ART IN NATURE The Charlestown Land Trust’s mural contest aims to complement natural beauty with public art Nestled just off of Route 2 in Charlestown is a secluded wooded spot that offers an escape from the noise and chaos of day-to-day life. Mill Pond Preserve offers a trail system where walkers can wander among the trees, gaze at the pond, go for a picnic, or simply relax and enjoy fresh air. Now, one of its buildings is getting a fitting update with the help of a local artist. Mill Pond Preserve is one of many properties owned and stewarded by the Charlestown Land Trust (CLT). A testament to community support, the beautification project is funded by a grant

to rejuvenate an old fish hatchery building on Mill Pond Preserve. Originally part of the American Fish Culture Company, the small fish hatchery was used to raise rainbow trout. While no longer operational, the structure stands as a reminder of the area’s interesting past. However, its abandoned appearance became a topic of discussion for Fredrikson and other trust members. “The idea just came to me that it would be kind of cool if it had a mural on there. I brought the idea to the board, and we decided that we would have a contest,” Fredrikson says. After reviewing a variety of designs submitted by local creatives, Charlestown artist Frances Topping was

is inspired by the environment, with the aim of helping people appreciate and open their eyes to the world around them. She works in various media, such as watercolor, pen and ink, and pencil, and her subjects range from botanicals, wildlife, and landscapes to murals and interpretive exhibit material. As a member of environmental organizations and a visitor of the preserve, it’s clear why Topping wanted to be involved with CLT’s project. “I’ve lived in Charlestown for over 20 years. I love the area. I love the woods, the rock walls, and the ponds. I fully support the land trust in their endeavors,” she says. “I’m so glad that they are doing what they can to preserve some of the special places in Charlestown.”

With the logistics of outdoor artwork and such a sizable project, Topping’s first renderings on paper may be adjusted as the project begins, but her initial sketches clearly convey a homage to the beautiful natural surroundings and the land trust’s goal of bringing positive attention to the special property. As Fredrikson encourages, “Come down to the preserve and check it out! These are just a few examples of the joyful canine celebration cakes offered at Jack’s Snacks, A Dog Bakery based in Warwick. “We are getting ever-more creative with our designs,” says owner and founder Marni MacLean Karro, “though the classic boneshaped cake remains our most popular.” The bakery opened in 2004 when Karro and

her husband returned to their native East Coast from California, along with Jack, an adopted black Lab-Pit mix who had five owners prior and suffered from fear-aggression. Fortunately, the couple was up to the challenge of working through his issues. “It was so rewarding to see him grow,” Karro reflects. “All the love we gave, he returned to us tenfold. Jack was the dog love of our lives.” Not to mention the inspiration for her dog bakery business. “In Los Angeles, I had been working as executive assistant to [actor and comedian] Arsenio Hall. There wasn’t comparable work in Rhode Island, so when we settled in Pawtucket, my husband said, ‘You love baking and you love dogs – you should create a gourmet treat business!’ I made my

first batch that very day,” says Karro. It was a slow start – people were mostly just amused when they saw Karro’s stall at local farmers markets, but her Ginger’s Chicken and Garlic Bone-anza won over the dogs and gradually Jack’s Snacks grew from home-baked trays to professional kitchen status, then an actual brick-and-mortar store. Now, along with snacks and cakes, the shop offers human apparel, dog accessories from RI brands including Hope Rope Co and Up Country, and dog-themed greetings cards and artwork from Tatutina. It’s a happy place for pooches and humans alike – pups get samples from the Broken Biscuit Jar, and humans find delight in clever product names like Woofie Pie and The Barkcuterie Box.

heating and transportation sectors saw declines in emissions, while emissions associated with electricity consumption and residential heating rose. The state’s greatest long-term increase in emissions, by sector, has been in industrial processes. DEM attributed the latest increase in this sector to a change in federal calculations. DEM Acting Director Terry Gray called the latest inventory “disappointing,” and he said it is a “call to action” to cut emissions. But he also sees reason for optimism. “The context has changed a lot since 2018,” Gray said. “We’re looking back in time here and it’s not particularly surprising because we really hadn’t done anything to limit emissions at that point.” “A lot has changed since then. And when I think about how much work is going on right now in Rhode Island to respond to climate change, I’m confident that we’re going to make progress. But it’s not going to show up for a while on those types of data sheets.” Gray also noted that both Massachusetts

and Connecticut saw upticks in emissions in 2018, although the increases in those states were significantly smaller than the eight percent increase in Rhode Island’s inventory. “With higher temperatures, rising sea levels, heavier rainfalls, more frequent and intense storms, and clear impacts on our forestlands and growing seasons, Rhode Island already is seeing tangible results of climate change,” said Governor Dan McKee in a press release on Friday. “This GHG emissions inventory draws a straight line to its causes.” Outside groups have raised concerns that the current method of tallying emissions is significantly under-counting the state’s contribution to climate change because it fails to adequately account for methane leaking from gas pipes. The state is set to publish an update to its greenhouse gas emissions reduction plan in December. Reporter Sofie Rudin can be reached at srudin@thepublicsradio.org

When state scientists released their annual report on greenhouse gas emissions for 2016, they had good news to share: the state had achieved its 2020 goal ahead of schedule. That goal was to reduce climate-warming fossil fuel emissions to 10 percent below a 1990 baseline. But updated numbers released by the state Friday show the achievement was fleeting. In 2018, the latest year for which data have been analyzed, total emissions rose for a second year in a row. “This recent uptick carries the state’s emissions 1.76% above the 1990 baseline, which is not in line with the substantial reductions needed to meet the 2021 Act on Climate mandatory emissions reduction goals,” the Department of Environmental Management said in a statement. “The state’s recent rise in [greenhouse gas] emissions further demonstrates the need to invest in renewable energy, electric transportation, and protected land.” The Act on Climate, signed by Governor Dan McKee last year, requires the state to cut emissions by 10 percent of 1990 levels by 2020, 45 percent of 1990 levels by 2030, and 80 percent of 1990 levels by 2040. The state must zero out emissions by 2050. The legislation, hailed by environmental groups as a landmark achievement, also includes an enforcement mechanism that allows “all persons” to bring legal action against the state in superior court. The latest inventory shows that, over the decade for which data is available, the state has not made sustained reductions in greenhouse gas emissions despite efforts to improve energy efficiency and transition to renewable energy sources. Emissions were higher in 2018 than 2017 for each of the top five emissions-generating sectors, including transportation, electricity consumption and industrial processes. The two sectors that saw the greatest year-over-year increase were residential and commercial heating. In a statement, DEM attributed this to colder temperatures in 2018 requiring more fuel for heating. Between 1990 and 2018, the commercial

There will be a museum store where we will feature local Indigenous artists. The actual exhibit gallery will have eight to 10 exhibits for people to meander through,” Spears explains. Exhibits will include audio, video, and tactile experienced-based storytelling, Spears says, “to help people learn about the Indigenous communities of Rhode Island and

southern New England.” Three other buildings are planned, including an education center and an Indigenous empowerment center, which will include studios for an artist-in-residence. A large courtyard will host opportunities for members of the community to come together for storytelling and other activities. The new museum isn’t slated to open until 2023, but in the meantime, Tomaquag Museum is open for tours and visits at its current Exeter home. South County’s Tomaquag Museum will soon be on the move. The Native American history and culture museum is preparing to break ground this year on a new facility on the campus of the University of Rhode Island. “The museum was founded in 1958 by anthropologist Eva Butler and Princess Red Wing, who was Narragansett and Wampanoag,” explains executive director Lorén Spears. “[Princess Red Wing] was the first-person voice of this museum from its very inception. It was rare in those days to have two women founding a museum.” Originally located in the Tomaquag Valley in Hopkinton, Spears says, “the museum has actually existed in five locations, two in Hopkinton, and three in Arcadia Village in Exeter.” Currently, the museum is located in Exeter on land where, in the late 1960s and 1970s, the Dovecrest Restaurant and Trading Post served traditional Native American cuisine, until the property was donated to the museum by the Dove family. “Our legal name is the Tomaquag Indian Memorial Museum,” says Spears. “When we rebranded in 2012, we dropped the ‘Indian Memorial’ language for a myriad of reasons. One, a memorial sounds like we’re all dead… in the 1950s that’s what people put on museums. And of course, the term ‘Indian’ is not a term that we are using regularly today,” she adds. The nonprofit’s mission has always centered around education, too. In 2003, Spears founded the Nuweetooun School, which once operated inside the museum. “I ran the school for seven years until 2010. It was a private school for grades K-8, with a focus on Indigenous youth. It was impactful for native youth and provided education for kids through museum programming as well as through the school,” she shares. However, flooding caused severe damage in 2010; on the heels of the 2008-09 recession, the school was forced to shutter and the museum reorganized. “We now have 11 staff members – we’ve had a lot of growth over the past 10 years to build the infrastructure of the museum,” Spears explains. Flash forward to 2022. Construction on the 18-acre facility on the URI campus is expected to start soon. “We are working on architectural plans, exhibits, interior designs. If

There’s a pond with a small waterfall, cutting beds, a large pollinator bed, native foundation garden, and shade beds. New this year is a medicinal garden growing perennials and annuals that help support overall health and wellness. When native Rhode Islander Justin Goff moved to Bali in 1999, the food, beaches, and “contagiously happy attitude” immediately had him hooked. Pro-tip: their masks are reversible and the comfiest around. “At Three Islands, we love prints and colors that make you smile and good vibes and happy clothes that put a little sunshine in your closet,” says Goff.

VEGAN DISHES DELIVERED A South County meal service brings plant-based eats straight to your doorstep When Dean and Julie Couchey moved to the Ocean State from Philadelphia, they noticed how few dedicated plant-based food businesses there were in South County. Ideas blossomed around how to make vegan cooking accessible to all and the couple landed on meal prep. “We reached out to the community to see if this would be a service they would enjoy, and the response was outstanding,” says Julie. “SoCo Vedge was born in January 2021.” The timing was fortuitous as job opportunities were limited during early pandemic months, and since taking off, SoCo Vedge has become a hit with locals that only continues to grow. While Julie handles the people-facing facets of the business, Dean brings a culinary degree, many years in the food industry, and a passion for vegan cuisine to the rotating weekly menus of reheat-and-eat dishes. “Our vision is to bring more plant-based options to our community while also introducing more global flavors,” shares Julie. Seasonal favorites include a Spring Pea and Asparagus Gnocchi with nut-free basil pesto and plenty of health-forward Buddha Bowl varieties and falafel entrees. Suya Tofu with Jollof Rice is the couple’s take on a West African dish with spiced tofu, African braised greens, and plantains. Salads, overnight oats, and desserts are always available as add-ons, and punny names like “Beetloaf” and “Shepherdless Pie” never fail to delight. With new entrees every week, subscribers to SoCo Vedge will never get bored, either. For vegan eaters (or plant-curious folks) looking to take a break from the stove, orders go live Saturday through Tuesday for delivery the following Saturday, with pickup options available from their Narragansett kitchen. Brunching Around Wakefield Grab a date or a group for a late morning of satisfying dining on Main Street

When we learned about chef Mark Bryson and wife Alicia’s cozy Wakefield eatery Duck Press (the duo that gave us Binge BBQ in Newport), we were intrigued. When they recently shared that they’d launched a brunch menu, we became determined. This news is how we discovered more than one gem on charming Main Street. BUT FIRST, COFFEE With a couple of friends in tow, we strolled into Caf Bar on a late Sunday morning for a much-needed caffeine fix (and a few snacks!). We soon learned that “Caf” stands for “Coffee and Food,” and that this neighborhood favorite is all about craft and customer service. This is immediately apparent in their regionally roasted coffee and the high-quality ingredients used in

their smoothies, toasts, and paninis. First up was a round of specialty lattes – the group favorite was the seasonally apt Spring Latte. This creamy, sweet, espresso drink includes honey and bee pollen. Order one and thank us later. Intrigued by their take on a truly trendy lite bite, we decided to sample Caf Bar’s avocado toast, one of many savory options on the menu, before heading over to Duck Press for the main course. Warm toast is spread with mashed avocado and topped with sprouts and a light sprinkle of red pepper flakes – the ideal snack. But what’s perhaps most heartwarming about Caf Bar is the sense of community the owners have created. Locals, students, and tourists alike are inclined to sit, mingle, and relax for a bit instead of just grabbing a cuppa to go. We found ourselves fitting right in.

BRUNCH BUNCH Properly caffeinated, we took the two-minute stroll down Main Street to Duck Press. Naturally, we started with their Brunch Board Sampler. House-made cinnamon sugar doughnuts, mini croissants, banana bread, fresh fruit, jam, and honey butter are assembled on a board in this sweet take on charcuterie. Let’s be honest – chef Bryson could have dropped the mic there and we would have left satisfied. But then came the Smoked Bluefish Beignets with remoulade, which served as another example of how a well-trained chef with sharp attention to detail can turn something simple into utterly sublime. For those of us who grew up fishing blues on the bay, you know that unless it’s extremely fresh, correctly cleaned, and thoughtfully

prepared, bluefish can be a little fishy. These beignets, however, were packed with flavor without the fishiness. A crispy and crunchy exterior encased an incredibly creamy, delicate interior with a subtle smokiness. The house-made remoulade was good enough to eat alone by the spoonful! Next was the Duck Fat Fried Patatas Bravas. Chef Bryson’s take on this popular tapas dish was nothing less than perfection. Topped with a fried, pastured egg, this dish fulfills one of our long-time desires: to have patatas bravas for breakfast. (Thank you, chef!) It wouldn’t be brunch without bennies. A Brisket Eggs Benedict and another with root vegetables were the envy of the table. The brisket may very well be the only nod to the Brysons’ previous venture with Binge BBQ, and the root vegetables were a perfect way to enjoy a springtime brunch with seasonally relevant produce. When it comes to eggs benedict, there really are only two measures by which we judge: eggs and hollandaise. Poached eggs can be the most difficult egg preparation to get perfectly each time, and these passed with flying colors. A good hollandaise also takes a lot of patience and practice to get right. Like everything else coming out of the Bryson’s kitchen, no shortcuts are taken with this sauce, which is deceitfully simple and velvety – a testament to the Brysons’ commitment to excellence. To round out the meal, a plate of Stuffed

Brioche French Toast arrived with caramelized banana pastry cream, strawberry jam, and maple syrup. For anyone ordering this dish, please know you’ll be asked to pass this around the table for everyone to taste more than once. Forget what you know about traditional French toast because this decadent interpretation is quite the departure from what we grew up eating. As ingredients change with the season,

so too do the menus of both Caf Bar and Duck Press – as if we needed another reason to return. SAVE ROOM FOR SCOOPS To prolong a brunch double date well into the afternoon, you may need to walk off the French toast and bennies by hitting a couple of Main Street shops before swinging by Brickley’s. Recently reopened for the season, Brickley’s is a So Co staple for warm-weather months with over 45 flavors of house-made ice cream, frozen yogurt, and sherberts. Pull Up A Seat With their cozy new restaurant, lauded chef couple is on a mission to make Jamestown a food destination

Marc Alexander and Marla Romash are getting ready to open Our Table in Jamestown

working as a private chef in a URI sorority (“that was wild,” he says), to working at Blackstone Catering, to overseeing the kitchen for Apponaug Brewing Company’s opening. Meanwhile, Romash continued her consulting work during the week and sold her decadent sweets through Marla’s Magic at the Jamestown Farmers Market on weekends. Like for so many in the hospitality industry, COVID changed everything. With restaurants shut down, the couple started a dinner delivery business, cooking out of Middletown’s Temple Shalom. “We’d post a menu online on Friday,” recalls Romash. “Orders needed to be placed by Monday, with dinner delivered on Wednesdays.” The venture, called Our Table to Your Table, took off, putting “the wind under our wings to start this,” she continues, her hands motioning around the airy restaurant. Their menu is deceptively simple. “Comfort food, kicked up,” Romash says, with every item hand crafted in-house. (“Mark makes the most amazing hummus,” she says, pointing to their hummus and olive starter.) It’s unfussy, one that

invites guests to kick back, sip a craft beer or a glass of American wine, and enjoy the flavor explosions of an oyster po’boy slider with kimchi or the French mushroom soup, an inspired revamp of the more traditional French onion one. The dessert menu is robust – from apple crisp to chocolate cake to Marla’s Magic’s signature cookies – and the restaurant sports a bakery counter for take-away desserts. The menu changes with the seasons, with Romash noting the bakery menu will likely adapt more often, particularly in the summer months when fruit choices are more varied. They aim to support local purveyors as much as possible. “We wanted to help make Jamestown a food destination,” says Romash. “But we also want to do something for our neighbors, the people who live here. We want them to come here and know they will get a great meal in a relaxed atmosphere.”

Husband-and-wife team Marc Alexander (the savory one) and Marla Romash (the sweet one, who also moonlights as a political consultant) moved from the DC area to Jamestown specifically with the intent of opening their own restaurant. Why Jamestown? A friend had a home here and they paid a visit around the holidays. “Have you been to the Christmas tree lighting here? Magical,” says Romash. The idyllic seaside town sold them immediately. But it took them six years to find the right property for their restaurant. Given the number of neighbors (four!) who popped in over the course of an hour during this interview to check on the restaurant’s opening status (not quite yet!), its launch comes not a moment too soon. Pastry chef Romash always loved to bake. As a broke college student, she’d bake holiday gifts for friends, a tradition she continued even after she graduated and began working in politics in the DC area, baking holiday gifts for clients. In 2002, her friend, Rhode Island Judge Jack McConnell, told her, “You’ve got to do something with that baking.” The timing was fortuitous. Burned out from working on two losing political campaigns, Romash took a sabbatical and headed to pastry school. When she got out, she launched Marla’s Magic, an early version of an online bakery. The New York Times mentioned it in a dining story, and pandemonium ensued. Chef Alexander graduated from Johnson & Wales in 1983 and then enlisted in the Air Force, cooking his way through the ranks. He was stationed at the Pentagon, running a restaurant for officers before becoming the private chef to a three-star general. “I’d cook for a dinner party of dignitaries one night, then make a simple liver and onions for family dinner the next,” he says. After 10 years in the military, Alexander was ready for civilian life, working as an executive chef for one of the most exclusive catering companies in DC, where he and Romash met. They eventually partnered in love and food, opening Dreamz Catering in DC together. But Our Table was always the dream. After moving to Rhode Island, Alexander cooked his way around the state, from

New Indian restaurant carries the torch in Wakefield Wakefield’s newest Indian restaurant is Clove Garden Resto Bar, located where Bombay Flame used to be. Co-owner Caleb Benjamin saw success with his first location, Clove Garden of India in Jersey City, NJ, and wanted to branch out. Along with two partners, he jumped on the opportunity to start serving the flavors of southern and northern India here in South County. Whether you’re grabbing lunch to go or looking for a relaxing dine-in experience with a drink in hand amid custom-made decor hanging on the walls, Benjamin puts his nearly 25 years of experience in the restaurant industry to good use in every detail of Clove Garden. Living the Dream After coveting a property for decades, a couple builds a home on Ninigret Pond with an eye on sustainability and spectacular views When Patty Higgins’ parents bought a beach cottage in Charlestown in the ‘80s, little did they know they were sparking a lifelong love of the area in their then-teenage daughter. Today, with three grown kids of her own, recent retiree Patty and husband Bill live in a house they built just over a year ago on property she admired for quite some time, just a stone’s throw away from that original summer place. “I like to think of my parents, now deceased, as having a major influence on our living on this beautiful piece of land on the Ninigret,” she says. The Higgins were already living a few lots away when they purchased their current property in 2019 from the previous owners who had lived there since the ‘80s and had known Patty’s parents. Mindful of FEMA’s flood elevation requirements, Patty and Bill decided to build fresh. “We worked with Lisa Carlisle, our architect, and Ken Nelson, our builder, to create a home that would care for the land, take advantage of south-facing views, and meet our desire to share this special location with family and friends,” she explains.

The main floor was designed so the couple could live on a single level while also having ample space for entertaining, and features a floor plan that has access to the outside deck from several egress points. The upper floor has three more bedrooms; one of which has its own deck and is outfitted as either an office or bedroom, and another doubles as an art studio. Walls throughout the main living areas are a neutral soft gray, and furnishings and accents in a range of deep blues take their cue from the coastal location. “My priority is always comfort and spaces that encourage gathering and relaxing with an uncluttered feel,” Higgins says. “The unobstructed view of nature right outside the windows and from the decks doesn’t need dressing up. We love having the space to welcome loved ones and to continue building memories that began when my parents first brought us to Ninigret Pond.” SORhodeIsland.com • May 2022

Summer Tune Up Get fitness ready with a functional screen test With the warm weather on the horizon – and all the added surf and sand activity that South County summers bring – when Anchor Physical Therapy’s Mark Torok, PT, DPT, MS, MBA invited me for a tune-up, it felt like a smart idea. A physical therapy tune-up does not make you injury-proof. Rather, “it tells us what things are present physically or neuromuscularly that we can identify that might lend itself to injury in the future,” Torok explains. Knowledge is power, and knowing what to change up, add to, or begin (or even end)

position. My shoulders needed serious attention. From there, I moved to the floor for the active straight leg raise. Keeping one leg on the floor, I raised the other as far as I could before switching legs. This checked my hip mobility and core stability, as well as the control over my trunk and pelvis during the hinge. (Three points for Gryffindor!) The trunk stability pushup was an epic fail. Starting from flat on the floor, I had to get to the top of a pushup in one motion. I quit planking a while ago (because ugh! planks), but after that humbling test, I mentally added them back into my workouts. Rotary stability was the last test. On my hands and knees, I did a Bird Dog (opposite arm and leg extended). Easy peasy. Until Torok told me to do the same move, this time on the same arm

and leg. The difficulty of this test wasn’t physical, but mental. I struggled with coaching my brain through the unfamiliar movement pattern. This, Torok explained, was not unusual. Much of the early gains made in weight training are because of the formation of a new neurological pattern. Once I established this new pathway, I’d struggle less with the exercise. The functional screen test pointed to some imbalances I was already aware of – looking at you, tight calves – but I came away with a ton of knowledge that I put to use immediately in my next training session. At Torok’s recommendation, I added single leg movements to my leg days to work on my neuromuscular stability issues. I am planking again, using different variations to break up the boredom. I was ignoring the neurological component.

could help avert problems down the road. Torok, a former college athlete, discovered physical therapy when he injured his shoulder on the baseball field. He felt his physical therapist did more to fix his injury than the orthopedic surgeon who stitched him together. The fitness fanatic fuses his background in sports with his clinical knowledge to screen everyone from little leaguers to college and pro athletes to active seniors, evaluating their fitness levels and propensity for injury. After talking through my medical history, Torok led me to a well-appointed workout room, which included weight machines, several bikes, and a bunch of resistance bands, wedges, and other items used during a functional screen test. This seven-point exam put me through a variety of exercises so Torok could observe my movement patterns and see where I had any functional deficits. (Spoiler alert! There were plenty!) The protocol began with three deep squats with my arms overhead. Watching me with an eagle eye, Torok noticed that my calves were tight and I had stability issues in my trunk, pitching me forward. Next, we moved on to a hurdle test. This required me to step up and over a hurdle while holding a dowel across my shoulders. This checked the mobility and stability of my hips, knees, and ankles. (I scored a three! Boom!) My in-line lunge was less than stellar. While holding the dowl along my spine, I stepped into a lunge position while Torok assessed the flexibility of my hamstrings and back (tight, tight, and tight). On to shoulder mobility, another move I thought I’d ace, until the around-the-back hand clasp proved painful on the right side and I couldn’t bring my hands together in either
