WINTER GRANOLA SALAD BOWL Ingredients For The Beetroot Hummus: ½ Cup Tahini Juice From 1 Lemon 1 Can Chickpeas, With Liquid ¼ Tsp Ground Cumin 1 Teaspoon Salt 2 Beets, Quartered, Cooked 2 Tbsp Water 2 Tbsp Olive Oil Or Avocado Oil Ingredients For The Salad: 2 Cups Arugula 1 Cup Sprouts ½ Small Watermelon Radish, Thinly Slices 1 Carrot, Thinly Sliced 1 Avocado, Thinly Sliced Small Handful Pickled Red Onions Handful Purely Elizabeth Original Granola Crumbling Of Vegan Ricotta Cheese Sprinkle Of Puffed Amaranth Squeeze Of Lemon Juice Directions: For the hummus, add all the ingredients into the food processor and blend until creamy. For the salad, add all the ingredients into a large mixing bowl and mix well. Divide into two bowls and top each with a large dollop of the hummus and a squeeze of lemon juice. Enjoy!


Berry Parfait Ingredients: ⅓-½ cup of yogurt of choice ¼ cup fresh blueberries ¼ cup fresh blackberries 1 tbsp coconut sugar 1 tbsp fresh lemon juice 1 tbsp water ⅓ cup Purely Elizabeth Original Granola Directions: Place blueberries, blackberries, coconut sugar, lemon juice and water into a small saucepan. Heat the saucepan over medium heat and cook until berries begin to soften and sauce begins to thicken, about 5-7 minutes. Remove from heat and cool. Once the berry sauce has cooled, place yogurt in a jar or bowl and top with berry sauce and Purely Elizabeth Original Ancient Grain Granola.


Brownie batter overnight oats Ingredients: 1 Serving Purely Elizabeth Vanilla Pecan Collagen Oats ⅔ Cup Nut Milk/Oat Milk 2 Tbsp Raw Cacao Powder ½ Tsp Vanilla Extract Pinch Of Salt 1 Tbsp Cacao Nibs 1 Tbsp Shredded Coconut Optional Toppings: Drizzle Of Nut Butter, Coconut Shreds, Cacao Nibs, Pecans. Directions: Place all ingredients into a mason jar and mix well to combine. Place in the refrigerator for 30 minutes up to 8 hours.


HONEY APPLE PARFAIT Ingredients: 1 Gala Apple, Cut Into Quarters 1 Tsp Cinnamon 2 Tbsp Coconut Sugar ¼ Tsp Nutmeg ¼ Tsp Ginger 1/8 Tsp Cardamom 1 Tbsp Coconut Oil 2 Tbsp Water ½ Cup Greek Or Coconut Yogurt ½ Cup Purely Elizabeth Original Granola 1 Tbsp Creamy Peanut Butter Directions: In a small bowl combine the apples, cinnamon, coconut sugar, spices and coconut oil. Mix until well combined. Heat a small saucepan over medium-low heat and add the apple mixture and water and cook for 7-10 minutes or until sauce begins to thicken and apples soften. Remove from heat. Begin making your layers by spooning 1/3 of the apple mixture on the bottom of the mason jar. Top with a sprinkle of granola, followed by yogurt. Repeat the process a second time. Top the second yogurt layer with more apple mixture, granola and a spoonful of creamy peanut butter. Enjoy!


Creamy Carrot cake smoothie Ingredients: 3 Whole Carrots, Peeled And Chopped 1 Gala Apple, Peeled And Chopped 1 Ripe Banana 1 Scoop Collagen 1 ½ Cups Coconut Milk, Unsweetened 2 Tbsp Maple Syrup ½ Tbsp Fresh Ginger, Grated ½ Tsp Cinnamon Dash Nutmeg Optional Toppings: Purely Elizabeth Original Granola Carrot Shreds Coconut Shreds Directions: Place all the ingredients into a blender, blend until smooth, then blend for an additional 30 seconds. Pour into a serving glass, finish with toppings, and enjoy!


Peanut butter & jelly oatmeal Ingredients: 1 Mixed Berry Superfood Oat Cup 1 Cup Of Smashed Berries And Extra For Topping 1 Banana, Caramelized Peanut Butter Or Nut Butter Of Choice To Drizzle Directions: Make oatmeal cup as directed on package and mix in smashed berry juice. Add to a bowl if desired. Top with remaining berries, peanut butter drizzle, and caramelized bananas.


SPICED PEAR OATMEAL Ingredients: 1 Cup Purely Elizabeth Original Superfood Oatmeal 2 Cup Almond Milk 1 Tsp Cinnamon, Separated 4 Tbsp Honey, Separated 1 Pear (Half Sliced And Half Diced) 2 Tbsp Crushed Walnuts Directions: Preheat the oven to 350 F and prepare a dish or baking pan with non-stick spray. Add the diced and sliced pears and drizzle with 2 tbsp honey and sprinkle with 1⁄2 tsp cinnamon. Bake for 8-10 minutes and tender. Meanwhile, add the oatmeal, milk, walnuts, remaining cinnamon and honey to a small pot over medium-high heat. Cook the oats until tender. Stir in the diced pears and serve. Top oatmeal with pear slices.


S’mores oatmeal Ingredients: 1 Dark Chocolate Chunk Oatmeal Cup ½ Cup Almond Milk Boiling 1 Tbsp Maple Syrup 1 Graham Cracker, Crushed 1 Tbsp Melted Chocolate Chips ⅓ Cup Greek Yogurt Directions: Stir the almond milk and maple syrup into the cup until combined. In a jar, layer the oatmeal with crushed graham cracker, melted chocolate and greek yogurt. Top with more crackers if desired. Serve.


MIXED BERRY CHEESECAKE OATMEAL Ingredients: 1 Mixed Berry Oatmeal Cup ½ Cup Almond Milk 1 Tbsp Honey ¼ Cup Greek Yogurtt 1 Strawberry, Diced 3 Raspberries Directions: Stir the almond milk, honey, and 1 tbsp of yogurt in the oatmeal cup until combined. In a jar, layer the oatmeal, yogurt, and berries. Top with more berries and enjoy!


Mint & Matcha Overnight Oats Ingredients: 1 Original Superfood Oat Cup 2/3 Cup Coconut Milk 1/2 Tsp Matcha Powder 1 Tsp Fresh Mint, Finely Chopped 1-3 Tsp Maple Syrup, Or To Taste Fresh mint Raspberries Coconut Chips Directions: Combine all ingredients in the Superfood Oat Cup (or a small container) and mix well. Let sit in the fridge for at least 4 hours, preferably overnight. Take out of fridge, top, and enjoy!


Tropical Yogurt Bowl Ingredients: 2 ¼ Cups Purely Elizabeth Original Granola 1 Cup Greek Yogurt 1 Kiwi, Sliced 1/4 Cup Pineapple Sliced Into Small Pieces Drizzle Of Honey To Top Directions: Add 1 cup of greek yogurt to bowl and top with fruit, granola, and a drizzle of honey.


Key Lime Chia Pudding Ingredients: Chia Pudding: 2 Tbsp Chia Seeds ½ Cup Coconut Milk 1 Tbsp Honey Zest Of Half A Key Lime Yogurt Layer: ½ Cup Greek Yogurt 1 Tbsp Honey ½ Tsp Matcha Powder Juice Of 1 Key Lime Zest Of Half Key Lime Toppings: Purely Elizabeth Original Granola Honey Drizzle Lime Slices Directions: In a jar or container with a lid, stir together the chia pudding ingredients. Chill for 2 hours. Once the chia pudding is ready, stir together the yogurt layer ingredients and place it into a serving bowl with the chia pudding. Top with a drizzle of honey, granola, and lime slices. Enjoy!


STRAWberries and cream smoothie bowl Ingredients: Strawberry Smoothie 1 banana, frozen 1 cup strawberries, frozen 2 tsp pitaya powder ¼ cup almond milk Banana Smoothie 2 bananas, frozen ¼ cup almond milk 1 tsp vanilla extract Toppings Raspberries Strawberries Purely Elizabeth Original Granola Bee pollen Directions: Blend both smoothies separately until smooth. Pour the strawberry smoothie in half of a serving bowl and then pour the banana smoothie in the other half of the bowl letting the smoothies run together. Use a spoon to swirl the smoothies together. Finish with toppings and serve!


Thin mint overnight oats Ingredients: 1 Purely Elizabeth Original Superfood Oat Cup 2/3 Cup Non-Dairy Milk 1/2 Tsp Cacao Powder 1 Tsp Fresh Mint, Finely Chopped 1-3 Tsp Maple Syrup, Or To Taste Toppings Fresh Mint Dark Chocolate Chips Purely Elizabeth Original Granola Thin Mints Directions: Combine all ingredients in the Superfood Oat Cup and mix well. Let sit in the fridge for at least 30 minutes, or overnight. Top as desired!


Coconut Cream Pie Overnight Oats Ingredients: 1 Cup Purely Elizabeth Vanilla Pecan Collagen Protein Oats 2 Tsp Chia Seeds ½ Cup Coconut Yogurt + More For Layering If Desired 2 Tbsp Maple Syrup 3 Tbsp Toasted Coconut Shreds 2 Tbsp Chopped Pecans 1 Cup Coconut Milk Toppings Toasted Coconut Shreds Pecans Directions: In a bowl, stir together all the ingredients until well blended. Cover and chill for at least an hour or up to two days. Before serving the oats, add in the coconut milk if needed. Serve overnight oats with yogurt and toppings.


Pumpkin Smoothie BOWL Ingredients: 200 Ml Almond Milk 1 Frozen Banana 1 Frozen Zucchini 1/2 Cup Ice 2/3 Cup Pumpkin Puree 1 Tsp Pumpkin Pie Spice 1/2 Tsp Cinnamon Optional: 1 Scoop Vanilla Protein Powder Toppings: Purely Elizabeth Original Granola Pumpkin Seeds Coconut Flakes Drizzle Of Nut Butter Directions: Add everything to a high-speed blender and blend until reaches thick and creamy consistency. Add toppings and enjoy!


Vanilla Pecan Collagen Banana Fosters Oats Ingredients: 1 Cup Of Purely Elizabeth Vanilla Pecan Collagen Protein Oats 1 Large Banana 1 Tbsp Maple Syrup 1 Tbsp Coconut Sugar Handful Of Pecans Directions: Heat a cast iron skillet (or something that is not non-stick) to medium heat. Once warm add coconut sugar. Peel and slice banana in half, lengthwise. Place bananas on skillet and cook until both sides are golden brown and caramelized. Once bananas are close to done, prep oatmeal per oatmeal cup instructions. Once oatmeal is cooked, top with bananas, nut butter, pecans and maple syrup.
