Wickedly Welsh Chocolate to the rescue. This amazing but easy chocolate ganache uses ingredients you’ll already have in your cupboard and takes about 20 minutes to prepare. It’s also fool proof! Firstly you’ll need some delicious chocolate. Buy your favourite chocolate, dark preferably but milk is fine. Remember it’s your treat so use the chocolate you like. Hopefully it’ll be our Wickedly Welsh Devilishly Dark or Moreish Milk. For truffles or a pudding you’ll need about 150g which should give you about 12 truffles or two puddings. For coating a cake I’d use three times as much. I’m sure you won’t waste any leftovers! 1 Grab a suitably sized mixing bowl (you’ll need two of these) and a spatula. Use a thin plastic bowl if possible and avoid glass or earthenware, they get hot in the microwave and make it very difficult to control the temperature of your chocolate. 2 Break your bars of chocolate into small chunks and pop into the microwave on full power.

Take out and stir every 20 seconds until the chocolate is melted and spills off the spatula at the consistency of runny custard. If you have a temperature probe you’re looking for 40°C. Now pop your cream or coconut milk into the microwave and warm until its just above room temperature, 28°C. You just want to take the chill off it. This next step is important! Add half the chocolate to the cream not the other way around! Stir it using a smooth motion until it stops looking like lumpy drinking chocolate and looks like shiny runny chocolate. Now add your flavouring and you can be as adventurous as you like. Alcohol, honey, jam, fruit zest, chilli, cardamom, sea salt, you’re only limited by your imagination but have fun and taste until you get the desired intensity, don’t be shy though we believe in real but punchy flavours. Now add the rest of the chocolate and mix it all together thoroughly. 3 If you’re making truffles allow the mix to set for about an hour in the coolest room in the house, about 12°C is perfect but don’t worry too much. When it’s properly set divide and roll the mix into little balls about 20mm in diameter. Try to use the inside of your fingers and avoid using the palm of your hand when you’re doing this as its the warmest part of your hand and will melt the ganache quite quickly. Roll or dust the truffles in cocoa powder and allow to cool again. 4 If you’re making a pudding divide the mix evenly between two espresso cups or ramekins. Decorate with fresh fruit or simply dust with icing sugar. 5 If you’re topping a cake you’ll need to be quick. Pour it over the cake and smooth it using a long thin metal spatula. Don’t over work it though!

Visit ‘Traveline’ to check your journey details and current timetables. Ask for ‘Town Hall’. Parking: There is a large car park behind the Town Hall with WC. O/S Map: Explorer Map 151 Distances: 7.5 miles or 3 miles. Time: Allow all day for main walk or half day for shorter route. Refreshments: There are cafes, shops, restaurants and pubs in Cowbridge with plenty of picnic spots along the way. Terrain: If River Thaw is in flood please do not attempt this walk. The route is unsuitable for pushchairs and wheelchairs but Cowbridge is ‘wheel friendly’. There are numerous gates and stiles and this walk is recommended only for those equipped with sturdy waterproof boots as it can be very muddy in places. There are a few sharp gradients with the walk peaking at just over 100 metres.History: Cowbridge is steeped in history and was once a gated town. The walk takes you past Penllyn Castle which stands high on a ridge with a commanding view across the Thaw and Ewenny Valleys. Built in 1135, the original tower and two of its Norman walls remain. In Tudor times, the castle was considerable altered with further major work in late 18th century and mid 19th century. For the past half century the castle has been privately owned by the same family. There is no public access but good views can be obtained from the public right of way. Please respect this ‘privacy’ and stay on the path. Note: This walk has been totally re-written and modified but is based upon one of the ‘Valeway Walks’. www.visitthevale.com/walk

1: Walk starts at Cowbridge Town Hall. Walk down right side of car park at back to footpath alongside River Thaw. Cross bridge and follow path left, past allotments and beneath A48 viaduct. 2: Follow path past school to kiss-gate leading onto board walk. Follow well marked path across water meadows passing through series of gates and board walks, across ‘stiled’ footbridges, over a charming set of stepping stones and through traditionally ‘layered’ hedge to open fields. Walk on right, using side gates to follow this often muddy track between barns of Newton House Farm. 3: Beyond farm, turn left down lane for 150 yards, alongside brook in hamlet of Newton. Pass Newton House and take

track on right, opposite lodge. (Note: Short walk goes straight on – see map). Shortly cross double stile on left. Walk up field with hedge on right to stile in top right corner. Continue with hedge on left. Cross stile and walk through area of brambles to another double stile, down steps into lane at Pen y lan. Walk straight ahead to stile then across next field to stile in hedge. 4: You are now in tiny hamlet of Llansannor. Turn right then left up Court Drive that leads through gates to Grade 1 listed Court, dating from 1500. 5: St.Senwyr Church with its old sundial worth a look. Notice date on oak door. Walk down beautiful tree-lined drive to road. Turn left passing Church Farm then just past ‘The Old Mill’ take track on left that crosses narrower River Thaw. 6: You are now on route of ‘Valeways Millennium Heritage Trail’ for two miles. On right is long limestone scar which has been quarried in places. It is also a ‘spring-line’. In due course follow path around a property then resume walk on bridleway. Fork right up hillside, over stile and along old track, contouring around field. Follow left hedge to stile, past barn to stile into lane. 7: Turn left. In 75 yards, take right fork up hill. At brow you are at maximum height of walk (108 metres above sealevel). At junction turn right into village of Penllyn and walk through hamlet to another junction where you turn left. 8: Walk to gateway leading to Penllyn Castle, just past the Chapel. After short distance, footpath goes back right to kissgate through wall. Please respect ‘private’ signs. (You will see Castle, dating from 1135, over boundary wall shortly). Turn left and walk across corner to woodland via gate near wall. Follow path across front of property and head towards ‘Beech Clump’. 9: Path continues down ridge towards large barns and viaduct. Go through two small gates and left up bridleway beside track. Keep to left as far as stables then find exit in corner of paddock beyond. Walk down steep steps and beneath viaduct into Cowbridge. 10: Cross Llantwit Major Road. Walk on down High Street, over River Thaw and up to Town Hall where walk ends.
