Daniel Craig’s on a mission ...to move to Lincolnshire Fans will be in 007-heaven! Bond star eyes up property here after Spilsby leaves him shaken and stirred... We all like to have good neighbours so the prospect of a violent, hard drinking, womaniser moving into your village might not seem to hold much appeal. However, when the new neighbour in question is an international film star, Spilsby residents will probably be a little more willing to accept him.
An easy way to get around in Lincoln? On your bike! Get fit and get around, as the city of Lincoln launches a new cycle hire scheme as Pride goes to press. The project will see 40 bikes available to hire from the train station, Brayford Pool and various business parks, to allow locals and tourists to get fit, get around and have fun. Best of all, cycle hire in the city will be free for 30 minutes, then just £1/hour capped at £4/day. "We're really proud to be launching the first bike hire scheme in Lincolnshire, and we're confident that it will provide more opportunities for people to cycle to work, into town or for leisure." says the council’s Richard Davies.

Bond feels he needs a little target practice. Rumours began circulating in July and were recently validated by several sightings of the Bond star in and around Spilsby, which is only three miles or so from the estate.
Actor Daniel Craig, star of the Bond franchise’s Skyfall, Quantum of Solace and Casino Royale films is poised to buy the Dalby Hall country estate near Spilsby.

Bailgate Wedding Fayre provides inspiration for Lincolnshire brides... Sunday 13th October from 11am-6pm
If you’re planning a wedding in the county, the Bailgate Wedding fayre is Lincolnshire’s largest wedding fayre, bringing together nine wedding venues such as The Old Palace Hotel, The Lincoln Hotel and Bailgate’s White Hart Hotel. The event will also feature around 50 suppliers including florists, wedding cake artists, photographers, caterers, wedding transport suppliers and many more. The event, which takes place twice a year, is free for brides and includes a fashion show of the latest wedding dresses from 1pm at the Assembly Rooms on Bailgate. Brides can wander around at their leisure, chat to suppliers and take a look at the city’s best wedding venues to find inspiration for their big day.

CountyNews Lincolnshire’s 2012 success as staycation destination... Lincolnshire and especially its East Coast experienced a bumper year in 2012 according to newly released independent data.
The £19m Lincoln Castle Revealed project, when it opens in 2015, is forecast to bring in between £35m and £50m. The data also showed that in 2012, Lincolnshire’s tourism sector employed 18,000 people 3% more than in previous years.
The county capitalised on the ‘staycation’ trend with 400,000 extra visitors last year. Visitors to the East Coast alone earned the county nearly £500m, £10m more than the previous year - whilst Lincoln saw its income from tourism rise 5% to £153m thanks to its 3.5m visitors.

Bumper 61 Lincolnshire pubs honoured in guide with both food and drink recognised as outstanding in quality...
The so-called ‘drinkers bible’ reviewed pubs across the county and awarded The Chequers in Woolsthorpe by Belvoir its Lincolnshire Dining Pub 2014 title. Eight other pubs were highly commended including Hough on the Hill’s Brownlow Arms, Gedney Dyke’s Chequers and Kirkby la Thorpe’s Queen’s Head, each of which have been recommended as great places to dine in this year’s Lincolnshire Pride Restaurant of the Month features.
Alisdair Aird and Fiona Stapley said that the 2,500-4,000 UK pubs which are forecast to go out of business will deservedly fail because they are “Stuck in the 1980s.” “A bad pub is one you walk into and there’s no welcome or atmosphere, the beer’s poorly kept and the food’s rubbish.” said Fiona. “In this same coming year, we expect well over 1,000 new pubs to open – often visionary and energetic new licensees bringing fresh life to former pubs that had been shuttered for months or years.”

Cleethorpes Pier celebrates its 140th birthday this month, so it’s little surprise that the landmark has seen better days. The landmark has been rescued from its sorry state by local businessman Bryan Huxford and reopened in July this year. Now though, the team of custodians keen to see it restored are appealing to the public for ideas as to how the Pier should be used in the future. “We have many ideas for what we'd like the pier to become.” says Bryan.
“But our long-term aim is to put the building into the ownership of the community, with us as managers.” “As such, we want to know what people living in Grimsby and Cleethorpes want to see at the pier. With a deadline of July 2014 to create a proposal and secure funding, Bryan and his team are appealing for ideas which can be submitted on their Facebook page which can be reached by searching for ThePierCleethorpes.

Spires and Steeples unites fitness and heritage... Arts and heritage trail is also a great way to get fit this month with October charity run... Sleaford and Lincoln’s Spires & Steeples Challenge takes place on Sunday 13th October, offering participants a chance to get fit and enjoy some of the county’s best art and architecture. The challenge has been a successful charity run/walk following the public footpaths and bridleways along the Spires & Steeples Arts & Heritage Trail. For the past five years participants have been able to challenge themselves to complete the route whilst enjoying the scenery and taking in the beautiful artworks, church architecture and the variety that is the Lincolnshire villages and countryside on the Spires & Steeples Trail. The trail is 26 miles long and stretches from Lincoln Cathedral to St Deny’s Church in Sleaford. Along the way will be beautiful artworks made by local artists. Visitors can this month enjoy the artwork at their leisure, join the

Horncastle and Woodhall Spa... With community spirit alive and well this traditional market town and pretty village are well-placed to provide visitors with a lovely day out! “I love it here.” says Horncastle’s Mayor, Fiona Martin. Fiona wasn’t expecting to stand for the position for a fifth time, but with the town’s Bil Aron declining the mayorship to take up a position with Lincolnshire County Council, Fiona once again has the chains around her neck. “My favourite aspect of the town is its community spirit.” Fiona told us. “It’s best known for its antiques shops but there are lots of clubs and organisations, a bustling market with over 20 traders and the Viking Way for walkers and cyclists.”

“Visitors will enjoy St Mary’s Church, the Lincolnshire Wildlife Trust’s wildflower meadow walk through its Banovallum House headquarters and the Joseph Banks tribute garden.” The town has 18 antiques shops and around 460 dealers, but Fiona adds that shopping is just one of its best attributes. “It’s not swamped with national retailers. There are still good butchers, bakers and greengrocers. There’s a good mix of small independent traders in the town and it retains an old fashioned market town feel.” In addition to its Dambusters heritage, and Kinema in the Woods, Woodhall Spa has a newly renovated Jubilee Park which attracts around 35,000 each year. Park Manager Joe Stanhope says; “It’s a great, free attraction for families, gifted by Lady Weigall in 1935 to the town for all to enjoy.”
Tattershall Castle “It passed into the care of the Parish Council three years ago and we’ve spent £500,000 renovating its swimming pools, also opening a new playpark in February this year.” And finally, Richard Leatham, General Manager of Woodhall Spa Golf Club is celebrating, too. Its Hotchkin course was last month named the 39th best course in the world by website The Top 100 Golf Courses. The course usually hosts four major tournaments each year, giving the village unique appeal for golf tourism.
The Garden LINCOLNSHIRe BOTANIST Sir Joseph Banks is remembered with a tribute garden on Horncastle’s Bridge Street, open by appointment only. The courtyard provides an attractive oasis in the market town and features 70 different species of plants, many collected on his voyage with Captain Cook on HMS Endeavour. See www.ngs.org.uk.

It’s been a great year for the flicks in the sticks as
Woodhall Spa’s silver screen shows cinema’s golden age... In the age of the blockbuster, with 3D pictures, special effects and surround sound, you’d be forgiven for thinking fans of the silver screen would eschew Woodhall’s ‘flicks in the sticks’ for a multiplex monolith. You’d be very wrong!
Today though, despite Kinema’s traditional look and feel, and its trompe l’oeil motifs of Lincolnshire, the underlying technology is right up to date; the cinema went digital in 2011 with NEC projectors, a cinema server screening films that arrive by hard disc and Dolby surround sound.
In fact, The Kinema in the Woods is more popular than ever and last year screened 2,000 showings of over 80 films. Philip Jones has been the cinema’s manager for four years, and told us; “The Kinema is unique in the fact that it’s a rear projection system. The building was originally a sports pavillion and was converted into a cinema in 1922 - but its architecture made conventional projection impractical.” It would be six years before sound was added, and until 1953 the first six rows of the 265 seater cinema had deck chairs. Its Compton organ was installed in 1987 and is still played regularly by resident organist Alan Underwood.
That all adds up to a traditional cinema experience but with the latest technology on both Kinema and its second screen, which was added in 1994. What does make Kinema different from multiplex cinemas though is its value. Avoiding the rip-off prices at multinational cinema chains, Philips says; “We only sell Dennets Ice Cream and our popcorn at manufacturers’ RRP.” Kinema also has a healthy programme of art house and classics on offer October sees a ‘pyjama party’ screening of Dirty Dancing on 19th October and a halloween screening of Kubrick’s The Shining on 26th October.
The Long Drop... WILLIAm mARWOOD is one of Horncastle’s more infamous sons. As the inventor of the ‘long drop’ method of hanging, the hangman made capital punishment (slightly) more humane by ensuring a quick death. Born in Church Lane, the former cobbler hanged 176 people during his career in Lincoln Castle and London.

Since Archie’s Independent Coffee House moved into an existing snack bar in Woodhall Spa in 2012 they have quickly established as a part of the local Woodhall Spa community, with a loyal, local customer base and has quickly become known as Archie’s. People are beginning to recognise the quality of coffee on offer and travel from throughout the county to visit. Although Archie’s specialise in gourmet coffee, they also offer a full range of specialist teas and cold drinks and recently became fully licenced to sell alcohol, after the refit in February this year. Joshua Edmunds, Owner and Head Barista, is passionate about coffee and has introduced single origin drip filter coffees from around the world. This method of brewing coffee brings out many subtle flavours and each is distinctive, much in the same way as wine can be identified. The philosophy of Archie’s is to support Lincolnshire producers wherever possible and all bread and meat products are sourced from award winning local Bakeries and Butchers. The wide variety of cakes on offer are baked daily at the original ‘Archie’s’, Archie Hardwick in Boston. Throughout the summer months they have offered evening opening on Thursday, Friday and Saturday, with a Tapas style menu, also providing a terrace area at the rear all day and into the evening. With the colder months approaching, the menu will be adjusted to incorporate more ‘hearty’ fare such as stews and more meat dishes will be added.

From last year’s Restaurant of the Year, The George of Stamford - one of the county’s oldest coaching inns - to Winteringham Fields, home of TV’s Great British Menu participant Colin McGurran. As Lincolnshire is the county that feeds the country, we’re this month looking to celebrate the quality and diversity of restaurants and food producers in the area with our annual Good Food Awards. We want our readers to vote for their favourite restaurant, their favourite bistro or café and to nominate a Food Hero - someone who acts as a really great ambassador for the county’s food. beautiful country house hotel, returned to life! Grimsby’s Oaklands Hall Hotel was the family home of the Lockwood family, sold in 1966. Its new owner, Caroline Lawson has special memories of the property, her grandfather’s home, and used to play there as a child. The house became a hotel, but Caroline and husband John were dismayed to see the building fell into a poor state of repair and eventually succumbed to bankruptcy... so much so, in fact, that the couple purchased it with a view to turning it around with fellow directors Nigel and Sarah Underwood. That was in March 2011, and since then, the couple have spent £1,000,000 refurbishing half of the hotel’s 46 bedrooms, revamping the hotel’s ground floor, and creating its restaurant, The Comfy Duck, in conjunction with hospitality consultant, outside catering expert and its head chef, Steven Bennett. Originally from Louth, Steven comes from a family of butchers and bakers. He’s trained at Grimsby College and worked at Winteringham Fields. He then became the Brackenborough Arms in Louth’s Operations Director. Here, he managed the venue’s complete refurbishment before the company took on the Ashbourne Hotel near North Killingholme, then managed the day to day running of both venues. Steven’s experience working as Head Chef in the kitchens of fine dining restaurants, his outside catering experience, plus time managing the business interests of hotels and restaurants led him to set up as a freelance hospitality consultant. Steven’s remit at the Oaklands Hall Hotel was to oversee its restoration, and manage the business’s accommodation, but mainly to set up its Comfy Duck restaurant. He became head chef last October, and 12 months on, the restaurant is one of the best places to eat in North Lincolnshire. Comfy Duck is a bistro, open seven days a week to both residents and non-residents. There’s a lunchtime/lounge menu, and an à la carte evening menu offering a choice of 10 starters, 13 main courses, three steaks and 11 desserts. The team really has done a fantastic job, not just in terms of providing choice, but in terms of the quality of their food. 23

rESTAurANT OF THE MONTH During our visit Steven showed off dishes from both his summer options, but also his forthcoming autumn menu. Hearty dishes include appetisers from a slow roasted knuckle of pork flavoured with fennel, to home cured breast of wood pigeon with pistachio and blackberries and a mezé of Greek-inspired appetisers from kofte to humus, chargrilled vegetables and tzatziki. Main course options include a ‘pork wellington,’ slow braised beef bourguignon and a gourmet fish and chips with Oscar Cleve haddock. The hotel’s à la carte menu celebrates suppliers like Oscar Cleve with short biographies of each. These include rare breed pork supplier Three Little Pigs, Louth’s Covenham Garden, butcher John Pettit - established in 1892 - and its own Oaklands Smokehouse, as well as the usual suspects; Batemans, Pipers, Cote Hill, Dennetts and Cote Hill. “We’re spoilt for choice in terms of local suppliers.” says Steven. “It really helps with our food philosophy, which is to provide fresh, seasonal ingredients which reflects what’s going on in the fields surrounding the restaurant.” “I see too few restaurants who are passionate about their ingredients and about letting the flavours come through naturally. It’s easy to over-complicate dishes to try to dazzle diners with too many flavours - sometimes less is more and fresh ingredients will satisfy diners without too much fuss.” Steven and his team have created robust menus, but the brigade still retains a sense of passion and enjoyment in their food - the outgoing summer dessert menu features a fun assiette themes around the seaside with grown-up versions of a ‘99’ ice cream, stick of rock, candy floss, doughnuts, popcorn and milkshake.
The autumn menu’s fun assiette will follow a back-to-school theme, with better versions of lunchtime favourites like spotted dick, jam roly poly and flapjacks. Speaking of going back to school, Steven believes you’re never too old to learn, that’s why he’s had a little help during his consultancy process himself, from daughters Jade Tia, 14 and Ella May, 11, who have helped their dad to put together the county’s best children’s menu, which will be unveiled this month. Making food a pleasure is what the brigade focuses on, but everything revolves around the fundamental technical skills that underly the creation of each dish. The restaurant is Tastes of Lincolnshire affiliated and its AA rosette award is pending, whilst its reputation in the area is growing - the hotel has a two-week waiting list for Friday and Saturday evenings. “We’re really pleased with the feedback we’ve had so far.” says Steven. “We’ve just launched our Christmas menus and our festive lunches are already booking up quickly.” “Meanwhile we’ve started to host easy listening and jazz performances in our lounge on Friday and Saturday evenings and our 14 year old violinist Shannon provides a classical music backdrop to our Sunday lunches, which customers love.” “The overwhelming feedback we’ve had is that people are delighted to see the hotel looking good once more, and providing a great environment in which to enjoy meals prepared with real care and attention.” A beautiful backdrop, innovative menus and strong technical skills are all combining to ensure Oaklands Hall Hotel is not only one of the area’s newest places to dine, but also one of its most promising. It’s a sincere recommendation for those seeking high quality dining in North Lincolnshire this season.

The hotel’s grand Edwardian exterior and beautiful grounds are a lovely antidote to modern boutique hotels.
T
here’s a lot going on in Woodhall Spa, as you’ll see from our feature earlier in this edition. During a visit to the village though, it’s Woodhall’s most well-established hotel that we’ll recommend for a dining experience. True, a couple of hotels have revamped and rebranded over the past couple of years, but none of them have the provenance that The Petwood can boast. Our main courses were a slow-roast assiette of locally reared pork (main) and pan fried duck breast with ginger and star anise pan juices.
Edwardian in origin and a former stately home, the hotel itself was built in 1905 by Baroness Von Eckhardstein, latterly Woodhall Spa's influential matriarch Lady Weigall. In 1911 she commissioned Frank Peck to extend her home and create the building we know today. The Petwood has been a hotel since 1933 – save for a brief stint as an Officers’ Mess for 97, 619 and 617 Squadrons during the 40s, and has been owned by the same family since 1996. Unlike a modern boutique hotel The Petwood’s look and feel is somehow more authentic. During our visit a family day at the hotel saw local families enjoying the grounds and having afternoon tea, but whilst it was a lovely sunny day, I personally prefer the Petwood in the autumn and winter. Its wood panelled lounge and dining rooms with their monstrously large fireplaces and stone mullion windows are so cosy, and a sense of tradition permeates the dining experience. This is no soulless modern boutique hotel with stripped wood, and flagstones or bare tables with leather seats and trendy cutlery - traditional table linens, lavish window dressings and a more formal menu have always appealed to diners seeking a comfortable traditional experience. That’s not to say the hotel doesn’t welcome some change though, and recently one significant piece of news is the arrival of its new Head Chef Philip Long. Having worked for Claridges, Philip is keen to make his mark on the hotel and has updated its menus with dishes like our assiette of pork, which, having travelled a short distance from its free range farm, was treated to a slow roasting and served with dauphinoise potatoes and Earl Grey poached prunes, or our duck with ginger and star anise. 29

rESTAurANT OF THE MONTH “With our new menu we want to keep a sense of tradition, but improve the food and take it to the next level.” says Philip. “We’re chasing a rosette and have created a range of dishes that are more fine dining oriented, whilst at the same time retaining a sense of provenance and good value.”
“We’re proud of the new menus, especially our desserts.” says Philip. “And our Christmas afternoon teas with stollen, mince pies and scones on traditional tiered stands are going to be popular in December too... we’ll definitely appeal to diners with a sweet tooth.”
The hotel provides prix fixe dining for both residents and non-residents seven days a week, whilst a bar menu and dedicated Sunday lunch menu take care of daytime dining.
Partly because of its Dambusters heritage, partly because of its grounds and partly because of its lovely afternoon teas The Petwood Hotel attracts numerous friends and visitors each year for dining, golf and leisure breaks and celebrating special occasions.
Seven starters, 12 main courses and six desserts provide plenty of choice whilst still ensuring a menu limited enough to comprise only fresh, locally sourced ingredients. Diners can enjoy two or three courses for £22 and £27 respectively. Local suppliers who make a star appearance at The Petwood include Boston’s Abbey Parks, Coningsby’s Papworth Butchers, Peterborough Game and Grimsby’s M&J Seafood. Naturally the Petwood is affiliated with Select Lincolnshire, but Philip isn’t aversed to seeking specialist suppliers a little farther afield too - a starter of smoked salmon, for example, sources beautifully smoked fish from the John Ross smokehouse in Aberdeen. Other starter options included scallops, pâté of wild mushrooms, duck breast with Waldorf salad and a deep fried egg served with duck leg confit. Main courses during our visit included two steak options, two fish options and three vegetarian options for a menu with particularly broad appeal. Desserts could have come straight from Claridges, with a beautifully presented assiette of petit fours, or a glass jar of blueberry cream and elderflower with shortbread and edible flowers just two examples.
It’s a popular hotel and justifiably so, but plans for the future of the hotel could ensure more and more people get to enjoy The Petwood too. Plans for a £1m restoration of the hotel’s Edwardian Peto grounds have already been granted – though the owners are still in consultation with the local council about the enabling development which will fund the garden scheme. Once completed this exciting project will add another attraction to Woodhall Spa and create local employment opportunities. The reinstatement of the hotel’s grounds and the hotel’s ongoing programme of refurbishment will keep one of Lincolnshire’s most beautiful buildings a stylish, luxurious and thoroughly enjoyable experience. We’ll keep our fingers crossed for the future, but more immediately, new seasonal menus and Philip’s appointment as Head Chef both make celebrating in style or enjoying afternoon tea at one of Lincolnshire’s most beautiful buildings a stylish, luxurious and thoroughly enjoyable experience.

here are few foods that stir the senses and evoke a feeling of pleasure like chocolate! Over the pages we’ve a few recipe ideas for being creative with cocoa, but before that we’ve asked the county’s chocolatiers to offer a few tips for getting the best out of your bar... Identifying good chocolate... The secret of choosing good chocolate is high cocoa content and a lack of vegetable fats. Cocoa butter - which makes up around 85% of the cocoa bean - is the most expensive ingredient in chocolate. That’s why some of the mainstream manufacturers of chocolate rely on vegetable fat rather than cocoa butter for flavour. Ideally dark chocolate should contain a cocoa content of more than 60%, or more than 30% for milk chocolate. Good chocolate will have cocoa solids and cocoa butter as their top ingredients. Make it snappy... Chocolate should be flawless, evenly coloured and a deep shade of mahogany or red. ‘Black’ is not necessarily an indicator of a good chocolate, it tends to indicate that the beans have been over-roasted. Good chocolate should feel silky and not sticky and it should just begin to yield to the warmth of your finger. Take a piece and break it - it should snap cleanly - if it splinters or crumbles, that’s not good. Finally, pop it into your mouth... most taste buds are on the front of the tongue which is where you should start tasting the chocolate. If it doesn’t start to melt straight away this is probably a sign of poor quality.

The texture should be smooth and buttery, gently dissolving into a creamy liquid filling the mouth with its complexity of flavours.
If it’s waxy or sticky, this is an indicator that the cocoa butter has been replaced with vegetable fat - and it is not ‘real’ chocolate. Cooking with chocolate... To melt chocolate, break it into pieces and place in a heatproof bowl. Sit it over a pan of simmering - not boiling water. Make sure that the bottom of the bowl doesn't touch the water, and that no water comes into contact with the melting chocolate, which will cause it to seize and become unusable. Making curls and shavings is easy with a vegetable peeler; soften chocolate for curls in a microwave on 50% power. Use a peeler or flat knife on room temperatures to take shavings. Tempering chocolate controls the crystallisation of chocolate to make it shiny, glossy and ‘snappable.’ Chop three quarters of your chocolate and melt in a bain marie as above, then use a food processor to finely chop the remaining quarter. Use a chocolate thermometer to identify when two thirds of your chocolate has melted as above, then when your chocolate reaches 55°c, add the remaining third of your chocolate. Rich and Delicious Chocolate Cake with Chilli and Orange For the Cake 150g dark chocolate ½ teaspoon coffee granules 1 tsp. crushed chilli flakes 125g butter 125g caster sugar 5 eggs, separated 75g self raising flour 1 pinch bicarbonate of soda 1 ½ tsp. baking powder 2 tablespoons cocoa powder 1 tablespoon rum or orange juice or water 1 teaspoon vanilla essence 1 tablespoon water Peel of half a medium orange, finely grated
For the Glaze 2 tablespoons of good orange marmalade
For the Icing 300g icing sugar 25g cocoa powder 125g butter 4 tablespoons of water
Preparation
This cake can be easily customised to suit tastes, if you like more heat then add more chilli. Go for fudge icing for a sweeter tooth or a bitter chocolate topping for a sophisticated taste and finish... Recipe: Divine.

Melt chocolate in a bain marie by placing the pieces in a heatproof bowl over a pan of simmering water, not allowing the bowl to touch the water. Add the coffee granules and chilli. Let the mix melt then stir with a wooden spoon. Remove bowl and leave to cool.

Meanwhile cream the softened butter with the caster sugar in a food mixer or the proper way, with a wooden spoon, until light and white. Gently stir in the cooled chocolate and four egg yolks.

Sift the flour, baking powder and cocoa powder into the bowl and then add the grated orange rind. Fold the mix gently together with a metal spoon using big scooping movements. Add the rum, vanilla and water.

Whisk five egg whites until stiff (don’t over whisk). Add to the mixture by beating in the first tablespoon to loosen the consistency. Then fold the rest in very gently using a metal spoon.
Don’t worry if the top of the cake has cracked a bit – you’ll be icing it up. Remove and place on a cooling rack. Take out of the tin after five minutes. Leave to cool. Brush the glaze on while still a bit warm.

To make the glaze, put the marmalade into a saucepan and melt over a low heat until it’s runny. Brush this onto the cooling cake base with a pastry brush.

To make the fudge icing: combine the sifted icing sugar and cocoa powder in a bowl. Melt the butter and water and pour into the icing sugar mix. Beat until combined. It should be easily spreadable but not runny so you might not need all the liquid.

Cover the top of the cake and sides generously with the icing, tip it then finish using a spatula.

Pour the mix into the tin and bang it into the oven for 45-50 minutes. Test it after 35 minutes by pricking with a cocktail stick; it should come out clean.
Preheat the oven to 160°c line and grease a 20-22 cm tin (springform or loose based).
An Alternative Icing For a bitter chocolate icing: melt chocolate pieces in a bain marie with butter and golden syrup. Pour it over the cake for a smooth finish. Let it set.

For the Base 140g digestive biscuits, crushed 100g butter, melted 1 tbsp brown sugar

To Decorate 40g white chocolate, shaved with a vegetable peeler, to decorate.
Lorraine’s Tip ”This dessert requires a couple of hours setting time, but if, like me, you aren’t blessed with oodles of patience, put the glasses in the freezer for half an hour to speed things up.”

40g dark chocolate 2 tablespoons hot water 4 tablespoons fromage frais Heaped tablespoon of toasted hazelnuts, crushed
Melt the chocolate and cream together in a bowl over a saucepan of barely simmering water, making sure the base of the bowl doesn’t touch the water. Mix the biscuits, butter and brown sugar together in a large bowl and divide among the glasses.
Whip the double cream and icing sugar together in a large bowl until it is very thick and can hold its shape in the bowl. Next whip the cream cheese lightly in another bowl. Fold the cream into the cream cheese until evenly blended. Spoon a dollop of the mixture equally among the wine glasses, then add a dollop of the melted dark chocolate over the top and leave to cool slightly until thick. Add another dollop of the cream cheese mixture and stir the chocolate into the cream using only two ‘turns’ of the spoon so the dark chocolate and the white of the cream looks marbled and the bottom layer of the cream cheese is left white. Top with the raspberries and white chocolate shavings, to decorate. Lorraine created this sundae for Divine’s Salon du Chocolat stand.

Slowly melt the dark chocolate in a bowl over a saucepan of simmering water. Stir in the hot water and mix well to make a thick, shiny paste. Allow to cool then stir in fromage frais.

Divide the chocolate mix between two espresso-sized coffee cups and put in the fridge to chill.
Toast the nuts by cooking them in a hot, heavy dry pan for a couple of minutes and then grinding them in a pestle and mortar. When the chocolate pots are chilled, top each portion with half the nuts and serve.

This rich moist chocolate tart is perfect for a formal dinner party. It makes a perfect accompaniment to a strong cup of coffee at the end of a meal, especially when served with home made ice cream... Recipe: Divine.

To make the ganche, melt the butter and chocolate over hot water, stir and leave until cool. Whisk the cream in a bowl until softly peaking and add the chocolate and ginger syrup mix until evenly blended. Spread the mixture over the tin and chill. Just before serving drag a dessert spoon over the ganache to form curls. Arrange on top of the tart and dust with icing sugar.

A Great Ganache If the chocolate gets too hot it may burn and cause the chocolate to seize, turning grainy and thick. If you notice before it all changes, you can rescue it. Remove from the heat and add a little hot water, stirring until glossy.
Home Made Ice Cream The perfect accompaniment to your tart; separate four eggs then beat the yolks together with 1tsp vanilla extract or the seeds from two vanilla pods until light and foamy. In another bowl, whisk the egg whites, gradually adding 140g caster sugar until it resembles meringue. Lightly whip 300ml double cream into stiff peaks then combine with the yolks and egg whites until everything is combined. Turn into a container, cover and freeze.

For the Truffles 100g butter – diced 140g dark chocolate with Raspberries broken into pieces 6 large eggs separated 140g ground almonds 1tsp almond extract 85 g golden caster sugar

Preheat oven to 170°c/325°f. Line the base and sides of an 8”/20cm square tin with non-stick baking parchment. Melt the unsalted butter and 70% dark chocolate with raspberries together in a bowl over a pan of simmering water – stir occasionally until smooth. Leave for five minutes to cool slightly. Stir in the egg yolks, ground almonds and almond extract.

Whisk the egg whites in a clean separate bowl until soft peaks form. Continue whisking adding the sugar a spoonful at a time. Whisk well between each addition until all incorporated and stiff peaks form.

Stir two tbsp egg white into chocolate mixture then gently fold in the remainder.
Spoon the mixture into the prepared tin and bake for 25-30 minutes until well risen and just firm to the touch.

To cover, stamp individual rounds out of the cake using a 1.5” cutter.
In three separate bowls temper white, milk and dark chocolate. Working on no more than five cakes at a time, set these on a wire rack with a sheet of non-stick greaseproof paper underneath the tray.

Using a large metal spoon or small ladle, spoon tempered chocolate over the cakes until fully covered. Gently tap the tray to settle the chocolate

Before the chocolate sets, dip a fork in a contrasting chocolate and marble over the cake creating interesting swirls as shown. Once the chocolate begins to set decorate the top of each truffle with chocolate decorations. Allow the cakes to set before using a palette knife to transfer the cakes to a serving plate.

uring Lincolnshire Pride’s 11 year history, I’ve had the pleasure of looking around some of the county’s most interesting and expensive properties. It’s a dream job for a voyeur of the des res, but it’s fair to say that most of them have been absolutely huge. Usually the subjects of our Welcome Home properties are couples, whose grown-up children have flown the nest, looking to downsize. By far my favourite properties, though, are the smaller, cosier country cottages we’ve featured, so for both myself and any potential downsizers out there, this month’s quaint two-bedroom Gothic Revival cottage is extremely attractive.

In addition to redecorating the house the couple refitted the kitchen with a shaker style installation with cream cabinetry, granite surfaces and integrated appliances. A separate utility room is large enough to use as an ironing room whilst the kitchen itself is great for the social cook. A large master bedroom has a separate dressing room and access to a large bathroom. There’s also a large guest room and a study area lined with bookshelves, but the layout of the first floor could easily facilitate a further bedroom or the creation of a ‘Jack and Jill’ en suite. If the property has been lovingly maintained indoors though, the grounds of Oldgate Dairy have been nothing short of a labour of love for the couple, who are keen gardeners and have created the parterre to the front garden, a vegetable patch and greenhouse when they moved to the cottage. “It has taken years to get it to where it is now, there simply to enjoy, with only the odd bit of weeding to be done, and a seasonal tidy up.” Planted with a wide variety of species, it provides a profusion of colour and scent throughout the year, and is a stunning backdrop to a summer BBQ or evening drinks on the terrace. “We are spoilt for choice when it comes to relaxing in the garden, there are so many lovely spots to sit and relax in with an aperitif in hand.” More informal relaxation is provided by a seating area under one of the many fruit trees, and a greenhouse and a kitchen garden supply ample herbs and vegetables for use in Carol’s cooking. Despite loving the cottage, Carol and Robert are seeking a move closer to their son & daughter-in-law and their grandchildren in Newcastle, and have rather reluctantly put the property on the market. It’s a beautiful home and the couple say they’ll miss it a great deal, but for its next owners a beautiful cottage that’s both pretty and practical is just waiting for its next custodians. 56

Bedrooms are a great place to incorporate indulgent textures, a ‘statement piece’ headboard, for instance, or cushions with clashing prints different shades of blue. “The beauty of blue is that it’s a perennial favourite and shifts its cast, according to prevailing fashion and its timing on the colour cycle.” says Nicole. “Sometimes cool blues can go a little further and be cold, though in a bathroom, where a crisp, clean vibe is suitable, this can be a good thing.” 74
Right now, blue is coming off a ‘turquoise high’ and preparing itself for a full indigo immersion. Whatever shade of blue you choose, the mood it evokes will depend largely on what colours you select for accents. Blues with green, for instance, are healthy, life affirming and ecological; blues with yellow are harmonious, making them perfect for a relaxing country bedroom. Don’t overlook earth tones and neutrals with blue, either. These subtle shades can add sophistication and freshness to many blues.

hen halloween rears its creepy head, be ready with an equally creepy looking head of your own and remind yourself of the simple pleasure of carving pumpkins this month. It’s easy to carve a simple pumpkin but here, we’ve a masterclass and a few ideas for carving the greatest ghostly gourds. Growing Pumpkins Children love growing their own vegetables, and encouraging them to grow a pumpkin ready to carve for halloween will make the pleasure last even longer. Grow seeds in pots from next spring, or in mid-summer if you’re sowing them directly into the ground. Good quality compost, tomato plant food and regular watering will keep your crop healthy, ready for a harvest in October. Varieties to try include Jack of All Trades, or the more ribbed, ornamental Rouge Vif D’Estampes, though if you’re keen to create a monster pumpkin, Hundredweight is, as its name implies, one of the largest varieties available. Choosing Your Pumpkin We’d always recommend a local independent garden centre or farm shop for purchasing pumpkins, or, why not pay a visit to the county’s pumpkin king, David Bowman? David grows around 4,000,000 pumpkins for the country’s supermarkets from his 500 acre farm, with around 80% of his pumpkins remaining in the UK. The farmer has even supplied a special edition ‘Mickey Mouse ears’ variety for Disney’s family resorts. Harvest Moon is his most popular variety but David has been growing pumpkins

for around 40 years, though last year’s crop was down by around 20% due to poor weather. Thankfully this year is much more promising, which means children across Lincolnshire and Rutland will be able to enjoy the simple pleasure of carving a spooky looking pumpkin just in time for October 31st. Carving your Pumpkin To create the perfect pumpkin, start by making a hole in the top of the pumpkin. You need to cut out a lid that can be replaced once you’ve finished, so angle the knife towards the centre of the pumpkin as you cut. The bevelled edge will keep the lid in place. You might also find it easier to cut a six-sided lid. Next, use a wooden spoon to clean out the seeds and strings. Where you plan to carve the face, scrape away the pulp until the wall is about 3cm thick. The best way to design the face is to draw it on paper first and tape or pin it to the pumpkin (or soak it in water and just slap it on – the water will make it stick). Then, using a toothpick or opened-up paperclip, prick holes along the lines and into the pumpkin. When you remove the paper, you’ll be left with a dotted outline of the face. You can make these holes easier to see by rubbing flour over the front of the pumpkin. Following the dotted line, cut the shapes out with a pointed saw-blade knife. You may need a few different-sized knives. Use a gentle but firm sawing action to avoid breaking bits off the pumpkin. Pieces that do fall off can be reattached with a toothpick. Rubbing the insides of the pumpkin with diluted bleach (one part bleach to five parts water) will preserve it for a few more days. The carved edges also deteriorate more slowly if you coat them lightly with Vaseline.

Make a basic candleholder from tinfoil and secure the candle at the base. Cut a small chimney hole in the lid to let the heat and smoke escape. Imaginative Templates The advent of the internet means you can now order or download templates for really impressive looking pumpkins. Leeds based Carveking (£3.99, www.carveking.co.uk) offers a pumpkin carving kit with five specialised tools designed for the job (which are also safer for children to use). The kit includes 10 designs which can be stuck to the pumpkin to create some really fancy designs. 82

his year’s Burghley was a successful one for New Zealand! Kiwi Jock Paget took victory on Clifton Promise pushing Brit William Fox-Pitt to fourth place. Fellow Kiwi Andrew Nicholson finished second and third on last year’s winner Avebury and Nereo respectively. Although he lost his Burghley crown, Andrew gained plenty of compensation in the form of winning the FEI Classics series worth £96,000 to the winner which came to its conclusion at the Stamford event.

“Richard proposed by a beautiful lake in the town of Nora in Sweden whilst we were visiting his family...!”
R
ichard and I met in 2005 at our local Young Farmers’ club. We became close friends and started dating in December 2006, not exactly to the surprise of our friends, who had seen it coming for months.
Richard proposed whilst on holiday in Sweden. We were visiting some of Richard’s family in a small town called Nora which is on the edge of a beautiful lake. One day he planned for us to take the ferry over to the island for a relaxing afternoon in the sunshine. On finding a quiet spot by a small jetty overlooking the lake and Nora in the distance, he popped the question. It was a beautiful moment! We decided very early on that our reception would be held at my parent’s farm and the first thing we actually booked was the wedding ceremony, which would be held at the beautiful All Saints Church in the village where Richard is from. To begin with, Richard was happy for me to organise everything - he would ‘just turn up on the day’ - but as I started to arrange things he kept having more and more input and ideas. On the day of the wedding I was relaxed and excited - it was Richard who later told me he felt really nervous waiting at the church for me to arrive! The moment I stepped into the church and looked up to see all our friends and family watching, I felt a huge wave of emotion and walking
down the aisle was actually a bit of a blur. As the service started we soon relaxed and my huge grin throughout the service showed exactly how I was feeling. Owning my own wedding dress shop, JDezire, I knew my dress would be hot topic and I did feel a little bit of pressure to get it right. I see so many brides who come in with one idea and end up with something completely different. After trying on some dresses myself it turned out that I would be just the same! I chose a full tuille gown that I just felt fantastic in, it really had ‘the wow factor’ and my excitement told me it was the one. My dress was very simple, with tulle straps; I added some sparkle with my tiara and necklace and a beautiful lace veil. We always knew the reception would be held at Fen Farm but after originally considering marquees we decided to do something a little bit different and to renovate one of the farm buildings. It worked so well in fact that we have decided to offer it for hire as a wedding reception venue. We already have wedding bookings for next summer and I can’t wait to see how each couple puts their own stamp of personality on it. The day was so relaxed and things just flowed really well. On the grass outside the reception venue we had games and a bouncy castle, which was a really fun touch to the day!

ike so many things in life, achieving a flawless finish when applying your makeup is all about preparation. Makeup expert Michelle Gomm works with the Lancôme brand and recently treated our model Anne Lenton to a makeover using the company’s newest products. Skin Preparation “One of the skin sins we see quite a lot is women who don’t take their makeup off at night or have a poor skincare regime.” says Michelle. “It’s really important to cleanse and tone twice a day, and to really achieve good makeup results, we’ve launched a new product, our Dreamtone serum (£69).” Whilst this serum may seem like yet another product to buy, using it is like having a facial each morning. Evening out skintone and reducing pigmentation, it’s designed to be used under your moisturiser and will allow you to use less moisturiser and foundation, making it a potential money saver as well as allowing you to achieve healthier looking skin and a flawless finish. Brush Strokes It’s advisable to use a primer under foundation, and Michelle recommends using a brush to apply your foundation rather than fingers, which will also use less foundation. It will enable you to blend it more evenly and dust rather than wipe it over the face. Avoid applying with sponges which soak in the oils. Likewise good hygiene is essential to keep your makeup brushes looking and feeling their best. “If you invest in a good set of brushes they’ll last you a lifetime.” says Michelle. “Use shampoo and water to clean them once a week and leave them to dry overnight. On the subject of
hygiene it’s a good idea to keep an eye on your best before dates and to change your mascara every 12-14 weeks as this is the product which comes into contact with the most bacteria.”

Autumn Trends Autumn usually sees stronger colour and this year is no exception. “We’re seeing lots of dark berry and wine colours, whilst deep pinks are popular and there’s always a surge in bright reds towards Christmas.” says Michelle. “Eyes are smokier, and if you find it difficult to find products that suit both a daytime and an evening look, create two sets of products with separate makeup bags to keep them to hand.” Astalift One of the hottest new products is Astalift’s Aquarysta jelly. Voted the number one skincare product in Japan, it’s only been around for a year over here. Pioneered by Fuji using the same products used in camera film, its Nanotechnology formula incorporates three types of collagen to boost the skin’s elasticity. Anne’s Makeover Michelle used Lancôme’s Cleansing Water, moisturiser and Dreamtone serum (£69) before applying La Base primer (£28) and Teint Miracle mineral foundation (£27.50).

THE DENTAl HEAlTH CENTRE, GRANTHAM “I really can’t tell the difference between the implants and my own teeth.” Ian Foard, Heckington I have now had two dental implants placed by Mr Colin Sutton at the Dental Health Centre and I really can’t tell the difference between them and my own teeth. I have had an upper right molar and a lower left molar replaced. The one tooth was crowned but it kept breaking up and the other had a crack in it.
This treatment does cost money but the practice has invested a lot of time in my treatment and in quality materials and equipment. I really think that dental implants are more cost effective in the long term. I had the crown that kept breaking replaced two or three times but I could have saved money if I’d had an implant straight away.
The reason I decided to opt for an implant is because I didn’t like the gap and I didn’t fancy the idea of taking my teeth out at night. For me it was important to have the gap filled because I think the surrounding teeth become weaker with the extra pressure on them and it also makes chewing more awkward. Mr Sutton is a very gentle dentist and the treatment I’ve had there has always been good. I’ve always had a great service - I find the practice clean and the receptionists are smiley, cheerful and professional and they all know me by name now.

BATIK ART Local artist Barbara Melling recently won the Pride Magazines Award for her batik piece in the Carre Gallery Open Exhibition. We were intrigued by the process and wanted to find out a little more about the textile technique that Barbara uses to produce her colourful, cheerful pieces... Words & Photos: Rob Davis.
C
olourful, creative and versatile, Batik Art is a technique practised by Barbara Melling, winner of Pride Magazine’s special award in the Carre Gallery’s summer exhibition. Many people associate Batik which is essentially a wax-resist dying technique, with 1960s tie-dye but it’s a far more versatile medium than a few hippy t-shirts would suggest! The artist works from her rural studio where she works on textiles using batik and felting techniques, as well as pottery, holding weekly classes in all three mediums for all abilities. We went along to see Barbara and find out a little more about her favourite technique and discovered that all you need is a couple of ‘tjanting’ tools, a frying pan, and a whole lot of creativity! atik and other wax resist crafts were all the rage in the 1960s when colourful, expressive tie-dye t-shirts were all the fashion, but the technique itself is much older - around 1,500 years, originally popular in Egypt and the Middle East.
It’s a technique based on the principle that oil and water don’t mix, and is a favourite of Barbara Melling. Born and raised in London, the artist attended Wimbledon School of Art, and gained a Fine Art degree before taking a postgraduate degree in Art Therapy and working in Hertfordshire and Essex. “As a child I’d always loved textiles. You could always find me sewing or working on embroidery.” says Barbara. “I got into batik as an extension of that, when my three children were little. They loved the colours, the control you have over the medium and yet the surprise when you reveal the final colour upon removing the wax.” “It’s remained my favourite technique although I also spend a lot of my time feltmaking and working on ceramics, too. I used pottery a lot in my art therapy career, when I worked with children and adults. It’s tactile, and can be a bit messy, which young children love.”

It’s also home to her batik, feltmaking and pottery classes on Monday, Tuesday and Wednesday daytime and evenings, as well as day courses in textile crafts.
Barbara’s studio is open to the public and showcases her batik work, textiles, ceramics and jewellery.

Whilst there are fancy melting pots available, she uses electric frying pans and a blend of beeswax and paraffin wax, filling a series of tjantings which

pour thicker or finer streams of wax onto her work. She then applies colour using Procian fabric dyes. “The parts covered in wax resist the dye and remain the original colour. This process of waxing and dyeing can be repeated to create more elaborate and colourful designs. After the final dyeing the wax is removed and the cloth is ready for wearing or showing.” Barbara’s work is sold through her website and via the artist and craft producers’ website Etsy. Scarves are around £50, whilst her canvases range from £120-£250 and cushions are around £35. “I have a number of techniques that I use regularly but batik is my first love.” says Barbara. “I love the vibrancy of the colours you can create, the fact that it can be used on so many materials and I love the fact that it can still surprise. When the wax comes off and the design is revealed, it’s a real treat.” “If you’ve never tried it before and you fancy doing something crafty, something a little different and something with a huge amount of scope for creativity, I can really recommend trying batik art for yourself!” 136

BARRY POSTON As Pride goes to press harvest is nearly over, but there’s no rest for the county’s farmers with the harvesting of sugar beet and potatoes...
F
ine weather at the end of August and early September enabled most farmers to complete their rape and cereal harvest in good conditions. Those crops that had been well established and were able to take advantage of the above average sunshine in the summer produced excellent yields and quality grain. When comparing a sample of last year’s wheat with a sample from this year, it was very noticeable how the size and appearance of the individual grain was so much larger and also more attractive in colour. In good conditions, some modern day combines have an enormous appetite, with over 100 acres and 500 tonnes a day output. Most machines now have on-board computer systems which record moisture and weight, plus any other information required. A lot of rape seed and wheat drilling has taken place through September, in addition to the harvesting of sugar beet and potatoes; yield prospects certainly look good and once again farmers would appreciate fine conditions to lift these crops in good order. Most of October will be spent finishing their potato lifting and sowing their winter wheat. Sugar beet continues to put weight on until early November so this crop will be lifted Words: Barry Poston

during September and October with a ‘just in time’ delivery to the factory. Considerable thought will have to be given to the control of the obnoxious black grass weed, which can reduce yields quite seriously. Light harrowing will help chit the seed from last year’s crop, which can be burnt off once or twice with the use of Roundup. Alterations to cropping plans with more spring crops being sown can also help with the killing off of blackgrass. It would appear that it is becoming resistant to a lot of the chemicals designed to kill it off in arable crops. I recently had a chance to have a chat with a sheep farmer who has a considerably sized operation. When discussing the - currently favourable - sheep prices he reminded me of the difficult spring when the lack of growth of grass and other grazing crops caused several deaths and slow growth of the lambs born then. It would appear that arable farmers are not the only ones to be affected by weather problems! I would like to finish on a positive note, having read a recent article on how nitrogen fixing bacteria could be used on crops of wheat or rape, and could reduce expensive nitrogen bills in the future. Research work at Nottingham University has isolated these bacteria which could soon be used to isolate and fix nitrogen from the atmosphere and would dramatically reduce farmer’s fertiliser bills. he Range Rover Sport was initially designed to fill a gap between the more expensive ‘proper’ Range Rover and more road-biased SUVs like Audi’s Q7 and Porsche’s Cayenne. Sport always suffered from the stigma of being a poor relation to the Range Rover and worst still, from being purchased by footballers rather than aristocrats. What’s more, the previous model, launched in 2005, shared the off-road biased chassis and a similar dashboard design to the Discovery so it was a bit heavier and less comfortable than it should have been given its on-road predilection and a desire to ally itself with the Range Rover as opposed to the Discovery. Neither affected the Sports sales though! Land Rover’s press office told us that 3,926 Range Rovers were sold in 2012. In the same period, sales for the Range Rover Sport were 7,732, making this model extremely important for the brand. So why do people prefer the Sport? For a start the cheapest model is now £51,550 compared to £71,310 for the Range Rover. It’s also just as well-equipped and just as good off-road as its larger sibling.
A new model is now available in showrooms and will probably widen the gap between the two models’ sales figures even further, because this time around, the Sport shares an aluminium chassis with the Range Rover making it lighter and more economical than its larger sibling. What’s more, the Sport is now available with two extra seats in the rear - a trick borrowed from the Discovery - making it even better for its core audience of school-run-mum Q7 drivers. Enhanced on-road tricks like torque vectoring, and Dynamic Response create a sportier drive, whilst the most modest engine, the 3.0V6 diesel tuned to 190ps, will still achieve over 38mpg combined; 34mpg around town. This engine reaches 60mph in seven seconds and reach 140mph. In its enhanced state of tune the 215ps version of the same engine can shave a second off your 0-60mph time for a slight economy penalty, whilst the rangetopping 5.0 Supercharged V8 engine reaches 60mph in five seconds, 155mph flat out, but achieves little more than 22mpg; it’s the least practical choice. Three trim models are available, with the 190ps engine reserved for SE models, the 215ps engine for HSE or Autobiography models and the 5.0 reserved for Autobiography trim.

Opt for the SE model and you’ll enjoy greater economy and the opportunity to cherry pick the options you prefer, but that’s not where your choices end. All models are available with two electrically deployed seats in the rear for extra practicality. Though they’re really only suitable for children, the option will appeal to families. There’s also a Dynamic package which adds a more aggressive body kit with gloss black exterior trim and larger wheels. Speaking of the vehicle’s cosmetics, no fewer than 17 colours, seven interior trims, 11 interior colour
schemes, nine wheel designs and the option of a contrast roof all provide plenty of scope to change the appearance of your vehicle to create a car that’s more reserved or outlandish as befits your personality. If you averaged out the design of the smaller Range Rover Evoke and the new Range Rover the Sport would definitely be the result. It’s decidedly Range Rover in its shape, and for the first time, fit to challenge the on-road dynamics of ‘soft-roaders’ like the Q7 and Porsche Cayenne. Sport’s trump card, though, is that it’s still unbeatable off-road and will handle any terrain you throw at it without fuss. To say that all these changes are the highlights of the new Sport is a misnomer though. The car’s main changes are not the superficial cosmetic ones, they’re the dynamic changes made to the car’s architecture and handling. It’s now a much more distinct car compared to either the Discovery, on which the previous version was based, or the Range Rover. Tauter, nimbler, with new electronics keeping body roll in check, the car inspires more confidence, and has a more dramatic personality. The new model handles phenomenally with a ride that’s a little firmer than before, but grippy and confident. The technology that Land Rover has employed doesn’t dull the driving experience, but combines sports car competence with unsurpassed ability. Sport is no longer the poor-man’s Range Rover, it’s the great value luxury sports tourer that’ll still put a smile on your face, despite its off-road ability and practicality.

Wind Power in the Wash...
Deputy Prime Minister Nick Clegg was in Grimsby at the start of August to open Centrica Energy’s Lincs Offshore Wind Farm, five miles off the Skegness coast. The £1bn project comprises 75 wind turbines, generating 270mw of clean electricity enough to power 200,000 homes two thirds of the homes in Lincolnshire. Construction began in 2010 with the first power achieved in August 2012. The last of the Siemens turbines was lifted into place in
March this year and was connected to the grid just a week before the Deputy PM’s August 1st visit.
Grimsby’s £3m Centrica operations and maintenance base will provide technical support for the Lincs Offshore Wind Farm, plus the Lynn and Inner Dowsing wind farms too. Over 350 people have been involved in the farm’s construction, and the project is a joint venture between Centrica, Siemens and Dong.

The Lincs Offshore Wind Farm’s 75, 3.5mw, turbines reach 145m above the sea and turn at 13rpm. The blades’ rotor diameter is 120m, with each 58m long blade weighing 18 tonnes. The wind farm’s export cables are buried 2m deep in the seabed. The towers are prefitted with ladders and lifts, switchgear and lights, and in the turbine assembly at the top is the generator, gearbox and transformer...

Consumer Rights Bill – clearing the shade ?
A
lthough legislation on consumer law has increased over the years, it remains very unclear for both businesses and consumers. Now, we have some proposed legislation which if it is approved by parliament next year should be a step in the right direction. Some of the proposals include:– Placing statutory rights in every contract between traders and consumers, with restrictions to prevent ‘opting out’. The right to a full refund if consumers return faulty goods within 30 days of purchase. Currently, consumers can reject good as faulty within a ‘reasonable period’ which some businesses might treat as 14 days and others up to 2 months.
No reduction of refund for use of faulty goods in the first 6 months after purchase, unless there is a proven, reduced, 2nd hand value. Up to now, traders would normally offer only a partial reduction. For faulty digital content such as film and music downloads, online games and e books there would be a new, specific right of repair or replacement. More clarity on consumer rights should benefit business by reducing the time spent working out legal obligations. In addition, Trading Standards officers will be required to give ‘reasonable’ notice of routine inspections. On the other hand, with talk of naming and shaming businesses which contravene consumer law, traders should be careful to ensure that their terms and conditions and complaints processes fall in line with the proposals.

The Queen’s 2013 speech referred to a new immigration bill due in autumn 2013, which would reform Britain's immigration system. There are three main aims of the bill; stopping immigrants accessing services that they are not entitled to, making it easier to remove people from the UK and harder for people to prolong their stay and that foreign nationals who commit serious crimes shall be deported unless extraordinary circumstances exist.
The Home Office and Office for National Statistics published some statistics on migration covering the period January to March 2013. The statistics show that net migration has reduced by more than a third since June 2010 and is at its lowest level for a decade. There was a net flow of 153,000 migrants to the UK in the year ending September 2012 compared to 242,000 in the year ending September 2011.
The bill is to include a new requirement for ALL private landlords (reportedly 2 million) to check the immigration status/of tenants, in order to ensure their right to be in the UK and to fine landlords if they get it wrong or/fail to make checks. In 2008 a civil penalty system was introduced where employers can be fined up to £10,000 per illegal worker if the employer fails to obtain the correct paperwork from the employee to show their entitlement to work in the UK.
