The final process of distillation of the Gin Sea, which has its roots in Galicia, takes place in one of the oldest European copper stills, a distiller of the year 1890. Its name refers to the East India Company established in Cádiz in 1646, by Juan de Wint and Lila Margarita. The process of distilled London Dry Gin style is made by people for several generations have distilled these same stills. The distillery has 7 different small stills, each contributing its own personality and nuances, which allows small distillations. In its development, a complex process five distillations, involved 10 botanic combinations: juniper berries, coriander, angelica, angelica root, cinnamon, orange peel, lemon and lime, mint and orange blossom. The distillation is done without direct fire on the stills, using the "bath", system thus a more delicate and slow process where the various botanical essences are extracted without being affected is achieved.
