Southern Blues Up North Local musician brings traditional blues to the East Bay

hode Island is no stranger to the blues. No, we’re not talking about the kind you get when your basement floods or a heavily traveled bridge unexpectedly shuts down. We’re talking about the blues that emerged from the cotton-filled plains of Mississippi, where legends like Robert Johnson, Son House, and Muddy Waters once roamed. Musician Ryan Lee Crosby is a Portsmouth-based blues singer, recently arrived from Boston, where he had lived for over 20 years. Like many, he was seeking a little more space and a break from city life. “For us, it was the ripple effect of the pandemic,” says Crosby about the move. “My wife’s family lives on Aquidneck Island. We really love the area and were both working remotely a lot more. We wanted more space and beauty and certainly Rhode Island offers that.”

Although he lives “up north,” Crosby’s music rarely veers far from its southern roots. His latest album, Winter Hill Blues, was recorded in Memphis and released in the summer of 2022. In the classic stor ytelling tradition, Crosby believes that authentic blues music should be passed down through the generations. He plays in the Bentonia style, which

typically features haunting minor chords and droning strings, creating an ominous and eerie feel. “I only play in styles that I have learned from somebody directly,” he explains. “[Blues giant] R .L. Boyce, who passed away in 2023, was somebody I was fortunate to play with, not only down there but also in Cambridge

and New York. And Jimmy ‘Duck’ Holmes, from Bentonia, is another I think of as a primar y influence.” Crosby’s g uitar playing and vocal design are shaped by the early Mississippi blues singers. He tours the Magnolia State often, explaining that these visits “change the way I think about community and human

relationships. When I’m playing down there, I don’t feel like I’m tr ying to turn anybody on to something.” While Crosby acknowledges that he isn’t tr ying to teach his audience anything new when playing in the South, he says, “Up here, I feel like it’s important to create a context, letting people know where the music comes

from. Certainly a lot of the great Mississippi artists came to Newport in the ‘60s, playing the Folk Festival – they were all here. It’s a lovely connection to tr y to make when playing around here.” Crosby expects to release new music in 2024. “One of the great things about living here is that I’ve built out an analog

recording space here in the house. I’ve been recording a lot and I have at least one full record finished which I am going to put out later this year.” Crosby is playing Tiverton Four Corners Arts Center on February 10, with details and tickets online at FourCornersArts.org. A

t the end of her sophomore year in 2021, Piper McAloon applied for a waitressing job at the then-to -open Foglia, a plant-based restaurant in Bristol owned by chef Peter Car velli. To her surprise, she was offered the position of pastr y chef – and it has been no ordinar y after-school job. A selftaught baker, McAloon graduates from Mt. Hope High School this June and will be attending Johnson & Wales University studying the pastr y arts in the fall, during what McAloon hopes will be the first steps in her childhood dream of eventually owning her own baker y.

PLANT BASED: Vegan is no animal products, so no meat, no dair y, no eggs. Some people don’t eat honey. I recommend anyone who wants to go vegan to go vegetarian first. I was vegetarian for seven years and vegan for two and a half. I just kind of lost interest in meat and as I got older, I didn’t like the ethics of it. My parents were never big meat eaters. Then I stopped eating dair y and I eventually cut out eggs. It was gradual.

EASY BAKE: At age 10 or 11, I started baking on my own. I would watch all the cooking shows and the Georgetown Cupcake show. Baking was super fun for me and then became this passion. My homeroom teacher Ms. Talbot is also vegan and she told me about this place [Foglia] opening up. I applied thinking I could do prep or waitress. I had put baking on my resume because when I was 12, I had to make 15 pies for Thanksgiving. [Car velli] says, “I want you to be my pastr y chef.” I was like, “ What ?” It’s the end of my sophomore year. I was the first person he hired. It was exciting and it’s been really cool because I’ve been there since the start, and also a big learning cur ve because I had only baked at home. CREATIVE INSPIRATION: From the beginning , I have come up with the dessert menu. Chef Pete had a couple of ideas, but I basically have full reign on dessert. The first things I made were cheesecake, chocolate olive oil cake, and a berry galette, which is kind of like a freeform pie. It’s like the most delicious thing ever. I love using in-season fruit: rhubarb, berries, any stone fruit. Apples are good except you have to

core and peel them. Strawberries are probably the easiest. I had to do some research. I hadn’t really done any vegan baking before I got my job. I had only been vegan for less than a year at that point.

SAME BUT DIFFERENT: There are really good vegan butters like shortening but they are not as bad for you. There are so many different egg replacements, like flax egg , which is ground flaxseed mixed with water and gets thick. Applesauce works. The most interesting one is called Aquafaba. It’s the liquid in a can of chickpeas. I use that to replace egg whites in a meringue. It whips right up and is super fluff y.

CLOCK IN: We are open Thursday through Saturday 5-9pm, Sunday brunch from 10am2pm, and an early dinner 4-8pm. I go in Tuesdays and Wednesdays after school for about four or five hours at a time and then on Saturdays to replenish and make items for Sunday brunch. It was a big learning cur ve.

W h a t m a k e s i t a R h o d y G e m? Custom House Coffee is “an upscale coffeehouse totally focused on coffee,” says Robert Mastin, president. Besides roasting their coffee in small batches to provide the freshest product possible, the coffeehouse also creates limited batch blends, and offers grab-and-go breakfast and lunch foods prepared daily in their commercial kitchen. A unique feature is that the coffeehouse is owned by its employees, with 14 staff members currently owning shares in the company, which “results in the best customer service and attention to detail as possible,” says Mastin. Open for over 21 years, Custom House Coffee has never compromised on quality, and the regulars know it. The love for coffee extends beyond the goods into the very decor. “Walking into the store is like entering a coffee museum,” Mastin explains. The walls are decorated with several hundred vintage coffee cans – many donated over the years by customers – antique grinders, and other paraphernalia are scattered throughout. “It’s cluttered, but it feels cozy,” he says. “We are the ‘go-to’ place for all serious coffee drinkers in the area who will not settle for anything but the best.”

The Barrington waterside home of a digital creator imbues quiet luxury

I

s it possible for a classic New England home to have the streamline vibe of a chic city loft ? It is if it’s the abode of Jackie Ignall, the Barring ton-based digital creator and photo -stylist. Along with her family of four, Ignall relocated to the charming town nine years ago for her husband’s job after living in a two -bedroom apartment in New York City. “I loved my neighborhood and building but not having natural light was tough for me,” Ignall recalls of their former digs. Going from city living to suburban life was a big switch for the family, but Ignall notes that upon seeing their now-home – an expanded five-bedroom Cape – immediately took her breath away. “It had a ton of good natural light. I loved the location and being so close to the water, the open floor plan, the flow of the rooms, and the air y openness of the family room. I always thought I wanted a traditional Colonial style, but this house was unique and we loved ever ything about it. It also has a great yard for the kids,” she says.

After taking ownership, Ignall enlisted a southern MA-based interior designer, who not only helped bring Ignall’s vision to life, but introduced her to local makers like Edge and End in Providence, where the coffee and dining room tables come from. Ignall describes her personal style as low-luxur y, leaning towards the classics with a modern urban edge. “I like a mix of Boho, Cali-style, mid-centur y modern, and timeless pieces. It feels fresh, stylish, and livable. It also feels bright and air y,” she says.

Meet Camilla Akbas Player 367 on Netflix’ hottest reality show on cookie challenges, creating content, and ceviche By Ruthie Wood

Tell us a bit about yourself. Along with being a full-time lifestyle content creator and Dunkin’ connoisseur, I also work as a software developer. I truly believe that it is possible to have many different sides, interests, and passions, and I’m happy and honored that I get to showcase them all. What was it like being a contestant on Squid Game: The Challenge, a reality competition show for Netflix inspired by the South Korean television series Squid Game. It was the most surreal experience of my life. I want to first mention how much of an honor it is to be picked out of hundreds of thousands of applicants; this little Middle Eastern gal got to represent our beautiful state on a global level. To walk into an experience where it looked exactly like the T V show blew my mind. I found it easy to connect with people due to being an extrovert, and quickly created several alliances. By the second day, I knew at least the name and one fun fact about all 197 people who lived with me. The hardest part of The Challenge was walking into games knowing that either yourself or your friends would not make it back with you.

How did you prepare to be on the show? I did not train before the games and surprisingly, many others did not either! The only preparation I did was watch the original Squid Game show that came out in 2021 on Netflix. I wanted to make sure I had a refresh on the games, dorms, and outcomes that typically happened through the show. I truthfully think that if I rehearsed the cookie challenge, I would have been entirely more ner vous and probably would have broken my cookie. Back in Rhody, what are some of your favorite places? I have favorite go -to ramen, Korean, sushi, BB Q, Brazilian, burger, vegan, and Indian spots, but I truly visit each one a ton. In Providence, I highly recommend getting Churrasco Anticuchero from Los Andes, and smoothies from In The Pink; however, as a New Englander, nothing beats a Dunkies trip in the morning. How do you find your top spots to make content around the state? We’re so fortunate to have so many amazing places to eat here in RI! Rooted in Community Bridge woes bolstered a Warren eatery into action

hen ever y Rhode Islander’s phone buzzed with the alert that the Washing ton Bridge was partially out of commission due to a “critical failure” this past December, many of us felt defeated in the face of gridlock woes, and others got creative. Rhody Roots owners Cassie Brimmer and husband Luis Cruz were in the latter camp. “Our motto is community, not competition. We want all the small businesses to succeed,” says Brimmer. The duo hit social media with the question of “how can we help?” They offered up their Main Street brick-and-mortar as an East Bay drop-off and pick-up site for businesses impacted by the bridge backup to make holiday shopping easier, along with promoting and spreading the love on Instagram. “New and existing businesses will bring people that wouldn’t necessarily come to our little town organically, which means more exposure for all of us, so why not support any business that we can?” The couple’s dedication to uplifting others may stem from the love the East Bay community showed them at the beginning of their culinar y journey. Rhody Roots first emerged on the Warren dining scene as a food truck, and it didn’t take long for eaters to take note. “ We wanted to gauge if there was as much of a need for this as we assumed prior to opening a brick and mortar and it turns out that there was!” Brimmer recalls. Rhody Roots has found their niche in devising a menu inclusive to food sensitivities and allergies, with sandwiches and shareable fare that don’t sacrifice flavor. “ We love being able to see gluten-free g uests enjoy their fried chicken along with their loved ones who have no restrictions. It really is a tough find and we’re happy to be able to offer this,” says Brimmer. And with the holiday of love upon us ? Cracking the Code

W

hen asked what the word entrepreneur meant to her, Elizabeth Fradin said, “a problem solver.” And with her gluten-free snack business, Betta Bakes (formerly Beth Bakes), she explains, “I’m solving a problem by bringing a product to market that I think addresses a certain lack. Every single day you encounter a problem that you need to solve. It’s the one thing I always know is going to happen.” Though a self-proclaimed creature of habit, Fradin enjoys rising to the challenge when needed – especially when it involves baking. Over 20 years ago, when her daughter was diagnosed with diabetes and celiac disease by the age of six, Fradin, a stay-at-home mom, was always looking for healthy substitutions to include in her daughter’s meals. Back then it was a difficult task to find gluten-free snacks that tasted good

and weren’t loaded with sugar or starch. “I started playing around with my recipes to convert them into gluten free by using more whole grains, better ingredients, and less sugar,” says Fradin. She shared her wholesome crackers with friends and family. “People really loved them and couldn’t believe how flavorful they were.” Fast-forward to 2017. With her children grown and her calendar open, the time was right for Fradin to grow her ongoing advocacy for the gluten-free community by starting her own food business focusing on folks with dietary restrictions. Turning to Warren-based culinary incubator, Hope & Main, Betta Bakes was born. friendly, and “artisanal in the best sense of word,” says Fradin. Although they have a more crispy, crunchy texture, she explains they can be used like mini-flatbreads because of the oval shape, to top with avocado, dips, and anything the eater pleases. Incorporating the crisps in her own snacks and hors d’oeuvres, Fradin recommends serving the Currant and Fennel crisp with goat cheese and chives or even a little sweet butter, just as you would put on toast. The Pumpkin Seed and Cumin variety pairs well with hummus, shallots, and a bit of lemon on top. Crisps can also be served with soups or broken up and sprinkled over a salad for an extra crunch. “It’s an exciting time for gluten free because this generation is using better ingredients, there’s more interesting products, and much more variety,” says Fradin, and with different levels of intolerance or simply choosing not to consume gluten to avoid carbs, awareness is growing. “Gluten free has been around for a long time but it’s in a nice evolutionary phase right now.” FEBRUARY 2024 | HeyRhody.com

Katie King of Krunchy Kate she also found purpose through the program’s dedication to cooking meals for children at the Boys and Girls Club in East Providence and the West End Community Center. She thought about teaching the culinary arts herself, but she quickly learned that was not her calling. “I have so much respect for teachers,” she relays. Like many people, when the pandemic hit, King pivoted. Inspired by chef Haley Rego of The Holistic Trick, she stepped into the world of food blogging, and thus Krunchy Kate was born. Fueled by a passion for wholesome comfort foods, nutrition, and wellness (on the fitness end of things, she’s also a Poliquin Certified Personal Trainer), she created an LLC and, in 2022, threw everything into becoming a personal chef. She attended networking and wellness, catered small parties, joined the Professional Moms of New England group – anything to put herself into local hubs and meet new people. Her big break came when she made her first (of now six) appearances on The Rhode Show. “I feel like it really legitimized my business,” she says. Inquiries poured in and her business exploded. As an in-home personal chef, she never creates the same menu twice. She works one-onone with clients to learn about their specific dietary needs and preferred flavor profiles. “I’m lactose intolerant,” she explains, “and I learned that changing eating habits changes

how you live, how you move, how you feel – it changes everything.” This is what she loves to bring into the homes of her clients. For winter health goals, one small but significant piece of advice she offers for those who are hoping to shed a few pounds is to change the size of their plates. “Instead of using a dinner plate, use a salad plate – and don’t go back for seconds.” This helps with portion control, and filling a smaller plate actually means you’re getting a more appropriate portion for that meal. “I also recommend adding or exchanging ancient grains into your diet instead of traditional grains [like bread]. Quinoa or barley make great roasted veggie bowls.” Novice chefs will appreciate the step-by-step instructions of her easily digestible recipes. She recommends the Roasted Beet Salad, otherwise known as the “Show Stopping Salad,” posted on her blog. “It’s a crowd favorite and the most requested dish for any party or get-together.” Although King and her husband no longer embark on grocery store dates, some things never change. “I still make barbecue chicken, but it’s a lot better now. I make my own barbecue sauce, for one,” King says. “It’s one of his favorites.”

grew up in the days of the food pyramid, where six to 11 ser vings of bread was recommended,” says Katie King , using the old standard to show how far she’s come to become the health-focused Krunchy Kate of The Rhode Show acclaim. These days, her focus has shifted to eating holistically while maintaining delicious flavors and adding unique spins on classic foods, and she has been on quite the culinary journey. As a native Rhode Islander who grew up in North Kingstown, King’s career actually began in a very different field. After five years of studying and earning a degree in architecture, she realized that path did not afford the type of lifestyle she wanted. “I could not sit in a stuff y office for a living ,” she admits. Throughout her youth and into early adulthood, she held various jobs at restaurants, kitchens, and cafes. “Food has always been in my background,” she says. “For a long time, I thought I wanted to open an eclectic coffee shop with homemade syrups and non-dairy options, like The Nook in East Greenwich.” But King’s desire to cook came from creative dates she and her husband – then boyfriend – would take to the grocery store. “It was like our own version of Chopped,” she explains. “We would get a bunch of ingredients and try to create a meal from them.” At that time, her expertise revolved around chicken: lemon chicken, pineapple chicken – “barbecue chicken and rice was my go-to,” King recalls. Her husband thought it would be wise to expand her repertoire. Rachael Ray was an early source of inspiration, and soon King started experimenting with different flavors, creating healthy meals that her family and friends could feel good about eating. This passion was backed by experience with the RI Community Food Bank’s Community Kitchen, a culinary job training program preparing adults for careers in the food industry. The purpose was twofold: not only did King take a deep dive into nutrition, acquiring new skills and earning her ServSafe certification, but
