A guide to your daily dose of colorful superfoods

That’s right, those crazy rainbow bagels and sprinkled lattes all over instagram were the very inspiration for our new line of vibrant oat cups! However, it wouldn’t be “Purely Elizabeth” if we added artificial food dyes and flavors. That’s why these oatmeals get their colorful hues from an array of superfoods.

Our three flavors - Raspberry Pitaya, Blueberry Lemon and Coconut Turmeric, all start with a base of gluten-free oats, quinoa, flax + chia, lightly sweetened with coconut sugar and beautified by vibrant superfood powders. Each single serve cup comes with a topper of our Original Ancient Grain Granola for the perfect combination of oats and crunch. PITAYA

Also called dragon fruit, pitaya is a tropical fruit with a variety of health benefits. Jam-packed with flavonoids and containing more Vitamin C than a carrot, it’s a flu-fighting, immune- boosting machine! It also ranks high on the antioxidant list, which helps kick free radicals to the curb. Even more support comes from vitamins B1, B2, B3, calcium, phosphorus, iron, protein, niacin, and fiber. In addition to being an immune booster it’s also a digestive aid, diabetes preventer, hearthealthy, anti-aging and oh wait – the most beautiful shade of pink you’ve ever seen!

PITAYA POWER: I love Pitaya Plus Frozen Pitaya Packets. Blend with banana/fruit/mix-ins of your choice and a splash of coconut milk for a taste of tropical heaven. Dragon fruit smoothie bowls are the new acai!

BLUE SPIRULINA

This blue-green algae is a freshwater plant that is now one of the most researched alongside its cousin chlorella. In comparison to chlorella, spirulina has a higher percentage of protein and iron, beta-carotene, as well as all eight essential amino acids – zinc, calcium, vitamins B1, B2, B3, B6, and B12. It is easier on the digestive system than other types of blue-green algae and also offers the highest level of gamma-linolenic acid (GLA), a “good fat” that is vital for the health and function of the brain, heart, and other body organs and systems. Blue is best known to be a calming color, so just one look at our Blueberry Lemon Vibrant Oats will take you to tranquility.

BLUE BOOSTER: An idea I found from Bon Appetit, blue spirulina makes an amazing #mermaidsalad.

For a savory twist, combine spirulina with equal parts fresh lemon juice, olive oil and season with salt and pepper for a punchy vinaigrette.

TURMERIC

Widely considered the most effective nutritional supplement in existence, turmeric contains bioactive compounds with powerful medicinal properties. One of these compounds is called curcumin, a very strong antioxidant with anti-inflammatory effects. It helps to fight chronic inflammation which is of vital importance in preventing and treating chronic disease. Curcumin also delivers a one-two punch against free radicals – blocking them directly and stimulating the body’s own antioxidant capacities.
