaring fire.
Coastal: The Saltfleetby and Theddlethorpe Nature Reserve and Dunes.
Wildlife: The Vale of Belvoir which features Belvoir Castle and Woolsthorpe Locks.
England’s Chief Medical Officer believes that if a medication existed which had a similar effect to physical activity, it would be regarded as a wonder drug or a miracle cure.
Woodland: One of Catherine’s favourite winter walks is Chambers Farm Wood. It has a path to follow too.
With all of that in mind, we visited the author of Lincolnshire: A Dog Walker’s Guide, Catherine Smith recently. Catherine loves walking around the county with her husband, children and her dog at all times of the year.
“I started walking when my children were young and we had two dogs, one of which has recently passed away,” says Catherine. “My husband loves the outdoors and walking was a way of keeping the dogs and the family healthy and getting outdoors.”
“I had the idea to write a book after we’d been walking around Lincolnshire for years. We’d plan walks and read maps and I just thought it would be nice to share with others.”
Wolds: Burwell and Muckton Woods just south of Louth.
From their home in Grantham, Catherine and her family enjoy walks as far as North Lincolnshire, embracing countryside life and what the entire county has to offer. “After going on many, many walks around the county, I definitely have my favourites, and these are featured in my book. Whatever interests you, there’s a walk for you, whether it’s history, wildlife or just beautiful views. All are dog friendly and there’s usually a warm and welcoming pub nearby.” >>
Fens: A river walk by Surfleet Seas End. Surfleet’s Glen Park is also a good place to let the dog off the lead for a good run. Historical: Ostler’s Plantation and the Dambusters at Woodhall.

The Lincolnshire Wolds has so many beautiful views, but this woodland walk is our favourite in the area...
Wolds A village trail in Burwell Woods and Muckton Woods, Louth
This hilltop area offers the benefit of stunning open views and the chance to explore the outskirts of arable fields and woodland. Pass the church on your left (1) and go up the hill. Follow the field edges (2) and public footpath signs (3) until you enter Burwell Wood (4).
As you exit the wood (5), there is a public footpath sign through the arable field and at the end you’ll reach a stile. Go over it and you’ll pass a white house. You’re now in Muckton (6). Go through the village and turn left at the T-junction. Follow the track around Muckton Wood (7) and enter the Holt (8). Leave the wood, walk alongside the arable field (9) and turn right to go back into the village (10). Then just retrace your walk or follow the road to get back to Burwell. Terrain: Hilly and uneven in places. Nearest pub: The Stags Head Inn in Burwell. Distance: Six miles. Other details: Two stiles and cattle at point 5 on the map. Historical
Ostler’s Plantation and the Dambusters, Woodhall Spa
Woodhall Spa’s Ostler’s Plantation is a good walk if you don’t want to follow a map and want to learn a little bit about history too. It’s a beautiful walk through woodland near the pretty little village of Woodhall Spa. Follow the walk with a cup of tea in the village’s many cafés or a film at the Kinema in the Woods perhaps. Ostler’s Plantation was once an airfield used by the Dambusters squadron in WWII. In 1942 RAF Woodhall Spa was built immediately to the south of the woodland with many of the bomb dumps, aprons and other associated buildings being built into the edge of the woodland. Much of these still remain as tracks and overgrown ruins. There are various paths to follow through the woodland and it’s a popular spot for dog walkers. Let your dog free on this walk too as the path follows Kirkby Moor Nature Reserve.
Terrain: Easy flat trails. Nearest pub: There are three pubs nearby all with beer gardens in the village of Woodhall Spa Distance: Two and a half miles. Other details: Simple walk, no stiles, no cattle. Use Catherine’s book if you want to follow a map.

Fens A River Walk by
Surfleet Seas End, Surfleet
If you want to walk in the Fens, Surfleet is the perfect village to do so with the River Glen running through your walk. There are flower filled meadows for your dog to run loose, and three dog-friendly riverside pubs. Start at the Mermaid Inn, and follow the Brown Fen Waterway Trail (1). Follow the river’s edge until you reach the Riverside Pub (2) and you’ll reach a bridge for the A16 (leads on!). use the underpass and stay to the far left of the golf course. Woodland Chambers Farm Wood and Butterfly Meadow near Wragby
Opposite: The beautiful views you can see at Surfleet Seas End.
This is a great walk for nature lovers too, and Catherine’s favourite. There is a meadow that attracts a variety of butterflies nearby. There’s also a dedicated car park to the trail (1).
It’s a very simple trail to follow, and make sure you go through Little Scrubs (2). Go in spring and summer to see the butterflies. There are animal sculptures en route (3). There’s a Y-junction here so take the smaller path into the woodland (4). After this, just follow the path around the Red Trail to points (5) and (6) on the map. Now follow the ‘Dogwalkers’ Path’ through an opening in the enclosed woods away from the paths (7). Follow this until you reach the car park at the end.
Terrain: Flat and even. Well maintained paths. Nearest pub: The Riverside Inn, Southrey. Distance: Just over three miles. Other details: No livestock, no stiles.

HISTORY
The First English Whisky IN CELEBRATION OF BURNS’ NIGHT THIS MONTH, WHEN WE CELEBRATE EVERYTHING WHISKY, POETRY AND HAGGIS, WE PRESENT ENGLAND’S FIRST WHISKY DISTILLER FOR OVER 120 YEARS. THE NELSTROP FAMILY HAS ALSO BEEN GROWING AND PROCESSING GRAIN FOR OVER 600 YEARS... If you’re missing Christmas and New Year celebrations, you’ll soon have another excuse to have a party. Burns’ Night on the 25th January celebrates the Bard of Ayrshire Robert Burns. But we’re celebrating something else too this month; England’s first whisky distillery for over 120 years. Scotland has stolen the limelight when it comes to producing whisky but one Lincolnshire family decided to change that.
The Nelstrops have a very long farming family history originating some 600 years ago; in 1335 William Nelstrop was recorded as farming in Yorkshire. In 1772 Joseph Nelstrop started a mill in Stockport where it is still run by the Nelstrop family today. A branch of the family moved to Lincolnshire to farm in 1881 and they’re still at the same farm.
James Nelstrop was born in Lincolnshire into the farming family. James quickly moved away to start what would become an exciting and innovative life in farming and business.
To say he’s had an exciting life is quite the understatement; James has travelled around the world in true Forrest Gump style, influencing so many people’s lives and achieving so many great things.
These travels took him to Australia where he introduced direct seed drilling to the country and Russia where he carried out various rural reconstruction work as CEO of the Nuffield Russia Trust. They also took him to Norfolk where he introduced the first centre pivot irrigation system in England and then to Lakenheath,
WHY WE CELEBRATE
BURNS’ NIGHT Burns’ Night is a way to celebrate the life of the 18th century bard and Scotland’s most famous poet Robert Burns and it falls on his birthday the 25th January each year. The tradition started a few years after the poet’s death in 1796, when his friends commemorated his career on the date of his death 21st July each year. So began Burns Supper, and more than two centuries later it is has become a nationwide event with recitals of the poet’s works and haggis dinner because of the poet’s Scottish connection. His most famous works include Auld Lang Syne now sung to celebrate the New Year.
turning a worn out vegetable farm on the fens into the first Countryside Stewardships Scheme Farm for organic sheep and cattle and to encourage the wild bird population.
It was inevitable that, on turning 60, he did not wish to retire but to do something very different, tied into farming.
With his son Andrew, the two decided to investigate a subject close to James’s heart; whisky production which had stopped in England over 100 years ago. The best barley is grown in Norfolk and the Breckland water is superb. Several concepts were considered, a great deal of research was done in Scotland, Ireland and Wales.
In October 2005 a planning application was submitted with approval granted in January 2006 just in time for Burns’ Night! Although the initial idea was for a micro distillery - there were several micro breweries in the area at the time - customs and excise wouldn’t consider anything smaller than 1800 litre stills which is larger than some of the distilleries in Scotland.
So, in a field James owned down by the River Thet, the footings were dug and the building work began with Andrew at the helm as main contractor. Andrew sorted the

helm as main contractor. Andrew sorted the planning, design and all structural work, with his own building team working on the project, while James took responsibility of water, engineering, logistics and maturation warehouses.
The family were very fortunate that Iain Henderson a distiller of some note from Laphroaig and Ardbeg, although ready to retire, was talked into coming along to help get them going. Iain spent 18 months helping to get the distillery started and training staff, and also getting the first 12 months of production into the maturation warehouse. In December 2006 the family were able to make the first 29 barrels of English whisky and by August 2007 they had opened to the public with a visitor centre, fantastic whisky shop and tours.
His Royal Highness Prince Charles officially opened the distillery in 2017 as seen below with James Nelstrop to his left and Barbara, his wife to his right.
Iain has now retired again, but before he did, he spent four months training David Fitt, a brewer from Greene king to take over. David has been chief whisky maker since 2008 and as well as overseeing all the production, he also ensures the maturation and bottling run smoothly. David has a unique acute sense of smell and taste which is allowing the creation of the finest whiskies now being produced in the uk. Some of the unique whiskies produced by David and Iain won’t be released for more than 10 years.
The company now produces their own Sherry Solera and both blackberry and sloe whisky liqueurs. The family also started making cream liqueur which was changed to Norfolk Nog before Christmas 2014.
In 2009, exports started with shipment to Japan. They now export to Canada, Australia, New zealand, Taiwan, China, Sweden, Belgium, Denmark, France, Holland, Germany and Austria. In 2010, sales started into the major retail outlets and the unique M&S English Whisky.
Since the original distillations back in 2006, they have now made nearly 3,000 casks which are all maturing nicely in the warehouses. The distillery creates both unpeated and peated whisky, as well as having a rolling program of cask trials. In 2010 James officially retired, although still very much involved in the business. Andrew married his wife katy in 2012 and gave James a granddaughter in 2013.
Sadly James Nelstrop died aged 69 in 2014 but he lives on through the legacy he’s left, through his family and his truly incredible story. n

LOCAL PEOPLE
The Ballet Dancer Local People:
As a focus on the incredible people our county has to be proud of, this month we visit Rae Piper to see what it takes to become a professional dancer. Rae is the Co-Artistic Director of Chantry Dance Company in Grantham, after a long career performing on stage in London’s theatres and opera houses across the globe... Words: Tilly Wilkinson. Main Photo: Dani Bower.
The way a ballet dancer glides around on a stage is so delicate and precise. It’s captivating to watch a ballet, and they seem to make it look effortless. Of course, ballet is most certainly not effortless. What each of the dancers on stage has to go through to get where they are, and the training and rehearsing they have to do before a show is immense. That’s never been more true for a dancer than Rae Piper, the Co-Artistic Director of Chantry Dance Company in Grantham.
Rae’s work is broken up into three categories within Chantry Dance Company. First of all, the company performs shows and tours across the country, with Rae and her partner Paul choreograph many shows for other companies too, as freelance choreographers.
“In addition to being a dancer, I’ve performed as an actor, acrobat and contortionist to keep working in the profession...”
Second of all, the company has a vocational school associated with it, which offers full-time training for budding young dancers that are looking for a career in dance.
Finally, Rae also does a lot of freelance work too, performing, choreographing, teaching, acting and even singing. At the age of nearly 40, Rae has had a very long career as a dancer - a professional should expect to start dancing from the age of 19 and finish their career by around 30 - but it has taken a lot of perseverance and strength to get where she is now.
“I followed a very unusual path to become a professional dancer,” says Rae. “I went to dance school for ballet, modern and acrobatics from the age of seven and this continued throughout school. I’m originally from Bristol.”
“I was very academic at school, and I finished with straight A’s at A-level. I was offered a place at Cambridge university to study Classics, with my father’s ambition for me to eventually become a lawyer. However, this was my father’s dream - not mine.”
meet the DANCER RAE PIPER, ARTISTIC DIRECTOR Experience: Trained at Acrodance 2000, performed in the West End, at Sadler’s Wells, the Royal Opera House and across the globe, and has experience as an acrobat, singer, actor and contortionist. Philosophy: Stay strong mentally and physically. If you want to succeed and you’re passionate, never ever give up.

“Traditional ballet follows a set of rules whereas contemporary ballet allows for a more flexible way of expression...” “Just two weeks before I was due to start Cambridge, I told my parents I wasn’t going to go; that instead I was going to London to follow my dream to become a ballet dancer.”
“Needless to say, this didn’t go down very well! My mother was supportive but my father was furious, so much so that I wasn’t welcome at home anymore. So at the age of 17, I went to follow my dream in the big city. I lived in a hostel run by nuns and worked through the night to afford the dance classes I attended in the day, at the likes of Pineapple Studios and other big studios in London.” “While other dancers - the competition - had three or four years of professional training in dance colleges and schools, I had to condense mine into a year. It was incredibly tough, but I was following my dream so I was going to fight like mad for it.” “In some ways, I’m happy I had to enter the profession in an unconventional way. I had worked as hard as I possibly could and I had been forced to develop mental strength and huge amounts of persistence.”
After a year of living in a hostel, working day and night to follow her dream, Rae started auditioning for roles, up against very prepared and polished students. “I gained a role in a musical in the West End where I performed as a featured vocalist and dancer which was just incredible; this was a highlight of my musical theatre career.”
As well as her work in the West End, Rae has had roles at the Royal Opera House, at, at Italy’s Rome Opera House, various cruise ships and Sadler’s Wells in London.
“My proudest achievement and a turning point for me was coming onto the stage as a soloist contemporary ballet dancer at Sadler’s Wells in front of thousands of people. I felt like I had made it and proved all of those people wrong who didn’t believe in me.” 36

Chantry Dance COMPANY THE THREE SECTIONS OF WORK YOU CAN EXPECT FROM RAE AND THE TEAM
Performance
CDC’s debut performance was on Sadler’s Wells’s main stage, within three months of the company’s formation. They employ experienced professionals, preeminent in their chosen fields, which ensures the high quality, and tour the uk in autumn each year. “The driving force behind what I do is taking an audience away from reality for a while. After having performed in many areas of dance, contemporary ballet was my favourite genre, and I love seeing audiences enjoy this style. I love introducing them to contemporary ballet if they haven’t seen this style before, and changing negative opinions to positive viewing experiences.” After watching Rae practice with her partner Paul, the other Co-Artistic Director of the company, at the studio in Grantham, I found it fascinating to discover the difference between traditional and contemporary ballet.
“Traditional ballet follows a regimented set of rules,” says Paul. “If you want to do a pirouette, there is only one way of doing so and you have to be very exact with where you position your feet, hands, your stance.”
“With contemporary, you can express yourself differently; there’s more freedom in the way you move - although you have to have that regimented ballet training as a basis in order to do contemporary well.” Professional contemporary ballet dancers have to go through one and a half hours of warming up before every rehearsal and training can be very physically testing.
“You’re putting your body through something that isn’t necessarily very natural so yes it can be painful,” says Rae. “You have to push yourself every day. You have to be focused and disciplined but safe and sensible too. One injury can stop you dancing for months.”
“In my career, I’ve had to have operations on my toes, knees, shoulders, on my back and I’ve had a broken foot too! You have to keep fit and keep your stamina up so even if you can’t dance for a while, you have to be doing other forms of exercise everyday.” “It’s about having a positive mind. There is no room for defeatism in ballet. The way to ensure a long career is being optimistic, strong, passionate, never giving up and being open to diversity. I’ve worked as a singer, contortionist, acrobat and circus performer in between dance roles to survive.”
Rae and Paul started the Chantry Dance Company in 2011. Its associated school, Chantry School of Contemporary & Balletic Arts, offers the only vocational Diploma course in dance of its kind in the area and people travel from across the globe to audition. This success story is truly inspirational and we wish Rae and Paul and the company every success in the future.
Outreach
The company’s outreach work aims to bring dance performances to those who might not have the chance to see it, which includes the elderly and sick, or those in prison. They create dance for these groups to participate and perform in too.
Education
Chantry School of Contemporary & Balletic Arts is a school that offers a full-time vocational training course for students wishing to pursue a professional career. Graduates of Chantry School’s three year Diploma Course are always invited to audition.

GOOD FOOD AWARDS
We asked our readers to nominate their favourite dining establishments and to name Lincolnshire’s Food Heroes... the results are in! We offer our congratulations to all of our winners, each proudly proving Lincolnshire’s reputation as the county that feeds the country... Congratulations to the winners of our 2017 Restaurant of the Year Awards. Once again we’ve asked the county’s diners to nominate their three favourite restaurants, to celebrate daytime dining by naming a coffee shop or bistro, and to suggest a local ‘Food Hero.’
Earlier this year, we visited Rachel Green, Lincolnshire’s celebrity chef, to see how she’s managed to get to where she is now and what it’s like working alongside some of the best chefs in the country. It seems her story was well regarded by our readers, as they nominated her as our Food

Hero of the Year in 2017. Gary Simpson of Simpsons Butchers was also voted as a Food Hero, a superb local butcher based in Sleaford and other towns across Lincolnshire.
The final Food Hero to take home an award was Neil Curtis from Curtis of Lincoln. The bakery is famed for having 200 years of experience behind it providing Lincolnshire produce in over 20 stores across the county.
Our winners are the result of reader votes, with no advertising bias, and for our flagship award, the winning three restaurants will come as little surprise to those who appreciate quality dining. The George of Stamford, the Lincoln Hotel and the Red Lion at Bicker came out on top.
We’re especially pleased that our top restaurants each share a commitment to quality whilst retaining their own unique and distinct style. 43

The George of Stamford is famed for being an exceptional place to dine and the restaurant is often fully booked especially at this time of year. Sunday lunch is very well regarded in the county, as the enormous rib of beef is served at your table by head chef Paul Reseigh in a silver cloche.
The oak-panelled dining room and champagne bar is also the ideal setting for a traditional English hotel.
For the Lincoln Hotel this year, fine dining is something that Green Room does very well indeed, but for diners seeking something more casual, they can now dine at Bar ‘67.
This casual offer has really improved the services the Lincoln Hotel can offer, and has become tremendously successful as this award goes to prove. Our three coffee shops and bistros recognise excellence in respect of daytime dining. It feels very unfair to refer to Abbey Parks as 44

a mere coffee shop, as its remit goes beyond that, with an exceptional dining provision.
Equally, Doddington Hall offers splendid dining service, a very good selection of cakes and the chance to experience the stunning hall and gardens of Doddington Hall, not to mention the farm shop’s wealth of tasty Lincolnshire provisions.
Meanwhile, quality daytime dining is assured on Lincoln’s main High Street at Stokes High Bridge café. It’s undisputably a café with a traditional service and style from the Tudor era.
The café sits on the oldest bridge in the whole of the country that still has buildings on it, and the coffee is widely regarded
as some of the best coffee Lincolnshire has to offer. They provide coffee to various events and hotels too. Another year over for Lincolnshire Pride’s Good Food Awards, and we’ve seen an unprecedented amount of votes more than any other year we’ve been running the competition. We would like to thank everyone involved and congratulate our winning reader who will enjoy a dining out experience at all of our partnered restaurants for the awards.

AEY’S AUTHENTIC THAI, SKEGNESS
Warming up for
WINTER
The only Thai restaurant in Skegness has just opened its doors. Aey Tucker and her husband David are providing authentic Thai cuisine to diners across the area. Warm up your winter blues with a visit to the restaurant this month... Words & Images: Tilly Wilkinson.
January is a time for change. As you head into the new year with a ‘new you,’ experience a new kind of cuisine in a new restaurant that has just opened in Skegness. David Tucker, the owner of the restaurant, was also seeking change. After a long career in IT project management, he fancied a career change. With his experience in management and his wife Aey’s experience in cooking Thai food, they decided to open a restaurant together. “I’m originally from Somerset and have also lived in Minehead, a town not too dissimilar to Skegness, also home to a Butlin’s,” says David.
“Aey is from a town in the north east of Thailand. After we met, we visited Thailand and I just fell in love with the food there.”
“AEY’S AUTHENTIC THAI IS THE ONLY THAI RESTAURANT IN SKEGNESS. IT’S QUITE NICHE BUT THAI FOOD IS GROWING IN POPULARITY...”
meet the CHEF AEY TUCKER, AEY’S AUTHENTIC THAI, SKEGNESS
“In Thailand, they don’t have set meals as we have in the uk. Instead, they eat when they’re hungry. That means there is a lot of quick and easy street food available. This is really delicious and the inspiration for our ‘Street Food Wednesdays.’”
David and Aey talked about opening an authentic Thai restaurant in the summer of 2016. They chose Skegness as David’s daughter-in-law lived in Lincoln, it was a similar coastal town to what he was used to, and there was no competition in the area; Aey’s is the only Thai in Skegness.
“It’s quite a niche market, but Thai cuisine is really growing in popularity in the uk.
Signature Dish: Aey’s signature dish is ‘Aey’s special chicken and cashew nuts’ and it’s what I would recommend the most. Favourite Dish: “My favourite Thai dishes are really hot chilli ones. I love papaya salad. David prefers my Gang Panang Curry cooked with prawns!”

Many niche cuisines from the likes of China, India and Greece have unfortunately been westernised, which is why we’ve called ourselves an authentic Thai restaurant. We serve proper Thai dishes, offering people something unique to experience.” For new diners who have yet to enjoy the excitement of Thai culture, David recommends the Gang Massaman curry.
It’s a sort of coconut stew with bean shoots, onions and crunchy vegetables with a really fresh taste. Alternatively, try the slow roasted duck in a tamarind sauce. “I would also recommend a jungle curry at this time of year; perfect winter warmers!”
OPEN FOR FOOD Open Everyday from 11am till 10.30pm.

on the MENU FROM THE MENU AT AEY’S AUTHENTIC THAI IN SKEGNESS
Starters
Mixed starter platter with chicken satay, spring rolls, prawn toast and a selection of Thai sauces, £6.50. ‘Goong Hom Pha’ Deep fried marinated king prawns wrapped in pastry and served with chilli or plum sauce, £5.50.
Soup
‘Tom Yam’ clear hot and sour soup with lemongrass, kaffir lime leaves, Galangal, mushrooms and chilli and meat or seafood of your choice, £4.50 - £5.75.
Main Courses
“We offer a very personalised and friendly service,” says David. “We talk our customers through the menu, find out how hot they like their food and make sure they walk away knowing a little more about Thai food and its delights.”
The restaurant’s official opening was on ‘Thai Forks Night’ on the 5th November and saw the restaurant fully booked for the evening. There are 34 covers but it has the potential for 42. The team consists of David, his two sons, six waitresses and potwashers and three chefs all from Thailand including Aey.
“We’re currently trying to secure planning permission above the restaurant on the first floor for more restaurant space and a private dining area.”
In addition to dining in the restaurant, you can enjoy home delivery service and the takeaway service Aey’s offers. What’s so great about this brand new restaurant is its opening hours. You can enjoy unique and delicious Thai cuisine from 11am - 10.30pm
seven days a week as the restaurant aims to become more well known in the area. Most restaurants in Skegness will shut on a Monday, but Aey’s stays open all day so make use of this.
“We’re also a fully-licensed restaurant, and the next thing on the list to do is to open up a cellar. I want to create an English wine cellar with a collection of wines from across the uk. English wine is low in acidity and alcohol generally so a sparkling or white wine accompanies Thai food perfectly.” On our visit, Aey served a starter platter featuring prawn toast, battered prawns and spring rolls. We also enjoyed Tom Yum soup as part of the starter options. For the mains, we had the Gang Panang curry - David’s favourite dish - with rice and Aey’s Special Chicken which was my favourite dish. The flavours were incredible and it’s great to know you’re enjoying authentic Thai food, rather than a westernised version. We hope you enjoy the new Lincolnshire restaurant as much as we did. n
Massaman Curry with coconut milk, onions, potatoes, carrots, cashew nuts and choice of meat or seafood, £6.45 - £10.45.
‘Gange Pet Ped Yang’ red curry with coconut milk, pineapple, tomatoes, peppers and basil leaves, £10.95. ‘Crying Tiger’ chargrilled sirloin steak sliced and served with a special Thai chilli and tamarind sauce, £12.
Desserts
Coconut blancmange with native Thai fruits, £3.25. NB: Featured dishes are subject to change.
n Aey’s Authentic Thai can be found on Lumley Road in Skegness. Please call 01754 764237 or visit the website www.aeys.co.uk for more information. 49

“Make them seasonal and not too high so the guests can’t see over them. Use vegetables and flowers in the arrangements. Perhaps make little jam jars tied with ribbon with holly or mistletoe in them. Include a flower arrangement at everyone’s place setting for a nice personal touch.”
Create an Ambiance
Mix together 25ml of Belvoir Fruit Farm’s Elderflower Cordial, 25ml of sherry and 25ml of fresh lime juice. Top with soda before garnishing with a mint sprig, grapes and cinnamon bark.
Shake in a cocktail shaker 100ml of Belvoir Cox Apple Pressé, 25ml of butterscotch syrup, 15ml of lime juice, a pinch of all spice and 75ml of soda.
LADY of the HOuSE
IT’S A GIFT
This has a Christmas theme to it and the suggested glassware is a wine goblet.
Top up with the Cox Apple Pressé. Strain it over ice cubes and garnish with cinnamon and raisins.
“Have nice soft lighting, candles, and if you have a fireplace, light the fire. Offer your guests a drink as soon as they arrive. Have a nice selection of soft drink as well as alcoholic drinks.”
Don’t be too Ambitious
“When I’m preparing for a dinner party, I work backwards, producing the coffee and chocolate first, then dessert and so on. This way you don’t miss anything. It’s best not to cook something you haven’t done before. If you want to try something new, practice it first. Check there are no special dietary requirements.”
First Impressions
“Make some nice homemade bread if you have time, and offer canapés These can be prepared in advance, and your guests can enjoy them with a drink whilst you are completing the final touches to the main.”
Relax Mix together 25ml of gin with 25ml of Belvoir Elderflower & Rose Cordial, 15ml of apricot brandy, 15ml of egg whites, 25ml of fresh lemon juice and 10ml of sugar syrup. Shake. Strain into a champagne saucer, garnish with lemon zest and berry dusting.

- WELCOME HOME -
This month we’ve a truly unique home. This truly bespoke build is the work of local architect Ian Orme and was built in 2014. It caters well for the modern family and it’s in a prime location between Lincoln and Newark on Trent in the village of Harby. The properties name derives from the Larch cladding found on its exterior and the home itself is tailored to modern family life. In particular, the vast open plan kitchen which opens its multiple bi-folding doors to merge with the patio and garden is ideal for a modern family.
The kitchen design is German ‘Häcker’ and has a wall of units with Corian worktops as well as an island incorporating a breakfast bar.
Appliances include two integrated eye-level Neff ovens, a down-draught DeDietrich extractor fan, a Neff ceramic induction hob, a three-way Franke filter tap, an integrated wine fridge, and dishwasher, and space for an American style fridge freezer. The flooring is oversized white ceramic tiles which extend around the corner to the living

Both bathrooms are fully tiled, and all sanitaryware is Villeroy & Boch. The master bedroom has its own ensuite wetroom and a separate dressing room too. “Larch House in Harby provides for an overall feeling of space and light with a contemporary finish to an exceptional standard of both quality and style...” south and east facing gardens laid to lawn and wildflowers here.
Another superb modern feature is the underfloor heating throughout the property.
A great energy saving bit of tech too is the roof top solar panels and air-source heating system. Income is provided by the Renewable Heat Incentive. There are notable features throughout including a hardwood and glass staircase and double height atrium to the first floor.
And finally, the stand alone home office and garage building has a multitude of benefits and can be used in different ways. The village of Harby is located on one of Sustrans’ cycle routes; a picturesque, traffic-free cycle route leading to Lincoln’s
Brayford Waterfront, which is about six miles away; an ideal cycle ride.
The village also has a popular and well-used pub, a primary school, a playing field, church and bowling green. The village benefits from fibre broadband too. The property is accessed via a sweeping gravel driveway leading to a large area of car parking and double garage.
The attractive, low maintenance garden is mainly laid to lawn and was landscaped as part of the build. Mature trees line one side and reach the wildflower planting to the rear amidst swathes of long grass. Main: The main living room with log burner and large windows that let in loads of light. We love the bright colours.

Right: The gardens are laid to lawn with wildflower meadows so it’s low maintenance. Views stretch across open countryside.

Young apple and cherry trees were part of the new planting and punctuate the foot of the boundary wall.
The whole plot is totally secure for young children and dogs, being surrounded by either timber fencing or walls and the back garden offers a large degree of privacy, despite its openness.
It’s not being overlooked by neighbours, and gives far reaching views of beautiful open Lincolnshire countryside beyond.
Larch House provides for an overall feeling of space and light with a contemporary finish to an exceptional standard of both quality and style. The next owners shall feel very blessed to enjoy such a lovely home. n

IGNITE STOVES
The Hot Topic
In January a ‘hot’ topic is keeping warm in the chilly winter weather. Ignite Stoves near Lincoln is suggesting the best way to make your home warm and cosy this month and a great to update your home...
66
1 - Lincs Pride JAN 186.qxp 27/11/2017 12:03 Page 67
What to Remember Daniel, Tom and the team below have come up with five important considerations when it comes to choosing a stove...
Above: A stove from the manufacturer Rais can be fitted by Ignite Stoves. Opposite: The team - including some of the younger members! - at Ignite Stoves.
In the pretty little village of Welton you’ll discover Ignite Stoves. Tucked away in the corner, the shop fits well in its pretty stone surroundings. However, as you enter, there is a Tardis-like effect, as you are welcomed by roaring fires and an enormous showroom, showcasing the very best of stoves and fires, and it’s set to increase in 2018.
Daniel Gibbs, managing director with over 11 years of experience in heating homes, started the business five years ago with a mission to bring to the county a high quality and focused service on stoves.
He wanted to offer customers a service from the initial meeting to installation, which was something Lincolnshire was missing.
“When you get a stove for your home, you often have to purchase the stove, hire a builder, and hire
an installer,” says Daniel. “If there was something to go wrong, it’s easy for them to blame each other and problems aren’t solved. “You’re also having conversations with so many different people on topics you may not be so knowledgeable on.”
“We cut out the middle-man and provide a full service from the purchase to the design to the installation. Our knowledge in the industry too, ensures you have a stove that suits you and your home if you’re unsure about what you want or need.”
Ignite Stoves uses high quality manufacturers like Charnwood, Rais, Woodwarm, and Contura, and Stûv; British or Scandinavian manufacturing companies.
“We make sure we come out to every single job, offer our opinions on what we think should be installed in your home, provide
Energy Efficiency: “New legislations are being put in place to reduce the emissions of stoves. The minimum needed will be 75% efficiency by 2022. It’s important to remember this when purchasing older stoves. All our stoves are over the minimum efficiency needed so they’re much better for the environment.” Product: “You also need to take into consideration what kind of product you’ll be using on your fire; multi-fuel or wood. Wood is cleaner but multi-fuel has a longer burning period.”
Room Size: “This is a subject often overlooked. It’s not the size of the fireplace, but the size of the room that should considered; if the fire is too big for the room, the room will heat far too quickly.” Chimney: “Remember that you don’t need a chimney to have a stove, so where a chimney was may not be the best place for the fire.” Design: “Finally, you need to make sure the stove you’ve chosen suits the style of your room. We help our clients with this aspect.”

plenty of inspiration in our showroom and in past examples, and then come up with a design.” Daniel works alongside his partner in the company Tom Elston, who covers the technical aspect of the business and the installation process, while Daniel deals with customers. There are eight members of the team on hand to help.
“There are many different aspects to a stove and choosing which one would be right for your home. It’s important you use a company with experience in the industry, and you use one company for the entire process. Often, stove are fitted in accordance to the fireplace; a

stove has to be fitted to the room it’s in and that’s often overlooked.” “With price, the higher it is, the higher the quality is. Stoves that cost £200 to £300 will be poor quality and have a low energy efficiency.” The average contract with Ignite Stoves is around the £3,000 to £5,000 mark, although they offer more affordable stoves costing around £900. There are some in the showroom costing £15,000. “There are many different changes coming to the industry too, and that’s something people need to be aware of. We make sure everything is taken into consideration.” n

FARMING CALENDAR
ON THE FARM A Year Ahead with Alison Pratt
As we enter the new year, we’re looking at the year ahead for farmers. Alison Pratt, our farming editor and correspondent from the NFU, showed us around Jonathan Brant’s 412 acre farm in Normanby le Wold and the two explained what happens in a typical year for a farmer - weather-dependent of course... Words & Images: Tilly Wilkinson.
It was a warm welcome to Acre Farm as Jonathan and his wife zoe prepared Alison and I a steaming bowl of soup to enjoy with a round of toast before we set off on our journey around Jonathan’s 412-acre farm. On the top of Jonathan’s farm, there’s a point he calls Surprise View, where his cows graze. You can see Lincoln Cathedral in the distance in one direction and the Humber Bridge in the other.
Jonathan’s farm sits on the highest point in the whole of Lincolnshire - 552ft above sea level to be exact - not far from Caistor, which means he has panoramic views to enjoy for miles around.
It also means it’s a little colder for his crops and cows in comparison to the farms on lower warmer ground. Jonathan has lived on the farm all his life, growing up there as a child with his two brothers and sister.
He studied agriculture at Harper Adams university in Shropshire before returning to work on the farm for his father, and after his father retired, he took over the farm.
He worked his way up in the NFu to become county chairman then council delegate, which means he attends Council meetings four times a year to represent our county. From working with the NFu he met Alison Pratt, our farming editor and the current communications adviser for NFu in the East Midlands.
Jonathan immediately came to mind when I suggested the idea of covering a year on a farm to Alison, having experience in both the arable and livestock sectors. “130 acres of my land is permanent pastures for my Lincoln Red Cross cows,” says Jonathan. “275 is arable, 160 is for spring barley, 50 for wheat, 25 is overwintered stubble,
“Jonathan’s farm sits on the highest point in the whole of Lincolnshire. He’s 552ft above sea level to be exact...”
22 is grass for making hay and 20 is used as environmental habitats, particularly for birds.”
Having lived his whole life on the farm, and working on the farm for over 20 years, Jonathan knows the ins and outs of arable and livestock farming. “There’s so much to do on a farm throughout the year; there’s no quiet time. Many people are unaware of the work that goes into it and what there is to do seasonally.” Expand your knowledge on what our county is famed for over the next few pages as we go through the seasons of farming.

- FARMING CALENDAR -
“WINTER IS THE SEASON WHEN WE ARE MOST INVOLVED WITH THE LIVESTOCK. THEY ARE HOUSED THEN FED AND CHECKED EVERYDAY AND BROUGHT IN FRESH HAY AND STRAW...” WINTER “In November we will be selling the barley and wheat from the harvest. It’s also a time when we move the cows in the from the grass fields into the sheds.” “Winter is the season when we’re involved most with the livestock. They’re fed everyday and brought in fresh hay and straw.”
“In arable farming, we’re drilling the winter wheat in late autumn, and using fungicides and herbicides on the crops. In winter, we’re really just leaving the land alone.” General farm maintenance is important in winter as there is less work on the farm. It’s a time to prune orchards too. In December, some cows are mated for autumn calving, and some sheep are housed for winter. Early lambing starts in January and February.
SPRING “In March and April, our barley and wheat is starting to grow. This is when we use a compound fertiliser on the crops, and it’s when we put the first application of nitrogen and sulphur on the crops. This is for medicinal purposes just to keep the plants healthy.”
Four power stations close by to Jonathan’s farm used to emit a lot of sulphur before environmental regulations changed this. The sulphur would fall on his land which meant he didn’t need to apply it.
“April is our farm’s favourite month; it’s when we let the cattle out, weather dependent of course. The grass needs to grow before we let them out.”
“It has become a family event now! It’s a fantastic sight to see. When we let the cows out, they jump and skip across the open fields. We 74
used to have 150 cows, but we had planned to stop livestock farming. However there were just a few lovely cows that we really couldn’t let go.”
“We decided to breed them again, and we now have a closed herd of some of the very best Lincoln Red cross cows.”
Some farms will also be calving in spring, and dairy cows as well as beef cows are being let out to grass at this time of year. For sheep farmers, they will be lambing and housed ewes will be put out to grass.
For the arable side of farming, in spring farmers will be sowing cereals, sugar beet and maincrop potatoes. For grassland, the first silage will be cut in spring. Orchards blossom and bees pollinate too.

A Year on the Veg Patch... If you have your very own miniature farm in your garden, here is a guide to what to sow in you garden each season. January: Aubergines, celeriac, celery, cress, winter gem lettuce, rhubarb and strawberries. February: Basil, broad beans, brussels sprout, summer cabbage, cauliflower, leeks, onion, parsnip, radish.
March: Artichoke, asparagus, beetroot, carrots, cucumber, most herbs, kale, peas, spinach, tomatoes, turnip. April: Calabrese, courgette, marrow, melon, pumpkin, squash, swede, sweetcorn.
“WE AIM FOR ONE CALF A YEAR PER COW AND A COW CAN CONTINUE TO REPRODUCE UP UNTIL THE AGE OF AROUND 12 TO 15 YEARS OLD. THE OLDEST COW ON OUR FARM WAS 27...” SUMMER “At the end of May and the start of June, we will hopefully be haymaking depending on the weather. Frustratingly, I have hay fever so we have to get a local contractor in to do this job!”
“We aim for one calf a year per cow and a cow can continue to reproduce up until age of around 12 to 15 years old. Our oldest cow was 27!” “When the cattle are ready, so about 24 to 30 months old, a good amount of time Top: Jonathan Brant showed us around his 412-acre farm.
Left: The Lincolnshire Longwool and lamb!
June: Radicchio.
July: Nothing to sow, but harvest your cauliflower, celeriac, celery, cucumber, kale, marrow, melon and strawberries.
August: Nothing to sow, but this is the earliest you can harvest rhubarb, shallots, squash, swede and tomatoes. September: Lettuce and perpetual spinach.
Field peas, winter barley, oilseed rape, winter wheat and spring barley is harvested now. A second silage is also cut.
“The cattle are being checked once a day and they’re all enjoying being out. We bring a bull in and mate our cows in May to June and aim for spring calving.”
May: Sprouting broccoli.
for the meat to flavour, I have to take them to the abattoir.”
“It’s the worst job and I absolutely hate doing it. I get up at 5am and pen them up in the early morning, and when I get to the butchers, I don’t like to hang around.”
“They have had a good life though, spending six months in a luxury hotel with a doctor on standby, fed everyday, then another six months on holiday. They’re not given any drugs at all, they’re treated well and they’re not stressed. They like music too!”
October: Meteor pea. You should be harvesting the last of your herbs, radish, pumpkin, squash and tomatoes. November: Nothing to sow. Start harvesting your winter gem lettuce and get the last of your turnips. December: Harvest your sprouts, parsnip, swede and leeks.
All year round: You can sow and harvest your cress, mustard and sprouting seeds all year round.

- FARMING CALENDAR -
AUTUMN “In autumn, a grain merchant will come out to us, sample the crop and check its moisture, bushel weight and other factors to agree on a price. Then we arrange a time for them to collect it. Last year, my wheat was used for distillation in Tyneside to produce ethanol and my spring barley was sent across to a maltings to create beer!” “We will also be trimming hedges and cultivating winter fields. We collect the straw up and store it - again, a contractor comes in for this - around the end of September.”
For most farms, autumn means a lot of landwork; ploughing and cultivating the land from late August to November. It’s also a time to plant and sow oilseed rape, winter barley, winter wheat and other arable crops. Field beans and sugar beet is harvested in autumn. Maize is foraged too.
Dairy cows and beef cows will be housed for winter in November and some cows will be calving. Ewes are mated with rams for spring lambing.
Power of Machinery
One tractor can do in just a day what it used to take 100 men to do in one whole week without the use of machinery.
“We’re weather dependent, but that sums up a year on our farm if all goes to plan for 2018!”
Facts and Figures: Farming in Numbers...
Livestock: Sheep are very clever and can recognise up to 20 different human faces, and they prefer a smiling face to an unhappy one! They can identify who their owner is, and sheep can remember the faces of up to 50 other sheep for more than two years.
Farmland: There are 20 million hectares of farmland in the UK; that’s the equivalent of 30 million football pitches. A fifth of UK farmland grows crops, the rest of it grows grass to feed animals. There are nearly 280,000 farms in the UK, and if you put all the UK’s hedges together, they would circle the Earth 20 times.
76
Food: 60% of all food eaten in the UK is grown on British farms. Every day, British farms supply 20 million eggs and the grain to make nine million loaves of bread. The UK produces more sheep than any other country in Europe. n Facts from LEAF - Linking Environment and Farming - www.leafuk.org.

NATURE
On the Wing
ON THE 5TH JANUARY, YOU CAN ENJOY THE UK’S NATIONAL BIRD DAY, SO IN CELEBRATION OF THIS, WE HAVE FACT FILES PROVIDED BY DR CHRIS ANDREWS FROM THE RSPB. THEY’RE ON BIRDS YOU CAN SPOT IN LINCOLNSHIRE IN WINTER, FROM BLACKBIRDS WHOSE SONG Words: Dr Chris Andrews. YOU SHOULD HEAR AT THE END OF MONTH, TO BARN OWLS...
GOLDFINCH Carduelis carduelis
What is it? A familiar garden bird, with a red and white face, sandy, brown body and bold yellow stripe on its black wings. Why are they here? They live here all year round. Some of our birds may go to Spain or the South of France for winter, but are replaced by birds from further north. What do they eat? Seeds, particularly liking those of teasels and thistles.
Where can I see them? In the garden, or in flocks over farmers fields.
How many are there? Over two million birds in the UK, though the population can vary dramatically. It is thought people feeding birds has helped stabilise this.
Erithacus rubecula
BLACkBIRD Turdus merulas
Why are they here? They live in Lincolnshire all year round. A few extra arrive from the continent in winter.
Why are they here? Some live in Lincolnshire all year round, but in the winter extra birds join them from the continent.
ROBIN
What is it? The ubiquitous Christmas bird. It’s cheeky character and bright red chest seems to be everywhere through the festive season.
What do they eat? Fruit, berries and invertebrates.
Where can I see them? Almost anywhere.
How many are there? Over 13 million robins live in the UK.
most widespread of our garden birds, being seen in 90% of our gardens.
Interesting facts? Blackbirds typically like to sing after rain. The majority of English blackbirds seldom move any distance from where they were hatched.
What is it? A familiar garden bird. Males have jet black feathers and a yellow bill. Females are a chocolate brown. Young birds look like females with a spotty chest.
The first blackbird song of the year can usually be heard at the end of January or early February, though urban birds often start earlier.
What do they eat? Blackbirds like to eat worms, berries and fruit.
Where can I see them? Largely in your garden. The annual Big Garden Birdwatch survey reveals they are the
Left: Robin Red Breast. Below: Look out for short eared owls this month.
SHORT-EARED OWL Asio flammeus
What is it? A dramatic looking owl, with large piercing yellow eyes. It has very small ears; more like tufts of feathers which lie flat but can be raised. Unlike the common image of owls, it hunts during the day. Why are they here? Some live in Lincolnshire all year, but more come for the winter from Northern Europe, crossing the North Sea.
What do they eat? Small mammals like mice and voles.
Where can I see them? Over rough ground, the edges of fields or saltmarshes at the coast. How many are there? Numbers fluctuate massively, depending on the availability of food. The owl is widely distributed on every continent apart from Australia and Antarctica.

STARLING Sturnus vulgaris What is it? A familiar garden bird, whose beauty is under appreciated. Thought to be black, they are actually purple and green, and covered in yellow spots.
Why are they here? They live in Lincolnshire all year. In the winter numbers are boosted by extra birds arriving from the continent.
LONG TAILED TIT Aegithalos caudatus
What do they eat? Fruit, seeds and invertebrates. Where can I see them? Almost anywhere. In the evening they congregate in regular spots to roost together. These flocks can number several thousand birds.
How many are there? Four million starlings are currently living in the UK, though numbers are falling rapidly.
What is it? A small cute fluffy bird with a long tail. They work together in extended families, everyone helping to find food and watch out for danger.
Why are they here? They live here all year round but join other tits to form larger roving flocks in winter.
What do they eat? Spiders and other invertebrates. In the winter they eat seeds and come to bird feeders.
Where can I see them? In woods, in hedges or, if you are lucky, in your garden. How many are there? 700,000 live in the UK.
BRENT GOOSE Branta bernicla What is it? A small goose that’s a little bigger than a farmyard duck. It looks very dark, with a black chest, head and neck and grey sides.
Where can I see them? You can see them in Lincolnshire along the coast, particularly on the numerous saltmarshes.
Why are they here? The birds migrate to the UK in winter to avoid the harsher winters in Siberia. This is where the brent geese breed.
The RSPB reserves of Frampton Marsh and Freiston Shore are particularly good.
Birds arrive in October and will leave again in March.
The UK population almost died out in the 1930s when its main food source, eelgrass, was devastated by disease.
What do they eat? They eat a lot of grasses and other vegetation, particularly on saltmarsh. They eat seagrasses too like eelgrass.
WIGEON Mareca
How many are there? The UK hosts up to 130,000, which is half of the world population.
Brent geese fly in long low wavering lines.
What is it? A medium sized duck. Males are grey, with pink chest, females are brown. Why are they here? To escape the harsher weather of the Baltic and Russia. What do they eat? Grass, grazing across fields like sheep.
Where to see them? Wetland areas across the county, or on close by fields. How many are there?: 450,000 come to the UK to winter.

weather in Iceland, which is where the majority of the birds will breed. What do they eat? Small creatures such as worms and beetles.
Where can I see them? They spend the winter at traditional sites. Some are inland arable fields, estuaries and saltmarshes are also a popular location.
What is it? An instantly recognisable bird, barn owls are for many the only owl they have seen in the wild. A ghostly white shape, drifting silently across the countryside.
JAY Garrulus glandarius
How many are there? The UK hosts 400,000 each winter.
Interesting Facts? In 1951 the manager of Guinness Breweries Sir Hugh Beaver after a day of shooting wondered which was the fastest game bird; the golden plover or red grouse. He thought a book with these facts would be of interest, so he created the Guinness Book of World Records.
Why are they here? They live in Lincolnshire all year round, but the shorter days mean we are more likely to see them as they hunt at dawn and dusk. As the name suggests, you see these owls largely in the countryside due to what they feed on. They’re a regular site across fields.
What is it? A member of the crow family, resplendent in pink! Normally secretive, they are more often detected by their loud screeching call than seen. Their raucous screech is often repeated if the bird feels threatened. It also gives a wide variety of notes often based on mimicry of other birds.
What do they eat? Barn owls usually feed on small mammals like mice and voles. Where can I see them? You’ll see the birds over rough ground or roadside verges during dawn and dusk. You’ll also see them in flight across fields searching for field mice and small animals to eat.
“GOLDEN PLOVERS COME TO BRITAIN IN WINTER TO ESCAPE THE HARSHER WEATHER IN ICELAND, WHICH IS WHERE THE MAJORITY OF THE BIRDS BREED...”
Above in Roundel: Golden plovers will be on estuaries. Left: A barn owl.
Images provided by Neil Smith from the RSPB.
Why are they here? They live here all year round. Over the winter they will come into gardens enticed by bird feeders. They also make caches of acorns and other nuts to last through winter and may be seen searching these out.
What do they eat? Many things, though nuts and acorns are favoured. Where can I see them? In the garden, or in woods.
How many are there? 350,000 live in the UK.

Shopping with Cleo
If you’ve got the January blues, we recommend recruiting Cleo Lacey, local personal shopper to update your wardrobe. Cleo has the job of many womens’ dreams; when she’s not visiting clients in their homes and consulting on their wardrobe, she’s travelling across the country visiting the best shopping centres to get the ideal look for them. This month, Cleo talks to Pride about what it’s like to shop for a living... Words: Tilly Wilkinson.

Having a personal stylist is something that’s associated only with the rich and the famous. However, this is simply not the case, as the stylist behind Demi Couture, Cleo Lacey, is trying to prove. “It’s for time-poor individuals who simply do not have the time to find the latest trends and looks,” says Cleo. “It’s also about saving money by not spending it on expensive mistakes.”
“I wouldn’t wallpaper my own walls or dye my own hair. I pay a professional to do a job I can’t do as well. That is simply what people do when they use me.” After Cleo finished university she wanted to become a fashion buyer and went to train with John Lewis on their graduate training scheme. She then went to work for Ragdale Hall as their fashion buyer and then for the designer Amanda Wakeley in London. “Fashion has always been in my blood, I live, breathe, eat and sleep it! I have always enjoyed dressing others, styling ladies and my absolute passion comes from helping real men and women look and feel better about themselves purely through dressing in the right way for their body shape, personality, lifestyle and budget.”
“I decided to train to become an image consultant. It was the best decision I ever made. Eight years on I am fully booked and I have the most incredible clients I could ever wish for.” “However, it’s not been easy. I’ve managed to get to where I am through sheer hard work and determination. I set my business up in the middle of the recession, and everyone told me it wouldn’t work. That made me even more determined to prove them wrong. I’m not going to lie, it was incredibly hard for the first four years of trading, then suddenly something changed. I soon built a strong and solid client base through word of mouth and referrals.” “What I love the most about my job is that every day is different. One day I might have a wardrobe consultation in Stamford, the following day a personal shop in London, the next day some online shopping ideas for a regular client. I do public speaking at events, train large corporate companies on the importance of image within the workplace, and I organise fashion shows. No day or client is ever the same and that is what makes my job so much fun.”
Cleo’s Essentials for Winter
Knitwear: “I’m cashmere obsessed! My favourite brands are Jumper1234 and Cocoa Cashmere. I also love All Saints and Whistles knitwear.” Boots: “Over the knee in black and grey. My favourite brand is Stuart Weitzman.” Leather Trousers: “Perfect for this time of the year when you are out in an evening and its cold. They are great to dress up with a sparkly top and heels or equally as stylish with a gorgeous piece of knitwear and boots.” Winter Coat: “One of the most important and costly items in your wardrobe. It needs to be considered well as it is the item that finishes off your entire look and the first thing others notice about you. I always advise my clients to have a practical coat from Moncler or Canada Goose and then a beautifully tailored smart wool coat such as a Max Mara or Joseph.”
“Wardrobe consultations get rid of all those items you’ve hoarded over the years, that don’t suit or even fit you anymore. I show clients how to mix and match and most importantly find out what they are missing. This then leads onto personal shopping, taking away the confusion out of where and how to shop, stop them from wasting precious time and money on mistakes. It’s about improving their confidence and self-esteem. It’s about making them try on clothes they would have never ever picked out for themselves.”
“Appearing on qVC as a style consultant earlier this year, growing my YouTube following to become well respected and just generally being in a position of having a fully booked diary are my biggest accomplishments. I work six days a week to fit in existing and new clients. I can’t ask for much more than that.” “My clients book me because of who I am. You employ someone because you know they’re good at their job but also because you like them and their personality. My job is a lot more than just shopping! Instead, for the future, I’d like to do more TV work. I really enjoy showcasing my knowledge, love and passion for fashion. Helping men and women is what I do best.” Above: Cleo knows the best brands in fashion that will suit you like this lovely pair of Valentinos!
She also loves Louboutins
(the shoe to the left).
Right: Cleo’s job is to advise the best items of clothing to suit you personally.

Top Tips Cleo’s work depends on the individual, but these are her ‘rule of thumb’ top tips...
“Image and appearance is so important. 55% of a person’s initial perception of you is based upon what you look like. That’s how important looking good is, not to mention how good it makes you feel in the process.” “It’s always tricky to offer top tips on fashion in general. I work on individuals and my advice is completely bespoke to that individual.” “However, my number one rule of thumb tip that applies to everyone is to always get items of clothing altered to fit your body shape. All body shapes are different; a size 10 doesn’t fit all size 10s perfectly.” “Another tip I’d give is to always get professionally measured for a bra and do go to a professional - avoid shopping centres!” “Finally, remember accessories! Your coat, shoes, hat, bag and jewellery are the most important items to consider as they finish your entire look off. They’re easy to overlook.”
n For more information on Cleo’s work and to hire her as your very own personal stylist to get the ideal look for 2018, visit her website www.demi-couture.co.uk or call her on 07812 991819.

WEDDINGS
Something Bluebell
If you’re searching for a ‘something blue,’ set a date for late winter, early spring to see a sea of bluebells lighting up the background of your wedding photos. kelly and Tom decided to choose blue as their colour scheme to tie everything in... Photographer: 166 Photography, 07874 848060, www.166photography.co.uk.
Kelly and Tom married amongst the bluebells at kenwick Park in Louth. They’re childhood sweethearts, meeting at school and dating when they were both 15. “I’m a nursery nurse and Tom is the head of Sixth Form at Skegness Grammar School,” says kelly. “We still live locally in Skegness.”
“Tom started the day by bringing me breakfast in bed one day. I went downstairs to a bunch of flowers on the side and a card with an adult colouring book - one of those stress relief ones.”

Have every reason
to SMILE in 2018 Don’t go through another year of not being able to smile, chew or socialise with confidence because of your dentures, bridges or missing teeth. Take action with dental implants from the Dental Health Centre, Lincolnshire’s centre of excellence for implant treatment. Our skilful team of experts in Grantham are an excellent choice as the providers of your dental implants because of our years of experience, passion for providing exemplary care and expertise. Taking steps to transform the appearance and strength of your teeth is an excellent way to feel more confident. If you have any queries about implant treatment, or would like to book a free 30-minute consultation, please do not hesitate to contact us, as our friendly, knowledgeable staff are happy to help. No matter how well fitted your dentures may be, they will never feel completely natural. Dental implants are placed into your jaw, so they look, feel and work just like your own teeth. Dental implants allow you to eat, drink, taste, chew, talk, laugh and
smile with complete confidence. When fitted properly by skilled clinicians, they are stable, comfortable and look exactly like natural teeth. Many people find wearing dentures painful, inconvenient and awkward. They can make it difficult to chew, which can stop you from eating many of the foods you once enjoyed. Often, your palate is covered and this can prevent you from tasting your food properly. Wearing dentures may also affect how you pronounce words and therefore the way you speak. Our patients say that once their implants have been placed, they can happily forget all about them and start living their lives to the full once more. Dental implants prove to be the most cost effective solution to replacing missing teeth and to help spread the cost we offer payment options including 0% finance. We have extensive experience in restorative dentistry and always work to give our patients the confidence of a beautiful smile. Please contact us for more information or to book a consultation.

Bicker Preparatory School...
Bicker Preparatory School and Early Years is an established, successful and outstanding independent Preparatory School situated in the heart of our county.
Lincoln Minster School...
We pride ourselves on putting our pupils first seeking to ensure that their talents and abilities are nurtured and encouraged to flourish in an environment of support and appreciation.
Our intention is to provide an inspiring education for life, from our ‘Outstanding’ rated nursery and Sunday Times Top 100 Preparatory School, all the way through to our sixth form where 88% of our pupils go on to reach their first choice destination after leaving school. Individual needs are catered for across all age groups where pupils, of differing abilities and interests, excel in our vibrant community.
We encourage our pupils to stretch and challenge themselves, to test new skills outside their comfort zone, not to worry when they make a mistake, but to learn from it. This way our
pupils develop resilience, grow in self-esteem and become more equipped to face the challenges that lie ahead.
Our staff understand the important role that excellent pastoral care and a focus on pupil well-being plays in developing confident and assured young adults that are able to fulfil their potential both academically and socially. The school benefits from outstanding facilities for music and drama with pupils able to perform in remarkable concerts and productions throughout the year and our sports teams enjoy success at a regional and national level.
Our family run school has achieved Outstanding during our last three Ofsted inspections and provides the highest levels of academic excellence. We cater for children from 3 - 11 years. The school motto is ‘Nature and Nurture at our Heart.’ We offer an holistic, cross-curricular approach to learning, together with a thorough knowledge of the core curriculum. The children benefit from the experience of a long-standing team of dedicated, and well qualified staff, who achieve and maintain the highest academic excellence combined with unrivalled care for our pupils and their families.
We are proud of the extensive outdoor facilities offered by our school. The school garden incorporates a stimulating Foundation Stage play area, a quiet reading area, a covered 24m ‘all-weather’ canopy as well as a dedicated ‘Forest School’ activity area.
Adjacent to the school we also have access to our own Environmental Area, which contains a variety of mature trees and shrubs. This enables children to undertake a broad range of inspiring outdoor activities through the changing seasons. In addition, our school also has its own Nature Reserve, which is located a short coach trip away. This allows us to deliver academic diversity while being able to explore nature. We can nurture a richer appreciation for our natural environment. The feedback from Secondary Schools and from Ofsted tells us that ‘pupils from Bicker have been well-taught.’ n For more information, please call 01775 821786 or visit the website www.bickerprep.co.uk.
Our comprehensive co-curricular programme offers our pupils the opportunity to develop their confidence and skills by taking part in a wide variety of activities including the Duke of Edinburgh Award as well as a new Combined Cadet Force due to launch in September 2018.

New Youth Theatre, Grantham...
Stamford Endowed Schools...
In September 2017, Stamford Endowed Schools were inspected by the Independent Schools Inspectorate. The overall findings were outstanding.
The Schools were rated as ‘Excellent’ in five out of six reports and ‘Good’ in one report. The Schools were fully compliant with ISI regulations, which included a thorough assessment of pastoral, health and safety, staff recruitment, medical and boarding policies, procedures and overall estate. Academic achievement was recognised across the board along with ILIC and benefits of the Stamford co-curricular offering together with the outstanding pastoral care.
Many of the comments show that Stamfordian Spirit is strongly in evidence in our pupils with many comments made about 124
hard work, resilience, ambition, and awareness of others. “These achievements are the result of the Stamford community working together,” says Will Phelan, Principal.
“Whilst, we are delighted with our academic achievements, I am especially proud of the less tangible aspects such as, ethos and strong core values, that have become synonymous with our students; this is a culture by which we live and work and testament to the hard work by the whole Stamford community.”
“Our staff and parents have shown total dedication and hard work in ensuring that the Schools continue to achieve excellence in teaching, while inspiring and supporting pupils.” “At every level, enormous thanks go to all 533 members of staff for their contributions to these outstanding achievements.”

Performing before an audience takes nerve, discipline and courage; things that grow bit by bit through encouragement. New Youth Theatre respects those who have even the simplest wish to dare to push their talent that little bit further so that at some point along the way a child is able to command an audience with a solo performance in a leading role. Well, that’s the stage for you. Once the curtain has come down, what then? unless you’re going to brave the acting profession as a career choice, what else can the experience of time spent with New Youth Theatre give a child?
Well, for a start they’ve been in a team. The leading players have more often than not come through the chorus or else helped with making the sets.
They’ve had to rub along with each other for the greater good of the show, so the experience friendship and cooperation has rounded their characters. Let’s link this to an ability to stand before 200 strangers and use a developed talent to bring about tears and laughter and you have an individual who will shine in an interview and demonstrate a personality that’s ready to fit in with the adult world of work, especially if that interview includes a presentation. Employers are looking for personality and character, and that’s what we offer. n For more information, please visit www.newyouththeatre.co.uk or call 01522 244365.

MOTORS
DAWN ASTON’S NEW
There’s something to be said for forward planning. Take Aston Martin’s new flagship convertible model, for example. It may be cold and dark outside right now, but place your order for its new DB11 Volante this month and you’ll secure one of the first vehicles to be delivered this spring... just in time for the sunshine! Words: Rob Davis.

It’s ironic that manufacturers of soft top cars typically reveal their soft top sports cars in the middle of winter. Still, if you place your order this month you’ll at least have something to look forward to until spring comes along. As the better weather arrives and winter is finally defeated by blue skies and warmer temperatures, you’ll be taking delivery of your new Aston Martin DB11. To put the car in context, the DB11 sits above the Vantage. The DB11 previewed in the last Bond film, Spectre, and reached showrooms last year as a hard top.
In coupé form it sells for £145,000 upwards, with a 4.0V8 or 5.2V12. Now though, the bar has been liberated of its roof and is set to sell for around £160,000 - not a terrific premium for wind-in-the-hair motoring.
Paradoxically, it’s the lighter V8 engine that represents the better car, reaching 60mph in a whisper over four seconds and with 187mph possible on a closed track.
“Performance and handling are a given, and craftsmanship of the car is quintessentially Aston Martin...”
Relying on a turbocharger, it’s more nimble than previous models, which pays dividends in terms of handling, riding on steel springs and adaptive dampers. That means the DB11’s ride is sporty, but not punishing for day to day driving. Likewise, the car’s eightspeed automatic gearbox makes light work of urban traffic, and a slew of electronic aidswill keep the car pretty side up.
Standard equipment is more generous than any Aston Martin before it, and the cabin is more modern, with the latest infotainment system, even if the central controller has been half-inched from Mercedes. Though technically there are two rear seats, the car is ostensibly a two seater, but practicality is aided with a new electrically operated folding roof - which now operates in just 14 seconds enabling boot space to increase by 20%, to roughly the same size as a Ford Fiesta.
ASTON MARTIN
DB11 VOLANTE Price: £159,000, to order now. Engine: 4.0 V8, 503bhp. Drivetrain: Eight speed automatic with rear wheel drive. Performance: 0-60mph 4.1 seconds; 187mph top speed. Economy: 24.8mpg combined. Equipment: Sat nav, electric heated leather seats, 2+2 seating, keyless entry and go, 360° camera, cruise, climate, Bluetooth. Optional: Ventilated seats, Bang & Olufsen audio, auto parking, heated steering wheel.
Of course, performance and handling are a given, and craftsmanship is quintessentially Aston Martin. ultimately though, the DB11 is the ‘pretty boy’ of the GT world and will typically be purchased on the basis of its looks, not its numbers. On that point, we call upon that hackneyed cliché of a picture being worth a 1,000 words... it’s a beautiful car, and will be fêted by car lovers everywhere for just that reason. n 127

ROAD TEST
Jaguar’s New E-Pace
Jaguar sports car design and dynamics in a five-seat compact performance SUV... that’s how Jaguar is billing its new E-Pace. Five seats, all wheel drive and prices from £28,500 to £47,800 mean it’s ideal for those seeking a luxury 4x4 without the bulk!
Small is beautiful. That’s the motoring world’s philosophy right now, and many car makers are shunning six cylinder engines in favour of smaller, four cylinder units. The physical size of big 4x4s can be a turnoff for buyers too, which is why smaller 4x4s and SuVs have been the biggest growth area in the motoring world in recent years.
Enter Jaguar’s E-Pace, the smaller sibling of its larger F-Pace off-roader. It’s available only with four cylinder engines, displacing a modest 2.0 litres. That’s not to say, however, that it’s short of pace. Achieving a higher top speed than you’ll ever need on British roads, and reaching 60mph in 8.7 seconds, its capability will be enough to satisfy most motorists, and there’s

a surprise at the petrol pumps too as the Ingenium branded engine rewards with more than 50mpg - about the same as many small hatchbacks.
Price: £47,800 (First Ed.,)
Engine: 2.0 diesel, V4 16v Ingenium.
Performance: 0-60mph 8.7 seconds; 127mph top speed.
MPG: 50.4mpg (comb). Equipment: Adaptive cruise, 360° camera, leather, power tailgate, electric, heated seats.
Neither is the E-Pace short of equipment; a special First Edition version costs under £48,000 yet still boasts luxury car features like adaptive cruise control, all round parking sensors and 360° view camera, leather, electrically adjustable seats and keyless entry. All versions of the car come with cruise control, parking camera and sensors, and a heated windscreen. The E-Pace is available with petrol or diesel engine, with manual or automatic gearbox and with front or four wheel drive, but to our mind the excellent value, stylish and sporty First Edition is the pick of the range. n
