SERVES: 8 PeOPLE Ingredients for Dashi:
B 40g sliced fennel B 20g sliced fresh ginger B 30g sliced spring onion B 1 sliced red chilli B 60g dried shitake B 100g smoked bacon B 20g chopped fresh coriander B 4L water B 40g dried bonito flakes B Dark soy sauce B 1 lemongrass B Mirin sweet cooking wine B 1 clove garlic crushed B Juice of 1 lime B Ketchap manis B Rice wine vinegar B Sesame oil Method: 1 Take a heavy based pan over a medium heat, add a few tablespoons of sesame oil and then sweat fennel, garlic, mushrooms, chilli, bacon, lemongrass, ginger, spring onion and smoked bacon till browned nicely, deglaze the pan with the water, add the coriander and bonito and bring to the boil. 2 Add 4 tablespoons of dark soy sauce and remove from heat. Leave to infuse for around 6 hours. At this point its key to keep an eye on the flavours in the Dashi as each persons tastes differ, the longer you leave it the more potent certain flavours will become, heat from the chilli and smokiness from the bonito and bacon will become more prominent the longer you leave the infusion. 3 Season the broth with the lime juice, ketchap manis, sweet wine and vinegar until you are happy with the balance of sweet, sour and spice. Pass through a sieve and reserve for later. Ingredients for Avocado:
B 2 ripe avocado
B Natural yoghurt B Vitamin C powder/ascorbic acid (available from health stores) Method: 4 Halve and de-stone the avocados, remove the flesh with a spoon and blend with a few tablespoons of yoghurt, add a pinch of vitamin c powder and season with salt, place in a container for plating. Ingredients for Pickled Shemiji:
B White wine B White wine vinegar B Caster sugar B 1tsp coriander seeds B 1 star anise B 2 cloves B 1 cardamom pod B 2 packets Shemiji mushrooms Method: 5 Prepare the shemijis by removing them cleanly 1 inch from the base. Add 250ml of white wine, vinegar and water to a pan, add 250g sugar and spices and bring to the boil, pour over the mushrooms and cling film to help retain the heat and finish the cooking process. Ingredients for Green Strawberries
B Japanese mooli (radish) – thinly sliced
B Cornish Mackerel – 4 large fish, valley pin boned and filleted Plating: 6 Add a little oil to a non stick tray, place your mackerel fillets on skin side up and place in the oven at 180°C for 4/5 minutes, whilst in the oven, warm the strained dashi broth. Once the mackerel is cooked, remove from the oven and leave to rest whilst you assemble the plates. Finish the mackerel with a light seasoning of sea salt, and blowtorch until the skin becomes crispy.

Refreshments: Enjoy a picnic or eat at Leamington Spa before the walk or on your return. There are several supermarkets beside the canal between Warwick and Leamington Spa to stock up on supplies or to enjoy coffee. Terrain: The route is mainly flat with several flights of steps. Boots or strong shoes are recommended. Wheelchair users and pushchairs can enjoy exploring the town and parks at Leamington Spa and can go along the canal and back for a short distance in dry weather.
HISTORY: Plenty is written about Royal Leamington Spa. The walk passes through New Milverton to Old Milverton and it is the latter that has the history with the Manor House Farm, Church of St James and the defended setting in a loop of the River Avon. The route follows the Avon briefly with views across to ‘Guys Cliffe’ – a ruined mansion on the edge of Warwick. The walk ends on a two mile section of the Grand Union Canal with its canal boats and historic bridges. Please do not attempt this walk if the River Leam and Avon are in flood. 1 From Leamington Spa railway station (southern entrance) turn left then left again along Lower Avenue, beneath the railway arch and then left along Avenue Road to the northern side of the station (currently closed). Take the footpath ‘York Walk’ opposite the station approach leading to the park and River Leam. 2 Turn left along the promenade with the river on the right. Walk beneath the A452 passing the bowling green on the left (Victoria Parks).

Follow the path through the woodland strip into the open fields. Take the right fork. The walk crosses a series of fields, almost in a straight line, for one mile. The farmer has clearly marked the footpath through the crops. In the distance you will see the tall tower of St Mary’s Church in Warwick. Cross the bridge over the railway to reach Old Milverton Road. Turn right to the corner then left into the hamlet of Old Milverton, passing the conker tree with commemorative plaques at the entrance to the village. Pass several Estate Cottages and Church Farm before reaching St James Church with its ornate bell tower. 7 Follow the right of way through the churchyard, stopping to explore the Church. It was a many-sided project, economic, artistic and social, and it was successful in all these ways. Critics particularly admired the simple but elegant silverwork and jewellery which Ashbee designed.
The permanent display tells the story of artists, designers and craftspeople who have worked in the north Cotswolds in the last hundred years or so. There were, of course, many more than nine such people, but we have focused on a small number to give a feeling of individual lives. One or two of these people were born here, but mostly they came to the Cotswolds, drawn by the beauty of the place, feeling a kind of sympathy between the Cotswolds and their creative work. F. L. Griggs fell in love with Campden because it seemed to belong to the medieval dream-world of his imagination. The silversmith and industrial designer Robert Welch liked the small-town

Keep Warm and Well This Winter Getting ready for the cold weather – which can start as early as October – means that you’re more likely to keep warm and well. Winter isn’t everyone’s favourite season and there’s no doubt that the cold weather can be a worry for those of us in later life. As we get older, our bodies respond differently to the cold and this can leave us more vulnerable.

ith fuel costs rising, none of us want to pay more on our energy bills than we have to. However, saving money doesn’t mean we should use less than we need – it’s
important we have enough light and warmth to stay safe and comfortable at home. Using less energy while keeping your home comfortable doesn’t have to be difficult or expensive. There are simple things you can do that can save you energy and money:
