Thanks to Lincolnshire’s famous farming reputation, we’re known as ‘the county that feeds the country.’ This month, farmers will be planting the rotation crop sugar beet, and it’ll be harvested in autumn. If you’ve ever driven down Lincolnshire’s country roads, you would have come across farm buildings filled to bursting with sugar beet.
But have you ever wondered whereabouts the crop goes and what it’s used for? Well, the answer may be found closer than you think. We take a tour of the British Sugar factory in Newark in this edition, and get an insight to the fascinating zero-waste process of turning sugar beet into sugar and many other byproducts. Not only is farming heritage prolific in Lincolnshire, so too is equestrian sports, with Stamford the home to one of the biggest equestrian events in the UK, the Burghley Horse Trials.
The nearby Belton Horse Trials in Grantham take place next month, and Alex Postolowsky who has competed at both Burghley and Belton tells us what to expect from the annual competition, and what it’s like to be a professional rider. Zoie Wilkinson

Local Producers Visit Parliament
LOUTH AND HORNCASTLE’S MP BRINGS LOCAL PRODUCERS TO LONDON LONDON Victoria Atkins, Member of Parliament for Louth & Horncastle, hosted food and drink producers from across the constituency at an event in Parliament to showcase their award-winning food and drink. The Minister for Agriculture, Fisheries and Food, George Eustice MP, visited exhibitors to taste the produce and speak with local business-owners. Over 250 Members of Parliament, Lords, Doorkeepers and staff attended throughout the day. The Leader of East Lindsey District Council, Craig Leyland along with representatives from Lincolnshire County Council, local media and the NFU also joined the parliamentarians at the event. Attendees had the chance to sample delicious local produce from Bottomley’s Pin Gin, Lincolnshire Poacher Cheese,
R.J Hirst Butchers, Skidbrooke Cyder, Fairburn’s Eggs, the British Pea & Bean Growers Association and of course Lincolnshire Plum Bread from Moden’s Bakery.

WADDINGTON Previously homed at RAF Waddington, the Avro Vulcan Bomber will have a dedicated new home at the Doncaster Sheffield Airport. The Vulcan to the Sky Trust revealed planning permission for their new project has been approved to be built for Spring 2019. “This is a fundamental milestone passed, with the vital element of full funding for the build now to achieve,” says Robert Fleming on behalf of the Trust. “We are talking with a number of interested potential individual investors with

NEW SCREEN PLANNED FOR KINEMA
WOODHALL SPA The ‘Flicks in the Sticks’ or the Kinema in the Woods will receive a facelift soon as owners propose plans to build a new 92-seat auditorium and a third screen to the popular cinema. Admissions have increased by 75% in the past five years and owners are struggling to keep up with the demand. In preparation for the third auditorium, the current
owner has made arrangements to increase the parking available at the cinema by creating another 108 spaces. This has been previously approved by councillors. Bronze Statue for Boole... LINCOLN Victorian
mathematician George Boole is famed for his work which can be found within every computer, smartphone and digital device. He is going to be honoured for his incredible work with a statue in his home town. Boole was born in Lincoln in 1815 and is known for inventing Boolean logic, a system of AND, OR or NOT statements. The bronze artwork is yet to be approved, but when it is, it will be placed at the city's new transport hub. The design, by sculptor Antony Dufort, has been submitted by the Heslam Trust which said the mathematician should always be ‘remembered with pride.’
LINCOLN Proposals have been submitted for a new site to be built on land at Rushfield Lakes, on the north side of Station Road in Potterhanworth. The developers are looking to build a site on the current farm land to cater for 32 touring caravans, 13 static caravans, 12 glamping pods, five ‘hobbit hut’ glamping pods, access tracks and paths and 89 parking spaces. There would also be an amenity block/café. Subject to planning permission, developers aim to open the new site within 18 months. The planning committee at North Kesteven District Council will discuss plans at a later date.

LARKFLEET HOMES has proposed plans for 110 new homes to be built in Bourne. The new development will be on Manning Road, and will feature a mixture of properties ranging from one to four homes for families, first time buyers and the elderly. LINCOLN BUSINESS EXPO A SUCCESS The annual Lincolnshire Business Expo, which brings together hundreds of local forward thinking and enterprising companies and professionals saw success at the Lincolnshire Showground. The event is hosted by Lincolnshire Business and it features more than 100 firms that are there to exhibit, and are from a range of different business sectors. There was also a very detailed programme of nearly 30 different seminars, talks and workshops focused on new ideas and trends in 2018. The event as a whole is designed to provide a unique and local networking platform. It’s aimed at championing the best of the county’s skills. This year’s Lincolnshire Business Expo was the biggest event yet since it was first launched three years ago.

IBCC Officially Opens to Public
AFTER SIX YEARS OF CONSTRUCTION, THE IBCC IS OFFICIALLY OPEN... BOSTON
£100,000 ON OUTDOOR LEISURE IN BOSTON Outdoor leisure facility improvements in Boston that will cost around £100,000 have been approved by Boston Borough Council. As part of the improvements, the zip wire, nest swing and criss cross rides and the body twist outdoor gym equipment in the Central Park in Boston have been repaired, and the council’s own parks and grounds staff have repaired items in St John’s Park, Shelton’s Field and Woodville Road.
New projects costing £91,286 will include new swings, new goal posts, rubbish bins, a slide, extended path to the swing and roundabout, new roundabout, fitness equipment and a multi-use games area on the tennis court site, finished by 2019.

LINCOLN The International Bomber Command Centre serves as a point of recognition, remembrance and reconciliation for those who served, supported or suffered the bombing campaigns during WWII. Providing one of the most comprehensive records of the Command in the world, the IBCC ensures that generations to come can learn of their vital role in protecting the freedom we enjoy today and will never forget. There are three elements to the centre; the Chadwick Centre brings to life the experience of those involved in the Command.
It uses state-of-the-art technology and interactive displays throughout to tell the story of the Bomber Command, through the eyes of the people who actually experienced it. There are three exhibition galleries in the Centre with totally immersive exhibits, a reference and research library, an extensive programme of events, a Hub Café and a shop with souvenirs. The second element of the Centre is the Peace Garden. This offers 10 acres of landscaped grounds with quiet, contemplative space and 27 native trees marking each of
the operational Bomber Command stations. There is also recognition of the 62 nations and five continents involved in supporting the Command. Finally, there is the memorial spire and walls. The walls hold the names of nearly 58,000 men and women who perished during WWII. The spire is the tallest war memorial in the UK and is based on the wingspan of the Lancaster Bomber. It’s the only place in the world that memorialises every loss in Bomber Command.

The Horncastle Farmers’ Ball 2018
at the Petwood Hotel
The Petwood Hotel hosts the Lincolnshire’s Farmer’s Ball every year, and it continues to be a tremendous success. Farming families across the county come to the event to celebrate the year, enjoy a meal, have a dance and raise money for local charities in
the process. The event represents an opportunity for the farming community to come together and meet people in the same profession.
The event is a long-standing tradition which started in the early 1900s as a key networking
event for the local farming community. It continues year on year, and has only had to cancel during the war years.

The Astronaut
It’s a privileged few who are able to say they’ve ventured into space. Among Neil Armstrong, Buzz Aldrin and most recently Tim Peake, Louth astrophysicist Michael Foale hasn’t only left the planet, but he holds the record for the most time spent in space cumulatively. He was the first Briton to perform a space walk and he is the only NASA astronaut to have flown extended missions aboard both Mir and the International Space Station... ‘I want to be an astronaut.’ It’s the answer you’ll hear from millions of youngsters when they’re asked what they want to do in life. However, only 536 have made their childhood dreams into a reality, and that includes Michael Foale born in Louth.
Foale’s father was British and his mother was American. He was educated at the King’s School in Canterbury before becoming a member of the Air Training Corps and later studying at Queens’ College in Cambridge.
During his time there, Stephen Fry himself mocked his ambition of going to space but that didn’t deter Michael at all, coming out of univeristy with a first-class honours degree in natural sciences in 1978 and a doctorate in laboratory astrophysics in 1982. “When I left university, I owned two pairs of jeans, a donkey jacket, a bicycle and a pilot’s licence, which shows I had my priorities absolutely right,” says Michael. 18

While he was a postgraduate student at Cambridge, Foale was involved with various scientific scuba diving projects too. As he went on to pursue a career in the US Space Program, Foale moved to Houston, Texas, to work on Space Shuttle navigation problems.
In June 1983, Foale joined NASA Johnson Space Center in the payload operations area of the Mission Operations Directorate. In his capacity as payload officer in the Mission Control Center, he was responsible for

payload operations on various Space Shuttle missions. As Michael was born here in the UK, he applied and was turned down twice as an astronaut candidate. After the Space Shuttle Challenger Disaster of January 1986, Foale decided to change his application essay from writing about his dreams to focusing on the realities of leadership faced by NASA, and in 1987, he was selected. He flew on space shuttle missions STS-45 (1992), STS-56 (1993) and STS-63 (1995). In the last mission he undertook a four-hour space walk, and was the first Briton to do so. He was then selected for an extended mission aboard the Russian Mir space station.
Foale spent four months on Mir in 1997 during two missions. In this time, the station’s Spektr module was struck by the Progress resupply vessel. Using knowledge from his physics degree Foale made calculations of

how the stars were moving past his fixed-point thumb reference on a window, and was thus able to advise Russian ground control of how to stop the resulting roll.
Foale and Russian cosmonaut Anatoly Solovyev conducted a six-hour space walk in the Russian Orlan spacesuit to inspect exterior damage to the Spektr module. For his efforts, he was awarded the Yuri Gagarin Gold Medal by the Fédération Aéronautique Internationale. In 1999, Foale was a member of space shuttle mission STS-103, during which he had to do an eight-hour spacewalk to replace components of the Hubble Space Telescope.
In 2003, Foale was named commander of International Space Station Expedition 8 with cosmonaut Aleksandr Kaleri. Their six-month tour of duty on the station ended on in 2004. For about a year, Foale was Deputy Associate Administrator for Exploration Operations at NASA HQ , Washington DC. He then supported Soyuz and ISS operations and spacesuit development for NASA in Houston. Married with two children, Foale and his family live in suburban Houston, Texas. He is fluent in Russian, probably thanks to his time spent aboard Mir.
Foale is qualified to fly anything from fixed-wing aeroplanes up to fast jets, as well as helicopters. His hobbies include windsurfing, macramé, and cross-country skiing.
MICHAEL’S HONOURS Foale was awarded an honorary degree from the University of Lincolnshire and Humberside in July 2000 and an honorary Doctor of Science degree from the University of Kent in September 2000.
He was named a Commander in the Order of the British Empire in the diplomatic list of the New Year Honours in December 2004. As of 2007, he has been patron to a pastoral house at the Folkestone Academy in Kent, which is also named after him. A street in Louth was named Michael Foale Lane.
Foale and Ellen Ochoa were announced as the 2017 class of the United States Astronaut Hall of Fame.

In August 2013 it was announced that he was leaving the agency after a 26-year career to work on developing an electric aircraft to advance green aviation technology.
Since leaving NASA, Foale has become actively involved in the running of the International Space Schools Education Trust, especially their Mission Discovery and trips to Star City in Russia, giving so many unique experiences to students around the world. Mission Discovery is held each year at the Guy’s Campus at King’s College London. “To get ready to become an astronaut, you need to study hard in school, maths, science, and physics,” says Michael when asked what it takes to be a cosmonaut. “I followed all of the interests that go around space flight including learning to fly and scuba diving. I put those together to make myself a good candidate when I applied to NASA.” n

7. Tim Peake
Tim served as a reconnaissance pilot and flight commander before qualifying as a helicopter flying instructor. He retired from the Army in 2009, before being selected as a European Space Agency astronaut in May 2009. He beat 8,000 other applicants to claim one of six places on the training program. He is officially the first Briton to enter space as the previous six had US citizenship.

CRAFT A Combustive
Lincolnshire is quite a crafty county, and we’ve met numerous artists, designers, knitters, carpenters and even jewellers. But we’ve never come across the likes of Lynn Baker, a designer and maker of beautiful handmade kiln-fired glass pieces... Words: Tilly Wilkinson.

Before I met a glassmaker, I never considered the amount of work that would go into making a vase, glass sculpture or ornament. There are so many different techniques, processes, steps and so much preparation work that goes into creating these beautiful glass pieces, and Lynn Baker in Horncastle even goes to the effort of making sure each piece is totally unique. Lynn has been in business for 10 years but that’s only the tip of the iceberg. Before that, she had five years of training at Lincoln University which focused on studying for a contemporary decorative craft degree.
“I started later in life,” says Lynn. “I’ve always been quite arty, and when all my children moved out, I decided to look further into my lifelong interest.”
“During the degree, I studied many different styles of contemporary craftwork, but studio glass completely took over. I fell in love with it, and I still enjoy every part of the process.” After receiving her degree, Lynn was offered a scholarship at the International Glass Centre for a post-graduate certificate in glass design.
“After broadening my education, I set up my business. I now sell my glass at seven galleries across the country, I’ve worked overseas spending a lot of time in Dubai, and have been able to create so many beautiful commission pieces.” “My glass has taken me to so many different places and I still absolutely love what I do. It has taken a long time to get where I am now, working from my own studio at home.”
Lynn designs and prepares her products in the studio and then she takes them to the West Midlands to be blown.

“The furnace operates at over 1000ºC and can’t be switched off. It’s very expensive to operate and there are various health and safety regulations - not to mention the gas bill! - which is why I don’t have one myself and have to make the journey.” Unfortunately, there are far fewer people creating handmade glass pieces nowadays. Lynn believes there are only around 100 people left performing the craft, and a very limited number of those are women.
“I have to make sure I’m fit and strong enough to do it, and have to go to the gym every other day just to do what I do. It’s very hands-on and it’s honestly one of the hardest things I’ve had to do.”
“When you’re actually blowing glass, you have to work very fast and think quickly, but that’s definitely part of the excitement.”
“I don’t keep many of the pieces I create, but I’m the proud owner of many ‘happy accidents!’” One of Lynn’s favourite style of glass making is Graal, a Swedish technique that was developed in 1914 by Knut Bergqvist, and is the technique that Lynn is using above. The process is to create a glass embryo, initially mixing two colours together. Each colour will absorb and lose heat at a different rate so it’s a very tricky process. The embryo is then built up with alternating layers of molten clear and coloured glass. After the piece has been cooled overnight, Lynn draws her design on the glass, sand carving and engraving into it. She’ll then take her ‘egg’ back to the furnace in the West Midlands and blow it to create the beautiful Graal vases that will sell for around £300 to £400 each. 25

“It will take me around a week in total to create five Graal pieces, but I create many different kinds of glasswork so some pieces can be longer or shorter length of time. My favourite pieces are garden sculptures, larger architectural projects and commissions.” “The biggest projects I’ve worked on include a glass ice bar in Dubai and a big wall panel that’s still a work in progress. I’m really excited to see what the finished product will look like.” “I exhibit at various shows and open gardens across the country, and my garden sculptures can be seen at Doddington Hall from 29th July to 9th September this year for their exhibition ‘Sculpture at Doddington Hall.’” “I will also be in the Chapter House at Lincoln Cathedral from 16th - 28th July for an ‘Art on the Map’ exhibition. I will be exhibiting some new work with artist Bob Armstrong at Gibraltar Point’s new visitors’ centre.
Centuries Old Craft
Even the Egyptians used glass. The oldest examples of glass in culture are Egyptian beads that date back to 12,000 BC.

Nestle Range: “I enjoy looking at the birdlife of the Wolds. The Nestle Range is a collection of bowls and vases based on the colouring and patterning of birds’ eggs. The necks of the smaller bowls in the range suggest the open and hungry mouths of the baby birds in the nest.”
Graal Technique: “Much of my inspiration comes from the Lincolnshire Wolds. The pieces in this image were inspired by a walk through a woodland glade. I have tried to capture the dappled sunlight coming through the branches. Engraving through selected layers allows shafts of light to pass through the finished vase.”

Meander Vases: “These have been inspired by a walk along the Humber. I walked the whole of the south bank over the course of a year with two other artists and all the way along the bridge dominated. The vases emulate the tall strong pillars of the bridge and the trail mimics the meandering of the river.”

HORSE MY KINGDOM FOR A
Belton’s Horse Trials take place next month on 13th - 15th April, and although she won’t be able to compete on the day, Alex Postolowsky, Market Rasen’s award-winning eventer tells us what to expect from the competition...
If you’ve ever been to the races or an event like the Burghley Horse Trials, you’ll have an appreciation for horses.
International Event Rider: Alex Postolowsky.
At the races, you can hear the thunder of horse hooves before you see the troop of stallions racing at tremendous speeds across the grassy field, reaching the finish line in minutes. At horse trials, it’s the strength and endurance of the animal and its rider that’s so impressive. There are three stages - dressage, showjumping and cross country - and the horse and rider is judged on penalties.
It’s Alex Postolowsky’s endurance and determination that has allowed her to win at numerous sporting events including the very prestigious Burghley Horse Trials.
Alex, based in Market Rasen, has been riding horses since the age of three, so they’ve always had a presence in her life.

“My mum was very horsey and my brother and I rode from a very young age in Pony Club,” says Alex. “I fell in love with horses and have always been very relaxed around them. At the age of eight, I joined the Scunthorpe & District Pony Club, and they made sure I was put through all the necessary tests.” 29

“I knew I always wanted to be involved in eventing. It was not until later on when I started riding horses that I knew I wanted to consider it as a career choice.”
Alex’s very first horse was Nica or ‘Tyne Valley Technique’ and she was an enormous horse - 16.2 hands - for a girl of just 14. Alex was a natural. She was selected to join the Royal International England Team for competing, not to mention all the awards she had won previously in Pony Club.
“I competed in Working Hunter Ponies as a child, was selected for the England Team and rode at The Royal International Horse Show and Horse of The Year Show. I did a few events with Neeka but started eventing properly with Diplomatic Jack where we had our first success winning the Pony Club Championships.”
“After my A levels and a year out where I was selected for the British Young Rider Team, I decided to study for a BSc Equine Science degree. This has given me greater depth and knowledge 30
of the biological and physiological processes within the horse. This added to the knowledge gained from passing my Pony Club A Test.” Alex feels 2013 was her peak year, competing in the Land Rover International Burghley Horse Trials. It’s the main event of the year if you ride competitively, held in the grounds of Burghley House in Stamford at the start of September annually.
“I rode with Ginger or ‘Islanmore Ginger’ who is owned by Paul and Elaine Newbert,” says Alex. “He was the perfect companion for the event; bold and gutsy.” “My favourite part of competitions is definitely cross country. There is such an adrenaline rush, and I had never seen fences so high!”

The Belton Horse Trials 2018... Belton is competitive but also a lot of fun for riders...
Belton International Horse Trials is once again hosting its fabulous Gate Jumping this year. The competition is open to people who regularly hunt. They must be dressed in full hunting kit, and you can only compete if you’re not already competing at the Horse Trials. The aim of the competition is to jump the gate without knocking it down. If it falls you may buy yourself a life by removing one item of clothing. The winner will be the person to jump the highest gate with the most clothes on!
Another fun game at the horse trials is The Honington Grange Inter-Hunt Relay. This is a typical relay in teams - again with riders who regularly hunt - and it’s the last team to cross the finish line. There will be dressage, cross country and show jumping on all three days of the competition. For spectactors, there are also Pony Club mounted games, family dog shows, dressage demos with Ian and Amy Woodhead, the H&M dog display team and classic car displays. Burghley is one of only six four star courses in the world which means it has some of the biggest XC fences in the world.
Alex and Ginger finished in the top half and walked away with two awards; The HSBC Bursary for Highest placed International 4 star First Timer and the Award for the highest placed British First Timer.
“The experience was out of this world and was certainly the pinnacle of my career. I’m so proud of Ginger, he did a fabulous job. I was on such a hugh high for months after and it’s an experience I will never forget.” “Burghley is a lot more than just being able to compete, it’s having a horse at that level of competition too. A large part of eventing isn’t the competitions but actually training your horses to a high standard.”
Alex has competed at Belton before, but unfortunately won’t be able to compete in 2018 due to Maid of Honour duties for her best friend. However, she says it’s a firm favourite in the eventing calendar. The event attracts top riders and horses from all over the world and spectators from far and wide.
Areas of Competition
Dressage: The dressage phase consists of an exact sequence of movements ridden in an enclosed arena. The judges look for balance, rhythm, suppleness, and most importantly, the cooperation between the horse and rider. The challenge is to demonstrate that a fit horse also has the training to perform in a graceful, relaxed and precise manner. Cross Country: The next phase requires both horse and rider to be in excellent physical shape and to be brave and trusting of each other. This phase consists of 12 - 20 fences or 30 - 40 at the higher levels, placed on a long outdoor circuit. Showjumping: This is a bit of a cross between the two; there are fences to jump but there are a wide variety of disciplines.

However, that is not the only thing they come to see, with a variety of attractions from Pony Club Games to dog display teams and classic cars and everything in between.
For those who love to shop there are over 90 trade stands selling a vast array of goods for horse and rider plus fashion and lifestyle as well as the interactive zone, where you can get hands on with hounds, try your hand at willow weaving or art workshops and take part in the fun dog show or dog agility.
“It’s a shame I won’t be able to attend this year as it is such a great event. I’ll hopefully be able to compete in 2019!”
Alex has 11 horses in her stables. She’s paid to compete the horses by the people who own them. Last year she evented 17 horses and finished in the top 50 riders in the country. She owns three horses; Ali or ‘All or Nothing’ who is nine, Freya, eight, and Francis, five. “I also have Jack, my first competitive horse, and he’s one I couldn’t sell. I owe the most to Jack; I had so much success with him.”
“He’s had one life-threatening condition which required an expensive operation that could save him. However, I found the money to do it as I adore him and he is part of the family.”
When buying new horses to train, Alex likes to get youngsters and train them to her style of riding. She feels she has more of a connection with the horse this way.
“Eventing is very much a labour of love and you have to have a passion for the sport to compete as a career. We’re excited to announce a brand new restaurant in this edition; The Plough in North Kyme. The restaurant opened at the end of 2017 after the renovation and extension of a previous pub, and it’s already one of our favourite places to dine in Lincolnshire... First impressions and reputation seem to be everything in the restaurant trade. When I pulled up in the car park of The Plough in North Kyme, already familiar with its growing popularity, I was very impressed.

The former pub was renovated and extended last year by local Andrew Mitchell, and the restaurant officially opened at the end of 2017.
Andrew wants The Plough to be one of the best dining experiences in Lincolnshire, offering a warm atmosphere and exceptional food.
The restaurant has 75 covers, a roaring fire in the separate bar area and another in the lounge. There is a mezzanine floor for private parties and bifold doors that will open onto an outdoor seating area during the summer. There is even a glass floor that allows you to view the wine cellar below.

After a “cook-off ” between eight different chefs it was clear, in Paul McGann, Andrew had found just the right man for the job.
After ensuring the style and the setting of The Plough were perfect, Andrew needed a Head Chef who would meet the restaurant’s high standards and aspirations.
Paul trained at Boston College before travelling to Scotland to work for the Old Course Hotel, a five star hotel and restaurant with three AA Rosettes. Paul was then sous-chef at the Douglas Hotel, and worked in other notable kitchens across Scotland, before working for the Arora Hotel in London. So, it is fair to say, he has plenty of experience in the food industry.

“We’ve only just opened, but we’re already examining various options like weddings, conferences, birthday parties and outdoor dining. We are an incredibly ambitious group, and every member of the team has an intense drive for The Plough to be successful.” Everything in the restaurant is homemade from breads to stocks and sauces; and Paul tries to source local products where he can, for instance Lincoln Red for his beef dishes.
For a brand new restaurant, it’s very impressive that they’ve been able to focus their attention on the little details too. Even the napkins are folded into the shape of roses on each table.
They offer complimentary tomato and olive bread with aerated truffle-infused butter, but even the flavours of these are always evolving. They have put thought and effort into every area of the business, and this is what will set The Plough apart. The selling point is the quality of the food, and for such good prices. On my visit I was blown away by the high standards they have set. My two starters
were cracked black peppered goats cheese with poached baby pears, spiced pecans, watercress and tarragon dressing and pan seared king scallops with cauliflower vanilla puree, smoked pancetta and scallop roe crumb, black pudding and pea shoots.
For mains I was served pan-fried loin of Lincolnshire lamb with celeriac puree, pickled wild mushrooms, dauphinoise potato, amaranth micro herbs and thyme jus. It’s clear Paul knows exactly what he’s doing; the presentation of each dish was spot on, and the flavours were incredible.
My second main was slow roasted belly pork with wholegrain mustard creamed potato, purple sprouting broccoli, apple & cider sauce and spiced apple crisp. As with the lamb, the presentation and flavours were exceptional, with the complexity of the differing textures. For desserts, the deconstructed Eton Mess is a firm recommendation; it came with Chantilly cream, pavlova, mixed berry compote, fresh strawberries and mint. The lemon posset was also incredible, with homemade short bread crumb, basil gel and raspberry sorbet.
The Plough has had a superb start and it’s an honest recommendation to Lincolnshire diners.

The Lincoln Hotel’s goal for 2018 is consistency in its restaurant’s high standards. However, there is a whisper of future renovations, the Head Chef is looking into creating his own herb garden and the menus are having a reshuffle... The Lincoln Hotel’s modernist appearance is architecturally striking next to the Cathedral, but equally striking is the quality of its flagship Green Room restaurant.

The Cathedral is what comes to mind as the very centre of Lincoln, an indicator to the city’s heart, so if you’re looking to eat locally, there really isn’t anywhere more central especially to the hotel’s high standard.
2018 is set as a year of keeping up its high standards after the relaunch of Bar 67 in the restaurant’s cellar in 2017, and the recruitment of a new managing director, marketing executive and operations manager. Although this is to be a year to reflect for the Lincoln Hotel and continuing their high standards, there is a whisper refurbishments of the hotel may be taking place too, however this is unconfirmed. It’s a wise diner who eschews the pubs and bistros of Bailgate and chooses instead to dine at the Lincoln Hotel instead.

The Green Room restaurant has always had an element of fine dining with neat presentation and a smart dining room. The restaurant’s provision of food is rather upmarket and we’re impressed with the bright, colourful, food and the equally effervescent flavours within its dishes. Green Room dining takes place seven days a week. There’s also a dedicated Sunday lunch menu. At other times, diners can eat in the hotel’s Long Room, or in its lounge, via dedicated lounge menu.
There are separate à la carte menus in The Green Room for lunchtime and evening diners. The former provides three starters, four main courses and four desserts, as well as a provision of afternoon tea.

Local suppliers across the hotel includes Fosters Butchers which can be found on Monk’s Road, Peterborough Game, M&J Seafood, delivering fresh fish from Grimsby Dock each morning, and Pilgrim Foods, providing fresh veg grown in the fields of Boston and the Lincolnshire fens. “Hopefully this year we’ll have our own herb garden too,” says Steve, general manager. “It’ll feature many variations of mint for our cocktails, which are very popular.”

The chef is planning to change the main menus in the Green Room too at this time, and the meals we were presented on our visit are definitely something to be excited about. For starters, we enjoyed black pearl scallops, sautéed potatoes, shredded carrot, coriander and ginger dressing with baby capers and micro coriander. The scallops were cooked perfectly, and garnished with beautiful edible flowers.
Our second starter was a wild mushroom roulade with radish, pea shoots, black truffle oil and pickled wild mushrooms.
The main course options we were delighted to hear included Gressingham duck breast with sweet potato fondant, spinach leaves, baby carrot and leek and orange glaze.
This was followed by cajun-spiced salmon with sautéed potatoes, and nicoise salad which consists of quail eggs, green beans, radish, charred gem heart, black olive tapenade and lemon and lime oil.
You won’t find a more local or a more beautifully presented cheeseboard than the Lincoln Hotel’s provision.
The large selection of cheese included Skegness Blue, Lincoln Imp, Lincolnshire Poacher, Lincolnshire Poacher Red, Just Jane Smoked and Dambuster. This is always complemented well with apple and raisin chutney, butter, grapes, Lincolnshire plum bread, naturally, and crackers.
If you’ve more of a sweet tooth, you only need to look at the picture above and your mouth will start to water. It’s a black forest trifle with cherry mousse, brownie milkshake, chantilly cream, edible chocolate stones and dried cherry yoghurt. This year, give the Lincoln Hotel a go. It’s menu options are delicious, they have superb offers on notable dates such as Valentines’ Day and Christmas time, and it’s in the most picturesque location across Lincoln, with the best view of the Cathedral you’ll get in any restaurant in Lincoln.
This year for the Green Room, the green light has been given to some changes, but also just maintaining the high quality dining you can expect. The hotel’s fine dining oriented restaurant is already one of Lincoln’s best dining rooms, and these changes should afford Head Chef Dale and his brigade of nine chefs the chance to improve quality even more.

HIGH TEA IN LINCOLNSHIRE

AFTERNOON TEA WAS CREATED AT BELVOIR CASTLE
Afternoon Tea originates from Lincolnshire. Anna, the 7th Duchess of Bedford is said to have complained of ‘having that sinking feeling’ during the late afternoon whilst visiting the Duke of Rutland at Belvoir Castle.
At the time it was usual for people to take only two main meals a day; breakfast, and dinner at around 8pm. The solution for the Duchess was a pot a tea and a light snack, taken privately in her boudoir during the afternoon. Later friends were invited to join her and this summer practice proved so popular that the Duchess continued it when she returned to London. Other social hostesses quickly picked up on the idea and the practice became respectable enough to move it into the drawing room.
Sadly these days Afternoon Tea is usually only an occasional luxury for the British; a birthday treat in a country house hotel, or a welcome break from a hectic days shopping. That’s why it makes such a good treat for mum this year for Mothers’ Day. 50
} The Perfect Scones...
Makes 8 Scones. Prep Time: 10 minutes. Cooking Time: 12 minutes. Ingredients: 350g self-raising flour and a little extra for rolling out ¼ tsp salt 1 tsp baking powder 85g butter, room temp 45g caster sugar 175ml milk 1/8 tsp lemon juice Beaten egg for glazing
Preheat the oven to 220ºC, putting a baking tray in the oven to preheat as well. Sieve the flour, salt and baking powder into a large bowl and mix well. Add the butter and rub it in until the mixture resembles breadcrumbs. Alternatively, use a food processor and mix until the butter has disappeared. Mix in the sugar. Add the lemon juice to the milk and then add this to the flour mixture. Stir quickly with a knife and then use your hands to make a dough ball. Knead a few times just until the dough becomes smooth. Scatter a little flour over a work surface and shape the dough with your hands or alternatively you could use a rolling pin so that it is about one inch thick. Use a floured two inch wide smooth cutter to cut out eight scones. You may need to reform some of the dough to cut out the last few scones. Brush the tops of the scones with the beaten egg. Place the dough scones directly on the preheated baking tray and immediately return to the oven. Bake for 10 to 12 minutes until lightly golden on top. Leave for a few minutes on the baking tray before transferring to a cooling rack. This is the trickiest bit; do you serve it with clotted cream on top of jam or jam on top of cream? Devonians believe the cream should be on the bottom to seep into the warm scone, and the Cornish believe the jam should be on the bottom to make sure the cream sticks! n

The Perfect Macarons for High Tea... 100g ICING SUGAR • 100g GROUND ALMONDS • 2 MEDIUM FREE-RANGE EGG WHITES • SMALL PINCH OF SALT • 55g CASTER SUGAR • 150g UNSALTED BUTTER, SOFTENED • 75g ICING SUGAR
Preheat the oven to 140ºC. Sieve the icing sugar and ground almonds into a large mixing bowl. Throw any lumps left behind away. Mix the two together.
In a separate bowl, whisk the egg whites and salt until they form soft peaks. Add colouring here if you want to. Add the caster sugar a little at a time and continue to whisk until the whites are thick and glossy. Gently stir in the icing sugar and almond mix. The mixture will lose some air and become loose; don’t worry, this should happen.
Fill a piping bag with the macaron mixture. Place a silicon mat or paper template onto a baking sheet.
Pipe small blobs onto the sheet remembering that less is more at this stage because the mixture will settle and form into the allotted spaces. Gently tap the baking sheet on the surface to help the macaron mixture to settle and to break any air bubbles, then leave to dry for 20 minutes.
12 Servings. Prep time: 10 minutes. Cooking time: 16 minutes.
Bake the macarons in the oven for seven to eight minutes. Open the door to release any steam, close the oven door and cook for a further seven to eight minutes.
Slide the sheet onto a cooling rack and leave to cool. Don’t attempt to remove the macarons from the mat until they are cold or you will break them. To make the filling, beat the softened butter until it is fluffy, then gradually add the icing sugar. At this point you can add in any flavourings.
Place 1/2 a teaspoon of the filling to the flat side of one macaroon and sandwich together with another then twist ever so slightly to create a bond. Repeat the process with all of the remaining macarons. n

Quali-tea, not mediocri-tea... that was the aim of Susie and John Carlisle when they created a brand new blend of tea just for Lincolnshire, and its hard water. The pair worked with ‘tea Yoda’ and author of The World Tea Encyclopaedia Will Battle, and
created their new blend, launching it at a VIP reception at Lincoln Castle last month. Around 50 people attended the reception, and enjoyed the first taste of the blend, as well as Victoria sponge, tea-infused fruit loafs and other afternoon tea treats.

Anne is born and bred in Lincolnshire while her husband is originally from Newcastle. The couple started planning and building Blackthorns in 2005, and rented a nearby property in the village of Scotton while the project was underway.
“We had renovated an old barn previously and found that we really enjoyed working on it as a project,” says Anne. “It’s great to be able to create a property exactly to your specifications, wants and needs, and we decided that we wanted that freedom again.” Instead of converting an old property, the two took on the challenge of building their own very modern home that would still hold traditional features. “When we built the property in 2005, big windows with open views was a relatively new concept. well with our modern plans and we wanted our home to be eyecatching which it still is, as passers-by often stop on the path opposite.”

Although Horncastle’s Manor House is flooded with daffodils, primroses, violets and roses, it’s the history hidden in this garden that will peak your interest... Words: Tilly Wilkinson.

“Marilyn and Michael’s Springer spaniels Jasper, Casper, Bracken and Bramble make good use of the space the garden offers; The Manor House is just under two acres...”
>> It’s refreshing to know that we’re in spring now. One of my favourite seasons, and I’m excited to see the gardens slowly showing some colour. It’s also refreshing to see a garden that performs best in this season, as opposed to summer. The grounds of The Manor House in Horncastle are carefully curated by owners Michael and Marilyn Hieatt. As Michael put it, Marilyn is the gardener and Michael is the lawn mower, but both are passionate about the subject and enjoy the space theirs offers.
Jasper, Casper, Bracken and Bramble also enjoy the space the garden offers, the couple’s four springer spaniels, in addition to the grandchildren when they visit. “We’ve been here for seven years having previously lived in Surrey,” says Marilyn. “The garden is still a work in progress, but luckily we’ve not had to alter too much.”
When I visited The Manor House in January, there were some very early daffodils and aconites and even a few primroses to see. However in spring, the couple open their garden to the National Gardens Scheme, and you should expect to see a mass of daffodils, primroses, violets and Christmas roses, and the wisteria across the front of their house may be in bloom.
Later on from April onwards, you’ll see a selection of tulips, wall flowers, and the two front beds will be high with lupins, delphiniums, alliums and bleeding hearts. “Our first opening for the NGS was last year,” says Marilyn. “A past President of the Lincolnshire Daffodil Society is based in Horncastle, and she suggested our garden to the organiser of NGS. After their visit, they agreed to let us be a part of the organisation.”
Marilyn and Michael managed to raise £500 last year for the NGS charities, and the local church opened on the same day offering tea and cakes making a further £200. They’re also one of the earliest openings, open on 24th March. 80
“Our garden consists of the front lawn, where the beds will hopefully be full of daffodils on 24th March. There’s also a circa 12th century font from a decommissioned local church which makes a really lovely and interesting feature to this area.” “We have a kitchen garden and a vegetable patch which runs alongside the croquet lawn, used by our grandchildren mainly!” Following the path round the kitchen garden, you’ll reach the orchard which is sprinkled with daffodils and a few benches to enjoy the view. Then you’ll reach the river bank.
“It’s a beautiful view and reminds Michael of punting in Cambridge,” says Marilyn. “There are even some daffodils along the riverbank too. The ducks float down the river from Tesco’s where they’re fed plenty of bread. We’re also next door to Lincolnshire Wildlife Trust, so we’ve had muntjac deer, owls, heron, sparrow hawks and a buzzard in our garden and, of course, moles.” There are many elements to their garden, but what I like the most about Manor House is the corner of a roman fort.

It’s partly buried which is why it has been preserved so well, and creates a really unique and interesting centrepiece, adding another depth to the garden. It’s such an important piece of history from the 3rd/4th Century that it’s listed as a Scheduled Ancient Monument.
It also has to be inspected occasionally by the English Heritage to ensure it’s being looked after and not vandalised, so Marilyn and Michael have been able to make a great feature out of it. Lying alongside the Roman fort the remnants of a medieval well, another interesting historical feature.

The history surrounding the property and gardens is phenomenal, so much so that it has been recognised by an official blue plaque.
“The Manor itself is noted in the Domesday Book so it’s a very old property with a lot of stories,” says Michael. “The blue plaque at the front of the property recognises that it was once owned by the Bishop of Carlisle, and that there was an unfortunate fire in the 18th century which meant The Manor House had to be partly rebuilt.” If you enjoy being a part of the NGS and visiting gardens across Lincolnshire, and perhaps you’re a history buff, The Manor House offers something really unique and an enjoyable day out in Spring.

Sowing the Seeds

There are lots of old weather sayings about the spring - ‘March comes in like a lion and out like a lamb’ and ‘March winds and April showers bring forth May flowers’ - but one thing is true; the days are definitely getting longer and the weather warmer. The sun’s long traverse from the Tropic of Capricorn on our shortest day to the Equator on 21st March means that spring is on its way and with it new life, whether that’s the birth of lambs, newly planted crops and blossom buds or the grass growing to feed livestock.
But it wasn’t until the 20th century and the ‘green revolution’ that plant breeding techniques coupled with more technological production techniques, brought a surge in both yields and area of production.
Our ancestor farmers had learned that manure would help crops grow but the advent of manufactured ammonium nitrate fertiliser in the early 20th century and a

Cereal crops were brought into cultivation by our Neolithic ancestors, about 9,000 years ago in the Middle East - early forms of wheat and barley were ‘domesticated’ and grown to produce flour and at the same time, the Chinese were beginning to cultivate rice and millet. 84
ON THE FARM THIS MONTH
Arable Sector: Cereals, sugar beet and maincrop potatoes will be planted and rhubarb, cabbage and cauliflower can be harvested. Livestock Sector: Spring calving for dairy and beef cows will start in March and lambing will be underway. Housed ewes and beef cattle and dairy cows will hopefully be put out to grass by the end of March.
better understanding of crop nutrition meant we could feed more people on the same amount of land and bring land into production that had previously not been suitable for growing crops. To feed a growing world population, crop production needed to change and change it did. New pesticides and herbicides meant that crops became more productive - we could control the impact of diseases and pests and reduce competition from other plants to ensure our crops produced to their maximum capacity.
Just think of the Irish potato famines of the mid 1800s caused by a fungal infection that still exists today, Phytopthora infestans or potato blight. Controlling blight with a fungicide means that we can grow good quality, high yielding crops and not have to worry about total crop loss as our forebears did. But, and there is a but, we have reached what the scientists call a crop yield plateau. Conventional breeding technologies having got us so far are not producing the increases in yields, particularly in wheat, that we need to feed the projected 9.8 billion people living on the planet by 2050.
So what is the answer? More research and quickly and, in my view, developing genetic technology to overcome the yield plateau. n

BRITISH SUGAR Inside the Factory:
You’ll see farmers across Lincolnshire planting sugar beet this month. It’s used as a major rotation crop, but where exactly does it go and what is it used for? Well, it doesn’t travel as far as you might have thought... Lincolnshire is a county that champions local produce. Local chefs, cookbook authors, diners and farm shop owners all try to ensure we make the most of Lincoln Red, Skegness Blue, Horncastle’s Plum Loaf and the wonderful Boston Sausage. However, a food product we create in the area that isn’t shouted about enough is sugar. British Sugar’s factory is based in Newark, our adopted town just over the border, and the sugar beet harvested for the factory comes from 3,500 growers in the UK; around a third are Lincolnshire growers.
Beet production occupies 100,000 hectares of UK farmland and there are just four sugar factories in the country all based in the East Midlands and East Anglia.
We visited the Newark factory recently for a tour and an insight on sugar production over the years, and the sheer size and scale of the plant is incredible.
As I drove in, all I could see was mountains and mountains of sugar beet. Newark employs over 150 people, and 1,200 local farmers supply the plant with sugar beet. Last year, these farmers supplied 1.6 million tonnes of sugar beet.
I was welcomed by Godfrey Mpundu, the factory manager at Newark. Godfrey has worked for British Sugar for over 20 years. Before the tour, he explained the process of turning sugar beet into sugar and what else was produced at the factory.
“460 lorries of sugar beet arrive in Newark every day. That’s 20 an hour...”
“The factory’s key goal is efficiency,” says Godfrey. “That’s why we don’t just produce sugar. When the lorries arrive with the sugar beet, they’re weighed and sampled to ensure we’re getting what we paid for.”
To give you a perspective on the size of this operation, Godfrey said they have 60 lorries arrive full of sugar beet each day. In response to my shocked reply of ‘60 lorries!’ he corrected me; not 60 lorries but 460 lorries arrive at the factory every day of the campaign. That’s 20 lorries an hour.
“First of all, the sugar beet is washed. The soil is kept and turned in to Topsoil for use in the landscaping and construction business. The stones are sold on as aggregate, again mostly to the construction industry.”
“The cossettes are added to hot water and put in a diffusion chamber for 90 minutes. If they’re in there for too long, the fibres will start breaking and too little, there will be sugar left in the pulp so the conditions have to be just right.” In sugar production, the syrupy water that comes from the diffusion process is called the raw ‘juice.’ The pulp is taken to another part of the factory and made into animal feed.
“It’s a 300 day operation here at the factory. Most sugar producers only run for around 140 - 180 days because sugar beet can’t be harvested all year, but we have five juice storage tanks that enable us to store conditioned juice for longer. Meanwhile, the juice is taken the next stage in the process after filtration.”
The next stage is purification. Lime and carbon dioxide is bubbled into the juice, which in turn causes a reaction. Calcium carbonate is produced, turning the dark and muddy-looking juice into a much clearer product.
“The sugar beet is put onto a belt and taken into the factory, and through a series of slicers. This cuts the beet in to v-shaped slices called cossettes preparing them for the next step.” If you imagine dunking a tea bag in hot water, the tea will diffuse out of the bag and into the water. This is what happens to the sugar beet cossettes.

Godfrey likened this next stage, evaporation, to boiling kettles. The juice is now around 80% water, so it’s added to a large kettle for the water to evaporate. However, it would be ineffective for all water to evaporate in just one kettle, so the steam from one kettle goes into another, and the collective steam from the second kettle is fed into the third. This is called multi-stage evaporation.
The water - you guessed it - doesn’t go to waste. It’s filtered and treated and is then put back into local ponds and rivers.
“The juice from the evaporation process is much thicker, like treacle. This will then be used for the crystallisation process. We need to ensure the treacle-like juice syrup doesn’t become caramelised during this process, so it’s added to vacuum pans. This ensures we’re left with large white crystals.” “The white crystals are then taken to the Finished Products end of the factory to be turned into types of sugar whether that’s caster, demerara or just granulated.”
Everything in the factory is controlled by computers. It used to be controlled by people observing and testing each individual stage, but there is now a control room, and there are even cameras within the multi-stage evaporation chambers, purification chambers and silos to ensure everything is as it should be.
Most of the sugar produced is used by industrial customers like Coca Cola, Nestlé and Cadbury’s; there are over 170 industrial customers so a small amount of what British Sugar produce is sugar you see on shelves.
However, if you would like to buy sugar made in this country and back local sugar beet growers, use Silver Spoon. All other sugar brands like Tate & Lyle import cane sugar and refine it in their factories. Sugar has had a bad wrap in the media recently and a Making Sense of Sugar 88

Campaign is trying to balance the arguments to ensure people know the facts. Making Sense of Sugar is an attempt to clear up some of stigma surrounding sugar and its link to obesity.
It’s true that sugar in excess can lead to obesity, but all sugars are an important source of energy that we all need to go about our daily lives. Food and drink provides our bodies with energy in the form of calories. If we regularly consume more ‘energy’ or calories than our bodies use, then this leads to an accumulation of excess body fat. This can then result in obesity. Just like protein, starch and fat, sugar is a source of calories in the diet and excess calories from any ingredient or product can lead to being overweight. However the suggestion that sugar alone is responsible for the rise in obesity is just not true. It’s also not supported by Government statistics which show a reduction in the consumption of sugars in the UK since 2001. Taking a look at the wider company, British Sugar’s parent company is ABSugar. This is the parent company for six leading sugar companies across the world including Azucarera in Spain and Ilovo in Africa.
A COMBINED 66 YEARS
AT BRITISH SUGAR David Papworth has worked for British Sugar for 46 years. He started when there were 18 factories. He began at Bardney. “I came in as an apprentice and worked my way up to my position now; Senior Project Manager.” “Not a lot has changed in the sugar industry. However, computers have improved productivity significantly; we produce more sugar now than we ever have done and we have 14 fewer factories.”
Dave Roberts Dave has been here for 20 years and most recently as the factory’s Operations Manager. He started at Newark when there were nine factories in the whole of the UK as a Graduate Trainee for the firm. “I started at Newark and after my training working in each part of the factory, I went on to Bury St Edmunds. After working there I completed short secondments to factories in Poland and China before returning to British Sugar in Newark.”

ABSugar has a parent company too - British Sugar’s grandparent company if you like called ABF or Associated British Foods. The companies you might have heard of in this group that run alongside ABSugar includes Twinings, Primark and Ryvita. It’s a huge corporation and one of the four British Sugar factories is situated just down the road from us. The other three are based in Bury St Edmunds, Wissington and Cantley.
When I visited the factory, what impressed me most was its efficiency. I had never considered there would be anything other than sugar being produced here, but there is virtually zero waste. Other than sugar, animal feeds, LimeX, Topsoil, and stones is all produced here and sold back to farmers across the county. The factory even produces its own electricity and sells it back to the National Grid.
Sugar Beet
Sugar beets were not grown on a large scale in the UK until the mid-1920s, when 18 processing factories were built, following war-time shortages of imported cane sugar.
It has changed my opinion on sugar and on farming; it’s a product that doesn’t get more local and it’s something we should be proud of.

n Topsoil: Topsoil is dark in color and high in organic matter, which makes it very easy to till and fertilise ground for growing plants.

It’s in the
EYES
Despite appearing harmless to humans, peacock butterflies appear very threatening to predators when approached head-on. This is due to the colourful ‘eyes’ on their wings.
The beginning of March also signals the beginning of spring. As we bid farewell to the cold, harsh winter, the shorter days and the lack of wildlife, we can look forward to a hopeful spring filled with flourishing flowers, beautiful birdsong and the buzz of bees, butterflies and other insects as the wildlife around us is brought back to life.
Animals that have spent the winter months in hibernation will begin to emerge during the month of March. Hedgehogs, queen bees, frogs and toads will start to grace our gardens once more and squirrels, voles and rabbits will be 92
spotted much more frequently.
A sure sign that spring is in the air is the sighting of a ‘mad’ March hare: brown hares are thought to behave excitedly, often fighting and ‘boxing,’ during the month of March. This is because it is their mating season, and so the chance of spotting a hare is much more likely during March.
Peacock, comma and brimstone butterflies will also begin to flutter their wings through our gardens, whilst many of our feathered friends will already be breeding. Chiffchaffs, rooks, wheatears, sand martins and coastal gannets are just some of the birds

Encourage wildlife into your garden with wild plants such as bramble and nettle, which make great snacks for insects and cover for small mammals.
Lungwort is a favourite amongst long-tongued flower bees, whilst primrose, butterbur, wood anemone and lesser celandine are popular with hoverflies, solitary bees and the bee-fly.
The first queen bumblebees of the year will be sighted on warmer days during the month of March, seeking out pollen and nectar from the spring flowers now in bloom.
March is also the perfect month to spot invertebrates, such as mayfly and stonefly, in streams and ponds.
It is also amphibian breeding season and therefore lots of frogs and toads can be sighted too.
Toads can often travel long distances to find a suitable pond to breed in.
Brimstone Butterfly These pale yellow butterflies are usually seen in ones or twos.
Red Admiral Butterfly These butterflies are one of the most well-known in the UK, with unmistakable velvety black wings and red bands.
Look out for jelly-like frogspawn in ponds and ditches.
March is a truly wonderful month for nature-lovers: with the spring sunshine, the blossoming blooms, longer days and the hopeful sound of birdsong, it makes our county an absolute joy to live in. 93

All You Need is Love
In true ‘Love Actually’ style, the best man stood up at Adam and Katie’s ceremony to sing All You Need is Love and was soon joined by the rest of the guests. Beautiful newlyweds Adam and Katie tied the knot recently at Stubton Hall. After a long distance relationship while Katie studied at university, the two moved in together not long before Adam popped the question. The two now live in Mansfield; Adam is an electrician while Katie is a bid writer.
“We met via a friend and dated long distance before buying our first home together,” says Katie. “Adam proposed whilst we were on holiday in Marbella. Not normally the romantic type, he pulled out all the stops with a lovely candlelit beach setting.”
After getting engaged they started venue hunting straight away. The couple wanted somewhere with exclusive use that had plenty of character whilst still being neutral enough to put their own stamp on the day. Stubton Hall fitted the bill perfectly with a fantastic mix of old and new.
“I found dress shopping a bit stressful - all that pressure to find the perfect one - but the girls in the dress store put me right at ease. I immediately fell in love with the low back of the dress, the embellished straps and the pretty lace train.”
“I added a delicate pearl chain across the back for a bit of extra detail and wore a cathedral length lace veil finished with fresh flowers. I wore my dress with a necklace belonging to my mum; a sapphire pendant surrounded by diamonds. It was my something old, borrowed and blue.”
The Wedding of
ADAM AND KATIE ROBERTS
The bridal party held natural hand tied bouquets in a palette of soft pinks and cream with eucalyptus and trailing gold and pink ribbons. Katie created her own floral arrangements in the church with the help of her mum and mother in law. The church warden also created some beautiful floral displays for the entrance and the altar and provided some greenery out of the church gardens. “We wanted the day to feel romantic, so we used candles and fresh flowers to decorate the tables along with gold sequin table runners.”
The couple decided on a cake table rather than a traditional three-tier. Their centre cake was white chocolate and raspberry sponge. Two gold cat figures sat alongside the cake to represent their cats Tigerlily and Minnie. “Adam’s friend’s mum Kim kindly agreed to make an elderflower sponge and a red velvet cake decorated in marshmallows. They looked so good together and tasted amazing.”
“The ceremony was the absolute favourite part of our day. The vicar made the service very personal and special. The best man stood up singing ‘All You Need is Love’ and all the other guests were soon singing along; a proper Love Actually moment!” The weather was beautiful and they held the drinks reception outside on the terrace at Stubton Hall. 95

“Two days after the day, the couple jetted off on a three-week honeymoon around Asian islands...” “One of my favourite memories is looking around at all of our family and friends having drinks in the sunshine.” Katie also had a dance with her dad towards the end of the night which was very emotional.
“It wasn’t a formal father and daughter dance so no one watching, just a very special five minutes catching up with my dad after a whirlwind of a day.” Two days after the wedding the couple headed off on honeymoon. They chose Singapore, Bali and the Gili Islands.
“The honeymoon is the one thing that is truly just for the two of you so we wanted a holiday that we would remember forever.”
“Adam is quite adventurous whereas I would prefer the beach so we opted for a mix of city, beach, jungle and paradise. We went for a blissful three weeks which was incredible from start to finish and worth every penny; the perfect way to start our life together.” n 96

LINCOLN Construction company giant Carillion has recently gone into liquidation. The council has confirmed that work will continue on the Lincoln Eastern Bypass for the foreseeable future. It does mean work will be delayed on the £96 million project, as the local county council searches for a new contractor. However, Carillion will be continuing to work on the project, which is primarily aimed at reducing traffic in the centre of Lincoln, while it weighs up its options. "Despite the announcements about going into liquidation, Carillion will continue on with some works to the bypass today and for the foreseeable future, but this situation is constantly changing and is dependent on a number of other factors,” says Richard Wills, executive director for highways at the council. BOSTON Phil Ashton, a local poultry farmer from Lincolnshire, has created an extraordinary contraption that can apparently guarantee the perfect poached egg...every single time. His 8ft by 5ft machine means he avoids the terrible disappointment of undercooked or overcooked eggs, although it did take 800 hours to build. The Boston farmer, who supplies eggs to the Happy Egg Company, says he can now poach the perfect egg in exactly 162 seconds. Phil says he has taken inspiration from his favourite childhood films Wallace & Gromit and of course, Chitty Chitty Bang Bang.

Worksop College & Ranby House Joining Worksop College and Ranby House in the middle of an academic year is becoming an increasingly popular choice, with record number of pupils joining the school in the summer term, last year. There are so many reasons to join and Leila Gold explains why… Worksop College and Ranby House has seen a rise in the number of students applying to start school in the middle of an academic year, and in particular, the summer term. Marketing & Admissions Director Leila Gold explains the rise in popularity. “It might seem like an odd choice, but when you look at it more closely, it makes sense,” says Leila. “The summer term is a shorter one, at only eight weeks long, so it can be a great way of settling in and making friends before the new academic year starts.”
“There are also lots of exciting projects and excursions in the summer term, as well as lots of sport and the opportunity of course to spend lots of time outside. We are set in 330 acres of beautiful North Notts woodland and border the National Trust’s Clumber Park, so outdoor education is a big part of what we do; the summer weather lends itself beautifully to that!”

It’s been a tremendous success and has spawned a number of competitors from Porsche’s Panamera to Audi’s A7. Mercedes Benz’s CLS seemed upon its launch to be the perfect compromise between a sportier executive saloon, or a more practical coupé. Other manufacturers clearly thought so too, with Porsche’s Panamera following in 2009; Audi’s A7 in 2010 and BMW’s 6-Series Gran Coupé in 2011. The formula is a four seat configuration with a generous boot and swooping profile, plus an interior inspired by each firm’s larger executive saloon ranges.
In Mercedes terms, the new Mk3 CLS takes the S-Class interior and E-Class chassis as its muses. There are two diesel models, badged 350D and 400D, and a petrol model badged 450. Each has a 3.0 engine, six cylinders and four wheel drive.
Whilst looks are always subjective, few could argue that the new CLS is a great looking car, resembling the S-Class coupé from the rear. We do think, though, that the car looks better in red and without the black wheels and tinted windows on the car pictured here.

In terms of specification, we’d recommend the smaller diesel engine which offers a nice compromise between frugality and grunt. Ostensibly there’s a single trim level, AMG Line, which provides decent specification, from heated leather seats, parking sensors, and reversing camera to navigation. Adding the Premium Plus pack adds nearly £3,900 to the price but with a 360° camera, panoramic roof, and COMAND system it’s desirable, although we’d add the Driving Assistance Plus Package which adds a suite of driver aids, in preference. We’d also avoid the gimmicky Comfort Package, with its fragrance dispenser and ‘well-being’ trinkets. We’d also spec the car in the firm’s lovely Designo hyacinth red colour. Unfortunately though there’s fewer choices for the interior, with just black nappa leather available - at least the standard multi-colour ambient lighting allows the driver to accent all that black.
Whilst the CLS drives on springs as standard Mercedes usually gets the balance between a sporty ride and comfort about right. With four seats and a boot akin to a Mondeo, the CLS is designed to be a good blend of sports car and sensible saloon. The new version is lighter, smarter and dramatically nicer inside, and whilst it may not be as sharp to drive as a Panamera, it’s still worth a look if you’re in the market for a four seater sports car. n

How do you make one of the best cars on the roads even better? Make it smoother, more refined and more economical, says Land Rover. The firm unveils a Range Rover with a plug-in drivetrain that will (slightly) offset the expense of its peerless 4x4...
If you’re spending a six figure sum on a premium four wheel drive car, it’s unlikely that running costs will trouble you too much. Nonetheless, a new plug-in electric/petrol hybrid drivetrain will prove advantageous to those who want to run their Range Rover as a company vehicle, rather than privately, and it’ll suit those with short commutes or those driving in London’s congestion charge zone. The new engine, badged P400e, is available in both short wheelbase and long wheelbase Range Rovers, and in Vogue, Vogue SE, Autobiography and SVAutobiography trims, with prices from £86,965 to £168,015. The sweet spot in the range for us is the short wheelbase Autobiography with its ‘everything... plus the kitchen sink’ list of standard features.
Because electric power is silent from launch and gives all of its torque instantly, without having to build engine revs, the refined but muscular way the powertrain delivers its power reserves is impressive and suits the mighty off-roader admirably.

Naturally, much of the UK’s electricity is still generated with fossil fuels, making the eco-friendly argument a bit specious, but it’s more viable if you’ve PV solar panels or similar at home and the calm, powerful powertrain nonetheless makes driving one of the world’s best cars an even more luxurious experience. n
