HE experienced firsthand one of the most oppressive periods in history, but Indigo Valley resident Robert Hymans stands testament to the resilient nature of faith and the human spirit. Now 91, Mr Hymans describes himself as “one of the happy survivors” of the Holocaust and recalls well the dangers of that time. He enjoyed a typical childhood in Holland, but everything changed during Adolf Hitler’s rise to power. Mr Hymans said Hitler was underestimated by many countries at first, with several failing to act against him early in the war. “He knew how to manipulate the people,” Mr Hymans said. “You don’t believe it is going to happen in your own country.” He said his home town of Rotterdam was bombarded, and then invaded by the Germans, who quickly imposed restrictions for Jewish people. “There was no opportunity to flee the country, and it was a time of confusion and no connection,” he recounted, holding the Star of David used to identify people of Jewish background. “There were times when I felt like I was hunted.” Helped by a “daring pastor”, who was risking the death penalty by hiding people, Mr Hymans survived, tucked away in the attic of a Christian family home. continued page |

Bare rooted roses

ROUTINE: Regular exercise helps your body find balance.
Deeper sleep means less night sweats and flushes. 4 Routine Regular meal times, regular sleep times, and regular exercise helps the body find balance easier. 5 Laugh and embrace it You are wiser, stronger, confident and warmer than ever before. You have tackled and won so many challenges in your life. Stand tall in your beautiful
changing body and be proud of where you are so far. You are a superwoman. You can handle menopause. So here we are, experiencing menopause. There is help and support all around us and many friends to share the “fun” with. It’s not an illness, it’s natural. The more balance you have in your body, the easier it becomes.
WINTER is a great time for planting in the garden. It’s also when bare rooted roses are available. Most deciduous plants like roses, fruit trees and ornamentals are available bare rooted during the winter months. Bare rooted means they have no soil on the roots. The dormant roses are dug up out of the ground, then the soil is washed off the roots and the plants packaged for transport. Buying at this time of the year is not only cheaper than buying potted plants, but is also when the biggest selection of roses are available. Most bare rooted roses are sold in plastic bags with the roots packed in damp saw dust or peat moss to keep them moist. Specialist nurseries may buy unpackaged bare rooted roses which they ‘heel in’ or plant in moist sawdust or soil to keep them fresh until sold. When buying bare rooted roses, select ones with strong, even branch structure and no obvious damage. The canes should be green and

plump, without any leaf growth. Roses prefer an open, sunny, well drained position so choose a spot that gets at least six hours of full sun. Soak the bare roots in a seaweed solution for about an hour before planting to reduce transplant shock and remove any damaged roots. Prepare the planting hole by digging the soil over and incorporating some compost. Dig the hole forming a small mound at the bottom of the hole. Spread the roots out over the mound and backfill with soil, shaking the plant gently and watering, to remove any air pockets. Make sure the soil level is the same as it was in the ground. This can be seen as a slight change in color on the stem. The final step is to prune the roses back by about half. This is needed because when they are dug up, the roots are pruned, so to balance the plant, the tops should be pruned to match the root size. Find a spot in your garden for a beautiful rose. Happy gardening.

ACTUALLY experiencing changes preceding and during menopause is one thing, as compared to reading a list of common symptoms. As our hormones find their new natural balance for the next stage of our life the challenge lies to keep balance in other areas of life and health. Here are the Naturopath’s top five tips for an easier transition 1 Help memory loss, offload stress Reduce work hours and load, jot down your jobs on a list and cross them off when done, do one thing at a time, find some quiet time everyday to download stress. 2 Restore energy, assist weight Consume fresh, quality food and lots of water. Make a daily walk your priority. Flaxseed oil daily helps with skin dryness from lower hormones. 3 Get deeper sleep, help mood, protect bones Herbal supports with calcium, magnesium, Rheumania, Dong Quai, Zizyphus and Bupleurum help.

VETS CORNER
1
Eclampsia (milk fever) in dogs YOU have kept your bitch healthy all through her pregnancy and now she has successfully delivered her pups (hopefully). It is very important to monitor the health of not only the pups, but also the bitch after whelping. The bitch’s nutritional requirements will be higher than before pregnancy as she is also providing nutrition for her pups. The best nutrition you can give your bitch is either food designed for lactating bitches or a puppy food. These are high in energy and have the correct balance of all your dog’s necessary vitamins and minerals. If you are concerned at all about the health of your bitch after whelping it is important to get her to your vet as soon as possible. There are several illnesses that can occur after whelping including eclampsia (“milk fever”), mastitis (an infection in the breast tissue) and infection in the uterus. Eclampsia can occur days to weeks after whelping. It is caused by low calcium levels and is a life-threatening illness requiring immediate veterinary attention. The main symptoms you may notice are restlessness and trembling but the condition can deteriorate to collapse, seizures and death. It is important to get your bitch to a vet as
GRIM REMINDER: Robert Hymans still has the Star of David used to identify people of Jewish background during World War II.
“It was then that I became a Christian, and this gave me stability in life,” he said. “If you live it, you know the Lord is your shepherd. “I am a firm believer, but not a Bible basher – live a life that is a good example, and that should be it.” As faith would have it, Mr Hymans met his first wife, Johanna, a member of the family hiding him, and recalls proposing to her nervously. “I had the shock of my life when she accepted,” he said. In 1950 they decided to make their life in America, where they lived for over 20 years before making their home in Canberra in 1971. Johanna passed away in 1986, and Mr Hymans said he was lucky enough to meet and marry second wife Dianne (now deceased) in the late 1990s. Now living close to family in the North East, he has written a book on his war experiences
LIFE OR DEATH: Robert Hymans’ hiding place during World War II.
and is writing another on maintaining healthy marriages and relationships. Mr Hymans regularly speaks about his experiences to groups, particularly students, and said he is keen for people, particularly younger generations, to learn more about history. “People are sleeping today and are afraid,” he said. But ultimately, he is
thankful for the life he leads. “I am still a boy inside,” he laughed. “It is a joy to live today and see my children, grandchildren and great grandchildren. “Long life is not in my hands, but my motto is a copy of a verse in the Old Testament of the Bible: ‘the joy of the Lord is your strength!’ “To me, every day is worth living.”
quickly as possible for treatment if you suspect eclampsia. Your vet will need to confirm the diagnosis of eclampsia and begin immediate treatment (including providing calcium). If treatment is provided promptly, the bitch will usually make a rapid recovery. Depending on the age of the pups at the time, it may be recommended to take the pups off the bitch for 24 hours (they will need to be bottle fed) or wean them permanently. The bitch will also likely be put on an oral calcium supplement to keep her levels up for the rest of lactation. Do not supplement your bitch with calcium during pregnancy – in some cases it has contributed to the development of eclampsia. Good nutrition is the key to minimising the chances of your bitch developing eclampsia. Speak to your vet for further advice on care of your bitch during pregnancy and in the postwhelping period. The Hunt for Pierre Jnr by David M Henley IN the year 2159, Pierre Jnr has a mind more powerful than any the world has encountered before and is the greatest threat humanity has ever known. Mummy McScrooge THERE are some people who are good at saving money and there are some who are not. I definitely come into the latter category, which may be surprising considering I’m the daughter of a Scot - purportedly one of the most frugal of nationalities in the world, even though my own experience of their generosity suggests otherwise. My Dad, for example, clearly missed out on the McScrooge gene; he was generous to a fault and never focused much on how well his funds were (or weren’t) travelling. He just worked hard, paid his bills and did his best to provide for us, God bless him. So you might think that, having skipped my Dad’s generation, the frugal gene may have embedded itself quietly into the next one. Not so. Well, certainly not into the DNA of this little black duck. Yes, I’m doing okay. I’ve helped raise a family and we all know that costs money. And yes, we eat out sometimes, we travel sometimes, we live in a decent home (occasional dishevelment and dog odor notwithstanding) and we generally don’t have to resort to a ‘baked beans on toast’ existence. But we definitely haven’t quite moved to that next level of fiscal comfort. No mansion or magnate existence for us. And so, it’s with some surprise and more than a little (possibly misplaced) pride that I’ve discovered where in my family the McScrooge gene has settled itself. It’s clearly landed in my number two son, who has taken to giving me withering looks when discussing my saving prowess (or lack thereof ) and rolling his eyes when I own up to my Visa Card debt. His new bible is ‘The Barefoot Investor’. He’s devised household budgets that would have Wayne Swan envious; splitting up his bank accounts so every mortgage payment and bill is taken care of and his savings are
BY CATHERINE WARNOCK slowly but surely building up. He’s got a shares portfolio. He’s clued up. He’s committed and disciplined. He’s frugal and focused. He’s everything his mother is not when it comes to money. I look at him and wonder if there was a Murdoch or Packer baby mix up in my maternity ward way back in 1982? Should his middle name be Rupert or James? “Can I have my real child back?” I grizzle as he steers me resolutely away from a boutique or book shop, or berates me for buying lunch when I could have made it. But his insistence is working on me. I now have several ‘online bank’ accounts for savings and bills. This means I can’t get at the money easily as there’s more of a process to transfer funds, and they take a couple of days to clear. I like to think of it as a ‘cooling off ’ period, for my desired purchase always seems like such a good idea at the time (of course I need that new orange scarf, I’ve only got ten others). With my new banking methods, however, I have to go home, log on, plead with some tight-wad digital bank manager to let me have my money and then wait a couple of days before he deigns to give it to me. By that time I’ve changed my mind anyway so, for an impulse spender like me, this timedelay caper is a real boon. So anyway, if you’ll please excuse me, I’m just going to log on and have another look at the growing 000s in my bank account. And after that I’m going straight onto Google to see if I can figure out which megarich family might be missing their son and heir – and how much they’ll pay me to get him back.

WITH ANITA McPHERSON Invigorating and vibrant, this passionfruit, lychee and guava fuelled white wine is an ideal foil for melting cheese, its crisply dry finish and palette of fruity flavors becoming even more pronounced with a richer partner. And if you don’t want to bother with the technicality of a soufflé, the old fashioned fondue will certainly do the trick. If you were one of the few who didn’t get one as an engagement present, don’t worry because everyone else did. The “savvy” fan knows you’re bound to find one in original condition at any self respecting garage sale, somewhere near the bread machine and the exercise bike.
THIS DAY IN HISTORY
Barrow Push, day five, 1935 THE Great Barrow Push from Beechworth to Mt Buffalo, the result of a bet between two local men – Tom Parkinson and Tony Evans – entered its fifth day and one of its most gruelling stages. At 4.50pm, progress for the day halted just short of the Eurobin Falls Bridge, and by now, the Australian press was vitally interested in the marathon effort, with readers transfixed all across the country. The push was eventually completed on June 23.

I AM always surprised when I see Macaroni and cheese in the frozen section of the supermarket, only because I know how simple it is to make, yes it does take a bit of thought, but make a large amount and freeze into serving sizes, then you only have to pull it out the morning you would like to have it. If you forget you can also heat it from frozen on a low heat in the microwave, then finish it off in the oven to brown the topping. Serve with salad. The kids will love it; the adults will love it too. Method Preheat oven to 2200C. Cook pasta in plenty of simmering, salted water until tender. Drain well. To make sauce, melt the butter in a heavy saucepan, sprinkle with the flour and cook over low heat for 3 minutes, stirring constantly with a wooden spoon.

INGREDIENTS
AT this time of year it is easy to linger just that little bit longer over the warm and comforting sweet fare on many winter menus. If there was ever an excuse to dip into the buttery goodness of a bread and butter pudding or another decadent dessert, cold weather and the roominess afforded by a puffy jacket are enough to twist anyone’s arm. But if you prefer a more savory option, it’s hard to go past anything which involves melted cheese, and perhaps we should be dusting off our fondue pots or dipping in to the equally devilish raclette. A cheese soufflé might take a month of sit-ups to work off, but enjoying it with a chilled sauvignon blanc makes it worth every calorie. Brown Brothers 2012 Sauvignon Blanc is made from grapes grown in the cool Tasmanian climate, and has some amazing and intense tropical fruit aromas emanating from the green tinged liquid.
> 300g short macaroni pasta > 2 tblsp dried breadcrumbs; e.g. Panko crumbs > 2 tblsp Parmesan, grated Sauce > 50g butter > 50g plain flour > 650ml milk, heated > 75g Parmesan, grated > 75g Gruyere or cheddar, grated > 1 tblsp Dijon mustard > ¼ tsp paprika > Sea salt and pepper
Gradually add half the heated milk, stirring well until the sauce thickens, then gradually add the remaining milk, stirring until thick but runny. Add the cheeses, mustard, paprika, sea salt and pepper and simmer for 3 minutes, adding a little more milk or water if it gets too thick. Add the pasta and toss to coat, and divide between four lightly oiled ovenproof ramekins or pots. Mix the breadcrumbs with two tablespoons of Parmesan and scatter over the top. Bake for 20 minutes until bubbling and browned.

MONEY MATTERS
Impress the boss and stay employed By KEN CLARKE, WANGARATTA CERTIFIED PRACTICING ACCOUNTANT kclarke@alphalink.com.au WITH the decimation of the car manufacturing industry, is the time right for you to be looking at a career change? Almost every day we hear of another closure or voluntary administration. Looking through rose tinted glasses it would appear hospitality is going to become the jewel in the crown. A couple of years ago, after an interview process, you got the job and took it with open arms. But things seem to be turning sour. If workers at the same level as yourself are starting to get promotions and pay rises and you are not, then it’s time to start wondering about your career prospects with this employer, especially if your salary is not moving after a couple of salary reviews. As a rule of thumb something should happen with your career every two years, be it promotion, a pay rise or some new responsibility. If none of these has happened then it’s probably a good sign you are going nowhere and should be asking why. But you can make this happen yourself by attending classes, gaining
JOB SECURITY?: Be proactive in the workplace to help avoid being the one being moved on.
more qualifications and asking for these to be recognised. Have you been sitting down with your supervisor each six months or so to discuss your career prospects? If not, it would appear that you are not getting transparent information from your employer about where you are at. Have you been asking the difficult questions? Is the lack of promotion because you haven’t had the courage to have a conversation with the employer, because maybe the boss hasn’t had the courage to have this conversation with you? If you are still doing the same sort of job that you were when you commenced employment and suddenly you are getting
warnings and questions about your performance and the extra qualifications have counted for nothing, then it’s a sign something has changed. This is particularly true if your performance has never been an issue in the past and now your performance is being looked at for trivial things. This is generally the time when the employer is looking at dispensing with your services. Another sign your employer is preparing for the day when you are no longer there, is if they start taking key clients off you and giving them to someone who has not been employed as long, or maybe not as qualified as yourself. Employers do this because they don’t wish a staff member taking clients with them when their employment is terminated. Another sign of your expected termination is where you are asked to take extended leave. Have I said enough? You must bite the bullet and talk to your employer if you think things are not rosy in the workplace and suggest that it may be time for them to put in place some key performance indicators. Be proactive, let them see that you do have ability and have it recognised. A great way to spend a winter’s evening would be a short course on management options.
HEAT EFFICIENCY: You can greatly reduce heating costs to your home simply by sealing gaps under doors where heat can escape.
Save money on heating costs SKYROCKETING energy costs mean that keeping tabs on how efficiently you use your home heating this winter is paramount if you want to avoid paying out the bill for the rest of the year. One of the most essential things to do is figure out when and where you are using the most heating energy in the house, and also whether heat is being leaked through gaps under doors, bare windows, vents and ducts and more. You can either do such a audit yourself, or some energy companies will do one for you, either for free or for a nominal fee. It is a good idea to attempt to plug and seal gaps where it is possible to avoid loss of heat. Another practical option is ensure your pipes and ducted air system is free of leaks and is running in absolute peak condition. Insulate as large an area of your home as you can to ensure heat
remains in the home for a longer period of time, and also invest in heavier curtains to cut down on heat loss through windows. One vital question to ask yourself is if you are heating a room, or just a person? Keeping yourself warm can be as simple as wearing a jumper and other extra layers, only turning the heat on if the air in the room is still chilly. If you need to heat a room, keep doors closed and only heat the space you are using. On sunny winter days, open the curtains while the sun shines to take advantage of natural heat. Electric hot water is also a big contributor to energy bills, so keep hot showers short. If you have a thermostat, turning it down, even by one degree, can shave as much as 10 per cent from your energy bill, and thermostats don’t have to be set too high to be comfortable.
