RESTAURANT & BAR DESIGN Robert Angell has designed some of the most iconic restaurants, bars, hotels, residential and retail interiors for some of the world’s leading brands, enriching his clients’ lives and those who experience his designs, whilst also developing and enhancing the evolution of the brands and individuals he works with. Prior to launching Robert Angell Design International in 2010, Robert worked closely as one of David Collins’ creative directors for over 15 years before launching Robert Angell Design International in 2010.

SEMINAR SNAPSHOT There has been an explosion of restaurant and bar launches during the last decade, resulting in a prolific frenzy of competition and search for new ways of cooking, presenting, and eating food. Having originally trained as a product designer, working at the start of her career on projects such as the Concorde interior, Afroditi’s first foray into hospitality design was the creation of healthy food chain ITSU, working with Julian Metcalfe of Pret-A-Manger. As with all of her projects, ITSU went on to be (and is still regarded 10 years on) as a category-leader. Described in 2014 as “a monumental talent” by Hospitality Interiors, the last 12 years of working at the cutting-edge of hospitality design have led to her studio having an enviable list of entrepreneurs, hoteliers and restauranteurs as clients. She’s the designer behind some of London’s biggest transformations in the hospitality arena, from favourite chains like Café Rouge, EAT. and Itsu, to Heston Blumenthal’s latest restaurant and the ever-booming, ever-expanding Dishoom. She was awarded Designer of the Year in 2010 by Elle Deco and featured in U.S magazine Metropolis as a rising star in hospitality design in 2013. Her work has appeared in art and design publications worldwide and has been televised by the BBC, Channel 4 and CNN.

SEMINAR SNAPSHOT Afroditi’s seminar will look at how to design category defining restaurants in an ever growing and ever evolving marketplace. Mark Bithrey founded B3 Designers in 2002. He has worked in developing branded architectural interiors in leisure-dominated agencies for more than fifteen years. B3 Designers has, under Mark’s creative direction, developed an impressive, diverse, and award winning portfolio; recent examples include the awardwinning Carbon and Babel bars as well as Le Gavroche. Prior to founding B3, Mark worked for Din Associates, Revolution, and Portland Design

Design should be innovative but shouldn’t depend on trends; it should always have a sense of timelessness, of elegance. Stephen continues to push the boundaries of his craft, consistently finding new methods to realise his adventurous concepts – including 3D-modeling, collage, bronzing, and UV printing. His previous clients include The Barbican, The Spectator magazine, and Geronimo Inns. His work with Beast, the high-end restaurant, saw him build a powerful visual identity for the restaurant, creating a visual connection between the brand, restaurant, and its consumer. His brief was to lead the art direction across media platforms, interior installations, and develop the brand identity and visual messaging; logo, web presence, artwork, signage, bronze sculpture and interior feature pieces. Jon has over 40 years in the design industry, mostly in hospitality design and the casual dining market. With a successful career spanning four decades, Jon has become a respected name in the leisure and hospitality sector. His philosophy of delivering strong, well thought out design solutions that answer the brief has been the foundation that Dover Design is built on. Founded in 1995, Dover Design have an extensive range of experience in building and developing brands, specialising in restaurant design in

London and across Britain. Dover Design are dedicated to providing effective and creative design solutions for all their clients, and are currently busy with roll-outs for Caffe Concerto and Mangobean.

SEMINAR SNAPSHOT Including artists and concepts at an early stage of the project creates a full and emotive visual identity; encapsulating logo, branding, visual, digital comms, and website. When elements are developed simultaneously, this leads to a fully rounded brand. Guy is a director of Morgan McDonnell Architecture, an award winning architecture practice based in Edinburgh.

Peter Veale started his working life as a product designer, specialising in luminaire design. He became a lighting consultant when he moved to Hong Kong in 1996, working on hotel projects in China.

Having grown up in the west-coast seaside town of Largs, Guy ‘escaped’ to Edinburgh to study in the 1980s, and following a ‘near death experience’ with quantity surveying at Heriot Watt University, he graduated with a first in Architecture from Edinburgh College of Art.

Following three years in London working in high-end hospitality, retail, and residential projects, he moved to San Francisco, this time spreading his wings into large office projects in Silicon Valley. Then, the planets aligned and he started Firefly with John Lau in 2003 when he decided to settle back in London for good, just with frequent trips to his beloved Hong Kong (thus the opening of an office there not long afterwards).

about establishing Morgan McDonnell with fellow graduate Anthony McDonnell in 1996. The practice’s work covers a variety of sectors including residential, hotel/serviced apartment, office, bar and restaurant, and varies in size and scale from small domestic house extensions on remote Scottish islands to multi million pound urban regeneration projects. Recent Award wins include the RIAS Andrew Doolan Best Building in Scotland Award and the RICS Grand Final UK Project of the Year.

SEMINAR SNAPSHOT Edinburgh based craft brewer Innis & Gunn commissioned Morgan McDonnell to design a new concept bar/restaurant which could be rolled out, initially in Scotland, then further afield. In line with the Innis & Gunn ethos, the concept focuses on the quality and flavour of the food and drink offer, whilst the interiors provide comfort and texture using a palette of natural materials. This talk looks at the key elements of The Beer Kitchen and how to retain design continuity when rolling out a concept in different locations and spaces.

Originally from Salzburg, Austria, Benedict left for London to study at Central Saint Martins College of Art and Design. He then went on to work for some of London’s most prestigious design studios and architectural practices. It is the combination of the conceptual and context driven design approach taught at Saint Martins mixed with a more practical, brand led approach within architecture and London design studios that defines his work today. “A space has to deliver functionally but it has to over deliver in regards to an experiential point of view. This is achieved by bringing together a customised service, branding and environment, carefully curated and designed to create ‘that unique customer experience’.” It is the above principles that are reflected in Benedict Wilhelm Designs work be it hospitality, retail, leisure or residential projects.

Mystery, formed in 1998, helped create and evolve the highly successful `Giraffe` group (with whom Dan worked for 14 years until its sale to Tesco); conceived and designed Za Za

Jack Hollands is the man behind Signwriting Jack; his rare skills have been attained and nurtured thanks to a global network that is keeping the craft of signwriting alive. Recent years have seen a boom of interest and appreciation for gold leaf signage, and this is the main focus of Jack’s output and energy. He has recently been working on projects in Australia, collaborating with other contemporaries in the field. Since his return to England this year, he has been commissioned by several restaurants around

the country, from his hub in London, to embellish their windows with gold leaf. With his Graphic Design degree, Jack gives a modern edge to businesses, whilst using ancient gold leaf techniques. His philosophy is to add a human touch to signs whilst maintaining the highest levels of quality.

STORYTELLING: CRITICAL TO BOND CUSTOMERS TO YOUR RESTAURANT BRAND

Stuff International has worked for many wellknown businesses worldwide, particularly in the UK, Europe, Middle East, Russia, and China. Neil also co-founded Stuff Multi-Channel and was UK MD and creative director of Fitch PLC, when it rose to become the fourth largest design business in the world before being sold to WPP.

Over 10 years, her projects have included designing for Hilton, Millennium, and Soho’s infamous Groucho Club, to more recently carrying out the design and development of over 30 Wildwood and Dim t restaurants. Since its inception, Design Command has quickly grown to five designers working on restaurants across the United Kingdom.

NEIL WHITEHEAD

Neil Whitehead, an architect and business strategist, is founder and MD of Stuff International Design Limited, an international commercial architecture, commercial interior design, branding, and product development business.

Design Command is a London-based interior architecture studio founded in 2013 by Clare McDonald. Prior to this, Clare brought her expertise to hotel and restaurant design across Europe, working for a number of design practices.

Neil aims to bring clients ‘commercial success through design’ with many notable successes. He rebranded BT Cellnet to O2 and BNP Paribas worldwide, and has worked with major retail brands, hotels, bars, and restaurants including KFC, Pizza Hut, Petara, China White, and Putney Bridge Restaurant, to name a few.

In this seminar, Clare will consider how to create the best restaurant from both an operational perspective and a dining perspective; exploring spaces that are practical yet standout from the crowd.

He also advises SMEs in the UK at South Bank University and for the Russian Government in St Petersburg.

Their recent projects include Zen Sushi restaurant in Rome, which was inspired by the colors and suggestions of Kyoto temples, Kami Spa Parioli, a Luxury Oriental day spa in Rome, and Haus Bavaria, a big private residence in a heritage

urban site in Bavaria, Germany. The studio is now working on several projects such as Marriott Hotel Flora’s new Spa and Wellness Center in Via Veneto, Rome; a restaurant in Naples facing Vesuvius, and a residential conversion in Paris.

SEMINAR SNAPSHOT The Zen Sushi restaurant project is inspired by the walkways in the forest bordered by the succession of matt black and glossy red-orange wooden portals, which lead to the temples of Fushimi Inari in Kyoto, of which reproduces colors and suggestions. On the tenth anniversary of the restaurant, the property wanted a new look. The design challenge was to create a space with a true Japanese essence in a contemporary way.

Jon Quinn is head of international operations for Sculpture Hospitality. He has a wealth of experience in the hospitality sector covering sales, management, inventory control, and logistics.

In 2004, Frances brought this varied experience to the business Dominic had begun in 1999. The two of them now live and work alongside each other, creating unique collections and responding to custom briefs from architects and interior designers worldwide.

Jon has been instrumental in the development and extension of the products and procedures utilised by Sculpture Hospitality in their work, generating increase profits and reducing losses with thousands of hospitality clients in over 35 countries.

How to design a wall to be unique, yet functional and durable? To respond to this need we researched currently used finishings for interior walls and created a product which have all its advantages while eliminating their drawbacks. In consequence we have developed the KERRACORE technology resulting in a state-of- the-art and extremely durable material that we used to create KERRADECO. The core of the product is a specially designed polymer material refined with mineral additions. Single board consists of two layers – bottom cellular and hard surface. This structure of board gives the product dimentional stability, impact and scrach resistance.

One of the greatest advantages of KERRADECO is fast installation – required time is reduced to minimum. It is especially important while redesigning your establishment, which in this case is excluded from functioning just for a short time. Before installation walls don’t need additional surface preparation. Interiors finished with KERRADECO may be used immediately after the assembly is finished. What is more, KERRADECO installation does not require “wet’ works so the whole process is clean. KERRADECO boards have tongue and groove joint system. They are easy to cut by usage of conventional tools. There are two installation options – bards can be glued directly onto the wall, provided the surface is smooth and stable, alternatively they can be screwed onto wooden support battens.

ACOUSTICS; Adding positive sound to the senses of dining A fundamental keystone that makes us human is our attitude to eating and drinking, the table is a place of ritual, a place where we develop culture, taste and become aware of whom we are, and whom we our communities. It is therefore important the place that we eat is functional and represents us as society. Of course food is at the centre of your dining experience, but long before the food has arrived the dining experiences begins as soon as you enter the restaurant, bar or café. How food is experienced has everything to do with the décor, the rituals, the company and the experience. Everyone knows a glass of fine wine and fresh seafood is going to taste better sitting on a sun drenched deck in a restaurant garden then sitting at home with central heating and looking out onto a rainy cold street. That’s why it’s important to provide a positive experience from the beginning. Sound can be a crucial factor in a patron’s ability to enjoy their dining experience; Social interactions are a common source of excessive noise which can be explained by the noise-breeds- noise effect, also known as the café-effect. This phenomenon occurs when conversations of individual groups create noise, which results in surrounding groups subconsciously competing to be heard and understood (Whitlock & Dodd, 2006). It could be said that this then would cause detriment the functionality of a restaurant, bar, and cafe as the positive experience is drained away from the patrons bit by bit. English Philosopher Sir Roger Scruton has written that Architecture is distinguished from other Art forms because of a sense of function and goes on to call for a return to the first principles, contending that the aesthetics of architecture is, in it’s very essence, an aesthetic of everyday life. Because communication and sound is one of the very first experiences that take place in a restaurant, this should also be one of

the first considerations of function when designing the interior of a hospitality space. – To simply put it, positive sound equals a positive and functional dining experience. With modern design in hospitality focusing on harder surfaces, like concrete, glass and polished timber, these spaces can become a reverberating nightmare. The simple solution is to apply an acoustic treatment to absorb excess reverberation; this can come in a number of applications. However failure to take the acoustics into consideration from the beginning of the design can expose you to design limitations once the space is finished and occupied.
