Sometimes when we’re putting together an issue of FiND iT, we focus on the season, or we pick a theme and move on from there. This issue didn’t play out that way at all...and I love it! This issue kind of found us. Every once in awhile, you come across people that actively seek to answer that siren song called passion. They stay a path that they hope will lead them toward a dream that finally becomes reality, sometimes after years of struggle and sometimes by what seems serendipitous. Nearly every article in this issue is about a business or service that started with someone’s dream to serve others. The married couple that wanted to share their Peruvian heritage, the graphic artist dad that wants to help keep the arts alive for kids, the clinical psychologist and his daughters that are devoted to making a difference for those in military service and so many more. Rebel’s Kitchen began as a local, home-based farmer’s market business focusing on bread and pastry with a bit of a twist. With a longtime affinity for non-traditional flavors and ingredients, the rebel-in-chief has proclaimed cardamom to be the Robin Leach of spices! This led to a varsity line up that included the before aforementioned pretzel croissants, chocolate espresso brioche filled with smoked tea caramel and soy sauce black sesame chocolate chip cookies among others. Fast forward a few seasons and Rebel’s Kitchen is now a wholesale bakery and caterer focusing on supplying delightfully different treats to local restaurants and businesses as well as corporate meeting breakouts. Because there isn’t a storefront, it’s even more important to follow their every social media move. COLLATERAL DAMAGE PROJECT: In his years as a clinical psychologist, Dr. Tim Barclay has seen the effects of post traumatic stress disorder (PTSD) in post 9/11 military veterans. These individuals experience increased irritability, aggression, changes in personality, social withdrawal and, worst case scenario, they distance themselves from their loved ones. “They don’t know how to connect emotionally anymore which further causes anger,” Barclay explained, “It can turn into domestic violence... breaks families up…[and] renders many people incapable of engaging in the workforce which requires them to be on disability. It wreaks havoc in their lives.”

PTSD, Traumatic Brain Injury (TBI), anxiety and depression are just some of the mental health conditions Barclay treats in his Forrest, Va.-based practice. A U.S. Army veteran and retired police officer himself, Barclay has a passion for helping veterans and first responders, but has found that providing them with the high-level care they need is difficult. “Treating veterans in my private practice has always been a frustrating experience,” he divulged, “I found that I have not been able to deliver the level of care required because insurance companies don’t pay for it... Everything [covered by insurance] is like a Band-Aid.” He has seen practitioners provide a few sessions pro-bono, but when it comes to PTSD treatments and other mental health care, many patients need clinical intervention at a much higher level. In an effort to deliver the help veterans need, along with diminishing their insurance coverage worries, Barclay founded The Collateral Damage Project (CDP)—a four-week intensive and comprehensive treatment program for active and retired military personnel. While treatment takes place in Virginia, the nonprofit’s administrative offices are based in Frederick. Barclay’s daughter, Frederick resident Stephanie Krop, serves as the nonprofit’s executive vice president. She works on this project with her sister, Brittany, who serves as chief marketing officer. “We realized that a lot of our skills would complement each other to get this project off the ground,” Krop boasted. “We are really excited to be doing this alongside of our father...there are a lot of great veterans’ organizations promoting awareness, so we thought if we combine our expertise, we can actually make a dent and solve this problem.” Every CDP participant gets a complete psychological and neurological evaluation. From the results, a specific treatment plan is created for that individual. Participants are part of psychotherapy groups and noninvasive brain stimulation sessions. The programs run from 9 a.m to 4:30 p.m., five days a week for four weeks. The intensity of the treatment varies and creates neurological changes in patients as well as fosters emotional stability and regulation.

“A lot of the veterans that [come to us] are on a lot of medications that literally confound treatment,” Barclay remarked. “With all these different medications, it produces various side effects…[so it is] difficult to determine ‘Are we treating side effects or are these actually symptoms of a disorder?’ [Through our treatment] [w]e are actually able to remove the majority of these medications, sometimes eliminate them totally, but at a minimum [we are] able to get them on the least amount of medications necessary.” Barclay asserts his program “is the only program to exist of its kind in the world.” He continues, “[t]here are a lot of programs out there that provide mental health services to veterans, and they are all very good organizations that provide needed levels of services, but what distinguishes us from them is [that] our care is strictly clinical treatment and the intensity in which the treatment is done [is higher.]” Once participants finish the program, officials coordinate follow up care for up to a year with the patient’s counselors, doctors and psychiatrists so they can maintain their new found emotional and mental stability. Currently, the only patients that receive treatment live in the Forrest, Va. area, but officials are trying to raise $400,000 to build a housing facility to host patients that live across the country. Fundraising efforts include partnering with additional veteran organizations, putting together events and asking for donations. Barclay asserts that the “common misconception about PTSD is that it is a lifelong illness. [That] because you experience it, you are going to have it for the rest of your life…[w]hat we know through research today is [that] PTSD is actually curable. The quicker we can discover it, diagnose it and treat it, the better prognosis we have.

X marks the spot in Downtown Frederick where you can find authentic, traditionally crafted spirits with names and tastes that take you back to a time before Prohibition.

That “X” stands for “10,” as in Tenth Ward Distilling Company, at 508 East Church Street, just a few blocks beyond Everedy Square and Shab Row shopping districts in Frederick. Inside the small, white, unassuming building that Tenth Ward occupies you’ll find a variety of distilled spirits for sale (as well as candles, shirts and other related paraphernalia). A free tasting and tour are always at the ready, and so is an impromptu history lesson. Owners Monica Pearce and Kyle Pfalzer chose Tenth Ward’s name, logo, and even the bottles their spirits are sold in with great care and deference to history. Kyle, the distiller, is a student of Civil War and 19th Century American history, and works as a licensed battlefield guide at Gettysburg National Military Park when he’s not brewing or distilling. Monica grew up in the area and trained in environmental sustainability before a passion for handcrafted liquor came calling.

Together, they created their brand by staying true to the area of the city where they are located. It has a gritty feeling and industrial look, and so, therefore, does their logo and brand. Tenth Ward Distilling Company gets its name from a historic twist on its current location. In the late 19th and early 20th centuries, the City of Frederick was divided into 10 wards. The 10th Ward was home to most of the city’s industrial workforce. Old maps of Frederick show each ward labeled with a Roman numeral—inspiration for the distillery’s utilitarian logo. You’ll see the giant black X emblazoned on the outside of the building, and on each bottle of spirits they sell. And about those bottles? They’re unique, too. Tall and squared off on the edges, they pack a lot of heft and were chosen specifically for their unique character. Speaking of unique characters, sprinkled throughout the distillery tasting area are little pieces of Frederick history. From the map on the wall to the original bottle capper from Everedy Bottling Company, to the wall of “fame,” featuring photos and newspaper clippings about Frederick’s most notorious bootleggers, including “Hoppy” Grove, whose case was taken all the way to the U.S. Supreme Court, and “diamond-toothed” Claude Countee, who escaped jail while awaiting trial. While it’s interesting to read about the city’s colorful history with banning booze, Monica and Kyle are grateful Prohibition is behind us. Two winters ago, Frederick lawmakers amended city code to allow for small craft distillery operations to open in the downtown area, paving the way for Tenth Ward and a few others to open since.

Tenth Ward produces three types of whiskey: two ryes (White Caraway Rye Spirit and 120-proof White Rye) and one corn, all unaged. Applejack is its first and only barrel-aged product. Monica considers the Caraway Rye to be Tenth Ward’s signature product. It’s meant to be enjoyed neat, on the rocks or in a cocktail. Grab a bottle of the 120-proof white rye and age it at home yourself with one of the pre-made aging kits, complete with your choice of wood and detailed instructions. The corn whiskey has a smoky scotch-like quality. It’s created using traditional methods with corn from an Angus beef farm and malt house in West Virginia. In the late fall and winter, Cerise Liqueur, a bright cherry-flavored spirit, was available for sale. And soon, look for Honeyjack to be released. Kyle has been barrel-aging mead from Orchid Cellar Meadery in Middletown since early fall; it promises to be a unique addition to the distillery’s shelves.

While setting up at a local fresh market with her art, owner Lori Cullen felt there was a need to offer an additional, affordable craft item. Daniel Dulany, an Irish immigrant and prominent lawyer/land developer of Annapolis dubbed Frederick City’s major eastwest road, Patrick Street in 1745. Soon after came plans for the first federally funded road. Built between 1811 and 1837, Thomas Jefferson’s Historic National Road stretches from Maryland to Illinois. While shopping and dining abound all along Patrick Street, visitors should be sure to look up and around! The street features several public art installations and many of the buildings still have their original signage and architectural interest. Sitting on a sidewalk patio enjoying an iced coffee while imagining a horse tethered to a hitching post more than 180 years ago make Patrick Street an eclectic menagerie of history and modernity. P.I.G.S. has more than 15 years of experience and a barbecue recipe to die for. It seems anyone who has tasted their food can’t forget the epicurean experience. Catering all parties of the graduation, picnic, reunion, wedding and/or work event kind, P.I.G.S BBQ not only provides deliciously unforgettable barbecue, but they have the amazing ability to successfully cater everything from a small down-home, corn-hole toss type party to an elegant wedding for hundreds of your favorite fancy friends. Guests constantly inquired as to where they could get their next taste! Now those anxious for that next taste no longer need to beg an invite to the neighbors’ next party. In November 2016, the owners decided to open their sit-down restaurant when an opportunity arose to occupy a pre-existing space inside of the Frederick Indoor Sports Center (FISC). The obscure restaurant destination inside of the overhauled snack bar hiding within the sports complex is definitely one of Frederick’s well-kept secrets. We’ll admit it, the location is a little strange, and the mix of live soccer matches and barbecue nachos took a minute to get used to, but WOW this really is good stuff! Everything is made in house. No short cuts are taken in the kitchen, ensuring diners an authentic food experience. All of their barbecue is hardwood smoked in house daily, and all of the sides and barbecue sauces are homemade from scratch. They even pickle all their own vegetables, which brings us to those nachos. These are not like nachos we’ve ever tasted before, and we’ve eaten a ton of nachos. Tortilla chips, check. Barbecue chicken, check. Then comes this wonderful, delightfully light, yet flavorful pimento cheese sauce, followed by pickled jalapeño, pickled onions, pickled tomatoes and black olives. Imagine, if you will, a smoky, pickled, savory sweetness that just won’t quit. The menu offers a variety of ways to sample their barbecue with a by-the-piece, mix and match sampler of sorts. While the standard barbecue type sides are offered, they are anything but typical.

Collard greens that made a veggie hater swoon, a 7 cheese mac-n-cheese that is still appearing in dreams, and a sweet jalapeno cornbread that would make any southern momma proud. Featuring over 50 bottles and cans and 8 rapidly-rotating draft options, P.I.G.S. BBQ also offers one of the biggest beer lists found in any bar or restaurant in Frederick with a focus on soughtafter and limited release craft beers from both near and far. It also seems worth mentioning that while you are literally dining in the middle of live soccer matches, the open portions of the walls are covered by nets allowing a clear view of the action while ensuring no stray back passes take out your half finished craft beer. The quality of the food, the generous portions, the stellar service provided during our visit by Jimmy D, along with the quirky atmosphere make P.I.G.S. BBQ a place well worth finding! Please be patient with the staff as they try to get away from the smoker long enough to get their website updated to reflect the restaurant’s menu and hours, as well as updating the catering web page. Meet Sean Clark. An artist and creative soul whose passion for educating kids, including his own, has lead him to create Creative Cricket. Creative Cricket is an online source for parents, teachers, and kids to help foster a love for drawing. Each step-by-step lesson guides the viewer through the basics of creating a cartoon character, a train, or a puppy, etc. all with the goal of providing the stepping stones to understanding the art of drawing.
ON A PASSION
WHAT INSPIRED YOU TO START CREATIVE CRICKET? Well, my three kids LOVE watching me draw. They enjoy watching a blank piece of paper turn into something they recognize—piece by piece—and asking questions along the way. Drawing has been my passion since I was a kid so it makes me happy that they show interest in art. In addition, they (like most kids) love watching videos on YouTube. They scroll through tons and tons of videos and re-watch them so much— even I end up memorizing some of the funny songs, phrases and characters that they find. While they do pick up some linguistic skills, most videos had little/no educational value and that sort of gave me the idea to start my own educational art channel for kids. So, I found a way to make fun videos for them to watch on YouTube, while watching daddy draw, and growing their brains at the same time. My wife came up with the name Creative Cricket and I think it suits what I do perfectly. Crickets are musical, creative creatures. When you hear one, it sounds cool and you appreciate its individual chirp as its way of expressing itself for everyone to hear. But when you hear a bunch of crickets in a field, it’s incredible! You get one big beautiful song—a chorus of crickets sharing,

communicating and speaking the same creative language. That’s what I want my creative community to be; making art together and sharing inspiration with each other in a creative way. WHAT’S YOUR BACKGROUND AS AN ARTIST? I’ve been drawing as long as I can remember. It has always been my passion and my emotional outlet, but sometimes it got me into trouble, like when I drew constantly during class. It was a bit of a gift and a curse. So consequently, I had to separate my artistic life from my academic life. Over time I drew less and less as I got into other things—like wrestling in high school and college. Drawing took a backseat for a little while, but I started picking up other creative skills like video editing, music production, web programming and graphic design to fill that void. I currently work full time as a graphic designer for the Montgomery County Government. Creative Cricket is sort of my way to give back to my community and help encourage young artists like me. WHAT DO I HOPE YOUR VIDEOS WILL DO FOR STUDENTS? For kids like me, it would be cool to have a way to draw AND listen to the teacher at the same time! So, I hope Creative Cricket keeps young artists drawing, and offers teachers an engaging, creative tool to help reinforce topics they teach in school. I want kids to know that drawing is special, and practicing often uniquely prepares them for real-world skills/professions. There are lots of different types of artists and creators that started off being intrigued by drawing. I also want to help with kids who say “I can’t draw”—because they can—and this might prevent some kids/adults from being turned off to art and perhaps open the door to new possibilities. WHAT’S IN THE FUTURE FOR CREATIVE CRICKET? I want Creative Cricket to be a widespread tool used to supplement classroom learning. With the S.T.E.A.M. (Science, Technology, Engineering, Art, Math) approach gaining traction in schools, my art lessons can be integrated into a curriculum and can be perfect to introduce or reinforce topics, serve as homework projects, indoor recess activities or even summer break extended learning. It’s also a useful resource for homeschoolers, parents and other educators. My plan is to eventually have my kids join me on camera (for some videos) to draw their favorite characters while reinforcing lessons they learn in school. But, I don’t think we will stop at drawing, I foresee Creative Cricket turning into a channel that includes painting, crafts, Lego building, Play-Doh sculpting, music creation, and lots more topics—all the while instilling educational concepts into each lesson. Someday I would love visiting with students in the classroom, at community events, while continuing to grow a strong creative community online. ANYTHING ELSE I THINK READERS MIGHT WANT TO KNOW? Creative Cricket has become my new passion. I never thought it would become what it is now, but it is continuing to grow into something much bigger than I ever imagined. I love creating it, sharing it with kids and providing valuable tools for students/teachers/artists around the world. It would be a dream come true to someday be able to create these videos for a living.
