Hey Frederick, Happy New Year! Are you jumping into 2019 with both feet, or are you a little more timid about starting another new year? Over here, I’m pretty excited about the change in date, with all of the new opportunities and new experiences that come with a brand-new year. Especially here in Frederick! These pages are packed with potential new experiences, whether you’re looking to discover “What’s the Deal With ‘Booch’?” (Page 18) or “Jump” into a new fitness experience (Page 36), or try some of the excellent breweries around town (Pages 28 and 46). As you may have noticed already, with the new year comes some new-ish faces at Find iT Frederick magazine. Our longtime editor, Melissa Howes-Vitek, whose lovely face graced this page for many years, has moved on to other challenges. And we will miss her dearly! I have been working alongside Melissa for more than seven years as a writer, editor and photographer, and to say it was a pleasure would be an understatement. And, while I am super sad to see her go, I am also excited at the same time to take on Find iT Frederick as its editor. I’m proud of this first issue that I helmed, and am looking forward to working with our new copy editor, Lauren LaRocca, to bring you all some amazing stories about Frederick County (and just a bit beyond). WHY DRINK BOOCH? How are you feeling? Are you chronically tired, maybe because you can’t sleep very well? Are you spending more time in the bathroom then you’d like, or maybe you suffer from heartburn or acid reflux? Well, all of these symptoms may be linked to your gut health. Enter kombucha. There are claims that kombucha can relieve symptoms of all sorts of diseases, from autoimmune disorders to the common cold, and while we can’t say for sure that it will cure you of anything, we can say that drinking it does promote a general sense of well being and health. Some people even notice improved mental clarity and mood — who knew all that could be linked to your gut?

WHERE CAN I GET BOOCH? Kombucha makers are freckled throughout Frederick County, and small-batch producers such as The Kombucha Lady and Mutha Bucha have all sorts of funky flavors to delight your palate, made 100 percent locally. Liz Dodson (The Kombucha Lady) produces more than 50 flavors, including Apple-Chai, OrangeLavender and Blackberry-Sage. She makes them all with organic teas and produce that she grows herself on her small farm, called Promised Land Farm, in Frederick County. Mutha Bucha is run by Paris Zlotak in Frederick. She makes unique and exotic flavors, including Originator, which contains cara cara orange, lemon, turmeric and basil. There is also a bevy of kombucha producers nationwide, and their products can be found in local grocery stores. You can compare their flavors to the kombucha produced locally and see which ones tickle your fancy. If you want to try this funky probiotic beverage, swing by The Common Market or Hippy Chick Hummus to get a bottle, or bring your growler and

climbing walls at record speed, and thought, “Hey, that could be me!” and then reality set in when you found yourself out of breath on the way to the fridge for a second beer? Well, we’re here to tell you that your dreams are not dead yet!

CLIMB

Jump, Climb, Extreme (JCX, for short), a gym that provides a safe space to practice all of your ninja warrior skills, opened about two years ago on the second floor of the Frederick Indoor Sports Complex (also known as FISC). JCX offers open gym sessions, workout classes for kids, homeschoolers and adults, as well as birthday parties and other events. They even host their own ninja warrior competitions. JCX is tucked away in a small space for now, but the owner, Roy Klein, has hopes of expanding in the future. We asked Klein a few questions about JCX and he was kind enough to answer…

WHAT’S JCX ALL ABOUT? JCX is a “ninja warrior gym.” Most people have at least heard of the show, but if not they can easily look it up. You don’t have to be experienced to come here; we work with all variety of skill levels. We want to encourage people to be healthy, to exercise and have fun while you are doing it! WHAT INSPIRED YOU TO OPEN JCX IN FREDERICK? The idea for JCX came after I first watched “American Ninja Warrior” back in 2012. It brought me back to my youth of swinging and climbing on ropes, using ziplines, climbing trees, etc. The TV show made me realized I could turn all the ideas in my head into a real business. I had support from friends and a business mentor that encouraged me, and so I started putting a plan together. JCX initially started as a mobile event business down in Rockville. The name Jump Climb Extreme came from some of the core activities that the gym is about, while trying to capture the uniqueness and fun aspect of it all. I looked for a home for JCX in Montgomery County, but couldn’t afford the rent anywhere. I was offered a space at FISC at an affordable rate, and from there I set to planning the build out. It all came together rather fast, but it wouldn’t have been possible without the opportunity FISC gave me! At some point we will have to expand, but where that will be at we are not sure, but we plan to stay in Frederick County. The community here is great, our customers are great, and we hope to keep offering a great product and service here in Frederick!

WHO COMES TO JCX AND WHAT CAN THEY DO? JCX is recommended for ages 5 and older. We have different options, no matter the size. Sometimes we even have families that come and work out together. For some customers it’s about trying out something new, or something they saw on TV like the “Warped Wall.” For others it’s about overcoming fears, or getting that sense of accomplishment once you complete an obstacle you couldn’t before. It is also a fun and exciting workout for all ages! A typical visit to JCX is an hour long. People come to try it out, or take part in open gym (using the obstacles at your own pace) or they come for instructor-led classes. Our staff is on hand for safety reasons, to offer tips, to encourage or to spot someone when needed. We want our customers to have fun, but safely.

By the time I found myself walking inside the Firehouse Financial Center on West Church Street on a cold evening in November, my curiosity was piqued even more. Hosts greeted me at the door and directed me to an elevator that led upstairs, where Hidden Hills Winery offered wine tastings. I stopped by a small art auction, and eventually wandered into an intimate space that had been transformed into

an enchanting dining room, with ambient blueviolet lighting, a violinist serenading those gathered, and fresh flower arrangements on two long tables that stretched the length of the room. Like me, others in the crowd of about 50 people knew little about what would transpire during the next few hours, but we were enticed by its premise: we would be eating a five-course vegetarian meal ... but without plates. This would allow the natural pigments of the food to stain

Mordant dinners are the brainchild of Brooklynbased textile artist Victoria Manganiello, named as one of Forbes’ 2019 “30 Under 30,” and an artist-in-residence at the Museum of Art and Design through February. What began a few years ago as informal dinners with small groups of friends in her studio, experimenting with how foods would dye

tablecloths and napkins, evolved into a passion project that is slowly making its way around the world. The dinners were an extension of her natural dying process, but done organically while serving and consuming food, rather than intentionally painting the colors onto fabric with a brush. These Mordant dinners — named so because a mordant is the substance used to fix a dye to fabric, and its etymology comes from the French mordre, meaning “to bite” — soon evolved into

more formal, organized events at new locales. Rather than cooking the dinners herself, Manganiello began collaborating with chefs. She eventually took the Mordant dinner concept to Bulgaria, where she was a resident artist at World of Co in Sofia. There, a local weaver made the tablecloth with cotton and linen, and a local chef worked to create the menu of locally sourced food. The project became even bigger in scope when Manganiello teamed up with New York videographer Kristin Kremers to begin documenting the dinners through film and stills, as they experimented with new concepts for each one. One New York dinner involved the incorporation of unglazed pottery by a local ceramic artist, created with the intention to force spillage of colors onto the table. Everything is intentional, every dinner another experimentation in art and food. “If you go to a nice restaurant, you’re expected to focus on the food, but there is always more going on than meets the eye,” Kremers said. “You may or not notice the plate, for instance, but someone put a lot of thought into that.” When Manganiello and Kremers took Mordant to Romania, the tablecloth was made from hemp, a commonly used material there, by a local weaver. “Fiber is something that all humans are able to understand; we all wear clothes. We all have the ritual of dinner in common,” Manganiello said. “There are really so many things we have in common, despite different languages and backgrounds.” It was really because of Kremers that Frederick got its own taste of Mordant. The artist grew up here, and her father, Dr. Peter Kremers, is on the Board of Directors of the Frederick Arts Council, the organization that brought Mordant to Frederick (Peter Kremers is also well known for his “Color on the Creek” water garden and “Sailing Through Winter Solstice” projects on Frederick’s Carroll Creek). With a lot of cooperation and teamwork on the parts of the arts council — including executive director Louise Kennelly, board President John Bekier, board secretary Paula Rubin-Wexler, Kremers and several others, the Frederick dinner was organized in a matter of weeks. Ruppert Properties provided the space, free of charge. Meanwhile, Manganiello was paired with Jeff Beard, executive chef at The Wine Kitchen, who, after several

brainstorming sessions with Manganiello by phone, created the elaborate menu — a daunting task, indeed. In fact, he said it was the most challenging menu he’s ever created. “It was a learning experience,” Beard said. First, the chef had to take color into consideration, so he started there and worked backwards. He wanted to choose seasonal ingredients that would represent Frederick. Each course would build on the previous, as there would be no clearing of plates, so all the flavors had to be in harmony. The dinner started with the rich hues of hibiscus jam in green matcha powder with roasted baby carrots and parsnips. It went on to include forbidden black rice, saffron quinoa porridge and kohlrabi, rich vegetarian meatballs with basil and mint and charred tomatoes, “beetsteak” (yes, exactly as you think, and adding its rich fuchsia stain), pumpkin ganache, garden huckleberry, and the list goes on. It was gorgeous, sensual, and delicious. Frederick’s was the first Mordant to include a flame. Small torches were used to caramelize piles of figs right in front of diners’ eyes, which resulted in singeing the cloth in a few places and creating some small holes, which Manganiello loved. Frederick’s dinner also produced a lot of blue stains, she noted, which is difficult to achieve with natural dyes. “I’d seen pictures of other dinners, but I had no idea what to expect, and it was more than I could’ve imagined,” said Rubin-Wexler. “All my senses were involved. It just enveloped you. It was otherworldly.” Kennelly said the arts council plans to host more pop-up community art dinners quarterly, since Mordant and a prior dinner held at Sky Stage were such huge successes.

“The dinners are almost like a new medium,” Kennelly said. “It combines people and art and culture; it’s interactive, it’s visual, it’s performance art; and it all changes depending on the artist.”

Jennie Huntoon and James Calderon became close friends as students at Eastern Illinois University partly because at the time, they were the only students studying composition. “In grad school, Jennie and I were always talking about starting a studio together,” says Calderon, a violinist who now performs dinners, weddings and restaurants throughout the Frederick area. Huntoon, a vocalist and pianist, is from the Frederick area and returned after graduating, convincing Calderon to start a studio with her here. The result is Major Arcana Music Studio — a play on words for the tarot, which they’re both interested in, and a pun on major scales of music. They call their one-room downtown studio a “starter space,” and teach mostly one-on-one lessons there (hands-on, theory and composition) for students as young as 5. They’ve recently brought on two new instructors: flutist Gret Price and guitarist Antonio Fato. Since their start in the fall, they’ve grown to about a dozen students. Their endgame is to host group classes and move into a larger space that will allow for recitals and recording. The partnership has worked well — Huntoon thrives on detail-oriented spreadsheets, whereas Calderon likes to get out in the community, hand out business cards, and hype up their new business venture.
