Key Food Facts: Covid-19 Fuels Hunger: Nearly 690 million people are hungry, up 10 million since 2019. The COVID-19 pandemic could add between 83-132 million people to this number, depending on the economic growth scenario.
Time for Action: A steady increase in hunger since 2014 together with rising obesity, clearly indicates the need to accelerate and scale up actions to strengthen food systems and protect people’s livelihoods.
A Hungry Planet: Over 2 billion people do not have regular access to safe, nutritious and sufficient food. The global population is expected to reach almost 10 billion by 2050. (Food and Agriculture Organization of the United Nation)

Greetings, friends, colleagues, and supporters, Thank you for participating in our World Food Day 2020 program, as part of the United Nation’s annual global World Food celebration. This is an exciting time to highlight the work PVAMU does around food. We planned this interactive virtual program to ensure that we live up to this year’s theme: Grow. Nourish. Sustain. Together. Although the pandemic forced us to make some changes, the virtual format has worked to our advantage as we’ve been able to assemble an all-star cast of speakers and presenters from all over the world literally! We’ve planned an interactive program with an international flair. This interactive celebration includes multiple break-out sessions, an interactive program for students, educators, and industry professionals. We’re excited to present a compilation of speakers, including some of our subject-matter experts, two USDA representatives, and an international keynote speaker, the Former Deputy Director-General, Agril Extension, Indian Council of Agricultural Research (ICAR). The Nobel Peace Prize was recently awarded to the United Nations World Food Program for its global fight against hunger and its work during the pandemic, we are pleased to be a part of this year’s World Food Day celebration. Enjoy the program! Mahta Moussavi, Ph.D., is currently a postdoctoral researcher in Cooperative Agricultural Research Center (CARC) at PVAMU. Mahta earned her Ph.D. in Food Science from the University of Newcastle, Australia in 2012. Subsequently, she conducted her postdoctoral research at the University of California-Davis in the area of microbial food safety. She joined PVAMU in 2017. Her research focus is post-harvest handling and safety of fruits and vegetables.

Program Speakers Gerard D’Souza, Ph.D., is the College of Agriculture and Human Sciences (CAHS) Dean and Director of Land-Grant Programs. D’Souza assumed this role on July 1, 2018 after serving as Director of the Division of Resource Economics and Management at West Virginia University. He completed his Ph.D. at Mississippi State University and was a Fulbright Scholar in Paraguay, a visiting scholar in Costa Rica and at the Wallace Institute, Greenbelt, MD. D’Souza had sabbatical appointments at universities in Mexico, Puerto Rico, and the US Virgin Islands. His research emphasizes sustainable development with an emphasis on the role of niche agricultural products within the context of natural, financial, and human capital development. Dr. D’Souza acknowledges that taking the college to the next level will require strategy, dedication, investment, and a cutting-edge learning environment for students.
The Honorable Mayor David Allen serves as Mayor/CEO of Prairie View, Texas. He holds a bachelor’s and a master’s degree from Prairie View A&M University and is a U.S. Army veteran. Mayor Allen has used his accounting background and expertise to bring more than $600 million in new economic development to the city of Prairie View. He is a champion for civil rights and a life-long public servant working with various non-profit organizations, including the Los Angeles NAACP, 100 Black Men of Los Angeles, PVAMU National Alumni Association, and countless others. David and his wife have three children.
Kwaku Addo, Ph.D., serves as Associate Dean for Academic Programs in the College of Agriculture and Human Sciences at Prairie View A&M University. He’s also a Full Professor in the Human Nutrition and Foods Program, where he advises and teaches several undergraduate classes. As Associate Dean, Addo leads the college’s academic unit, including oversight of academic programs, faculty review, curricula development, implementation, budgeting, facilitation of innovation, and supporting students, faculty, and staff’s professional development. A native of Ghana, West Africa, Addo holds a Bachelor’s degree in Biochemistry from Kwame Nkrumah University of Science and Technology in Kumasi, Ghana, and a Master’s degree in Biochemistry and Bacteriology from the University of Idaho. His doctorate in Food Science and Human Nutrition is from Washington State University.

Pam Miller serves as Administrator of the U.S. Department of Agriculture’s (USDA) Food and Nutrition Service (FNS). Miller has served as the Senior Associate Administrator for policy at FNS. She worked on a wide range of policies promoting self-sufficiency, program integrity, and instilling public confidence in USDA’s oversight of the 15 nutrition programs. Before joining USDA, Pam worked for the U.S. House of Representatives for 20 years. During her career, she crafted three farm bills focused on nutrition and specialty crop issues. At the House Agriculture Appropriations Subcommittee, where she served as the lead professional staff for FNS, as well as USDA’s Agricultural Marketing Service, and Food Safety and Inspection Service accounts developing annual spending bills. Her experience gives her a unique perspective on implementing nutrition policy at USDA. Miller received her degree in Agricultural Communications from Texas Tech University.
David Tuckwiller is the Deputy Administrator of the Agricultural Marketing Service’s (AMS) Commodity Procurement Program. He manages more than $3 billion annually in purchases of meat, poultry, fruit, vegetables, dairy, grains, and oilseed commodities to support American agriculture and provide safe and nutritious food for various nutrition and International food aid programs. Tuckwiller is the Executive Director of the Web-Based Supply Chain Management System (WBSCM), which manages all supply chain aspects of Federal agricultural support, nutrition, and food aid programs. Tuckwiller holds a degree in Accounting from Liberty University, is a native of Stafford, Virginia, and is married with three children.

Breakout session facilitators Peter Ampim, Ph.D., is an Assistant Professor in the Department of Agriculture, Nutrition and Human Ecology of the College of Agriculture and Human Sciences at Prairie View A&M University. Ampim teaches Plant and Soil Science courses and currently conducts research on specialty crops, including specialty leafy greens, microgreens and small fruits, sustainable organic crop production and bioenergy crop production using reclaimed produced water. He is also exploring LED light applications for improving the growth and nutritional quality of leafy greens. Janet Antwi, Ph.D., serves as an assistant professor in the Human Nutrition and Food Program in the College of Agriculture and Human Sciences at Prairie View A&M University, Texas. She’s a Registered Dietitian with a passion for teaching and researching community and clinical settings and has worked nationally and internationally for the past nine years in practice and research with hard-to-reach populations and underprivileged communities. Antwi holds a bachelor’s degree in Pharmacy from Kwame Nkrumah University of Science and Technology (Kumasi, Ghana), a master’s in International Healthcare Management Economics and Policy from SDA Bocconi School of Management (Milan, Italy), and a Doctorate of Philosophy in Nutrition and Dietetics from Florida International University (Miami, FL). Her hobbies are reading, writing, listening to music and singing, sightseeing, and cooking. Jacklyn Sanders is a community nutritionist who loves helping others and serving her community. She earned a Bachelor of Science degree in Nutrition and Dietetics from the University of Arkansas at Pine Bluff and a Master of Science degree in Human Sciences from Stephen F. Austin State University in Nacogdoches, TX. At Prairie View A&M University, Sanders serves as a lecturer, academic adviser, the primary adviser for the Kappa Omicron Nu Honor Society, advisor for the College of Agriculture and Human Sciences (CAHS) Ambassadors, and a secondary advisor for the Student Academy of Nutrition and Dietetics (SAND) Club. She also coordinates summer programs such as Ag Discovery and the Research Extension Apprentice Program and serves as a coordinator for the Summer Bridge Jump Start Program. Sanders holds a has worked with several programs over the years and has helped develop grants for obesity prevention and health and wellness for individuals and families. She’s a proud member of Alpha Kappa Alpha Sorority, Inc. Joyce Osborne is a Program Specialist with Prairie View A&M University’s College of Agriculture and Human Science’s Cooperative Extension Program. She has more than 20 years of experience in the field of nutrition/health education and promotion. She holds two Bachelor of Science degrees in Human Nutrition and dietetics, and a Master of Education degree in Allied Health Education and Administration through a dual program offered by the University of Houston and Baylor College of Medicine, Department of Community Medicine, Division of Allied Health Sciences. Osborne is a Registered Dietitian (RD), Licensed Dietitian (LD), and Certified Health Education Specialist (CHES) and enjoys working with diverse communities.

Noel M. Estwick, Ph.D., is an assistant professor of Agribusiness in the Prairie View A&M University’s College of Agriculture and Human Sciences’ Nutrition and Human Ecology program. He holds a Ph.D. in Urban Planning and Environmental Policy from Texas Southern University. His research interests include improving the emergency management process, especially among underserved populations and persons with functional and access needs. In 2017, he participated in the United States Department of Agriculture National Institute of Food and Agriculture (USDA/ NIFA) Division of Family and Consumer Sciences Visiting Scholar Program. The program advances collaboration between NIFA and its Land-Grant University (LGU) partners. As a Visiting Scholar, Estwick explored the needs for increasing participation of 1890 LGUs in the Extension Disaster Education Network (EDEN) and now leads the 1890EDEN Advisory Group.
Horace D. Hodge serves as Prairie View A&M University’s USDA Liaison for the USDA Office of Partnerships & Pubic Engagement. Hodge earned a Bachelor’s degree from PVAMU in Agriculture Education, and went on to a position with the Soil Conservation Service which is now called the Natural Resources Conservation Service. Hodge returned to “The Hill” in 1989 as the USDA/1890 Program Liaison and maintains that position today where he advises CAHS students to participate in exclusive learning opportunities for students majoring in agriculture and related disciplines. In December, 2020, Hodge will mark 44 years of federal service. He has three daughters, Shameka, NaKeatha and Benita. Troy Rountree began his produce career 30 years ago selling tomatoes for DiMare Fresh, and is now General Manager of DiMare Houston. The fresh produce veteran graduated from Texas A&M University in Agriculture with the Agribusiness option, and was part of the Texas A&M Corps of Cadets. In his free time, Troy loves fishing, as well as spending time with his family in Houston. Kimberly Ratcliff is the founder and President of the 100 Ranchers Inc., a Community-Based Organization (CBO) founded in 2008 to serve agricultural producers dedicated to working together to increase their bottom line and improve their livelihood by producing safe, clean, efficient, and marketable products. Ms. Ratcliff is the manager of Caney Creek Ranch, a diversified ranching operation located in East Central Texas, started by her parents Wesley and Marie Ratcliff. She earned a Bachelor’s degree from Long Island University, a Ranch Management Diploma from Texas Christian University, and a graduate of Texas A&M’s Texas Agriculture Lifetime Leadership Program. She’s the recipient of numerous agriculture-related awards, including Rancher of the Year by the following organizations: Landowners Association, Minority Landowners Magazine, and Houston Livestock Show and Rodeo. Ms. Ratcliff serves on the following boards: Independent Cattlemen’s Association, Capital Farm Credit Advisory Committee, USDA Advisory Committee for Minority Farmers and Ranchers, PVAMU’s CAHS’s Agriculture Advisory Committee, Socially Disadvantage Farmers Ranchers Policy GROW, NOURISH, SUSTAIN. KEYNOTE Speaker K.D. Kokate, Ph.D., has a proven record of more than three decades of expertise in agricultural science, education, and extension for rural, agrarian, and community development. His experience comprises different capacities such as Professor, Head of the Department, Director of Extension Education and In-charge Dean, Faculty of Agriculture, and Director of Research in two State Agricultural Universities with the Land Grant System concept. Kokate has worked in two National Institutes viz., Central Arid Zone Research Institute, Jodhpur, and Central Potato Research Institute, Shimla of Indian Council of Agricultural Research (ICAR) as Scientist and Senior Scientist, respectively. Subsequently, based on the recommendation of the Agriculture Scientist Recruitment Board (ASRB), ICAR, he was selected and appointed by the President, ICAR, New Delhi as Deputy Director General (Agricultural Extension) at the national level. Thus, he has the experience of managing one of the largest and unique technology application systems, with about 10,000 staff worldwide with the expenditure of Rs. 2374.20 crore ($356.75 million). He introduced many new programs and impactful initiatives, notably an innovative “Farmer FIRST Program for Enriching Knowledge and Integrating Technology” implemented across the country. Further, he significantly contributed to making reforms in technology application at the grass-root level, market linkages, synergy and partnership with Key Stakeholders, ICT application for Knowledge Management via Mobile-based Farmer Advisory and e-Linkage connectivity across the country, contingent crop planning for drought mitigation, and advisory to 1.3 million farmers, Organizing programs for sustaining crop yields and technologies related to Climate Resilient Agriculture. He was instrumental in establishing Agricultural Science Centers across the country, and they generated receipts to the tune of Rs. 158.60 crore ($ 23.84 million) from the sale of various technology products. Kokate has vast international exposure. He was invited as Speaker/Expert by various international organizations, including FAO, CGIAR, GFAR, CAPSA, UN-ESCAP, and Land Grant Universities of USA. The global initiatives include First Global Conference on Women in Agriculture to address Gender in Agriculture Partnership (GAP); International Conference on Agricultural Knowledge Management; Partnership with Iowa State University, USA; Prairie View A & M University, Texas; Alcorn State University, Mississippi, USA; initiating the process of establishing Farm Science Centers in Africa under Indo-Africa forum and Farmers Exchange visit from ASEAN countries to India and vice-versa. In 2013. He is the recipient of ‘Doctor of Science’ (Honoris Causa) Degree from the Chancellor of Orissa University of Agriculture and Technology, Bhubaneswar, and the prestigious ‘Dr. M.S. Randhawa Memorial Award’ from the National Academy of Agricultural Sciences (NAAS), New Delhi, India for outstanding contribution in Agricultural Administration, Transfer of Technology and Social Sciences for Biennium 2011-2012. Kokate’s innovative initiatives and programs are a rare combination of global, national, and local perspective, highly stakeholder-oriented, farmer specific, and youth-centric.
