About The Restaurant: CANTERA was born from a love for Mexican Cuisine and the Arts. We wish to communicate to our employees and our guests the passion for the abstract and modern by offering unique, home cooked meals from our family to yours. CANTERA, which translates to “quarry stone” is very significant in Mexico. CANTERA is a specific material made of volcanic rock from various regions of the country. It dates back to pre-Hispanic culture and is used for the construction of houses and sculptures like our very own fireplace. Nature’s Oasis Executive Chef, Charles Childers, is a culinary wunderkind who is internationally trained in Jamaica and Fiji and has worked in well over 100 kitchens, learning from as many chefs as he could find. Chef Charles moved to Durango in 1997 and worked as Sous Chef for several well-known restaurants. He has made multiple television appearances for local stations and has a passion for, and is a hall of fame member in the national nonprofit called Cooking Matters, of which there are more than 80 branches in the country. Chef Charles attended culinary school at Community College of Southern Nevada and was born and raised in Las Vegas, Nevada.
