Latest from Providence duo offers lush soundscapes and nuanced meaning

Like a good novel, the narrative or intention in a good song is there and it will jump out when it’s good and ready. This is the sense I get when listening to the album In All For Starting Over by Museum Legs, the creative outlet for Penn Sultan (Last Good Tooth) and MorganEve Swain (Brown Bird, The Devil Makes Three). The record relaxes in the mid-tempos, never rushing or overindulging in accompaniment, over the course of nine songs that ebb and flow into each other in ways that carry a story in poetic and plainly delivered verses.

“The song-writing style comes from traditional folk or blues wherein the guitar line is the thing that carries us between verses. When the song starts to have a heartbeat and a voice, it will tell you what it needs. Like a fledgling. Peep peep!” says Sultan, who credits the animated classic film 101 Dalmatians as imparting pivotal wisdom. “The songs start as guitar and melody and lyrics. Roger says to Anita, ‘Melody first my dear, and then the lyrics.’ That stuck.”

For the most part, the LP is melody-based, resulting in lush soundscapes built on the sum of various instruments harmonizing over each other in directions both counter and complementary. Museum Legs bring a high-interest engagement into the various layers that each song reveals and then hides away again.

“The instruments on the records are played by myself, with MorganEve adding the vocals and violas and their respective harmonies,” Sultan explains. “Some songs have predetermined or imagined instrumentation, and others require experimentation, addition or subtraction during the recording process like trying on outfits.”

The drums on this record have some of the most expressive and characteristic turns of phrase of any instrument. The percussion mirrors, counter-balances, and creates its own space more as a solo instrument than a backing rhythm, heavily syncopated and vaguely world-beat-ish. Sultan muses, “Recording the percussion is seriously enjoyable. It holds a lot of power. It dictates what kind of feeling the song will have. My drum kit is in pieces so I have to record it in pieces. Layering one piece of drum at a time allows for the syncopation because I’m not limited by what my big dumb limbs are able to do at one time.”

The vocal melodies have a hypnotic quality and are heavy on rounds and counter-melodies, as well as off-the-beaten-track harmonies. Songs are jam-packed with very literary lyrics that remain unpacked, but seem to point listeners in a general direction starting with the album title and key phrases that are repeated in each track.

“Deep reads welcome,” invites Sultan, “The [Museum Legs] albums are built around a singular motif. If you were to read all of the album titles in order, they are each pieces of a larger song. When I first was writing In All For Starting Over , it was about the moments or events that make people choose to start over. Then the pandemic happened. It seemed like the world had a unique opportunity to start over, but we didn’t take it all. So, the next record is in the final stages and is entitled …and Over and Over . It is about repeated behavior, missed chances, and the incessant spinning gears. Alternatively and optimistically, it’s never too late to start over even if it means eating the cost.”

A Judge Issues Not Guilty Filing for 41 Brown University Student Protesters

Providence judge has issued a not guilty filing for 41 Brown University pro-Palestinian protestors who were arrested for trespassing last semester. Judge Nicholas Parrillo said he was going against the objections of the City of Providence and Brown University in issuing the not guilty filing to the protestors because none of them had a criminal record, and because he said he thinks they held a respectful protest. “I think this is a reflection of what nonviolent and peaceful resistance, frankly, is supposed to look like,” he said.

A not guilty filing means that the students will have to stay out of legal trouble for the next six months. If they do that, the charges against them will be completely cleared after that period of time. An attorney for the students told them it was significant.

The university did not respond to a request for comment by deadline.

University president Christina Paxson

previously declined to seek to have the trespassing charges dropped, despite a formal recommendation from a university advisory body and pleas from faculty members. In her letter to the advisory body, she said it would be a “mistake” to drop the charges. “The practice of civil disobedience means accepting the consequences of decisions on matters of conscience,” said Paxson.

The 41 students were arrested while protesting after hours in University Hall, an administrative building on December 11. The students had been asking for their university to divest from companies they say facilitate human rights abuses in Palestine.

Kate Kuli is a junior at Brown University, and was among those in court Tuesday. She was relieved the charges will not show up on her record in background checks, provided she is not re-arrested in the next six months. However, because she plans to apply to law school, she said she still will have to write on her application that she was once arrested. She also said she

continued to be disappointed in the university.

“For Brown to want to escalate things on the criminal, legal side, I feel is kind of unnecessary and sets a dangerous precedent for the future,” said Kuli.

In November, 20 Jewish students were arrested on the same charge for protesting the same topic in the same building, also after hours. However, the school asked for those charges to be dropped after a Palestinian junior from the university was shot in Burlington, Vermont, in what police were investigating as a hate crime.

Historically the school has dismissed some charges for some students in similar protests. The Providence Journal reported in 1992 that the school struck a deal with 76 student protesters who were protesting what they saw as discriminatory financial aid practices.

Olneyville Neighborhood Association hosts legal clinic

In partnership with the Student Clinic for Immigrant Justice, the Olneyville Neighborhood Association (ONA) is hosting a pro se asylum legal clinic this summer. During this clinic, volunteers will help screen individuals for asylum eligibility and complete I-589 applications for eligible applicants. With only 5.9 percent of individuals from Rhode Island in immigration court able to find representation, this clinic presents a unique opportunity to support a large number of applications in a short time frame, and ONA is proud to make this effort possible.

Help ONA raise funds at Troop Top at the WaterFire Arts Center on August 29, a series that serves as a fundraiser for featured non-profit organizations, such as ONA, aligning with WaterFire Providence’s commitment to the Providence and Rhode Island community. All are welcome to attend for an exciting summer of world-class art experiences, camaraderie, and giving back.

The North End invites neighbors to join new association

In Providence’s North End neighborhood, encompassing the Charles and Wanskuck sections, residents have embarked on the initial stages of forming the first-ever North End Neighborhood Association (NENA). Every third Saturday of the month at 9am, neighbors gather at the Wanskuck Library to lay the groundwork. The collective vision behind NENA is to keep North End residents informed about local developments, provide a platform for community enhancement projects, and establish a central hub for sharing neighborhood updates.

Moreover, a neighborhood association like NENA could serve as a crucial accountability mechanism for elected officials, offering essential advocacy and support to the community. It would have the capacity to implement programs and initiatives aimed at enhancing neighborhood safety, creating vibrant spaces for children, establishing crime watch programs, and providing valuable training opportunities for residents. If you reside in the North End and share an enthusiasm for this initiative, NENA invites you to join their next meeting to help shape the future of the neighborhood together.

FPNA announces personnel change

After more than seven years of service to the Fox Point Neighborhood Association (FPNA), Amy Mendillo has stepped down from the position of director of communications and operations. As Fox Point neighbors may know, Mendillo was responsible for FPNA’s advocacy communications, including its newsletters and issue alerts, letters of position, and monthly Neighborhood News contributions in Pro v idence Monthly . “We are profoundly grateful to Amy Mendillo for the extraordinary attention and knowledge she applied to every challenge of her work with FPNA,” says FPNA president Lily Bogosian. “Amy strives for excellence in matters great and small. She set a high standard for service to the board, the members, and the Fox Point community at large.”

The position has been assumed by Peter Phipps, who was a newspaper reporter, editor, and web manager for 45 years. He retired from The Pro v idence Journal as deputy executive editor in 2017. Since then, he has been teaching journalism at the University of Rhode Island, tending his garden, and leading a Providence history tour. “I have lived in the neighborhood since 2003, when my wife and I bought an old house on Transit Street,” he says. “After several renovations, there are still few right angles. The house, like the neighborhood, is unique, and that’s what we like about it.” FPNA is grateful to Mendillo for her service and sorry to see her go, while at the same time delighted to welcome Phipps to the team. A new name also brings new opportunities for growth at the Rhode Island T.F. Green International Airport

The renamed Rhode Island T.F. Green International Airport (formerly T.F. Green Airport), with its massive signs on Route 95, is taking off – literally!

Already in an advertising battle with Boston’s Logan Airport, its much larger competitor, our second-tier airport has always fought above its weight. With Breeze Airline’s major commitment to T.F. Green, the growing airport has become a travel hub, for both connecting flights and destinations. Over the next five years, Breeze will double its presence, making it one of their largest hubs with 200 weekly non-stop flights to 18 destinations, including three international or US territories, and will base up to 12 aircraft here.

Iftikhar Ahmad, president and CEO of the Rhode Island Airport Corporation, is ecstatic. “Breeze is a really big deal and this commitment and their expected growth is important as we continue to work with several other potential additional airlines,” he explains. The state will give Breeze $2.9 million in tax credits for adding 116 jobs over 5 years.

Ahmad was brought here following a six-year stint running the Louis Armstrong New Orleans International Airport where he overhauled internal airport management and oversaw $300 million in renovations and a new $826 million terminal. While he really liked the airport, the biggest selling point for him to move to Rhode Island was the quality of life for his family. He oversees the state’s six airports: RI International Airport (T.F. Green), Newport State Airport, Q uonset State Airport, North Central State Airport, Block Island State Airport, and the Westerly State Airport.

An important part of his job is being an ambassador, cheerleader, and business leader for the airport and the state. He’s been credited with reducing the cost for airlines doing business in RI while simultaneously elevating the experience of travelers. He talks “with great pride” about the new and improved restrooms and the continued terminal upgrades and improvements.

“We’re the introduction to RI for business

people, vacationers, and students, so it’s important that we make a great first impression,” Ahmad adds. Providence placed third in Condé Nast Traveler ’s Top 10 Airports in the U.S. in their Readers’ Choice Awards.

It hasn’t been all clear skies at the airport, and Ahmad admits there has been some “turbulence.” Norwegian Air came in with great hope and promise, but their fleet was made up of Boeing’s 737-300 Max, which was pulled from service because of a flaw in the software that took flight control away from the pilots without their knowledge, and then COVID hit. There has also been “turbulence” with the city of Warwick over the surrounding neighborhoods and the new $100 million freight terminal, but that too seems to have been resolved.

Last year, the airport served almost 3.5 million passengers, with service to 34 domestic and three international airports. Southwest accounted for about a third of current passengers with American, Delta, JetBlue, and Breeze making up about 10-12 percent each and 25 percent spread among other airlines. Breeze’s goal is to climb to 1 million passengers annually.

In 2005, T.F. Green traffic increased to a high of 5.7 million passengers during the height of the “Big Dig,” which was restricting access to Boston’s Logan Airport. After 2005, airlines started consolidating service at larger airports, which reduced service and frequencies at mid-sized and small hubs, including Providence. “We know that we can confidently scale up to accommodate increased traffic,” Ahmad explains. “And the fact that most airlines are using larger planes lowers their cost while increasing numbers.”

Seven and a half million people live within 90 minutes of the airport. Top destinations are Orlando, Baltimore, Charlotte, Washington, D.C, Atlanta, Chicago, Ft. Lauderdale, Tampa, and Detroit. “It’s a data-driven business and all airlines have access to the PDEW (passengers per day each way), which tracks how many passengers, on average, travel between two cities each day. We know that between 42 and 50 percent of passengers will go to Boston for a

non-stop flight, so Breeze’s commitment will double our non-stops,” explains Ahmad.

The state undertook three major Depression-era construction projects; one of which was the airport (the Providence County Courthouse and George Washington Bridge were the other two). The airport was dedicated on September 27, 1931 as Hillsgrove State Airport, drawing over 100,000 people to what was at that time the largest crowd to attend a public function in the country! It was also the first state-owned airport in the United States. In 1938, the airport was renamed in honor of Senator Theodore Francis Green.

Perhaps a lesser-known fact is that the airport also houses two New England Patriots Boeing 767-300 planes, AirKraft 1 & 2 (call sign: UNDERDOG), with their distinctive six Super Bowl trophies on the tail.

The Summer House

Making a Gilded Age home family-friendly is at the heart of a bold first-floor redesign

One of the most prolific architects of the Gilded Age, George Champlin Mason Sr. is responsible for a good number of Newport’s legendary jaw-dropping homes, which offer a snapshot of not just the Ocean State’s architectural history, but American history. Some of his best known properties include the Eisenhower House at Fort Adams State Park, the home that eight decades after its construction in 1873 would be used as the summer White House of President Dwight D. Eisenhower, and Chepstow, built in 1860 and today, one of the famed Newport Mansions. These, and the majority of Mason’s designs, embrace the Italianate or Italian villa style for which the architect is best known.

The Beeches, however, was built to be the summertime escape of New York City-based sugar merchant Moses Lazarus and his prolific family, including daughter Emma who penned the sonnet, “The New Colossus,” inscribed at the base of the Statue of Liberty. Considered contemporary when it was constructed (circa 1870), the manse is a Second Empire French or mansard, a Victorian style defined by a square roof with four sloping sides; dormer windows allow light and air to the top floor.

Similarly, today’s residents of The Beeches make the home – which boasts 9,000 square-feet of living space – a seasonal retreat; a gathering place for the multi-generational family who split their time between Palm Beach, Providence, and the City by the Sea. The owners turned to Ally Maloney Winzer of Maloney Interiors in Newport to fashion the six-bedroom, seven-bath home in their taste and style while also maintaining its architectural integrity, keeping its intricate moldings, paneling, trim, and other details front and center. “From the onset of the project, I knew that it

was important to keep those elements intact,” says Maloney Winzer. “While we painted much of the woodwork in order to brighten the interior, we did not demolish or replace any of those original details.”

While Maloney Winzer concedes a tony Bellevue Avenue address suggests an intrinsically formal aesthetic, she was also determined to make The Beeches approachable – and practical. Though fine textiles dress the windows and were used on some of the upholstery pieces, the designer ensured the selected furnishings were comfortable and family friendly.

“I love coastal style, but I also love to create unique spaces so that my client’s home stands out from the rest,” says Maloney Winzer, who adds that nautical style doesn’t have to mean blue and white.

Summer Vibes

Used primarily as a summer home, Maloney Winzer wanted to infuse a fresh, light, and airy tone. “I was also working with a home with historical significance, so it was very important to me that the design embrace and respect the existing architectural details,” she notes.

“I wanted the home to feel summery, fresh, bright, light, and airy,” she says. But light and airy doesn’t translate to boring: a zebra-print carpet runs the entire length of the stairwell. In the living room, a nearly wall-to-wall cheetah-print rug lends a chic and edgy pop to the space, punctuated by vibrant local artwork, textured wall coverings, and accessories. The upholstered furniture was done in shades of cream, beige, and light blue with color introduced via a selection of fine art pieces that were placed in the living room and study. “Newport has such a rich history – art, architecture, and maritime history,” says Maloney Winzer. “It’s a fun, laid-back place to live. I love to create beautiful spaces that inspire my clients.”

While you can purchase art any season, summer is filled with outdoor shows replete with original paintings by regional artists ready to outfit our spaces. Bringing artwork into our homes adds personality and can act as a tangible memory, while also creating an opportunity to layer in elements of design. There’s no one way to approach selecting art for your walls, but there are a few things to keep in mind when putting pieces together, whether you want to make a bold statement or keep it subtle. It may be a little intimidating to get started, but once you have a few pieces you love and enjoy seeing every day, you won’t turn back.

A Fine Line

Local cosmetic tattooist brings the micro trend to pop-ups

When you hear the buzz of a tattoo needle, you might picture bold, big, colorful designs. However, a new trend in the tattoo world are tiny tats, also known as micro tattoos. These small, intricately detailed images are a minimalist’s dream, and Andreea Furtado, known as @browtourage on Instagram, is behind some of the finest work.

Furtado’s journey to tattooing is unique. “Imagine a young girl who initially aspired to pursue fashion design but ended up in business school instead,” she begins. “I worked in finance for a long time, feeling unfulfilled.” Her true passion emerged when she discovered permanent makeup while trying to fix her mom’s eyebrows. This led her to fine-line tattooing, a practice known for script writing, symbols, and flourishes; after an 18-24 month apprenticeship, Furtado’s talent for doodling and drawing became her livelihood.

When not traveling across Rhode Island for pop-up events with her ink and needle in tow, Furtado can be found at her Seekonk, MA studio, BR Brows + Beauty. Ensuring a comfortable and positive experience is paramount for Furtado, and from the moment clients walk in, they are greeted with a spa-like ambiance, soothing tunes, and a cup of tea. “Think of it as a spa day, but with more needles,” she laughs. Besides fineline tattooing, she offers cosmetic tattooing services like microblading, nano brows, powder brows, and lip blushing. Her work goes beyond art; it’s about enhancing her clients’ natural beauty.

For my tattoo, I chose an outline of my two dogs’ ears to be placed on my ribs. Furtado’s precision and gentle touch maintained a serene experience throughout the entire process. Surprisingly, the actual tattooing felt more

like a mild irritation than the intense pain I had anticipated, rating a modest three on the pain scale. In just one hour, I was amazed to see a flawless and intricately detailed sketch of my dogs’ ears, with every line capturing their distinct shape and sharp contours.

Worried about the pain? Furtado’s got you covered. She guides clients through the process from start to finish, starting slowly and allowing for breaks as needed. For those considering their first tattoo, she advises careful thought regarding design, size, and placement. “Once it’s on, it’s not easy to remove,” she cautions. She ensures clients are satisfied with the end result by adjusting the stencil as many times as necessary until it’s just right. “I want you to feel as comfortable as possible,” she explains.

Preparation for a tattoo appointment is crucial. “Hydrate, hydrate, hydrate!” Furtado emphasizes. Your skin should be moisturized, and your body well-hydrated. A hearty meal beforehand is also advisable to prevent dizziness. Comfortable, accessible clothing is key, especially for the area being tattooed.

Aftercare is equally important. “Treat it like a delicate flower,” she advises. Keep the tattoo clean, apply the recommended ointment, and avoid picking at it. No swimming or tanning while it’s healing, and minimal physical exertion. Her top tip for those anxious about the pain? “Engage in conversation during the process, take it slow, and take breaks if needed. And if all else fails, reward yourself with post-tattoo ice cream!”

For those overwhelmed by the permanence and decision-making involved, Furtado suggests taking a deep breath.

The Flea Marches On

A new summer market location means better amenities, while still bringing together familiar vendors

After 10 seasons in operation, the Providence Flea, an open-air market that has traditionally set up shop on summer Sundays along South Water Street, feels like a community staple. But many treasure hunters aren’t aware of the thing that has always been in the back of founder and market manager Maria Tocco’s mind from the start. “The place where we set up is one of the I-195 Redevelopment District Commission’s developable parcels of land, so we always knew we were on borrowed time,” she says.

Time was up last fall when the commission invited developers to submit proposals for use of that space. Several proposals were submitted, including one from the Flea that outlined a multi-use open-air pavilion, but the winning proposal came from Riverside Partners LLC, which plans to put a mixed-use, six-level building on the piece of land.

Recognizing the myriad contributions the Flea has made to the district, however, the commission wrote into the resolution a clause that allows the market to set up at District Park, which is in sight of the original location and just a short walk over the Michael S. Van Leesten Memorial Bridge. Tocco is optimistic about the change. “It gives us a little more predictability,” she says. “We’re excited about the move and are gaining visitors from copromotion we’re doing with the commission.”

In addition to the stability, the new location has made set-up easier for the Flea’s weekly assemblage of 75 vendors from its roster of 250, and the built-in pathways make navigation easier for visitors, particularly those who use wheelchairs. Construction on a year-round 3,500-square-foot pavilion that will house public restrooms and additional food and beverage concessions is expected to begin this year. Tocco says that these additional amenities, plus events such as classes and a music series, will make the

park a huge draw. “I’m really excited about patrons and vendors being able to take advantage of District Park,” says Tocco. “There’s plenty of room to spread out, which we didn’t have before. We’ll have a food truck pull up every week, so people can bring a blanket and sit on the grass while they eat, shop the market, or go to the beer garden.”

Tocco says that the Flea’s anchor vendors –some of whom have sold their wares at more than 100 markets – are embracing the change. “A lot of vendors have made the Flea their home. A wonderful community among vendors

and between vendors and patrons has sprouted up from the market.”

One anchor vendor is Anne Marie Lamarre Porto, who makes all-natural skincare products through her company, Belle Toi. “I’ve been doing the market for over eight years. I call it my traveling boutique because it has offered me such an opportunity to showcase my goods,” says Porto, who makes everything from moisturizers and scrubs to perfumes and pillow sprays, and designs custom orders. “I can’t help myself – I just keep making more and more products!”

Porto has high praise for the Providence

Flea. “Maria does such a wonderful job of curating an elevated selection of vendors. There’s vintage, artisans, makers – there’s a little of everything,” she says, adding that Tocco’s true skill is in building community. “Her focus isn’t on the almighty dollar. Maria works with local businesses and broadcasts information about the market to so many different areas and attendees. It’s such an amazing venue to attend.”

In addition to curating a one-of-a-kind experience for patrons, Tocco works to help vendors find success in and beyond the market. “One of the first vendors at the Flea

A new vendor to this year’s Flea is Cranston-based Edgewood Cheese Shop, owned by wife-and-husband team Adrienne and Casey D’Arconte. Although this is her first season as a vendor at the outdoor market, Adrienne participated in some of the Flea’s winter indoor markets. “We weren’t sure what to expect,” says Adrienne, “but it’s been a great experience. The other vendors are so welcoming and helpful. And it’s a great group of customers.”

One of Adrienne’s favorite things to do is introduce people to new flavors. She’s done this with great success at her Edgewood shop – and during beer- or cocktail-and-cheese pairing nights she regularly organizes in partnership with local breweries and distilleries – so she’s excited to spotlight New England cheeses for Flea attendees this season.

“So often, specialty food is put on a pedestal, but I think it should be fun and experience-based. You don’t have to know anything about cheese to enjoy it. If you can taste, you can have an opinion,” says Adrienne. Along with bringing home Edgewood’s cheese and charcuterie for oven-free summer snacking, Flea patrons can create a spontaneous picnic on the lawn with market finds.

“The Flea is such a positive and fun experience,”

says Adrienne. “It feels like a party! We’re so happy to be part of this great community. People are so excited to be there supporting local businesses.” Tocco, whose mission is supporting the community and local, small, and micro businesses, agrees. “Showing support is particularly important now with the economy, inflation, construction, and traffic woes,” she says. “You can’t always buy local, but it’s important to try to buy local first.”

Guatemalan street food meets Irish American pub fare at a new food trailer

When husband-and-wife duo Amanda Fullam and Jorge Vargas purchased Gilligan’s Pub a couple of years ago, they knew it was an establishment with roots. Open since 1933, the bar had its fair share of regulars who enjoyed stopping by for after-work or post-dinner drinks, but there’s one thing it didn’t have: a kitchen.

“Tommy’s Pizza used to be across the street from the bar for over 60 years and everyone loved ordering from there and bringing it over to the bar to enjoy while they were drinking and hanging out,” recalls Fullam, but Tommy’s closed in 2021, so the couple was in search of a way to accommodate dinnertime guests. “We started scheduling pop-ups with some awesome local food trucks and every single time the bar would fill up and customers would be overjoyed. I found it hard to get enough bookings, as many trucks had commitments to big festivals and larger venues, so that’s when we decided we would build our own.”

Fullam and Vargas have over 20 years of restaurant experience between them, and were excited to take on the challenge of running their own food truck. “Jorge found the trailer used and we spent six months gutting it and re-outfitting it to fit our needs,” says Fullam. Following a month of trying out their menu on hungry bar patrons, The Galley celebrated a grand opening in May with a concept Providence has likely never seen before: Guatemalan and Irish American street food fare.

Fullam describes the menu as “bar food” that “represents a little bit of both of us,” featuring burgers, hotdogs, loaded fries, and empanadas. Most popular is the Irish Burger. “We freshly grind our own beef to make a half-pound patty, griddle it until it’s a little crispy, melt cheddar cheese, bacon, griddled onions, and top it with an Irish whiskey mayo – simple, but delicious,” she says.

Another menu highlight is Vargas’ creation, the Shuco, a traditional Guatemalan hot dog that translates to “dirty.” Though messy to eat, the all-beef hot dog loaded with shredded cabbage, onion, guacamole, and special sauces on a grinder roll gives the classic New York System Wiener a run for its money – but don’t worry, The Galley serves those, too. Fullam reports the latter is “the real deal,” with Johnston-based Little Rhode Brand Frankfurts, served traditional style, or with all the New York System fixings over French fries. “That’s the ultimate bar food for me.”

The couple is also excited about their original creation: the Guate Burger. “We make our own homemade Guatemalan sausage, longaniza, and combine it with freshly ground beef to make a savory, flavorful half-pound patty,” Fullam explains. It’s stacked on a sesame seed bun with pepperjack cheese, guacamole, griddled onions and jalapeños, and a creamy, smoky sauce made with traditional chirmol salsa.

For the ultimate marriage of the two styles of cuisine, the Shepards Pie Empanada is a handmade pocket of crispy fried dough stuffed with garlic mashed potatoes, corn, and ground beef.

The Galley food trailer will be tantalizing patrons of Gilligan’s Pub with fusion fare most weekends, Thursdays through Sundays, alongside fun happenings at the bar. “We are just starting to get our feet wet this summer,” says an enthusiastic Fullam, “but we are open to collaborations, catering inquiries, and pop-ups, too.” 937 Chalkstone Avenue, @thegalley_pvd

The third location of a beloved brunch spot carries on the tradition of serving up breakfast with fresh ingredients

The Rhody Hen Cafe first gained a following in Pawtucket, and then at their second location in East Providence. A visit to the most recent iteration in North Providence quickly revealed the charming diner-style eatery’s lure. My niece and I were taken by the adorable decor, from the tiny curtains framing the sweeping windows to the greenery and walls adorned with quaint wooden cutting boards and cheese graters. We knew we were in the right spot for brunch.

While sipping fresh-squeezed orange juice at a cozy booth, we had the pleasure of chatting with owner Tiffany Barrera, whose upbeat attitude and refreshing sense of humor made this cafe visit all the more delightful. Hospitality industry

veterans, she and her husband Antonio both dreamed of opening their own restaurant even before they met. That dream became reality in 2018 when they opened their first location in Pawtucket.

The cafe prides itself on avoiding the greasyspoon diner label by incorporating fresh ingredients into their dishes. Many items started out as specials – Tiffany joked that these often stemmed from pregnancy cravings while carrying her second daughter when the first cafe opened – and were so popular they found a space on the regular menu.

I decided on the Habanero Benny, a twist on traditional chicken and waffles. The crispy fried chicken cutlet is slathered in a sweet and spicy mango habanero sauce, served on a waffle, and topped with eggs over hard. The delectable dish is covered in hollandaise sauce with fresh cilantro and comes with home fries seasoned with smoky paprika, which I enjoyed dipping in the sauce. It’s the perfect combination of sweet, savory, and umami.

My niece enjoyed the Huevos Rancheros and Carne Asada, which came with grilled-to-order marinated hanger steak tips, scrambled eggs, sauteed black beans and veggies, pico de gallo, sour cream, and fresh avocado slices, all assembled on

corn tortillas. She raved about the crispy edges of her well-seasoned steak.

On the sweet side, we indulged in a couple of choices from the griddle: the Blueberry Pancakes include berries baked into the batter and sprinkled on top, with whipped maple butter that gradually melted into the soft pancake and a mint sprig complementing the summery treat. My niece described the French Toast as “dangerously delicious,” made with thick slices of Texas toast, crispy on the outside and fluffy inside, dipped in vanilla cinnamon custard and finished with homemade maple syrup.

For a wholly satisfying brunch made fresh, The Rhody Hen is a must-visit – and the North Providence location keeps the fun going late with fish and chips served until 8pm. Swing by during July to catch the Klondike Bar Pancake special, too. We left full, with boxed leftovers in tow – the cafe lives up to its motto of “small state, big plate.”

From Providence events to cooking for the South County troll artist’s team,

Food has always been Taylor Pelton’s sanctuary. Growing up in a suburb of DC that was heavily influenced by Korean and Japanese flavors, he was surrounded by a diverse group of classmates – after-school snacks at friends’ houses could range from Costa Rican to Pakistani foods.

It wasn’t long before he found himself experimenting with recipes in the kitchen. “I’m someone who has ADHD, and cooking was always very stimulating,” Pelton explains. “I was really fortunate to have a great vo-tech program in high school. It was the only thing that really scratched that itch.”

That high school program drove home the idea that a dish doesn’t need to use bougie ingredients or to look like it was plated by a Michelin-star chef to be elevated to a high standard. The secret is in the way the ingredients and flavors are used. “There was a touring student from Johnson & Wales University who made this sweet potato bisque – that I still make at Thanksgiving – and I just remember tasting it and having never tasted something with that much depth of flavor. It blew my mind.”

It’s no surprise that Pelton chose to apply solely to culinary schools, including Johnson & Wales. Although he was initially not accepted, Pelton remembers calling the dean of admissions for two weeks straight – “He said he respected my persistence” – and he got in.

Persistence, or, perhaps, stubbornness, is an important trait to possess in an industry known for its grueling hours and low pay. Pelton started his professional career as a sous chef working under local celebrity chef Eli Dunn at now-closed Eli’s Kitchen in Warren. “That restaurant was pretty unique in that he gave the cooks as much creative freedom as they’d like,” says Pelton, joking that the specials list was often longer than the real menu.

Following a period of burnout, Pelton recently rediscovered the joy of cooking by doing it on his own terms. “I’m cooking the food I really want to cook, working with friends who I really love and appreciate and who share my values when it comes to the

industry,” he relays. Through pop-ups, under the moniker of Tenny Cooks, he works with chefs and restaurant owners who host him in their space while playing with menu ideas, flavors, and concepts.

More recently, cooking has offered Pelton a different form of sanctuary in the midst of struggling with the state of global affairs. “I felt pretty helpless in regard to the Palestine situation, and I wanted to really contribute,” he says, “so I started doing pop-ups as a means of raising money for the World Central Kitchen,” donating 10 percent of proceeds from his events to the organization. Each location, menu, and theme are different, but with an enduring focus on seasonal ingredients. He employs a fusion of flavors and cultural influences, a throwback to the palate he developed growing up.

Through events, Pelton has gained name recognition as a private chef, too. “One popup led to me being the private chef for the Thomas Dambo team, who built the trolls in Ninigret Park,” he explains. As the artists and

builders had traveled all over the world, it gave Pelton the opportunity to incorporate Korean, Laotian, and Thai styles of cuisine, and flex his talents meeting the team’s requests, from developing a vegetarian menu to reducing food waste by making the most of ingredients across meals. One of these feasts was a Southern-style comfort food spread, complete with a black walnut lentil loaf with smoked maple ketchup glaze, smoked cheddar mac and cheese, collard greens, and a honey and bergamot whipped sweet potato casserole with pecans.

No matter the dietary needs or flavor desires, Pelton seeks to craft a “bespoke menu” for his clients. “I always want to know as much about the client as possible,” he says –what they love and don’t love, their culinary aesthetics, and more – so each dish served will be unforgettable.

“Always fresh, always healthy” is owner Kirti Zinjuwadia’s mantra at Cilanter, a modern Indian fusion restaurant that opened recently on Federal Hill. The extensive menu includes tacos, wraps, salads, and vegan options, with bowls the most popular choice for many customers. “People want to have a meal, but they want to pick and choose,” says Zinjuwadia. “With the bowl concept,

people get what they want. People want to eat tasty food, but at the same time, they don’t want to compromise and are looking for healthy alternatives, without preservatives, without processing.”

A customer favorite is the Chicken Tikka Bowl. “We marinate the chicken, cook it fresh, curried with turmeric rice,” says Zinjuwadia. Customers have over 20 toppings and

sauces to choose from, including desi cucumber salad, fried chilies, and chatpata avocado, as well as more traditional add-ons like fajita peppers and chopped onions. Hometown Poke’s mobile truck is a familiar sight around the state, and fans have been visiting their cozy cafe on Camp Street since 2018. Owner Tiffany Ting explains why poke bowls have become so popular. “A bowl lends itself well to the fast-casual trend that we’re seeing – it’s portable, it’s a whole meal, and it’s easy to take anywhere,” she says. “They also allow us to mix different items, and to layer options over salad or rice. I’m Asian and grew up eating bowls of rice – that’s more normal to me than bread or pasta – so I’ve always defaulted to eating food from bowls.”

The Hometown Classic is a top seller. “It’s got lots of flavor, and a good mix of tuna and salmon,” says Ting. “Spicy shrimp is popular too.” Ting prepares their sriracha aioli sauce in-house, from authentic sriracha. She recently introduced bubble tea to the menu, which is “very much in line with our food and our culture,” she notes. If you’re looking for a healthy option on the East Side, Wayland Fresh serves made-to-order bowls, salads, smoothies, and more in a fast-casual environment. “The idea was to provide people with an option for healthy foods,” says owner Josh D’Abate, who opened the eatery in 2021. “The most popular items during the summer are the acai bowls.” Starting with bases like mango or papaya, these bowls are customizable with mix-ins including fresh fruit, chocolate chips, Nutella, granola, and more.
