ANDREW SPENCER CEO, Australian Pork Limited The year just gone could be counted as an historical landmark for the industry. At the APL Annual General Meeting the Australian industry resolved to take a strong position on the future use of gestation stalls in pork production. In a delegate vote the following resolutions were passed: “That Australian pork producers commit to pursuing the voluntary phasing out of the use of gestation stalls by 2017”; and “Australian pork producers recognise the welfare benefits of gestation stalls, the cost of change and the need for research, investment and off-sets to support the voluntary commitment to change.” A decision around the industry committing to pursue a phase out of the use of gestation stalls was always going to be difficult, emotionally charged and controversial. The lengthy and intense six month ‘Shaping Our Future’ consultation was testament to that with many robust and healthy debates around this issue. Estimates on the cost of this shift in production method make it an expensive decision but one that in many minds was unavoidable. The fact that the industry has now shown the courage to take this decision is forward thinking and commendable. The support for this position is strong and shows that we have a largely united

industry around the commitment. The new edgy television and advertising campaigns will continue on from 2010 into 2011. The revisited ‘Get some pork on your fork’ slogan is proving successful in getting traction with consumers. The inaugural Ham and Bacon weeks in 2010 successfully reached an audience of more than five million consumers through publicity campaigns. In 2011 Bacon week is scheduled for March and July is set aside for Ham week. As we move into 2011, I am pleased to announce that APL has now signed up 274 butchers, wholesalers and processors licensed to use the Pink PorkMark logo. APL, in a recent consumer survey, identified that one in four Australians have purchased Australian pork sporting the PorkMark logo on the packaging. The PorkMark logo signifies the pork on the pack is guaranteed to be Australian grown pork. The research also indicated that Australians preferred to buy Australian, in part to support Australian farmers, but also because they believe Australian grown produce to be fresher, safer and of higher quality.

“The research also indicated that Australians preferred to buy Australian” In 2010 the pork industry was the first to submit our Research, Development & Extension Strategy to government for sign off at Primary Industry Ministerial Council (PIMC) level. This was also the year for the rebid submission to government for the Pork CRC. At the time of writing, we have just heard that the bid was successful. Looking forward to 2011; the challenge is to now prove the decision to voluntarily move away from gestation stalls as the right one for the industry, and APL has the significant task of attempting to make sure that some trade-offs can be achieved through the industry making this decision. Put simply, it makes absolutely no

sense for the industry to add close to $100 million to the cost of production with no hint of how to get a return on that cost. The last thing we want to do is to make ourselves even less competitive to the subsidised imported product swamping our shores. The so-called trade-offs that APL will be seeking on behalf of the industry are still a work in progress for the coming year, but we do have a list of contending areas for assessment, listed below under the various subject areas: 1. Structural Assistance • Accelerated depreciation on capital expenditure • Exit packages • Reconfiguration assistance • ‘Whole of government’ planning approval approach 2. Labour • Training support and assistance for affected producers • Special consideration around immigrant workers 3. Model Code Review • Acknowledgement of the industry’s significant commitments on gestation stalls in considering other areas for amending 4. Marketing Support • Support for differentiation of Australian pork products • Country of Origin Labelling improvements 5. Retailers/ Processors • Consistent standards for ‘gestation stall free’ product • Re-engagement with processors on value of ‘Australianness’ for ham and bacon • Uptake of the PorkMark • Agreed voluntary standards around country of origin labelling One thing is for sure, ‘Australian Pork’ now means much more than just in which country the pork was produced; it represents a commitment from a progressive Australian industry in the food business to do our best to give our customers a product they really want, are prepared to look for and to preferentially purchase.

Pork CRC – A year in two halves

Dr ROGER CAMPBELL CEO, Australian Pork CRC Australia’s pork producers, resourceful and diligent as they are, were challenged, sometimes to breaking point, by 2010, a year in two halves like few before it. The past year could be described as reflecting the potential and the challenges faced by Australian pork producers. The first half was pretty good, with pig prices remaining at sustainable levels and grain prices sitting, fairly comfortably, at longer term average levels. The combination comforted producers, who enjoyed reasonable and well deserved margins. Later in the year, however, many became more agitated than comfortable, as imports blew out, grain prices jumped and pig prices fall to 2005-2006 levels. The changes highlighted just how global our market is and underlined basic economics that price will reflect supply. This scenario is common across the world’s pork industries and will likely represent a greater challenge as grain supply and price become even more volatile. Longer term success will reflect how, if we can, even to a small degree, reduce our reliance on grain and ensure feeding is done with maximum efficiency. Hopefully, Pork CRC can offer producers well researched technologies that can allow them to feed for greater profit. If we can do anything to differentiate Australian pork in consumer minds and increase the demand for our locally grown product, life will become a little easier. However, the relentless drive for enhanced efficiency will continue, with only the most efficient and those with supply contracts reaping the real benefits. During the last five years we’ve seen

many Australian pork producers exceed the efficiency of their peers in other countries, so we are no longer behind. I’m proud to report that Pork CRC programs and projects in the feed grain and feed efficiency areas have already provided Australian producers with new technologies and the means of enhancing production efficiency. Pork CRC pig specific grains, including Berkshire triticale, Shepherd barley and the two pea varieties, Maki and CRC Walana, are now available in commercial quantities and continue to do well in terms of yield and nutritional values for pigs. Berkshire looks a real winner and is currently limited for sale to growers suppling pork producers. Yields have exceeded those of other triticales in the last two years so it does well in the dry and under dry land conditions when it rains with yields this year in NSW approaching 7 tonne/ha. Pigs also thrive on Berkshire, performing better than when on wheat based diets. The Pork CRC enhanced Near Infrared Spectrometry (NIRS) calibrations for rapidly determining the DE and other nutrient contents of grains were commercialised last year under the Trade Mark AusScan. The calibrations, now licensed to 18 organisations, are widely used by nutritionists, feed mills, producers, plant breeders and researchers. Producers and growers are encouraged to use AusScan to better understand the value of their grains and to maximise the cost effectiveness of the diets used in pork production. The technology is a world first and should be exploited to its maximum. Pigs that don’t need much feed to reach market weight is the other way to reduce feed costs. On that note, Karen Moore and Dr Bruce Mullan from DAFWA provided more information in 2010 on the performance capabilities of Australian genetics. Using pigs between 50 and 100 kg, they reported differences between females and entire males in all aspects of growth performance and in response to dietary amino acids. They also reported average feed: gain values of only 2.1 for entire males and 2.4 for females. These are in line with the very low values reported last year for pigs of the same genotype growing between 20 and 50 kg. In animal health, researchers from NSW I&I and WA’s Murdoch University developed new diagnostic tools for Ileitis

and swine dysentery, while Dr Toni Chapman continues to develop high technology probiotics against pathogenic E coli. There’s also been fascinating research outcomes from Pork CRC PhD student, Megan Edwards on the effects of nutrition at and around weaning on the longer term performance and health of pigs. Megan found that even limited experience of dry feed before weaning improves piglet gut development and health and survival after weaning. In terms of the human health attributes of Australian pork, University of SA researchers reported that including pork in diets of overweight subjects increased their consumption of pork 10-fold, had no adverse effects on cardio vascular health, but resulted in significant weight and body fat loss, compared to subjects on their usual diets. University of Sydney researchers reported that pork increased the feeling of well being in young women and tended to enhance concentrations of serum vitamins B6 and B12 .The researchers also found that including pork in the diet of young women maintained haemoglobin levels to the same extent as a low-dose iron supplementation. The positive outcomes will help correct the misconception of pork as a less healthy meat. More importantly, the results suggest there is something about pork and that it may have health advantages over other meats. New research projects looking at increasing the iron content of pork and better understanding the effects of pork on weight loss and maintenance have been commissioned by Pork CRC. My personal highlight of the last 12 months was the performance of our students and researchers at the APSA. The Pork CRC held its annual conference and a student workshop at Cairns, in conjunction with APSA, in November 2009. Of 104 papers published in the APSA proceedings, 70 were from Pork CRC projects. One of our honours students, Amy Lealiifano, also won the APSA medal for the best first-time presentation at APSA and the Pork CRC APSA award for the best presentation on a Pork CRC supported research project. Pork CRC programs continue to deliver outcomes with important scientific and commercial implications. We have an excellent pipeline of projects that will continue to deliver outcomes to reduce costs and enhance the efficiency of pork production in the longer term.
