WELCOME

A

very warm welcome to our December edition as we all become very excited indeed for the forthcoming season of festive celebrations. In this edition we’ve tried to bring our readers the highlights of a Rutland & Stamford Christmas.

We begin this edition with nine pages of gifts for him, for her, for youngsters and for our four-legged friends, curated by our editorial team from the kind of local independent businesses that deserve our support throughout the year, but especially during the festive shopping season. Last month saw the appointment of the new Bishop of Peterborough The Right Reverend Debbie Sellin who this month provides us with her Christmas message later in this edition. We’re also paying a return visit to LeBlanc Fine Art Foundry for a historic moment, with the casting of Oakham’s commemorative statue of HM Queen Elizabeth II. We reported on the completion of the sculpture itself last month, and now we’ve seen it in bronze, too! Also in this edition, we’re visiting Clipsham’s Olive Branch to meet new Head Chef Ben Fisher. Finally, may I take the opportunity to wish you a wonderful Christmas and New Year on behalf of the whole team here at Rutland and Stamford Pride!

Rutland Calendar Now on Sale... 12 SCENES OF MULTUM IN PARVO TO ENJOY EVERY MONTH THROUGHOUT 2024 RUTLAND For 24 years Richard Adams has been producing his Rutland Calendar. Whereas initially it was used as a promotional tool for the Rutland Tourism Association it has for many years now been a means of fund raising for the Rutland Historic Churches Preservation Trust of which Richard is a trustee. Richard has a great love of Rutland’s wonderful heritage of churches and chapels which not only provide places of worship for, in many instances, declining congregations but also bring pleasure to residents and visitors alike. “Inevitably the repair and maintenance costs of these ancient building are high and the trust offers grant aid to support the works involved,” he says. “Once again, the calendar offers a wide range of images intended to show how the

OAKHAM The owner of Oakham’s Whipper-In Hotel has reaffirmed his plans to continue investment in the building, creating a ‘quintessential English country inn.’ Ryck Turner purchased the Grade II listed C17th hotel in spring 2022 and intends to create a new £2m restaurant and kitchen in 2024. n

Amanda Forman Photography, BGS Weddings and Karen Catchpole Photography are all in the running for wards, as is Market Deeping chef Simon Pollendine and Langtoftbased venue stylist Pretty Quirky. Musical joy in 2024 at Curve Theatre LEICESTER THEATRE REVEALS MUSICAL PROGRAMME TO WARM UP YOUR WINTER... LEICESTER If you’re looking to warm up your winter and enjoy some incredible live theatre this winter, Leicester’s Curve Theatre is the place to be with a trio of exceptional shows. Evita is currently showing at the theatre and will continue its successful run until Saturday 13th January, telling the story of Eva Peron. From 31st January to Saturday 10th February, hit Broadway musical Sister Act brings to the stage a comedy based on the movie starring Whoopi Goldberg. Landi Oshinowo is the lead character, a ‘nun on the run’ who hides from criminals (after witnessing a murder) in a convent. Whilst there she’s encouraged to help a struggling choir. STAMFORD South Kesteven District Council’s annual Civic Service took place on Sunday with Stamford's United Reform Church as this year’s setting. Chairman Cllr Gloria Johnson welcomed elected members from Stamford and Grantham and guests from across the East Midlands for a Sunday afternoon service officiated by the Rev Dr Peter Stevenson and followed by the Civic Reception in the Stamford Masonic Centre. The event raised £485 for the Chairman’s charities, Military vs Cancer and the Place2bee Men’s Mental Health Group (part of the Beehive Charity). n

BISHOP DEBBIE SELLIN A warm welcome to the Diocese’s new Bishop, Debbie Sellin! This month we discuss Christmas, and Debbie’s hopes for the future as she prepares to take on her new role in spring 2024... Words: Rob Davis.

VIBRANT. Really vibrant and exciting. The first impressions of Bishop Debbie Sellin’s new city were of a thriving city with many different communities, co-existing and living happily alongside one another. “It was really lovely to see, and gives cause for a sense of optimism about community generally and about inter-faith friendship and cooperation,” says Debbie.

A Prayer for Christmas: “May the joy of the angels, the eagerness of the shepherds, the perseverance of the wise men, the obedience of Joseph and Mary and the peace of the Christ-child be yours this Christmas,” Right Reverend Debbie Sellin, Bishop of Peterborough.

“I first came down to spend time in the city this summer and there was an Italian market on… which was a good start. I like cooking and I particularly enjoy Mediterranean cuisine. It was a lovely warm day and Market Square was really busy with lots of people sitting outside restaurants, enjoying coffee and sharing a meal together.” Since then Debbie has returned to the area a number of times, enjoying walks along the Nene and an afternoon recording a short introductory video by the shores of Rutland Water saying hello to her new diocese. With the retirement of Bishop Donald Allister in January this year, Bishop Debbie will take over the position, and she will be officially installed around March 2024. Debbie was raised in Stirling – known as the Gateway to the Highlands – which is a small city, only designated as such in 2002, perched on a craggy volcanic rock and home to about 38,000 people. Her father was ordained in ministry so Debbie, living in The Rectory, grew up surrounded by faith and the ministry of God. Attending the University of St Andrews, Debbie then pursued a career working in the NHS in Edinburgh, liaising between the

She also worked in A&E, describing it as busy and stressful but rewarding. Most importantly, it was in this role that she recognised the value of being able to communicate with everyone from patients and porters to clinicians and consultants. Having moved down to Sheffield with husband Paul and whilst raising the couple’s two sons, Debbie took up a position as a Children and Families worker, building upon her own experience developing her faith in the Church’s Crusaders youth group. It was during this time that Debbie felt a definite call to ordained ministry which deepened over time, leading her to begin her training in 2004.

Royal Infirmary’s support staff and those on the wards, ensuring everyone had the resources they needed to perform their roles.

This was a three-year course covering theology and Bible studies as well as pastoral care – a role which came naturally given Debbie’s experience in the NHS and working with children and families in the Church. Moving to Guildford and serving as Minister, Vicar and as Area Dean, Debbie was made an Honorary Canon of Guildford Cathedral in 2018 before being consecrated as the Bishop of Southampton a year later. Upon the retirement of Tim Dakin, Bishop of Winchester, Debbie has been Acting Diocesan Bishop before the announcement in late September that she would take up the position of Bishop of Peterborough in 2024. “I’m really looking forward to helping all of the parishes in the Diocese to thrive.” >>

In last month’s magazine we met Hywel Pratley, who has created Oakham’s statue of HM Queen Elizabeth II. A few weeks after that edition was in print, we returned to see the statue cast in molten bronze...

IN LAST MONTH’S MAGAZINE we reported on the completion by sculptor Hywel Pratley of the design for his statue of HM Queen Elizabeth II. A few weeks after Pride was published, we received a call with the date and time for Hywel’s design to be cast in bronze. Monday 23rd October saw an excited group gather at Le Blanc Fine Art Foundry to see the final stage of the lost wax process completed, and to see for the first time the actual statue which will be installed in Oakham, adjacent to the town’s library. Among those present at the pouring was The Lord Lieutenant of Rutland, Dr Sarah Furness, who led the campaign to raise money for a permanent commemoration of the late Queen. Hywel had already completed the statue in clay, and then covered it in a rubber negative, which was then encased in fibreglass for protection. Molten wax is then poured into the silicone and left to cool before the piece is divided up into sections and gated – this is the process by which wax runners, vents and a pouring cup are used to ensure the molten bronze will run right to the bottom of each piece during the casting process. >> Above: How we reported on the statue in last month’s Rutland Pride. HM QUEEN ELIZABETH II’S STATUE

“An electric induction forge heats up a crucible of bronze to 1,140°c. The molten bronze is poured in and left to cool...”

>> The prepared waxes are dipped into a ceramic liquid six times to create a white ceramic shell. Once each shell has dried, they’re placed into a furnace and heated to 850°c so that the wax inside melts and is flushed out, leaving behind a cavity. It’s into this cavity that the bronze will be poured. The shells are inverted and placed in a sand box, then an electric induction forge heats up a crucible of bronze to 1,140°c. The molten bronze is poured in and left to cool. Once cooled, each shell is taken out of the sand box and chipped out, the ceramic bashed away, exposing the bronze within. The last of the ceramic is sandblasted away. After sandblasting, the runners and vents will be cut off and the pieces assembled and welded together. Oxidisation with heat and acid will give the final assembled statue its patina, which will be enhanced with a coat of wax and polishing. n Find Out More: It’s hoped that the statue will be installed just before Christmas or early in the New Year. THE OLIVE BRANCH in Clipsham isn’t just for Christmas… it’s for life, even though there’s plenty going on at the pub over the festive season. Stepping into the place for the first time in a while, I scolded myself for having left it so long. It’s one of those places I keep up my sleeve for when friends come to stay or for special occasions; a sort of ace card to play when someone expects you to make a really good dining out recommendation.

To regard the pub as the preserve of high days and holidays would be remiss. It’s a place that deserves to be enjoyed both greatly and often, especially now there are a host of fresh dishes to enjoy this winter, courtesy of new Head Chef Ben Fisher. A village pub since 1890, the place was rescued from obsolescence upon its closure in 1997 by a trio of friends, backed by locals. It reopened in November 1999 and hosted a millennium-eve (and thank you for your patience) party for the community that remains the stuff of legends nearly 24 years on. The idea of The Olive Branch was that it would be a pub first and foremost. Friendly, pretty, rustic, comfortable and relaxed. However, none of the three co-founders – including Ben Jones who still leads the team – accepted that its identity would mean having to compromise either on the quality or the flair of the pub’s food. And so, the place became the first gastropub before the term was invented – then popularised, and before it was employed ad nauseam to the point where it finally became meaningless. Still today The Olive Branch remains one of the most well-respected restaurants not just in Rutland, but in the country and one which, as well as retaining its ethos for a quarter of a century, has also picked up myriad accolades along the way from Michelin awards to two AA rosettes and mentions in The Good Pub

MEET THE CHEF BEN FISHER

Guide, Hardens and The Good Food Guide as well as awards in Rutland Pride’s own Good Food Awards. “It’s a bit of a daunting prospect taking over the kitchen one of the area’s best loved pubs,” says Ben Fisher, originally from Surrey. He walked into a kitchen at the age of 15 to work as a pot washer and worked his way up to the position of Head Chef. Ben moved to the area in 2017 and enjoyed five years in the kitchens of Hambleton Hall, before joining the team in Clipsham, postpandemic. >>

Arriving in Rutland in 2017, Ben joined The Olive Branch in 2022 and became Head Chef in June. A year on from the commissioning of their light, comfortable and fit-for-purpose kitchen – a space that’s a necessity given the complexity of the brigade’s food and the extent of the team’s creativity – and with Ben heading up the kitchen, the dishes at The Olive Branch remain imaginative, beautifully presented and innovative in their flavours.

In terms of suppliers, the reverse of the menu features a ‘who’s who’ of local suppliers, recognising the restaurant’s approach to using local produce wherever possible without compromise. The chefs butcher their own meat on site utilising a Stretton producer of hogget, Launde lamb and Essendine fallow deer as well as Price & Fretwell of Derbyshire. The Olive Branch also has a productive kitchen garden, The Paddock, located opposite and pub (adjacent to its boutique B&B) which produces herbs and heritage varieties of vegetables throughout the year.

There’s a set lunch menu and an à la carte lunch menu, plus a dinner menu and a sevencourse tasting menu too (for which booking is certainly recommended, but not always a necessity). The dinner menu comprises six starters, nine main courses and six desserts plus a British cheese and Eccles cake option.

Pickles, preserves, ice creams and petit fours are made in house, as are breakfast muffins for guests in the six bedrooms in Beech House opposite. However, the team wisely acquiesces to Julian Carter and the team at Hambleton Bakery for their supply of sourdough bread.

Working alongside Ben are Matthew Benton, Ian Goodison, Aaron Ella and young chefs Sasha and George. The pastry section of the kitchen, meanwhile, is the preserve of Jordan Evans, who in addition to producing some spectacular desserts is also Ben’s other half, proving that the way to a man’s heart really is through his belly… Ben reckons he has a really sweet tooth and having tried Jordan’s tonka bean panna cotta with homemade honeycomb, we can see why it was love at first bite. The team’s new winter menu features some real highlights, such as our partridge with salt-baked turnip and pickled bramble, as well as retained favourites like a slow-cooked beef rib dish which remains one of the most popular dishes on the menu. Highlights for December include the pub’s popular Christmas parties, ideal for groups

of up to 22, plus Ben’s Festive Cookery Demonstration on Thursday 7th December, with three courses demonstrated plus lunch and wine for £80/head, plus Boxing Day Lunch for £55/head and dining on New Year’s day. One final mention for the festive season though: the Pub Shop within The Olive Branch is renowned for offering its own homemade pickles, preserves and chutneys, as well as decent wine and Hambleton bread. During the season though, it’ll also offer homemade canapés, truffles and petit fours to pass off as your own efforts, plus turkey gravy, braised red cabbage and homemade cranberry sauce all available to purchase and enjoy at home, enabling you to give your own Christmas Day lunch a touch of Olive Branch excellence! n

A patisserie showstopper that’s cute and versatile! Experiment with colours and pipe snowmen, holly or Santas on the top for an extra festive flourish!

FESTIVE MACARONS Preparation Time: 30 minutes. Cooking Time: 10-12 minutes. For the Macaron Shells: 125g ground almonds • 200g icing sugar • 100g egg whites (from about 3 large eggs) 40g granulated sugar • Red food colouring gel or crimson red cocoa powder For the Filling: 100g unsalted butter, softened • 200g icing sugar • 1 tsp vanilla extract 1/2 tsp peppermint extract • Red food colouring gel crimson red cocoa powder LINE two baking sheets with parchment paper or silicone baking mats. You may want to draw circles on the parchment paper to use as a guide for making uniformly sized macarons. In a bowl, sift together the ground almonds and icing sugar. If you have any large almond pieces left in the sifter, discard them. In a clean, dry, and grease-free bowl, beat the egg whites with an electric mixer until they become foamy. Gradually add the granulated sugar and continue to whip until you get stiff and glossy peaks. Gently fold the almond and icing sugar mixture into the whipped egg whites until the batter is smooth and glossy. Be careful not to overmix. If you’ve not substituted red cocoa powder Add a few drops of colouring gel (red, green etc...) to achieve your desired colours. Gently fold until the colour is evenly distributed. Transfer the macaron batter to a piping bag with a round tip. Pipe small circles onto the prepared baking sheets, leaving space between them. Let the piped macarons rest at room temperature for about 30-45 minutes until they form a skin. 48 48

In the meantime, preheat your oven to 150°C (300°F). Bake the macarons in the preheated oven for about 15-18 minutes, or until they have formed a firm shell and are set. The tops should not brown. Rotate the trays halfway through baking then Allow the macarons to cool on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely. To make the filling, in a mixing bowl, cream the softened butter until it’s light and fluffy. Gradually add the icing sugar to the butter and beat until well combined. Add the vanilla extract, peppermint extract, and a small amount of red food colouring gel to the filling. Mix until you achieve a uniform colour and flavour. Match up macaron shells of similar size then pipe or spoon a small amount of the filling onto the flat side of one macaron shell. Gently sandwich it with another shell. Allow the macarons to mature in the refrigerator for at least 24 hours. This allows the flavours to meld and the texture to improve. n

Rich and delicious, but very easy, this is a traditional festive dessert that’s lighter than a Christmas pudding and beloved by all!

BEST EVER YULE LOG Preparation Time: 30 minutes. Cooking Time: 10-12 minutes. Serves: 6 people. For the Chocolate Sponge: 4 large eggs • 100g (3.5 oz) caster sugar • 75g (2.6 oz) plain flour 25g (0.9 oz) cocoa powder • 1 tsp baking powder • A pinch of salt. For the Filling and Topping: 300ml (10.1 fl oz) double cream • 200g (7 oz) dark chocolate, finely chopped 50g (1.75 oz) unsalted butter • 1 jar of black cherry jam • Icing sugar, for dusting Fresh black cherries and chocolate shavings (optional, for decoration) Preheat your oven to 180°C (350°F) and grease and line a 30x20cm (12x8 inch) Swiss roll tin with parchment paper. In a large mixing bowl, whisk together the eggs and caster sugar until the mixture becomes pale and fluffy. This might take a few minutes. Sift in the plain flour, cocoa powder, baking powder, and a pinch of salt. Gently fold these dry ingredients into the egg mixture until fully incorporated. Pour the batter into the prepared tin and spread it out evenly. Bake in the preheated oven for about 10-12 minutes, or until the sponge is set and springs back when touched. While the sponge is still warm, place it on a clean kitchen towel generously dusted with icing sugar. Carefully roll up the sponge with the towel, starting at one of the shorter edges. Let it cool completely in this rolled-up shape. In a saucepan, heat the double cream until it’s just about to boil. 50

Place the finely chopped dark chocolate in a heatproof bowl and pour the hot cream over it. Let it sit for a minute, then stir until the chocolate is completely melted and the mixture is smooth. Add the unsalted butter to the chocolate mixture and stir until it’s fully incorporated. Allow the ganache to cool and thicken. Carefully unroll the cooled chocolate sponge. Spread a layer of black cherry jam over the sponge, leaving a small border around the edges. Next, spread a generous layer of the chocolate ganache over the jam. Gently roll up the sponge again, using the towel to help you get a tight roll. Place the seam side down. Spread the remaining chocolate ganache over the yule log, covering the entire surface. You can use a fork or a knife to create a bark-like texture on the ganache. Decorate with fresh black cherries and chocolate shavings, if desired. n

The already great SUV becomes better still!

Porsche Cayenne

If, like Santa, you’ve presents to shift this season, an SUV with plenty of boot space is ideal. And with the sure-footedness of all-wheel drive, Porsche’s newly facelifted Cayenne is one of the best on the market. One to put on your Christmas list... if you’ve been good this year!

SANTA CLAUS is in a hurry. He has much ground to cover on Christmas Eve, and many gifts to deliver. If the man in red is considering trading in his sleigh, he could do a lot worse than Porsche’s newly-facelifted Cayenne. After all, the SUV combines brisk performance with a huge load space... and with all-wheel drive, it’ll remain sure-footed even in the event of a white-Christmas. Porsche’s hugely desirable large SUV, the Cayenne, made its debut in 2002, and quickly silenced critics who ridiculed the idea of an off-roader made by a company more traditionally associated with sports cars. New models followed in 2010 and 2018, and earlier this year, the third iteration of the car was facelifted. Here it is, and on first glance it looks like evolution rather than revolution. Dig a bit further though and the changes become more apparent. 82

The Cayenne was Porsche’s best-selling model in 2022 with the company shifting nearly 100,000 units worldwide. That’s 30.9% of its total global sales. For context, the Macan – the Cayenne’s smaller brother – accounted for a further 28% of worldwide sales and Porsche’s traditional sports car, the 911, sold just 40,000 units. The takeaway from that is Porsche is now predominantly a maker of SUVs, not sports cars, and the Cayenne, priced from £70,000 to £130,000, is a proper premium offering. Kicking off the newly facelifted range is the Cayenne with its 3.0V6 engine, 20” wheels, and plenty of creature comforts.

As you make your way up the range, an extra £10,000 gets you a plug-in E-hybrid model with 40 miles of electric-only range. We think this is the sweet spot in the range and frankly the performance of the rangetopping turbo is awesome but a bit excessive anywhere short of a closed track. Opting for the V6 or hybrid Cayenne over high-end versions will also liberate budget for a few options. We’d tick the boxes for adaptive cruise control and the surround view camera option with active park assist. Depending on whether you opt for a combustion or hybrid Cayenne, luggage space is a capacious 627 or 772 litres. That’s plenty of space for a sack or two of gifts for good boys and girls... and with awesome performance, opting for a Cayenne means Santa will make all of his deliveries... with plenty of time to spare! n
