GETTING A MORTGAGE After the last recession, rules for obtaining a mortgage were tightened, but there are still some good deals to be had.

Method 1 Blanch the lasagne sheets in a large pan of boiling salted water for 1 minute, then plunge into iced water and leave to cool. Drain into a colander and lay out onto a chopping board. Cut into rectangles 10x12cm. Lay them on a large plate or a baking tray that has been lined with cling film and put into the fridge. 2 For the crab filling, place the bowl from the food processor in the freezer for about 30 minutes so that it is thoroughly chilled, then blitz the scallop meat for 3-4 minutes until it is very smooth (you may have to scrape the bowl down few times). 3 With the machine still running, slowly add ½ the double cream. Season with salt and cayenne pepper, then add the remainder of the cream and mix until combined. 4 Transfer to a mixing bowl and fold through the picked white crab meat, taste and adjust the seasoning if needed. Once checked, put into a piping bag 5 To assemble the cannelloni lay the eight pasta sheets on a lightly oiled surface and pipe a tube of the crab mix about a ¼ of the way across each of the pasta sheets.

6 Then gently roll up each cannelloni in a sausage shape so all of the filling is surrounded by the pasta. Rub each roll with a little olive oil and wrap individually with cling film tying knot at each end. 7 To make the beurre blanc, add the shallot, wine, stock and vinegar into a small pan and bring to the boil and reduce to almost nothing. Add the cream and bring back to the boil, turn the heat down low and add the butter cubes in gradually one at a time whilst whisking until all the butter has combined and the sauce has thickened slightly. 8 Adjust the seasoning, add the basil and chopped tomato and keep warm. 9 Put the cannelloni in a saucepan of simmering water 6 minutes. After the 6 minutes lift them gently out of the water using a slotted spoon to a tray and leave to rest for a minute. Once rested snip one end of each of the wrapped cannelloni with a pair of scissors and gently squeeze each one out. Lay two on each serving plate and spoon the beurre blanc generously over the top of them. 10 You can add a few picked herbs to the plate for garnish if you wish.

Start/Finish: This circular walk starts and ends at Underhill Car Park (see sketch-map) but you can start and finish at any point. Public Transport: The nearest railway station is at Swansea with a regular bus-service to Oystermouth Castle. Check timetables. Parking: There is a car park at Underhills Wood at start of walk. O/S Map: Explorer Map 164 Distance: 5 miles or 8 miles Time: Allow all day to explore and enjoy a picnic en route. Refreshments: There are lots of picnic opportunities. No shops early on in the route so it is best to take a picnic. Cafes near the pier. Terrain: There are no stiles but there are a number of short climbs. The views from Mumbles Hill are superb on a clear day. The sea-front is ‘wheel-friendly’ offering a long walk for those with pushchairs and wheelchairs. A 3 mile extension along the sea-front is mapped. History: ‘The Mumbles’ has a lighthouse but you cross the causeway at low tide entirely at your own risk. It is not part of the walk. There are three lifeboat stations along the route. The Town and 12th century Castle are at Oystermouth., so named because of the lucrative trade in oysters in the 19th and 20th centuries when the population went from715 to 16748. There are a number of display boards with historical information placed along the sea-front – well worth reading!
