The name of the iconic TV spacecraft, made famous by Dr Who, stands for Time and Relative Dimension in Space, and was purchased by Whovian Ray so people could have their photograph taken with the prop - and a real-life Dalek - in return for a donation to the town’s Sleaford New Life Pre-School for the group to purchase new outdoor play equipment. Grrreat news for rescued tigers who will make a new home in Lincoln... Mistreated tigers rescued from circus by charity

The business was founded by Gerry Cook and Ray Butler from the outset until Ray’s retirement in 1990, then bought the company and managed it with his wife, Ann until they retired in 2001. The business was then bought by Matt and Kate Cook but Gerry still chooses to work two mornings a week in his retirement. Today, Ray and his team strive to provide an excellent service to all clients from the domestic, industrial, agricultural, local authority and diocesan sectors, The firm’s open day in April included photo opportunities with the TARDIS and a full sized Dalek, as well as face painting, games and refreshments. Happily, nobody ended up getting ‘exterminated.’

Lincolnshire Pride is happy to announce the launch of a third Pride magazine, covering Market Harborough. The magazine launches this month and will be the third title in the Pride series, following the successful launch of our Rutland edition in 2012.

Woodside’s owner Neil Mumby was contacted six months ago by Wildlife Rehoming Services, and it has cost over £250,000 to secure a happy future for the tigers, but the animals are now happily rehomed in the county. The two tigers are known as Tango and Julia - Tango is 18 year old and was made famous by his appearance in the Esso adverts in the 1980s. The animals will now be on display for visitors to enjoy and they have comfortable new accommodation in the form of a purpose-built enclosure. Sam Squire, 18, nominated for best newcomer Sleaford teenager Sam Squire only set up his men’s fashion blog in September 2013, but already, he’s in line for a national award. Sam works in retail but aspires to be a fashion journalist. His fashion blog reviews products, retailers, clothing and male grooming products.

New book is cooking up a treat for the Lincolnshire Air Ambulance service... Woodhall Spa’s Jane Shirley hopes to raise £50,000 for the charity, with a new book of over 100 recipes donated by Lincolnshire cooks... Woodhall Spa’s Jane Shirley and a team of dedicated volunteers have created a cookbook to be proud of.

Designed and printed by Lincoln’s Ruddocks, the book features recipes inspired by the region’s love of food and its local dishes. Jane was playing golf several years ago when a close friend was hit in the eye by a golf ball and urgently needed to be airlifted to hospital. “I shall never forget the arrival of the Air Ambulance and the wonderful care the team offered and

Flagship performing arts SO! Festival returns to East Coast this month...

Skegness will enjoy its sixth SO! Festival from 28th June, with this year’s acts now confirmed. The arts festival attracted 90,000 people last year and is organised by ELDC and Arts Council England. 2014 highlights include Insect Circus including a seven-foot tall oriental performing snail, Without Walls theatre group with its re-imagining of Goethe’s Faust (pictured here) and the Sprite Symphony, which uses projections to create an enchanting display of fairies trying to escape from the jam jar they are trapped in.

Alan Titchmarsh’s support for North Lincolnshire Gardens... TV gardener backs Best Kept Garden competition as the final entries for 2014’s competition are received... North Lincolnshire residents have been encouraged to enter the area’s Best Kept Garden competition by TV gardener Alan Titchmarsh. Entry into the competition is free, and there are eight categories, from best eco-friendly garden, and family garden to small garden, large garden and best allotment. Cleethorpes businessman Andrew Dyce wants to capitalise on the taste of summer by bringing back traditional ice cream bikes. He’s commissioned two cycles and is currently seeking outdoor events and new locations from which to sell his ices.

Horncastle based charity LIVES has launched a brand new website. The first responder services uses local volunteers to respond to emergencies, usually within six minutes, looking after the casualty until paramedics can arrive on the scene. The new website, at www.lives.org.uk, will be used to recruit volunteers and assist in fundraising activities.

Each bike will be loaded up with 300 portions of Waltham-made Brackenbury’s ice cream, with flavours available including vanilla, strawberry, mint choc chip and rum & raisin. “It is bringing back a tradition and we offer a classic style that offers something that people can smile about!” he says. Andrew will be out and about in Cleethorpes selling his ice creams on the traditional bikes, later this month.

MINIMISING THE BUSINESS RATES BURDEN For many small businesses business rates are the third biggest outgoing after staff costs and rent. Business owners often feel aggrieved by this substantial financial burden for which no direct benefit is received but there are steps that can be taken to ensure the liability is minimised. Every commercial property is ascribed a Rateable Value which is an estimate of its rental value in April 2008. A ‘Rate in the Pound’ is then applied and for the current financial year this is 48.2 pence in the pound. There is a lower rate for ‘small businesses’ (those who occupy just one property with a rateable value under £18,000). The above sets out the starting position, but what can be done to help reduce this liability? The most important relief to be aware of is Small Business Rate Relief. This is currently available up to March 2015 for businesses who occupy only one property. If the Rateable Value is under £6,000, then no business rates are payable. From £6,000 to £12,000, the rates are calculated on a sliding scale between 0% and 100%. This relief is not generally offered and has to be applied for. It is well worth being aware of this as it can save a small business several thousand pounds a year. Charitable relief is generally better understood; charities and other ‘not for profit’ organisations can benefit from up to 100% rate relief. Rates on empty properties is a subject which has caused much concern for landlords in recent years; in 2008 Government increased the level of empty rates to provide landlords with a strong incentive to bring vacant premises back into use. This has been partially successful but property owners struggling to let or sell have been heavily penalised and some have been forced to demolish perfectly good buildings. After an initial exemption period, full business rates are payable on an empty property with a rateable value over £2,600. The exemption period is three months for retail and offices or six months for industrial. At the end of this period a short term occupation for six weeks is often used to ‘earn’ a further exemption period and lessen the financial burden. Listed buildings are currently exempt from vacant rates and there are further exemptions for charities and ‘not for profit’ organisations. All these reliefs need to be understood by the occupier and claimed from the local authority. The foregoing is a ‘snapshot’ of a couple of areas of rating legislation and business owners should ensure they are securing the reliefs they are entitled to. In the days when Woodhall Spa had a station, the shop was the last building by the platform before the railway line went diagonally across The Broadway. he Lincoln Hotel is certainly one of the city’s most distinctive buildings, with a hulking modernist architecture that’s made even more distinctive by virtue of its location directly opposite the Cathedral. The modern part of the building was added to the Victorian wing in 1967, created in a bit of a hurry in 1966 and completed a year later following the tourist boom that arose from England’s success in the World Cup. Lincoln simply didn’t have enough hotel rooms to accommodate the influx of visitors, so Forte created The Lincoln and its distinctive love-it-or-hate-it architecture to meet demand. Neither the demand for accommodation nor the popularity of Lincoln have diminished since, and something else that hasn’t changed is the on-trend presentation of its food. ‘Modern’ in a dining context, means square plates, clean presentation, vibrant colours and a stylish dining room. It’s a formula that works, too, because the Select Lincolnshire Food & Drink Awards named The Lincoln Hotel’s Green Room its 2014’s Restaurant of the Year following a round of public voting before the finalists were visited by a ‘secret diner’ to determine an overall winner. Head Chef, Dale Gill has created a single dinner menu from which customers can choose six starters, seven main courses and five desserts plus a cheese selection. Dining takes place in a 40-seater restaurant that splits neatly into two areas with a dedicated bar. That creates the opportunity for private parties to enjoy the restaurant’s separate kitchen, manned by a dedicated brigade. In addition, the hotel also has five function rooms, plus the Long Room, 25

which has a separate bar menu and serves as the hotel’s daytime dining provision, ensuring the Green Room is dedicated to à la carte evening service. During our visit, we got to sample the hotel’s new spring/summer menu, which was being tested during our visit. The team creates its menus then runs them in ‘beta’ for a couple of weeks before they’re tweaked and given a final release. Service runs from 6pm to 10pm, with six starters including our trio of scallops, which were served with pea purée and crispy pancetta. Three definitely isn’t a crowd in the Green Room, and we were also presented with an assiette of salmon - served as a roulade, a mousse and home-cured sliver with capers and caviar. Our main courses were local lamb, again served as a trio, with black pudding farce - a French term from the middle ages for forcemeat stuffing. There was also a roasted monkfish option presented with a spring onion and broad bean risotto, as well as five other options. We were presented with two very different dessert options. The first was a trio of chocolate; a torte, white chocolate mousse encased in a chocolate shell, and a dark chocolate truffle. These were smooth, and delicious. However, my preference is towards something lighter and more refreshing at the end of my meal, and in this respect the Green Room’s gin and

tonic jelly didn’t disappoint. The flavour of juniper came through nicely, and a zesty lime sorbet added sparkle. Kudos to the talents of dedicated pastry chef Ursula Gait! In addition to offering five desserts, the hotel’s cheese board comprises Cornish Yarg, Black Bomber, Ribblesdale goats cheese, Cote Hill and Poacher. Other local ingredients the hotel is keen to incorporate include Fosters of Monks Road and Abbey Parks for meat and vegetables plus Redhill Farm for pork. The attention to detail and involvement that The Lincoln Hotel has in creating its dishes is impressive. Petit fours at the end of your meal are home made usually on a bygone sweetshop theme, like cola cubes - whilst bread and ice creams are made in house too. “We’re really delighted to be named Restaurant of the Year.” says James Little, the hotel’s new General Manager. “We put lots of effort into our food, and we hope that it really shows. We are keen to show off the best that the county has to offer to those who come and stay here.” “Crucially though, we’re also open to non-residents, so if you’re a Lincolnshire resident looking to enjoy some food with flair that’s imaginative, but very much grounded in the county, we’ll be especially happy to welcome you in!”

othing says ‘summer’s here’ like a big bowl full of strawberries, whether you use them in the inventive dishes we feature on the following pages or keep things simple and serve them with just a dollop of whipped cream. Of the 4,500,000 hectares of cropped land in the UK, strawberries are planted on just 6,000 hectares, yet the combined retail value of the total 55,000 tonne crop of strawberries throughout the summer is £700m, making it the most popular berry in the UK and accounting for over 60% of all berry sales (strawberries, raspberries, blueberries and blackberries) in the UK. Elsanta is the most common variety, accounting for 80% of strawberries in the UK. Ava and Sweet Eve are two other popular varieties to look out for. For the best berries, seek out your local farm shop or PYO farm. Look for berries that are unblemished and use the green hulls of the berries as a general indicator of quality. A stronger scent also indicates quality so choose the freshest berries. Smaller berries tend to have more flavour, as they absorb less water. Because of the berry’s absorbancy, it’s advisable not to wash your strawberries if, for instance, the berries are organic and you’re eating them straight away rather than cooking with them. They’re also incredibly delicate so avoid piling layer upon layer in your punnet. Leave your freshly picked strawberries in the sunshine to soften, then hull your strawberry with a paring knife and eat within the hour. If you want to enjoy your berries as simply as possible, eat them with whipped cream, balsamic vinegar or a slight twist of black pepper. Over the page, we’ve some other ways to enjoy Britain’s best loved berry too...

Strawberries

STRAWBERRY CheeseCake Serves: 8-10 Preparation time: 35 minutes, plus chilling Cooking time: 5 minutes

Ingredients 450g strawberries, hulled and halved 50g caster sugar

250g digestive biscuits, roughly broken 100g butter, melted 397g can condensed milk 300g full fat soft cheese, such as Philadelphia 200ml double cream ďŹ nely grated zest a lemon

Put your freezer setting onto Fast Freeze, or clear some space in the rapid freezing section/coldest part of your freezer, at least an hour before making the cheesecake. Line a 23cm spring clip cake tin with a large piece of aluminium foil. Press down well into the base and sides of the tin and leave plenty overhanging the edges.

To make the topping, place 200g of the strawberries in a saucepan with the sugar and a tablespoon of cold water. Cook gently for five minutes, stirring regularly until the strawberries are very soft. Remove from the heat, stir in the reserved raw strawberries and leave to cool. Put the biscuits in a freezer bag and bash to crumbs with a rolling pin. Mix with the melted butter. Tip the buttered crumbs into the prepared tin and press firmly into the base to create an even layer. Put in the freezer for 20-30 minutes or until solid. Just before the base is ready, use an electric whisk to beat the condensed milk, cheese and cream together until thickened – this will take around five minutes. Add the grated zest and beat until the cheese mixture forms very stiff peaks. Spoon over the biscuit base and top with the cold strawberry sauce. Freeze for three hours or until solid. To serve, unwrap the cheesecake while frozen, removing all the foil, and put on a plate or cake stand. Thaw at room temperature for about one hour before serving. If leaving any longer, place in the fridge. Eat within a couple of days.

SUMMER CHOCOLATE and sTrawberrY Cake This is a classic recipe adapted for those with gluten intolerance. We love the fact that it’s really chocolatey but has the perfect balance of tart strawberries to offset the rich, indulgent cocoa... Serves: 8-10 Preparation time: 15 minutes Cooking time: 1 hour

Ingredients 250g unsalted butter diced 250g dark chocolate broken into pieces 5 medium eggs separated 250g golden caster sugar 200ml crème fraiche Half a punnet of strawberries (hulled and chopped) A handful of raspberries

Preheat the oven to 180°C/160°C fan/Gas mark four and line a 20cm x 10cm-deep loose-bottom cake tin. Melt the butter and chocolate in a bowl set over a pan containing a little simmering water, stirring occasionally. While the chocolate is melting, whisk the egg yolks with half the sugar in a large bowl, until pale, thickened and doubled in volume. In a separate bowl, with clean whisks, whisk the egg whites until stiff, then gradually beat in the remaining sugar, a tablespoon at a time, whisking for about 20 seconds with each addition. You should by the end have a stiff, glossy mix.

Cook’s Tip: If you think the cake is getting too dark but isn’t yet cooked in the centre, cover the top with a double sheet of foil.

Fold the melted chocolate and butter into the egg yolk and sugar mixture, followed by the egg white mix in two goes. Pour the complete mixture into the prepared tin and bake for 60-75 minutes or until a skewer inserted at the centre comes out with just a few moist crumbs clinging to it. Leave the cake to cool in the tin (it will sink in the middle, but this is completely normal). Once the cake has cooled, remove from the tin and then spoon the crème fraiche in to fill the sunken centre of the cake. Finally pile on the strawberries, raspberries and a few mint leaves. To finish, dust over a little icing sugar.

PIMM’S JELLY wiTh sTrawberries Serves: 4. Preparation time: 20 minutes Cooking time: 3 minutes plus chilling time

Ingredients 400ml water 125g caster sugar The zest and juice

from a lemon The zest from a small orange 200ml Pimm’s 4 small gelatine leaves 250g strawberries 250ml fresh cream Strawberries for garnish

Put the water, sugar, lemon and orange zests and juices into a saucepan, bring to the boil and simmer gently for three minutes. Remove from the heat and leave to infuse for 30 minutes, then strain through a sieve. Soak the gelatine leaves in cold water for about three minutes until soft, then squeeze out the excess water. Set aside on a saucer. Bring the strained liquid to the boil, add the moist gelatine and stir until dissolved. Add the Pimm’s. Chop the strawberries into small pieces and place into four serving teacups or glasses. Pour the liquid on top. Clingfilm and refrigerate for two hours, or overnight. Once set, serve the jellies with fresh cream and extra strawberries.

STRAWBERRY, CHOCOLATE & maCadamia blondies These are a great alternative to the traditional chocolate brownie. Bursting with strawberries, chocolate and nuts, these simple cake squares are ideal with a coffee or as a dessert served with vanilla ice cream. They will keep for a day or two in an airtight tin – if they last that long! Makes: 16 squares Preparation time: 15minutes Cooking time: 30 minutes

Ingredients 125g unsalted butter 200g white chocolate, chopped 100g light muscovado sugar 2 Eggs 130g plain flour pinch of salt 120g strawberries, chopped 100g macadamia nuts, roughly chopped

Cook’s Tip: If you prefer the taste of almonds, you can easily substitute these for a more familiar ‘Bakewell Tart’ flavour.

Heat the oven to 180C. Line a baking tin (approx 22cm square) with grease proof paper. In a pan, melt the butter and cook on a low heat for five minutes until the white solids start to turn golden. Pour into a cold bowl then add half of the chocolate and stir until melted. In a separate bowl whisk together the eggs and sugar until they are thick and golden. Tip in the flour, a pinch of salt and the chocolatey butter and fold in with a spatula until smooth. Add the strawberries, nuts and remaining chocolate and stir briefly. Pour the mixture into the tin and bake for 30 minutes. The blondies are done when they have a light golden crust but are still a little squidgy inside. Allow to cool in the tin then cut into squares.

STRAWBERRY SUNdAE wiTh rasPberrY honeYComb The perfect dessert? It’s simplicity itself to create, and the beauty of it is that you can prepare your honeycomb in advance, keeping some in an airtight container throughout summer, so you’ll always have the necessary ingredients to create an impromptu pudding. In addition to creating our sundae, the honeycomb can be crumbled into quality vanilla ice cream, smothered in chocolate, or folded into cream cheese to create honeycomb cheesecake, or even used in a summer trifle with rhubarb! To make the honeycomb, grease a 20cm square tin with the butter. Mix the caster sugar and syrup in a deep saucepan and stir over a gentle heat until the sugar has melted. Try not to let the mixture bubble until the sugar grains have disappeared. Once completely melted, turn up the heat a little and simmer until you have an amber coloured caramel (this won’t take long), then as quickly as you can turn off the heat, tip in the bicarbonate and beat in with a wooden spoon until it has all disappeared and the mixture is foaming. Scrape into the tin immediately but be careful as the mixture will be very hot. The mixture will continue bubbling in the tin, simply leave it and in about 1hr to 11/2 hr the honeycomb will be hard and ready to crumble or snap into chunks. 46

Ingredients Honeycomb prep time: 5 minutes Cooking time: 10 minutes Butter, for greasing 200g caster sugar 5 tbsp golden syrup 2 tsp bicarbonate of soda Serves: 4 Sundae prep time: 10 minutes 400g strawberries 1 tsp icing sugar 150ml double cream 1 vanilla pod 1 tbsp of runny honey 100ml low fat greek yoghurt 300g raspberries 300g of honeycomb, broken up

To create the sundae itself, hull and half the strawberries then mix with the icing sugar. Place on one side and let them marinate while you prepare the cream. Pour the cream into a bowl and add the scraped out vanilla seeds from the pod and the honey. Whip the cream to form soft peaks and then fold in the Greek yoghurt. Take four little glass bowls and divide the strawberry mix between each one, then pile on some vanilla honey cream. Next, add a layer of raspberries and cover with some more vanilla honey cream. Finally, sprinkle the honeycomb on top of the cream and top with a whole strawberry cut in half.

Pensions... Following the recent budget, the Chancellor has announced a range of significant changes to how pensions can be taken excepting final salary schemes. Some new options are now available and more from April next year...

available now: • Capped drawdown - maximum drawdown now increased to 150% (from 120%) of the notional withdrawal rate. • Flexible drawdown - only £12,000 per annum income now required to qualify (down from £20,000). • Trivial commutation - pension funds up to £30,000 (up from £18,000) for those aged over 60 can be taken as a lump sum (a quarter of which can be tax free). Up to three small individual pension pots (previously just two) of up to £10,000 (previously £2,000) can be taken in addition as lump sums. from aPril 2015: • Unrestricted access to all of a money purchase pension fund (to those over 55) subject to tax at the individual’s highest rate. Pre and Post nuPs look set to be binding in future P

re and post nuptial agreements are likely to be given binding status, in a move that’s intended to give couples a more predictable outcome on divorce. The Law Commission’s report, Matrimonial Property Needs and Agreements, proposes that the agreements be enforceable as contracts, but only after both partners’ financial needs, and any financial responsibilities towards children, have been met. Both parties would also need to have disclosed all material information about their financial situation and both must have received independent legal advice. Under the current law, couples can make pre- and post-nuptial agreements but no one can be certain they will be upheld, although they have been gaining in weight since the Supreme Court ruling in the 2010 landmark case of Radmacher v Granatino. The Courts generally look favourably if an agreement has been “freely entered into by each party with a full appreciation of its implications unless in the circumstances prevailing it would not be fair to hold the parties to their agreement”. But at the same time that the Law Commission published its proposal, an heiress to a fortune from her father’s media company which created Bob the Builder, was being told to buy her ex husband a house, at a cost of around £1.2m, despite a series of apparently cast-iron nuptial agreements being in place. The ex wife is Victoria Luckwell and her ex husband was Francesco Limata, who agreed that he would not make any claim either during or after the marriage in relation to his wife’s separate property or to gifts made by her wealthy family. The pre nuptial agreement was followed by two supplemental agreements during the course of the marriage, when the wife received gifts from her parents.

And despite the judge agreeing that if the pre-marital agreement had not been made, the marriage would not have taken place, and neither would the further gifts to the wife have been made without the supplemental agreements, he pointed to the importance of fairness. Justice Holman concluded that the former husband was “now, on any view, and in the context of this case, in a predicament of real need” and that it would be wrong for the children to experience two wholly different lifestyles when visiting each parent. At first sight, this case may look as though it’s going against the flow, but is really a reflection of the role the family courts have always taken, which is to do the best by families following divorce, particularly where children are concerned. It’s about fairness, and whilst it is certainly likely that nuptial agreements will have greater weight in future, that principle of fairness will remain an overriding factor. Talking about money is often seen as unromantic, especially in the run up to a wedding, but learning how to sit down and discuss financial matters openly is really a very good way to enter a marriage. A pre or post-nuptial agreement may not be appropriate for every couple, but where there are significant assets or children from previous relationships, it certainly makes sense. If a split unfortunately happens, then anything that helps couples more easily negotiate a settlement has to be good.

She’s got the art of relocation down to a fine art, but this time it’s different. The couple will be leaving their dream house near North Ormsby after four and a half happy years.

A Day in the Life of Lincoln Cathedral

Protecting our

It costs £1.5m a year to ensure Lincoln Cathedral can open its doors to its 180,000 annual visitors. Facilitating the ongoing repairs and maintenance to the fabric of the building requires a further £1.5m.

Lincoln Cathedral has, over the years, survived earthquakes, fires and lightning strikes. Today though, at nearly 950 years old, its survival is more dependent on its 120 staff and 600+ volunteers. They are all keen to promote enjoyment of the building, and ensure its financial survival with the loss of a £250,000 grant from English Heritage. But what goes into running the Cathedral each day? We spent a day with its custodians to find out.

That’s before any specialised restoration projects, like the current five year mission to repair the two turrets. It was a painful blow, then, when English Heritage recently cut £250,000 of funding from the Cathedral’s annual income.

9am A Warm Welcome: Like many of the Cathedral’s visitors, we were greeted by Ruth Paynton, a Visitor Services Team Leader. Ruth has been on the front line welcoming visitors with a new £8 entry fee, which now affords visitors an annual pass to the Cathedral.

Supporting our county’s heritage has never been more important and today, the Cathedral’s beauty and accessibility depends solely on its 125 staff and 600 unpaid volunteers. This month we go behind the scenes at the Cathedral to find out what it takes to keep its doors open to visitors, and why funding our most famous landmark is so important...

“We’re lucky, we get to see visitors’ first impressions and usually that impression is ‘wow!’” says Ruth. “Visitors come here for all different reasons. Photography, art, prayer - even to see the names of relatives in our archives. The general feedback we’ve had is that it’s good value to be able to return all year. People want to take the tower tours and roof tours, one annual entry fee facilitates that, and visitors are happy to gain entry, receive a guide and find they’re able to go on the tours with no additional charges or hidden extras.” 10am It’s a Gift: Next was a stint helping deputy

manager of the Cathedral’s gift shop Chris Battersby stock her shelves. With over 2,000 items ranging from just a few pence to around £500, the shop has over 100,000 visitors each year and is especially busy around the Christmas market. “I’ve been here for 30 years, and love the response we receive to our range.” says Chris. “Visitors can adopt a stone which will be there for centuries to come.”

The shop also serves as the box office for the Cathedral’s varied calendar of concerts, like The Sixteen Choral Pilgrimage which took place last month and attracted over 1,400 people. It’s a busy place, to say the least, and together with the refectory, serves as a limited company in its own right responsible for around 21% of the Cathedral’s £3.13m income in 2012/2013. 11am Elevenses: Just time for a quick tea-break with

a few of the 40-strong Works Department team. Behind the scenes, Carol Heidschuster’s team of five carpenters, 10 stonemasons, two leadworkers, two conservators, three glaziers, quarrymen, archivists and domus team make repairs both to the fabric of the Cathedral itself, and its 80 properties - offices and tenented dwellings.

Working from a huge archive of photographs and drawings, they painstakingly repair any stonework, timber or medieval glass that requires attention. Costs for the conservation of the Cathedral building swallow up 44% of its income - to put that into context, just 17% of the Cathedral’s income goes into day-to-day running costs, and 23% into ministry, music and worship. We also met Cynthia Smith who, for 28 years, has worked for the Cathedral, as one of its two cleaners. Vacuuming the whole of the 16,404sq ft floor area takes two weeks. Dusting the place takes a full day alone, whilst the Works department, meanwhile, have to run a duster around the highest points in the nave - some 78ft up! 11.30am A New Guide: Just coming on duty after teabreak was Kate Hellen. As one of the Cathedral’s 80 volunteer guides, Kate had just completed the six month long, 45-hour course, complete with its end of course project and exam on the Cathedral, its history and construction. A former teacher who moved to Lincolnshire from across the borders in Cambridgeshire, Kate was moved by the majesty of the building and wanted to be a part of her new community, so she volunteered to show visitors around, answer questions and generally extend the same welcome to visitors of the Cathedral that residents of Lincoln extended to her upon her relocation.

Astonishingly, over 600 volunteers help to keep the Cathedral operating both day to day, and during services & concerts. Volunteers work anywhere from a few hours a month to several days a week, with Volunteers Representative Joy Schneider charged with the responsibility of marrying a volunteer’s skill set to a job they’ll enjoy and perform well. Roles include guides, welcomers, stewards, and library volunteers, plus those in the shop, or behind the scenes in the administration department and in groups 86

Having worked at the Cathedral for over 33 years, Susan caters for its wedding receptions, concerts, private dinners and for its coffee shop trade too. The Select Lincolnshire coffee shop provides baked potatoes, home-made cottage pies and - allegedly the best sausage baps in Lincolnshire. Susan and her three full time colleagues pour over 160,000 cups of tea each year and can often work

from 7am until 11pm in the refectory, which is open seven days a week. 1pm Practice Makes Perfect: Anyone who persisted

with piano lessons as a child will envy chorister Tom Stockland. He’s one of the few lucky individuals who gets to play the Cathedral’s organ. The opportunity to do so is afforded to the 10 or 15 people, usually organists, who can be squeezed into Organist Laureate Colin Walsh’s one hour Pay to Play sessions. We joined Tom as he played the magnificent 1898 organ, based on an earlier design by Henry Willis and the first in a Cathedral to be blown by electricity. It was rebuilt in 1960 and restored again in 1998. 2pm Sssh!: The Cathedral also has two libraries known as the Medieval Library and the Wren Library. They are home to 261 medieval manuscripts, as well as 10,000 rare printed books dating back before 1801, and a further 10,000 ‘modern’ books.

The Cathedral Librarian, Julie Taylor, showed me the earliest document the library has on file - a hand written instruction from William the Conqueror to Bishop Remigius in 1072 instructing him to build a Cathedral in Lincoln! One of the quirky fundraising opportunities that the Cathedral offers is the ability to sponsor a book - one grandfather has sponsored a book for each of his 17 grandchildren, whilst a romantic gentleman recently proposed to his fiancée in a book he sponsored. 4pm Evensong: Towards the end of the day, we met Chaplain Jonathan Sibley. One of around 20 duty Chaplains, working under the four Canons; the Dean, Subdean, Chancellor and Precentor. A Chaplain’s duty is that of pastoral care to both visitors and the Cathedral’s staff and volunteers. Preparing for Evensong, Jonathan said; “The variety of work is wonderful. No two days are ever the same. I’m normally on the edge of the Diocese at St Mary’s in Long Sutton, so the opportunity to meet people here provides real variety. It’s a privilege!”

With a staff of 125 and over 600 volunteers, keeping Lincoln Cathedral working day-to-day is a huge undertaking. All around the Cathedral every member of staff goes about the business with just one aim in mind; to help to preserve the building, physically and as a place to visit, for future generations. With English Heritage cutting the Cathedral’s funding, and the cost of repairs to the fabric of the building

Cathedral librarian, Julie Taylor, showed me the earliest document the library has on file a hand-written letter from William the Conqueror to Bishop Remigius in 1072 instructing him to build a Cathedral in Lincoln! only set to rise in the future, Andrea says that the recession may be passing, but its effect on the building’s finances will still be felt for years to come and fundraising will never be the same again.

Visitors raise 21% of the £3m needed to maintain the Cathedral annually, with investment contributing 27% and legacies a vital part of its income, contributing a further 20%. However, with the building swallowing up over 60% of its income each year, fundraising and support from Lincolnshire residents has never been more important. Andrea says that if one member from every family in Lincoln were to visit the Cathedral and pay its annual admission fee, the building’s finances would be secure. However, many in Lincolnshire will go for several years without visiting. The message, then, is clear; a trip to Lincoln Cathedral will not only remind you of the fascinating building that dominates the city’s skyline, but will also secure its place in the county for future generations to enjoy. Hopefully, it’ll be looking just as good in another 940 years.

THE EvEnT Lincolnshire Rural Charities’ Dinner Celebrity Chef Simon Rimmer and a film premier were the star attractions of the inaugural Lincolnshire Rural Charities Dinner at the Lincolnshire Showground recently. The event was designed to showcase the work of four leading rural organisations - all dedicated to making the countryside a healthier and safer place to live and work. The Lincolnshire Rural Support network, Lincolnshire & nottinghamshire Air Ambulance, Lincolnshire Agricultural Society and Lincolnshire Chaplaincy Services all featured in the film, introduced by the Simon, which was attended by around 500 guests. The chef provided a fantastic menu created from Lincolnshire ingredients. here are so many reasons to grow your own fruit, vegetables and herbs. You can enjoy seasonal produce at its freshest, and not only does home grown taste great, it’s really rewarding and will help you achieve your five-aday aim. Best of all, it’s actually easier than you think. With a few packets of seeds, and a sprinkling of enthusiasm, you’ll be pleasantly surprised at what you can grow in even the smallest of places!

Grow your own herb garden

These aromatic plants are delicious and look fabulous. They don’t require too much space, but are best suited to hot, sunny positions and well-drained soil. Hanging baskets, patio containers, raised beds and small pots, even wooden pallets are ideal ‘growing quarters.’ Growing your own herbs will ensure you always have a fresh supply of flavour enhancing crops to hand, and can be cut as fresh garnishes as well as being used in your dishes. Start with easy herbs like mint, rosemary, chives and basil before being more adventurous. Grow your herbs from seeds, cuttings, or established plants and water and harvest regularly to promote new growth. Get your five-a-day the easy way...

Before you start growing, you need to get the soil in a good condition. Dig it over, and remove weeds and their roots so they don’t become a problem in the future, then add as much bulky organic material as you can.

Jobs for June £ Summer’s really here, and your garden is the best place to enjoy it. Trees and shrubs are covered in leaves, flowers and plants are flowering and your roses bring colour, shape and beautiful fragrance. Butterflies and birds relish all the delicacies that the garden has to offer!

£ Start to dig up bulbs once the foliage has died back completely.

£ Give support to your perennials that need it. But be careful not to bind the stems together into bunches - place canes in between in the direction of growth and tie them to those.

£ Don’t prune your climbing roses just yet. Leave them to develop so they can grow plenty of new shoots. Make sure you tie them to prevent the plants from falling over.

£ Weeds grow vigorously in June, so continue to keep them at bay!

£ Fertilise that lawn of yours! With the warmer weather it has a lot to cope with, so make sure you give it sufficient nutrients; slow release lawn food is best! Every six weeks, scatter other fertiliser, preferably on a rainy summer’s day. Water you lawn once every three to five days - this will help the grass to root deeper and it won’t dry out so quickly.

£ Deal with those demanding roses! Roses exhaust the soil where they grow quite quickly, so it’s ideal to give them special rose fertiliser which contains trace elements and magnesium. 101

gardening Well rotted manure is ideal. It’s a great idea to use a garden compost, as they are essential for putting the goodness back in to the soil that is used by your crops. Many vegetables can be sown straight into the ground, like salads, carrots, beetroot, radish, spring onions, spinach and beans. All you need is a trowel or rake to make a seed drill (a shallow trench), scatter seed thinly along it and cover with soil. Use small pots or seed trays for larger, widely spaced vegetables such as cabbages, tomatoes and cauliflowers and when they are large enough, plant them outside. Water young plants and seedlings for a maximum of two weeks in dry weather to help them establish and afterwards, they should find enough moisture in the soil. During the hot summer, give weekly drenchings rather than daily sprinklings. Your quick growing guide..

£ Grow carrots in pots - scatter seed thinly and cover with compost, watering regularly but not too much. Baby carrots can be pulled as soon as they reach 1cm across. Beetroot and radishes can be grown in the same way. £ Courgettes are easier to manage in the ground with plenty of space and a weekly soaking. When they reach 15cm, they are ready to pick. £ Salad leaves can be sown right up until the early autumn. They usually grow in three or four days, and can be sown every three weeks for a continual supply of fresh, tasty salad leaves.

Make sure you water young plants, and weekly drenchings in the summer.

£ To grow tasty strawberries - plant pot grown plants or barerooted runners from March to July. They usually fruit around 60 days after planting, but it’s essential to keep the area free from weeds and make sure the soil doesn’t dry out with regular watering. You can also use large hanging containers in smaller gardens, on balconies or patios.

Herbs are easy to grow, can enhance flavour or act as a garnish.

Carrots, beetroot and radish can be grown in the same way. 102

“as bespoke tailors, father and son John and andrew Musson really are cut from the same cloth. andrew left Savile row behind in 2008 to take over the family’s tailoring business. his move means his customers now enjoy the luxury of the best quality tailoring, close to home...” This month we sent along Pride’s Managing Director Julian Wilkinson to find out how you can achieve a Savile Row suit, for a third of the cost, from a tailor who’s a cut above the rest...

W

ith hard work and success comes reward. Luxury motoring, nice holidays, good quality restaurants. But the ultimate luxury for a man is a beautifully cut suit. A poorly fitting suit will always look terrible no matter what designer label has been stitched into it, but a suit with a beautiful fit will flatter any gentleman, providing confidence and helping him to look and feel his best. With off-the-peg designer suits from names like Boss and Armani costing up to £1,000, and with Lincoln tailor Andrew Musson - with his 25 years experience working on Savile Row - offering made-to-measure suits for similar money, only a fool would opt for off-the-peg. Andrew has also launched a ‘travelling tailor’ service at The George of Stamford, enabling those from Stamford, Rutland and Market Harborough to access a tailor without travelling too far. 45 man-hours go into every suit, and each bespoke suit is hand-cut, hand sewn and hand-finished over a period of eight to 10 weeks. The result is a perfect fit that flatters your body style, a beautiful quality of cloth, plus the ability to choose the style, cut and finishing touches of your suit, as well as the underlying sense of pleasure that comes from knowing that the end product is hand-crafted and absolutely unique. Andrew’s father, John Musson, who is himself a tailor, has been based at his Lincoln shop since the late 1970s. Following a Saturday job with his father, before a quarter of a century he spent working on Mayfair’s most prestigious street for gentleman’s tailoring, Andrew returned to the county in 2008 to take over the family firm, with his father still working alongside him.

in the 1980s there were only a hundred or so tailors on Savile row. Today, it’s fewer still, which makes Andrew’s 25 years of experience on the street highly sought after, especially as he undercuts Savile row by two thirds! Savile Row’s palladian façade dates back to 1780, with the first tailors emerging around 1800. The street had its heyday in the swinging sixties and has been famous ever since, but when Andrew began his apprenticeship on Savile Row, back in the 1980s, ‘yuppie’ profligacy was at its most robust, and the street had never been more alive. “Customers would fly around the world, they’d have chauffeurs and Porsche 911s. Champagne was consumed like water and it was a really glamorous place to live for a young man!” says Andrew. Back then there were only a hundred or so tailors with the expertise, the eye and the training. Today, it’s substantially fewer than that, which makes Andrew’s experience even more sought after - especially as Savile Row is charging upwards of £3,500 for a suit cut by someone with the same expertise as Andrew. 110

Creating around 200 suits a year, Andrew has cut for Tom Cruise, Ant & Dec, Peter Mandelson, John Freida, Sir Rocco Forté... and he has worked all over the world. Andrew offers both made-to-measure and bespoke suits. Both are cut to suit your body, creating a more flattering fit. The former is measured by hand, but cut by laser, whilst the latter is a completely hand-made suit personally cut by Andrew. The exact cut is down to the tailor’s own judgement - there’s no formula or templates; it’s all done by eye, giving Andrew’s cut a uniqueness of its own. It’s incredible that people pay for a designer label when, for the same cost, they could enjoy the skill and talent of a Savile Row tailor - one who is also right on their doorstep. Suits from Andrew’s made-to-measure service start at just £795, making it inconceivable that there’s still a market for designer label off-the-peg suits.

Even a suit like the hand-made bespoke example in our photos costs just £1,700, still undercutting London’s most famous street for tailoring considerably. The process begins with measurement and consultation. Customers can choose the colour, texture and weight of their pure English wool fabric from over 2,000 examples, and from hundreds of linings. They can opt for a waistcoat, choose the quantity and placement of pockets, contrast stitching on buttonholes and all manner of other details. Andrew drafts a pattern onto paper, with tailors chalk in the traditional way, then cuts the final fabric before the suit is loosely sewn together for a first fitting three to four weeks later. After the first fitting, the suit is completely taken apart, then adjusted and reassembled for a second fitting a further three or four weeks later.

A third and final fitting sees the client try their suit on with buttonholes, buttons and other details once they’ve been added by hand. Even to our untrained eye, when Pride’s MD Julian Wilkinson emerged from the changing room during his first fitting, it was clear that the suit fitted better than even the best off-the-peg example. Andrew decided that tweaks were needed but to our mind it was already pretty perfect. A couple of weeks later we were back to see the final product, and it was nothing short of superb. Bergen is known as ‘the gateway to the fjords;’ a scenic, medieval city surrounded by beautiful high, steep mountains with snow covered tops and waterfalls. It has a rich culture, and a number of must-see attractions including Bryggen wharf, Fløibanen Funicular and the Fantoft Stave Church.

The city of Alesund is a great place to see the Northern Lights over the harbour. Flåm is in the innermost part of the Aurlandsfjord, a tributary of the Sognefjord. Norwegian Fjords

Norway is a hiker’s paradise - including Preikestolen, Kjerag, and the Sogneord area.

Let’s go fishing... Norway is known for its fishing and seafood, and we’ve picked the top seafood to try as you discover the Norwegian Fjords. Skrei: Skrei is a unique delicacy available for only a few short months every year. Caught along the Norwegian Coast, only the leanest, highest-quality Norwegian cod can be certified as ‘Skrei’. Wild Salmon: Norway has over 400 salmon rivers producing fish of a remarkably high average size. Make sure you sample a taste of the Norwegian wild salmon, which has a particularly solid structure and a delicate flavour prized by seafood experts. Stockfish: This is an unsalted fish dried by the sun and wind on wooden racks in Northern Norway or in special drying houses. Cod is the most common fish used, as well other white fish, such as pollack, haddock and ling. Klipfish: Klipfish has been produced in Norway for a long time. Its name originates from the way the fish was dried on the cliffs after being salted. There is also a Kilpfish Museum in Gomalandet. norwegian King crab: Make sure you try a luxuriously delicious Kind Crab, known previously in Norway as the ‘Kamchatka Crab’. Locals often gather for Krabbefest, or Crab Feast,’ either eating ready cooked crabs from a fishmonger, or cooking live crabs in a large pan outside together. KGGS Girls’ School at Kesteven and Grantham Girls’ School, on 10th October 2013, the arrival of earth movers, steel fencing and men in hard hats signalled the start of an exciting £1.2 million building programme. The project - made possible by a capital grant of £450,000 from the Education Funding Agency involves the building of a new Creative Arts block and an extension to the current Sixth Form facilities in Harrowby House. Measuring over 1,000 sq metres, the new building provides three additional specialist art and design rooms, a drama studio, three general teaching rooms and a 150 sq m study area.

It will also allow for the expansion of the Science teaching area in the main school building. “The local authority and the Government have recognised that we have a shortage of accommodation, and both have been very supportive of our plans.” Mr Burks, the school’s Headteacher, commented. The duo explore non-mainstream works from Baroque period, and their repertoire includes rarely heard works by Vivaldi, Scarlatti and lesser known composers from the Italian Baroque. Battle Prom Concert One of our favourite annual events returns to  Burghley House on 5th July - the Battle Proms.  A classical music concert with fireworks, flyovers  and picnic feasts.... it’s always a fantastic night!

It’s one of our favourite events in the calendar, and in addition to a full orchestral programme of sublime classical music the unique open-air picnic concert features a carefully choreographed and highly emotive Spitfire aerial display and stunning firework finale, all set against the striking backdrop of the grand Elizabethan architecture of Stamford’s Burghley House. “This year the thrilling and ever popular mounted skill-at-arms display by an expert cavalry troop will be carried out in WW1 regalia.” says the Battle Proms’s Emma Dexter. “We wanted to mark the 100th anniversary of the start of the First World War in the 2014 programme with elements that would pay homage to this important historical anniversary.” Battle Promenaders will also be treated to the Battle Proms signature piece – Beethoven’s Battle Symphony – performed as he intended with the full complement of 193 live firing cannon providing a thunderous percussion! Conducted by Douglas Coombes and performed by the New English Concert Orchestra, the programme will also include soul-stirring classical favourites suited to the grandeur of the historic settings. A REALLY BIG ADVENTURE! ‘PROUD OF HIS TOWN’  IS A GOOD WAY TO DESCRIBE ALAN COUPLAND, OWNER OF WESTWOOD LAKES IN  WYBERTON (JUST OFF THE A16).   He’s a man passionate about what he does and believes that businesses in Boston should give something back to the  community. We should really start at the beginning. A keen fisherman, Alan’s dream of owning his own fishing lake came true in 2006 and the site has developed into a successful holiday location with four fishing lakes, 24 luxury holiday lodges, a restaurant and one of Lincolnshire’s biggest Tackle and Bait shops. Originally a small bait and tackle shop, it now stocks all major brands and has a section dedicated to the carp and course angler.  Staff are always on hand to listen to customer feedback, and Alan recently expanded by 10 acres, adding three new fishing lakes. “It’s all about demand - they spoke, and we listened.  Locals wanted to fish and we didn’t have the capacity - they should be able to turn up and fish whenever they wish, so now we can accommodate everyone who comes here hoping to fish.”  With a laugh, Alan adds: “Let’s face it - a foolish man doesn’t listen to his customers!”

Little did we know it was full of mercenaries and highly trained professional soldiers with their fingers on the triggers of powerful weapons.
