Well Read As a book lover and library denizen, I was delighted to see my friend Ben Goulet’s piece on the post-Borders bookstore scene in Providence, and would like to recommend an essential addition to his list: Ada Books at 717 Westminster Street (near Classical High School). Proprietor Brent Legault began his bookselling career in New Orleans and relocated to Providence several years ago to open the jewel-like Ada Books (named after one of Nabokov’s most maddening heroines). He sells a mix of used and new books, plus magazines, comics, ‘zines and cards, and features small press publications by interesting new poets, writers and illustrators. Along with poet Kate Schapira, he presents the Publicly Complex series, featuring live readings of original work by poets and writers from around the nation and the globe. Ada has also hosted several marathon readings led by the ever-inventive Matthew Lawrence of Not About The Buildings. Brent’s store is modest in size; his selections are anything but. This is one smart collection, and includes carefully selected volumes of fiction, criticism, nonfiction, arts, philosophy and other surprises. And Brent is happy to talk books with customers, or leave them to browse in peace, whatever their preference. I hope that Providence’s avid readers will seek out

A Holiday Tradition In the turbulent wake

Starting the first week of December, the Foundry Artists Association will usher in its 29th Annual Holiday Show, welcoming a dozen new vendors to the floor at Pawtucket Armory Center for the Arts. Tabletops will brim with goods from 65 New Englandbased designers, artifacts including hand-forged jewelry, blown glass, ceramics, prints, foodstuffs, fiber arts, handbags and boiled wool hats. Among the new additions is Rag & Bone Bindery, peddling handmade recipe journals, photo albums and journals. Also, keep an eye out for Hannah Blackburn’s whimsical wooden children’s toys, Greg Stones’ zombie-penguin watercolor broadsides, Theresa
Mowery’s bronze-topped coffee tables, and Belinda Gabryl’s sugar skull coffee mugs. Admission to the sale is free to the public, though attendees are encouraged to bring nonperishable food items for the Rhode Island Food Bank. We’re going to be dirty girls now.” Megan Andelloux is standing in front of a group of roughly 20 people, holding a giant brown dildo in one hand and a bottle of lube in the other. It’s only kinky the first time.” Because I’m one to embrace my humiliations - hell, if I’ve done it, I might as well get a few laughs out of it - and because I honestly don’t think anyone will
believe that I’m doing this, I’ve brought along a friend. When Megan invites us to the front to pick out the toys we’ll be using for the evening, my friend gives me

A World Record in PVD The Rhode Island Sewing Network, the nonprofit Project Undercover and sponsor Ocean State Job Lot have teamed up in order to piece together the world’s largest sock. Not only are they breaking a Guinness World Record, but they are also bringing awareness about the increasing need for undergarments such as socks, underwear and diapers among impoverished children. With over 40 volunteers from the Rhode Island Sewing Network, the sock will be an estimat-
ed 32’x17’, trumping the original biggest sock record of 16’x14’. Project Undercover is an organization dedicated to providing needy children with socks and underwear, and this world record is its biggest effort yet to raise awareness about its cause. There are over 40,000 needy children in Rhode Island who go everyday without the most basic essentials most people take for granted: socks, underwear, diapers and the like. The sock will be unveiled and
measured by Guinness on December 2 at the Rhode Island Convention Center, where it will hang from the third floor all the way down to the first. There will be food, music, sword swallowing (yes, sword swallowing) and a special appearance by the Big Nazo puppets. The Street that Speaks for Itself Take a stroll through India Point Park and you can’t help but notice its colorful sea-themed mosaic mural. The Speaking of Wickenden audio walking tour sheds light on the historic neighborhood through a collection of vignettes told by Fox Point residents during interviews with Brown University students. While the Wickenden Street we know today is bustling with shops, restaurants and watering holes, it wasn’t always this way. Many changes have happened since Irish laborers first settled in Fox Point during the 1820s. Grab your cell phone (aka your tour guide) and take a stroll down Wickenden to discover how forces such as weather and the economy have shaped the once peaceful area. Big East basketball returns to Providence in full swing this month, as new PC head coach Ed Cooley leads his Friars into conference play. While fans are enjoying the on-court action, the real action will be happening behind the scenes in the conference’s Providence office, where major changes are afoot. Though the Big East still maintains a high profile presence in our fair city – both on and off the court – it’s evident that in practice, the conference has long since abandoned its birthplace. What was once a collection of small, Northeastern, largely Catholic universities that played gritty, physical basketball has now become a sprawling behemoth that’s undergoing a bit of an identity crisis. The Big East has always been a basketball conference, but the real money in college athletics is in football. What is Commissioner John Marinatto to do? The answer, beginning back in his predecessor Mike Tranghese’s time, has been aggressive expansion into football by reeling in big names like Miami, Rutgers, West Virginia and Virginia Tech. Marinatto carried on that tradition by luring Texas Christian University eastward from the football-heavy Mountain West Conference. No question, the Big East is serious about football. The question remains, however, is football serious about the Big East? Of the five above-mentioned schools, only Rutgers will still be a member past 2014. Miami and Virginia Tech both departed for the more football-centric Atlantic Coast Conference in 2004. West Virginia will break for the football powerhouse Big 12 in 2014. TCU reversed its decision to join the Big East, also opting for the Big 12. Indeed, Commissioner Marinatto’s dreams of becoming a major player in the multi-billion dollar in-
dustry that is college football may never materialize. Boston College, a founding member of the Big East, followed Virginia Tech and Miami to the ACC in 2005. Earlier this year, the ACC poached Syracuse and Pittsburgh, a founding member and a member since 1982 respectively. UConn, another charter member and the defending national champion in basketball, has been pursuing membership in the ACC, and there have been reports that Rutgers could defect as well. Meanwhile, no Big East football team finished among the top 30 in the final Associated Press poll last season. So what is the Big East? Is it the basketball powerhouse it always was, home to six championships and 16 Final Four teams, the record holder for most teams sent to the NCAA Tournament last season when 11 of 16 made it? Or is it a flailing, also-ran football conference constantly chasing after big name schools and success that continues to elude it? Is it better to be the elite basketball conference or a mediocre football conference? Lost in the shuffle of all this are schools like Georgetown and Villanova, that continue to make the Big East the envy of other basketball conferences, and smaller programs like St. John’s, Seton Hall and our humble Providence College, founding members who are now lost in a sea of big money schools that sprawls as far Chicago, Louisville and Cincinatti, struggling to regain some semblance of their ‘80s and ‘90s glories. How can they hope to compete in a conference that is all too eager to put basketball, its very foundation, on the backburner in favor of chasing fleeting football success? Maybe it’s time for the Big East to abandon its gridiron aspirations and come on home to the hardwoods of Providence, where it belongs.

The Gem of Pearl Street Tripp: 1. I built this indoor pergola not long after we bought the loft in 2005. The columns came from a 19th-century house in Richmond, Virginia. They crossed the Mason-Dixon Line in a snowstorm, flagged and projecting four feet from the back of our station wagon. 2. This standing sculpture, an earthenware figure holding 109 graduated porcelain bowls, is Balancing Burden by the Chinese-American artist Eric Kao. Kao’s work explores his identity as the son of immigrants - a theme that particularly resonated with Ed, who emigrated from the Azores with his parents in 1966. 3. This is a former gas streetlamp from
Savannah, Georgia. It was rescued by my ex-sisterin-law, a Savannah native who will probably want it back if she ever sees this. 4. Providence artist Kik Williams made Bubble Gum Pink for a Steel Yard show (the hot pink “glaze” is actually metallic auto-body paint). 5. Beyond Williams’ sculpture are works by other Providence artists: Gregory Poulin, Jungil Hong, Dan Wood, Andrew Raftery and C. W. Roelle. We’re lucky to have landed in a city that supports so many talented artists, and that’s preserved so much of its industrial architecture - without one, you’d never have had the other. -Julie Tremaine

Tell me a little about yourself. I’m originally from Edgewood in Cranston. It was a great place to grow up. I’ve been in New York for 13 years now, and I’ve been coming back to Rhode Island – to W Salon – once a month for about five years. It originally started with a good friend of mine who is in the same business and also from Rhode Island. We wanted to bring the New York experience to Providence. Where else have I seen your work? I’ve worked for Teen Vogue, on Top Chef, and on a couple of reality TV shows. A few weeks ago, I did something for Turner Classic Movies. During my time as an apprentice, I got to work on some really cool stuff. I did a reality show in LA, various makeover shows and had some clients that I’d say are “somewhat” celebs.

How does hair impact style? They complement each other. If the hair isn’t right, it might not blend well with what you’re wearing. There’s a great balance between going for a certain look with your clothes and achieving it with your hair. Hairstyle has a lot to do with fashion. Are you interested in fashion? I really have a passion for fashion. I have an appreciation for clothes and designers. I worked for Bergdorf Goodman for eight years and was exposed to the upper echelon of what fashion is. You learn to distinguish between qualities of clothes. As a result, I do buy certain designers because I like their work.

Describe your personal style. I’ve evolved over the years. I feel like I’m a lot more well rounded as far as the way I dress. You know, it’s very difficult to try different things. We all have insecurities and it’s hard to embrace change and try different looks and reinvent yourself. So I guess now my style would be East Village NY – edgy, but at the same time high-end. Tell me about this look. I would wear this to work. At my job we’re allowed to look the way we want to look creatively. We can’t wear blue jeans (these are grey) because that’s too casual, but we are encouraged to have a look. And I appreciate that because it takes the corporate structure out of a creative field, which is nice and refreshing. For a night out I like vests with jeans and a button-up or a Henley shirt. Oh, and I love hats. I like to wear sneakers or boots, but honestly, those are the first and only pair of boots I have like that. I saw them and thought, Can I get away with that look? Am I comfortable enough to try it? I bought them and I love them. They remind me of Judd Nelson in The Breakfast Club.

Healthy tips for holiday eating the air, tradition abounds and nostalgia fills our hearts. Unfortunately, the most wonderful time of the year can also bring its fair share of guilt. Sure, there’s the guilt you’ll get from your great aunt for not sending a thank you note for the hand-knit cardigan. But I’m talking about the kind that usually sets in right around the time you find yourself Googling “ways to dress up sweatpants for work.” Between holiday festivals, family gatherings and office parties, we are bombarded with delicious, but calorie-dense delicacies. The waistline wary needn’t fear, however; it is possible to stay on the fit and healthy path throughout the holidays. Linda Nunes, Healthy Eating Specialist at Whole Foods Market in Cranston, shared some helpful tips for eating healthier this holiday season: Eat at least one fresh green salad

each day. The nutritious, fiber rich raw vegetables in salad take a while to chew and will help you feel full, making you less likely to stuff yourself with empty calories. If you’re attending a party and want to be sure you have at least one healthy option, offer to bring a dish of your own. Prepare it with wholesome, nutritious foods like vegetables, whole grains, berries or beans. Seek alternatives for your favorite recipes. When baking, sweeten dishes with chopped dates and fresh, frozen or dried fruits instead of sugar, as these provide fiber and nutrients along with sweetness.

I genuinely enjoy more than a day of beauty. I’m talking hair, makeup, manicures, the works: a whole afternoon devoted to nothing but pampering, beautifying and relaxing. She began my Oribe 24 Karat blowout (which utilizes a pomade that actually has 24 karat gold flakes in it for extra luminosity), while Jeannine brought over a manicure stand with a selection of current OPI pol-
ishes for me to choose from. I went with a festive, surprisingly elegant gold glitter, it being the holiday season and all. And while she started removing my nail polish, Amy came over, armed with Becca and Tigi cosmetics, asking me what kind of look I’d like for the evening. Having all three ladies work on me at once could have been overwhelming, but the sheer amount of fun we were having in the process made that an impossibility. At one point, salon owner Leah Carlson came over to take pictures of the process – in part because I was one of the first people to try the service, and in part because, well, it’s not every day that you’re treated like an A-list celebrity who’s getting ready for the red carpet. After – I kid you not – a mere 45 minutes, I was completely made over. My hair looked amazing. My nails were perfect. My makeup was beautifully applied; I even picked up a couple of pointers about how to use a fan brush and how to create a “just bitten” lip (red stain, shiny – not glittery – gloss). I left for an evening on the town feeling like a different, perfectly coiffed person. The next time you don’t know how you’ll get everything done, leave it to the experts to handle your beautification. What’s trending in eyewear this season? One of the biggest requests right now is from clients who do not need glasses for vision correction but want to achieve the “nerd” or “librarian” look. Non-prescription, clear frames are a fashion trend that won’t go away soon. In sunglasses, the aviator frame is having an immense resurgence in popularity. The style looks great on most face shapes. The cat eye is another trend in sunglasses at the moment. Most designers have brought out a “modified” cat eye, which is more wearable and less dramatic than cat eye frames of the ‘80s. What was the idea behind the store’s interior design? The interior was in fact designed to be reminiscent of an art gallery; the frames are individual works of art in their own right. We wanted the cli-
ent to have a peaceful, enlightening experience in the retail showroom. The displays were fashioned with minimalist art in mind. An art gallery invites the visitor to participate in an artistic experience and see new things – this is very similar to the experience of selecting new glasses. I have always wanted to cook locally and from scratch as much as possible. It makes the most sense to me and feels like my responsibility. My eyes were really opened when I started cooking at New Rivers in 2000. I joined the preeminent restaurant in Rhode Island that was sourcing local and sustainable, a real trailblazer. That was my light bulb, my a-ha moment. Everything I had always read about, I started living every day.

Tell me about foraging. Foraging has been an important part not only of my professional life, but also of my personal life. It’s a chance to connect with nature, escape the kitchen and stretch the legs. It feels primal and rewarding to be out in the woods in the morning to pick something and serve it to a guest that evening. It gives our menu and food a sense of place and time. My favorite things to hunt for are all types of mushrooms. Seasonally, certain mushrooms can be expected to appear almost the same exact day, year to year. I also do a lot of wild greens, roots and herbs, all year round. Coastal and aquatic foraging – seaweeds, shellfish, beach and coastal plants – is something I’ve dabbled in and am learning more about. Rhode Island has a ton to offer. We have so many different habitats right in this tiny landmass. There’s a good variety and lots of undeveloped land to explore. How did you first learn how to forage? Eva Sommaripa from Eva’s Garden in South Dartmouth (a leading grower of herbs, greens and vegetables) generously took me on walks on her land, where she showed me wild greens, herbs and roots. As far as mushrooms go, I have participated in many guided walks and have a few pals at the Boston Mycological Club. I own many guide books, but I tend to stick to the 20-25 varieties of mushrooms that I am absolutely sure about. What’s your philosophy about what’s

often called “nose-to-tail” dining, using all parts of the animal? We offer a pretty extensive charcuterie (hams, sausages, patês, etc.) and offal (organ meats) menu at the restaurant, which uses local meats. We feel it would be wasteful and disrespectful if we didn’t use the oftenoverlooked parts of an animal. We don’t want to simply cherry pick the tenderloin and rib sections of an animal. While we love those parts as much as anyone, there are so many other parts that are frankly more exciting and challenging to cook. It takes some skill and patience to coax the beauty out of pig trotter or beef heart, but the beauty is there. We like to showcase the parts of the animal that people may have never tried before. There are flavors and textures in these parts that are really exciting. What have you been making for charcuterie lately? What techniques do you use? We have been expanding from the traditional pig-based charcuterie to a pretty wide range of animals including rabbit, guinea fowl, pheasant, fish, ducks, goat and chicken. We always try to balance the charcuterie/offal menu: some dry cured, some smoked,
some cooked/pressed, some confit, some sausage. With all the new techniques and equipment out there these days, it is even more important to us to continue the traditional foodways and old school techniques. Where do you like to travel for culinary explorations? Several Providence chefs take an annual Montreal trip in late winter. We go up north and eat and drink for three days straight. We hit Au Pied de Cochon for their once-a-year brunch throw-down – they kill you with food and beer. Among other restaurants, Schwartz’s Deli is a must for their ridiculous platters of smoked meat, fries and pickles. The trip is filled with copious amounts of Quebecois charcuterie, cheese and whatever else we find as we comb the city’s markets, farm stands, etc. It is truly a blast.

a new culinary tour offers a peek inside the city’s kitchens

We all know Providence
as a great dining destination, offering everything from humble burgers and beers to haute cuisine paired with artfully crafted cocktails, with many stops in between. That’s just the idea behind Newport Gourmet Tours’ new Providence Riverwalk Tour: to explore and sample the city’s culinary diversity in a short, easily walkable span. Husband and wife team Michael and Ann Martini run Newport Gourmet Tours, each with a background uniquely suited to this endeavor. Michael is a veteran chef with a culinary degree from RISD. Over the years he’s worked in some of the best known restaurants around the state, including 3 Steeple Street in Providence, the Boat House in Tiverton and Westerly’s Shelter Harbor Inn. Ann is a former editor at Rhode Island Monthly who now works freelance with chefs and food events around the state and country, and teaches at Johnson and Wales. The Martinis launched their food tours in Newport in spring of 2010 as a response to both food tours they experienced in New Orleans and New York, and the impressive talent offered at the Newport Mansions Food and Wine Festival. “We thought about the New Orleans tour,” Ann recalls, “and thought something similar might do Newport some good, to try to take away that stigma of ‘touristy food’ and let visitors and locals alike know there are serious talents and resources here.” They started with a Bellevue Avenue excursion, taking guests to some of the city’s finer restaurants and gourmet shops. Last spring they added a second tour, this time working their way up Broadway, a strip full of younger, more eclectic bars and restaurants. The response, from both participating businesses and from tourists, was immediate and overwhelmingly positive. This fall they took their culinary show on the road, landing along the Providence Riverwalk. “It seemed like a natural progression,” Ann explains. “The breadth and depth of the talent here is astounding.” The format is the same as in Newport: the tour group, capped at 12 participants, meets at the first restaurant for a quick introduction. They’re then taken inside to

Each tour makes a handful of stops – five in the case of Providence – and lasts about two hours, covering a couple miles of leisurely walking. My tour began at Harry’s Bar and Burger (121 North Main St.), a small eatery serving small, but thoughtfully crafted sliders, where we sampled – well, what else? – burgers and beers, and got to peek inside the closet-sized kitchen. Then we moved on to Hemenways (121 South Main St.), where we actually got to tour the kitchen and speak directly with Chef Steven Long before sipping some wine and enjoying an impeccably grilled scallop. This behind-thescenes feel is one of the tour’s main attractions, allowing guests – many of whom are tourists unfamiliar with the city – to not only sample bites at several restaurants in a short time, but get an insider’s view of the restaurant industry. The highlight of our tour was Pot Au Feu (44 Custom House St.), where proprietor Bob Burke, one of the city’s most gracious hosts and entertaining raconteurs, gave us a quick lesson in crepes, even insisting that each guest learn to flip a crepe in the pan, often with comical results. (For the record, I nailed it on the first try, thank you very much.) It’s that kind of up-close interaction with industry professionals that makes the tour unique and fun. “Every week, we’re blown away by how our partners rise to the occasion,” Ann enthuses. “We had a lot
of nervous chefs in those first weeks. Now they look forward to those few minutes when they can come out from behind the line and talk turkey – sometimes literally – with people who love food.” Providence Riverwalk Tours are scheduled every Friday at 2pm. NEW BITES Kitchen Bar (771 Hope St.) recently opened, offering “contemporary comfort cuisine.” It is owned by Sotirios (Sam) Katsaras, who also owned Sammy’s Pizza, which used to be next door. The new endeavor offers lunch and dinner with a full bar. The menu runs the gamut, including salads, thin crust pizzas, calzones and entrees like their signature Shepherd’s Shiitake: cheddar-chive mashed potatoes, Angus beef, corn, shiitake mushrooms and a port wine demi-glace, served in a casserole. Word on the street is that the owners of East Side Pockets (278 Thayer St.) are expanding a few blocks down, opening a panini shop in the space that was formerly J&J Candy Bar (288 Thayer St.). On October 29, United BBQ (146 Ives St.) closed indefinitely. In a message on the restaurant’s website, owner Claude Goldstein calls it a “period of reorganization and reevaluation.” He holds open the possibilities that the restaurant may move, reopen under different management or simply close for good.

The dorrance offers haute cuisine you can bank on The smaller plates, priced from $6 to $12, include dishes such as Charred Baby Octopus, Boudin Blanc and Smoked Beef Tongue, each with outof-the-ordinary accompaniments: tomatillo fundido, roasted celery root, pear and verbena puree, and pickled green tomatoes, for example. This is the sort of gourmet food that sends me scrambling for my food dictionary. We chose the Young Lettuces ($9), piled high on the plate and topped with shaved country ham, thinly sliced radishes, fresh herbs and buttermilk dressing. The lettuce was tender to the bite, almost buttery in taste, with the ham providing just the right amount of salt and the buttermilk giving it a slight tang. We also shared the Grilled Bread ($7), which consisted of three thin but large slices of rustic bread that had been on the grill for precisely the right amount of time. Each slice was spread with a different topping: a smooth, smoked duck liver pate, chopped heirloom tomatoes, and fresh ricotta at room temperature for optimum flavor. With a glass of Louis Latour Chardonnay, I could not have been more satisfied. The larger plates, priced from $12 to $22, went from a basic roasted chicken leg to the exotic Korean-style lamb. Again, the accompaniments were extraordinary: crispy sunchokes and sorrel with the chicken, eggplant and kimchi with the lamb. For the vegetarian, there is the Soft-Poached

Duck Egg served with braised collard greens, local grains and chevre, in a root vegetable broth. We selected the Roasted Duck ($18) and the Free-Range Sirloin Steak ($22). Tasting each other’s entrees, we argued over which dish was more tender. The duck was so soft to the bite, it reminded me of foie gras. Playing against the unique flavor of duck in supporting roles were deep red baby beets, husk cherries and an artist’s brushstroke of roasted apple puree. The nicely charred steak, served with its decadent marrow, was teamed up with the sweet and savory accompaniments of roasted carrots and onion jus. The food here is as precious as the surroundings. Don’t expect mounds of food, or that “stuffed” feeling so many restaurants strive to achieve with their guests. You will experience tastes and textures that will surprise and satisfy you, and you will definitely find yourself thinking about dessert. Desserts ($8 each) at The Dorrance are limited, but they are exquisite. The warm Chocolate Cake is devilishly dark and moist, while the Apple Panna Cotta is light, almost ethereal. So, checking over my “to-do” list, what can I look forward to for lunch at The Dorrance? Monday through Friday from 11:30am to 2:30pm, a prix fixe lunch is available, offering a choice of soup or salad, entrée and beverage. Depending on the entrée, the prices range from $12 for just the soup and salad to $22 for a lobster roll on but-
tered brioche with hand-cut fries and house-made pickles. Other options are a hearty Cobb Salad, Portabella Steak, Fresh Fish, Steak Frites and Duck Confit. Now, for lunch, isn’t that special? All this magical food comes out of a kitchen headed by Chef Ben Sukle, a rising young star if there ever was one in Providence. He graduated magna cum laude from culinary school and developed a passion for cooking as he traversed the United States, working at the Biltmore in North Carolina and Westland’s Ranch in Colorado. He spent the past three years as the chef de cuisine at La Laiterie here in Providence, one of the very few restaurants in the city to earn a James Beard award nomination. Most recently, he spent time in the kitchen at Noma in Copenhagen, twice selected by Restaurant magazine as the best in the world. I was torn – should I go to The Dorrance for its interesting prix fixe lunch, or should I go to the exciting new venue for their adventuresome evening menu? Dinner eventually won out, with lunch at The Dorrance high on my gustatory “to do” list. Posh, elegant, perhaps even regal. These are words that well describe the luxe interior of this century-old former bank building with its ornate, soaring ceilings and massive windows bearing the stained glass coats of arms for banking aristocracy. We were seated beneath the colorful crest for the Bank of England, at a perfectly set table with crisp white linens, sparkling glassware and shining flatware. All around us were varying shades of cream and then gold – on the drapes and sheers, on the banquette and on the seats of the black lacquer chairs. While that may sound quite formal, both the atmosphere and service were warm and friendly. The wait staff checked in on us every now and then to see if we liked our food. Even one of the owners, Regina Lester, stopped by to see if we were pleased with our dinner. And we most certainly were. The evening menu at The Dorrance consists of six smaller plates and another six Larger Plates. Both menus offer items not found in many other local restaurants. Whenever possible, local ingredients are utilized in harmony with the seasons.

Tell me about Congress. It’s a fresh and clean downtown neighborhood tavern. Actually, there are more people that live downtown than I realized; they’ve become our regulars. Even though it’s downtown, Congress has got that local, personal vibe and great history. That’s why I chose to work here. What do you think Congress brings to the Downtown scene? Congress is an extension of your living room. You can watch the game here, play music in the jukebox or bring your iPod and we’ll play your tunes. There’s no specific corporate agenda here. It’s small. People are invited to stay.

What’s the historical background here? We’re developing the historical background. There was a tavern here back in the day, around the Prohibition era, called Congress, which was last open 75 years ago. Per hearsay, Orange Street used to be called Lipid’s Gangway. The building owner started the research process and now I’ve joined in. Eventually, we’ll consolidate our research and have it available for our guests. What do you have here for thirstquenchers? Our drink list right now is mostly in our heads. We keep the tavern theme with the craft beer – 16 drafts, 17 bottles. It’s a pretty good selection for a small place like this. People who are beer junkies will come in and find something they like. We have a lot of domestic microbrews and local beer like Newport Storm and Sam Adams.
What is your signature drink? My favorite cocktail to make is an espresso martini. You have your staple drinks – margaritas, cosmo, etc. I know what makes a good drink better than a bad drink. It’s all about the way you make it – chilling the glass, layering the liquor. There is a right way to make an espresso martini or else it tastes like crap. Every espresso martini should have a pinky finger of froth. Less is more – you can say that about every martini. It’s about the small enhancements you utilize – hot espresso instead of cold espresso, a dash of coffee liqueur and a hint of chocolate.

happier with a little fizz. Ditto that for alcohol, which F. Scott Fitzgerald deemed “the world’s rose-colored glasses.” Logic holds, then, that fizzy alcohol is doubly special, and goes a long way towards explaining the vaunted place that champagne has claimed since time immemorial. All the same, there are times when bubbly seems far too stiff, more opera-society-botox-queen than chandelier-swinging-good-time-gal. What’s a reveler to do? Consider the champagne cocktail as an anti-stiffness antidote. On ordinary occasions, sipping champagne smacks of lily-gilding and bad taste. Yet when excess is warranted – such as now, as the holiday season looms – a champagne cocktail feels just right. Classically, a champagne cocktail involves only bubbly, bitters and a sugar cube. In sum, it’s still a bit tame. Of course, in our 21st century, we needn’t be strictly loyal to champagne when reviving the champagne cocktail. French champagne may have been the best or most common sparkling wine a century ago, but that’s no longer the case. Today we have a wealth of other worthwhile effervescents like Spanish cava and Italian prosecco, not to mention greater enthusiasm for busting stale traditions. We can and should drink more globally. Here in Providence, the Duck and Bunny (known to regulars as simply “the D&B”) has done much to raise sparkling wine’s profile as a cocktail ingredient. Sparkling wines are the bedrock of its short but well-curated cocktail list, in fact, which reflects inventiveness born of necessity. The D&B operates with a limited liquor license, which means there can be no hard liquor, and no liquor-based cocktails. No Martinis. No Manhattans. Forget Sidecars, Old Fashioneds and Gimlets. Rather than serve plain, old beer and wine only, the D&B’s winsome bartender, Caleigh McGrath, leveraged culinary wisdom to spin them into mixed drinks. “Using the kitchen as a tool was a huge step for me,” McGrath recalls, explaining that favorite dishes provided a basis to understand flavor combinations and recreate them in a glass. A cupcake that features lavender, vanilla and buttermilk, for instance, inspired McGrath’s namesake “Caleigh” cocktail, which embellishes prosecco with lavendervanilla simple syrup and a small hand-
ful of blueberries. The restaurant’s herb garden led to a basil-infused “Chamisa” cocktail, which floats the herb in prosecco with fresh pear and raw sugar. And a new wintertime installment, christened the “Black Cider Incinerator,” pairs sparkling shiraz with chilled, mulled cider. Developed by fellow D&B employee Mike Duffy of the band Black Oil Incinerator, the drink is a peculiar and warm-

Lingering skeptics, remember this: nothing rings in a holiday like a little excess and heresy. Moderation? Piety? All in good time.

A husband and wife duo opens a dynamic new gallery Providence Media In the now-vibrant
Monohasset Mill complex, right next to the Steel Yard, the Buonaccorsi+Agniel Gallery has just set up shop, and the Providence art scene is already in love with it. Curated and operated by two of the city’s most astute young art innovators, husband and wife Jon Buonaccorsi and Sara Agniel Buonaccorsi, the place recently opened its doors, exhibiting on an ambitious schedule and with a sense of friendly exuberance. Agniel was proprietor of the muchloved Gallery Agniel in Providence from 1998 to 2007, and many art fans lamented its closing, wondering what Agniel’s next move would be. Five or so years and various projects and clients later, it just so happened that Buonaccorsi, founder of the globally-known-and-loved online art shop Tiny Showcase, needed to expand his fine art screenprinting studio, the Head Light Hotel. The two looked into teaming up and splitting one space, and now here it is: the print shop and common area in the back of the renovated mill space, the Lshaped gallery in the front. YES!, the gallery’s first show, displayed the work of over 50 artists,
most of them local. The walls were covered just about from floor to ceiling, and between them teemed a massive crowd of well-wishers – locals and visitors, art patrons, those just getting a look, kids in their parents’ arms, beer-swigging partiers – who all braved the chilly, rainy night to support the new venture. The new gallery smartly invited a huge list of first-rate artists to participate in the debut, spreading the word through them and establishing itself instantly as an authority on which Providence artists to watch. Now, Buonaccorsi+Agniel is featuring In Habitat, a showing of new work by Brian Chippendale and Jungil Hong on view through December 23. Chippendale’s frenetic, vivid compositions and Hong’s richly dreamy settings are a natural pairing for the space. Both showed at Gallery Agniel frequently, so it’s a reunion of sorts. Buonaccorsi and Agniel themselves have a relaxed, yet energized air about their new partnership. They’re excited that so many old friends turned out for the gallery’s opening – even with the changes of the five years since Gallery Agniel closed. “It’s like you hit a pause but-

Never too late for breakfast

Holiday shows get you and yours in the spirit Some consider the holiday season a wonderful time to bond with family. Others consider disowning their family before the year ends. If you love your relatives but fear being trapped in a tinsel-draped living room with them all month, there is an alternative: load up the ol’ mini-van and take everyone to a show. Chances are, it will amuse, engage and entertain the whole clan. Here’s a seasonal sampling, heavily sprinkled with Scrooge. Put your own seasonal slump in perspective by watching Bob Cratchit’s wife drown her sorrows in Mrs. Bob Cratchit’s Wild Christmas Binge. Playwright Christopher Durang’s clever twist on A Christmas Carol will leave you in stitches – and thankful you live in modern times. December 15–23. Party People C’mon A new venue seeks to revitalize a neighborhood and a music scene Once a neighborhood falls
into hardship, it’s often difficult to recast that reputation. Olneyville is one such area that has taken more than its fair share of economic beatings, causing many to label the former bustling mill neighborhood as unsafe and defunct. Though artist collectives like Fort Thunder brought some creative light to the downtrodden buildings in the ‘90s and early ‘00s, it didn’t have an inviting allure that made the non-artist or occasional adventurer feel welcome. However, Don King, Nicolas Bauta and Anna Shea, the founders of Fête, are among Olneyville’s believers. A mid-sized, extravagantly designed boutique music venue, Fête flies in the face of the seedy artist co-ops and grafitti-filled rooms designated for illegal one-night-only concerts that have long been the hallmarks of the neighborhood’s arts scene. It’s really two venues in one, containing both an intimate lounge for smaller events and a large ballroom for big name shows. The unassuming khaki-colored exterior hides a gorgeous interior designed by Bauta. From the two stages draped with royal blue curtains, to the dramatic lounge area complete with large religious tablets from Puerto Rico, the space has the intimacy of a small and cozy jazz bar while boasting a state-of-the-art sound system fit for a large club. The trio says the idea started three and-a-half years ago, and since then, they’ve been working to create a space both music junkies and casual concert-goers alike can enjoy. “We believe in this neighborhood and know that Olneyville is a place
to watch,” King asserts. “There’s this myth of Olneyville. It’s hard to wash the stigma away - but once people come, they usually return. We’re taking steps to do that.” Since opening in October, the programming has reflected the trio’s mission: to have a boutique venue that’s also genre-defying. Open seven days a week, Monday nights feature Magnolia, a New Orleans style brass band dance party with the 5 Point Lookout Brass Gang; Tuesday nights showcase local rock bands; and Thursdays feature hip-hop and electro music. “We invested a lot of detail without being pretentious,” King says. “It is a place we’d like to see the Philharmonic come play on Sundays – we want that diversity. It’s a place for true audiophiles but at the same time, we don’t want anyone to feel alienated.” National artists have also been added Fête’s programming, including the venue’s first big name, E Street Band guitarist Nils Lofgren, back in October, Mos Def on December 10 and the Cowboy Junkies on February 25. One of the venue’s goals is to become a destination for music lovers from all over New England, reestablishing Providence as a stop for mid-to-major touring bands. Shea and her partners know Providence is more than deserving of another good space for live music. “As a city, Providence stands relatively low in the national placement of live music venues,” she notes. “There used to be more. It doesn’t have to be a one-horse town. The more people that come outside of the boundaries of Rhode Island, the more we’ll all benefit from it.” 103 Dike Street. 383-1112, fetemusic.com
