Hi everyone

So, we have reached the midway mark of the year- June.. you would wonder where the past five months have gone so quickly, teenagers are planning their summer as the holidays have begun, the exams are in full swing for more teenagers, and our smallies are cramming in last minute school tours and teddy bears picnics!!

Speaking of events we are busy here in the office planning our Connect Women in Business Awards, it’s all systems go for Friday June 16th we have a list of our finalists in this issue, and we will bring all the fun from the night and of course our winners in the July issue.

This month we speak to Sean Taaffe as he is launching his very own product Sean Taaffe Professional!

We have lots of cooking tips for this summer to try out with Mark Murphy from Dingle Cookery School. We have Nora's Slimming World with an All Day Muffin and Burger in a Bowl to keep you nice and slim this summer!

The summer months tend to see a notable change in our skincare needs and regimes. Many people will switch to a lighter facial moisturiser and change their body lotion to a richer alternative to help keep those limbs looking their best! The sunshine will also have us reaching for a sun protection factor, choosing the right one for your skin type is important for maximum skin protection. SPF is something we need to wear daily depending on sun exposure (we should really be applying this all year round) so it is important to ensure what we are putting on our skin isn’t doing more harm than good. You will find some excellent natural and organic sun protection products here in the healthstore, with very gentle, natural ingredients suitable for all the family. Protecting your skin from the sun and providing it with adequate after-sun care using ingredients such as aloe vera, shea butter etc will keep it looking and feeling its best without the need for excessive chemicals. Natural skincare products are made with ingredients which feed and benefit the skin. It is important to have a good after sun regime. Start with a cool bath or shower, removing any remaining suncream with a gentle natural soap or shower gel. Natural soap will moisturise the skin, whereas detergent based soaps strip the skin of its protective natural oils. Applying a rich chemical free body moisturiser which contains aloe vera can help stimulate collagen production and has natural anti-inflammatory properties. Including a good quality facial mist to your summer skincare regime will give your skin a burst of freshness and a boost of hydration during the day. During the warm summer months our bodies lose approximately 40% more water than in winter, leaving our skin dull and dehydrated. The most effective way to replace this is by drinking lots of water. Lock in hydration by eating fruits and vegetables that help skin cells to hold onto water, such as those rich in vitamins C and B. In addition, supplementing with skincare formulas which contain natural skin boosting ingredients such as COLLAGEN, SILICA and VITAMIN C will also help to improve the elasticity, condition and overall appearance of your skin.

The Sean Taaffe Professional range will be launched in India this Autumn.

We caught up with the man behind the brand, Sean Taaffe, for an insight into his inspiration behind creating the new range and an exclusive reveal and what’s to come.

What motivated you to create your own brand range and tell us about it?

I always had an interest in the products we use and how they can make our job so much easier and also therefore make our clients hair regime easier too .

With over 3 decades in the hair industry, the multi award winning Sean Taaffe Group, know everything about how to create and maintain beautiful hair. So it’s fantastic news, that they have now launched their own brand retail range of products - so we can enjoy a good hair day - everyday - from the comfort of our own homes!

The first product in the Sean Taaffe Professional range is the ST Moisture Spray Leave-In Conditioner, and is available now from selected retailers nationwide, in salon and online on www.seantaaffe.com. Priced at €19.95, the ST Moisture Spray Leave-In Conditioner is a game changer in the management, styling and condition of hair. It is the result of 3 years of extensive development, testing and research, advanced hair science and also harvesting the knowledge of 35 years practical salon experience. Summer Recipes

Summer is definitely here and while the sun is shining why not eat outdoors? Having any meal with the sun on our backs always seems to taste better, maybe it is the novelty of it for us. I have two recipes here which are easy to make, perfect to share with your family or if you are planning to have a few friends over. Both the Lamb Koftas and Ham Hock salad will make any summer meal unforgettable. For all our upcoming classes and more delicious recipes check out our website www.dinglecookeryschool.com

Pitta Bread filled with Lamb Koftas and Mint Yogurt

INGREDIENTS

FOR THE LAMB KOFTAS

• 500g lamb mince

• 1 onion finely diced

• 1 clove of garlic crushed

• 2 tsp. cumin toasted and ground

• 1 tsp. chili flakes

• ½ tsp. nutmeg grated

• 1 egg

• small bunch of flat leaf parsley finely chopped

• small bunch of mint leaves finely chopped

• salt and pepper

• ½ lemon juiced

FOR THE YOGURT

• 1 garlic crushed

• handful of mint leaves chopped finely

• 200ml natural yogurt

• ½ lemon juiced

• To serve

• 1 pitta bread per person

• some pickled red onion or other pickles

• handful of salad leaves

METHOD

FOR THE KOFTAS

1. Add a little oil to a pan over medium heat, then add the onions and pinch of salt. Let this cook for about 5 minutes. Add the garlic and cook for a further 3 minutes. Place this a bowl and add in the spices. Once this has cooled add this to the lamb mince along with an egg. Add the chopped herbs, salt, pepper and lemon juice, mix this really well. To check if the seasoning is to your liking, place a pan on over medium to high heat, add a little oil then add a small bit of the mixture. Cook it for about 5 minutes. Taste it, and adjust the seasoning to the mixture if needed.

2.Take some of the mixture and roll it into a small oval shaped ball and place this on a tray. Repeat until all of the mixture is gone. If you have time cover the tray with cling film and leave in the fridge overnight.

TO COOK

Place a pan on over medium to high heat, once hot add a little oil then add the lamb koftas to the pan, try not to over crowd the pan. Cook them for about 5-8 minutes depending on the size of them. Make sure they are cooked through but don’t leave them on the pan to cook as they will dry out.

FOR THE MINT YOGURT

1. In a bowl mix the garlic, mint, yogurt and lemon juice, add a little slat if needed.

2. Place the flatbread in an oven at 180º C for about five minutes before serving. TO SERVE

Add some salad leaves to the warm flat bread, then some pickles, some lamb koftas and then generously drizzle some mint yogurt over, you can serve it as it is or roll it up to form a kebab.

Ham Hock, Pea, Mint and Rocket Salad with Mustard Dressing

FOR THE HAM

• 2 ham hocks

• 1 carrot, 1 stick of celery, ½ onion all roughly chopped

• 1 bay leaf

• 1 tbsp. wholegrain mustard

• dash of cider vinegar

• large bunch of chopped parsley

• salt and pepper

FOR THE SALAD

• 200g fresh peas (frozen will work when you can’t find fresh)

• handful of mint, chopped finely

• 150g rocket, washed

• 1 potato, cut in small cubes and cooked for 5-7 minutes

FOR THE DRESSING

• ½ shallot, finely diced

• 120ml of extra virgin olive oil

• 40ml of white wine vinegar

• 1 tbsp. wholegrain mustard

METHOD

To cook and prepare the ham

Put the ham hock in a large pot, cover with water, bring to the boil. Empty the water and add fresh cold water, add the carrot, celery, onion, bay leaf and some of the stalks of the parsley. Allow this to simmer for about 2 ½ - 3 hours. You want the meat to be falling off the bone. Once cooked, remove from the pot and allow to cool a little. Take away the large pieces of fat from the outside. Try to leave a small but of fat, you can peel it off and chop it and add it to a large bowl. While the ham is warm tear it into small pieces. Add this to the bowl along with the mustard, vinegar and parsley. Mix this all well. Taste and adjust the seasoning. Remember if you are serving this cold, you will need to over season it.

FOR THE DRESSING

Mix all of the ingredients together. Taste and season.

FOR THE SALAD

Add the peas to a small pot of boiling salted water. Once they have cooked remove the and place them in cold water for a few minutes. Remove from the cold water and shake off the excess water. Add these another large bowl, mix in the mint, rocket and potatoes. Mix this well and add a little dressing.

TO SERVE

Place some of the ham mixture on a plate, place some leaves to the side, drizzle a little dressing over the ham.

Keeping you Slim for Summer

ALL-DAY BREAKFAST MUFFIN

This low-Syn alternative to a drive-through brekkie has your cravings covered!

35 minutes | Serves 1

Ingredients

• 10 cherry tomatoes

• 1 Slimming World Pork Sausage

• Low-calorie cooking spray

• 3-5 chestnut mushrooms, thickly sliced

• 1 medium egg*

• 65g wholemeal English muffin, split and toasted

Method

• Preheat your oven to 200°C/fan 180°C/gas 6.

• Put the tomatoes and sausage on a non-stick baking tray and roast for 25 minutes, until the tomatoes are completely soft and the sausage is cooked through.

• At the same time, spray a non-stick frying pan (use one you can put a lid on) with low-calorie cooking spray and put it over medium-high heat. Fry the mushrooms, without turning, for 2-3 minutes, then turn and cook until soft and golden, stirring occasionally. Set aside and keep warm under foil.

BURGER IN A BOWL

Who says a burger has to have bread? The Slimming World Burger in a bowl has juicy beef, our special super sauce and lots of fresh salad – everything but the roll!

25 minutes | Serves 4

Ingredients

• Low-calorie cooking spray

• 500g lean beef mince (5% fat or less)

• 1 onion, finely chopped

• 2 garlic cloves, crushed

• ½ iceberg lettuce, roughly shredded

• 8 gherkins, sliced

• 1 small red onion, finely chopped

• 2 tomatoes, roughly chopped

For the SW super sauce:

• 3 level tbsp extra-light mayonnaise

• 5 tbsp fat-free natural fromage frais

• 1 level tbsp American-style mustard

• 2 tbsp tomato purée

• 2 tsp white wine vinegar

• ½ tsp garlic salt

• ¼ tsp onion granules

• ¼ tsp sweet smoked paprika

• Wipe out the pan and spray with more low-calorie cooking spray. For a nicely round egg, spray a chef’s ring with low-calorie cooking spray and put it in the pan, then crack the egg into it (if you don’t have a chef’s ring, just crack the egg straight into the pan). Put the pan over medium heat, cover and cook for 3-4 minutes or until the egg white has set.

• Cut the sausage in half lengthways. Spread half of the tomatoes on the base of the muffin, then top with the sausage, egg, mushrooms and a twist of black pepper. Spread the remaining tomatoes on the muffin lid and serve.

Method

• Spray a large, heavy-based non-stick frying pan with low-calorie cooking spray and put it over high heat. Add the beef, onion and garlic and stir-fry for 7-8 minutes, or until the beef is cooked through and the onions have softened. Take the pan off the heat and drain any fat from the mixture. Season lightly.

• While the beef is cooking, put all the sauce ingredients in a bowl with 4 tbsp water and whisk until well combined.

• Mix together the lettuce, gherkins, onions and tomatoes and divide between 4 wide bowls. Spoon the beef mixture on top, divide the sauce between the burgers and serve hot.

VACANT PROPERTY REFURBISHMENT GRANT

This funds the refurbishment of vacant and derelict homes. Originally, it was for people refurbishing vacant properties to live in them. However, from 1 May 2023 it extended to vacant properties that are to be rented out. It amounts to up to €50,000 to renovate a vacant property (€70,000 if the property is derelict). It is inclusive of the VAT cost and must be approved before work begins.

(4) On completion of work you must live in it or make it available for rent

(5) You must have tax clearance from Revenue and have paid your Local Property Tax

The grant covers most building work and associated professional services fees.

The completed application form must be submitted to the Local Authority with supporting documentation. If the property is sold within 10 years, the grant (or a portion) is clawed back.

Qualifying conditions:

(1) The property must have been built before 2008

(2) You must own it or be in the process of buying it

(3) The property must have been vacant for 2 years or more

Ask the Pharmacist

In June's edition of Ask The Pharmacist, Mounthawk Allcare Pharmacy's Pat Harmon explains the different products available to treat hayfever and how to get the best use out of them.

"It may be hard to believe considering that at the time of going to print the temperature is still in single digits…. but its officially summer! For many people that holds all kinds of positive connotations-kids off school, days at the beach, holidays etc. However for some people the good weather can trigger a nasty attack of seasonal rhinitis (commonly known as hayfever). This condition arises as a result of an immune response to circulating pollen in the air and can have a range of unpleasant symptoms. Sufferers will have itchy red eyes that water, stuffy noses, sneezing fits and all manner of other annoying symptoms. While not a serious condition, hay-fever can be a real nuisance and impact on a person's enjoyment of fine weather. Fortunately there are a multitude of options available to sufferers and the following is a brief synopsis of the treatments that currently exist.

The most popular treatments available for sale in the pharmacy are antihistamines. These tablets work by blocking the effects of histamine in the body and are the mainstay of treatment for many people. There are two main classes, the older more sedating antihistamines such as Piriton and then the newer non sedating antihistamines such as Telfast, Clarityn and Zirtek. Piriton is very effective for itch but can often leave people feeling very drowsy. The main benefit of newer antihistamines is that they are all taken once daily and do not tend to cause drowsiness as they do not cross the blood brain barrier. Luckily in Mounthawk we are proud to say we stock an extensive range of antihistamine tablets to suit all budgets so pop into store where we will gladly assist you in selecting the right product for you.

For people who tend to suffer from irritated eyes as a result of hayfever there are a few eye drops available to alleviate the discomfort. Some of these contain antihistamines ( eg Otrivin eye drops) and some contain ingredients belonging to a group called mast cell stabilisers called sodium cromoglicate (Opticrom). These drops can make a real difference to people who find that tablets do not always control all of their symptoms.

For those who need something stronger luckily there are a few steroid nasal sprays available over

the counter to save the day. These are only licensed for adults over the age of 18 and need to be used every day for best effect. Examples include Nasocort, Flixonase and Beconase. These are highly effective medications and can make a real difference. If OTC remedies do not do the trick, you can always pop to your GP where they will be able to prescribe stronger medications and we can also advise on those.

If somebody wishes to try a non drug method, we are delighted to stock Nuage Hayfever relief wipes. These wipes are suitable for the face and hands and are enriched with tea tree and peppermint oil and work to remove and trap pollen, dust and pet allergens before they have a chance of affecting you. The old trick of rubbing Vaseline under the nostrils to prevent pollen from entering the airways works along the same principle. The old saying that prevention is better than cure holds especially true for hayfever. Staying indoors during the parts of the day when pollen is highest can also help and MET Eireann issue a daily pollen forecast which is generally reliable!

Wearing sunglasses when out in sunny weather is another natural method of preventing pollen from irritating the eyes. They also help to protect your eyes from the harmful UV effects of sunlight so everybody should own a pair of sunglasses. Needless to say, everybody is aware of the need for sun protection these days. The higher the SPF factor the better and it is essential that children wear SPF50 when playing outdoors. Tooth wear and gum recession in the digital age of dentistry:

The majority of the population will have a degree of tooth wear and/or gum recession at some stage of their lives. This can lead to further dental problems if left undiagnosed and untreated. As always early detection will assist the patient in maintaining a healthy dentition for life.

Tooth wear can have several forms. Many people grind and clench teeth during their sleep or even as a daytime habit. This can chip the edges of fillings or of the tooth enamel. However, before chipping occurs, it may be possible to detect the early tooth wear signs. Quite often, early stress lines can be visible on the enamel of the teeth. This can be a precursor of a tooth fracture. Tooth dye can be used to identify these cracks, but intra-oral photographs and intra-oral scans are a very reliable way of recording tooth wear and avoiding problems in the future. If vulnerable teeth can be identified early on, then preventative treatment plan can be put in place.

Such plans may include a night guard to prevent tooth damage if grinding during sleep. Crowning teeth, which covers teeth with an outer metal and/ or porcelain cover, can also protect vulnerable teeth from fracture. Obviously, regular monitoring of teeth is a key issue. If intra-oral photographs and scans are updated on a regular basis, then a plan to remedy problems can be started when it is necessary.

Gum recession is a common issue amongst patients. People may only become aware of it when it happens a front tooth, or if they get sensitivity from a tooth root that has become exposed to the oral environment.

Again, scanning tools now allow dentists to digitally record gum levels around teeth and several scans over a period of time can be compared to each other to identify danger areas for the gums. Early intervention is of course the best remedy.

Celebration Time for Phoenix Women’s SHED

1st Birthday celebrations will take place to mark 1 year since the Phoenix Women’s SHED was formed.

The Phoenix Women’s SHED is Celebrating its 1st Birthday on 1st June. The Phoenix SHED based in Tralee has gone from strength to strength and interest in Kerry amongst women for a SHED in their locality is increasing. The SHED meets weekly on a Thursday and there is always something different. We also have small group sessions on different days of the week such as Art classes and Personal Development Programmes at the CDP in Rock Street as well as our Support services for women. NETWORK IRELAND LAUNCHES ITS KERRY BRANCH FOR THE FEMALE ENTREPRENEURS, EMPLOYER & EMPLOYEE

Network Ireland is a not-for-profit, voluntary national organisation that supports the professional and personal development for women in business with its dynamic and progressive approach. The organisation celebrates its 40th year in existence in 2023 and the establishment of the Kerry Branch is yet another reason to celebrate. Network Ireland Kerry will enable women in business, those who are working in professional roles or are business owners and leaders, to lean into a new and exciting business network with their membership.

The founding committee was established earlier this year, and the in-augural President of Network Ireland Kerry is Linda O’Mahony Logan, from Leadership 360, Linda O’Mahony Logan shared “as an organisation we are all about people making new connections, especially for their professional and personal development and seeing the calibre of females in different professions and sectors across the county I am very proud to be associated with Network Ireland and to be the first President of Network Ireland Kerry”.

Ms O’Mahony Logan continued “since the pandemic many of us have normalised working alone or working remotely and for many of us the value of meeting face to face and making connections needs to be regenerated. We believe that Network Ireland Kerry will bring back that opportunity to all with our monthly hosted events, giving people a chance to meet face to face again, develop their professional network and grow their connections both in the county and nationally across 17 other branches within Network Irelands network.”

The other members of the founding committee are Emily Reen, Vice-President (Enterprise Co-Ordinator & New Frontiers Programme Manager, MTU), Antoinette Glavin, Treasurer (Glavin & Wiseman Chartered Accountants), Roisin Smullen, Secretary (Programme Administrator, New Frontiers, MTU), Brigeen O’ Sullivan, P.R. Officer (Match

Anita Michalak, Social Media Officer (Anita Digital Marketing), Helen O’ Sullivan, Membership Officer (O’Sullivans Bakery), Jackie Sheehan, Membership Officer (FROSCH Ireland) and Joan Walsh (Partnership International) is the Network Ireland Branch Liaison on the committee.

Network Ireland Kerry are hosting their official launch event at The Rose Hotel, Tralee on the 7th of June from 6:30pm – 8:30pm. Those interested in attending are asked to pre-register at www. networkireland.ie

The evening will be hosted by Radio Kerry’s Deirdre Walsh and speakers on the evening will include Emma Early Murphy (President of Network Ireland), Linda O’Mahony Logan (President of Network Ireland Kerry), Joan Walsh (Former President of Network Ireland Cork & Network Ireland Branch Liaison), Marguerite O’Sullivan (former President of Network Ireland Cork & STEM Professional) and Emily Reen (Vice-President of Network Ireland Kerry). The evening is being officially sponsored by AIB and Kerry Local Enterprise Office and promises to be a great launch for the Kerry Branch and everyone is welcome to attend.

Network Ireland Kerry will host themed events monthly which are open to everyone for their professional and personal development. These events are not exclusive to members only.

For members of Network Ireland Kerry there a mentoring programme called “Mentoring For Success” that members can avail of for the progression of their career and business needs, whereby you will be matched with a Mentor from the National Network of over 600 Mentors based on your specific professional needs and requirements.

Additionally each year Network Ireland Kerry will host their own Regional Businesswoman of the Year Awards open to all its members, where successful entrants from regional qualifiers go forward for these National accolades. The newly established Network Ireland Kerry already have great ambitions for Kerry to be well represented in the National Awards in 2024.
