My Father and Uncle are experts in the world of horticulture, so a fascination with gardening rubbed off on me from an early age. Combined with my love of cooking, I continue to be inspired by the incredible versatility of fresh herbs. These amazing plants can transform a simple sauce or dressing into something else a little bit more extraordinary!

Ingredients

B 1 x 130g salmon fillet B 120g tenderstem broccoli B 70g wild rocket B 1/4 fennel bulb B 75g pine nuts B Chive flowers (optional) B Olive oil B Salt and pepper B 1 x bottle 'A Little Bit Food Co. Fresh Parsley and Red Onion Dressing' OR a small amount of fresh parsley and red onion. Method 1 Heat the oven to 180Âş. Take a foil lined baking tray and drizzle with a little olive oil, place the salmon fillet onto the tray and sprinkle with salt and pepper. Pop into the oven for 12 mins until cooked through. Set aside to cool.

boil and add the broccoli. Cook for 3/4 minutes. Do not over cook as they are best when still retaining some of their crunch (this also preserves all their fabulous vitamins). When done drain and run under cold water to cool. 4 Finely slice the fennel bulb. Divide the rocket between two plates. Then arrange the broccoli and fennel on top. Flake the salmon with a fork and also arrange this on top of the salad. Sprinkle over the pine nuts. 5 Just before serving drizzle over some 'A Little Bit Food Co. Fresh Parsley and Red Onion Dressing' (make sure you shake the bottle well before pouring, to combine all the dressing's lovely ingredients!). If you'd like to create your own dressing, chop some fresh parsely and red onion together and mix with a small amount of olive oil. When all the ingredients are combined drizzle over the salad. 6 Finally top off with some chive flowers for a bit of added summer colour. Eat on its own or serve with some lovely fresh bread.

This serves towns along the ‘Cotswold Line’ with a number of local bus services. Please use Traveline and check local bus timetables. Parking: There is a car park in Station Road (fee payable). Some street parking available near the Church (avoid this area on a Sunday). O/S Map: Outdoor Leisure 45 | Distance: The main walk is 7 miles. Shorter Walk is 3 to 4 miles. | Time: Allow all day for the main walk as there is plenty to see along the way. Choose a day with good visibility to enjoy the views. Refreshments: Take a picnic to eat en-route. There are no shops after leaving Moreton-in-Marsh but the Garden Terrace café at Batsford Arboretum and Garden Centre is open all year round. Larger groups please telephone in advance - 01386 701974. Terrain: Please do not attempt the main walk unless you have a reasonable level of fitness. The outward walk involves a steady climb, totalling 500ft. There is some necessary lane walking. Strong shoes or boots recommended. Most paths are well maintained. Wheelchair users and pushchairs can explore Moreton-in-Marsh but best to avoid Market Day on Tuesday as streets are very busy. A shorter walk option is available and avoids climbing over the hill. The Arboretum, Café and Falconry Centre can still be visited from the shorter route, making it 4 miles.

Once through the gate, take the bridleway diagonally left across to the trees, turn left to follow the contours round the edge of the escarpment from which the springs issue northwards. After ½ mile, take the left fork in the paths into a woodland strip and follow this lovely old track for another ½ mile along the escarpment with views across Warwickshire. Notice Down’s Farm is on the left. Keep walking to the large gate across the track and take the footpath on the left just before it. 6 Cross the two fields with thehedge on the right. Notice Hill Farm on the right. Go through a short section of woodland to the lane. 7 Cross the lane to the footpath opposite, go left down the footpath marked ‘Heart of England Way’. This pretty woodland path drops down quite steeply with Batsford Park on the left. Go through a small gate into the hillside pasture and walk down to the lodge at the entrance to Batsford Arboretum and Garden centre. There is also a Bird of Prey Centre. 8 The walk continues across the next field to where the short walk joins from the left. 9 Keep walking southwards via a series of kiss-gates and footbridges to Hospital Road at Moreton-in-Marsh. 10 Walk down Corder’s Lane back to the Market Hall and retrace your steps back to the railway station if necessary.
