I
t’s always tricky to write a message my readers, wishing you a Happy Christmas, given that our December edition is published in November, making good tidings seem a little premature. It’s actually our next edition, titled January, that’s published just prior to the team signing off for the festive season. Nonetheless, it’s in this edition that we go crackers for Christmas and so it’s in this one that I’ll wish you and yours a happy and fulfilling season from the whole Pride team. This month we’re talking turkey, we’re enjoying local food, we’ve gift ideas and lots of ways to decorate your home, and we’re presenting roundup of the festive events and celebrations happening around the county. Elsewhere? Well, we’re meeting local artist Kay Johns whose talent in creating cheerful artwork inspired by local wildlife is the sort that just makes you want to smile. And speaking about going wild, you’ll really enjoy taking a peek at Jenny Caswell’s incredible treehouses near Woodhall Spa; they’re so cosy and luxurious, as you’ll see for yourself. Also in this edition, we’re paying a visit to South Rauceby’s excellent Bustard Inn – a quality pub restaurant it’s impossible not to recommend – and we’re dropping in at no fewer than three social events on our High Life pages. Christmas returns to Lincolnshire...! LOOK FORWARD TO CHRISTMAS CELEBRATIONS AFTER A YEAR OF COVID DISRUPTION LINCOLNSHIRE It’s been a difficult year, but the good news is that Christmas is definitely returning to Lincolnshire with all of our favourite events and attractions set to join in festive celebrations. The county’s flagship event will be Lincoln Christmas Market which returns from 2nd December to 5th December in Uphill Lincoln, with over 280 stalls providing festive food and gift ideas for the 250,000 visitors who attended the event pre-Covid. Santa Claus will be appearing at the city’s Waterside Shopping Centre from 27th November, and the Showground will host its Food & Gift Fair on 27th and 28th November too. Elsewhere, Boston will turn on its Christmas lights during its Christmas Market event on 25th November with the theme ‘Light and Hope.’ In Grantham, The Engine
Yard adjacent to Belvoir Castle will host a series of events including Santa’s Grotto alongside its festive shopping and food provision; see later in this edition for more information.

LINCOLN A new beauty salon is set to open its doors to clients at Burton Waters, owned by the Nottingham-based Beauty Temple Group. As well as regular beauty and wellbeing treatments, the salon boasts state-of-the-art equipment offering non-surgical facelifts, laser hair removal and tanning beds. BOSTON We’re all reassured by the presence of the county’s ambucopter, but whilst the Lincolnshire and Nottinghamshire Air Ambulance can pick up a casualty from a field at night, the helicopter cannot take a patient either to or from the Pilgrim Hospital in Boston in darkness because the Civil Aviation Authority requires the landing site to be equipped with specialist lighting. The Rotary Club of Boston, in co-operation with other Rotary Clubs in
Lincolnshire, have set out to raise the £10,000 necessary to install approved lights and an illuminated windsock at the hospital’s helicopter landing pad, all eco-friendly and powered by solar panels. The Club is therefore launching a crowdfunding campaign to raise the funds.
SLEAFORD Holdingham Roundabout, which intersects the A15 and A17, at Sleaford, is on track for a Christmas completion of its £8.25m improvements. The roundabout is a key pinch point for motorists travelling to Lincoln, Sleaford, Newark and Boston, and for holidaymakers travelling to Norfolk, as well as HGVs. New lanes, traffic lights and better signage will make it safer and more efficient at guiding motorists to the appropriate exit. It has been funded by the GLEP, LCC and NKDC. n

LINCOLN Lincoln mum Zoe Sheridon is taking on her fear of heights by embarking on a charity skydive for mental health charity MIND. Zoe works as an activities coordinator for Tennyson Wharf Care Home at Burton Waters, and says that she’ll overcome a longstanding fear of heights to conquer the challenge. “I don’t think anything could prepare me for what is about to come. Boston and Peterborough are the two frontrunners out of 50 locations for a new ‘Museum of Brexit.’ The idea is the brainchild of Lee Rotherham, former Special Projects Director of Vote Leave. The two locations have been chosen because 61% of Peterborough and 76% of Boston residents voted to leave during the 2015 EU Referendum. It’s that time of year again. Time to venture into the loft and dust off the decorations. A swift survey among the Pride team seemed to confirm that among all of the jobs we face during the festive season, decorating the house remains the favourite of all. Some, though, put a little more effort into creating decorations than others. Take Charlotte Lloyd Webber, for example. Raised in London within the Lloyd Webber dynasty of composers and theatre empresarios, Charlotte was always going to find her way into the theatre, albeit in a design role rather than on stage. 20 years ago she founded the Oxford Shakespeare Company and in 2010, she also founded the Lamplighter Theatre Company too. Running parallel to her interests in the theatre is an interest in interior design and the renovation of old properties. Add to that a keen interest in history and an assiduous approach to researching old buildings and the stage was set for her interests to merge when the Chatelaine of Castle Howard in York, Victoria Howard, approached Charlotte to ask her opinion about how best to present the property to visitors during the festive season. >> Top and Opposite: Installing Belvoir Castle’s 2021 Regency Christmas displays. >> “It was around 2001 when the Foot & Mouth outbreak was compromising rural tourism,” says Charlotte. “Put bluntly there was less money going into the coffers and Castle Howard decided to open with special decorations for the festive season. It was traditional at first, but slowly, over the years it ramped up. Victoria asked how best to make the most of the property and my advice was simply ‘look at what you’ve already got!’” It’s a method that Charlotte still employs today in her now wellestablished role as design consultant for some of the area’s most impressive stately homes, not least among which is Belvoir Castle. Whilst every English person’s home is their castle, our own properties might be a little more modest in scale, but that’s not to say that following roughly the same approach to design that Charlotte advocates can help you to decorate your home for the season with the same commitment. Interestingly, there are parallels between Castle Howard and Belvoir Castle, given that the former was created by Vanbrugh in 1700 and Elizabeth, the daughter of the 5th Earl and Countess of Carlisle, was the young dynamic bride of Belvoir’s John Henry, 5th Duke of Rutland, who sought to recreate Castle Howard at Belvoir. “The way we approach any design project is to establish the glory of the house, to work with the property… always. Sometimes we layer a theme on top of that, but we always work with the architecture.” During our interview, Charlotte was fresh from filming a documentary with Channel Four for her work at Castle Howard, which this year has a theme of the Chronicles of Narnia, but in a baroque style commensurate with the architecture of the property.

There’s something lovely about a real tree, but an artificial one provides much greater consistency in its shape, density and the distribution of its branches.” One of her favourite materials is preserved floristry. It’s more realistic and feels better than silk or plastic floristry replicas, but doesn’t dry out and wilt like fresh greenery. The finish is lovely, and eucalyptus, fern, spruce, pine, roses and hydrangeas afford plenty of choice.
Working with your property’s architecture, rather than trying to fight against it, and bringing in your beams, or high or low ceilings and playing with the scale of your decorations in the relation to the dimensions of your room – creating oversized displays, for example – can help to create a dramatic look. “It takes us all year to plan a scheme,” says Charlotte. “Even before the current year’s installation is in place we have a concept in mind, and attend trade fairs in January and February before presenting the proposed design around March. Once agreed upon, the elements and props are built during the summer ready for installation from October.” Whilst that level of planning is beyond the domestic, the point stands about planning and considering your decorations before getting started. Charlotte advocates buying quality, and favouring glass over plastic. “It’s easy to dismiss artificial trees as being less environmentally friendly, but a really

Generally, too, it’s a good idea to avoid symmetry and to mix objects in clusters in odd numbers, usually three or five. I also favour copper wire lighting rather than conventional fairylights.” “Once you’ve created a tree or a display, take a step back and squint. Defocusing your eyes allows you to get a better impression of the distribution of decorations, allowing you to refine any bits that you’re not happy with.” “There are a few habits and rules that we stick to as professionals, but rules are made to be broken. Not withstanding a desire to create a really lovely looking decorations, it’s still your home, so the most important element is to enjoy the process and make it fun, not a chore.” n

I’M DREAMING OF A GREEN CHRISTMAS The mythology and joy of Christmas greenery...
n Mistletoe: The curious thing about mistletoe is that it’s a parasitic plant in that grows on other trees – lime, hawthorn and apple. The druids believed that mistletoe brought good luck and protected against evil spirits. There are over 1,500 varieties, but you’ll recognise European mistletoe (Viscum album) as the usual variety. A kiss under the mistletoe is a tradition which was established in the 1700s. Beware, by the way; it’s very toxic to pets. n Holly: Holly was adopted by Christians because of its similarity to the thorns on Christ’s crown, the crimson berries are a metaphor for life after death. Folklore states that it’s unlucky to bring holly into your home before Christmas Day! n Ivy: In pagan times, holly was considered male, whilst ivy was considered female, both are burnt together during the festival of Beltane. n Poinsettia: These originate from Mexico and were popularised in America before making their way to Europe. 12th December is known as Poinsettia Day to honour Joel Roberts Poinsett, after whom the plant is named. Legend states that a poor girl presented Jesus with a weed, unable to afford anything else, whereupon it transformed into a beautiful plant... a festive poinsettia!

First up, you want to get one of the wings off. Because if you’ve rested your bird, the wing should pull away from the body easily, or you can cut through the joint where it meets the carcass. Slice down where the legs meet the body, and take the legs off in one piece – don’t separate the drumstick at this stage. Feel along the turkey’s backbone and slice down the side of it, to remove the whole breast in a single piece. Lift the breast onto a platter or chopping board. Take the breast off the other side in one piece. Place all your turkey joints on a board or platter. Turn the carcass over to slice off any dark meat from the underside. Place the breast skin-side up on a platter or chopping board, then continue along, carving off thick slices. The fact that there’s no bone means that even the most novice of cooks can carve like a chef! Separate the drumstick from the thigh, and carve the dark thigh meat. Transfer the dark and white meat to a platter, then pour over a little gravy so it doesn’t dry out. Take your platter to the table and let everyone help themselves. n

and 10 people and with cooking tips supplied, you’ll find roasting the centrepiece of your festive lunch a cinch. n Roast Potatoes No self-respecting Lincolnshire household should scrimp on the quantity or quality of their roast potatoes. Whilst they can be roasted and frozen then defrosted ready to cook on the day, they’re just not the same. Whilst you can peel them the day before, and keep them immersed them in cold water, they’re best roasted on the day. Boil them in salted water until you can insert a table knife (not a sharp kitchen knife) into them without resistance and as they’re boiling, use a wooden spoon to move them around the pan to ensure the heat is evenly distributed. Once cooked, drain and leave in a colander to let all of the heat and moisture evaporate off them. They’re ready to roast when they’re no more steam rising from them. Meanwhile, as the potatoes are drying, put your beef dripping – Imp & Maker’s dripping comes straight from the farm – in a roasting dish to get really hot. You can also crush a couple of cloves of garlic too with the back of a spoon and chuck those in. Before roasting, give the potatoes a good riddle to ensure they’re a little battered on the outside; more surface area means a crispy outside.
When you put the potatoes in to roast, you should expect a good sizzle. Turning them a couple of times to ensure an even roast, and draining the fat from them before you put them back in the oven for the last half an hour, will ensure drier, crispier roasties. n Creating Your Own Stuffing Too many people scrimp on stuffing when it is, in fact, really easy to make. A sourdough loaf – or a granary loaf with cranberry and walnuts from the supermarket – makes a good base when blitzed in a food processor. Add sausage meat, an onion, a clove of garlic and a few sage leaves, blitz together and bake until golden brown, either in tray form or as balls. n Enjoyable Brussels Sprouts Too many people regard Brussels with distain. The only bad brussel, though, is an overcooked one. Steaming gently will keep the colour and the nutty flavour and prevent them from going sour. If you’re really having a hard time convincing your fellow diners that Lincolnshire’s best brussels are something to really sprout about though, steaming then frying with lots of butter and bacon lardons will convince even the biggest sceptic. You can also combine brussels with savoy cabbage and to create a medley of veg, which can be stir fried together with butter and/or horseradish sauce. n

The true meaning of Christmas might not be gifts and toys, but it’s the men in advertising who created the festive season as we now know it! MANY PEOPLE BELIEVE that it was Coca Cola who ‘invented’ Santa Claus, with his bright red suit. The truth is, in fact, a little more nuanced. Nicholas of Myra (270-343AD), of Turkish origin, is the patron saint of children, and his feast day is 6th December. Little is reliably recorded about his life given that he was an early Christian bishop, but Saint Nicholas was believed to be benevolent. Under Henry VIII, it’s believed attempts were made to suppress St Nicholas, but traditional festivities resumed after the restoration in 1660. At some point here, imagery was consolidated from anything from a tall thin man to an elf, into the jolly man in a scarlet suit we now know. In 1931, advertising executive Haddon Sundblom took inspiration from the poem A Visit from St Nicholas better known as ‘T’was the Night Before Christmas, published anonymously in 1823 but later attributed to Clement Clarke Moore to ally the already red cola branding to the depiction of Santa in a red suit. So Coca Coal didn’t invent Santa claus, per se, but they are responsible for popularising his jolly appearance.

THE AVERAGE COST OF CHRISTMAS...
Bringing foliage into the home in the winter was nothing new during the Victorian era. It’s probably a practice with pagan origins and was at least continued by medieval Germans. In the Victorian era though, Queen Victoria’s consort Prince Albert brought a fir tree into Windsor Castle; Buckingham House was still undergoing renovation, having been left unfinished following George IV’s death in 1830. The Illustrated London News carried an engraving of the family around Victoria and Albert’s fir tree in 1848. The family would bring the tree into their home on Christmas Eve (not before) and the whole family would help to decorate it. Some historians belive that Queen Charlotte, wife of King George III first brought a tree into the Queen’s Lodge at Windsor Castle, although it was certainly the case that Prince Albert and family popularised the practice. n
On average, British consumers spend over £1,000 celebrating Christmas each year. Typically households spend £200 on gifts for friends and around £350 on gifts for family members. A Christmas tree accounts for about £75 each year, and typically families buy a few more decorations to go with their existing ones or replacement lights, at around £25. Festive food takes around £150 of the budget, whilst drink adds another £75 to the bill. The office party? That’ll be £75 for an outfit and about £15 for Secret Santa gifts. Other entertaining adds about £100 to your festive season and on average we also spend £20 a year on festive wrapping paper and cards. n

DEPICTIONS OF THE NATIVITY... n Shown above, The Mystical Nativity was painted by Renaissance master Sandro Botticelli in 1500 and now hangs in the National Gallery. The painting was lost for 300 years... before being purchased on the cheap by a young Englishman, William Ottley. Needless to say it has appreciated in value! n Right, Caravaggio painted Nativity with St. Francis and St. Lawrence in 1600. Recently, online retailer Thort asked the public to vote for the UK’s worst cracker joke and determined that ‘what do you get if you stand under a cow, a pat on the head...’ is the worst ever written. n

And it’s exactly those animals which Kay Johns, the Threekingham artist, has taken to heart when she creates her stunning handpainted artwork, sold as original hand-embellished original canvases, numbered limited edition originals, prints... and now, Christmas cards, cushions, chopping boards, blankets, throws and towels too.
“Whether you’re looking for nature quite deliberately, or if it just pops up and surprises you in the garden, or when you’re looking out of the kitchen window washing up, wild animals and pets have this terrific ability to make you smile and to cheer you up.”
“That’s why, as well as providing prints, limited editions and originals at all price points, I’m also creating ranges of cushions, chopping boards, towels and throws so that they provide a little bit of joy every time you settle down on the sofa or chop some veg.”
“Art is the same, and I think the secret to a capturing a really good frozen moment featuring wildlife is to capture the character and to really get the eyes right, because they are the essence of the expression.”
Kay started her career upcycling furniture, whilst David left his RAF career behind to join his parents selling artwork at country shows and craft fairs.

Their eyes met across a crowded showground and soon Kay was creating her own work as a sort of artist patron, which she and David then offered for sale across the UK at 40ft ‘pop-up’ art galleries with racks of prints and framed originals hung like a permanent gallery, carpeting, LED lighting and all of the other elements you’d expect... only in peripatetic form! >> 47

>> Covid hindered the couple’s ability to travel from show to show, but their bespoke framing service – normally too busy framing artwork for show customers – was suddenly able to accommodate those in Lincolnshire seeking to have their own artwork, photographs, needlecraft and so on framed by David in The Event Gallery’s studio. Kay’s work ranges from about 15cm square to a metre wide, her work costs between £40 for a giclée print to £5,000 for a hand-finished framed original. Her work also includes quirky watercolours and life-like pastel on a black background.
“For an artist, nature provides an endless source of inspiration all year round,” says Kay. “But Christmas especially provides the opportunity to cheer people up with my quirky watercolours, with friendly faces from the countryside.” “I love it, and I hope that folk from across the county will enjoy sending and receiving one of my cards, limited edition paintings, or something special from my new product range, underneath their Christmas tree this year!” she adds n

Putting your artwork in the frame DAVID & KAY CAN PROVIDE A TOTALLY BESPOKE FRAMING SERVICE The Event Gallery’s bespoke framing workshop used to be so busy presenting the work that Kay’s customers purchased at county shows and craft fairs that they couldn’t accommodate any external work. Happily, a little bit of breathing space from some annual shows being cancelled or rearranged has meant that the couple can now accept commissions for the bespoke framing of clients’ own art, photography, needlecraft and so on. David & Kay have thousands of mounts and frames, and all work is completed in house. A fresh frame is the perfect way to give a new look to an old favourite. n

THIS MONTH, you can enjoy Regency style at Belvoir Castle, as its state rooms are transformed into a festive spectacular by leading interior designer Charlotte Lloyd Webber. Rooms will be decorated to highlight the High Regency interiors from the Guard Room, Ballroom, Elizabeth
Saloon, State Dining Room and Picture Gallery to the Kings Suite Bedrooms and Regents Gallery. The key decorative notes of individual rooms will inform the designs with an immense Peacock Tree in the Elizabeth Saloon. Inspiration is taken from other stunning Regency interiors such as the Brighton Pavilion built for the Prince Regent who was a frequent visitor to Belvoir along with his brother the Duke of York, reportedly the lover of Elizabeth, 5th Duchess of Rutland. A Regency tree will be decorated in the style of the era while a spectacular Kissing Bough will add to the features typical of the time. Charlotte Lloyd Webber said: “We are delighted to be working with Belvoir to design its first major Christmas event that will highlight in spectacular festive fashion some of the most famous and gorgeous interiors of this fairytale Regency castle, which happily is currently very in vogue on the back of the Bridgerton Netflix series.” >>

A Festive Getaway for a
Silent Night Luxurious, authentic and truly unique... Woodhall Spa’s Jenny Caswell has created six beautiful treehouses in a lakeside location Words & Images: Rob Davis. to enjoy at any time of the year! “STOP!” That’s the invitation being extended to you and yours by Woodhall Spa’s Jenny Caswell. Earlier this year, Jenny’s five year journey to complete the construction of six treehouses in their beautiful woodland came to fruition. And they’re absolutely phenomenal... but don’t take our word for it; just ask her first guests. The 17 acres of woodland, which was formerly the site of a sand and gravel pit, has been left untouched for the thick end of a hundred years and has since naturally rewilded. 60
Jenny is a former B&B owner and has also developed property, but for a number of years she’s had the dream to create some really unique accommodation within the woodland for those who wanted to step back into nature and unwind. Five years ago Jenny began to research how to create a successful treehouse site, and also oversaw the clearing of the woodland around the large lake on the site. In 2019, working alongside builder Christian Lomas, she began construction of her six bespoke treehouses.

Though her work stalled a little thanks to the omnipresent Covid, Jenny persevered, and work was completed on four of the site’s treehouses in May 2021 with the final couple finished a month or two later. That was just in time for the first few guests and already people are clamouring to stay in the comfortable, cosy and absolutely delightful accommodation she’s created. “Some guests come to explore our quaint Woodhall Spa and the surrounding area and some guests just relax, unwind and enjoy the peace and tranquillity of their treehouse and location” says Jenny. “Woodhall Spa village is steeped in history, with lots to explore. You can enjoy the many beautiful walks and cycle tracks in the area, the Dambusters history, the Kinema in the Woods and so very much more. I feel it’s so important to take time to step away from the
hectic pace of life and enjoy peace and quiet and just reconnect with nature again, whether it’s watching the abundance of wildlife from your decking, gently rowing your boat on the lake, strolling around the woodland enjoying the beauty of nature, reading books in hammocks, or cooking marshmallows on the fire pit, and bathing under the stars from your outdoor bathtub. It’s time to pause and reset!” One of the challenges in creating Jenny’s Treetop Hideaways was achieving the fine balance between an authentic, natural experience whilst also ensuring luxury and comfort. And it’s the successful judgement of this balance which has ensured the treehouses have been executed so well. Comfort hasn’t been compromised, nor has practicality. Self-contained, there’s plenty of space, for a start, plus well-equipped kitchens and bathrooms. >>

The idea of the place in general, says Jenny, was that guests would feel completely ensconced in woodland, and Jenny has definitely achieved that by making each treehouse completely private and ensuring each one nestles into its surroundings.
Jenny wanted to create somewhere unique, and that’s why she’s designed and constructed her treehouses to be completely bespoke. It’s a phenomenal site, comfortable, but also a really authentic experience.
Speaking of enjoying the great outdoors, each treehouse comes with a firepit and grill for al fresco cooking, a hammock or two complete with faux fur blankets to snuggle under. Reading under the woodland canopy with just the rustle of nature in the background is, we feel, an ideal way to spend your time, at any time of the year. “We accept bookings all year round and they they’re proving popular in all seasons,” says Jenny. “We do have some availability over Christmas and New Year, and in early 2022, and we’re really pleased to see that guests are enjoying the treehouse experience in the autumn andwinter months too, because genuinely the treehouses are really cosy. The log burner can also be lit to give that extra glow of warmth, in addition to the heating which is there already. We saw the treehouses with a coating of snow, whilst we were in the building process and they looked magical!” “We’ve really enjoyed welcoming some local visitors to stay, some from as near as Woodhall Spa itself ! You don’t have to spend a day of your precious holiday time travelling, but you can still feel like you have escaped the world.” “Judging by bookings and expressions of interest so far, our bookings are made up of three quarters of our guests from outside Lincolnshire, and a quarter, at least, are ‘local. DINING OUT AT THE BUSTARD INN
BACK IN THE LATE 19TH CENTURY, just a few miles out of Sleaford, one of the last examples of the Great Bustard – at that time the heaviest flighted bird in the UK, tipping the scales at a rather less than svelte 20kg – was shot on what came to be known as Bustard Hill, near to the Rauceby Hall Estate. It resulted in the bird being given its near-extinct status. In 1860, the species gave its name to The Bustard Inn and its adjacent malthouse and brewery which was created by the estate’s owners to quench the thirst of hard-grafting estate yakkers, and it has remained a much-loved pub ever since. 150 years on, it’s Britain’s traditional village pubs that are now an endangered species. Pub trade periodical, The Morning Journal, reported that in 2019, 473 pubs were demolished or converted into private homes. Meanwhile, in 2020 an eye-watering 2,500 pubs were lost in total – TV chef Tom Kerridge reckons that constitutes about 5% of the industry. Whether in nature or hospitality, survival of the fittest remains an applicable adage, which is why South Rauceby’s Bustard Inn is fighting fit right now, why it remains very popular indeed with its 68
punters and why it looks set to carry on serving both locals, and restaurant patrons from a little further afield, for another 150 years at least. It’s a quality-oriented dining pub which has a brilliant menu of nicely presented dishes, rich in local ingredients, which are prepared by a truly assiduous team. It’s also a really friendly place, whether you’re a local or you’re visiting from slightly further afield. The front of house team each make you feel as if you’ve just walked into your local, even if you live miles away. And in addition, the place has a great look and feel, especially in the winter months. It’s a proper traditional pub restaurant whose mission statement is comfort and quality. Its previous owners, a local couple, took on the place, renovating it and opening the

doors in April 2007 before retiring in 2018. And just when you thought the place couldn’t get any better, incumbent restauranteurs Lesley & Julian Lonsdale and their team come along to raise the bar higher still. “No matter how smart a restaurant is, or how many accolades you’ve gained, you can’t be complacent, so we continue to innovate,” says the couple. “For us, good food and an authentic feel is really important, but above all we want The Bustard Inn to be relaxing and to offer an enjoyable experience that never forgets its purpose, making people feel happy.” “The first time we walked into the place was on a filthy winter night… the weather really was awful. But it’s such an amazing space, so cathartic, that within 10 minutes we both
felt nourished, by the setting and the welcome as much as the food itself.” In the interest of making an already good experience great, though, talented Josh Singleton was approached and agreed to apply for the Head Chef position. Josh was a quarter finalist in 2015’s series of Masterchef: The Professionals, which underwrites his prodigious talent for creating dishes with stunning flavours, exceptional presentation and his capacity for maintaining a cool head under pressure. Josh is also leading the kitchen brigade to ensure everyone is invested in creating innovative, delicious and beautifully presented dishes. Happily, there’s a simple trio of menus for lunchtime service, à la carte evening service and Sunday diners respectively.
Our visit was during a menu tasting session hosted by the kitchen to introduce to the team the new dishes they’ll be serving to customers this season, ensuring that the front of house team have tasted them, and can answer diners’ questions about their composition and presentation. The à la carte evening menu comprises five starters, five main courses and four desserts, as well as cheese board, ice cream and sorbet options. Ice creams and sorbets are made in house, and local suppliers are favoured throughout the menus, such as Hambleton Bakery which provides artisan sourdough bread to enjoy whilst perusing menus. The kitchen team’s flair has also enabled the restaurant to offer something brand new for early 2022, its Chef ’s Table dining option in the restaurant’s snug. >> 69

LINCOLNSHIRE CARROT PUDDING RECIPE Preparation Time: 3.5 hours including cooking. Serves: 4-6. 100g plain flour • 1/2 tsp bicarbonate of soda • 1tsp of mixed spice 100g suet • 100g raisins • 100g currants • 100g potato, grated • 100g carrots, grated 100g Demerara sugar • 100g fine breadcrumbs • 25g chopped glace cherries • 1 large egg, beaten Mix the flour, soda, spice well together. Add all the other ingredients except the egg, mix all ingredients well together and thoroughly. Then add the egg and bind well, if it is a little too stiff, add a little milk as well. Pour into a large greased pudding basin, leaving space at the top as the mixture will expand during cooking. Cover with a double layer of greaseproof paper and tie with string. Steam for 3 hours, then serve with loads of custard, brandy sauce or double cream. In the KITCHEN The delicious taste of winter, and an alternative to a heavier Christmas pudding this month...
BRAMBLE & AMARETTI TRIFLES Preparation Time: 20 minutes. Chilling Time: Four hours. Serves 4. 150g blackberries • 3 tbsp Bottlegreen Bramble Cordial • 100g double cream 100g Greek yogurt • 1 tbsp icing sugar • 4 madeleines, quartered • 200ml vanilla custard 6 Amaretti biscuits, roughly crushed Set aside a handful of blackberries to use for your garnish. Put ½ the remaining blackberries in a small blender or food processor with the cordial. Whizz until smooth, then pass through a sieve to remove any pips. Roughly chop the remaining blackberries and stir into the purée; set aside. In a mixing bowl, whisk together the double cream, yogurt and icing sugar until combined. To assemble the trifles, take 4 glasses and spoon the blackberry purée into each. Add the madeleine quarters then some of the custard and layer the cream mixture on top. Cover and chill for 4 hours, then scatter with the crushed amaretti and reserved blackberries before serving. ONE OF THE MOST STRIKING ASPECTS of Lincolnshire to those who move to the county are its enormous skies. There are few places in the county where they’re so visually potent than up in the Wolds, and fewer places still better for enjoying orangey sunsets than through the huge bi-fold doors of Nick & Pat Ward’s home in Utterby, about five miles from Louth. The property was given the name Langdale by its previous owners, who built the contemporary home on the site of a mid20th century bungalow. Nick & Pat moved in during September 2019. Having lived in Pat’s home city of Nottingham before moving up to Northumberland, the couple subsequently returned to the area, Main: The heart of Langdale is its living, dining and kitchen area that’s reached via the property’s entrance hall (above). The living kitchen incorporates a built-in entertainment centre and bi-fold doors on two of the property’s aspects, overlooking farmland.

Last Christmas, the property was quieter than usual, what with Covid and a new grandchild in the family grounding Nick and Pat. The couple pulled up the drawbridge and lit the log burner to enjoy a festive season at home. “But it’s an incredibly sociable space, and this year will probably be our last in the house. We’ve enjoyed living here so much and if we could just pick it up and put it down in a new location, a little closer to our family, we’d certainly do so.” “We’ve made the decision to put the property on the market but it’s with great reluctance because even if we were able to replicate the house exactly, elsewhere, we still wouldn’t be able to find a location like this.” “The views, the space, the peace, the church next door, it’s all so beautiful. We’ll be very sad to leave but at least we’ll be able to be a bit closer to family, and there’s consolation at least in knowing that someone else will enjoy living in the house as much as we have!” n

Usually held in March, the cancellation of both the 2020 and 2021 events was a real frustration for the 900 people who usually attend the event. Happily, the ball went ahead last month at Newark Showground and was glitzier and more fun than ever before – a sure sign of life in the county returning to normal. The Amethyst Ball CONGRATULATIONS to Nicola & Andrew Corcoran and to Emma & Matthew Bellamy who once again hosted a successful fundraising ball to raise money for two very worthy causes, the National Autistic Society and the Epilepsy Society, recently. The event was held at Doubletree by Hilton Forest Pines in Brigg and raised over £3,200 for the charities. Postponed from March 2020, the event included a three course dinner and dancing, plus piano music courtesy of Ben Thomas and slight of hand magic by Paryss. Engineering for an
Electric Future As a motoring manufacturer, how do you reinvent the most important model in your lineup? That’s the challenge facing Mercedes Benz as its new EQS reaches showrooms this month... Words: Rob Davis. MERCEDES BENZ is one of the world’s most well-regarded makers of luxury cars, and at the apex of its lineup is the S-Class. Rival makers all wait with bated breath to see what the company will reveal with new iterations of the S-Class, because historically it’s the car which debuts the firm’s latest technology, gradually cascading its new features down its model lineup. We have previous generations of the S-Class to thank to either inventing or refining and popularising power steering, ABS brakes, airbags and adaptive cruise control. 124
As refined, good to drive and well-regarded as the S-Class is, though, its been powered by combustion engines since its launch in 1972 and in an era when electrification is proliferating, an all-new reinvention of the S-Class was needed to take the car into the 21st century. This, the EQS, is just that car. It’s drivetrain is electric only with a 333hp/245kW motor generating zero carbon emissions and incurring just 1% BiK tax for company car drivers. It’s on sale from £99,995 to £113,995 with just a single body style.

The EQS is going head to head with Tesla’s Model S, Audi’s E-Tron GT and BMW’s forthcoming 7-Series which will feature an i7-badged all-electric model. If that competition wasn’t bad enough, the EQS also has to tempt the electro-sceptics out of their plug-in hybrids; cars which provide the reassurance of a combustion engine for when the going gets tough and the volts get going. In addition to providing superlative electric performance, the EQS also has to fulfil a dual remit as both a capable and quick sports car, but also a luxury saloon offering limo-like ride and comfort. Suffice to say there are quite a few demands being placed on the car, quite a few rivals and there’s quite a lot riding on its success. Let’s start with performance. With the same motor providing a range of anywhere from 407 miles to 453 miles, you’re unlikely to be
caught out by an all-electric drive unless you’re fairly careless with your recharging. 60mph is reached in 6.2 seconds which is a nice amount of performance without being overkill. The Tesla Model S in P110D configuration completes the 60mph dash in 2.7 seconds which is just... silly. Mercedes has quite sensibly tuned the EQS to provide a good blend of brisk performance but good range too. Top speed is 130mph where legal. Recharging takes 15 hours from a standard wallbox, whilst a proper home charger will ensure 100% charge in 10 hours. And if you’re using a rapid charger, you can achieve 80% charge in just 30 minutes, so very long drives will necessitate a quick coffee, a bite to eat and a comfort break at the motorway services whilst the EQS is recharged. A beefed-up EQ nav will keep an eye on range and advise on how and where to charge your EQS. >>

We reckon that Premium trim is the sweet spot in the range especially as higher trim levels incur a penalty in range. If you care about your passengers though, there’s also a Rear Luxury Lounge package for a cool £4,000, and for just under £8,000 a hyperscreen package which consolidates the whole of the EQS’s dashboard into a single OLED display. With adaptive air suspension, the EQS strikes a lovely balance between comfort and the need for nimble handling characteristics. The EQS is nothing short of outstanding both as a reinvention of S-Class for the 21st century, and as a blueprint for motoring in the future. It’s an outstanding, desirable and very well reconciled performer. n

The car’s unconventional looks and electric-powertrain existed pre-Tesla, before the motoring public warmed to the idea of going electric. The iX is BMW’s mid-size all-electric SUV charged (pun intended) with taking sales from Mercedes’ EQ models and Audi’s E-tron sportsback, as well as conventional cars with plug-in hybrid setups. The iX is available as an iX40 in Sport or M-Sport trims, generating 326hp and providing a 128
range of 257 miles before you need to recharge. The cars are priced at £69,905 and £72,905 respectively. Stepping up to the iX50 in Sport or M-Sport trim provides 523hp and 380 miles of range. We think the iX50 is a better bet if only for the increased range, although the two are priced at £91,905 and £94,905 respectively. All iX models are generously equipped with 21-inch wheels, Driving Assistant systems, Parking Assistant, climate comfort windscreen, four-zone air conditioning, heated front seats, and wireless phone charging.

All-wheel drive is standard, and iX50 variants have active steering and air-suspension too, for a smoother ride and more comfort on the county’s broken road surfaces. Naturally being a car that looks to the future, the iX also makes use of recycled aluminium and plastic, as well as FSC-certified wood and leather for the interior. Even the carpet and floor mats are made from recycled fishing nets. The iX will make its debut in BMW dealers such as Listers from 13th November, just as Pride goes on sale, and understandably, local dealers are excited by the prospect of a car which represents not just a new model but a new era too for the company. The iX is definitely a vehicle for the future and the future looks very bright indeed. n
