1 Score the lamb fat several times and season. Salt & Pepper. 2 Place the lamb fat side down into a cold pan on a medium heat without oil for 6-8 mins or until golden brown 3 Pour away any excess fat & seal the lamb on all sides. Transfer to a pre heated oven at 220 degrees for 15-20 mins, turning occasionally (for cooked medium)
4 Remove the lamb from oven and rest for 10 mins 5 For the sauce; pour any excess fat from lamb pan, add pancetta & crisp over a medium heat. Deglaze with lamb stock for approx. 5 mins. Add cherry tomatoes & cooked for a further 2 mins. 6 Finally add the broad beans, mint & a knob of butter to the tomatoes & stock. 7 To serve, blanch the cavolo nero for 2-3 mins in boiling salted water & add to warm pan seasoning with salt & pepper & a knob of butter. 8 Deep fry the crispy lamb belly stick for 2-3 mins just before plating. 9 Spoon the sauce onto a plate and top with cavolo nero. Thinly slice the lamb and lay on top. Use any resting juices to spoon over the lamb.

KEEPING ACTIVE Start / Finish: This circular walk is around Caldicot just south of the confluence of the River Wye with the River Severn (at Chepstow). It starts and ends at Caldicot’s lovely modern slate cross in the centre. Public Transport: The nearest railway station is at Caldicot. There are buses to Caldicot centre from Newport and Chepstow. Please check Traveline and timetables before you embark on your journey. Parking: There is a car park in Caldicot and some street parking. O/S Map: Explorer 154. | Distance: 7 miles. Shorter 5 mile ‘loop’. Time: Allow all day and spend some time beside this huge River Estuary or visit The Tunnel Centre and Caldicot Castle en route. Refreshments: Stock up on food in the Caldicot Centre. There are a few handy shops at Portskewett too. Maybe take a picnic to enjoy on the way or have a coffee in Caldicot on your return. Terrain: Mainly flat and fairly level but there are steps and gates so parts are unsuitable for pushchairs and wheelchairs. History: Caldicot has a wonderful Medieval Castle to explore along with its surrounding Country Park. In total contrast there are extensive views across the estuary and you will go beneath the New Severn Bridge (opened 1996) downstream of the Severn Bridge (opened 1966) and over the Severn Railway Tunnel. The route passes two historic Churches and the ruins of an old chapel. The Tunnel Centre will provide an insight into the history of the Severn railway Tunnel and you can see the Victorian pumping station that keeps the tunnel dry. There are also cottages that once belonged to the local steelworkers. The traditional fishing with nets is practiced by Lave Fisherman nearby and Ferries used to run from Black Rock to Bristol.

Cross the area of grass bordered by ‘earthwork’ banks reminiscent of a Roman Fort and you come across the remains of the Holy Trinity (HT) Chapel, worth studying - it is where the early monks landed after crossing the Bristol Channel.

Cross over to the bollards and follow the lane opposite to the B4245. Turn right to the roundabout and left into the Caldicot Castle Country Park. 9: The walk goes straight through to St. Mary’s Church, down the footpath left of the Church and then left along the footpath beyond. 10: Turn left again to the Slate Cross in Caldicot Centre where walk ends.
