slow down and savor every bite in the southwest Our Four Corners communities offer a larger quantity of quality restaurants than most metropolis areas. Our rural region of the Rocky Mountains boasts a variety of independently-owned establishments where residents and visitors indulge in all sorts of beverages and bites. And each of our communities love to celebrate the diverse culinary scene in the Southwest. Flavor Four Corners Dining Guide is an homage to the incredible creations prepared by local chefs that keep customers coming back for more. It is a nod to the mixologists that enjoy experimenting with classic recipes with locally-sourced ingredients and spirits. But

most importantly, it is a small taste and visual tour of the signature offerings at a handful of amazing restaurants in the region. Find a new place to visit in Flavor Four Corners Dining Guide. Go ahead. Snap a quick photo of the plate’s presentation or that colorful cocktail. Then share your local experience by posting a photo or review on social media. Celebrate Cuisine four corners food and beverage festivals

Coloradans love any excuse to gather with friends and neighbors. We also love live music, sunshine and adorning costumes. And we go gaga for events and festivals of all sorts. We enjoy grazing local menus for quality meals, shareable appetizers, craft beer and mixed cocktails, especially during happy hour. So, it’s no mystery why many of our favorite celebrations center around the food and beverage scene.

TASTE OF DURANGO

MAC & CHEESE FESTIVAL

Every year Durango celebrates its culinary prestige with a few festivals, but Taste of Durango boasts itself as the big one. Thousands gather outdoors to taste a wide variety of signature items from Durango’s restaurants in a fourblock stretch of Main Avenue in one afternoon. The annual spring festival returns downtown May 15. Proceeds from the event benefit a selected nonprofit every year. So go gaga over the garnish and ganache; it’s for a good cause. If you missed this year’s event, don’t worry. There are plenty of other beloved events to enjoy this summer.

Farmington’s Mac and Cheese festival is a kid-friendly, kick-back-and-consume party at Berg Park. This national event is rooted from one person’s lifetime love of macaroni and cheese, and now shares their love to thousands of other carb and dairy loving folks. Luckily for us, this includes anyone who happens to be in Farmington, New Mexico during the summer. This year’s event on June 25 from 1-5 p.m. promises to feature a plethora of gourmet macaroni and cheeses, beer and wine, which kind of seems like a dream come true for anyone who is an adult by day, but a kid at heart.

The Four Corners region offers a wide array of culinary options, and residents love to celebrate our appreciation for refreshing drinks, delicious food and warm sunshine by attending fantastic festivals.

SAN JUAN BREWFEST

GREEN CHILE FESTIVAL

HARVEST DINNER

Every August, United Way of Southwest Colorado hosts a beertasting festival and fundraiser at Buckley Park. The San Juan Brewfest gathers more than 50 regional beer, cider, seltzer and wine makers in downtown Durango. Guests can enjoy live music while sipping and socializing. This year’s event is 1-5 p.m. Aug. 27, with a special event for 500 VIP ticket holders 5-8 p.m., Friday, Aug. 26. Proceeds from the fundraiser benefit United Way of Southwest Colorado.

Even if craft brews aren’t for you, and macaroni and cheese doesn’t make your mouth water, you can spice things up at the Ignacio Green Chile Fest. This annual fall event takes place in Ignacio and highlights what Southwest Colorado is good for; spicy, delicious chiles and winning competitions. Competitors gather for friendly fiery competition to see who can roast the best chilies and create the best salsas. Then, to tamper the sizzling chile competition, there is a cornhole tournament and live music to help everyone cool down and enjoy the rest of the fall evening.

True foodies rejoice at Durango’s annual Harvest Dinner hosted each fall by the community-centered nonprofit Local First. Although smaller and more exclusive than other area food events, the rustic-chic, al fresco dinner does not skimp on fine dining. The elegant event includes an evening of fine dining and education on the close relationship between area farmers, the food they grow and the intricate meals that professional chefs create locally.

DURANGO

El Moro embraces the town’s Victorian heritage and reflects the town’s history. In the early 1900s, 945 Main Ave. truly was the El Moro Saloon. The present-day El Moro has some of the feel of the original saloon with bare red brick walls, tin ceiling, hardwood floors and heavy wooden tables. The menu can be described as modernrustic. Beer pairings for every palate The craft beer boom has inspired millions of people to look at beer through a new lens. Once relegated to backyard barbecues and ball games, beer is now served alongside gourmet meals. Much like the right wine can make a meal taste even better, beer can bring out the flavors of any food, making it an ideal complement to everything from steak to seafood to salad.

The Brewers Association is an American trade group whose membership consists of more than 5,400 brewers, suppliers and retailers. The group recommends beer lovers follow a three-pronged approach to matching beer and food. It’s worth noting the BA does not view this approach as a 1-2-3 process, meaning beer lovers need not follow the steps in order to perfect their pairing skills. 1. Match strength with strength. The BA recommends pairing strongly flavored foods with assertive beers and delicate foods with delicate beers. For example, a relatively low alcohol witbier should pair well with light seafood like steamed mussels. Beer lovers who enjoy strong barley wines, which are typically 10% alcohol by volume (ABV) or higher, should find that a strong cheese or dessert matches up well with this overpowering style.

2. Find harmonies. The BA notes that beer-food combinations typically resonate most effectively when they share some common flavor or aroma element. For example, the deep, roasted flavors of an imperial stout often pair nicely with chocolate truffles. 3. Consider sweetness, bitterness, carbonation, heat (spice), and richness. The BA recommends that beer lovers look to take advantage of the specific and predictable ways that certain qualities of food and beer interact with each other. For example, malty sweetness can cool the heat, making a hoppy beer with plenty of malt a good choice to pair with spicy food. Pairing the right beer with food can make any night out on the town that much better.

Want to pair your favorite craft beers like a professional? Consider these pairing tips and local recommendations. • Amber/red ale: Chicken, seafood, burgers and spicy cuisine local beer: Animas River Brewery’s Boxcar Red • American wheat ale: Very light food, including salads, sushi and vegetable dishes local beer: Bottom Shelf Brewery’s Rockwood Wheat • Blonde ale: Light food, including chicken, salads and salmon local beer: Ska Brewing Company’s True Blonde

• Dark Lager: Hearty and spicy food, like barbecue and roasted vegetables local beer: Riff Raff Brewing Company’s Holy Schnitzel Doppelbock • India Pale Ale: Strong spicy food and bold, sweet desserts like carrot cake local beer: Steamworks Brewing Company’s Third Eye P.A. • Double/Imperial IPA: Smoked beef brisket, grilled lamb and southern chicken-fried steak

local beer: Steamworks Brewing Company’s Conductor Imperial IPA • Light Lager: Samosas, salmon, chicken salad local beer: Carver Brewing Company’s Lightner Creek Lager Pilsner: Light food such as chicken, salads and salmon

local beer: Main Street Brewery & Restaurant’s Scaramouche Bohemian Pilsner • Porter: Barbecue, sausages, roasted meat, and blackened fish local beer: Mancos Brewing Company’s Pagan Porter

local beer: Carver Brewing Company’s La Plata Pilsner

• Sweet or Oatmeal stout: Rich, spicy food, including barbecued beef and Szechuan cuisine

• Classic pilsner: Light food such as chicken, salads and salmon

local beer: Animas Brewing Company’s Low Flow Nitro Stout
